Kim Bearnes, Extension Educator, University of Nebraska Lincoln Extension Easter is approaching, and that means time for decorating and eating eggs, along with some other Easter foods, such as ham. Being safe with these foods and decorations is important. Nebraska has an abundance of eggs. It ranks ninth in U.S. egg production. Eggs are part of a healthy diet, but they are perishable like raw meats, poultry and seafood. Eggs need to be refrigerated properly and safely cooked. Once eggs are purchased, they should be taken directly home and stored in the coldest part of the refrigerator in their carton. Never leave eggs unrefrigerated for more than two hours. The same applies for decorated Easter eggs. Easter egg hunts should occur within two hours of the eggs coming out of the refrigerator or one hour if the temperature is above 90 degrees. Put them back in the refrigerator once the hunt is over. When preparing eggs to eat, cook thoroughly until the yolks are firm. To boil eggs, place them in a saucepan big enough to hold all eggs in one layer. Cover the eggs by one inch with cold water and heat over high heat until just boiling. Remove the pan from the burner, cover it and let the eggs stand in hot water for 15 minutes, if large eggs, 12 minutes for medium eggs and 18 minutes for extra large eggs. Drain immediately and serve warm, or cool under cold running water. Then refrigerate and use within one week. Cook casseroles and other main dishes with eggs to 160 degrees because this is the temperature at which foodborne microorganisms are killed. Check to make sure it is cooked at the correct temperature with a food thermometer. Serve those dishes immediately or put in shallow containers to cool quickly and refrigerate. Leftovers should be eaten or thrown away after three or four days. Raw eggs should never be eaten, even if in "healthy" milk shakes, a Caesar salad, hollandaise sauce, homemade mayonnaise or ice cream. Homemade ice cream is safe if it is made with a cooked egg-milk mixture. Gently heat and make sure the mixture reaches 160 degrees. Ham typically is the main dish for most Easter dinners. Ham can still contain foodborne bacteria even though it is smoked, aged or dried. As with eggs, sliced or whole ham should be stored in the coldest part of the refrigerator. Slices should be used within three to four days of being stored, and a whole ham within one week of storage. Check all labels, checking for "Best if used-by" dates. Fully cooked hams can be served hot or cold, but if reheating, do so to 140 degrees. Fresh ham, labeled "cook before eating", and other pork has to be cooked to 160 degrees. Refrigerate canned hams once opened. If storewrapped cooked hams are bought, use those portions within three to five days. To freeze a ham, wrap it tightly in freezer paper or plastic freezer bags and use within one or two months. Ham can lose flavor and texture when frozen. Pregnant women, newborns, young children, older adults and people with weakened immune systems are at greater risk for foodborne illness.

Vetter Says Farmers Should Grow Nutritious Foods By Robert Pore, The Grand Island Independent Dave Vetter of Marquette, a pioneer in the organic and sustainable agricultural movement, was recently recognized with two awards honoring him as a lifelong advocate of stewardship of the resources that make food production possible now and for generations to come. Last month, Vetter received the Seventh Generation Award from the Center for Rural Affairs during an awards banquet prior to the organization's fifth annual Market Place entrepreneurship conference in Kearney. The center's Seventh Generation Award is a lifetime service award presented to an individual who has made major contributions to improving rural life and protecting the country's land and water. "Dave Vetter is without a doubt one of the nation's most important pioneers of organic farming," said Chuck Hassebrook, executive director of the Center for Rural Affairs. Also, the Vetter family recently received the Midwest Organic and Sustainable Education Service (MOSES) award for Organic Farmer of the Year. MOSES serves farmers striving to produce high-quality, healthful food using organic and sustainable techniques. These farmers produce more than just food; they support thriving ecosystems and vibrant rural communities. Vetter started farming organically in 1975 near Marquette after earning a bachelor's degree in agronomy and soil science from the University of Nebraska-Lincoln and a master of divinity degree from United Theological Seminary. In 1980, Vetter and his father began processing grain and today they run Grain Place Foods, one of the nation's premier organic processors, employing two dozen people. Grain Place Foods is located about seven miles north of Aurora on Highway 14. Vetter helped create the Nebraska Sustainable Agriculture Society and was involved in development of the Organic Crop Improvement Association. "Dave has been crucial in building the organic movement, helping other farmers take the leap into organics and weighing in on policy discussions that matter to rural America," said Hassebrook. "His family's business " Grain Place Foods " is Nebraska's leading organic processor." In presenting the award, the Center of Rural Affairs noted that in 1953, Don Vetter, Vetter's father, began "questioning the science and ethics of the agricultural practices of the day, began to adopt organic farming methods." The farm was certified organic in 1978 and became The Grain Place Inc. in 1979.
As the business grew, they added grain cleaning and storage facilities to serve smallscale organic farmers and specialty organic food distributors and processors, becoming one of the first on-farm operations of its kind in the northern Great Plains. In 1987, Grain Place Foods Inc. was created to take advantage of value-added manufacturing opportunities and it assumed the grain processing business of The Grain Place.
Dave Vetter's family business, Grain Place Foods, is located about seven miles north of Aurora on Highway 14. It processes organic popcorn and other whole grains, along with a full line of organic rolled cereal grains. (Independent/Robert Pore) Grain Place Foods is now operated by a staff of two dozen highly trained individuals, several of whom have been with the company for more than 15 years. The mission of Grain Place Foods is to provide to its customers grain products that are grown and produced in an ecologically sustainable and socially responsible manner " with the conviction that how your food is produced does matter. Mike Herman, Vetter's brother-in-law, now does most of the farming, while Vetter is still involved in much of the decision making. According to MOSES, the Vetters have grown a wide range of crops not typically seen in the region, such as edible soybeans, edible dry beans, blue and white corn, popcorn, heirloom barley, flax, amaranth, lupines and pasture. Fruit and nut trees are planted in the buffer zones to increase biodiversity and add another income stream. Pastures are rotated around the farm to support a cow/calf herd for direct-marketed, grass-finished beef.
Grain Place Foods, which is located on the homestead, is a diverse facility that processes organic popcorn and other whole grains, along with a full line of organic rolled cereal grains. It also manufactures a variety of organic specialty pet foods. Among the products offered by Grain Place Foods are barley, brown rice, chia, cane sugar, corn, flaxseeds, KamutÂŽ Khorasan Wheat, millet, oats, popcorn, quinoa, rye, sesame, soybeans, spelt, sunflower, triticale and wheat. According to MOSES, Vetter has been a leader in the development of organic standards and the certification process, as an early president of OCIA International (Organic Crop Improvement Association). As a steward of the land his family farms and a leader in the sustainable and organic farming movement, he encourages farmers just transitioning to organic production to put a strong focus on building their soils, since so much of a farm's success depends on that major resource. "Soils are one of those few things on which our life is dependent on for health and nutrition," Vetter said. "How we shape soil ends up shaping us and we tend to forget that. We have a tremendous amount of influence over how soil develops, how it becomes and how it is destroyed, long term. In effect, we end up doing that ourselves. There is only so much we can substitute for the real thing with synthetics because it has been proven over and over again, for years and years, that we don't understand the system well enough to make the kinds of management decisions we have been making." According to Vetter, as a farm begins to mature into a functioning organic system, the addition of biodiversity both within the crops and around the farm continues to enhance the resources needed to provide healthy crops and profitable yields. And for Vetter, that's the direction agriculture must travel in the future as modern agriculture is very good at growing a lot of stuff, but not food. "That seems to be the focus, growing volume, but not good nutrition," he said. Warmer weather and increased daylight have excited a number of people to get outside to walk or look at their gardens and landscapes. Even though we have enjoyed warmer weather, frost is still possible. What about all the plants that have been overwintered inside? What about the bedding plants that have been germinated and grown inside this winter? What about the bedding plants that were bought prematurely before the threat of frost has passed? A simple process of hardening can be used to toughen up these plants to help protect them from light frost once they are planted or placed outdoors for the growing season. Indoor and bedding plants can be toughened up during the warm days through a process called hardening. The goal is to slowly expose tender growth on plants that were
overwintered inside and bedding plants during these early warm days. Over time, these plants will be better prepared to handle temperature fluctuations during the day and night once they have been planted in the landscape. This process also works for container and house plants that will adorn patios, porches and other sitting areas in the landscape. How does this process work? First, this process needs to be carried out at least two weeks before planting or arranging outside for the growing season. Second, place tender vegetable plants in a shady location outside on days when the air temperature reaches a minimum of 45 degrees Fahrenheit, away from wind or a strong breeze. Place plants in a garage or shed out of the wind, bring the plants indoors in early evening, or when the temperature drops below 45 degrees Fahrenheit. Gradually expose these plants to more sunlight intensity each day away from the wind. Bring plants indoors when the air tempera-
ture is cooler of 45 degrees Fahrenheit, or if a location away from the wind is not available. During the gradual hardening process, start to reduce watering levels on these plants. Keep plant material moist enough to avoid wilting during this process. House plants and potted tropical plants such as hibiscus can be hardened through this process as well. Start the hardening process when the air temperature reaches 65 degree Fahrenheit outside, and away from the wind for a couple of hours each day. Return these plants indoors during the night. Outdoor cold frames are an ideal place to harden plants in this situation. "First, the State Department needs to consider alternate routes that would take the pipeline around the Nebraska Sandhills and avoid as much of the Ogallala Aquifer as possible," Hovorka said. He said the department's original analysis did not adequately recognize the fragile nature of the Sandhills landscape or the additional risks a pipeline spill would pose to the groundwater in the area. He said the initial assessment did not adequately consider alternate routes in Nebraska. "Second, the State Department needs to do a better job assessing the air pollution and climate change impacts of the huge increase in tar sands oil production that could result from building the pipeline," said Hovorka. He said the science is increasingly clear that greenhouse gas pollution is a problem the country needs to address, and the State Department should do a much better job this time around in assessing the impacts. "Fortunately, the State Department decision gives our state leaders a second chance to suggest alternate routes around the Sandhills, and a second opportunity to identify environmentally sensitive areas in Nebraska that should be protected," said Hovorka, "but they need to take immediate action this time." The State Department said it expects to make a decision on whether to grant or deny the permit before the end of 2011.

Sen. Mike Johanns, R-Neb., and Sen. Ben Nelson, D-Neb., welcomed an announcement last week from the U.S. State Department that it will conduct additional analysis on the proposed Keystone XL Pipeline. Johanns has voiced concern that the federal review of the proposed pipeline has been inadequate, particularly in regard to protection of the Ogallala Aquifer. "This additional analysis is the right thing to do," said Johanns. "The original review should have been complete, but I am pleased that the State Department has now acknowledged the need to look further into the implications of TransCanada's preferred route. I believe there are better options to protect the Ogallala Aquifer and I look forward to the additional review. The analysis must fully consider the potential of a pipeline through sandy soil over the middle of the aquifer where the water table is so high. We have only one Ogallala Aquifer and we must protect it." Johanns said that "without question, our country needs additional supplies of energy, yet here we are tangled up because of sloppy routing." "We have many pipelines in Nebraska; in fact we have a Keystone pipeline, which was built with almost no objection," he said. "I support pipelines. I am pleased that our
state helps move much-needed crude oil to refineries. My objection to the Keystone XL Pipeline stems from sloppy routing and incomplete analysis." Johanns requested a Supplemental Environmental Impact Statement (EIS) in November 2010 to address the many concerns about the proposed route. Johanns has long stressed the need for analysis of additional border entry points, including a route parallel to the existing pipeline and the potential benefits of a route that avoids the Sandhills. Nelson said he is pleased that the State Department has "not rushed this process and I am hopeful that the Supplemental Environmental Impact Statement (EIS) will taken into consideration the comments and concerns Nebraskans raised with the original EIS." "Also, it's good to see that the State Department is committed to allowing interested parties and the public comment on the project and will provide 45 days to comment on the Supplemental Draft EIS when it is released mid-April," he said. Duane Hovorka, Nebraska Wildlife Federation executive director, said that the original environmental assessment "fell far short of what was needed." Hovorka said the State Department needs to fix at least two major shortcomings when it releases its supplemental report.

“Peel & Stick” Engine Preheater The ‘peel & stick’ Universal Preheater attaches to the bottom or the side of the oil pan and converts the housing into a heat transfer element. It warms the oil without burning it making cold starts easy. It can be used on gearboxes, transmissions, transfer cases, water tanks and even bulk oil tanks. The Preheater plugs into any 120 or 240 volt outlet and consists of a thin silicone fiberglass pad containing a metal grid. To install it, you clean an area on the bottom or side of the oil pan and press the pad onto it, then use silicone to seal the edges of the pad and place a flexible ceramic insulation pad over it. It is available in several models depending on the lube capacity. A 50 watt unit sells for $42 and a 350 watt unit sells for $133.

A new “Clear Span” Trap frame is used to support the hopper tub and trap door assembly. The crank handle, locking prawl, rack and pinion drive system are removed. Then are replaced with two hydraulic cylinders per door.
The trap door glides across 1.6” Sealed Rollers Bearings. Non friction molly pads are installed on the inside ledge of the trap frame (No metal to metal contact). This reduces friction and makes the “Easy Flow” door the easiest opening trap on the market. The H.D.
¼” aluminum door has galvanized stiffeners for extra support.
Premium biodegradable hydraulic fluid flows from the reservoir in the apex to the cylinders through stainless steel lines that won’t rust or corrode offering years of dependable service. The hydraulic reservoir is constructed of a non metallic material that won’t rust. Hydraulic pressure is such that the doors open full and close easily, but are easy to control. The “Easy Flow “controls allow you to open the doors gradually while unloading if needed.

Rancher Shares His Experiences on a Shortgrass Prairie By Katie Bradshaw, The Scottsbluff Star-Herald Shaun Evertson gets up at the crack of dawn on a grey winter morning and heads out into the snow and subzero windchill. Ranchers don't get snow days. The cattle are waiting for the feed and water that will help them survive the harsh winter weather. Evertson checked a water tank in which he had accidentally speared and sunk the float while chopping ice the previous day. "Winter's just a lovely time of year," he said with a touch of sarcasm. Evertson works outdoors 365 days a year, whether it's 40 below or 110 degrees, to care for the cattle on his fourth-generation ranch south of Kimball. He wouldn't have it any other way. After escaping the family ranch in his youth and circumnavigating the globe in a career with the U.S. Navy, Evertson returned home, worked his way back into ranch life and rediscovered the landscape. An avid reader as a child, Evertson also developed a writing career, working as a journalist and, later, starting a personal blog. Through that blog, prairieadventure.blogspot.com, Evertson shares moments he captures from daily life on the ranch. He writes about calving time, fixing fences, rattlesnakes and the everchanging weather on the high plains. He knows that most Americans live in cities and don't get to see how their food is raised. He said he feels a personal responsibility to "communicate to the 99 percent of Americans who aren't involved in production that agriculture is really important." He asked himself, "Is there a way that I can share what I'm seeing and thinking and doing? ... What we do, how we do it?" Evertson said he accomplishes that goal to some degree by writing for The Business Farmer newspaper. He has a few book chapters developing and could probably get something published, but he has "other irons in the fire" and not enough time for a book right now. The blog provides a less formal outlet for Evertson's message. Evertson is aware of how tough it is for a young farmer or rancher to amass enough land and equipment to succeed in agriculture these days and feels privileged to have the opportunity to carry on tradition at the EJE Ranch. "I'm blessed that I was born into a family that had acquired land generations ago," Evertson said. His great grandfather, Evert Jay Evertson, established the ranch in 1907. The land passed to grandparents, Wilbur
and Helen Evertson, in 1949, and to his parents, Mick and Peggy Evertson, in the 1980s. Over a century, the family built up the ranch from 160 to 3,000 acres of shortgrass prairie. Evertson almost detoured away from ranching that land. When he was a child, he saw the televised splashdown of a Gemini space capsule. A white and yellow Navy helicopter flew to meet the returned space travelers, and "these really cool guys in the back jumped out to help the astronauts." Evertson joined the Navy right out of high school. "I wanted to get out of here and see the world," he said. Evertson went through hospital corps school and rescue swimmer school and met his goal to become one of those "really cool guys" who jumps out of helicopters. In addition to seeing the world, Evertson had the opportunity to work with National Aeronautics and Space Administration astronauts. He knew two of the astronauts who died in the 1986 Challenger accident. After 12 years in the Navy, Evertson was promoted to Chief Petty Officer E-7, which meant it was "time to stop flying and start flying a desk" - a prospect that did not sit well with a man who enjoys being active. He retired from the military. Back in Kimball, Evertson had difficulty transitioning to civilian life. After a struggle with alcohol, he straightened out and enrolled at Chadron State College. He earned degrees in history and English, but took many journalism and science classes as well. He considered his time there to be about "buying knowledge more than buying degrees." After graduation, Evertson worked for the Western Nebraska Observer. He also helped his dad on the ranch, increasing his involvement over time until he reached a turning point and focused his attention on ranching. "One day I decided that's more what I wanted to do than that newspaper stuff," Evertson said. Now Evertson is involved in the day-today learning process of working a cattle ranch dedicated to low-stress handling techniques. "While (the cattle are) under my care, they have a good life and are well cared for," he said. The ranch is moving towards more of a grass-fed operation - the price of corn is going up at about the same rate as the demand for grass-fed beef, Evertson explained. "The cattle can turn that stuff into food for people," he said, gesturing out the window of his pickup truck to the dry shortgrass
prairie plants waving in the chill breeze. "What we do on the ranch is not so much raise the cattle as we maintain this ecosystem that grows the grass naturally. We harvest the grass with the cattle. The cattle are the combine." He noted that grazing animals are a natural part of the shortgrass prairie ecosystem, though cattle have replaced bison in that capacity. To better understand the ecosystem on the EJE Ranch, Evertson will often grab a rucksack and a rifle and hike 5 to 10 miles across the rolling land. "It's just amazing how different it is and the diversity there is just from the top of the ridge to the bottom," he said. Evertson keeps logbooks and takes pictures, documenting the weather and changes in the plant community from season to season and from year to year. He is learning a lot about the landscape, though he is modest about his knowledge. "I don't profess to be, and don't want to be, 'Mr. Shortgrass Prairie,'" he said. He enjoys sharing the beauty of the ranch land with other people. May 28 will mark the fourth time that EJE Ranch has hosted a spring wildflower hike in conjunction with the Nebraska Wildflower Week events at the Kimball Community Arboretum. Evertson is curator at the arboretum and chair of the arboretum board. "I like to share it when I can," Evertson said. "So few people are farmers and ranchers anymore." He especially enjoys bringing younger people out to the ranch. He said he hopes that children who visit his ranch will internalize the experience. Then, if they one day hear a television pundit who paints ranchers in a negative light, they will remember their ranch experience and give what the talking head says a second thought. Evertson said he wished that people would pause for a moment before they eat beef and think about the animal it came from and about the rancher who "provided it a good life and provided me a good meal." Despite the hard work and adverse conditions he faces on the ranch, Evertson loves the job. It's always "new and fresh," he said. "I haven't found a rut in it yet." Evertson has many opportunities on the ranch to apply his writer's observation skills. He spoke of a 19-below-zero morning when he approached a corral to feed the cattle. The heifers were huddled together close, but not touching - their guard hairs coated with frost from their breath, and they all jumped up as he approached. "There's something compelling about that," Evertson said.

Respiratory acidosis is the buildup of by-products of carbon dioxide and a deficiency of oxygen. As the calf passes through the birth canal, it undergoes this buildup of carbon dioxide and its metabolites, and a deficiency of oxygen. When any baby calf is first born, it will gasp for air and pant for a few minutes in an effort to correct the carbon dioxide/oxygen unbalance in the circulatory system. Therefore, when a calf is completely delivered, primary attention is directed toward establishing respiration. Mucus and fetal
fluids should be removed from the nose and mouth by cleaning these air pathways with your fingers and thumbs. These actions are important for any calf that is assisted during the “calving” process, but they are critical for those calves that come backwards. The common practice of suspending the calf for an extended time by it hindlegs to "clear the lungs", must be questioned. Most of the fluids that drain from the mouth of these calves probably come from the stomach, and the weight of the intestines on the diaphragm makes expansion of the lungs difficult, if not impossible. Respiration is stimulated by many factors, but only ventilation of the lungs, allow us to render help immediately. The phrenic nerve can be stimulated with a sharp tap on the chest slightly above and behind where the
heartbeat can be felt. Brisk rubbing of the skin (if the calf has not had frost bite) can be helpful in stimulating circulation and breathing activity. Perhaps the most effective and simple approach to stimulating the first breathing activity is by tickling inside of the nostril with a stiff piece of straw. The vigorous tickling stimulation of the nostrils will cause the diaphragm of the calf to have a noticeable reflex. As the calf snorts and coughs in reaction to the straw stimulation, the lungs expand and air is taken in. Many ranchers report that this is a very effective way to get a baby calf started on the necessary process of rapid breathing. Always know your own limitations. If you find a calving situation that you cannot solve yourself in a short time, contact a large animal veterinarian as soon as possible.

limit supplement intake to the desired level in the younger compared to the older animal. As animal become more accustomed to the salt in the supplement, more will need to be added to limit the intake to the desired intake level. To assure that calves do not over-eat, set the levels high the first two to three days and consider hand-feeding the feed or supplement. To prevent separation of feeds in the supplement, particle size needs to be similar. That’s the reason for the recommendation to use coarsely ground salt. If grains are included, it should be cracked or coarsely ground. Including an ionophore,in the feed or supplement that is being limited using salt will reduce the amount of salt needed to limit the intake to the desired level. Follow lable directions on use and amounts to be consumed. If the water that is available for the cattle to drink when salt is used as a feed limiter is above 5,000 ppm Total Dissolved Solids (TDS) caution is necessary Feeders should be portable and feed protected from wind and rain. Strategic placement of feeder can impact grazing distribution. Do not place feeders next to the water source in a pasture as it will effect grazing distribution. To monitor supplement consumption, know the initial amount of supplement in a feeder. Every day for the first three to four days, check the feeder to get a rough estimate of the amount of feed being consumed. If salt is used in the winter to limit feed intake, make sure the water source is not frozen.

Cattlemen continue to investigate ways to reduce cow costs. One management tool frequently used is regulating feed intake with salt. Research would suggest that regulating feed intake with salt is not precise meaning that the salt content may need to be adjusted throughout the feeding period to achieve the desired feed intake. As a management practice, self-feeding supplements tend to allow timid, slow-eating cows to get their share and it is an easy method of providing Vitamin A, phosphorus and other feed additives. Salt should always be supplemented to beef cows. Salt is made up of Sodium and Chloride (NaCl) and these elements are used in a number of important reactions in the body. Daily salt requirement for mature cattle is less than 1 oz/head/day. Voluntary salt intake often exceeds minimum needs. Because there are practical limits to the amount of salt cattle eat, salt can be used to restrict the consumption of highly palatable feeds. In such instances daily voluntary intake of salt will approximate 0.1 pound salt/100 pounds body weight for most classes of cattle. Total salt intake is the amount in the feeds that are eaten and the amount in the water that is drank. Salt toxicity is seldom seen in cattle because of their high tolerance for salt. As a rule-of-thumb, cattle on salt mixtures drink 50 or 75 percent more water than normal or approximately 5 gallons of additional water for each pound of salt. If only salty water is available, cattle will often refuse the supplement or may be forced into a toxicity situation. Salt content of water is usually
measured by total dissolved solids (TDS) which includes calcium, magnesium, sodium chlorides, sulfates and bicarbonates. Caution is necessary in using salt-limited supplements when water contains above 5,000 ppm TDS. This analysis can usually be obtained through the analytical laboratories. When cattle are accustomed to eating supplements but are unaccustomed to self-feeding, overeating can be prevented by starting with a high salt level (50:50 or even 60:40 salt to meal) and then reducing salt level to obtain desired level of intake. If cattle have not eaten concentrates before, a training period of a week or more of daily hand feeding of meal without added salt may be necessary, particularly with young cattle. Usually is necessary to increase the salt content of the mix over a period of time as cattle become accustomed to the high salt level. Self feeders should protect the feed/salt mixtures from wind and rain and be portable. When using salt to limit intake of feeds or supplements consider the following: The proportion of salt to limit intake in self-fed mixtures will vary from 5 to 60 percent. The amount of salt needed will be determined by the desired feed or supplement intake. Use plain white salt. Coarsely ground salt is better than finely ground salt. Logically, to increase supplement intake, decrease salt in the supplement. To decrease supplement intake, increase salt in the supplement. As weight of the animal increases, the amount of salt needed to limit intake of the supplement to the desired level will need to increase. Age seems to impact salt intake. If cattle weigh the same, less salt will be needed to
