High Crop Prices and Mother Nature Face Alberta Farmers April 30 Crop Insurance Deadline Approaching Uncertainty around high grain prices and Mother Nature are two big issues facing producers this spring. â&#x20AC;&#x153;Crop prices are up significantly over last year â&#x20AC;&#x201C; roughly 25 to 50 per cent higher on average,â&#x20AC;? says Charlie Pearson, provincial crop market analyst, Alberta Agriculture and Rural Development, Edmonton. â&#x20AC;&#x153;Itâ&#x20AC;&#x2122;s a demand-led price rally where the world is consuming more than weâ&#x20AC;&#x2122;re producing. World grain supplies are extremely tight, and that fuels prices. â&#x20AC;&#x153;The tight supplies and high prices are driven by a number of factors, including a growing world

economy, growth in Asia, and a U.S. ethanol policy that now accounts for 40 per cent of American corn production.â&#x20AC;? Itâ&#x20AC;&#x2122;s certainly looking like a year for optimism, says Pearson, but the question bothering many producers is whether crop prices will remain at these high levels between now and harvest. â&#x20AC;&#x153;Prices could climb higher, but there are several reasons why they could decline in the months ahead.â&#x20AC;? Social instability in North Africa and the earthquake in Japan have already caused price volatility, he notes. â&#x20AC;&#x153;Weather is another major factor. If Mother Nature cooperates and we have bumper crops worldwide, prices will come down. On the other

hand, lousy weather and poor crops will push prices higher.â&#x20AC;? The economy and the Canadian dollar are also wild cards, says Pearson. As the April 30 deadline to apply for crop insurance in Alberta approaches, Pearson suggests producers sit down and carefully plan how to manage the risks in front of them â&#x20AC;&#x201C; both their price risk and their weather risk. If grain prices do drop, he says, a crop insurance rider called the Spring Price Endorse-

ment (SPE) could prove to be valuable. The SPE, available only in Alberta, insures producers against price drops of 10 to 50 per cent between the spring and fall. â&#x20AC;&#x153;Of course, weather is always the greatest risk farmers face, so the production guarantee that crop insurance provides will be very important again this year,â&#x20AC;? says James Wright, Agriculture Financial Services Corporation, which delivers crop insurance in Alberta.

In the Peace Region, dry growing conditions over the past few years continue to cause concern for producers, says Wright. In southern Alberta, farmers are once again worried about excess moisture. To qualify for the Unseeded Acreage Benefit, Wright urges farmers to declare all acres they intend to seed â&#x20AC;&#x201C; whether they plan to insure them or not. Secret of Bakery’s Success? A Food Safety Mindset Remember the old TV ad about the guy who liked his electric razor so much, he bought the company that made it? Today, the idea of customer-turned-owner is alive and well at Calgary’s Fairview Bakery. Eight years ago, Leang Ly operated a catering truck business and was a regular buyer of Fairview’s sausage rolls. When the owner of the bakery decided to sell the business, Ly jumped at the chance to buy it. For Ly, who came to Canada in 1981 as a refugee from war-torn Cambodia, the purchase was the latest chapter in a remarkable personal journey. Since then, Fairview Bakery has been in growth mode, moving to a larger facility and upgrading its processing equipment. “In terms of production, we’ve made a lot of major changes over the past year,” says general manager Dennis Cressman, a former employer of Ly who came out of retirement to run this nine-person business. “We installed new ovens, new handling equipment and new software to make the process operate better. As well as making us more efficient, these changes have also improved food safety.” As a customer, Ly knew how good the bakery’s sausage rolls were. Expanding production ca-

pacity has been key to meeting growing market demand. The bakery’s new system can produce in a half-day, a volume that used to take two full days. Saving this time allows more scope for the bakery’s rigorous cleanliness and sanitation program. Mechanically, making a sausage roll is straightforward. The process involves producing the dough, mixing the meat filling, depositing the meat filling, baking, cooling the rolls and finally freezing them before shipping. In terms of food safety, however, making a Fairview Bakery sausage roll requires a great deal of care and the right kind of equipment. “For safety, 4°C is critical,” says Cressman. “Refrigerated product must be maintained at a maximum of 4°C, and frozen product at -18°C or lower. If you go above 4°C, it will encourage the growth of bacteria. With our new coolers and freezers, we have more reliable control over the temperature of the food.” At its previous facility, the bakery had one small and one large walk-in freezer. Now, Fairview Bakery has two coolers, five freezers and more precise temperature control. New software sends Cressman a report every three seconds on facility temperatures and maintains a database of previous readings. The new fa-

cility has segregated production lines for raw and baked products, extending from the main production lines through to shipping. As the final element of its upgrade, Fairview Bakery introduced new protocols for equipment cleaning and preventative maintenance. Fairview Bakery’s equipment upgrade was cost-shared 50-50 with the federal-provincial Growing Forward Food Safety Processor Program. This program helps processors improve their food safety practices in several ways through adoption of food safety systems, undergoing food safety audits, participating in food safety training or through capital equipment purchases that directly impact food safety. Capital purchases can be cost-shared 50-50 to a maximum of $50,000, while the program will pay up to 70 per cent of non-capital costs up to $25,000. “For Fairview Bakery, food safety is not just a business requirement, but a core part of the culture and philosophy of the company,” says Monika FrankRuediger, safe food system specialist, Alberta Agriculture and Rural Development, Airdrie. “They are very proactive in regard to food safety and by making these investments, and are positioning themselves for a successful future as an Alberta food processor.”
