CHIYONOSONO SHUZO Yamaga City, Kumamoto Prefecture, Japan
“Our mission is to make the sake that our customers want. We also want to try making new sakes that go well with food. Every day we learn something new.” -Yuri Honda, the future 5th-generation Honda brewer
Chiyonosono Shuzo Co. is located in the historic city of Yamaga. The city is famous for its hot springs, traditional arts, and paper lanterns. Walking these historic streets will transport you back in time. The founding Honda family were originally rice wholesalers, but in 1896, they decided to get into sake brewing and the Honda Brewery eventually became today’s Chiyonosono Shuzo Co., Ltd. Chiyonosono has always paid extra attention to the quality of rice they use, even cultivating their own variety of rice, Kyushu Shinriki, from an older variety of rice called Shinriki that was used in the early to mid-1900s. The brewery is always changing with the times but they have always stuck to their roots, using 100% in-house rice for their sake.
AkaSake Red AkaSake is known in Japan as Akazake, or red sake. This sake is made with sticky rice and the addition of charcoal. This creates a sake with the essence of damp forest leaves combined with a high sweetness level, full body and a silky smooth mouthfeel. Best enjoyed as an aperitif.
ABV: 12% Available in: 300ML, 720ML
“In the sake industry, we don’t “grind” or “mill” the rice—we polish it. Polishing rice is a very important step in making the sake we want to make. Every single step is important for the flavor of the sake, from the polishing ratio and the mash amounts, to finding the best temperatures for the groundwater we use for mashing, so you always have to be on your toes.” -Nakashima, Head Brewer
Kyohime Junmai Daiginjo Murasaki
KYOHIME SHUZO Fushimi, Kyoto, Japan
Founded in 1918 under the name of Okamoto Shuzo, the brewery changed its name to Kyohime Shuzo in 1997 after the 1200th anniversary of the foundation of Kyoto as the capital of Japan. Located south of Kyoto, Fushimi is east of the Higashiyama Mountain Range and the confluence of several rivers including the Katsura River, Kamo River, and Uji River. Kyohime is blessed with an on-site underground water source that contains sufficient amounts of potassium and calcium to help the koji and yeast do their work, and very little iron, which is a major enemy for sake brewing.
Kyohime Junmai Daiginjo Murasaki is characterized by its gorgeous aroma, elegant sweetness, and soft flavors, produced by the famous waters of Fushimi. It is especially delicious when served cold. The sake is inspired by the princess Murasaki no Ue from The Tale of Genji, a classic work of Japanese literature written in the 11th century. The packaging also includes the Futaba-Aoi hollyhock, brightly stamped in foil to express the elegance of Kyoto and celebrate Aoi Matsuri, one of the three major festivals in Kyoto. ジャパニーズウイスキー JAPANESE WHISKY
THE BIRTH OF JAPANESE WHISKY is credited to two men, Masataka Taketsuru and Shinjiro Torii. In 1918, Settsu Shuzo, one of Japan’s largest alcohol producers sent Taketsuru to Scotland to learn how to make real whisky.2 Taketsuru enrolled in a series of organic and applied chemistry courses at the University of Glasgow. After his classes, Taketsuru apprenticed at the Longmorn distillery in Speyside, the Bo’ness distillery in the Lowlands, and the Hazelburn distillery in Campbeltown. Before his last apprenticeship, Taketsuru married Rita Cowan, the eldest daughter of the family who he had lodged with in Glasgow. In November 1920, Taketsuru and Rita returned to Japan ready to make real Japanese whisky with notebooks full of what he had learned. However, economic conditions had changed, and Settsu Shuzo scrapped the project. Meanwhile, Shinjiro Torii, the founder of Suntory, had built a successful business selling Akadama port wine and imitation whisky he bought from Settsu Shuzo. Torii dreamed of making real whisky that matched the flavor preferences of the Japanese people. By 1923, Torii learned of Taketsuru’s experience in Scotland and hired him to help build the Yamazaki distillery outside Kyoto. From the beginning Torii and Taketsuru disagreed on how exactly to accomplish their shared goal of making real Japanese whisky. After six years,
Taketsuru quit and he and Rita moved to the northern island of Hokkaido where they build the Yoichi distillery, which opened in 1934. Largely modeled after Scotch, Japanese whisky developed several styles, including blended whiskies for mixing, blended malts, and single malt whiskies. As the popularity of whisky grew in postWWII Japan, some companies began importing Scotch whisky and blending it with Japanese spirits to meet the growing domestic demand. In the early 2000s international demand for Japanese malt whiskies grew after winning top awards at a number of competitions and skyrocketed when Jim Murry’s 2015 Whisky Bible named a Japanese single malt the world’s best whisky. Since then, the demand for Japanese malt whisky has largely outpaced supply from the legacy distilleries, which has left room for new brands of Japanese whisky from other distilleries. Some of these newer brands are made with malted barley, some are a mix of malt and aged rice spirit, or 100% aged rice spirit. And in 2021, the Japan Spirits & Liqueurs Makers Association adopted a new industry standard that going forward any spirit labeled as Japanese whisky cannot contain imported whisky.
2 At that time Settsu Shuzo was distilling industrial alcohol and an imitation whisky made from sweet potatoes.

막걸리
MAKGEOLLI (KOREAN RICE WINE) MAKGEOLLI (MA-K-GO-LI) is a slightly carbonated, unfiltered rice wine that dates back to the Goryeo Dynasty (9181392). Traditional makgeolli starts with nuruk (nu-ruk), a wheat cake that is stored in a special temperature and humidity controlled room that allows bacteria, yeast and mold to grow on the cakes. Once fully inoculated, the nuruk is crumbled and mixed with steamed rice and allowed to ferment in large ceramic vessels.
Much like koji in sake or qu in baijiu, the microorganisms found in nuruk are able to break down the starchy rice and ferment the resulting sugars into alcohol. Once fermentation is finished, the makgeolli is strained to remove the rice and wheat solids, leaving a cloudy, and lightly carbonated, alcoholic drink. Makgeolli can also be brewed with other added grains, nuts, fruits, herbs, or flowers to create a wide range of flavors.

소주 SOJU
IT IS COMMONLY ACCEPTED that distillation technology was introduced to Korea by the Mongols around the 13th century, who previously adopted it from the Arabs. Koreans have a long history of making makgeolli, a type of rice wine, so it is no surprise that rice distillate would soon follow. The word soju simply means burnt alcohol, which refers to the heating of the alcohol in the still.3 However, because of the rice shortages after the Korean war,
the South Korean government banned using rice to make soju. Instead, soju distillers turned to barley, sweet potatoes, and tapioca. While traditional soju can have a higher alcohol content like other spirits, soju brands began reducing the ABV and selling a wide range of flavored soju. This change became an instant hit and soju has skyrocketed to become one of the most consumed spirits in the world.
Interestingly, the names of distilled spirits share a connection across culture and languages, often picking different words with the same meaning. For instance, the word brandy comes from the Dutch brandewijn, which means burnt wine. 3
