I know you have heard me say it before, but I will say it again, The August “Hot Issue,” is my and our readers’ favorite issue of the year. Some people have asked me why we put a list out of categories for people to vote on. Isn’t that superficial? My answer is a resounding, “NO,” and please bear with me as I explain why I feel this way. The “Hot List” is not just fun, it is important. Why is that? In my industry there are organizations, many organizations in fact, which will judge our work based upon us meeting certain criteria of excellence. We pay money to submit our work such as editorial content, design, layouts and ad concepts all to be reviewed and judged by our peers. They critique what we do and then place us in competition with others in our industry. Some say that the reason for us doing this is due to our competitive nature and that we just like to win, which is true, but it is more than that. To me, being a part of a competition means that you are comparing your abilities or your company’s abilities to another to determine who is the best. It happens every day in business, in sports, in academics, etc. This type of competition is a good thing because competition can only make you better. It can show you where you are weak and it can show you where you are strong. Competition is a key driver when striving for excellence. That is why I do it. It motivates my team to do better when we lose, and it gives them a well-deserved pat on the back when we win. Most professions don’t have organizations that judge or critique their work so they may never know how they compare to their peers or colleagues if not for the Style Magazine Hot List. Nominations for the Hot List are 100 percent based upon reader participation; we simply put the categories out there, and the readers fill them in. The same holds true for the voting process. We have thousands of readers who come to our website each and every year to vote for their favorite people, places and events. What better way to let our teachers, service providers, healthcare providers, parents and professionals know they are doing a great job and they are appreciated. With that said, I would like to take this opportunity pportunity to congratulate all of the 2015 Hot List winners. You are re the standard in which others are measured. Local police officers and firefighters will square off in a celebrity softball game August 21 at the National Training Softball Fields in Clermont. New Beginnings and PFX Athletic Fields sponsor the game. Gates open at 5 p.m. with entertainment, and the game begins at 7 p.m. Tickets are $5 for those 12 and older; admission for children under 12 is free. The City of Eustis recently held a ribbon-cutting ceremony and grand opening for a new playground in Ferran Park. Attendees had an opportunity to play on the new playground equipment while enjoying hot dogs and slushies. The new area represents the first phase of improvements to Ferran Park. Future projects include replacing sidewalks, installing new irrigation and landscaping and adding additional parking. Ferran Park is the first public park constructed in Eustis. It is named after Eustis pioneer and local businessman, Edgar L. Ferran. It also is home to the Alice B. McClelland Bandshell, constructed in 1926.

A WHEEL TO HELP It’s never too early to begin training for Camp Boggy Creek’s fourth annual Challenge Ride, coming up Sept. 12. Bicyclists can ride a 40- or 60-mile route through scenic Lake County or a 15-mile off-road route through Seminole State Forest. Following the ride, Golden Corral will provide lunch. Participants in the 40- and 60-mile rides must be 18 or older and raise a minimum

In hoops heaven Montverde Academy alumnus Dakari Johnson will test his skills against the country’s most elite basketball players. The Oklahoma City Thunder picked the 7-foot center as the 48th selection in the 2015 NBA Draft. Dakari played two years for the University of Kentucky, where he averaged 6.4 points and 4.6 rebounds per game as a sophomore.

1 // A FLORIDA MAN IS SUING Doctors Hospital in Coral Gables for throwing his amputated leg in the trash. The normal practice is to burn it. Some fear he’ll lose the lawsuit because he hasn’t a leg to stand on.

2 // AN ARIZONA WOMAN IS SERVING three and a half years in prison for running over her husband with the family car because he failed to vote in the 2012 presidential election. In an ironic twist, she adamantly opposed President Obama being re-elected but was relieved to hear that Obamacare covers mental insanity.

3 // IN MAY, A 65-YEAR-OLD GERMAN GRANDMOTHER gave birth to quadruplets at a Berlin hospital. She faithfully changes their diapers, knowing the favor might be returned in coming years.

SMASHING VOLLEYBALLS The Hickory Point Beach sand volleyball complex, managed by the Florida Region of USA Volleyball, celebrated its anniversary July 5. The complex makes Lake County home to the biggest volleyball complex in the state.

She should have known that paying for the beef would have been cheaper than paying bail, court costs, etc. I think it’s time this beef lover buys a cow-culator.

HIGH NOTES: I’ve produced three gospel CDs: “Fred Rahming” in 2004, “In Spite of Here is My Praise” in 2010 and “My Best Solution,” releasing this fall. SMASH HIT: My most popular song is “I Need a Word,” which has aired in both the United States and Britain. I’ve performed this song at Atlanta Live. A FAMILY AFFAIR: My baby girl, Jamilya, sings with me at our church, Citadel of Hope in Leesburg. We recently performed a duet there. She is a 21-year-old student at the University of South Florida. BEHIND THE LENS: When Jamilya graduated high school, I took graduation pictures and posted them on Facebook. Everyone loved them and started asking me to take pictures of them. That’s how FR Photography started. GIVING BACK: I was diagnosed with colon cancer in 2011. As a result, one thing I do is provide free photographs and prints to breast cancer patients to help give them their smile back. I don’t do photography to earn a living; I do it to earn a smile. GUILTY PLEASURE: Riding my Harley Davidson without a helmet. There’s something about the wind blowing around my head that makes me feel good.

PASSION FOR MUSIC: I started singing and playing drums at age 9. By the time I turned 20, I was singing gospel music at public venues. I was in two gospel groups, “The Brothers of Faith” and “In Faith.” I traveled throughout the southeastern United States and enjoyed that because gospel music encourages, motivates and uplifts people.

MUSIC YOU’D WANT ON A DESERTED ISLAND: Fred Hammond, a popular gospel singer. He has been my favorite artist for a long time, and his inspirational music would help me cope with being on a deserted island. Even though I am in 5th grade, I can do math at an 8th-grade

level, and reading at a 7thgrade level. AFTER I GRADUATE I would love to attend Notre Dame in Indiana. One of my goals for the future is to continue playing baseball in college. MY ADVICE to pass down to younger baseball players is to practice how you want to play, because if you don’t practice right, you won’t play right.

very time Jennifer Glidewell, general manager of Via Port Florida, walks past the Hershey Ice Cream parlor at the former Lake Square Mall, she suddenly is filled with teenaged memories. At 15, she had her first job there. Back then, it was Bruster’s Ice Cream. She vividly remembers how her parents had to sign a waiver because she was under 16. When she looks up, she spots the AMC movie theater (which was expanded in 1995), where she had her first date. She cannot remember what movie they saw or which food court restaurant they stopped at to eat, but she remembers the feeling. It was one of joy and innocence.

THE MIDAS TOUCH Opened in 1980 by General Growth Properties, Lake Square Mall was unique in its day. It was and is the only indoor mall in the local region. However, 35 years has taken its toll. The mall has seen better days. Glidewell gushes when she describes what Via Port has accomplished in Istanbul. According to their website, viaproperties.com, the outdoor-concept mall in Istanbul boasts 189 stores and more than 6 million square feet (the

That only covers stage one of the indoor entertainment center called the Fun Zone, which will be comprised of 37,000 square feet. When the landscaping, water features and town center are added, the final tally may reach $10 million.

Her feelings are shared by many in Lake County. Memories of playing at the Gold Mine arcade, which later became The Tilt, evoke nostalgia of bygone days. Glidewell has worked at Lake Square Mall most of her life. At one time, she worked as an assistant manager of a china and jewelry shop. Now, after 15 years, she is the general manager of the entire mall. Purchased in September 2014 by a company called Via Port in Istanbul, Turkey, the new mall bears the owner's name. The company is so enamored with its Lake County acquisition, they declared it the new flagship of their American affiliate: Via Port USA. The company purchased a second mall outside Albany, New York, with a plan to purchase 10 more within

current location at Via Port Florida comprises only a half million) flush with Mediterranean-style streets, liveaction squares and green space that even houses an enormous duck pond. The interior is lavish, with a covered Turkish Bazaar designed as a miniature replica of the world-famous Grand Bazaar. “Via Port is not just a shopping mall; it is a living center to its core” where “laughter and joy take the lead,” according to viaport.com. Glidewell is excited by the prospect of bringing that golden touch to Leesburg. Eileen Carpenter, owner of CC’s Gluten Free Marketplace in the mall, shares Glidewell’s enthusiasm. “Since the acquisition of the mall by Via Port, there has definitely been a turnaround in the look and feel,” she

Stage one should be completed by the end of October. The use of the remaining 50,000 square feet will be determined later, although some will be used for go carts, she said. “Jennifer [Glidewell] and the team are doing a great job of bringing new and exciting events to the mall such as the weekly Saturday afternoon concerts, yoga twice a week and all the kids’ activities,” said Carpenter. “Not to mention all the exciting new plans that are coming, from the bowling alley to the new restaurants, and the layout of the mall. To have our business in the mall during this time is really exciting. To be able to see how


much the mall has changed and will continue to change is very gratify.” Michael Morrison, owner of New York Fashion, agrees. “I can already see the improvements in the mall; everything is going all right,” he said. From his business, he can see the new, ornate natural spring fountain displayed proudly as the mall centerpiece. It is a popular meeting and gathering place for patrons who also stop for coffee at one of several café kiosks. “I can see many people walking, which picks up over the weekend,” he said. “I came from another mall, which was kind of slow. I can see the new mall will be a more attractive, fun environment.” According to Carpenter, the real proof of the mall’s positive changes comes from customers. “Some say they haven't been to the mall in a couple of years but comment on how nice it looks,” she said. “Other customers comment on how nice it is for the mall to offer all the different activities while parents with small children enjoy the area for kids.”

MAJOR IMPACT “There are two ways to look at economic impact really,” said Robert Chandler, Lake County Economic Development & Tourism Director. “When you talk about economic impact, that truly means the impact of new dollars coming into an economy. From the Via Port perspective, the amount of money that they are investing in the mall is a significant economic impact.” So, $7 million will go to local contractors, suppliers and businesses of that nature — a direct influx of capital into the local economy. When we talk about the long-term economic impact, that’s when the true definition of economic impact can get lost, according to Chandler, because economic impact is measured in “new dollars.” Chandler proceeds with caution: “While this is a regional mall, it remains to be seen how many non-Lake County

shoppers are going to come into Lake County to shop at this mall,” he said. “Technically, until we know that, it could be a great mall — they could do amazing things with it and still, based on the amount of competing supply out there, you just will not have that many people traveling in. So from that perspective, I am not sure you will see a true economic impact based off that technical definition.” Chandler adds that the other side of that issue is the community impact. “Meaning the ancillary impacts, and I think those are pretty substantial,” he said. “The mall is the anchor to the east side of Leesburg — that corridor coming into Leesburg — and as the mall goes, so does that corridor. To have this kind of investment come back into the mall is not only a good thing for the community to have another place to shop, from an aesthetic perspective — have them clean it up, new sign — all those things are great, but it is also going to impact all of the surrounding businesses.” To Chandler, that means the restaurants in the area will improve as more traffic comes through. The restaurants will see more business because people want to shop and eat in vibrant locations. “When you have an area that is a bit more dilapidated, if you will, you will have less people want to go there,” he said. “There just isn’t enough vibrancy and energy there. I think it brings a much-needed shot of energy and vibrancy to that corridor.”

Chandler contends another layer to this will be the general perception of Leesburg. He argues if the mall, being one of the major anchors or centers that Leesburg has, is in a state of disrepair, it reflects poorly on the community. “But now you flip that around, and you can talk about $7 million in investment, talk about lifestyle, destination — then everyone is talking and asking, ‘What is going on over there in Leesburg?’” To put it simply: If these guys are putting $7 million into this, something good must be happening. Chandler said he thinks it will benefit the entire town. “Now one of these main corridors into the city, with a commerce center as an anchor, enacts the expression, ‘Rising tide raises all ships.’” From the capital infusion resulting from the renovation to the aesthetics of having a nicer looking facility, there will be impact. Not just on the surrounding businesses, but on the entire community, as well.

COMMUNITY OUTREACH The community impact reaches far beyond economic dollars. “Another thing I love about our new owners from Via is that they highly encourage community involvement,” Glidewell said. She laments that management hasn’t been able or allowed to do that with previous owners. This year, they’ve been involved in the Fish Fry and had a float in the Mardi Gras parade. “We are also sponsors of the Venetian Garden Society for the first time and will have an area for face painting and a photo booth,” Glidewell said. The impact goes well beyond monetary worth. Eileen Carpenter agrees. “Via Port Florida has done a great job of bringing life back to the mall and to Leesburg by updating the property and making it a destination, not just another trip to the mall,” she said.

The video shows Planned Parenthood’s senior director of medical services, Dr. Deborah Nucatola, discussing the collection of fetal tissue with two people posing as potential tissue buyers. Lifelong Leesburg resident Mary Katherine Fechtel is no stranger to pageant success. She won the titles of Junior Miss Leesburg at age 11, Miss Florida’s Outstanding Teen at age 14 and Miss University of Florida at age 19. But her true crowning achievement occurred when she took home the prestigious title of Miss Florida in June. She will now focus her attention on vying for the title of Miss America. 17. CONFEDERATE FLAG No other story had gotten people more up at arms than the divisive dispute over the Confederate flag. Those that say it is a symbol of racism demanded the flag be removed from government buildings and other public spaces where it had been prominently displayed for years. Pro-flag advocates, who see it as a symbol of pride and heritage, demanded that the flag be returned to its due place of prominence. Locally, this occurred in neighboring Marion County. The Confederate flag was removed by an administrator of the McPherson Government Complex. It was restored by a vote of the City Council after the community rallied in support. The divisiveness seen in Marion is precisely why this is one of the hottest topics of the year.

There’s an increasingly popular sport that uses a net and is kind of like volleyball and slightly similar to ping-pong. Welcome to spikeball, a sport where four players (two on each team) bounce a palm-size ball off a circular net resembling a small trampoline so the opposing team cannot return it. The first team to reach 21 points is the winner. Although the sport originated in 1989, it has only become popular in recent years. In fact, spikeball tournaments are held throughout the country, and there are even intramural college spikeball teams. There are more than a quarter million players in the United States.

66. BRINGING THE HEAT FOR HEIDI COTE, THE BLAZING SUN AND THE SAND OF THE VOLLEYBALL COURT ARE A PERFECT COMBINATION. The athletic brunette was a standout on her volleyball team at The Foundation Academy High School. That led to a scholarship at Lake-Sumter State College, where she played for three years while studying nursing. She was also a member of the National Honor Society and Dreamers & Doers at LSSC. Now she enjoys the fast-paced, exciting competition of beach volleyball. “I played seriously for so long that I just want to have fun with it now, and I can also get a workout in at the same time,” she said. “I don’t have to kill myself at the gym. I can be outside and have a good time.” While Heidi and friends still go for edgy play, they don’t worry so much about the big wins. “We’ve done a few tournaments on the beaches, but we just want to have fun with it now.” The friends play most often at Hickory Point Beach volleyball courts, the largest permanent beach volleyball complex in Florida. Heidi says if you’re looking for a game, there’s usually somebody playing on one of the many courts. Heidi doesn’t plan to slow down anytime soon. In addition to her volleyball, she also enjoys paintball.

hen Army Sgt. Joe Fasulo Jr., his wife and two daughters entered Jenkins Hyundai of Leesburg on the Fourth of July, they were in the market for a new vehicle. Tyler Haney has established himself as one of Lake County’s newest up-and-coming country acts with the swagger of modern country artist Sam Hunt and a sound rooted in the music of Waylon Jennings. Tyler’s appreciation for music started when he was a young child coping with multiple health problems. Tyler, who was born with an incurable blood disorder, was hospitalized throughout childhood. He suffered from many serious symptoms that often left him extremely fatigued and dehydrated, and he had to receive dehyd fluids and monitoring. “Through “Throug all of this, the only thing I had to look forward to was the music on the rad radio during that frequent car ride to and from the hospital or while in my hosp hospital bed,” Tyler said. “Having the music mu on calmed me and made the world of difference.” became his passion. In fact, he’s been a musician for most of his life. He started out as a sax man 13 years ago and then moved on to French horn, trumpet and piano. After graduating from Leesburg High School, Tyler pursued a music career while attending Southeastern University in Lakeland. After a few years, Tyler moved back home to help his family. That’s when he made the decision to take his music to a professional level. He began booking shows and playing in the Lake County area and indulging in songwriting. He plans on taking his best five original songs and releasing his debut EP in 2016, which will feature his catchy new tune, “Perfect Crime.” Tyler’s style of country music has many country “roots” influences, but his sound is most like country artists Sam Hunt and Brantley Gilbert. Tyler plans to make his first visit to Nashville, Tennessee, this summer to begin planning his next move in his music career. IN TRANSITION Traveling to Cuba is hot, hot, hot… and it’s not the tropical temperatures we’re talking about. For half a century, the island has been forbidden fruit for U.S. citizens, but that is quickly changing as both governments move to restore relations. T

he cranes protruded from the Spanish Colonial buildings like giant bugs’ antennae, and the rat-tat-tat of jackhammers filled the narrow cobblestone streets in Old Havana. An art gallery displayed new lithographs featuring the American flag while the old pieces with Soviet symbolisms were stacked elsewhere. The city is definitely getting ready for an invasion of Americans visitors. Cuba has an allure for Americans that is hard to describe. Many are anxious to see a place that has been off-limits since

1961 when the U.S. broke diplomatic ties and closed the embassy. Others want to step back in time where vintage American cars dominate the roads and Internet access is limited. For me, visiting Cuba meant meeting the people and hearing in their own words how they felt about their neighbors to the north. It was also an opportunity to see how the country had changed since my first trip there in 1991 as a journalist. That trip was mostly daily meetings filled with rhetoric from Fidel Castro’s government and very little exploration on my own. I

saw decrepit buildings with no attempt to improve them and ate in governmentrun restaurants. What I most remember, however, were heartbreaking conversations on the sly with people who barely had enough to eat after the Soviet Union pulled out of the country. Fast forward 24 years and I returned to find a country truly excited about its future… and a future that includes U.S. visitors. For years, tourists from Europe, Canada and Mexico have been able to explore Cuba on their own. But it’s the Americans that Cubans want most. “You are American?,” an elderly man asked me as I took a photo of his shiny 1957 Chevrolet Bel Air on my second morning in Havana, the capital city of 2.2 million people. Before I could add anything other than “yes,” he grasped me in a bear hug and genuinely said, “Welcome to Cuba. We are so glad you are here.” The reception was much the same for the 36 members of our group, comprised mostly of people from The Villages and Ocala. who traveled to Havana in May. We may have looked like tourists, but we could not be called that — at least not officially. We were on a people-topeople exchange, one of the 12 categories of authorized travel to Cuba by the U.S. Department of Treasury’s Office of Foreign Assets (OFAC). General tourism is not yet one of those categories. Currently, visitors must travel with an OFAC -licensed agency on charter flights and stick to a planned itinerary… in other words, no free time at the beach. My eight-day itinerary focused on visiting museums, schools, historic sites and cultural institutions.

A HISTORIC LINK TO FLORIDA It’s easy for my baby-boomer generation to forget that Cuba, often called “the Pearl of the Antilles,” has a colorful and important history that began centuries before Fidel Castro established a revolutionary socialist state. The Spaniards founded Havana in 1515 to be the “strongbox” for the gold they accumulated in the New World. Explorer Hernando DeSoto was

the first Governor of Cuba in 1536 and even left his wife in Havana when he set sail for Florida’s west coast. Spain controlled Cuba for nearly three centuries before Havana fell to a British invasion in 1762. A year later, however, Britain swapped Havana for Florida, and Spanish rule returned until 1898. After Teddy Roosevelt and his Rough Riders defeated the Spanish at the Battle of San Juan Hill, Spain ceded control of Cuba to the U.S. Today, the Spanish Colonial buildings in Old Havana survive alongside architectural influences from Great Britain, France and Italy. The people of Havana, called Habaneros, take pride in the exquisite architecture, which is a reminder that the nation once had considerable wealth. Unfortunately, that wealth evaporated after the 1959 revolution and many buildings fell into disrepair. Today, the Pearl of the Antilles may lack its luster, but with the help of UNESCO many historic gems are being restored. The Plaza Vieja (Old Square) is a prime example of Havana’s transition toward becoming a tourism destination. Once in

complete disrepair, the plaza is in the final stages of restoration with restaurants, boutiques, a photography museum and even a planetarium. Private enterprise is

also creeping into the socialist state with many family-owned restaurants, known as paladars, throughout the country. The Cuban cuisine was prominently showcased during our journey, which included an evening at Havana’s Artechef Cooking School where we learned to make the perfect Mojito, considered Cuba’s welcome drink. “After you spend a week here, you’ll see there are more things to keep us together than to keep us apart,” said Abel Contreras de la Guardia, our guide from Habanatur, the government-owned tour agency.

Indeed our group came away with hopes that we would each be able to return someday on our own. In the meantime, however, the U.S. embargo still exists (as of press time) and Cuba is still very much in transition. Even Cubans on the street admitted there aren’t enough hotel rooms for the expected onslaught of Americans. Many of the historic sites are government-run and access can be difficult without an experienced guide. Despite the paperwork and challenges of getting there, Cuba is definitely a pearl worth seeing.

“Men no longer need to suffer from frequent urination because they are getting older,” says Dr. James Young, a down-toearth urologist with 33 years of experience in treating men with prostate problems in Lake County. Although the cause of these symptoms is most likely an enlarging prostate (BPH), a normal part of the aging process in men, treatment options are more numerous and less invasive than those offered to our fathers and grandfathers. Years ago there were two options for treating an enlarged prostate: surgical excision via an open operation (knife) or much more commonly by performing a transurethral resection of the prostate (TURP), commonly referred to as a “roto-rooter” by patients and physicians. Both required hospitalization as well as major anesthesia and could be fraught with complications such as bleeding, infection, loss of bladder control and even death. “In my career I have performed over 3,000 TURPs; however, I no longer perform any,” says Dr. Young. “There are presently too many excellent alternatives to consider a hospital operation for the vast majority of patients with BPH.” “When I see a new patient I perform a physical examination and properly evaluate the patient’s symptoms, thus diagnosing the underlying problem(s),” he says. “Next, I describe to the patient what’s normal and then explain what is abnormal with him. Lastly, I teach him his treatment options. If I’ve done a good job of teaching, he will select the correct option for himself.” While prescribing medications for BPH can be done by primary care physicians, only urologists are trained to thoroughly

evaluate the bladder and prostate (including ruling out prostate cancer), as well as providing extremely effective minimally invasive, office-based therapies as alternatives to lifelong medical therapy. or Chef Dave Del Rio, when it comes to his love of cooking, it’s all about the people. Dave has been in the restaurant business for nearly 30 years. He started out working with family and friends in some popular restaurants in the Tampa area, and now has brought his expertise and love of cooking to Weirsdale, where he is chef at Eaton’s Beach Sandbar & Grill. “I love what I do,” Chef Dave said. “It’s all about the people. I get to throw a party every day; I really do.” Hailing from Ybor City, the popular chef presided over the openings of more than 100 restaurants throughout his career. He also worked as a corporate research and development chef for OSI Restaurant Partners, the parent company of Outback Steakhouse.

Chef Dave’s “Florisiana” cooking style combines “3 C’s and a little BS,” he said. That would be Cajun, Creole, Low Country, Barbecue and Spanish. Melding these five styles provided the chef with his own unique flavors. He also uses the term “Florisiana,” which comes from the combination of flavors from Florida and Louisiana. “Inspiration for dishes comes from everywhere,” he said. “But I’m very precise when cooking, very scientific.” Located on Lake Weir, Eaton’s Beach features a whitesand beach, swimming area, lots of outdoor seating, beach volleyball and more. THE MUFFALETTA This unique and tasty sandwich is traditionally prepared on a round Italian loaf large enough to feed four or more hungry people. A distant relative of the Italian sub, the muffaletta has different layers of meats and cheeses, flavored with Italian olive salad and olive oil instead of mustard and mayonnaise. Layers of Genoa salami, ham, capicola, mortadella, provolone, and mozzarella make up this 100-yearold creation. True muffaletta bread is difficult to find outside New Orleans, so we use Italian Ciabatta as a delicious substitute. The muffaletta is the quintessential picnic sandwich, which actually improves after it is made; the resting stage is essential for the best flavor. Make the sandwich the day before you want to enjoy it, wrap it in plastic, and let the olive salad’s rich flavors soak into the bread. But don’t worry if you can’t wait, you will still enjoy an awesome sandwich. FOR THE SANDWICH 2 loaves Italian bread or 8 Ciabatta rolls 8 oz. thinly sliced Genoa salami 16 oz. thinly sliced sweet cooked ham 8 oz. sliced mortadella 8 oz. sliced cappicola 8 oz. sliced mozzarella cheese 8 oz. sliced provolone cheese FOR THE OLIVE SALAD (This will make a little extra —trust me, you’ll be glad)

A FEW SALAD TIPS To make a great salad, first find the freshest ingredients and lettuces that you love. Fresh cucumbers, tomatoes, red onions, corn, baby field greens, tender romaine hearts—you get the idea. Wash your lettuce (this means all lettuce including the packaged stuff) in cold water and then spin dry. Yes, I am suggesting that you invest in a good salad spinner. It will make your lettuce last longer. You are washing out sand or anything that might be in the lettuce. It’s worth it and dressing will stick better. Balance the textures in your salad. If you have something soft and creamy (like avocado or goat cheese), make sure to also include something crunchy (like nuts, croutons or potato sticks). The contrast will give it more interest. Don’t go crazy with the dressing. Go light and have extra on hand. This will allow the flavors to shine.

DIRECTIONS (If serving warm, preheat oven to 325ºF)

• Cut bread in half. Pull a small amount of the bread out of each bun to form a pocket to hold olive salad. • Place the olive salad on the cut sides of each half of the bread (1/4 cup per side) depending on size of bun. Be sure to use some of the flavored oil with the salad. • Place the mozzarella over the olive salad then add the salami and ham. Place 1 tablespoon of olive salad in the center of the ham, then add the cappicola and mortadella. • Place the provolone on the top piece of bread, completely covering the olive salad, and place on top of the bottom half to make a sandwich. • Tightly wrap the sandwich in clear wrap and refrigerate until ready to serve. • Or tightly wrap the sandwich in aluminum foil and bake until sandwich is heated and cheeses have melted, 15 to 20 minutes. • To serve, unwrap the sandwich and slice into portions.

THE SALMON SALAD (Feeds 2 to 4 people)

8 c. mixed lettuces 2 large ‘vine ripened’ tomatoes, diced or wedged or a handful of grape tomatoes ½ c. grilled corn kernels 1 c. peeled cucumbers ½ c. goat or blue cheese crumbles ¼ c. diced red onion (optional) ½ c. diced hard cooked eggs ¼ c. crisp-cooked chopped Applewood smoked bacon ½ c. croutons or potato sticks

6 to 8 oz. Balsamic Vinaigrette dressing 1 4-oz piece of grilled and glazed salmon, per person TO PREPARE SALAD • Place all salad ingredients into a mixing bowl. • Drizzle dressing over salad ingredients and toss until all ingredients are combined. • Portion into salad bowls. • Top with glazed salmon and garnish with bacon. TO GRILL SALMON For great grill marks, grilling grates must be very clean, very hot and lightly oiled. Lightly oil salmon pieces and place skin-side up on prepared grill, cook approximately 2 minutes, then with a clean oiled spatula, rotate all pieces ¼ turn and cook an additional 2-3 minutes depending on thickness. Gently flip all pieces and immediately baste with warm glaze. Allow to cook an additional 2-3 minutes. Glaze liberally and remove. Place one piece of fish on each prepared salad. FOR SALMON GLAZE; 1/2 cup orange marmalade 1/4 cup favorite barbecue sauce 1 tablespoon orange concentrate (not reconstituted) 2 teaspoons sesame oil 2 teaspoons reduced-sodium soy sauce 1/2 teaspoon grated fresh ginger root 1 garlic clove, crushed 3 tablespoons white rice vinegar • Combine all ingredients in a saucepan and blend well with a wire whip. Heat just to boiling. Remove and cool or use immediately to baste salmon.

urner’s Kitchen+Bar in downtown Leesburg offers a taste of big city living right here in Lake County. Looking around at the trendy, modern décor and taking in the sleek, upscale atmosphere makes it easy to believe you’re dining in New York City or Chicago. In trying to describe the atmosphere of the restaurant, I found myself falling short of the proper words. The restaurant’s website describes it as, “A New American concept with a hint of the South Carolina ‘Low country.’” I couldn’t have put it better. The dinner menu is concise and features specific items. You won’t find a scatterbrained, all-over-theplace menu here. The appetizer menu features items such as Fire-Grilled Chicken Wings and Baked Artichoke Hearts. I am a Southern girl at heart and love my mom’s fried green tomatoes, so Turner’s Fried Green Tomato Caprese intrigued me. The tomatoes were perfectly crispy and sandwiched between chunks of warm mozzarella. Micro-lemon basil garnished the top of the dish. And—get ready for this—chocolate balsamic and blood orange olive oil were generously

drizzled over the top of it all. The Southern twist to this traditional Italian dish was unique and had my taste buds demanding more. Dinner options included various salads and sandwiches, as well as “supper” items such as Sea Island Shrimp and Grits and Chicken Daufuskie. I had so much trouble deciding, I had to ask my server Jay Bowles for advice. He knew the menu inside and out and gave great recommendations. After some deliberation, I tried the Turner’s Filet & Egg, which featured a 6-ounce filet mignon over a bed of fluffy grits, topped with a fried egg, caramelized onions and Swiss cheese. The grits and fried egg complement the steak well and add that hint of Southern flare to the meal. The steak (I ordered it medium)

was tender and juicy and melted in my mouth. I also tried the Caramelized Diver Scallops. This dish stole the show with the sweet, orange blossom glazed scallops. The tender morsels were some of the best scallops I have ever eaten (which says a lot because I go scalloping every season in the Gulf of Mexico, so I have had them very fresh). They were served with a bacon-wrapped grit cake and black-eyed peas and tomatoes. The grit cake was crusty on the outside and warm and fluffy on the inside. And, the side of peas and tomatoes should not be underestimated! I am not sure what sort of seasoning they used on the peas, but it was to die for—not too salty and very simple. Needless to say, I cleaned my plate, which is a rare occurrence for this picky eater.

And, just when I thought the meal was over, Jay offered the dessert menu and my jaw dropped. A sweet potato cheesecake?!? Yes, please! The dessert menu has a daily special cheesecake, Chocolate Ganache Cake and a White Chocolate Chunk Bread Pudding. The cheesecake was moist, flavorful and the perfect texture—not too dense. It had a small amount of caramel on the side with some whipped cream. It was the perfect ending to a fabulous meal. The sweet potato flavor wasn’t overpowering, but it couldn’t be missed either. When you visit, be sure to check out their beer and wine list. They have an interesting craft beer selection available as well as a modest wine list. There’s also a fullservice bar.

DOG DAYS OF SUMMER Winter is coming. On any other day you could assume I was referencing Game of Thrones and you’d be right. But not today. Today I’m sitting at my local dog park. Today I’m sitting in the 94° heat at my local dog park sweating my freckles off. Why? Because, as my wife, Shelly, reminded me, “Blue needs his play time.” Of course she was right — she’s always right. So I begrudgingly grabbed the leash, which signaled our Catahoula-mix hound out of his coma-like state into full-on berserker mode. He bounded from his pillowy perch on the couch — his tail whipping around seemingly of its own volition. While I struggled to get the leash attached, I spied a bogey from the corner of my eye. My son, Max! As he darted out of the room, the sly smile on his face told me this was a strategic retreat. Won’t be drafting him as my wingman to the park today. I couldn’t help but smile. I opened the front door and the smile was slapped off my face by the sticky, humid backhand of the Florida summer heat. Any hopes of a quick return to the cool embrace of modern air conditioning

melted away as Blue stared up at me seemingly oblivious to the inferno we had just stepped into. “Let’s go!” I said. But as he trotted forward, I couldn’t resist muttering, “Dumb dog!” under my breath. Now as I watch Blue joyfully weaving in and out of the blurry patchwork of fur that are his instant park pack, I can feel the sweat running down my forehead. Beads, like the dogs running through the park, weave a trail down my neck and gather into a dark “pack” on the ring of my t-shirt collar. Closing my eyes, I listen to the musical symphony of barks and yips and pray for a cool breeze. I hate the summer heat! It’s not just that I dislike it — I’m not built for it. My ancestors all hail from Russia. I’m built of hearty peasant stock. I think of them in scenes right out of Dr. Zhivago. Crossing vast snow-covered wastelands. Drinking vodka and wrestling the occasional bear. I’m sure they could never have imagined that two generations later, one of their descendant boychiks would be crossing sweltering swamplands. Drinking iced tea and keeping an eye

out for the occasional gator. Even the dogs seem to be feeling it now. They run over to the water bowl for frequent drinks. A few of the smarter ones even attempt to use the bowl as a mini-pool with varying degrees of success. I’m reminded of my brother-in-law, David, who is from South Florida. “Born and raised,” he says with pride. I’ve watched that man shivering while wearing a thick down winter coat … in a Denny’s because he’s not used to these harsh Central Florida winters! He would love this dog park. That’s when I see her. A beautiful white and grey ball of thick fur off to the side of the perimeter. A husky. She’s not interested

in running around with the pack in this heat. She just lies there in the shade and the dirt, panting hard and trying to stay cool. She’s not made for this climate either! I imagine somewhere in her family tree was a champion sled dog. Maybe they even lived in an igloo. She’s every bit as uncomfortable as I am. Especially with all that fur! Suddenly she turns her head and looks straight at me — just for a moment. What I see in her eyes can only be described as … recognition.
