Updates in RBOI’s Groundbreaking Melanoma Treatment

More than 20 years ago, Dr. Norman Anderson at the Robert Boisonneault Oncology Institute successfully treated a man whose metastatic melanoma had produced 23 brain lesions. Anderson performed whole brain radiation, administering low doses twice a day. His discovery led to a study with 19 patients, whose melanomas together had metastasized to the brain, other areas of the head, neck, lung, abdomen, liver, pelvis, and extremities, along with lymph nodes. They had all exhausted their other treatment options.

In a recent presentation, Dr. Anderson reports that 108 patients whose melanomas involved 171 areas in the body have completed treatment. Eighty percent of people whose melanoma was metastatic at the outset are alive three years after radiation treatment,

and the occurrence of further disease elsewhere over time has been “markedly diminished if not eliminated, increasing the potential for a cure.” Other patients have remained disease-free for up to a decade and longer.

Dr. Anderson’s radiation protocol, often used without the addition of surgery or pharmaceuticals, eliminated melanomas that had been resistant to other procedures, or that had returned following surgery, chemotherapy, and immunotherapy.

Dr. Anderson points out that timing is key, and there is a big difference between once-daily radiation (the current standard of care) and smaller doses of twicedaily radiation. More frequent radiation has eliminated tumors even in untreated areas, a historically rare phenomenon called the abscopal effect. Such tumor

reduction beyond the treatment area may be due to an immune response resulting from the repeated lower radiation doses.

Twice-daily radiation can eliminate all signs of the disease, reduce side effects significantly, and extend patient survival, for a small fraction of the cost of other treatments. According to the medical literature, treating advanced melanoma in which surgery is not an option can cost around $1.6 million to add a single year of progressionfree survival. “This places overwhelming and undue pressure upon our medical oncology colleagues to deliver both optimal care but with little or no ability to control its financial burden,” Dr. Anderson says. “Treatment with twice daily radiation as an alternative appears to offer optimum results while markedly decreasing overall cost to a few percent.”

Annual melanoma deaths in the US total 8,000 and rising. Twice-daily radiation may help reverse that trend. Patented in the US and Australia, with 34 patents pending in Europe, Dr. Anderson’s treatment protocol is poised to serve “an essential therapeutic role for melanoma.”

I began to fall in love with Groveland when: I became a board member of the Groveland Historical Society and Museum. Just learning about the history and the southern avor, along with the residents, is how Groveland really got into my blood.

One of my first acts of community activism in Groveland was: When I moved into a deed-restricted community, Cascades of Groveland, in 2006. Our development was going bankrupt and my husband, another resident and I would go to all the city council meetings to know what was going on in the city and within our community. We knew the city o cials well and they knew us.

A way I connect with the community is by: Always attending all the city events we have, and I love interacting with the kids. I’ve gone into the dunk tank and worn the silly out ts. I don’t look at myself as mayor. I say I am the grandma cheerleader. In fact, the South Lake High School cheerleaders gave me a set of pompoms. The youth is the future, and I am looking to start a youth council as a way of getting them involved in knowing how government works.

My mentors as mayor have been: The four major facilitators that were part of the Florida League of Cities in 2009. They all became my mentors because they made themselves available if I had questions; I could call, I could email. If I don’t know something or have a question, I want to be put on the right track. I will go to who I need to ask the questions I need answers to.

I would describe myself as: A strong determined person who ghts for what I believe in.

Family Legacy: I am the third generation to graduate from LHS, from grandparents on both sides. Unfortunately, my great-grandfather passed a few years back, but I always thought I would make him proud to give back to a community he loved. He and my great-grandmother opened the original Decorating Den on Main Street, and he served the City of Leesburg as battalion chief at Leesburg Fire Station 61.

Giving Back: On top of my high academics, I prioritize giving back to our community. We always talk about supporting the trades, but I serve SkillsUSA nationally, representing over half a million active members. This opportunity was only awarded to eight high school students across the country. In my role, I help lead the largest gathering of America’s future skilled workforce and the ultimate recognition of excellence in career and technical education.

Advocacy: I serve as an advocate for Career and Technical Programs, ying back and forth to Washington, D.C. frequently to meet with representatives in Congress and from top CTE (career and technical education) lobbying rms and departments of the president’s executive cabinet.

Future Endeavors: Chef John Bell has inspired me to one day give back by teaching. Many people here in Leesburg struggle to put food on their plates. I think there is an easy solution to teach our kids framework skills in schools. These fundamental skills, like integrity, teamwork and leadership are needed in the real world. THE U.S. COAST GUARD estimates that life jackets could have saved the lives of over 80% of boating fatality victims. Accidents happen very quickly on the water. As a boat operator, you are responsible for the safety of your passengers. Everyone on board should wear a life jacket all the time, while underway.

TO MEET U.S. COAST GUARD REQUIREMENTS, all vessels must have a U.S. Coast Guard Approved life jacket for each person aboard. Boats 16 feet and over must have at least one Type IV throwable device as well. Life jackets must be in serviceable condition and within easy access.

A CHILD UNDER THE AGE OF SIX must wear a USCGapproved Type I, II, or III personal floatation device while on board a vessel under 26 feet in length, while the vessel is underway. Adult-sized life jackets will not work for children. To work correctly, a life jacket must fit snugly and not allow the child’s chin or ears to slip through. It is not “one size fits all”. Child life jacket approvals are based on the child’s weight. Check the “User Weight” on the label.

LIFE JACKETS should be tested for wear and buoyancy at least once each year. Waterlogged, faded, or leaky jackets, should be discarded.

NO ONE may water ski or use another aquaplaning device unless they are wearing a USCG-approved life jacket or PFD. Inflatable PFD’s are prohibited for skiing/aquaplaning.

The dream started in her backyard, of all places.

“I was just jumping on the trampoline like most children do, doing ips and everything, when something went wrong,” Dr. Reddy recalls.

“When I hopped o and started walking, there was a lot of pain and it hurt to breathe.”

Dr. Reddy says her mom took her to the town chiropractor. And the rest is history.

“He put me up on the table and adjusted me. That was my very rst adjustment and when I got o the table, I was like, ‘Wow, the pain is gone. I can breathe,’” she recalls. “I always knew I wanted to be a doctor of some sort and help people. After all, my mom was the administrator of a hospital, so we were there all

the time, but it was at that moment I decided a chiropractor is the kind of doctor I wanted to be.”

From that point on, she used her allowance and any money she made to get adjusted. She’d listen intently and ask questions every time she went for an appointment. Her chiropractor’s belief that the body's innate ability to heal itself became hers as well. In fact, it ignited her lifelong passion for chiropractic care.

During her adolescent years, Dr. Reddy confronted her own battle with anorexia nervosa, a harrowing journey that would shape her understanding of health and wellness from a whole other perspective.

“IT WAS A PIVOTAL POINT IN MY LIFE. I STRUGGLED WITH ANOREXIA TO A VERY SEVERE EXTENT. IN FACT, I WENT INTO CARDIAC ARREST THE DAY AFTER I TURNED 16 AND THEY RUSHED ME TO THE HOSPITAL NOT KNOWING IF I WAS GOING TO SURVIVE OR NOT,” DR. REDDY SAYS. “FORTUNATELY, THEY GOT ME THERE IN TIME AND DOCTORS WERE ABLE TO REVIVE ME.”

Dr. Reddy says many years of struggle trying to change her relationship with food ensued, but her desire to become a chiropractor helped.

“I knew I had to do what I had to do to get to where I wanted to get. My drive to become a chiropractor was a huge part of my recovery,” Dr. Reddy explains. “And fortunately, because chiropractic is a form of health care that is all-natural, I was able to bring myself back to health without a lot of medications.”

She was also able to gain insight into the delicate interplay between mental, emotional and physical well-being, which plays a big role in her practice today.

A VISION OF HEALING

Dr. Reddy graduated with a degree in chiropractic medicine from Parker University in Dallas. In 2004, she and her husband and two young children moved to Ocala, where she started her own practice.

When she became pregnant with her third child, Dr. Reddy slowed down. She continued treating a small number of patients exclusively at her home, which enabled her to be a mom while still helping others. The setup worked well until about eight years ago when Dr. Reddy developed unexplainable and virtually untreatable pelvic oor pain that slowed her down considerably.

“There was no relief. The pain was relentless and no matter what I tried, it was hopeless,” she says. “I started with chiropractic care, massage, acupuncture, supplemental therapy, mental therapy — everything natural — and nothing was touching it.

“I couldn’t think, and I would cry myself to

sleep every night. It was basically taking my life away.”

Dr. Reddy says the cycle went on for four months. In desperation, she turned to pain and anxiety medicines, but to no avail.

“I went the medical route, tried testing and exploration and still could not gure out where the pain was coming from, why it was there or the root cause of it,” she says.

In researching symptoms, Dr. Reddy came across a condition called Pudendal Neuralgia, which sounded a lot like what she was experiencing. She read that Class IV Lasers had success in treating the ailment.

And her chiropractor just happened to have a Class IV laser. Unfortunately, the practitioner wasn’t trained in using it to treat pelvic oor conditions. So Dr. Reddy contacted the laser company.

Dr. Reddy was blessed to meet a medical rep who treated and trained her on how to treat her condition and then o ered his laser to her for a

couple of weeks. In a matter of days, she found some relief for the rst time.

“After about the third day, I had a break in the pain and thought, ‘This is promising,’” she recalls.

Dr. Reddy then purchased her rst laser and committed to extensive training and education. The course of her entire practice changed once she discovered all the possibilities of laser therapy and added the state-of-the-art technology to her practice.

She says it helps patients with neck, back and other musculoskeletal pain, as well as those with skin conditions

and other female issues like an irritable or overactive bladder, vaginal pain and dryness and more.

“I wouldn’t be here today if it wasn’t for that laser and the sales rep that was determined to help me through my healing process knowing how powerful Class IV therapy is. So although I continue to o er chiropractic care, the lasers became a huge part of my practice,”

Dr. Reddy says.

She also discovered that shockwave treatments — along with lasers — treat pain and in ammation.

THERALIGHT FULL BODY RED LIGHT BED

Shockwave treatments also help eliminate cellulite and fat pockets, her nemesis despite long hours at the gym and countless other ine ective cellulite treatments over the years that left her disappointed and defeated.

Driven by her journey and support from family along the way, Dr. Reddy envisioned Cell-U-Light Therapy Center as a haven for holistic healing. She saw it as a sanctuary where patients could embark on transformative journeys towards radiant wellness: “Where wellness begins with Light.”

In 2021, she began o ering full body treatments for her patients with her new TheraLight Full Body Red Light Bed.

Live Well Foundation of South Lake is commemorating its five-year milestone. Donna shared that while the Live Well’s philanthropic work is deeply meaningful, it is the stories of impact these nonprofits make in our community — and individuals whose lives are improved or changed — that is to be celebrated.

The grant-making foundation seeks to inspire sustainable initiatives that enhance health and wellness in the South Lake community. The board of directors and appointed officers take responsibility beyond the grant cycle, acting as champions for the non-profits they serve, their clients and their mission.

Donna says, “As executive director, I exist to serve our grantees. I walk beside them as they prepare their grant applications, meet their boards and tour their facilities.”

Live Well goes through two grants cycles each year—spring and fall. Letters of intent are answered with invitations to apply and the relationship begins.

“The nonprofits we work with are already doing amazing work in our community. The grants we provide transform them to another level, allowing them to serve more clients and move closer to being self-sustaining, so they can continue to do their work into the future.”

Sheri Olson has been with Orlando Health South Lake Hospital for nearly 20 years and has lived in south Lake County for more than 30 years. At the young age of 26, Halie Adrid has accomplished more than many people her senior. “I’ve always wanted to be an attorney,” Halie says. “I’m very competitive, aggressive and confrontational and I like to argue.” She admits that she was always the designated rule follower (and enforcer) when it came to games and it finally is paying off for her career.

What started as a 7-acre corn maze and pumpkin patch, evolved into educational field trips for schools to teach young students the importance of agriculture.

Haley says the job has its challenges but is worth it.

“We deal with all kinds of variables in farming but watching our work grow right in front of us is incredibly rewarding.”

Local food pantries essential to combating rising food insecurity.

’ll never forget my rst time standing in line at a food bank. I felt ashamed. I felt like a failure. Looking around, I hoped no one recognized me.

As I stood in the seemingly endless line holding my 3-yearold son’s hand, tears welled up, impossible to contain. How could this be happening to me? I was doing the best I could. I had lost my home, my job and most of my so-called friends. The weight of it all became

too much to bear. I desperately needed help, but I stepped out of the line, walked back to my car and drove away.

Thankfully, a woman from another local food pantry reached out to me to see if I needed anything. It was an answer to my prayers. She discreetly provided me with what I needed, sparing me the humiliation of being watched. Over the next nine months, I slowly but steadily rebuilt my life. With her support and the

resources of the pantry, I was able to stand on my own two feet again. I share my journey because it re ects a reality that many face silently. Despite appearances, countless individuals and families in our communities grapple with food insecurity, which isn’t just about hunger; it’s about the constant worry of not knowing where the next meal will come from and whether it will be enough to sustain yourself or your family.

Recent statistics provided by Second Harvest Food Bank highlight the severity of food insecurity in Central Florida, where one in eight individuals and one in ve children face this challenge. Second Harvest Food Bank of Central Florida, operating across seven counties including Lake, is at the forefront of addressing this crisis by distributing enough food for 300,000 meals daily. In ation and rising rent costs have created signi cant challenges

in the past few years. Despite low unemployment rates, many families struggle to keep up with the escalating cost of living and often sacri ce food to meet nancial obligations. Low-income households attempting to recover from economic setbacks are especially a ected.

The growing need for support is con rmed by data from Second Harvest’s Food Finder tool, which indicates a 77% increase in

searches for food assistance in 2023 compared to the previous year.

Lake Cares Food Pantry’s core mission of providing essential food items and support services directly to those facing food insecurity is supported by the generosity of the community and the guidance of the Second Harvest Food Bank. A food pantry team of three full-time staff members, six part-timers and 262 trained volunteers delivers a range of vital programs and services. That includes a weekend children’s feeding program that serves 229 kids, 15 emergency food distributions each week, support of students with Autism, food assistance for the homeless, stocking new homes with food through Habitat for Humanity, partnering with Forward Paths Foundation to provide food for youth in foster care and running seven satellite distribution sites across the county. The food pantry served 1.3 million lbs. of food (1.5 million meals) to 66,157 individuals in 2023. “We are constantly telling people it’s the working middle class that ends up finding themselves in need of help,” Director Kelsey Gonzalez says. “So many people live paycheck to paycheck that one unexpected expense can mean the difference between having food on the table or paying the electric bill.”

Making art seemed like a luxury, so she

“I’m self-taught. Like everything, you have to practice. I learned a lot watching YouTube videos,” says Karen, who dabbled in oils before nding her niche in acrylics.

At rst glance, you wouldn’t necessarily know she was a Florida painter because her subjects aren’t typical Sunshine State landscapes.

“I look for something that tells a story. Some of my favorite subjects to paint are old structures like barns and log cabins,” says Karen, who usually paints from photos she’s taken or that someone shares with her.

She also does commissioned work. One of her favorite works is the painting of her daughter’s late cat. She used photographs as inspiration after he died.

Karen belongs to the art club in The Plantation at Leesburg where she lives and shows her work in their ne arts festival in February and the Arts Café in December.

She nds it rewarding when her artwork impacts others.

“A woman I play golf with bought one of my paintings and gave it to her nephew. She said it inspired him to pick up a brush and start painting,” Karen says. “It made me feel good to think I’d helped someone.”

Karen, 84, is still adjusting to life since Leigh passed in January.

“He was my biggest fan and always encouraging me with my painting,” says Karen, who’s turned one room into her home studio.

After retiring, she dove into painting. Today,

She also encouraged her players to embrace diversity and value their relationships. Kaylyn demonstrated and taught the definition of respect to the fullest.

Katie lives by those creeds and uses them as motivation every time she plays a sport.

“My aunt meant everything to me,” Katie says. “When we lost her, it was a difficult time, but I play for her and remember everything she ever taught me. It gives me motivation to go out and play my hardest no matter what.”

Katie takes a leadership role in every sport she plays. That’s something that her aunt Kaylyn instilled in her at a young age.

“Playing four sports makes getting schoolwork done imperative,” Katie says. “I make time for schoolwork, be it on the bus, at night or anytime I have free time. It’s not always easy, but academics are incredibly important. I work just as hard at sports as I do in the classroom.”

Katie enjoys spending time with friends, shopping and hanging out with family when she’s not competing.

The Bayly family is very close. Katie’s father James teared up when he spoke about his late sister.

“Katie reminds me so much of Kaylyn. She is like a mirror image of her,” James says. “She meant everything to so many people and when we lost her it was a difficult time. But when people meet Katie, they see so much of what Kaylyn represented that lives on within her.”

As she heads into her senior year, Kianna is eager to continue a family tradition.

“I grew up loving the game of soccer,” she says. “My dad and grandpa played the game.”

Kianna’s family moved from Houston and settled in Central Florida a few years ago.

As a freshman, she played for Tavares High School before receiving a scholarship to join XL Academy.

Kianna has transitioned from goalie — a position she has played her entire life — to a forward and mid elder at the high school level. She excelled at the wing position, and you’d never guess that she hasn’t ever played most of those positions until this season.

“We had two great goalies at The Villages this past season with senior Taylor Fugate, who I look up to, and Bailey Keller, who is

also a senior,” Kianna says. “We decided it was best to try open eld positions this season, and I fell in love with it. I give 110% no matter what I do. I was all-in on being the best player I could possibly be this season and learning as much as possible to help the team in

Kianna also credits her family for her success. “I am so grateful for my parents and family who support me,” she says. “For all the guidance they have always given me to allow me to be where I am in life. They mean the world to me.”

Leesburg weightlifters muscle their way to first girls state championship in school history.

The girls weightlifting team coached by Josh Boyer accomplished the feat by winning both the Traditional and Olympic classes with a total team e ort.

“Being able to be the rst ones to accomplish winning a state championship for a girls team in Leesburg High School history feels amazing,” says weightlifter E’Mia Jones, who wasn’t exactly championship material when she began weightlifting. “I hope it inspires young girls to know that they can accomplish anything you put your mind to. I am a testament to that. I never would have thought three years ago when I started lifting that I would be a state champion, beating some of the best competition in Florida. But here I am. No matter if it’s sports or life you can be who you want to be. If you put your mind to it, anything is possible.”

E’Mia remembers feeling scared when she rst got into the weight room.

“I could barely lift 100 lbs. of weight,” E’Mia says. “When I look back at that, it is very humbling knowing how hard Coach Boyer pushed me to be the best I could possibly be, and now that I am a State Champion, I can look back and see how all the hard work was worth it.”

Brooklyn's Pizzeria fulfills couple's lifelong dream, bringing New York-style favorites to Leesburg.

s any pizza connoisseur knows, all pizzas are not created equal. There’s Neapolitan, Chicago deep dish, Sicilian, Detroit, St. Louis, Greek and even California style. And then there’s New Yorkstyle — thin and crispy, dripping olive oil.

That’s what Brooklyn's Pizzeria & Italian Restaurant owners James and Shawna Pancari brought to Leesburg. This family-owned business is dedicated to delivering the taste of authentic New York-style pizza with a side of hospitality. From the moment you step inside, you're greeted with the aroma of freshly baked pizza, garlic knots and welcoming smiles.

“We just have a love for people,” Shawna says. “All the locals have been super supportive and it’s been a great ve years.”

Growing up in New York, James always wanted to own an Italian deli. Instead, he ended up spending 31 years in the Coast Guard, performing drug and addiction operations, search and rescue and eventually reaching the rank of command master chief. He also worked at the federal prison in Coleman for many years.

Needless to say, his deli dream was put on hold... until the owners of the former Mamma’s Pizzeria in Leesburg approached James and Shawna to see if they wanted to buy the business.

“We had talked about trying to start a restaurant together,” says Shawna, who had her own successful career as chief nancial o cer and realtor. “One thing led to another and we ended up taking it over.”

With no prior experience in the restaurant industry, except for their love of good food, the couple dove

head rst into their new venture. In 2019, both were able to “retire” and go into business together — just in time for the COVID-19 pandemic to hit.

“We thought this would be our retirement job, but we’ve worked harder than we have our entire lives,” James says. “We decided to change the name and rebrand, too. It took some work, but it was the better move in the long run.”

Throughout the pandemic, Shawna and James wondered if they had made the right decision, but the restaurant was able to stay a oat with takeout and a whole lot of love from the community.

Over the years, Brooklyn's Pizzeria evolved from its original, smaller location in the Winn-Dixie Plaza in South Leesburg to a larger restaurant a few doors down to accommodate its growing popularity. After 11 months of renovating two

empty spaces to make one large pizzeria, they were welcomed by a huge crowd eager to celebrate their upgrade.

“When we started, we were mainly takeout and mostly pizza,” Shawna says. “But now, we’ve been able to expand to a full Italian restaurant.”

James and Shawna appreciate all the community love, as well as being able to work with their kids, who have contributed tremendously to the restaurant’s success.

ON THE MENU

With Italian heritage and roots in New York and New Jersey, James infused the restaurant's menu with family recipes, creating a lineup of Italian favorites.

New York-style pizza crafted with freshly made dough and mozzarella shredded in-house is the signature dish at Brooklyn's Pizzeria. Perhaps the most identi able ingredient is the thin and crispy crust made with extremely ltered water.

They o er a selection of gourmet pizzas, including the deluxe, Hawaiian, Margherita, chicken bacon ranch, bu alo chicken, cheesesteak deluxe and white pizza. You can also

enjoy calzones and Stromboli with their signature dough. Gluten-free crust is also available.

Beyond pizza, the restaurant o ers a full Italian menu.

Start your dinner with an appetizer like the pesto chicken at bread, Caprese salad, pepperoni rolls, fried cheese ravioli, or Brooklyn’s famous garlic knots. One of the most popular, and somewhat surprising sellers, are the bu alo wings.

“We’ve been told they are some of the best around,” Shawna says. “You wouldn’t think chicken wings at an Italian restaurant but pizza and wings really do go together.”

A true Italian restaurant menu wouldn’t be complete without pasta. Their most popular dinners include spaghetti, baked cheese ravioli, classic lasagna and chicken or eggplant parmesan. They also o er chicken marsala, chicken broccoli Alfredo, shrimp Alfredo, carbonara, fettuccini Alfredo and other classic dishes. Gluten-free pasta is available.

While it’s not quite the deli James had envisioned all those years ago, the restaurant does o er classic, New York-style hoagies including The Brooklyn Special (a blend of thinly

4 to 5 oz. grilled chicken, seasoned

2 to 3 cloves of freshly pressed garlic

DIRECTIONS :

Stretch out your favorite pizza dough to make the flatbread and place it on a pre-seasoned flat bread screen. The dough is not pre-cooked. Spread the pesto across the dough and place toppings on it. Cook in oven at 500 degrees for 4:55. When it comes out of the oven, remove it from the screen and cut it into 8 pieces and drizzle with the glaze.

INGREDIENTS :

6 jumbo cheese raviolis (frozen or pre-packaged)

Homemade Alfredo sauce see recipe >>

DIRECTIONS :

Cook cheese ravioli as directed. Place in a bowl and pour homemade Alfredo sauce over ravioli and serve. We pair this with our signature garlic knots and salad.

HOMEMADE ALFREDO SAUCE

INGREDIENTS :

1 oz. garlic butter sauce

8 oz. heavy cream

1 oz. freshly grated parmesan cheese

Italian seasoning, salt and pepper to taste

DIRECTIONS :

Bring garlic butter sauce, heavy cream and seasonings to a boil. Add in freshly grated parmesan cheese and stir until combined. Remove from heat.

CAPRESE SALAD

INGREDIENTS :

8 fresh whole mozzarella slices

8 fresh sliced whole tomatoes

1/2 cup diced fresh basil balsamic glaze for topping

DIRECTIONS :

Slice the mozzarella and tomatoes and dice up the fresh basil. To plate, alternate the mozzarella and tomatoes, adding some fresh basil where desired. Drizzle balsamic glaze over the entire dish and serve cold.

She still maintains her full-time job but pitches in by handling the marketing and public relations.

Kris also visits the storefront from time to time to feel the love from the community and support her husband and what their life has become in Mount Dora.

“We try to make movie magic out of what we have,” Chris says.

And what magic it is!

I invited Style Photographer Nicole Hamel and Managing Editor Roxanne Brown to help me su er through eating ice cream and doughnuts for breakfast. I nished the entire plate in about 10 minutes.

Nicole loved the caramel macchiato sundae and Roxanne was partial to the Dole in the Coconut, a pineappleavored Dole soft-serve treat. She mentioned that for people with lactose intolerance and other gastric issues, it was perfectly creamy and didn’t taste any di erent than traditional ice cream.

Dole soft serve is vegan, dairyfree, gluten-free, lactose-free and without cholesterol. Flavors include pomegranate, pineapple, raspberry, cherry, watermelon, lime, strawberry, lemon, orange and mango.

Other vendors in the Marketplace keep up with the Joneses by o ering savory dishes that complement the signature treats at Wa es and Cream, including the wa e stick sundae and a myriad of other specialty sundaes, avor ights and oats like orange Creamsicle and root beer.

The Joneses’ menu research and development comes from listening to the public instead of staring at pie charts in a board room.

“For Valentine’s we did a chocolatecovered strawberry concoction and last summer we created a Barbie Twirl which was really cool and very popular,” says Kris.

Chris credits his wife as being the successful social media guru but admits the greatest marketing draw is the product itself.

“On the weekends, you hear little kids yelling ‘ice cream, ice cream’ and they literally drag their parents over to our window,” Chris says.

The most noticeable aspect about the pair is their lightness and joy. It was on full display when toddler fans Liam and Leia Kabbaz walked up and plunged into their ice cream to the point of distraction.

“There’s something about children smiling and laughing that brightens the soul,” Kris says.

“Instead of my world being full of hate and anger, this has totally changed my life and made me a happier person,” he admits. “Now the new goal is to get Kris here working full-time.”

hen I rst visited Kawachi in Leesburg I felt like I was back home in my San Francisco neighborhood where you couldn’t swing a lucky ceramic cat without hitting a sushi joint.

After I ordered enough Maguro, Ebi, Hamachi and house specialty rolls to feed a sumo wrestler, I glanced behind the bar and noticed the plethora of beautiful bottles lled with sake. Cold un ltered? Flights? Was I dreaming? No, I was not. The shared dream of Anna Hu and her husband, Mason Ma, to bring these delights and traditions to Leesburg became a reality last August.

“I like to drink,” Anna says. “And I love to share my passion for sake

because a lot of customers don’t know anything about it.”

Anna says people will drop in for a bento box or hibachi meal because those delights are widely known and feel safe on the American palate. However, she’s noticed that people become much more open to trying sake once they experiment with sushi combinations.

“The people that order the nigiri and sashimi are the ones who are most likely to try sake because they want to take a chance or they have experience with this type of cuisine,” Anna says.

Sake is basically wine made from polished rice, water and yeast that weighs in at about 15% alcohol by volume. There are various types of sake including sparkling, hot, cold, avored and premium. It’s also known for lessening the chance of a hangover because of the simple, clean ingredients.

Anna carries an impressive array of sake brands like Nigori, Tyku and Hana. And she continues to seek more.

“People have only heard of warm sake but there are so many types that once we start to educate the public, we can nd something that suits their needs,” she says.

Anna also likes to experiment with other spirits to create tropical drinks and house-made specialties.

“I can even make a nice martini from sake and Tito’s vodka,” she says.

At Kawachi, Anna is either behind the bar or oating around the dining room every day sharing her love of sake, sushi and hospitality.

With that, if you are still skeptical about trying sake, Anna will be happy to guide you into the wonderful world of this distinctly Japanese favorite.

From mother’s mantra to lifeline

How ‘cancel that’ became our family’s shield.

he request to “cancel that,” was a common one in my house growing up.

My mom would ask it of anyone who’d dare speak a negative thought into the universe. She wasn’t joking either. If you spoke the thought into existence, you’d better be prepared to take it back where she could hear it loud and clear.

It went something like this: Anyone: “Oh my gosh, it’s so hot outside, I’m gonna die.”

My mom: “Cancel that!”

Or... Anyone: “I may just fall and break my neck.”

Cue my mom dropping whatever she’s doing to run over and say: “Cancel that!”

Sometimes, my sister and I would jokingly respond with a “No, we won’t cancel it,” but she’d hound us until we uttered the sentiment and said it like we meant it.

It would drive us crazy, but we became accustomed to doing it. And

let me tell you, it’s rubbed o ; just ask my kids, husband or anyone who knows me well.

You say something negative, and I’m going to be in your face demanding that you “cancel that.” And yes, I will borderline freak out until you say it. Nowadays, I also tend to pray about things, but in the moment, my mom’s mantra brings me instant comfort and relief.

Guess it’s true when people say you eventually turn into your mom. And you know what? If there is someone I don’t mind turning into, it’s my beautiful, sweet, loving, wise, kind-hearted, feisty, talented, funny, strong-minded mom.

Recently however, we found out that my mom is facing a very serious medical issue and is having tests done to nd out exactly what’s going on.

She called to tell me and after relaying what her doctors suspect it could be, all I wanted to say was, “Cancel that!”

This time however, it’s more serious. I can’t even bring myself to think about the possibility of my mom not being around. After all, she’s my scarecrow. I call her that because in “The Wizard of Oz,” when Dorothy is getting ready to return home to Kansas and says her goodbyes to the Lion, the Tin Man and the Scarecrow, she tells Scarecrow, “I think I’ll miss you most of all.”

And yes, it’s true. Every time I leave Arizona after a visit home, I hug my mom and whisper, “Bye, my scarecrow” and she knows exactly what I mean.

So on this Mother’s Day, my heart will be with my scarecrow, who I love and appreciate dearly. She’s always been there for me no matter what. She’s my biggest advocate, supporter and cheerleader. I can’t even begin to think of it any other way.

And if any negative thought suggesting otherwise creeps into my head, you’d better believe it’s going to be cancelled.
