ancer navigation deals with every aspect of a cancer survivor’s health care, which can include one’s primary care physician and any specialists treating other medical conditions. Cancer treatment affects not only cancer survivors and their loved ones. It affects their entire health care team.
Patient navigation systems are designed to:
· Reduce cancer incidence and mortality.
· Improve patient quality of life.
· Develop education targeted to specific patient needs.
· Provide access to early screening diagnoses and treatment.
· Help patients navigate the health care system.
· Help patients adhere to their medical treatment.
· Remove any barriers to care.
Patient navigation began as a community-based practice, when Dr. Harold Freeman pioneered an outreach program in Harlem, NYC. Dr. Freeman
provided education to a severely underserved group of women with high mortality rates. His studies showed improvement in survival. Over the years, patient navigation grew into a massive, largely hospital-based program, and moved away from its grassroots beginnings.
RBOI returns patient navigation to its community-based roots. Our navigators are licensed clinical social workers. We help bridge the gap between the community and large health systems. When individuals can’t access care, don’t have resources, or need psychosocial support, they reach out to us.
· We help connect them to free cancer screenings when available.
· We work alongside hospital navigators to bridge any gaps in care.
· We find resources, financial assistance programs, and groups to help them overcome barriers. RBOI also donates to Citrus Aid Cancer Foundation and Heartfelt
Unconditional Giving (HUGs Charities to help ease financial burdens.
· We serve on community boards, such as those at Tobacco Free Florida, Cancer Alliance of Marion County, or Rotary Club, to educate and bridge gaps.
We are out in the communities we serve, and we are there when the active phase of treatment ends and people are looking for emotional and mental health support.
Dealing With Survivor’s Guilt
Surviving a cancer diagnosis can create feelings of guilt or sadness around thoughts of people who have not survived cancer, or of the toll one’s illness has taken on family and friends. Known as survivor’s guilt, this common and normal emotional response can be an attempt to make sense of one’s cancer experience, but it can also affect one’s quality of life.
Healthy coping techniques can be used to address survivor’s guilt. These include:

· Seeking social support, including through a support group
· Helping others, such as by volunteering
· Practicing self-care in one’s daily habits

If you’re a regular on the South Lake Trail in Clermont, you may have noticed a device that looks like a mounted solar panel near Victory Pointe. According to Gallus Quigley, Lake County’s recreation coordinator for trails, the device, o cially known as a bicycle-pedestrian counter collects data and documents the number of cyclists and pedestrians using the trail and which direction they are traveling. The high-tech system was installed last October as part of a statewide initiative to monitor non-motorized tra c on trails to help secure grants, infrastructure and more.

GOPHERUS POLYPHEMUS: The North American Gopher Tortoise is one of ve types of tortoises that exist east of the Mississippi — and they live among us! Considered a keystone species, it digs burrows that provide shelter for at least 360 other animal species. Hatchlings typically emerge from their nests between August and November, and this reptile can live between 40 to 60 years in the wild. If you have them on your property, leave them alone, but if you see a tortoise crossing a busy road, you can move it along in the same direction it was headed if safe to do so. It’s illegal to relocate it or put one in your car. Resource: Florida Fish and Wildlife Conservation Commission.
Prepare cocktail glasses by coating rim with lime juice, dip them into Tajin and set aside. Blend cubed watermelon and agave until smooth and strain with a ne mesh strainer into a container. In a cocktail shaker, muddle 3 de-seeded jalapeño slices and lime juice, then add tequila and 1/2 cup of fresh watermelon juice and ice. Shake vigorously until chilled. Strain into prepared glasses over ice. Garnish with jalapeño slices and watermelon. Enjoy!

RSNV began: Red Sox Nation Club here in The Villages was founded in 2011 by a gentleman named Art Plant and I took over as president in April of 2023.
The Club: We are 600 strong with 25 on the leadership team. We take bus trips to Tampa twice a year to see the team play and we also get down to spring training in Fort Myers each season. We meet monthly and have speakers such as former players and we also have a 501(c)(3) foundation that supports local youth baseball and softball.
The Curse of the Bambino lifted in 2004: When the Red Sox defeated the Yankees in four straight games during the ALCS, I was living in Connecticut about an hour and 15 minutes from Yankee Stadium. My daughter was studying at Northeastern in Boston at the time and I drove over for the victory parade, where I purchased a championship ag that I later placed on my father’s grave because he never got to see the Red Sox win a World Series.

The moment it happened: It’s been 20 years, but I do remember game seven of the ALCS, speci cally because the Sox took a huge lead and I was still nervous so I got on my knees in the kitchen and said, “God are you going to do this to me again, are you going to rip my guts out?” Then Johnny Damon hit a monstrous home run and sure enough, they won!
Other hobbies: I’ve been here in The Villages since 2016 and I play a lot of golf and we enjoy socializing. I continue to work in my prior eld as a nancial planner and I’m also very involved in my church, which is called Church at the Springs.
A.L. vs. N.L. at home: My wife Linda is a fan only by marriage. We met in 1975 during the Reds/Red Sox World Series when I was working in Cincinnati. She is still a Reds fan but we make it work as it’s all in fun.
Fondest memory: When I was 9, my dad came to me and said, “You aren’t going to school today.” That day, (September 28, 1960) we went to see Ted Williams play his last game at Fenway and he hit a home run in his last at-bat. I’ll never forget it.

About playing piano: something as simple as a page lled with musical notes can translate into such a beautiful sound. I enjoy performing and sharing my passion with others.

IN THE TRENCHES
The son of a U.S. Marine Corps ghter pilot who attended the now famous “Top Gun” school in 1986, Paul grew up in a family where military service was a tradition. His whole family has served and is highly decorated.
After serving his country in the Marine Corps for six years, he considered making the military his career until trying his hand at real estate. He quickly discovered that his work ethic, natural tenacity, and
people skills were ideally suited to real estate and knew he’d found his calling.
In the last decade, Paul and Young Real Estate® have won numerous awards and have been featured in many magazines. He’s also served on numerous real estate expert panels. Beyond the recognition and awards, Paul’s greatest satisfaction is helping real estate agents and clients.
The pandemic and last few years may have been unusual, but in real estate, the market is always changing.
“The key to thriving is being able to communicate with clients about how the market is changing, where it’s going and what we’re seeing locally. As realtors, we must become experts and master our craft,” explains Paul.
Part of mastering the craft is becoming a source of expert information for clients and having credibility that is proven by experience.
ADDING VALUE
“As a realtor, you have to be able to add value, o er solutions, and be looked at as your client’s trusted source of information with potentially the biggest purchase or sale of their lives,” says Paul, who has made this a priority in his business.
“There are big misconceptions about how the real estate industry is with all the HGTV shows,” he notes. “There has also been a lot of noise from the national media and social media that I would consider extremely misleading over recent years.”
Unfortunately, this can result in home buyers and sellers making uninformed decisions with lasting consequences.
For example, Paul saw talking heads on a national television show recently say home prices will be dropping as much as 25 percent. He points out that this is false information and that rst-time home buyers who believe this and put o buying could make a huge mistake.
“Because interest rates are higher now, closing costs can potentially be covered. Once rates drop back into the 5 percent range, we’ll be back to multiple o ers, skyrocketing home prices and for the person who needs help with their closing costs, it will be even harder to a ord a house,” he explains.
Location, price, condition, and marketing are the four prime factors in any real estate transaction. It’s crucial that an agent knows the local market.
“National trends are almost irrelevant because real estate is local. Clients need to have someone who’s knowledgeable and trustworthy because the local market can be di erent even in the same town and county,” says Paul.
“During Covid and since then, hundreds of thousands of people have moved to Florida and many jobs have been created, which has contributed to skyrocketing home prices,” he says. “Prior to Covid, the average pending contract in our MLS was close to $280,000. By the end of this year, it could hit $500,000. Home prices have nothing to do with gravity; just because they have been going up doesn’t mean they will come down.”
Paul’s passion is helping people achieve their goals and success through real estate, which was the whole reason he launched his real estate school. For years, he’s been invited to speak to students and understood that the classroom and the real world of real estate were very di erent.

avid and Annie Iturrino dreamed of starting a jiujitsu academy together, but they didn’t have the nances. Fortunately for them and for dozens of children and adults who have passed through the doors of their Mount Dora BJJ Academy since it opened in 2013, Dave and Annie found a landlord willing to take a chance on them.
“We didn’t have any money,” David says. “I basically told the landlord, ‘I don’t have the down payment
or the rst month’s rent, but I’m a hard worker.’ He thanked me for my honesty and gave us a chance. We opened three days later.”
And then, a setback. Annie was laid o from her job and the couple found themselves homeless for a time.
The Iturrinos met the challenges with perseverance as they laid the foundation for their academy.
Beginning in a 650-square-foot suite, the couple put everything they had into creating what is now a 9,000-square-foot multi-program facility where they teach adults and kids the art of Brazilian jiu jitsu. And they are still growing.
It’s a dream come true for David, whose interest in martial arts began at the age 4.
“I found jiu jitsu at a young age after having a rough childhood and a lot of pain inside that I didn’t know how to deal with,” he says. “I was made fun of, my family didn’t support me, and I felt worthless, but I pushed through it and worked hard to make it.”
Today, David holds a 5th degree GoJu karate black belt, a 3rd degree Brazilian jiu jitsu black belt and a judo black belt. Annie holds a 1st degree Brazilian jiu jitsu black belt.
AN ONGOING BATTLE
After growing out of their small beginnings, they relocated to a facility o Dillard Street in Eustis, keeping the name Mount Dora BJJ Academy as a tribute to the city that gave them their start.
But the journey hasn’t been all roses. In 2004, Annie was diagnosed with uterine cancer. In 2015, she fought another uphill battle with thyroid cancer.
“It was the hardest thing I’ve ever gone through as a husband,” David says. “I wanted to quit training and never leave her side. But she told me not to quit and keep ghting. Life is hard sometimes, but it’s always a lesson we can learn from.”
Last year, David had his own health scare when he was admitted to the hospital for emergency surgery due to an abscess that nearly cost him his life. To top it o , three months after his surgery, he was involved in a motorcycle accident where he ipped 500 feet.
Yes, this is one tough couple. Despite hurdles, nothing dissuaded them from their mission at Mount Dora BJJ Academy. Their experiences continue to fuel their commitment to teaching, mentoring and inspiring others to push through their own challenges.
The academy o ers a diverse range of programs designed for all ages, backgrounds and skill levels, including Brazilian Jiu Jitsu, No Gi grappling, kickboxing, boxing, MMA, wrestling, judo, tness classes, self-defense and women-only classes. They also host summer camps, after-school programs, and holiday events for kids.
ELEVATE FITNESS
Annie leads the academy’s tness program, Elevate Fitness, which focuses on functional tness and strength training. Annie, a certi ed personal trainer and strength/ conditioning coach, has designed a boot camp-style program that emphasizes mobility, cardiovascular health and overall physical strength.
“I want to teach them how to be strong and t for their entire lives,” Annie says.
The program avoids the extreme weights often associated with CrossFit. Annie’s program promotes sustainable tness routines that participants can maintain throughout their lives. Each day o ers varied and challenging workouts. No two sessions are the same.
Grappling for Life
David and Annie started their nonpro t organization, Grappling For Life, which aims to reach underprivileged youth through instruction and mentorship, providing an outlet and fostering personal growth. The program o ers a structured environment where kids learn discipline, self-defense, and the value of hard work.
“We started Grappling for Life to give kids the same opportunities that helped me turn my life around,” David says.
The nonpro t not only covers training expenses for eligible families facing nancial or medical hardships but also pairs students with coaches for ongoing mentorship. This holistic approach ensures that participants receive the support they need both on and o the mat, helping them build con dence and life skills that extend far beyond the gym.
Back the Blue
As a way of giving back to the community, David and Annie o er free training for all Lake County law enforcement o cials until they reach the rank of blue belt.
“As residents and local business owners, we couldn’t think of a better way to give back to those who continuously make the ultimate sacri ce every day, rain or shine, to protect us,” Annie says.
The free training is available for active-duty law enforcement, including the sheri ’s o ce, Florida Fish and Wildlife Conservation Commission personnel, corrections o cers and Florida Highway Patrol sta . A variety of courses and times are o ered.
RISING SUCCESS
The gym received national attention for training award-winning athletes through local and state competitions. A few even went on to compete at the Olympic level.
Mount Dora BJJ Academy alumni accolades include 27 rst-place overall nishes and 17 second-place overall nishes in the NEWBREED Jiu Jitsu Federation (NJJF), and a third-place win in the Youth BJJ Tour. The academy’s students have also earned countless individual regional and national awards. And two of their athletes quali ed to try out for the USA Olympic team. BJJ Academy is also the o cial training center for the USA Grappling Team, led by Marcos Cruz Santos.
Athletes have the opportunity to train with an elite coaching sta including Santos and Maggie Lira — a multi-time BJJ black belt world champion – and Lucas Lira, another multi-time BJJ world champion.
Training sessions with UFC’s No. 5-ranked Gilbert Burns and Hector Lombard, a Bellator world champion and multi-time Judo medalist, provide students with exposure to top-tier techniques and strategies. These opportunities ensure that every student, from novice to advanced, receives the highest level of instruction and inspiration.
Annie Herrick, a mother of three, relocated her family from Washington state to Lake County so her kids could train at the academy.
“We moved across the country a year ago, 3,000 miles from Washington state, and one of the reasons we moved to this area was actually for this gym,” Annie says. “We tried out a couple of other gyms, but when my boys came in, they instantly loved this gym.”
Annie highlighted the positive atmosphere and personable coaches as key factors in their decision. Her oldest son, now 15, has particularly thrived.
“He’s just grown and blossomed and he’s been able to step into some junior coaching leadership, and it’s made such a huge di erence for him and his con dence,” she says.
Her 11-year-old son has also signi cantly improved his jiu jitsu skills and eagerly attends classes.
“They’re here almost every time it’s open,” she says. “My 11-year-old begs to go to the 6am class, which I draw the line at, but they love it.”
Annie says she is impressed with the life skills her children are learning through their training.
“Discipline, endurance, humility, learning to be gracious whether they win or not – these are all invaluable lessons,” she says.
David and Annie’s vision for the future includes expanding their academy to reach more people and to continue making a positive impact on their community.
“My main mission is to help the kids,” David says. “I was one of them. There are a lot of troubled kids that just need a little help. Investing in them will help decrease the crime rate in our community.”
The couple’s faith also plays a signi cant role in their lives and their academy.
“Faith helped change everything about my life,” David said. “Without God, this gym would not exist. This gym exists because God wants it to exist, and I truly believe that with all my heart.”
In the end, David and Annie hope everyone comes in and feels like family.
“We want everybody to feel welcome,” Annie says. “We don’t want anyone to think, ‘Oh, I’m not good enough. I can’t be here. I’m not enough.’ No, you are enough. You walked through this door.”

eventy-one-year-old artist Uschi Lanier wasn’t inspired to add colors to her artwork until she moved to Florida.
“The life here and subtropical climate, with its plants and birds, somehow it all ts in a way that made me want to use color,” she says.
Uschi began her journey as an artist in Germany, where she was born. She grew up in a house brimming with art —her grandfather was a painter who liked to draw and her mother did opera training.
Uschi herself learned to draw in elementary and middle school art classes.
She started mainly using pencil and black and white charcoal as mediums for her artwork. From there, she occasionally found time to create art while working on obtaining her education degree.
After graduating in 1982, she met her husband, David, who was in the United States Army and stationed in Germany. Uschi was a teacher at the time and would often try to nd ways to incorporate drawing into her curriculum.
In 1984, the couple moved to Cape Coral, FL. There, Uschi became part of the Cape Coral Art League and attended adult art classes. She was nally at a point in her life where she could focus more heavily on her art.
“Being retired at the age of 50, I was looking for something to put my energy into,” she says. “I had my rst solo exhibition
that featured seven of my pieces showcased in a bank in Cape Coral.”
Uschi’s friend Diane Clark wrote poetry that accompanied her artwork and the two ended up putting an exhibition together.
Uschi draws inspiration from photographs she takes of subjects that catch her eye, subjects that metaphorically speak to her when she’s out and about. She also enjoys painting portraits and seascapes.
In 2013, she moved to her current home in The Plantation at Leesburg. She often showcased her work in art exhibits at Florida Plus Realty in Leesburg where the artists all shared the space as a gallery.
Today, Uschi still participates in classes and a few shows. Her most recent accomplishment is winning best of show in the 28th Annual Plantation Fine Arts Festival.

High School (EHS) volleyball player Brooke Fintak is relatively new to the sport.
When Brooke was in eighth grade, she started playing at the local YMCA, where her dad was her coach.
“I thought it was interesting and we were winning,” she says. “I ended up trying out for the Eustis volleyball team when I was a freshman and made it. I’ve loved playing volleyball ever since.”
As a junior at EHS, Brooke led the Lady Panthers in aces (47), serving percentage (93.5%) and kill shots (259!) in 2023.

Brooke is also a tremendous scholar. She boasts a 4.6 GPA and is involved with honors and AP classes.

yler Davis wakes up every day thankful he gets to rise out of bed, head to school and play football.
Tyler, a well-spoken young man his teammates nicknamed “Unc” (Uncle) due to his approachable personality and wisdom, is the starting running back for the Tavares High School Bulldogs. He enters his senior season after rushing for 1,283 yards with 11 touchdowns on the ground and three touchdowns through the air for a total of 1,526 yards in 2023.
But his leadership skills are as impressive than his stats.
“I just love helping people,” Tyler says. “It’s my duty to help the younger guys come up to speed because at the end of the day, I want to leave a lasting legacy at Tavares High. I want to set the program up for success.”
Establishing his legacy hasn’t come easy.
In 2020, his father, Bruce, and mother, Felicia, were hit by a drunk driver and both hospitalized with serious injuries. It took months for the family to recover.
“I actually had to stop going to school during my freshman year to help care for my mom and dad,” Tyler recalls. “They’ve always provided for me so it was only natural that I would step up for them in their time of need. I thank the good Lord that both my parents are still here and can watch me play the game I love.”
The accident brought the family together.
“We cherish every moment with one another,” Tyler says. “Life can be taken away at any point. We love dancing,
hanging out, my dad is a coach at Tavares High, but he is also my life coach. My parents mean everything to me, and I am proud to be their son,” Tyler adds, mentioning that he is also proud of bringing his GPA up after it had dropped to a 2.0.
“I worked hard and have raised it to over 3.4 now and still have work to do to raise it even higher,” Tyler says. Tavares Head Football Coach Gavin Jones says Tyler is “a resilient hard worker who does what’s asked of him.”
“He’s strong mentally and physically,” the coach says. “He’s a great leader to have on the team.”
And as the oldest sibling, leadership comes naturally to Tyler.
“I have a younger brother, Bruce Jr., who we call JR, and a sister named Aria, and they both look up to me. I try to be the best I can be every day to show them what can be possible with hard work,” Tyler says.
Aside from football and schoolwork, Tyler enjoys working at the Eustis Recreation Center, where he is a coach and a youth recreational aide who helps with the after-school program, summer camp and being an overall role model for the area’s youth.

Mikey Napoli’s remarkable journey through hardship.

ount Dora Christian Academy football linebacker Michael “Mikey” Napoli has been on an incredible journey. His father passed away early in his life and his mother was diagnosed with kidney failure when Mikey was 10, but through it all his Uncle Sal Rosania has been a guiding light.
But Mikey didn’t see the light right away. Uncle Sal’s house was where Mikey was sent when he did something wrong.
At rst, Mikey feared his uncle. As time went on, the two began to develop a bond. The punishment of being sent to Uncle Sal’s house became a sort of sanctuary for Mikey over time. As Mikey and Sal bonded ever closer, the two became like father and son.
“I had never really experienced that kind of love until I truly started to bond with my uncle,” Mikey says. Sal could relate to the instability in his nephew’s life.
“I experienced emotional and psychological trauma as a child,” Sal says. “On some level, I understand the struggle that Mikey was going
through. I lived in 18 foster homes as a child from the age of 12 to 15 years old. I also went to eight di erent schools but still managed to graduate high school in just threeand-a-half years.”
Sal graduated from Eustis High School and joined the Marines at 17. After serving in our armed forces, Sal worked as a re ghter and EMT. He then began some business ventures, including his latest, 911 Concrete Pumping & Services, a highly successful Lake County business.
“I see what my Uncle Sal went through, and we just sort of bonded,” Mikey says. “I also see what he created for himself and that gives me so much motivation. I look at him and know that if he could make it through his situations then I can make it through mine.”
Mikey’s respect for his uncle grew when Sal suggested that his nephew transfer to Mount Dora Christian Academy. There Mikey found more love and meaning.
“I transferred to MDCA for my junior year to follow coach Ryan Wooden. He’s a huge inspiration for me and he’s always believed in me,” Mikey says. “I have also never had a coach like Kolby Tackett. He is so engaged and makes sure
we are always good. He always reminds me why we play the game. Megan Ziegelhofer always gives me hugs and uplifts me. The rst time I stepped on the MDCA campus, I was welcomed with open arms.”
Mikey began playing football a few years ago because he promised his grandfather he would play.
“It also helped me with pent-up aggression that had been building in me,” Mikey says. “When I started, I was a small, 140-lb. little kid. I wasn’t the biggest guy when I rst started but I had a ton of heart.”
That stout heart served him well during a truly pivotal moment.
“I was told by a coach during my sophomore year of high school that I wasn’t good enough to go anywhere,” Mikey recalls. “Ever since that coach told me that, I told myself, ‘I am good enough to go somewhere. I have been working hard, I have gotten bigger, stronger, faster.’ And that motivated me more than anyone can ever know.”
Despite challenging times o the eld, Mikey always kept up with his schoolwork — thanks to another caring adult.
“Despite some challenges o the eld that I was dealing with personally, I kept my grades at a 4.4 GPA,” Mikey says. “I would usually
spend time in the afternoons at my neighbors’ house, the Lopezes’.
Mrs. Lopez became a mother figure for me and always made sure my grades were good. I would spend all afternoon at their house and after we finished schoolwork, I would get to play with her kids. The Lopez family was a beacon of hope for me.”
Uncle Sal felt the same way.
“I have so much respect for the Lopez family because they provided Mikey with a good place to study and be a kid,” Sal says. “Although Mikey had his challenges at home, the Lopez family was a saving grace for him and I can’t even begin to thank them enough.”
Playing football is a gift he doesn’t take lightly.
“Nothing on the football field fazes me,” Mikey says. “Any injury, hit or challenge, nothing compares. Any little injury is miniscule compared to the challenges I have dealt with. I can handle anything.”
Looking toward the future, Mikey hopes to play football in college and continue his academic career.
Uncle Sal is sure his nephew will succeed.
“I am so proud of the man he has become,” Sal says. “He’s not had it easy by any means, but I hope people see his story and can be inspired by it.”

“The first three things I think about when I step out on that field are ‘glorify God, make whoever supports me proud, and if Joey was here how would he play?’” Mikey says.
Joey is Mikey’s younger brother. The two don’t currently live together, but Mikey’s love for his brother endures.
“I don’t always get to see my younger brother. He doesn’t get to come to every game but when he does show up and I see him, it’s like my body goes into turbo mode and I play extra hard for him,” Mikey says.
Mikey has advice for people dealing with challenges in life.
“Just know there is a light at the end of the tunnel,” he says. “You can’t make a tunnel without having two ways, so when you step into the tunnel you might see it’s dark, but if you keep walking and see a light, just go towards it, never give up. God does have a plan for you as long as you stay close to Him.”

ituated just o State Road 50 in Groveland, between Kentucky Fried Chicken and Publix, Graham Boy’s BBQ has quickly become a beloved community staple.
The mastermind behind this mouthwatering establishment is Brandon Graham, a seasoned barbecue chef whose journey into the world of cooking began under the guidance of his father in Okahumpka.
“I started with my dad; he owned a food truck," Brandon Graham reminisces. “I worked under him for about eight years, and after that, I branched out on my own.”
Originally from Leesburg, Brandon moved to Groveland after meeting his future wife. She lived in town, and he quickly fell in love with her and the area.
“I ended up starting my family here and that's when I decided to open my own barbecue stand,” Brandon says. “I pride myself on my barbecue and really lock in the best avors doing it the old-fashioned way using a blend of hickory and oak. Sometimes people cut corners to get food cooked faster, but I know it takes time and it makes a di erence.”
Graham Boy’s BBQ, a to-go eatery located at 7352 FL 50 (on the south side of the road), o ers a tantalizing array of Southern-style barbecue delights. Meats include turkey drumsticks, baby back ribs,
spareribs, smoked oxtails, steak, chicken wings, chicken quarters, sausages, pulled pork, brisket and more. Sides include decadent mac and cheese, baked beans, smoked potatoes and candied yams.
Brandon also partners with local farmers to o er locally sourced fruit, including di erent varieties of watermelon, peaches and more, depending on what’s in season.

Still, the star at Graham Boy’s is barbecue and Brandon has perfected the art of smoking meat. For Brandon, cooking is more than a profession — it's a passion that was nurtured since his childhood.
“I used to be in the kitchen with my mom and granny. They would let me come in for holidays and other special times and they would let me prep,” Brandon shares. “As I got
older, I watched closely, and it just compounded my love for cooking. I learned that you really have to experiment to nd out what is good and what’s not.”
“Now when I cook, I put my all into it because I love when people taste my food and say, ‘Man, that's good.’ It just does something to me, and it never gets old, you know what I mean?” Brandon says with a huge, very genuine smile.
Love for barbecue runs in the family. Brandon's sons, including recent South Lake High School graduate Cameran Graham, 16, have followed in their father's footsteps.
“I became interested in cooking when I was about 9 years old,” Cameran says. “I started getting curious about what dishes I could mix together and began experimenting in the kitchen.”
Cameran has also created a unique hot sauce made from peppers he grows, blends and ferments for six months before selling.
“People really like my hot sauce,” he adds. “It's sold out every time.”
Brandon's other sons, Brandon Jr., Brenden and Kayden Graham, are also integral parts of the operation, ensuring that the family legacy continues.
“I have the guys in the kitchen with me, elbow to elbow, so they know exactly what's going on,” Brandon explains. “It's all about passing down the knowledge and keeping the family involved.”

great food; it's a pillar of the community. Brandon and his sons often participate in local events and offer catering services for various occasions.
“We do a lot of catering for parties, weddings, corporate meetings, private events and more; whatever people need,” Brandon says. “It's a way for us to give back to the community that supports us.”
Regular customers rave about the food. Erik Caurthens, a repeat visitor, says it’s one of his favorite spots for anything barbecue.
“I’ve lived here in Groveland for three years and whenever I pass by, there’s always a crowd,” Erik says. “The food is off-the-chain, it’s always inviting and he (Brandon) obviously loves what he’s doing.”
Additionally, Erik’s daughter Samaya, a student at Kaiser University in West Palm Beach, asked her dad for Graham Boy’s the moment she arrived home for spring break.
SMOKED BABY BACK RIBS
INGREDIENTS :
1/4 onion, minced
1 Tbsp. paprika
2 Tbsp. lemon pepper
1/4 cup Worcestershire sauce
1 slab baby back ribs sea salt Water in spray bottle
DIRECTIONS : Sprinkle sea salt lightly and evenly over ribs. Mix all other ingredients and let the ribs marinate in mixture for at least one hour. Place ribs on hot smoker at 250 degrees for approximately 3 hours. Spray with water every 30 minutes until tender.
“I dream about the food here; the smoked turkey legs are my favorite,” she says.
Cedrick Olivier, another local resident whose entire family frequents Graham Boy’s BBQ, echoes these sentiments.
“Many of my family members get food here and it always looks good. I tasted the ribs and wings, but I had to come down here and get my own plate,” Cedrick says. “I need to try all the rest of the stu he makes.”
As for the future, Brandon remains open to wherever the journey may lead. He says the possibilities are endless with help from his sons, but ideas include another spot to cook and sell from, opening a restaurant or expanding with a food truck.
“Wherever God leads my path, I'm with it,” he says. “It's about growing and keeping the family together and sharing our passion for cooking with as many people as possible.”
Graham Boy's BBQ operates from Thursday to Sunday. Hours vary based on the season. The popular eatery usually opens about noon, cooking and serving food until sundown or until they sell out. Either way, Brandon posts daily menus and updates on Graham Boy’s Facebook page, ensuring that customers are always in the loop about what's cooking.
“I always post updates on our Facebook page so people can stay in tune with anything we have going on,” he says.

INGREDIENTS :
1 lemon
2-3 sprigs of fresh thyme
1/2 stick of butter
2 pinches dill weed
2 Tbsp. minced onion
Pernells “signature” all-purpose blend
DIRECTIONS :
Melt butter and spread over salmon. Sprinkle salmon with even coats of Pernell’s seasoning, dill weed and minced onion. Space thyme evenly over salmon. Slice lemon, twist several slices and place on top alongside thyme sprigs. Place dish on top rack in smoker away from direct heat and smoke at 250 degrees gently for approximately one hour until fish is golden in color and flakes easily.

ella Vita Italian Steakhouse welcomes diners in from the hot sidewalk of Spanish Springs with the refreshing cool tones of the Mediterranean.
The upscale casual atmosphere of FMK Hospitality Group’s newest restaurant calms with the serene blend of rustic and modern elements.
“We’re happy to help with the restoration of Spanish Springs by bringing another new restaurant to this area,” says Philip Benjamin, vice president of marketing.
Across the street is Coastal Del Mar, the rst restaurant FMK opened in Spanish Springs (in 2022).

maybe even a little humming and toe-tapping. This festive atmosphere enhances the dining experience two nights a week in the summer and three or four nights a week during the busy season.
Even without music, cocktails at the bar begin the meal with a splash of cheer. The cocktail menu includes standards like Italian paloma and blood orange martini, along with blackberry mojito and watermelon mule for a more modern twist.
POPULAR COCKTAILS
Layers of traditional co ee, cocoa and rum avors with a rich, creamy nish make Bella Vita’s tiramisu cocktail a popular choice of patrons. Creamy but not heavy, this liquid version of the popular dessert is rich but not too sweet to spoil the appetite.
The watermelon mule, another
in a hammered copper mule cup shiny with condensation and bursting with promise of refreshment. Ginger beer adds an unexpected brightness to the vodka-based cocktail avored with watermelon liqueur.
ANTIPASTI
Italian comfort foods, sophisticated seafood and traditional favorites dot the antipasti menu. Pasta fagioli, Sicilian calamari, olive tapenade and 10 other mouthwatering options are featured. An antipasti board o ers Italian meats and cheeses with gs, olives and other tasty bits. A gluten-free presentation is also available. Ciambotta and caprese are other gluten-free options on the ample antipasti menu.
The eggplant rollatini arrives at the table smothered in the kind of rich red marinara sauce that must
gently oured and fried, tenderly give way under the fork, emitting a luscious cheese and spinach lling.
Gorgonzola, a more pungent cheese, avors portions of the Insalate menu, along with spicy arugula, crispy romaine and sharp parmesan. Options include house, Caesar, rocket and antipasto salads.
ENTREES
Bella Vita’s menu does not disappoint the diner who comes to the Italian bistro seeking pasta. Along with traditional favorites like lasagna, linguine with clam sauce and stu ed manicotti, a prominent feature on the pasta menu allows you to customize a pasta entrée by choosing a sauce and protein combination over linguini or mashed potatoes.
In addition to the standard dried pasta, Bella Vita o ers a more authentic option.
“Pasta is a staple on any Italian menu. We take it a bit further by o ering a fresh pasta option that changes weekly,” adds Stephen Maholick, FMK area director. Gluten-free pasta and sides are also available upon request.
Bella Vita converts traditional fare to conform with modern dietary
pork and lamb dishes over parmesan polenta or with mashed potatoes. Classic options include osso bucco, braised lamb shank, Mediterranean sword sh with pomodoro sauce and chicken in a gorgonzola cream sauce.
Salmon Florentine, a twist on an Italian staple, is presented over a pile of velvety polenta infused with herbs and parmesan. The accompanying seasoned vegetables – summer squash, asparagus and red peppers – add color and a gently crisp texture to the dish. Spinach sauteed in garlic and oil adds a traditional Italian avor to this Florentine.
“I’m proud of the diversity we’ve created in the menu at Bella Vita while working within the Italian culinary theme,” says Justin Dovey, the restaurant’s culinary manager.
A more traditional presentation, the veal piccata, is a lunchtime favorite. The tenderness of the veal is elevated by a well-balanced butter, lemon, caper sauce that is bright but not tangy or astringent.
In keeping with the Italian steakhouse tradition, Bella Vita o ers three cuts of angus beef –let, bone-in ribeye and New York Strip – re-grilled and nished with tru e compound butter.
Although the brief dessert menu includes classic favorites like tiramisu, gelato and cannoli, the best way to end a meal at Bella Vita is with the house-made limoncello cheesecake. The recipe was developed by culinary director Brittany Driskell and is prepared from scratch on-site. This modern twist on a classic o ers the light u y texture of a ricotta cheesecake with a sweet crumbly crust and the essence of lemon – all completely gluten-free for guilt-free indulgence.

And JoAnn Daly began a bartending gig at the Elks Lodge #1578 in Eustis.
“I can’t believe it’s been 30 years this month,” JoAnn says.
“I’ve seen it all, from watching babies grow up to saying goodbye to cherished members who pass on.”
JoAnn moved to Lake County in 1983 from Brooklyn and graduated from Mount Dora High in 1988. She worked in hospitality from a very young age into her 20s before a family emergency temporarily took her back to New York in 1994.
“When I returned here, I didn’t have a job so I picked up the
classi eds, had multiple interviews and ended up lling in for a cocktail waitress who didn’t show up for the Elks,” she says. “The rest is history.”
As per the bartender’s “code of silence,” most of the tall tales and legendary shenanigans she witnessed will stay with her. One thing she couldn’t hide, however, was going into labor while on duty.
“It was on August 31, 1996 during a big Elks luau,” JoAnn says. “A bunch of members were dancing in a conga line wearing grass skirts and coconut tops and I couldn’t stop laughing so I’m sure it caused multiple contractions.”
Thank goodness retired Eustis Assistant Fire Chief Buddy Warren was there to help. Her son John arrived a few days later on September 5.

family life until tragedy struck on September 28, 2005 when Greg su ered a massive heart attack and passed away at age 37.
“The Elks immediately rallied around me,” JoAnn says. “They gave us an emergency relief check plus condolence cards lled with donations that paid o our mortgage.”
She is now engaged to John Guenther, who has been her partner since 2007. They enjoy a life with their kids, grandkids and of course, the lodge.
“I’m proud to be a part of The Elks and its members, events, charitable endeavors and scholarships,” she says. “It’s the greatest fraternal organization in the world.”

Kawachi’s new owners, David and Brenda Chen, o er a delightful blend of traditional Japanese cuisine with a New York twist. The Chens, driven by a desire to ll a gap in the local culinary scene, has crafted an authentic fusion experience that caters to diverse palates.
Kawachi’s menu features a wide array of fresh sushi, grilled hibachi options, deep-fried tempura rolls, sashimi, katsu, yaki udon, mochi ice cream and specialty rolls with catchy names and interesting llings. A standout o ering is the “Love Boat,” an Instagram-worthy wooden boat lled with a variety of sushi, perfect for sharing. Other dishes include savory bento boxes, a tantalizing range of appetizers, soups, salads, poke bowls, plentiful vegan options and a children’s menu.
“There are not many places in the area with the selection of sushi and so many specialty items like we have,” David says.
Every dish at Kawachi is made fresh daily, with all sauces—including wasabi, yum yum, ginger, and mango—prepared in-house. David emphasizes the care taken in every element of a dish, from preparation to plating, ensuring a sensational dining experience.
The bar menu at Kawachi is as impressive as the food menu, featuring draft, domestic, and imported beers, spirits, a variety of sake and soju from Japan, refreshing plum wines, and specialty cocktails.

Meet Dr. Todd
Born and raised near Orlando, Todd Gignac graduated from Lake Brantley High School in 1993. He earned his Bachelor of Science degree in exercise and sports sciences in 1998 from the University of Florida and then graduated with honors from chiropractic college in Los Angeles in 2002.
After marrying his wife Carolina that same year, Dr. Todd launched his rst practice in Carlsbad, California, where their daughters were born— Tianna, now 18, and Bella, 16.
After seven years of practicing in California, in 2009 Dr. Todd, Carolina and their young daughters relocated
“down under” when he was recruited to work in Queensland for Australia’s largest chiropractic group.
The family spent the next 11 years in Australia, including seven adventurous months exploring the Outback in a travel trailer.
After three years with the chiropractic group, Dr. Todd again opened his own business with the intention of creating a unique family wellness center.
As happy as they were in Australia, family ties motivated the Gignacs to move back to the U.S. in June 2020. “We just love it here in Lake County and we wanted to be close to my parents,” says Dr. Todd, who prioritizes faith and family. “God has had His hand on us. We’re very blessed and happy to be where we are now.”
Precise treatment
“While I was in Australia, I was exposed to a specialty known as Upper Cervical Chiropractic. I studied it for two years knowing when I moved back to the States I was going to start a practice with this new technique model,” says Dr. Todd.
He did just that, opening Mount Dora Family Chiropractic in February 2021.
Upper cervical chiropractic care is neurologically based and focuses on the most critical area of the spine where the head and neck come together. Misalignment in this region can cause many problems.
“If the upper neck isn’t right, it a ects everything else—from your posture down to your ankles. To properly assess the area requires specialized imaging and thermography analysis,” notes Dr. Todd.
Once a misalignment is identi ed, he uses the Blair Upper Cervical technique and supportive “low force” techniques to make adjustments.
“Every patient has a di erent anatomy so it’s a tailored adjustment for each patient. Because it’s neurologically based, it’s less about the bone and more about the brain and nervous system,” explains Dr. Todd, adding that this approach is especially helpful in addressing chronic migraines, vertigo, low back pain, Meniere’s disease, trigeminal neuralgia and more.
“We’re one of only a handful of practitioners in Florida who use this Cone Beam 3D X-ray and paraspinal thermography,” he says, noting that less than two percent of chiropractors world-wide focus on upper cervical care.
Adjustments are gentle, but e ective. There is no twisting, cracking or popping of the spine.
People who have had spinal surgery—even those with screws, plates and rods—come to the practice without fear of getting adjusted.

od knows I am trying to conquer the elusive beast that is a good night’s sleep. It’s an ongoing battle and a lot keeps me up, sending me beelining it to my Keurig most mornings for a cup of joe.
First o , I’ve been a night owl for as long as I can remember— even as a child. That’s how I became such a fan of late-night TV, watching The Tonight Show transition from Johnny Carson to Jay Leno and now, Jimmy Fallon. Plus, it’s easier to think and get things done when everyone else is asleep, especially writing, a pretty quiet activity, whether personal or work-related, unless you’re transcribing interviews. Another nighttime joy is reading uninterrupted. Many moons ago, this worked out perfectly each time a new Harry Potter book was released. I’d wait in line to buy the newest one for my daughter, an avid reader,
and although I was eager to curl up with it too, I wasn’t about to buy two copies! But no worries—I’d activate my parental authority for lights out around midnight and wait until she dozed o . Then I’d tip-toe in, mark her page and indulge until the wee hours before sneaking the book back. Pretty slick, if I do say so myself!
Being up late also means picking what YOU watch on TV — with no debate. While middle-of-the-night choices were once slim, DVRs, on demand and all the streaming services available now mean you can watch anything anytime and usually without commercials! Or you can scroll through countless videos or posts on your cell without judgement.
Aside from those perks, nighttime for me is when the ‘worrying bug’ bites. Heck, I even organized my entire pantry one time trying to occupy my mind. I also have restless leg syndrome (which I used to think was fake), pre-menopausal symptoms,
a little anxiety, a way too vivid dream cycle and three children—two still at home—constantly on my mind.
I’ve tried over-the-counter sleep aids like melatonin and Tylenol PM (which one time made me hallucinate that my backyard trees swaying in the wind were angry monsters ailing their arms at me), deep breathing, monotonous phone games, white noise apps, sleepy time tea and sleeping with the TV on—though that also kept my husband up—but to no avail.
The only thing left to do, I suppose, is accept that I am no longer a spring-chicken insomniac, but a middle-aged one. So, I’ll go with the ow and get stronger co ee. Any other suggestions? If so, call me anytime, day or night, since I’ll most likely be awake. Sigh.
For now, however, a toast to all the night owls and their endless pursuit of sleep: May we nd peace in our midnight struggles and stronger co ee in the morning!
