hen Doug and I embarked on our journey together, it wasn’t just marriage we were committing to—it was a partnership in every aspect of our lives.
For the past 17 years, we’ve not only shared a home but also a business, and our combined e orts have been instrumental in ensuring its success. This dual relationship is something that often surprises people, given how rare it is for two individuals to share the same passion for the industry they work in.
I often get asked how we manage to blend our personal and professional lives so seamlessly. The truth is, it’s not without its challenges. There are days when the lines blur, and it seems impossible to leave work discussions at the o ce. But there are far more days when this shared commitment brings us closer.
Working together means we understand each other’s daily pressures and triumphs. There’s an amazing support system that comes into play, where we shoulder the burdens of both business and life together. It’s a collaboration not just in tasks but in visions, dreams and aspirations. We have the unique opportunity to build something together that re ects both of our values and goals. One of the most rewarding aspects of
working with Doug is that we get to witness each other’s growth in real time. We’ve learned so much from one another—skills we likely would not have acquired if we were working apart. This continual learning process has enriched our professional lives and strengthened our marriage.
However, I’d be remiss not to acknowledge the importance of maintaining our individuality. While our shared passion for our industry fuels our partnership, we make sure that we carve out time for ourselves. It’s essential to nurture interests and relationships outside of work to keep our connection fresh and invigorating.
For anyone considering working with a spouse, remember that communication is key. It’s vital to establish boundaries and respect each other’s space and ideas. Celebrate successes, no matter how small, and learn from mistakes together.

Healthier Holidays
he holidays can be stressful, even without cancer’s added challenges. Wendy Hall, LCSW, offers these ways to cope.
1. Keep things simple. The side effects from cancer and its treatment can ramp up your fatigue and lower your immunity, so focus on just one or two traditions that are special to you.
2. Shop online. Shopping online, including for gift cards, can help one avoid the stress of large crowds and infection risk. Most stores have great customer service staff available to help, and some neighborhood businesses may offer home delivery.
3. Love is priceless. If money is tight, heartfelt, homemade gifts, “Thinking of You” notes, and digital greetings go a long way to let someone know they are in your thoughts.
4. Ask for help. Consider letting people know how you are doing via email or in a video greeting, or let a close friend share those details if you feel uncomfortable doing so yourself. For in-person gatherings, asking guests to bring a dish to share can keep your work load from becoming overwhelming.
5. Learn and accept your limitations. Use discretion when selecting which holiday invitations to accept if you visit others. Staying in a hotel instead of in a family member’s home may help you relax and restore your energy and give you more control over your space and time.
6. Remember the true meaning of the holidays. Try to focus on the present moment and enjoy your celebration in whatever form it takes. Remember what the holidays are truly about: a time for renewed friendships, being thankful, and sharing with others.
Healthier Resolutions
Healthy practices can cut one’s cancer risk after the holidays are over. Lifestyle-related, controllable risk factors, like excess body weight, inactivity, an unhealthy diet, tobacco use, and alcohol use, have been linked to about 42% of cancer cases and 45% of cancer deaths in the U.S.
New Year’s resolutions to form healthier habits can seem daunting, but the key to success comes in setting small goals and celebrating each achievement.
For example, use stairs rather than an elevator, or set a goal to walk for a specifi c amount of time several days a week. Even a few minutes of exercise can be benefi cial because they can form the start of a healthy and sustainable habit. Talk with your doctor if you are unsure where to start.
The same goes for healthy eating, which can include a variety of colorful fruits and vegetables, whole grains, and foods high in nutrients. Reduce or avoid red and processed meats, sugarsweetened drinks, and highly processed foods. Even small changes in eating habits can form a good foundation on which to build healthy practices.

Love or hate it, eggnog stirs up memories of holiday traditions. Colonists brought versions of the drink over from England and today the avor has permeated everything from ice cream to seasonal lattes. This local countertop company was founded in 1998, but the partners’ connections started decades earlier.
Mark Schroeder and Rick Pitts met in second grade back in 1972. Fast friends ever since, they’ve worked and enjoyed life together--from building homes and restoring old trucks to gol ng.
Mark and Rick were working at an Orlando countertop company owned by Mark’s dad when Karen joined the crew. All three became close friends and eventually decided to launch their own business. Mark and Karen married in 1992.
When Mark’s brother took over the Orlando business following their father’s death, Rick, Mark and Karen didn’t want to compete with family,
so they opened Solid Image in Lake County in 1998.
The equal partners settled on a business name that represented their core values—quality products and exceptional customer service.
“Solid” perfectly described the countertop surfaces. “Image” was about how they wanted to portray their company.
From the beginning, the partners knew that customer service would set them apart. They made communication a top priority, including service call follow-up, addressing issues promptly, and making sure homeowners and builders were taken care of.
“We started working with builders doing new construction in The Villages,” says Karen Schroeder. “After several years in the Leesburg area, we were able to diversify and expanded to being more involved in commercial
construction, remodeling and working directly with homeowners.”

CUSTOM COUNTERTOPS
There’s no question that Pinterest and HGTV shows are educational resources for nding ideas and learning product pros and cons.
“A lot of people also visit the big box stores to look at samples, and then
purchase products from a specialized local retailer,” says Karen.
When customers are remodeling, she recommends they bring cabinet, ooring and paint samples when they come to Solid Image’s showroom to get a better idea of how products will work together. They can also bring home countertop samples to see how they look with their lighting and colors.
Solid Image o ers free in-home estimates. Their well-trained service technician takes photos of the room needing a countertop and can digitize the countertop in their software
program. This provides an accurate way to precisely measure all corners and cutouts. The customer can then come into the showroom to select actual products.
“What’s nice about the digitalizing is that if you’re selecting a product with lots of veining, we can move the image around on the computer to see how you want it before it’s cut,” explains Karen.
Because Solid Image also uses computerized saws, this makes for customized cuts to t each buyer’s speci cations, whether the countertop is made of quartz, marble, or granite.
PARADE OF HOMES
Anyone thinking of buying, building or remodeling would bene t from the upcoming Lake-Sumter Parade of Homes, which takes place from Saturday, February 15 through Sunday, February 23, 2025.
Thanks to the Home Builders Association of Lake-Sumter (HBALS), this week-long event provides the ideal opportunity to gather ideas and inspiration while viewing unique designs and the latest features.
As a member of HBA-LS since 2000, Solid Image regularly participates in the Parade of Homes. Karen has served on the Parade committee numerous times over the past two decades.
“The Parade of Homes is bene cial to everyone involved in the home industry because it lets the public come in and see the work. A showroom is one thing, but this lets people see our products in an actual working kitchen,” says Karen. “It’s a community event that showcases the craftsmanship of the trades, including countertops. The public can see what we do, as well as all those trades involved in putting a house together.”
There’s no obligation to tour the homes, which are open to the public during the Parade.

ON THE PATH TO SUCCESS IN LOVE AND CAREERS
hen Dr. Karl Mueller and Dr. Alina Glatkowski leave their offices each day, they couldn’t be more grateful. After all, these Central Florida natives are back in their home state, doing work they love, and sharing life together.
Dr. Glatkowski, 30, hails from Clearwater, while Dr. Mueller, 35, calls Orlando home. They met at the student mixer on the first day of medical school at Lake Erie College of Osteopathic Medicine in Bradenton.
“In our second year, we took a leap of faith and moved to Buffalo where we did rotations and stayed
Buffalo/Sisters of Charity Family Medicine Program.
As much as they loved their time in Buffalo, both doctors wanted to get back to Florida where their families live.
After interviewing with world-renowned cardiologist Dr. David C. Lew, Drs. Mueller and Glatkowski were thrilled to start work at Orlando Health Medical Group FHV Health in September 2023.
“I always had a big interest in geriatrics. This was such a good opportunity not only to be close to our families but to be working with a patient population we enjoy,” says Dr. Glatkowski, who practices at the Dixie Avenue location of Orlando Health in Leesburg, providing preventive and wellness care, as well as treatment for acute and chronic conditions.
The couple married in April 2024. “We’ve been together 7 years, but didn’t want to get married in medical school and during residency,”
says Dr. Mueller, who practices at Orlando
Health’s Mulberry location in The Villages, offering primary care and preventive services.
It’s only natural when doctors are married to “talk shop” but they’re learning to find balance.
“Alina has a 30-minute commute, so she calls me when she’s driving home and we give ourselves that time to talk about what happened at work,” says Dr. Mueller.
They happily share their hearts and Wildwood home with Chewy, their 6-year-old Shih Tzu, who they describe as “14 pounds of spoiled dog who can do no wrong.”
When they aren’t working, the couple loves spending time with Chewy, checking out new restaurants and hitting the theme parks, especially the roller coasters. (Prior to medical school, Dr. Mueller worked for 7 years as a photographer at SeaWorld Orlando.)
In time, the couple anticipates adding two-legged kids to the mix.
“We’re excited for this season in life, building our practices and a family at the same time,” says Dr. Glatkowski.

he hum and buzz of saws and other tools is music to the ears of the Plantation Woodworkers. The club, formed in The Plantation at Leesburg in 2009, averages 85 members — men and women.
Members use their skills to make all manner of wood items from charcuterie boards to furniture, bowls and much more.
“We try to help the community and have made signs and repaired benches. We also donate to various charities. We made cutout gures for the Camp Boggy Creek Gang and made doll cradles for Toys For Tots. Those are our two main charities,” club president Tom Kaderly says.
The club o ers a virtual woodworker’s paradise — a fully stocked workshop and a 38-foot trailer with more tools.
“The club started so members who only had a few power tools at home could use a full workshop of tools,
including some that many people wouldn’t own,” Tom says. “Everyone goes through a refresher course to be sure they’re safe on all equipment. Once they’re quali ed, members can use the workshop anytime.”
George Kelly has lived in The Plantation for 32 years and been a club member since 2017.
“I like the patience required and that when you get done you have something to show for it,” he says.
George, a skilled woodworker, does safety demonstrations for using tools and also teaches members how to turn wood on a lathe—a machining tool used primarily for shaping metal or wood by rotating the workpiece around a stationary cutting tool.
“Last winter, I had seven students for the lathe,” George says. “I start them o building small projects. Then I’m around if they have questions.”
George is an integral member of the club.
“George does an excellent job of teaching turning. Part of the club is that we help one another,” Tom says.
“I do a lot of wood turning; George Kelly was my mentor,” says Barb Strewler, who joined the club in 2020 during the pandemic when it was the only club open in The Plantation at the time.
Barb enjoys making bowls and charcuterie boards with natural edges. Her typical routine includes going to the workshop several times a week.
In addition to making picnic tables and signs for the community, Barb notes that club members often x pieces for other residents, such as turning a new spindle for the leg of a cherished stool.

A few amateur racing enthusiasts gathered up their old car parts and scrap lumber to cobble together slick, fast and painted derby “karts” for the City of Fruitland Park’s Derby Race held on June 15. Drivers ages 5 and up paid just $25 to enter their karts, with the “Little Rascals” themed division being the favorite. There were multiple winners and places in di erent categories. Korra Ourada won $200 for nishing rst. Chameller and Jaylin Johnson took 2nd place and won $175. Tyler Watts won $125 for coming in third. Weston Johnson won the “Best in Show” trophy. Clayton and Tyler Watts won the trophy for “Most Creative.”

The South Lake Chamber of Commerce held day two of its 34th Annual Teacher Appreciation Breakfast, presented by CEMEX, Orlando Health South Lake Hospital, and AdventHealth on August 6 in the Wesley Center at Clermont’s United Methodist Church for elementary school teachers (High/middle school teachers were celebrated digitally the day before due to inclement weather). The annual celebrations allow the South Lake community to express gratitude and appreciation to the area’s hard-working and dedicated teachers by treating them to a catered breakfast, door prizes and other goodies. Teachers also come prepared with noise makers and excitement for a spirit contest everyone looks forward to. This year, Grassy Lake took top prize for being the loudest and rowdiest group and was presented with a check for $3,000 from local Attorney Meredith Nagel.

“As a 2011 Leadership Alumni, I have found my passion in working within the community,” adds Jonathan. Ana immigrated from Romania, a communist country.
“My family took hold of the American Dream of entrepreneurship and never looked back,” Ana says.
“For the past 25 years, I have built my foundation in the real estate and financial industries. I currently am a licensed real estate broker, mortgage broker and recently obtained my insurance license. Next on the list is title agent license as we continue to streamline our businesses.”
Together, the Germeroths are a force to be reckoned with. Blending a family of seven children and multiple businesses and creating the perfect balance of work and play has been an incredible journey.
Jonathan and Ana successfully built The Living Mortgage Group in 2022. From that foundation came Germeroth Realty, Cure Construction and True-Turf.
“Vertical integration has been key to the success of all of our companies” Ana explains. “Creating an avenue for first-time home buyers is our passion and we continue to improve our processes to make the buying experience easier for our clients.”
With such busy lives, what is their secret to balance?
“Our relationship does not come second to business and business does not come second to our relationship,” Jonathan says. “It is a balance that is required when you have two people passionate about each other and succeeding in our goals.”

Ken and Sue Bragg began building a life together filled with love, leadership and service in 1957 when they met on the first day of college at Western Kentucky University.
The Braggs achieved remarkable milestones over the years, particularly in the field of education. Ken became founder and director of Lake Technical College, where he expanded the institution from just three programs in temporary facilities to a powerhouse with 32 occupational programs over his 40-year career. He also helped establish the Lake Technical College Institute of Public Safety, leaving a legacy that earned him the title of “Citizen of the Year” in Lake County in 2023. Additionally, Lane Park Cutoff Road, which runs in front of the Institute of Public Safety was recently renamed by Lake County Government to Ken Bragg Way.
“My pride and joy comes from seeing graduates—like nurses, HVAC technicians, and even Sheriff Peyton Grinnell—become successful members of the community,” he says.
Sue devoted 31 years to teaching in Lake County, including 15 years at Beverly Shores Elementary and 15 years at Lake Technical College, where she earned Teacher of the Year honors in 1995.
Together, they have influenced countless students and community members.
Their most cherished accomplishment is raising a happy family, which includes two daughters, six grandchildren, and nine great-grandchildren. They also founded “Fresh Start,” a career development ministry with the Christian Care Center, where they both continue to serve and counsel individuals.
Their secret to a long and happy marriage? Common goals and mutual support. Sue explains, “Support each other’s passions and goals.” For Ken, it’s simple: “Just do what she says!”
With more than six decades of marriage and combined service in Lake County education, the Braggs are true pillars of their community and a shining example of a power couple making a lasting impact.

Faith, hard work and mutual respect are the foundation of Donnie and Sandi Burchfield’s successful marriage.
In 2000, they met at a church Bible study, where Donnie was instantly drawn to Sandi’s grace and demeanor. His persistence led to a blossoming relationship and eventual marriage a year later.
Their relationship is grounded in unwavering support for each other’s dreams. When Sandi decided to pursue a master’s degree to further her career as a therapist, Donnie fully encouraged her and took on additional responsibilities to ensure she had the time to focus on her studies while they raised a young family.
“I love her, and I want her to live her dream, so I said, ‘You go back first,’” Donnie says.
Later, when Donnie needed to advance his own education to continue making an impact as a football coach and community leader, Sandi returned the support, encouraging him to pursue his path.
Together, Donnie and Sandi, a licensed marriage and family therapist, founded Family Life Counseling Center. What began as a small practice has expanded into multiple locations employing 70 staff members that provides essential mental health services across several counties.
“We saved for eight years to step out in faith,” Sandi says. “We felt God was leading us in this direction, saying ‘If you bring the practice, I will bring the people.’”
Meanwhile, Donnie has spent over 20 years coaching youth football. Now head coach at East Ridge High School, he focuses on helping young athletes succeed.
“It’s about teaching kids how to win in life, not just on the field,” he says.
Faith is at the center of everything they do, guiding
their decisions and shaping the way they give back to their community. Donnie also serves as the pastor of New Wave Christian Church, a non-traditional congregation they created to reach young adults.
Their advice for making a marriage work is to always support each other’s dreams and maintain balance.
“We’ve always had a date night, and
seperate,” Donnie says. “Even with our four kids, you have to prioritize each other because the marriage is at the foundation of the family.”
After 23 years of marriage, Donnie and Sandi lead by example, driven by their faith and a shared desire to impact the lives of others. They credit their success to the sacrifices they made, their reliance on God’s guidance, and their deep love
Hillary and David Perry got married in 2001 and moved to Ocoee from upstate New York after they graduated college in 2003.
“We grew up in the same small town, but he was a bit older than me,” Hillary says. “We became a couple my senior year and have rarely They credit their strong relationship to a solid foundation, respect for one another and complementary personalities.
“David is the risk taker and I’m the one who likes to stay in a comfort zone,” Hillary says. “It works because we’re both hard workers and trust each other, so being business partners doesn’t get old or in the way.”
The couple had daughter, Mila, in 2004 and continued their Florida journey working in different professions; Hillary was a kindergarten teacher for Orange County Public Schools and David used the construction skills he learned from his developer father to tap into an industry almost exclusive to Central Florida.
“I ended up working for a successful company building aquariums and tanks for SeaWorld, themed restaurants and mansions for the ultra-wealthy,” he says. David eventually found contract work crafting metal sculptures and furniture and through those connections was paid handsomely to build structural art for theme park companies. In 2020, the couple had a rethink.
“I’d been teaching for the better part of two decades and was ready for another adventure,” Hillary says. “And David wanted to design, as well as build, for our own projects.”
They set their sights on opening bars and restaurants in Tavares and used their individual skill sets to start their tiny empire.
“We always wanted to be in Lake County, so we targeted Tavares because it reminded us of where we grew up,” David says. “It’s a destination with so much potential.”

With Nautilus Coffee Co., Ironworks Steaks and Fine Cocktails, The Argonaut Bar and Lounge and Poppy’s Ice Cream underway, they are ready to open their latest project: The Citrus, a nearby boutique hotel.
“It can be stressful and it’s a lot,” Hillary says. “But ultimately it all works because we’re having fun.”

Pastor Brian and Allison Broadway are the heart and soul behind Living Message Church and the nonprofit Find, Feed, and Restore, an organization dedicated to helping families with children experiencing homelessness.
Lifelong friends aren’t surprised Brian and Allison run a Christian charity. Both were raised in the church. In fact, they met there.
Since their 2001 wedding and move from Dix Hills, NY, to Clermont, in 2004, they have transformed hundreds of lives in Lake County.
After attending various local churches, Brian and Allison felt a calling to start their own. “We believe that faith should have function,” Brian explains. “There’s a purpose or a work that we should do to share that faith, not just in our words, but also in our deeds.”
With that mindset, they founded Living Message Church on four key biblical principles: outreach, discipleship, fellowship and prayer.
Outreach is central to the church’s mission. Before gathering the first congregation, the Broadways were already out in the community, walking alongside those in need, helping with job searches and writing resumes.
They soon realized that finding employment wasn’t enough. The cost of housing in Lake County was rising at a staggering rate that created a gap between wages and rent that left many families struggling to afford a roof over their heads. It was during one of their outreach efforts that Brian met a family living in a car, with a young girl sleeping in the back seat while her parents worked. That heartbreaking encounter became the spark that ignited Find, Feed, and Restore.
“We knew we had to do more,” Brian recalls. The Broadways’ goal was simple: house one family at a time and encourage other organizations to do the same. Starting small, they converted a donated travel trailer into a temporary home for the family, and their daughters Hannah and Grace helped with cleaning and preparing the space. They quickly realized they needed to think bigger to meet the growing demand for affordable housing.

Togetherness works for Dean and Teresa Simmons.
That’s no surprise since they’ve been perfecting it for many years.
Teresa was born and raised in Eustis. Dean was born in Illinois and moved here in 1973. After meeting at Lake-Sumter Community College in 1981, they married in 1985, meaning they’re about to celebrate their 40th anniversary.
Dean has been in the printing business for decades, starting in 1980 with Lake News, a weekly publication. In 1998, he and Teresa bought into Ford Press, Lake County’s largest commercial printing plant, which opened in 1957.
“Together with our business partner Rich Kelley, we started modernizing the presses and getting into the digital aspect, but we still have our original sheet-fed presses,” Dean says.
Faith and family are integral to the couple. Son Dean is married to Brooke Akers and son Austin is married to Aubrey Akers. Those marriages have blessed them with grandkids Grady, 6, Joelle (Jo-Jo), 3, Nora, 2, and Nolan (born September 2024).
“Our life revolves around our family and now our grandkids. We are blessed they live so close to us,” says Teresa, or NiNi, as the grandkids call her.
On a typical weekend, the extended family gathers at their country home to swim, hang out and have dinner together. Everyone loves Dean’s chicken marsala, which he makes from scratch.
They enjoy golfing, fishing and boating. Family traditions enrich their time together, including baking with their grandkids and FaceTiming.
Dean and Teresa are active in giving back to their community, including donating printing projects for local fundraisers, foundations and Combat Veterans to Careers, a local organization.

“We don’t share an office, and we try to leave work at the office when we come home,” Teresa says with a smile.

Caponi have touched the lives of countless young performers across Central Florida through their passion for the arts.
While interning for his teaching degree in 1999, Angelo created the fun classroom identity “Caponi’s Cannolis,” which stuck. When he got his own 4th-grade classroom at Minneola Elementary Charter School in 2002—where he met Jennifer, a kindergarten teacher—students proudly identified as “Cannolis.” When they married in early 2005, she adopted the same idea for her students.
Later that year, the couple launched Caponi’s Cannolis School of the Arts, an afterschool program offering show choir and theatre classes.
“At that time, there wasn’t any theatre or arts classes in many elementary and middle schools, so parents always requested his (Mr. Caponi’s) class because of the extra stuff he did,” Jennifer says. “That’s what made us think to start our business.”

Initially, it was just the two of them directing shows and designing costumes. They’ve since expanded to offer more classes and built a talented staff, including a costume designer, two stage managers, and five directors, vocal coaches and choreographers.
“We’re so grateful for our amazing team and the theater family we’ve created. It’s become a safe space for so many kids and parents and we’re proud of that,” Jennifer adds. “Our goal is to help kids find their voice, on stage and off.”
Today, Caponi’s Cannolis students perform musicals during spring and summer camps, sing the National Anthem at Orlando Magic and Atlanta Braves games and perform at iconic venues like Disney World, Universal and the Dr. Phillips Center for the Performing Arts.
Jennifer, a local actress and certified health coach, directs their middle school performance group. Angelo directs the show choir, performs Sinatra-style at
weddings and other local venues and serves as the K-5 music teacher at Minneola Elementary. He’s produced over 120 children’s musicals, drawing huge audiences.
The Caponis believe the arts foster teamwork, discipline, confidence and self-expression. Together, they’ve inspired countless students, creating memories and building lifelong skills—all while raising two beautiful children of their own.
Nearly 20 years strong, their group has auditioned for America’s Got Talent, with many students pursuing theatre professionally. Their legacy as a power couple committed to enriching their community and shaping future performers is undeniable.
“It’s amazing to watch these kids grow and so rewarding when they and their parents tell you that being in our group really helped them,” Angelo says.

His advice to aspiring athletes is simple but profound: “Just keep working hard and be yourself. Don’t try to be someone you’re not. If you want something bad enough, you can make it happen.”
TYLER GREEN: SCHOLAR/ ATHLETE ON THE RISE
At just 15 years old, Tyler is already drawing attention for his athleticism, basketball IQ and academic prowess.
Tyler’s 3.9 GPA shows that he prioritizes his studies, and he’s mastered the art of balancing academics with basketball.
“I try to get all my schoolwork done during the week so that on the weekend I can destress and just play basketball,” Tyler says. “For me, balancing school and basketball is so important. When you can turn everything o and focus on something you love, it’s a great feeling.”
After excelling on the junior varsity team last season, Green is poised to make an impact once again at either the junior varsity or varsity level. His drive and commitment have not gone unnoticed by his coaches, especially Nettles, who sees a lot of himself in the young guard.
“Tyler reminds me of myself at that age,” Nettles says. “He’s got all the tools — athleticism, work ethic, and most importantly, the belief in himself.”
A CULTURE OF SUCCESS
Both players say that part of the reason they love playing for Leesburg High is the family-like atmosphere fostered by head coach Sean Campbell and the school’s administration. Campbell has built the basketball program over the last decade, and players like Angelo
and Tyler credit him with creating a culture of support and unity.
“Coach Campbell makes it feel like a family,” Angelo says. “There’s never a moment you can’t go up and talk to him. That’s what I love about playing for him.”

“Our goal is to get to Lakeland and win it all,” Angelo says. “We’ve got the talent, we’ve got the drive and we’ve got the support. Now it’s up to us to make it happen.”

outheast Christian College (SCC) is bringing the powerful blend of faith and athletics to life as it launches its inaugural college basketball season.
This emerging program isn’t merely another addition to smallschool sports; it represents a bold new chapter for a college driven by a Christ-centered mission. Rooted in values that inspire excellence both on and o the court, SCC’s basketball team is poised to make a lasting impact by uniting athletic ambition with a higher calling.
SCC’s basketball team, under the leadership of seasoned Head Coach Dwayne Walker, stands as a beacon of hope and opportunity — and not just for the athletes who will be wearing the school’s jerseys for the rst time.
As the college positions itself as a place where faith, leadership and sportsmanship blend seamlessly, their motto, “Making disciples of all
nations through a Christ-centered curriculum” will be tested in real-time on the hardwood.
Southeast Christian College is an all-online institution based in Lake County. It may be new to the college basketball scene, but its mission is anything but conventional. Rooted in the principles of faith-based leadership, SCC o ers academic programs focused on business, ministry and education. Its curriculum is designed to create in uential leaders who can impact the world and “cause the Kingdom of God to ourish,” according to the college’s mission statement.
“Our goal is to build leaders, to build disciples,” Walker says. “We’re not just training athletes or students; we’re raising up young men and women who can transform their communities for Christ.”

their degree while staying engaged in their local faith communities.
The basketball program represents the rst tangible step into collegiate sports, a move that could eventually lead to other on-campus o erings and expanded community engagement.
“I’ve been blessed to coach at schools where faith and competition meet,” Walker says. “SCC is no di erent in that regard. But here, it’s bigger than basketball. It’s about laying the foundation for something greater.”
Walker’s past success at the High School level brings credibility to the new program, but the challenge is monumental. The college was unanimously approved for a basketball program which sometimes takes years to accomplish. After getting approved, SCC hired Walker and tasked him with putting together a competitive team in just three months.
Despite the challenge, Walker recruited players who shared the vision of what SCC basketball could become.
Within just 90 days, Walker put together a roster of players who are not only athletically talented but spiritually grounded and con dent about the new program’s potential.
One of those players is sophomore forward Marvin Windom, a business entrepreneurship major who grew up in Central Florida and played for South Lake High School in Groveland. For Windom, joining SCC wasn’t just about continuing his athletic career, but building something meaningful.
“This school is so important for the community,” Windom says.
“I’m excited to be part of the rst basketball team here, and it’s not just about the game. It’s about representing something bigger than ourselves, something that can grow and really impact people’s lives.”
Javon and Lawrence Ru ns, brothers who joined the team after learning about SCC from their father, also feel a strong connection to the school’s mission.
Lawrence, Javon’s older brother, echoed those sentiments, noting how important it was to play with a team that shares his values.
“We’re not just a team, we’re brothers in Christ,” he says. “That’s what makes this special.”
Jayden Victor says of the team “Everything started somewhere. It’s a unique opportunity for us to grateful to be a part of this journey.”
Javon, a graduate student who transferred from Muskegon University, where he played football, sees SCC as a chance to return to his basketball roots while staying close to his family in Lake County.
“I wanted to be closer to home, to my family, and to my faith,” Javon says. “SCC gives me that chance — to grow as a player and as a person. It feels like the right place to be.”

THE PATH TO SUCCESS
Uday’s story begins in a small village south of Mumbai, India where he grew up under the guidance of his father, his role model, whom he considered a master.

Uday was only 16 when he was hired to cook at an airport canteen—aka a cafeteria—where he stayed for two years.
Fast forward to Uday’s time studying in Bombay, where he worked at the renowned Taj Mahal Hotel and was mentored by top chefs. He would later go on to work for Marriott Hotels, building a culinary career in Kuwait and Saudi Arabia. In 1982, Uday came to the United States, where his career took a pivotal turn.
“I was fortunate to work for and learn from the best of the best,” Uday says, crediting his mentors for his development as both a chef and a manager.
Uday honed his skills and developed a deep understanding of the business and creative sides of the restaurant world while working as a food and beverage manager at Disney’s Polynesian Resort.
SHIFTING GEARS
After leaving Disney and Marriott, Chef Uday went on to found and run Passage to India, a chain of eight highly successful restaurants on International Drive and throughout Orlando, mainly serving business travelers, celebrities and tourists. He also owned and ran the 19th Hole Bar at Polo Park in the Four Corners area. Each experience prepared him for creating his dream restaurant.
The key di erence? The clientele.
“Tourists go home, but at Guru, it’s local people and those who have followed me through the years that we serve, and you develop relationships with them,” Uday adds.
Building relationships has been key to his restaurant’s success, and Chef Uday is always hands-on, positive and smiling.
“In the olden days, restaurant owners were visible, but today many of them manage from the o ce,” he says. “I still like to greet and talk to my customers as much as possible.”
This approach has paid o . Uday started his Clermont restaurant with two other chefs cooking alongside him and six employees. Today, he has eight cooks and 25 employees.
As for the food, Chef Uday only uses top-grade meats, vegetables and spices, crafting everything from scratch and serving very generous portions.

If looking for a hybrid of bread and dessert, Chef Uday suggests the Peshawari Naan.
“The dough is made from self-rising our, oil, milk, yogurt,
and water. Stuffed with slivered almonds, dates, pistachio and golden raisins, it is one of our favorites,” he adds.
THE CHERRY ON TOP Chef Uday complements his culinary expertise with special touches that elevate the dining experience and create a refined yet welcoming atmosphere. Each table is adorned with a fresh rose set against elegant white linen tablecloths.
His wife Pamela Carver has also taken great care to ensure that every element of the restaurant reflects the authenticity of his roots. The décor is a beautiful blend of rich colors, textures and designs reminiscent of Uday’s homeland.
Traditional Indian artwork and tapestries adorn the walls, creating an inviting and warm space that transports guests to another world. The music, carefully selected to feature authentic Indian melodies, completes the ambiance.

If that’s not enough, Uday and his entire staff are meticulous about ensuring that Guru is always clean, bright, and beautiful, a reflection of their commitment to excellence in both food and service.
“Guru’s success goes to all my awesome employees who work hard every day,” he says.

LOOKING AHEAD
Additionally, Uday believes in community involvement and going the extra mile.
He lives by those philosophies, regularly contributing to the local police and fire departments, as well as various organizations, causes and events. In addition, Uday frequently hosts special outdoor events for birthdays, holidays and other occasions at his restaurant, where he caters to families and strives to make a lasting impact.
Recently, Uday sponsored a huge business after hours alongside the South Lake Chamber, to celebrate his 10-year anniversary.

For the people of Clermont and beyond, it’s clear that Uday is not just a chef, but a beloved member of their community, having proved that the best ingredient in any dish is a generous dash of heart.
“Sometimes people don’t think they like Indian cooking until they try Guru,” he says. “That makes me feel good, but overall, I’m just happy to be here, to have a place where people can come and enjoy good food and feel like extended family. That brings me much joy.”

ushi Chef Jonathan McKinney of Wave Asian Bistro & Sushi delights in turning sushi into edible art.
Jonathan learned his craft early in life from his dad John, the rst Asian-American to own and operate local Japanese steakhouses in the area throughout the 90s. During that time, young Jonathan slept in booths and did his homework at tables at Lampu in Mount Dora, Fuji in
the excitement of restaurant life and in 2009 returned to his dad’s fourth eatery, Kiku.
says. “I realized that I thrive on the hustle and bustle of a restaurant.”
Jonathan gradually worked on his own concept and menu, using alternative methods to build sushi rolls and experiment with innovative, modern techniques to create tasty and photo-worthy dishes he hoped would change the landscape of the online sushi craze.
“During that time, I was starting to notice the trend of food art online,”

Jonathan, who is just 33, has expanded with a fast-casual location in Maitland and hopes to continue to expand.

Kelly was fascinated by Jonathan’s vision and concept that started with Wave’s own sushi versions of donuts and burritos and expanded to include sushi burgers, pizza, tacos and hotdogs. The images of his creations were so enticing that Instagram took notice and published the photos on their platform.
Since then, Wave and its inventive dishes have garnered over 1.5 million followers across all social media platforms and Jonathan and his team have collaborated with Disney, USA Today, Foodbeast, Ripley’s Believe It or Not and other major media outlets.
Creative and Delicious
Fortunately, we can do more than admire the photos. Wave is open daily with an expansive menu with enough to entice anyone, even if sushi isn’t in your comfort zone.
As a sushi nut, I think Jonathan’s take is so approachable because he deftly manipulates rice, nori (seaweed) and tempura batter to create a yummy crust. Since most people like fried food, the tempura inspires a familiar avor to compliment the layers of seaweed salad, cool cucumbers, creamy shredded “krab” and spicy tuna, which blends for a balanced taste.
He’s making a name for himself by rede ning how we perceive sushi, but Jonathan says starting out working beside his dad keeps him humble.
“I’m extremely lucky that I was able to learn about the restaurant business at such a young age,” he says. “I learned early that working hard on the things that you care about is the only way you can accomplish your goals.”
MEANINGFUL MIXOLOGY

ixology enthusiast Sheldon Jacobson started crafting cocktails in college but made the conscious decision to steer clear of the restaurant industry altogether.
“I studied business management with an emphasis on hospitality and food service,” he says. “I kept bartending as a hobby so I could enjoy it rather than get so immersed as to burn out.”
Sheldon works full time in medical sales by day. After hours, he likes to explore unique ingredients, “chase” distinct avors and share ideas with other craft beverage devotees.
“It’s not about getting drunk, but rather sharing experiences and conversations about the true art of mixology,” he says.
Sheldon’s cultivated crowd is treated to a home bar atmosphere that could be featured in a mid-century Florida decor magazine. The room, mostly curated by
his wife, Katie, is designed with an eclectic array of Tiki and Americana tchotchkes, trinkets and collectible antique bar glasses. This “fun” room serves as an oasis for social gatherings where drinks and food are always on the menu.
“We like hosting bottle shares with friends and charcuterie is our foundation for snacks because it has a variety of ingredients and components,” Sheldon says. “If somebody brings a unique meat, cheese or fruit, we have an extensive selection of spirits to pair it with.”
He also makes his own syrups and infusions with rare, exotic and in-season ingredients and touts using clean, simple elements to make a drink a delectable success.
“I always keep fresh citrus juices in my fridge,” Sheldon says. “By using fresh ingredients as much as possible you can’t really go wrong.”

INGREDIENTS :
1 oz. Planteray OFTD (Old Fashioned Traditional Dark)
1 oz. Fernet Branca Menta
3 oz. Fever Tree ginger beer
1/2 oz. fresh lime juice
2+2 dashes Angostura Aromatic & chocolate bitters
GARNISH:
1 lime wheel
1 chocolate mint sprig candied ginger
DIRECTIONS :
Measure liquid ingredients and pour into a rocks glass or mule mug. Add ice to top and stir until condensation forms on glass. Top with garnishes and serve.
