HELLO AGAIN.

I’ve spent the last 12 years of my life as a wedding planner, telling the love stories of my clients by creating beautiful experiences. It remains my passion, and I will continue to help couples share their stories. But now it is time for me to begin a new chapter in tandem. Alabama Weddings will be my love letter to you, the reader, and my mission is to be a storyteller for all. For all who love, no matter if it is your first love or a rekindled flame, no matter your color or creed – everyone is worthy of love.

This 20th Anniversary Edition, The Love Issue, is dedicated to love in all its forms. AW will be a resource for planning a wedding as well as a healthy marriage. A pretty wedding isn’t the beginning to a great marriage if a strong foundation hasn’t been laid. Love doesn’t only shine through the highs of life, but real love is found in the mundane: bringing your partner peanut butter toast in the mornings or stuffing wedding invitations as you sit together watching The Great British Bake Off. Love is also found in relationships with your best of friends, family, and, most importantly, with yourself. I hope that you find, in these pages, a truer insight into yourself and the things you love, by discovering your style and connecting with our creatives. But just as I hope to inspire you, I know I will also be inspired by the love you share with us. And in return, I want my years at the helm to teach me how to love more selflessly and be a better human.

To Sheyda and Donna, thank you for contributing your time and talent to my premier issue, but more importantly for your unfailing friendship through the highs and lows of life and love. I survived and made it here with your support. To David, thank you for helping me breathe a vibrant new energy into Alabama Weddings. May you never wander away from lending your art and eye to its pages and your wonderful chaos to my life.

Lastly, thank you to my family, both chosen and given; to my friends; and to all of the talented creatives who supported me on this new journey. For the basements I have worked in and the sounding boards you've provided, I couldn’t have done it without you. I am nothing without those who love me.

When Christopher called to ask that I join him for another issue of AW, I agreed in an instant. I knew his vision for rebranding the book would be a significant undertaking, and I believe these pages reflect a step forward, molded by our years with and away from it. Thank you, my friend, for keeping the wonder going.

I dedicate my work in this issue to the educators who see something different in students and celebrate it, leading them places that once only existed in their wildest dreams. Thank you, Angie Robinson, Lynne Elliott, and the teachers who showed me the way. And Mom too.

Samantha Cupero began her media career at The University of Alabama. After graduating she moved to Atlanta to work at Modern Luxury, eventually launching their Palm Beach publication. For the last few years, she has worked in marketing in Boca Raton, FL. She is excited to be back behind the pages, beginning her next chapter at Alabama Weddings for its 20th Anniversary Edition.

Born and raised in the South to two Persian parents, Sheyda Mehrara has always felt a little bit of an outsider. She just didn't recognize and leverage it as a superpower until the latter half of her 20s. Whether it's through painting, styling, social media content creation, public relations, onsite activations, or engaging her community, she bridges concept to creation with a sophisticated touch.

Donna Von Bruening has an extraordinary ability to bring clarity to a moment. Melding her Midwestern sensibility with two decades as a Savannahian, she has built a reputation as a prominent Southern photographer and writer. She calls the salty marshes of the Georgia coast home, along with her beloved husband, two teenage boys and their cavapoo, Archie.

Healthy conversations for setting realistic expectations for married life

Newlyweds may fantasize about romantic dinners and weekend getaways, but the true beauty of marriage is found in caring for one another through the passing of ordinary days. My fiance and I were determined to build a strong foundation, so, with starry-eyed, unshakeable love, we signed up for a weekend retreat for engaged couples.

The structure format was on four key areas: family, communication, values, and intimacy. Driving to the retreat, we agreed that this would be a breeze. I mean, we were so in love and sympatico already. What we discovered is that we each brought unspoken assumptions and expectations to marriage. Through the retreat, we gained time for self reflection and open dialogue with one another that built a stronger connection and deeper love between us. Love!

Twenty-four years later, we both agree that retreat intensified our commitment. When our unshakeable love started to quake, we had the skills to listen, understand, and move forward together. We learned to always turn toward our marriage instead of away from one another.

While the weekend format we attended was formal, the method is simple enough to do on your own. Set aside a day or a few evenings and tune out distractions (yes, shut off your phone). If you are home, light a candle, prepare nice food, or better yet, stay at a hotel or cabin. The idea is to focus solely on each other. Bring two notebooks, pens, and a timer and these questions. You can even add your own questions. Choose a topic and write for 10 minutes in your notebook. When the timer goes off, switch notebooks and read one another’s reflections. Set the timer for 20 minutes and discuss what you read. Move on to the next topic and repeat.

Financial Fidelity

1. What are your financial goals?

2. Do you value saving or spending?

3. Who will manage the money and the investing?

4. Do you have a spending threshold where you check in with one another?

5. Will you have your own accounts and a house account, or will you merge your money together?

Conflict Resolution

1. What cues can you offer your spouse to let them know you need to talk?

2. What are your rules for arguing? No name calling? No walking away?

3. What are your expectations for discussion?

4. Will you be able to apologize and forgive?

5. How will you end an argument and move forward?

Family Expectations

1. What did you love about the way you were raised?

2. What did you love or dislike about how your parents interacted?

3. What family obligations or traditions are important to you?

4. How will you manage conflict between your spouse and parents or siblings?

Family Values

1. What are your top three values?

2. What values do you bring from your family?

3. What values did your family have that you don’t care for?

4. Do you want children?

5. Are you open to adoption? IVF? Staying childless?

6. If you do have children, will you both work? If not, who will stay home?

Celebrating

1. How do you feel connected to one another?

2. How do you choose to celebrate one another for birthdays, anniversaries and other milestones?

3. Do you expect lavish gifts? Surprises? Trips?

4. Do you prefer simple nights at home? Letters and cards?

5. How will you celebrate the holidays with family?

Intimacy

1. How important is touching, cudding, holding hands to you to feel loved?

2. How often do you expect sex?

3. How will you communicate when you are tired, not in the mood or when you want to change your sex life?

4. Who will be responsible for birth control?

Why not just talk about it over dinner? Well, the writing and reading forces you to focus, slow down, and understand yourself and your fiance, and the timer provides an ending.

I keep our notebooks in our fire safe. Every few years we pull them out for a refresher evening. Twenty-four years later, we are well practiced in sharing, listening, and understanding, and those notebooks are as cherished as my wedding band. My hope is that you, too, are able to find a deeper connection and shared values to build a strong marriage for the ages.

Just like you, we do it for love.

Weddings are a high-touch industry, and the professionals within are often part of family legacies, spanning generations. Growing up watching parents and grandparents tends to cultivate artistic interest and talent and helps one understand the sacrifice required to be a business owner.

Owner of HotHouse Design Studio and PropHouse, Mandy Majerick’s family legacy spans nearly 55 years since her Grandmother Tommie purchased Bell Florist. Working at the flower shop was an integral part of her childhood, from sweeping floors for a quarter to assisting her mom, Frances, when she took the lead at Bell Florist.

In 2006, highly-styled weddings were taking over the market, and that same year, Mandy took over the business and moved it to Birmingham. With degrees in interior design and business, she was excited about the opportunity to evolve and elevate the offerings to meet clients’ design needs.

“All the women in my family have an internal drive, and I just honed in on that talent and ambition,” explains Mandy. “I consider floral design my profession, and I think my grandmother would be so proud to see that her 500-square-foot shop is now a 30,000-square-foot warehouse.”

Diane Olexa started her business like most professionals in the industry – she made a cake for a friend’s wedding. Diane will tell you, however, that she owes her success to her mom Marilyn. She watched her mother bake cakes for family and friends, then wedding

clients and then catering clients. “She loved people through food, and I couldn’t have done this without her,” said Diane.

While traveling in Japan in the late 1960s, Marilyn Olexa took a cooking class. She tweaked the cake recipe from the class, and that same recipe became the basis for Diane’s business, Olexa’s Catering, Café and Cakes. Diane watched her mother naturally expand her business from wedding cakes to catering, and Diane followed suit. When the opportunity came along to open a restaurant, Diane knew she could fulfill one of her mother’s dreams. Her parents moved to Birmingham to help Diane expand Olexa’s, and that wedding cake Marilyn tweaked is still on the cafe menu today.

Wedding businesses are born from love – family love. We root for one another and care for one another and our clients. With any luck, we will pass it on to the next generation.

In 1977, I rented a room in a small house (turned boutique) on Linden Ave. in Homewood, bought a Pepsi cooler and painted over the logo with flowers. Through my mother I landed my first real account; Hare, Wynn, Newell, and Newton. They are still my customers, and the rest is history.

From that 12x12 room to our current 7,000-square-foot shop, we have joyfully served the people of Birmingham for 44 years. I have been blessed to know thousands of customers who have spanned generations and availed themselves of our services, including weddings for mothers whose daughters were then also our bridal clients. I am still excited by each new project; and, as the saying goes, “If you love what you do, you will never work a day in your life.” I love what I do!

How A Flower Market Grew

Beyond mom-and-pop, Mathews Manor is a one-stop family shop.

Debbie Mathews had a dream that began when her eldest son Trey was one year old: she wanted to make his first birthday cake.

“I took classes on cake decorating, and that’s when the love of it all began,” says Mathews. “Soon after, friends and family began asking me to do wedding cakes and florals for their children’s weddings. I first started out doing weddings at churches and halls in the 1980s, working out of my full kitchen in the basement of my home.“

“In the late 90s I felt the Lord was calling me to start a wedding venue business. In 1998, my husband, Harold Mathews Jr., began helping to make my dream come true to have a venue to hold weddings, and in 2000 that dream came true when we purchased the property from my

husband’s parents, Harold and Reba Mathews. We purchased the house and the property on 12 acres and began to remodel their home into a beautiful, wedding and gardens venue in Springville, Alabama.”

Debbie and Harold opened their first venue on the property in 2001, Rebecca Garden, named for their first granddaughter. As Mathews Manor continued to grow over the years, they would go on to also open Grace Hall and Micah’s Meadow on the property – both also named for their grandchildren. A family labor of love began.

You’ll find their son, Trey, in the office as general manager and in the kitchen as a chef. Their daughter, Traci, is a wedding director, and their daughter-in-law, Tammy, is the onsite event planner and coordinator. Their youngest son, Tyler, manages corporate sales for the venue. Even the grandchildren for whom the property’s venues are named are part of making all the magic happen.

They are only part of the full team, however, which consists of two event planners, seven wedding directors, five florists, a pastry chef, three

kitchen chefs, and 45 weekend staff members. Together, they complete the true extended Mathews Manor family.

For more than twenty years, the Mathews family has built its reputation for hosting all-inclusive weddings of every style. From planning and floral design to catering and fabulous cakes, Mathews Manor beautifully brings together all the details for weddings that make the planning process simple and low-stress.

“This job has its challenging days when working with family,” says Mathews, “yet, we wouldn’t trade it for the world. We all have experienced the joy of planning the happiest and most memorable days of someone’s life.”

We can only wait to see what comes next for Debbie Mathews and her family as they continue to make dreams come true for Alabama couples.

“We are very blessed with four other grandchildren: Sadie, Carson, Amelia, Lyla, and Mary Ellen,” says Mathews. “In the future, we have special plans for all of them too.”

Home-buying insight for life after "I do."

Deep in the heart of Mountain Brook, Griff and Miriam Israel and their three children welcome us into their home on a Sunday afternoon. After working with experienced vendors to plan their wedding, the Israels knew hiring the right people to start their new family home was the way to go.

"Over the last twelve months, we renovated our home and welcomed our third child," says Israel. "Having a team of professionals is so important during these life changes. Getting married typically involves serious financial and logistical decisions – the greatest of which involves buying the right home for your family. As newlyweds, you want to ensure that your decision to buy and own a new home doesn't negatively impact your long-term financial goals. Mary Bell, owner of Saved By the Bell, and her outstanding team of real estate professionals are ready to help you with this critical decision. The first step is understanding several key terms you will hear throughout the process:

Mortgage Lender

A mortgage lender is a financial institution or mortgage bank that offers and underwrites home loans. They set the terms, interest rate, repayment schedule, and other key aspects of your mortgage.

Earnest Money

Earnest money is a deposit made to a seller that represents a buyer's good faith to buy a home. The money gives the buyer extra time to get financing and conduct the title search, property appraisal, and inspections before closing.

Home Inspection

In the process of closing a home sale, the buyer usually hires a home inspector to come to the house and perform a visual observation. In accordance with the state’s standards, the home inspector identifies health, safety, or mechanical issues. A buyer’s inspection occurs after the buyer has made an offer on the home and before closing the sale. After the home inspection, the buyer may be able to renegotiate their offer or request repairs.

Addendum

An addendum is an additional document that gets added to the purchase and sale agreement. The document will include any additional information or requests that the buyer did not put into the original purchase and sale agreement.

Appraisal

An appraisal is the estimated value of a home determined by an inspection of the property and its comparison to recently sold homes in the area to estimate the value. Before you can buy the home, it’s required that you first get a home valuation, the most common of which is an appraisal, which gives an estimate of the value of the home in question. The findings from an appraisal determine the amount a mortgage lender will let you borrow for the property.

Closing Costs

Closing costs include the myriad fees for the services and expenses required to finalize a mortgage. You’ll have to pay closing costs whether you buy a home or refinance. Average closing

costs for the buyer run between 2% to 5% of the loan amount. The most costeffective way to cover your closing costs is to pay them out-of-pocket as a one-time expense. You may be able to finance them by including them with the loan, if the lender allows, but you will pay interest on those costs through the life of the mortgage. An experienced real-estate agent can help you negotiate closing costs with the seller.

Designing the Interior

Once you are officially homeowners, it's time to begin thinking design. At AG Interior Designs, their motto is that your home should be a reflection of your style and not of your designer. Finishing Touches

Along with an interior designer, you may want to seek those with an eye for

specific details, such as countertops, tiled floors, etc. With more than fifteen years of experience in the tile and stone industry, Will Casey of Cottage Supply Company helps builders, designers, and architects carry out their vision in residential and commercial projects. If you're in the throes of planning a wedding, you're sure to have a few dozen questions buzzing in your head at any given moment. Take a moment right now to breathe, relax, and breathe again. Wedding planning is all about discussion and delegation. When you work with a great wedding planner, they facilitate these discussions with an experienced hand and sage advice.

Though you may already have ideas about your attire or flowers, there are some details that most couples agree they aren't sure of. Who makes toasts? Who do you tip? While answers to these questions may help give peace of mind on a few topics, it's nothing compared to having a planner on top of every detail and keeping your wedding day running like clockwork.

Q: When should we send out all pieces of our stationery suite?

A: "Your stationery suite is the very first vision of your wedding design your guests will receive. Save-the-dates, usually sent out after the creation of the website and your engagement photos, should be sent approximately four to six months prior. As a planner, we also help you to stay on track for sending your invitations out approximately six to eight weeks prior to the big day. For destination events, six months can be given to maximize the notification process for travel arrangements. Holidays, graduations, and other celebrations should be avoided, as you do not want your stationery missed." - Sheriah Gibson

Q: Is a “First Look” a good idea?

A: “It greatly depends on the couple's priority. If you are marrying in a lovely location with many photo

opportunities, you very possibly could find yourself better served to choose a “First Look.” This enables more time for photos without feeling rushed. Also, it is lovely to first see one another in a personal, intimate setting without onlookers. However, if an “at the aisle” first look is your heart’s desire, do exactly that! Combat the time crunch by preparing a detailed photo want list with your photographer and planner." - Melanie Smith

Q: How can I manage the use of social media/cameras at our wedding?

A: “This is challenging! Signage is one way to remind guests to unplug. The officiant can also make a brief announcement as the ceremony begins. Sharing your feelings with close friends and relatives can also assist in setting a tone for the ceremony. If they choose to leave their phone away, perhaps others will too!”

Q: How do meals and gratuities work for our wedding day vendors?

A: “Vendor meals should be discussed in the preliminary meetings to ensure vendors working more than six hours or working during the dinner hour are covered in your guest count. With the exception of your bar and catering staff, you want to ensure that the meal is organized and planned to be given during a time that works well for the overall timeline. We offer all of our wedding planning clients a guide for tipping and gratuities to ensure that everyone is aware of etiquette to follow based on the total of their contract with each vendor.”

Q: Who should give the toasts?

A: “Many of our clients opt to do toasts during the rehearsal dinner to allow more people the opportunity to share their precious memories with the

couple. If done during the reception, toasts should be done by the father of the bride (or host of the event), matron of honor, and best man. We always love to chat with those respective parties to give tips on the best toast.”

A: “A favor is exactly that, a small show of gratitude. It is not necessary, but quite often greatly appreciated and an opportunity to share some of your favorite things or interests.”

Financial conversations don't have to be uncomfortable.

Love may be the reason for your wedding, but make no mistake, money is central to your celebration. As a longtime married industry pro (24 years), I’d like to share a few secrets to plan the stress-free wedding of your dreams that honors your finances.

Define the celebration you want.

Before you start choosing venues with your mom, create a united vision as a couple. Does an intimate brunch wedding sound like heaven, or are you hell-bent on bringing friends and family from the four corners of the earth for a weekend-long dance party? Maybe you prefer a wedding at your childhood home or an elopement at City Hall? Be aware of social expectations or media influences. There is no right answer, just your united vision.

Discover the price of the dream.

Media declares that the average cost of a wedding ranges from $20,000$50,000. Those numbers are unrealistic when set against the backdrop of Instagram. The true driver behind the price of a wedding is the guest count. A $25,000 wedding for 20 people is luxurious but a $25,000 wedding for 200 buys a casual, DIY wedding. The price per guest includes everything from food, rentals, linens, florals, photography, music, ceremony, etc. and falls into three categories:

Lovely at $100 - $500 per guest Lush at $500 - $1,000 per guest Luxury at $1,000+ per guest

This is usually the first time purchasing services for an event, and sticker shock is real. Be realistic with your financial comfort level before signing contracts.

Prioritize your “Must Haves”.

I tell each of my couples that no matter the budget, choose three things that they are not willing to compromise. The rest is negotiable. Is it a 21-piece band or a custom cocktail bar or an 8-tier cake covered in hand-painted sugar flowers, or is it incredible photographs, a couture gown or having every single important person in your life under the same roof? Choose three and then go from there.

Communicate with key players.

Weddings are the merging of two families, and parents often have their own celebration dreams and the checkbook. Begin the planning

conversation with your overall vision including your “must haves” and, if possible, the costs. Ask if your parents planned on financially contributing, if they had a number or range in mind and what their wishes are for the celebration. Your father might say “whatever you want” until he learns the price of your band or that he can’t invite his golf buddies.

As for me, twenty-four years later, we stuck to our guns with a guest list of only 75, a fantastic band and, of course, great photography. I let my mom choose my dress and the flowers, and, in the end, I still wish I would have spent more money on the honeymoon.

There & Back

If you have a unique car in mind, such as this vintage taxi from Coats Classic Cars, invest in having it reserved for the entire day. Most receptions are in the evening, so when it’s time for the happy couple to leave, there is very little light to get the perfect image. Having the vehicle earlier in the day allows ample time to get the right shot. Reserve time in the schedule to stage those photos so that it doesn’t slip away forgotten. Having a chauffeur will also give you both a time to breathe in between destinations.

Share a Ride

In lieu of favors for guests, consider offering a safe ride home via rideshare services in cities where they are offered and practical. You can easily create unique codes for your wedding day, set a budget and have peace of mind knowing your friends and family have an option to get home safely after the celebration. Work with your stationer to create cards with detailed instructions on how to use the code. If you want to include them with a bag of Jordan almonds, then that’s fine with us, too.

An evening at the Elyton Hotel.

To make sure everyone knows their roles and places, a wedding weekend commences with rehearsal of the ceremony, typically the evening before the wedding day. Afterward, the rehearsal dinner is a chance to gather with your families and the wedding party for an evening of toasts, thankyous and hospitality.

For fabulous rehearsal dinner inspiration, we look to the Elyton Hotel in downtown Birmingham, which is home to the iconic former Empire Building, one of the South’s best-known architectural landmarks. Capable of comfortably seating up to 80 guests, the Empire Ballroom of the Elyton hosts intimate events for every occasion, with delectable dining and hand-crafted cocktails.

When you have many out-of-town guests and need a less formal space to kick off the weekend, a welcome party is perfect for bringing together everyone you need to greet. This event can stand alone or directly follow the rehearsal dinner. The guest list can extend beyond the wedding party and family to include all your invited guests to stop by, have a cocktail and a light bite, and begin the celebration with you.

Paper Doll, located in Downtown Birmingham, is a fabulous choice for an upscale, intimate welcome party or get-together. With this option you are only charged for the alcohol your guests consume, instead of a predetermined amount. Many clients like this option because they aren’t having to try to guess the perfect amount of alcohol they need to purchase, so they don’t run out; we take care of all of that for them.”

When to Send

Timing is everything when it comes to sending your invitations and save-the-dates. Your guests will need ample time to add you to their calendar. Typically, savethe-dates should go out six to eight months ahead of your wedding, or earlier if it's a destination event. Formal invitations can be mailed six to eight weeks before the big day with an RSVP date at least two weeks before the wedding. Guests, please be courteous and send your RSVP card ASAP.

We recommend taking a trip to the post office before sending your invitations to have them weigh a complete suite and review the calligraphy or lettering for the address. These factors may mean more necessary postage, so it's good to know ahead of time if you need will need to include extra stamps. SAVOIE CATERING

AVOCADO TOAST BITES

by Chef Richard Bishop

Time Est: 45 min | Serves: 8

Ingredients

• 1 slice of whole grain bread

• 1 ripe avocado

• 1 tablespoon fresh lemon juice

• 1 teaspoon of tabasco sauce

• ¼ cup sour cream

• ½ cup chopped fresh basil

• Pinch of kosher salt

Preparation

Step 1. Cut bread into two-bite sized pieces and brush with extra virgin olive oil. (Any bread will work but we tend to use a whole grain type with lots of seeds as it helps with the crunch.) Bake at 325 degrees until browned and crunchy.

Step 2. Peel and pit ripe avocado and mash in bowl. Squeeze a little lemon juice, a shot or two of tabasco and a pinch or two of kosher salt. Add a spoon of sour cream (this can be omitted for vegans), and mix/mash with the back of a fork.

Step 3. Spoon avocado on toast and top with garnish.

Garnish Ideas

Grape tomato, radish slice, micro greens, cilantro sprig, pickled pepper, everything seasoning, black sesame seeds, sliced grape, shredded carrot or Greek olive.

RUSSELL LANDS

PIMENTO CHEESE

Time Est: 5 min | Serves: 6

Ingredients

• 8 oz freshly grated sharp chedder

• ½ cup roasted red peppers

• 2 teaspoons favorite hot sauce

• ¼ cup favorite mayo

• Salt and pepper to taste

Preparation

Combine in a bowl, making sure to mix well. Store for up to a week. Serve with gourmet crackers, celery or crudite of your choice.

NY Strip with Oakview Farms Grits and

Fall Salad with Persimmon, Almonds and Sherry Orange Dressing

BROWN BUTTER HONEY-GLAZED CARROTS

Time Est: 40 min | Serves: 6-8

Ingredients

• 1¼ pound carrots

• 3 tablespoons butter

• 2 tablespoons honey

• ½ teaspoon garlic powder

• ½ teaspoon salt & black pepper

• ½ teaspoon fresh thyme

• Chopped parsley for serving

Preparation

Step 1. Position a rack in the center of the oven and preheat to 375ºF. Spray a baking sheet with nonstick cooking spray. Place the carrots on top and set aside.

Step 2. Heat the butter in a small, stainless steel saucepan over low heat. Allow the butter to brown while whisking constantly. You’ll notice it will start to foam, but keep whisking. This will take anywhere from 5 to 15 minutes total to make brown butter. Remove the saucepan from the stove when the butter smells like hazelnuts and has a similar color.

Step 3. Add the honey, garlic powder, salt, pepper and thyme to the butter and stir until the honey blends with the brown butter.

Step 4. Drizzle over carrots using a rubber spatula and toss to coat. Bake the carrots for 25-40 minutes. Flip the carrots around the 13-15 minute mark. The carrots are done when fork-tender. Top with chopped parsley and serve warm.

Slow-Roasted Short Rib with Fresh Herbs and Cranberries in a Red Wine Sauce

HASTNGS CATERING

Yields about 50 fritters

Ingredients

• 1½ cups fresh corn kernels

• ½ cup finely diced red bell pepper

• ½ cup finely diced yellow bell pepper

• ½ cup finely diced poblano pepper

• ¾ cup chopped green onions (green part only)

• 1½ teaspoons kosher salt

• ¾ teaspoon freshly ground black pepper

• ¼ teaspoon cayenne pepper

• ½ cup all-purpose flour

• 1 teaspoon baking powder

• 2 quarts peanut oil, for frying

• 3 large egg whites

Preparation

Step 1. Combine the corn, peppers and green onions in a large bowl; cover and refrigerate for 1 hour. Once chilled, season the mixture with salt, pepper and cayenne, stirring until well seasoned. In a separate bowl, combine the flour and baking

powder. Add the flour mixture to the corn mixture and toss until well coated. Cover and refrigerate for 30 minutes.

Step 2. Pour the oil into a deep-sided skillet to a depth of 3 inches. Alternately, a deep fryer can be filled with peanut oil. Preheat the oil to 350 degrees.

Step 3. In a separate bowl, whisk the egg whites until medium-stiff peaks form. Gently fold one-third of the whipped egg whites into the corn mixture. Repeat with the remaining egg whites, making sure the egg whites are incorporated before adding the next third. At this point, the fritter batter can be used immediately or chilled for up to 2 hours before serving.

Step 4. Carefully drop rounded tablespoon-size scoops of the fritter batter into the preheated oil and fry for about 2 minutes or until golden brown. Remove the fritters with a slotted spoon and drain on a paper towel-lined plate.
