A tasty twist on turkey featuring a variety of flavorful herbs! Serves 10 12 tablespoons (1 1/2 sticks) unsalted butter, softened 1/4 cup packed fresh flat-leaf parsley leaves, chopped, plus 4 whole sprigs 1 large sprig fresh rosemary, leaves chopped, plus 2 whole sprigs 1 tablespoon chopped fresh thyme, plus 4 whole sprigs 15 leaves fresh sage, chopped, plus 3 whole leaves 3/4 teaspoon kosher salt, plus more for the turkey 1/2 teaspoon freshly ground black pepper, plus more for the turkey 1 15-pound turkey 1 lemon, quartered 8 shallots, peeled and halved 1 head garlic, cloves separated and peeled 4 cups low-sodium chicken broth or stock 2/3 cup dry white wine 3 tablespoons all-purpose flour 1. In a small bowl, combine the butter, chopped parsley, chopped rosemary, chopped thyme, chopped sage, salt, and pepper, and mix well. 2. Position a rack in the bottom third of the oven and preheat the oven to 450 F. Sprinkle the main cavity of the turkey with salt and pepper. Place
the whole sprigs of parsley, rosemary and thyme and the sage leaves into the cavity. Add the lemon, 4 shallot halves and half of the garlic cloves. 3. Starting at the neck end, carefully slide a hand between the skin and the breast meat to loosen the skin. Spread 3 tablespoons of the herb butter over the breast meat under the skin. Tuck the wing tips under the skin, and tie the legs together to hold the shape. Season the turkey generously all over with salt and pepper. 4. Place the turkey on a wire rack set in a large roasting pan. Rub 4 tablespoons of the herb butter over the turkey. Roast about 30 minutes, until golden brown, and reduce the heat to 350 F. Baste the turkey with 1/2 cup of the broth. Cover only the breast area with a sheet of heavy-duty aluminum foil. Scatter the remaining shallots and garlic cloves in the pan around the turkey. 5. Continue to roast the turkey for about 11/2 hours, basting with 1/2 cup of broth every 30 minutes. Remove the foil from the turkey breast. Continue to roast the turkey, basting with pan juices every 20 minutes, about 1 hour longer, until it’s golden brown and a thermometer inserted into the thickest part of the thigh registers 165 F. Transfer the turkey to a platter and brush with 1
tablespoon of the herb butter. Tent it loosely with foil and let it rest for 20 minutes before carving. 6. Using a slotted spoon, transfer the shallots and garlic from the roasting pan to a plate. Transfer the pan juices to a medium bowl, then skim off and discard the fat. Set the pan over two burners on medium-high heat. Deglaze the pan with the wine and 1 cup of chicken broth, scraping up any browned bits. Bring the sauce to a boil, reduce the heat to medium, and cook until it’s reduced by half, about 4 minutes. Pour the sauce into a large measuring glass. Add the degreased pan juices, and broth, if necessary, to equal 3 cups of liquid. 7. Blend the flour into the remaining herb butter until combined. Pour the broth mixture into a medium saucepan and bring to a boil. Gradually whisk in the herb-butter mixture. Add any accumulated juices from the turkey platter and boil until the gravy thickens enough to coat a spoon, whisking occasionally, about 6 minutes. Add the remaining shallots and garlic to the gravy and simmer for 1 minute. Taste and adjust the seasonings, if necessary. Serve the turkey with the gravy.

Millions of people insist no holiday meal is complete without some pie for dessert. Pie served with coffee certainly makes for a fitting end to a holiday meal, and hosts can serve any type of pie and still end up with some satisfied guests. Though pie afficionados typically have their own go-to pie, pumpkin pie is especially popular at the holiday
dinner table. Hosts who want to cater to the masses can serve up the following recipe for “Pumpkin Pie” courtesy of Emily Luchetti’s “Classic Stars Desserts” (Chronicle Books). Featuring homemade pumpkin purée and cream, this recipe is sure to make guests happy this holiday season. Pumpkin Pie
Preheat the oven to 350 F. In a large bowl, whisk together the eggs and brown sugar until blended. Add the corn syrup and whisk until smooth. Whisk in the cream, pumpkin purée, rum, cinnamon, ginger, and salt until well mixed. Pour into the prebaked pie crust. Bake until the filling is set, about 30 minutes. Let cool to room temperature. Serve with the chantilly cream.
Chef’s Tip: The pie may be made a day in advance, covered and refrigerated. Bring to room temperature before serving. Pumpkin Purée Makes 21⁄2 cups 21⁄2 pounds sugar pumpkins 1⁄4 cup water Preheat the oven to 325 F. Cut each pumpkin into sixths. Scrape out the seeds and any stringy pulp. Put the pumpkin pieces, cut-side up, and the water in a baking pan and cover the pan with aluminum foil. Bake until soft when pierced with a fork, about 1 hour and 10 minutes. Remove from the oven and, when cool enough to handle, scoop out the flesh with a spoon and purée in a food mill or food processor. If the purée is watery, place it in a large sauté pan and cook over medium heat, stirring frequently, until thick. The timing will depend on how watery the purée is.
Let cool, cover and refrigerate until using. Chantilly Cream Makes about 21⁄4 cups 1 cup heavy whipping cream 1⁄2 teaspoon vanilla extract 1 tablespoon granulated sugar Put the cream, vanilla and sugar in a bowl and whip by hand with a whisk or with an electric mixer on medium speed until soft peaks begin to form. The cream should hold its shape but still be very smooth. Cover and refrigerate until serving. Chef’s tip: You can whip the cream an hour or two in advance, cover and refrigerate it. If it sits longer than that, it will start to thin out and you will need to rewhip it lightly before using. A few quick stirs with a whisk will do the trick.

Cranberry Sauce recipe by Jenn Segal (OnceUponaChef) Let’s retire the jiggly, can-shaped cranberry sauce with ridges, shall we? It has a certain nostalgic charm, I’ll admit, but homemade cranberry sauce is in a league of its own—and it’s surprisingly simple to whip up. Simply boil fresh (or frozen) cranberries with sugar, water, orange juice, and orange zest, and in just 15 minutes, you’ll have a sauce bursting with bright, sweet flavors. The best part? You can make it ahead of time and relax knowing it’ll stay perfectly fresh in the fridge for up to 10 days or in the freezer for two months. Serve it up alongside your favorite roast turkey and gravy, then give your post-feast turkey sandwiches a gourmet twist by mixing the leftover sauce with mayo for an irresistibly delicious spread. As the leaves start to turn, fresh cranberries make their seasonal appearance, ripe for the picking from mid-September through the end of the year. These tart little jewels are harvested in a unique way: the bogs they grow in are flooded, causing the cranberries to float to the surface for easy collection. They’re not just for sauces; cranberries can brighten up desserts and baked goods, like Nantucket cranberry pie, cranberry nut bread, or apple cranberry crumble. You can even use them to make chutney. Find them fresh in the produce section during the fall, and grab a few extra bags to freeze and enjoy any time.
INGREDIENTS ½ cup water ½ cup fresh orange juice, from two oranges ¾ cup plus 2 tablespoons sugar 1 (12 oz) bag fresh or frozen cranberries (do not use dried) Zest of one orange, about 2 teaspoons Pinch salt STEP-BY-STEP INSTRUCTIONS Begin by zesting one of the oranges. A rasp grater is the best tool but any grater with small holes will work—just be sure to leave the white pith behind as it’s quite bitter. Always zest the orange before squeezing the juice out, as it’s near impossible to do afterward. Combine the orange juice, water and sugar in a medium pot and bring to a boil. Add the cranberries, orange zest and salt. Boil gently for about 10 minutes. Most of the cranberries should burst open, creating a thick sauce. You may need to mash them a bit with a spoon.
Transfer the sauce to a bowl and refrigerate until ready to serve. HOW TO STORE CRANBERRY SAUCE
Cranberry sauce should be cooled completely before storing. Transfer the sauce to a serving bowl and cover with plastic wrap or place it in an airtight container and refrigerate for up to 10 days. HOW TO FREEZE CRANBERRY SAUCE Fresh cranberry sauce freezes beautifully, so you can make it a month or two ahead of time to get a jump start on your holiday cooking. Allow the sauce to cool completely and then store in an airtight container in the freezer for up to 2 months. Let the cranberry sauce thaw in the refrigerator overnight before serving.
