Rinse bird well with cold water. Stuff bird with apple, garlic and rosemary. Rub outside of the bird with butter and sprinkle with salt and pepper. Place the bird on a roasting rack in a pan, put it in a 350 degree oven until an internal temperature of 165 degrees is reached, remove from the oven and let stand for five to ten minutes. Remove apple wedges and quarter chicken, garnish on a platter with roasted apple wedges. Serves four. Drippings can be used to make a gravy. Serve with mashed potatoes and veggies.
