Chili Verde Gunnison Golf Club
Ingredients
Diced tomatoes (6 lbs., 12 oz. worth)
5 26 oz. cans chopped green chilies
5 medium yellow onions, chopped
5 lbs., pork, diced
1 cup chopped jalapenos
1 ½ cups white wine
2 gallons chicken stock
4 tsp olive oil
1 cup cornstarch
Directions
2 Tbsp of the following: cumin, black pepper, Tabasco, dried oregano, chili powder, chopped garlic Saute onion, garlic green chilies and jalapenos in olive oil until the onion is transparent. Add white wine and reduce heat for 20 minutes. Add remaining ingredients except starch. Bring to a boil. Reduce heat and simmer for at least a half-hour. Thicken with cornstarch and water if necessary. Add pork and simmer for 20 minutes.
