Valley Community for Recycling Solutions

VCRS opens doors for students with life skills through service learning Community members interested in managing the growth of the Central Landfill have been successful recruiting new allies this fall. The doors of Valley Community for Recycling Solutions (VCRS) have been swinging open to people engaged in projects that include service learning components. Visitors exposed to the bigger picture of community development are more likely to engage within their surroundings on their own time. Students, teachers, and personnel throughout the Mat-Su Valley are gaining a foothold inside recycling territory with important work reinforcing the plan to reduce community waste throughout the borough. Will Rogers once called this area “a mighty nice place” during his visit to the original Matanuska Colony Project in 1935. Still, another of his quotes is relevant, “Show me a healthy community with a healthy economy and I will show you a community who has its green infrastructure in order and understands the relationship between the built and the unbuilt environment.” As our population finds meaning throughout this problem solving experience, the intention and intensity of how we work to meet the needs of our rapidly growing community will reflect in the outcome. Long-term outcomes range from a high quality living environment to the reduction in risky behavior and positive public perception of area youth.

The high number of VCRS work service-learning partners all recommend recycling as a way to improve life skills. Life skills are the competencies that all people need to fully participate in daily life. Several valley schools have formal assignments that include meaningful components. A proud Palmer Junior Middle School student explained the definition of citizenship to fellow Health classmates using, as an example, his experience sorting the school’s recyclables on campus. When students learn to apply daily life skills at school, they develop critical thinking, independence while collaborating, and personal management to bring home and take to another work environment. Palmer High’s self-contained classroom delivers the fruit of their daily labor to VCRS. This class manages the task of pre-sorting recyclables for the entire student body. The work is satisfying and creates a mutually beneficial environment Field trips to VCRS are taking on new characteristics as school teachers require note-taking so that their students may teach others about recycling correctly. The VCRS facility is unique in that the requirement of pre-sorting is necessary before delivery to our site. Recyclables must

be empty, clean and dry in order to move material through the remanufacturing cycle. Students who participate in a field trip are encouraged to reflect and think about creatively communicating the DO’s and DON’Ts of what they learn so that everyone can do it right. Two essay competitions are being held at VCRS. The first to be judged for America Recycles Day on November 15, 2018 and the second in time for Earth Day on April 22, 2019. Civic responsibility through volunteerism is fundamental to achieving our longterm vision of a healthy sustainable community. Service groups seeking leadership activities may visit with neighbors as part of a door-to-door outreach campaign to increase recycling with VCRS. Also popular are shifts offering an opportunity to practice critical thinking and professional communications skills while supporting high traffic times in the material drop off area. Decision making is an important life skill for our future leaders. A planner from Matsu Valley Rebuild Materials Center was present at meetings this week to establish a non-profit organization near Trunk Road for redistribution of used and surplus building materials. Also on the horizon,

upcoming Saturday workshops to enhance our mobile classroom including using recyclables as building materials. All VCRS volunteers are invited to participate. Likewise, service learning projects foster sustainable traits: feeling safe, happy, and healthy for the participants and the outcomes of their given projects. The Mat-Su Bag It Campaign/Plastic Bag Committee has been asked to publicize the idea for a Mat-Su community driven service project called Boomerang Bags. This project relies on the time and generosity of our local community in order to support the need for an on-site supply of reusable shopping bags to be borrowed with the intent to return to local shops. In the process of making and giving away beautiful bags, one supports their own awareness of an ability to create, refine, and achieve the same vision about oneself. Modeled after Boomerang Bags Anchorage AK (find them on facebook), there are several ways to participate: sewing the bag together, ironing, cutting fabric and possibly handing out the free bags to shoppers at planned events. Currently, the committee is gathering types of fabric, thread, information on sewing instructions, and seeking volunteers. Interested participants are invited to the next meeting on Thursday, October 11, 2018 4:00 pm at VCRS 9465 E. Chanlyut next to the Central Landfill.

Weight loss helps knee arthritis Recent research shows that people who are overweight can reduce their symptoms of knee arthritis by losing at least 20% of their weight. Millions of older adults have stiff, painful knees caused by arthritis. Arthritis causes a breakdown of the cushion of tissue inside the knee joint. Without this cushion, bone can rub against bone. That may cause pain and swelling. Being overweight could make the symptoms worse. Experts generally advise adults who are overweight or obese to lose at least 10% of their weight to reduce symptoms of knee arthritis. Recently, an NIH-funded research team wondered whether 20% weight loss would help reduce symptoms even more. The study included 240 overweight and obese adults over 55 with painful knee arthritis. The research team helped them to exercise and diet to lose weight. The researchers compared the people who lost 20% or more body weight with those who lost 5%. The people who lost 20% or more reported less pain. They could walk farther in a 6-minute test. In addition, blood tests revealed a much lower level of a

Despite its name, it is in the honeysuckle family. Viburnum edule is a straggly shrub that can grow to 8 feet Julie Cascio tall. The fruit, a red or orange drupe with a flattened stone, grows in clusters on short branches. The leaves turn red in the fall. The ripe fruit is available in late summer and fall; it softens after the first frost. If picked before the first frost, the hard fruit is more acidic; sour tasting. Some prefer the flavor at that time. After frost highbush cranberries ripen. The berry sweetens and has a musty flavor and odor. It makes a yummy “catsup” enjoyed with meat. It is good eaten with rice and vegetables as well. Highbush cranberries are high in vitamin A, vitamin C and dietary fiber. One serving

For Juice Combine 4 cups clean highbush cranberries with 1 cup water. Crush berries and simmer for 10 minutes. Strain through a jelly bag or layers of cheesecloth. For clear juice, do not twist or press jelly bag or cheesecloth. For long-term storage, the juice should be frozen or canned. Yield: 2 cups juice

Spiced Highbush Cranberry Catsup 6 cups highbush cranberries 1½ cups onions, chopped fine 1 cup cider vinegar 2 cups sugar

1½ teaspoons allspice 1 teaspoon ground celery seed 1½ teaspoons cinnamon

1½ teaspoons salt ½ teaspoon pepper ½ cup water 1½ teaspoons ground cloves

Prepare jar lids. Cook the cranberries in the water until soft, then put through a food mill or a sieve to remove seeds. Add the onions, vinegar, sugar and spices. Boil until the mixture thickens and reaches the proper consistency. Immediately pour ketchup into hot canning jars, leaving ¼ inch headspace. Wipe jar rims and cover with prepared two-piece lids. Process for 10 minutes in a boiling water bath. Serve this cranberry sauce with poultry or meat or use in baked beans. Yield: 4 cups
