Follow these simple tips to keep little ghouls and goblins out of harm’s way on Halloween.
KIDS
• Never trick-or-treat alone. Walk with a group or trusted adult. • Walk from house to house, and look both ways before crossing the street. Don’t run, and use sidewalks and crosswalks wherever possible. • Put reflective tape on your costume or treat bag to make sure drivers can see you in the dark, and carry a flashlight with you. • Examine all of your treats to make sure they are safe and sealed before eating them. • Don’t wear loose costumes or shoes that may cause you to trip, and use nontoxic makeup instead of a mask to make sure you can see clearly. • Make sure costume accessories such as swords or knives are short, soft and flexible. • Don’t approach dark houses when trick-ortreating, and never go inside a stranger’s house. • Don’t approach pets while wearing a Halloween costume. They may not recognize you.

• Provide healthier options for trick-ortreaters like low-calorie or low-sugar treats or nonedible items like stickers, erasers, pencils or small toys. • Keep candlelit pumpkins and luminaries away from walkways and doorsteps, and never leave them unattended. • Slow down and be on the lookout for trickor-treaters when driving. • Never let kids trick-or-treat alone. Go with them if they are under age 12, and make sure older children are with a group of trusted friends. Go over the planned trickor-treat route with your child, and be sure to set a curfew. • Make sure your porch and walkway are well-lit, and move any potential tripping hazards out of the path of trick-or-treaters. • Keep family pets away from trick-ortreaters, even if they are friendly. • Limit the amount of candy your kids eat each day, and encourage them to give away excess candy.

Don’t treat me like trash, please recycle The Public Service Announcement “I Want to Be Recycled” is delivered through our media outlets to urge American consumers to recycle every day. When we recycle, something used gets another life to become like new. This message resonates loud and clear to consumers who deliver their used material to Valley Community for Recycling Solutions (VCRS). Among the locals, we have met artists who rely on an emotional reaction to their appealing work in order to convey the importance of recycling. So that we can preserve our land, the need for raw materials needs to be reduced. To demonstrate how the message hits home for those looking to meaningfully work through a transformation process, here are two stories about art made from unconventional materials. When calling out to our community for recycled garden art entries at the Alaska State Fair this year, we hoped the message would strike a chord. Take a good look at this entry, it’s a head turner: Yard Art Owl by Bill Stannard of Wasilla, winner of the People’s Choice Award at the AK State Fair. Often, I will see an item and know it is meant to be art of some type. The saw blades made perfect feathers and an old 2” trailer ball made perfect eyeballs. Most of my projects start with some kind of tank since the flat stuff can be made perfect by machines and then mass produced. This owl started with an

old helium tank and the inside of a torque converter which I thought could be something special. Once I have the basic outline, anything that is laying around at the time becomes part of the project. The finished project came out perfectly imperfect, which is just how I like it. I sometimes weld stuff on and maybe it does not look right so it gets taken back off and saved for another project. I made a large dragonfly last year and the eyes for it came from a well drilling rig. I used two out of a worn tri-cone bit then and the third worked perfectly as a mushroom to top off the tree this owl is perched on. My yard has many of my past projects and I don’t sell much of what I make. When it does sell, I usually just pay for my welding supplies or trade for something I might need. I worked most of my career in the gravel pits around here and welding was one of the many talents I picked up along the way. I enjoy creating projects out of old recycled metal, so I started making yard art a few years ago as a way to repurpose some old tanks I had. Also, it is nice to have a few friends that have collections of stuff I can pick through. I get a lot of inspiration from Pinterest since you can search for interesting ideas. All I need is a picture. Tales of a Warmer Planet by Judy Vars is one of three related pieces, called a triptych, which have been donated to VCRS to support our fundraising auction. A collage, preserved and highlighted using an ancient art form known as encaustic painting, mixes beeswax with dammar resin. Enlarged with the aid of a vintage magnifying glass, aged newspaper articles collected as evidence over the years create this thought provoking art piece that addresses global warming in Alaska and the Arctic. Adding to the effect that bees are one indicator of hope for solving the perilous problems we face from climate change, this work also projects: climate change is not a hoax but a big concern, an invitation to look the problem square in the face, and educates the spectators toward adjusting their mindset to take personal responsibility for the part we play and change our habits. Apples to enjoy! By Julie Cascio Julie Cascio, Mat-Su District, Cooperative Extension Service Wow, my neighbor’s apple trees are overflowing with apples this year! And have grown bigger than in previous years. The warm climate this year has helped apples grow well. This has also given moose other trees to eat. The three apple trees that we planted 16 years ago have been regular food to moose in our area. This year, the trees are actually providing apples and the moose are leaving them for us! Watered well is helping the apples grow Julie Cascio well, too. Research on apples and crabapples reminds us that “an apple a day keeps the doctor away” has validity. Benefits of nutrients vary based on the variety. Apples are rich in antioxidants, flavanoids, and dietary fiber, pectin, which is found in its peel. The phytonutrients and antioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease. Now an abundance of apples are ripe and ready to eat. To check for this, slice in half and look at the core and seeds. A ripe apple will have brown seeds that are firm and dense. These are ready to eat. If the seeds are lighter it may be a good time to harvest for storage of later use. In addition to eating the fresh apples and handing them

to friends and family to enjoy, there are many ways to store it for later use. Storage - Before storing ripe apples, remove debris and carefully sort and discard bruised or damaged fruit. For short-term storage, keep apples in a cool place. The optimum storage temperature is 30° to 32°F with 90 percent relative humidity. Apples will pick up off-flavors in storage, so they may need to be kept in plastic bags or otherwise protected from refrigerator odors. Canning apples to store them is another way. While cooking apples reduces the nutrients, a good amount remains. Sliced apples placed in hot jars, cover with boiled water or syrup to ½ inch headspace. Wipe jar rims, adjust lids. Process in a Boiling Water Bath in pint or quart jars for 20 minutes. Apple Juice is often made from a blend of apple varieties. Make the juice; refrigerate for 24 hours. Carefully pour off clear liquid and discard sediment. Strain clear liquid through a paper coffee filter, then heat juice, stirring occasionally until juice begins to boil. Pour into sterilized pint or quart jars, leaving ¼ inch headspace. Wipe jar rims, adjust lids. Process in a Boiling Water Bath for 5 minutes. Applesauce. Select apples that are sweet, juicy and crisp. For a tart flavor, add 1 to 2 pounds tart apples to each 3 pounds of sweeter fruit. Wash, peel and core apples. Place in an 8 quart pot. Add ½ cup water. Stir occasionally to prevent burning, heat quickly and cook until tender. This takes 5 to 20 minutes, depending on maturity and variety. Press
through a sieve or food mill for a smooth sauce. If a sweeter flavor is desired, add 1/8 cup of sugar per quart of sauce. Taste and add more to your preference. Reheat sauce to boiling. Pack into hot jars, leaving ½ inch headspace. Wipe jar rims, adjust lids. Process in a Boiling Water Bath in pint jars for 15 mintues or quart jars for 20 minutes. Dehydrated Apples are healthy snacks. Peel and core the apples, cut into slices or rings about 1/8 inch thick. Place in a Dehydrator at 130°-140°F for 5 – 8 hours. To determine when the slices have reached about 20 percent moisture content, remove a few slices from dehydrator. Cut cooled pieces in half. There should be no visible moisture. Apples remain slightly pliable, but should not be sticky or tacky. After drying, cool fruit 30 to 60 minutes before packaging. New cardiologist helps fill growing need in the Mat-Su By Katie Stark Palmer, AK – Ellen Gallant, M.D., board-certified interventional cardiologist, has joined the staff of Mat-Su Regional Medical Center. Gallant will be the first employed cardiologist in the hospital’s new Mat-Su Heart clinic. “We are thrilled to have a cardiologist of Dr. Gallant’s caliber on our medical staff,” said Mat-Su Regional CEO Dave Wallace. The hospital recruited Gallant to fill the growing need for heart care in the Valley, Wallace noted. “With Dr. Gallant being based full-time in the Valley, more patients will receive the care they need here at Mat-Su Regional – closer to come. In a discipline where timeto-treatment is such a critical factor, this is vital,” Wallace said. Gallant relocated from Helena, Montana where she served for the past year at St. Peter’s Medical Center. An avid mountain climber and outdoor enthusiast, Gallant said making the transition to Alaska was an easy choice. “All the incredible athletic activities here, and the beauty, are what drew me,” she said. Gallant was born and raised in Boston. She trained at Columbia University and Columbia-Presbyterian Medical Center in New York. Her professional history includes three fellowships, board certification in nuclear cardiology and cardiovascular disease, and 20 years of experience as an interventional cardiologist. Her desire to be in the medical field was set in stone at a very young age and was encouraged by her father. “I used to say I wanted to be a nurse, then at some point my father, when I was still really little, said, ‘Ellen, why don’t you want to be a doctor?’ And of course I was a daddy’s girl and I said, ‘I’m going to be a doctor,’” she said. ty and stenting to open blocked arteries in the heart, often in the setting of a heart attack. She also places permanent pacemakers, reads echocardiograms (ultrasound of the heart), performs cardioversions to restore normal heart rhythms, and performs transesophageal echocardiograms. In addition, she has a focus on prevention. Gallant spends a lot of time educating patients on wellness and preventive care – discussing eating habits, exercise goals and ideal cholesterol levels in order to prevent a major event like a heart attack. While surgery is part of the job, getting to know patients and making a connection with them is what she most enjoys. Gallant considers this to be one of her greatest strengths. “I always think it’s really fun to just sit down and talk about who they are and what they like to do,” she said. One of Gallant’s favorite memories is of a patient – a police officer – who had a heart attack on Christmas Eve. The following Christmas Eve, he brought her a thank you card for saving his life. Throughout her career, Gallant has
taken regular breaks to spend time pursuing her passion of mountain climbing. She has climbed mountains all over the world. She scaled Denali in 2006, and tried twice to summit Mount Everest, before finally reaching the summit on her third attempt in 2017. “The view from the summit of Everest in May of 2017 was the most beautiful sight I have ever seen. I feel blessed to have stood there for even those few moments,” Gallant said. Her other hobbies include mountainbiking, road cycling, hiking, and stand-up paddle-boarding.
