Upcycle food Julie Cascio, UAF Cooperative Extension Service jmcascio@alaska.edu Nobody intends to waste food, yet up to 40 percent of our country’s food supply ends up as waste, unnecessarily filling landfills and contributing to greenhouse gas emissions states the Natural Resources Defense Council. This costs a lot! The Environmental Protection Agency states “It is estimated that at the retail and consumer levels in the United States, food loss and waste totals $161 billion dollars.” Epa.gov Efforts to buy just the right amount of fresh produce and other perishables that we’ll use for the week, stocking the freezer and pantry with longer storage time items, planning meals, shopping with a list, upcycle food not being used, and composting are what we should do. This minimizes food waste, saves money, helps reduce greenhouse gas emissions, and contributes to a more sustainable food system. Shopping Tips Prepare weekly menus and make the shopping list. Knowing what and how much of each ingredient is needed to buy, helps reduce food waste. Buy just the amount needed of whole grains, nuts and seeds from bulk bins. Choose fresh looking produce. Proper storage of fresh produce maximizes flavor, preserves nutrients, minimizes waste, and saves cash. Storage choices have a big impact on how long produce stays fresh and can also affect taste and texture. Tomatoes, Tufts University shares, can develop an unpleasant mealy texture when refrigerated, so are best kept on the counter. Fruit can be held at room temperature and out of direct sunlight until they ripen. Potatoes, onions, and garlic are ideally stored in a cool, dry, well-ventilated place, such as an uncrowded pantry shelf or a countertop out of direct sunlight. Keep produce in the fridge, in drawers to maintain moisture. The ideal refrigerator temperature is between 35 and 38 degrees Fahrenheit. Strawberries, grapes, cherries, and blueber-

ries keep best in ventilated bags or containers that can release moisture. Some vegetables, like asparagus and fresh herbs, do well wrapped in a moist paper towel or standing in a glass of water in the refrigerator. Buy frozen fruits and vegetables to avoid produce waste and get nutritional quality similar to fresh. It is also a money saver when foods are not in season. Frozen berries, for example, can be used year-round in favorites like smoothies, parfaits, and oatmeal. Frozen is also ideal for whatever go-to vegetables you like to have on hand. Choices like broccoli and green beans can be stand-alone sides or ingredients in soups and casseroles. It doesn’t hurt that most frozen produce is conveniently pre-cut. Canned vegetables, like tomatoes, corn, and mushrooms, are also smart choices for stocking the pantry. They are nutritious (preferably low-salt version), have a long shelf-life, and are a time-saver. Upcycling turns that soon-to-be-tossed produce into something new to eat. This is to repurpose something we no longer want to eat on its own. That extra basil could become pesto or added to tomorrow’s pasta sauce—delicious! Freeze (or can or dehydrate) fresh fruits and vegetables to preserve them. This helps keep extras for future meals and to save overripe produce and scraps for use in vegetable stocks,
smoothies, and baked goods. Some foods, like berries, can be frozen as is. Others should be sliced (like bananas) or blanched (like green beans) before freezing. It’s practically impossible to avoid all spoilage. www.cespubs.uaf.edu has publications on these food preservation methods. If produce does spoil, toss it into a compost bin. Plan to make the most of your produce by purchasing the type—fresh, frozen, or canned— and amount that suit your needs, and be sure to utilize the best storage strategies to minimize food waste.
