EGG-celent time of year Julie Cascio UAF Cooperative Extension Service Tis the time of year to enjoy eggs. At Easter many of us boil eggs to decorate them. Then hide them to hunt and collect. Enjoy eating the boiled eggs plain, made into deviled eggs or egg salad or added to potato salad. Egg-ceptional nutritious and economical, eggs provide high quality protein, unsaturated fatty acids, and health-promoting bioactive compounds. Eating up to one egg a day has been deemed to have little effect on cardiovascular health for most individuals. Do take care when handling and preparing fresh eggs and egg products. Live poultry can carry bacteria such as Salmonella, which can contaminate the inside of eggs before the shells are formed. Egg shells may become contaminated with Salmonella from live poultry droppings (poop) or the area where the eggs are laid. CDC.gov recommends: • Keep eggs refrigerated at 40°F (4°C) or colder.

Egg Cracking The most common way of cracking an egg is on the rim of a bowl or pan. While this gets the job done it can drive the shell into the egg causing bits of egg shell to fall into the raw egg. To prevent this, the best way is to crack it on a flat surface. As eggs.cas/eggs101 adds, “use your thumbs to separate the egg shell where it’s cracked and tip the egg into a small bowl.” Crack your eggs into a separate bowl before adding it to your pan or into your main ingredients to make sure the egg is still fresh and no bits of shell remain.

Sealed jars of correctly canned meat are stored in a cool, dry, dark location. Having a good area for the storage is important. Sauerkraut Stew it can be made into a meal quickly. Since the correctly canned meat has been cooked during the processing, it is ready to eat. Such an advantage when in a hurry to make a meal! When ready to use, examine the jar for signs of spoilage. Before moving the jar off the self, look for rising air bubbles, cloudy canning liquid or unnatural color inside the jar. While opening the jar, watch for spurting liquid or cotton-like mold growth on food surface or under the lid. Smell for unnatural or off odors. Never taste food from a jar with an unsealed lid or food that shows signs of spoilage. It is so fun to have simple ways to make

Stroganoff 2 tablespoons butter 1 cup chopped onion 2 cups fresh mushrooms, sliced 3 tablespoons flour 2 cups beef broth

1 pint jar (1 3/4 cups) canned meat 1 tablespoon tomato paste ½ cup sour cream Salt and pepper to taste

Melt butter in a 4-quart saucepan on medium heat. Add onion and mushrooms; cook until soft. Stir in flour and cook until smooth, Slowly stir broth into pan. Add meat. After the mixture cooks for ten minutes, stir tomato paste in slowly. When ready to eat, take off heat and stir in sour cream. Season to taste. Serve over hot rice or noodles. 6 Servings
