Make meals ahead Julie Cascio, UAF CES A freezer can be your best friend. Okay, it may be a stretch of the imagination to think of sitting in the garage talking to your white chest freezer about the woes of your day. However, when you are running late from work and the kids have a game in a little over an hour, having a meal ready in the freezer that just needs to be warmed up is certainly a gift. Taking a ready-to-eat meal to a neighbor who needs help may be your reason to have meals in the freezer. Then again, just having meals ready in the freezer can be convenient, can save time having to think up meals every day and can prevent frequent trips to the grocery store. There are many cookbooks and websites available to help you cook meals for two weeks or even a month and store them in the freezer. If you are interested in trying this technique, here are a few strategies to consider. Plan ahead. First make a list of your family’s favorite foods. Now consider which foods will freeze well. Soups, casseroles, sandwiches, entrees to serve over rice,

and chicken dishes are some examples of main dishes that freeze well. Take advantage of store sales and coupons as you plan your meals. Then plan which meals will be eaten on which day over the next two weeks. Julie Cascio Create a list. Now that meals are planned for the next two weeks, look at the recipes for each food and create a master list of the ingredients needed. Check which ingredients you have on hand. Organize your list by store sections. Then take the list of ingredients you need and go shopping the day before you plan to do your bulk cooking. Have on hand freezer grade packaging materials in which to store your finished meals. Organize your ingredients and space. The evening before you plan to assemble meals prepare ingredients that are used in several recipes (for example chop onions),

cook large food items such as whole chickens, and organize your work space. Gather cooking dishes, storage items, marking pens and utensils. Turn your freezer to 10 degrees below zero. Pay attention to food safety during prep time. Keep hot foods hot and cold foods cold. Keep meats chilled below 40 degrees Fahrenheit until you are ready to prepare them. Then chill as quickly as possible or cook immediately. Remember that food should be in the danger zone (temperatures between 40 and 140 degrees Fahrenheit) for less than two hours total. Avoid cross contamination of foods. Wash surfaces that have been exposed to raw meats, poultry or fish with hot soapy water and sterilize immediately. Keep raw meats away from other food. Label and freeze. Once assembled, label each package with the name of the product, reheating instructions, and the date. Make a master list for the outside of the freezer and mark off as you take out a meal. Take the entrée out of the freezer the night before you plan to eat it. Thaw frozen

meals in the refrigerator. Remember to include vegetables, fruits, whole-grain breads and low fat milk in your meals. Preparing several meals at a time and storing them in the freezer is a great way to save time and money.
