FOR THE last 4,000 years, the heart of Minoan civilization has been beating strong at the archaeological site of Knossos. Known as the first literate civilization to appear on European soil, its sophistication is evident throughout: the magnificent palace, the courtyards, the private apartments, the lively and colourful frescoes and the painted pottery. As you wander about this immense labyrinth, you can almost hear the Minotaur roaming the paths; you can almost visualise Daedalus and Icarus as they leap to freedom.

WHEN IN Crete, you absolutely have to taste kalitsounia, which are traditional sweet cheese pastries made from rolled dough. Although originally an Easter holiday treat, you can find them throughout the year. Kalitsounia are traditionally made with a fresh, soft variety of myzithra cheese, with a drizzle of warm honey and a sprinkle of powder cinnamon. You should also try rakomelo; a regional sweet but seasoned alcoholic drink, usually served warm, which combines raki with honey and spices. Rakomelo has an amber bright colour and a sweet and delicate taste. It is a digestive spirit, traditionally used as a practical remedy to cure sore throat and cough.
