So it’s our pleasure to formally welcome you to the first edition of Taste, a look at some of the best food and beverage offerings in Doha and a guide to hosting loved ones at home during the Holy Month. What is Ramadan? Ramadan is practiced as the holiest month of the year in the Muslim calendar. A time for giving, empathy, peacefulness, and most importantly, devotion to God. How is it practiced? Muslims from all over the world fast from sunrise to sunset for the entire month. Despite the challenges of abstaining from food, drink, smoking and other activities from dawn to sunset, the month is one of personal and spiritual reward, highlighted by the gratification of praying and giving to others who are less fortunate.

The entire country goes dry for 30 days—meaning alcohol will no longer be served in hotels for the entire month. Shopping and Dining: Shops, banks and mall hours change during Ramadan. Celebrating Culture and Tradition Though it’s a quieter and more reflective month, Ramadan also brings about unique traditions and different ways of socializing. You’ll find hotels hosting suhour tents, friends and family gathering at homes and restaurants for iftar, people enjoying coffee and dessert late at night, and fun celebrations and traditions through the month. The Sunset Cannon: A cannon that is fired off at sunset each day during Ramadan to signify that it’s time to break the fast. Garangao celebrations: Various venues host special activities for children on the 14th day of Ramadan, similar to Halloween. Kids dress up in traditional clothes and knock on neighbors’ door for nuts and candy while singing a special Garangao song. Corniche car parade: Young Qatari men gather daily for about an hour before sunset to showcase their vehicles.

The Westin’s Chef Bulent Canbolat shows us how to make the perfect shish tawook. Ingredients (around 15 skewers): 1.5kg chicken breast, cut into cubes 200ml corn oil 200g tomato paste 100ml cup lemon juice 10 chopped garlic cloves 20g mustard 1 tbsp salt 1/2 tbsp crushed black pepper 100ml plain yogurt 20g finely chopped parsley 5g oregano 5g cinnamon powder 500g red/green capsicum

Method: Emulsify the mustard with the corn oil. This is done by whisking a little bit of oil into the mustard and continuing to do so until all the oil is incorporated. Add and whisk the yogurt, lemon juice, salt, pepper, tomato paste, garlic and oregano until well mixed. Marinate the chicken in this combined sauce overnight in the fridge. Skewer the chicken along with pieces of red/green pepper and grilled over charcoal until done. Don’t overcook otherwise the chicken would dry out. 27

Method: Prepare and cook your fish Marinate hammour fillet with salt, pepper, olive oil and lemon juice. Use a frying pan to pan-sear the hammour fillet on both sides. Bake in the oven at 180°C for 15 minutes. Make the sauce While waiting, prepare the sauce and use a saucepan and add olive oil. Next add onion and garlic, cook until brown. Sprinkle cumin powder and add green chili (optional). Pour in tomato sauce, and let cook in low heat. Add salt and pepper to taste. Serve and enjoy: Once the fish is ready, place it in the sauce and let it simmer. After 10 minutes, it’s ready to serve. Garnish with pine nuts and fresh coriander.

Braised Lamb Shank with Badawai Rice

Feed the whole family with this classic comfort food recipe from DoubleTree by Hilton. LAMB SHANK Ingredients 2 tbsp olive oil 4 lamb shanks (medium) 2 medium onions chopped 2 tsp finely chopped fresh root ginger 3 garlic cloves, finely chopped 2 fresh green chilies, seeded and finely chopped 2 tsp ground cumin

2 tsp ground coriander 1 tsp freshly ground black pepper 1 tsp paprika 2 large tomatoes peeled, seeded and chopped pinch of saffron strands 2cm/¼in piece of cinnamon stick 450g carrots cut into thick slices 140g ready-to-eat dried apricots 1 tsp clear honey

Method 1. Heat oil in a casserole and brown the lamb. Set aside. Pour off fat, leaving 1 tbsp in the pan, add onions and fry until soft. 2. Preheat oven to 160C. Mix the ginger, garlic, chilies, cumin, coriander, pepper and paprika. Add half of the mix to the onions, tip in tomatoes and cook for 2-3 min. Put in the lamb, cover generously with water (about 850ml), bring to a boil and simmer for 5 min. Cover and cook in the oven for 11⁄2-2 hours until the lamb is cooked. (You can prepare up to this stage the day before. Cool, cover and refrigerate. Bring back to simmering point before starting step 4.) 3. Remove from the oven and stir in the remaining spice mix, the saffron and cinnamon, carrots, apricots, honey and salt. Cover and return to the oven for 45 min-1 hour until the lamb is tender and the vegetables cooked. Scatter almonds and coriander on top. 4. Take some lamb bones. Heat the water and leave aside. In a small bowl, mix the baharat, turmeric, cumin, and cardamom and add to this mix one tsp of salt. Sprinkle half of the spice mix on the lamb bones.

Badawai Rice Ingredients 4 1⁄2 cups water 650g Basmati rice 3 tomatoes, quartered 3 onion, finely chopped 1⁄4 cup coriander leaves, chopped 1 green hot pepper, as desired 2 black dried limes 2 tsp baharat spice mix 1 1⁄2 tsp turmeric powder Method 5. Heat oil in a large cooking pan, fry the onions until golden brown, then add pepper and black limes - you MUST make a hole in each lime. 6. Add the lamb bones to the onion mix and turn it over a few times in the pan. Sprinkle a tsp of cinnamon and the rest of the mixed spices. Turn all the contents so the lamb is coated with spices, cover the pan and cook on medium heat for 3 min. 7. Add garlic, chopped ginger, and tomato cubes to the pan and turn the ingredients in the pan a few times. Cover again for 3 min on medium heat. Sprinkle with remaining salt and pour water on it while it’s still hot. 8. Cover the pan and cook until rice is done, about 1 hour.Add the coriander. Wash the rice and soak for 10 min in cold water, then drain. 9. Add the rice to the lamb stock, stir, and cook on low heat until the rice absorbs the stock and is almost done. 10. Sprinkle rose water and lemon juice over the rice and put the butter pieces on top. Cover and cook on low heat for 30 min. 11. Serve the braised lamb shank atop the rice with sauce and fried onions on the side. 29

The Doha-based restaurateur has a smile on his face as he watches guests take in the amuse-bouche, a bright green bite of a reinterpretation of the popular Indian street food pani puri. “Close your mouth before you chew!” he warns with a laugh. And indeed, biter beware – there’s a deliciously unexpected surprise in store for diners at Zaffran Dining Experience, the first of many. Each course at Zaffran is infused with a bit of fun and a boatload of flavor. The welcome drink, the “Smoking Tea Riddle,” bubbles beautifully when poured over dry ice. An appetizer, the Scientific Smouldering Chaat, is a delicious heaped potato dish that smokes with mysterious allure when the lid is lifted off. The shrimp curry comes in the coconut it was cooked in – an inventive method of preparation that infuses that distinctive coconut flavour into the dish without relying heavily on coconut milk. The lamb chops come with gravity-defying mint foam, and dessert is a biscuit frozen with nitrogen that smokes when bitten into. Zaffran’s playful and inventive menu is the result of 14 months of Shroff’s hard work, as well as countless hours spent imagining, developing ideas, and collaborating with elite chefs to craft a restaurant that delivers an exceptional experience in molecular gastronomy. Tried and true Indian dishes, even the most basic ones like biryani, have been reimagined with a creative twist, such as the butter chicken biriyani, and prepared with scientific precision and attention to detail. Even the cooking spices have been carefully thought through. Shroff tells us that in order to avoid giving guests indigestion with the heavy spices typical of Indian cuisine, Zaffran’s chefs boils them to a certain temperature and use the reductions to create sophisticated essences used in cooking. We came for dinner, and left in awe.
