Cookin’ Corner 5 Tips for Summer Picnics By Phoebe Schilla

Summer picnics are a truly fabulous way to get our kids involved in the kitchen. It is almost too easy if you stick with a simple, traditional picnic menu with trail mix, crudités and dip, sandwiches, salad and a simple dessert. The advantages of staying with a cold menu is that you can really get the kids involved, regardless of age, and mom or dad will have more time to relax, play and socialize at the actual picnic. Plus, you don't have to think about grilling, starting a fire or transporting raw food. Here are my top five tips involving the kids and making picnics accessible all summer long! 1. Keep a bag stashed in the car with utensils, plates and napkins and wet wipes. 2. The kids can make trail mix and clean out the pantry by using up all of the extra bits of pretzels, goldfish, nuts and chocolate leftover from other projects. 3. Make a crudités platter together. Kids can snap the ends off of green beans and take the tops off of cherry tomatoes. Adults can chop carrots and celery. Pick up your favorite dip from the deli or farmer’s market and you are good to go! 4. Teach the kids how to make their own sandwiches by creating a sandwich bar on the kitchen counter. Pull out all of the ingredients that you want to include and let them make their own. This is a great way to encourage independence. 5. Take berries and cream to the next level! Fill empty ice cream cones with berries and whip cream on site. Simply pour 1 cup of whipping cream into a glass jar with a tight fitting lid. Add 3 tbsp of sugar and 1 tsp of vanilla to the cream. Screw the lid on tightly. Pack it in the cooler next to an ice pack. Take turns shaking the jar of whipped cream until it has thickened considerably but is still pourable. This takes about 6 to 10 minutes depending on who is doing the shaking. Editor’s Note: Chef Phoebe loved cooking from an early age growing up outside of Portland, Maine. Her mother and aunt were accomplished self-taught cooks who welcomed curious Phoebe into their kitchens. From tapping her own maple syrup from trees in the yard to baking homemade bread, Phoebe learned at an early age about the delicious benefits of whole, natural, seasonal foods. Phoebe lives in San Francisco with her husband and their daughter. In her spare time she enjoys reading cookbooks, traveling, studying yoga practices and, of course, learning about all the latest culinary happenings from around the globe. Courteous & Cool Courteous & Cool Pool Party Manners By Kari Doody

Everybody loves a fun pool party, but before you go to someone’s house to escape the summer heat be sure to freshen up on you pool party etiquette. A few weeks ago my neighbor invited a group of families to come over and enjoy their pool for the day. Below are some notes I made on what guests can do to help the host enjoy their day as well. 1. Always bring your own towels, bathing suits, and sunscreen. Don’t assume the host has enough towels and supplies for you and your family. 2. Remind your children to use the restroom before they swim. If necessary make a mandatory 5 minute bathroom break every 30 minutes to remind the kids to use the restroom. Also, if you have a toddler make sure you bring swim diapers. 3. Share any pool toys. Anything you bring to the party must be shared with others. If you don’t want to share it leave it at home. 4. Offer to bring the host some snacks or drinks for people to share. Kids always get hungry and it is not the hosts responsibility to always supply unlimited food and beverages for your kids. 5. Clean up before you leave. Remind your children that they need to clean up any toys in the pool, left over trash (event if it’s not theirs) and pick up any belongings before they leave. 6. Most importantly! Don’t forget to say thank you! I t takes a lot of effort to throw a pool party, or even just to make sure the kids are getting along in the pool and see that everyone is having a good time. Be sure to thank your host or hostess for inviting you to swim. Kari Doody is Founder of the Courteous and Cool Etiquette School. After having three children and sharing stories with other mom’s, she realized that many role models that our children look up to were in the news – and not in a good way. We aren’t born with good manners, they need to be cultivated at a young age and reinforced throughout young adulthood. Whatever level your child is at, she can help them improve their skills and confidence – and they can have fun doing it with my age appropriate games and activities. On Dad’ On Dad’s Watch s Watch The T-Shirt By Michael Malgeri As a high-powered guy in the world of information technology, who recently had to find a new job, I often spend time at trade shows checking out the latest gadgets. One of the cool things about visiting various vendor booths is the give-aways. I like to stock up on pens and take pictures of Evander Holyfield's half eaten ear but another favorite "chachki" at these events is the ever-popular "T-Shirt." Geeks like to write PAINFULLY clever sayings on them like, "There are 10 kinds of people in the world, those that can read binary and those that can't." I keep the cool ones and give the dorky ones to my kids. They don't even like thick, white patent leather belts for goodness sake! So after one show, I inventoried my booty bag and tossed a mint green pullover to my son, which read, "I fight for the users." Any info tech person who's had at least one computer date knows that "users" refers to customers... pretty basic, right? Not if you're in ninth grade, where words like "dinkie" and "skunk" that used to have respectable potty humor references, now take on drug related connotations. So one night this week during a routine inspection of our son's Facebook posts I saw the following rant. "I fight for the users means to fight for computers! So all you people who teased me today, it does NOT mean that I fight for marijuana, which I do not do!" "Jeez, Louise! It's a good thing I didn't give him the self-deprecating "I'm with stupid" T-Shirt with the arrow pointing toward his head. "I saw your Facebook post today. What's going on at school buddy?" "I just don't want anybody thinking I do drugs Dad!" "Good for you," I said. "I'm very proud of you. Go to sleep and I'll take care of it." The kids at school are a pretty good bunch so I took the path of least resistance and burned the shirt while he slept. The smell of cannabis filled the air...just kidding. Moving forward I'll do a better job of semantically assessing new T-shirts. I'm just not current on drug vernacular so perhaps I should stick to shirts with pictures...how about Evander Holyfield's ear. Editor’s Note: Along with “On Dad’s Watch” Michael has also written a series of books he calls “Bedtime Stories about Capitalism,” which teaches kids about honest profit making. It boasts a 17,000-square-foot spa and fitness center, and a collection of short and long-term rental apartments. The Balboa Bay Club & Resort distinguishes itself as the only full-service waterfront property in Newport Beach. Twenty minutes further down the highway and the Pacific Edge Hotel awaits. Located on the sand in Laguna Beach, this resort is centrally located and within walking distance to both downtown Laguna and the shops and galleries along South Coast Highway.
