VILLARS 2019 / FOOD CONCEPT Food is one crucial part of an organization. A successful event depends on healthy and well-fed people. All members are concerned with this topic. There are many questions related to the food and consumption which are raised as individual discussions or community conversations during EASA meetings. We would like to push further the discussion in and outside our community. Thereby we propose to create an «EASA FOOD LABEL». This aims both to create awareness among us during the event, but could also work as useful documentation of a “hidden topic”. The new brand will help to position us towards potential collaborations and sponsors. It will aim to research different methods in the field of collective nutrition. The project will be developed in three steps: - preparation, which consists to raise questions and develop methods

who is behind the kitchen? how much do we eat?

national or group cooking events what can we do with waste? The absence of tapaland is a moment to requestion the organisation of this event. Should it be a playful competition, should we use wasted food (or one ingredient), should we choose a special time for the event?

can preparation become more active? what do we do in queues? do we exchange on the food topic?

snack strategy what can we do with waste? should be implemented to avoid hunger. It can help to reduce waste during big meals. It should consist of healthy and all day long good and easy prepared food. ambassador will be in charge of mediatisation, track the food menu, research and organise events

Can you share your EASA food experience? good Not everytime when there is anything left for a vegan In Fredericia, vegetarian menu was so poor the next years I subscribed as an omnivore. But it seems that the croatian thought omnivore means carnivore... I think I ate more meat at easa than during the rest of the year... I think it was well managed in Vitosha. For me the best solution is to have a vegan meal for everyone, and have the choice to add meat/cheese on top of it. It makes it simple for everyone. Never on time, always spicy, too much bread, no fruit. I found it never really balanced. I’m omnivore but that doesn’t mean that I need to eat meat everyday at every meal. In normal life I try to favour a vegetarian diet but I love to taste some traditional dishes made of meat or fish. It happened to be a bit scarse sometimes, overall when I worked all day long in construction workshops. Yes Easa 2015 - cereals for breakfast which is not enough for construction workshops, sandwiches for lunch were great but after 14 days everyone was a bit tired of them, dinners were amazing Easa 2016 - unusual food and never really enough Easa 2017 - great food and good amount, just lunch was a bit not enough... special diets had shitty menus Easa 2018 - too much meat It is sad to receive a sandwich with lettuce only as a vegetarian but apart from that I find it satisfying and good. Omnivore=Meat every day. Please kill less animals. Beige, lack of a balanced fruit and vegetable diet. Malta was nice though, if I remember it correctly. (emoji «ok») Always to little vegetables: Tappaland 5.0 did a great job dealing with this. Also, the Bulgarian concept we had on Vitosha was really something to learn from Considering the nature of the event, at RE:EASA food was good, sometimes excellent. Salvaging leftover veggies and fruit from the local market was a great idea on Tapaland’s part. Having our meals while sitting on the rails was interesting and fun. I wasn’t traumatized by it so I guess that was fine ! food is part of the rituals of Easa, it is in our daily routine, in life as in EASA life. But food in EASA is takes up different layers of our routine and becomes an ordinary ritual in a non-ordinary setting. Still is gives structure to our days, I wake up I eat, I take a lunch break, I meat with friends for having dinner. But in a way, it lose its layer of being a commodity, and it remains in its pure way, being a need, being our energy. Though this means that we demand less of our food, we become more adaptable and less picky. It remains a given, but we are less keen on complaining, less keen on wasting.


So the thing is I already filled this in, and then I did something wrong and all my answers were gone so this is a shorter version. Lithuania: good dinner, often not enough, lunch for gluten freeers where mainly just leftovers, no nutrition and I had to buy more food to substitute. Denmark: I was used to not good food so I wasn’t as put out as others, I had high hopes for Denmark but they had to have cheap food because of money. It was obvious cheap food and afwul and at the end of EASA we opened all the freezers and there was an enormous amount of leftover food which wasn’t shared with the hungry easians. Croatia: a lot of food for the gluten free people, often there was a choice made between vegetarian and gluten free which wasn’t great for me, not enough knowledge about meat substitutes, but overall quite alright. I won’t say too much about the INCMs since that is such a different scale, but Lapland was my favorite because there was just a lot of knowledge about what they made and all the different diets that had to be met, also it took balls to just not do meat and still make it work. It’s hard to be picky with food in easa ,which i am normally.So it helped me test how far i can go without eating things i don’t think are tasteful and see where i can be open to new flavours! Community is so powerful that, after some time, it becomes irrelevant what I’m eating. It’s all done together and we are never hungry. Lunch sux. Always. It’s better if we go for some fresh vegetables, two slices of bread and cheese. Hungry all the time :,) 2 easas. Both had great food and great organization surrounding food Food was excellent. Although omnivores should have some vegetarian dishes as well, not just everything with meat it was good last year sure One thing is left on my mind since EASACro about food.TASTY! Not sure if helpers where talented architects in cooking or it was just about the ground-sitting on the railways way of eating (wouldn’t change that place with any luxury restaurant to dine)! In general if there appear any problems with meals, they are usually connected to lack of fresh vegetables and fruits, sometimes also with lack of variety. But overall, past experience was quite good (I loved the fact that in Croatia there were available the “leftovers” and if smb skipped the dinner they could find something to eat) I was omnivore in Denmark, so no complaints there. Being vegan in Rijeka was a bit tougher, there wasn’t diversity and many times the sandwiches weren’t exactly vegan. The queue for food is an experience. Yes, we are hungry, we are bored, we invent activities. We discuss, we sing, we promote our workshops. Once we started to make music with our dishes and from two people it grew up to ten, it was amazing.

I think it has a lot of proteins, which is important when you don’t eat meat. And you can eat it as a salted meal, but also as a sweet desert , like they do in asian countries. bread ? lunch sandwich ‘lost bread’ old bread dipped in eggs and milk in the pan yum Sandwich I don’t like to eat white bread all the time because it’s often not nutritionnaly interesting. But it can make any light meal ‘heavier’, i think it ‘s a good way to fight the hunger. And you can combine it with anything, sweet or salted.. Croissant Either lunch or breakfast. A good sandwiches which also as fresh bits to it... Dark bread with anything any time Old bread can be fried and served as a heavy calorie breakfast toasted whole-grain bread, seasoned to taste and drenched in olive oil sandwiches! In the netherlands we eat a lot of bread, I don’t see a problem. (Just make sure you get an alright gluten free version, taste it, it is often shit and we have to eat a lot of it) all the guys need brad on EASA. It’s not questionable. Yes. garlic ? pasta i love garlic Garlicbread i only take garlic when i can brush my teeth afterwards :) No kissing if needed :) it is a spice Raw, baked, boiled. People get sick at easa, fermented garlic helps with that. / jummie, in everything Even in the mornings.... Omg these keep getting better. Roasted garlic is good enough to just eat on bread. meat ? meat as toppings! bacon as an extra for soup etc. Berk Too many Bulgarian concept - meat toppings for omnivores, to top on vegetarian stews IF we really need to have it, do it as a topping, much easier during cooking, make it special (as it it supposed to be, make it worth to have killed an animal for it, like beautiful spanish salami or a jucy steak (I will never deny meat to be tasty, you just really don’t need it for every meal), meat three times a day is really overdoing it.) mushrooms ? lovely Everything with mushrooms Is it the right time for mushrooms? Are’nt we in summer? Fried mushroom salad with rucola pesto and lemon The issue here is, that as a protein substitute it is bullshit. Exchanging it for meat won’t help, human digestion cannot break down the cell walls of a mushroom. It’s just for the flavour. Soup, again. Great raw and cooked fried in butter Hmmm. oranges ? We just need to have a way to wash our hands afterwards it’s not season for oranges Raw Fresh, any time. If they start going bad, one can always do some «tapaland» trick on them. and turn them into jam for breakfast... Great snacks, great vitamins, great in salads yogurt and honey Juice. pasta ? italian style: pasta or raviolis with olive oil only, cheap and delicious Chili SIN carne My favourite pasta is capellini. It’s a bit like spaghetti but softer. I lik epasta because you don’t need to add a lot to it to make it good. Just some pepper, garlic and some pasley and it’s good! Or some pesto with cream. With a little bit of cheese Pasta AL DENTE with sauces (with vegetables are the simplest and best in my opinion) are always delicious. I was always surprised not to find more pasta in EASA, as it’s a very simple dish Cacio e pepe ask the italian team to cook it <3 / Oke pasta made me think of this: why do we eat the most filling meal in the evening, what if we have pasta during lunch (like the good old days) then we have more energy for working, although eating it for dinner would mean more energy for partying. Oof. Again in order of quality: carbonara, aglio e ollo, bolognese, cacio e pepe Quatro formaggi pasta with tomato sauce or really anything Do you know the Flying Spaghetti Monster? What kind of products did we forget? oats, green salad, oat milk, rice milk, zucchini, salsa, LENTILS Tofu! Buckwheat! Easy and good stuff for everyone, also delicious Porridge is a good and cheap breakfast food MELONS! Cereals, pears, watermelon, peaches, cherries, grapefruits, Chick peas, lentils, faggot, cucumber, salad, zucchini and eggplants, melons and watermelons, grapes, polenta (useful as a side dish), muesli and cereals, dry fruits (nuts) Quinoa. Brillant source of protéine and carbs. Good in salades aswell Bacon Water and cucumber It is all about balance, about how much bread or meat is served. So maybe a couple of dish proposals wouldn’t have been better. Then breking it aparr and making adjustments. Müsli and that stuff for breakfast (can be bought in big packs, and last longer then bread) nuts and dry fruit gives energy! Cabbage? Cucumber? Watermelon? Maybe we can think about salad recipes :) HONEY Cereal! I guess everything was covered. I mean if croissants was one of the questions. Mybe burek? More types of fruits please Maybe olives. I love olives in salads and such.. Cous cous/lettuce/watermelon I really eat allmost every thing vegetarian. The most important thing is the quality of the ingredients as well as much diversity of meals and ingredients. Shrimps Strawberry and some kind of Swiss fruit? I’d also love to try traditional food in Switzerland

What kind of extra activities can be done in the queue? talk, bond singing, gathering ideas Activities where you have to meet people and talk with them. No queues no extra activities to come up with Speed dating - a lot of new easians in the past years... The old easians make them feel excluded. Yoga Massaging each other ?! Reading Neck massages dancing memory? collective dancing? dance, interviews (not neccesarily about being in line), but talking it friends is already awesome. There could be people handing out starters in the queue...maybe from a different country each day,so that there’s more ethnic diversity don’t think about it Too much activities kill the activities! Queuing is already a good way to get to know people and have a discussion... Exercise, call your parents, worry about life, smile at the cute girl from your workshop, worry a bit more Quiz or “find the mystery” games Hmm maybe some kind of ‘small quiz’ for ‘special foods’ , who gets to take it, it could like a small challenge, funny and wake up your energies? Drumming rock-paper-scissors music!!! games maybe Someone going to every person waiting in the queue, asking different questions to each of them. Winners take a small desert served at the moment. Dreaming...

Where will be the best place to eat? somewhere we can sit with feet lower than body, in the sun outside Mountains On the railways ahah More seriously in the nature, not to far from the crafting zone, but sufficiently separated from it. The most important is to be with everyone and have a spot in the shadow (if there is too much sun) Restaurant a place with a shelter, not too humid. An open-air camp outside! In my opinion outdoors in the nature is always the best idea On the grass with a nicw view on the ground in circles where we are all together Nature! Somewhere with a view on mountains, of course It depends on weather. If it’s warm and in general nice time then definitely somewhere outside, even sitting on grass. Where will be the best place to eat? INCM Bulgaria concept was good --> meat was turned into side dishes a lot of soup and fruits, the 5 portions of fruit and vegetables we need a day healthy, organic food Vegan-food days Make it as variable as possible and don’t give meat necessarily everyday to omnivores To vary as much as possible Omnivores do survive without meat so its not needed on every meal. Vegetarian or vegan diets should include suitable proteins and everyone should eat vegetarian/vegan atleast 1/3 of their meals. Barbecue sauce with vegetarian meal makes omnivores/carnivores happy - it is how we survived INCM Finland. Since the food is going to be vegeterian based it should be rich with protein - that was the problem in Lithuania, there was not enough proteins in the food. Simple and nutricious Dairy products from alpine villages just.. please, don’t kill pasta. A whole workshop. Food reflects what we are etc so it is also important to make a statement with that. Salad Always serve s at some spot sorry i need to work It is not bad to eat the same things more than once it is bad to eat something for every meal every day forever. I have no particular ideas, but it is interesting to think about different backgrounds and eating habits gathering around one table. Yogurt and Honey at anytime! Eating in a long table of 500 people or picnicking in a line once we move on the alpage... imagine a grooving line being distorted by the Swiss topography Eat standing up. Eat lying down I don’t know if they’ve ever done this in the past workshops but maybe like each night for 1 meal like lunch or dinner we eat traditional foods from each country. We could get to know the cooking culture and try new dishes.
