Letter

in between toiling away on the print editions of the magazine, the Antholog y team decided that sleep was overrated and we should add a special digital-only holiday gift guide to our workload. When it was complete, we were thrilled with the result. The stories were in keeping with what readers had come to expect from the print magazine, while the online format allowed us to easily link to shops and products. So earlier this year, when it came time to decide whether we’d commit to putting together another guide, it was a nobrainer. Gwendolyn Mason and Earnest Merritt had a fairly straightforward goal when they launched their design studio, Dear Hancock, last year: “We wanted to be creative and paint all the time,” says Gwendolyn. The pair—she grew up in New Hampshire, he in Ohio —met in Los Angeles in the MFA program at California Institute of the Arts. Since those school days, Gwendolyn has worked as a designer and an illustrator, and Earnest has taught art and woodworking. Dear Hancock— which specializes in hand-painted paper goods such as greeting cards, stationery, prints, calendars, and wrapping paper—is now her fulltime job, while he continues to balance it with teaching. Their designs are often a collaborative effort. With the “Gigantic Sapphire on a Flatbed” illustration, for example, Earnest did the truck and Gwendolyn the sapphire it is transporting.

In the couple’s L.A. bungalow, Dear Hancock is ever present. In the dining room, Earnest and Gwendolyn paint at two drawing tables that face each other. The living room doubles as storage for inventory as well as a packing station. Shipments are prepared in the sunroom. “Our style is live/ work,” says Gwendolyn. “Heavy on the work.”

We drive to the mountains and build a snowman in the back of Earnest’s pick-up truck. The challenge lies in driving back down the mountain to reach home before the snowman melts. GWENDOLYN’S FAVORITE HOLIDAY DISH: Earnest makes a mean tra-

C hristmas morning in our house is always magical—gathering around a tree with family and watching with delight as presents are opened one at a time. The tradition is as long standing as anyone can remember, and a familiar one in many homes. In an attempt to serve a brunch equal to the occasion, I’ve found myself toiling in the kitchen in the pre-dawn hours while everyone else still slept, or keeping family waiting if I didn’t get an early enough start. Since neither of these scenarios creates warm memories, after a few years of trial and error, I’ve decided that the best approach is a menu designed to be prepped in advance, with just a IHZ VLPSOH VWHSV WR ÏQLVK LQ WKH PRUQLQJ EHIRUH VHUYLQJ $QG WKH OHVVRQ LV YDOXDEOH IRU DQ\ brunch—whether it’s to mark a special occasion such as a holiday, or it’s just a delicious excuse to get together with friends.

3. Carve around the lines you transferred with a narrow V-gouge loaded in your linoleum cutter. 4. Load a straight knife blade in your linoleum cutter (or use a craft knife) to cut the carved stamps from the rubber block. 5. Press the stamp onto stamp pad and then press onto the scrap paper. Carve away additional portions of stamp if necessary. To print on prefabricated linens, skip to step 8.

6. Determine the size of the linens you want to make. Use measuring tape and scissors to make a straight 1" cut in the fabric. Place hands on either side of the small cut and tear. Repeat until the fabric is desired size. 7. Wash and dry fabric. This will fray and shrink the fabric. Use scissors (and comb if necessary) to trim long strands of thread. Iron fabric flat if necessary. 8. Lay fabric on flat surface. Print carved stamps with stamp pads to create desired pattern. Clean stamps with soapy water or cleaning wipes before changing stamp pad colors. 9. Put stamped linens in dryer for 45 minutes on high heat to heatset the ink. QUINCE-ORANGE MARMALADE Edible gifts are always appreciated, especially when they are as beautiful and delicious as this Quince-Orange Marmalade. The recipe is straight from the successful kitchen of Rachel Saunders, the proprietor of Blue Chair Fruit. Don’t be intimidated by the three-day process, or if you’ve never experimented with preserving. Each step is straightforward and the end result is worth the extra effort.

1 ½ lbs navel or Valencia oranges, halved crosswise, each half cut lengthwise into quarters then crosswise into ¹/8"-¼"-thick slices

to reach 1" above the tops of the fruit. Cover tightly and let rest overnight at room temperature.

2. Bring the orange slices to a boil over high heat, reduce the heat to medium, and cook, covered, at a lively simmer 30-40 minutes, or until the fruit is very tender. As the fruit cooks, stir gently every 15 minutes or so, adding a little more water if necessary to keep the fruit submerged as it cooks. Remove the pan from heat, cover tightly, and let rest overnight at room temperature.


3. Meanwhile, prepare the quince juice: Place the quinces in a medium stainless steel kettle or saucepan and fill with water to about 2" above the tops of the quinces. Bring to a boil over high heat, then reduce the heat to a lively simmer. Simmer the fruit, covered, for 3 hours, or until the quinces are very mushy and the liquid has thickened to a slightly syrupy consistency. As the fruit cooks, stir it gently every 30 minutes or so, adding a little more water if necessary so the fruit can bob freely as it cooks. Keep the flame low enough to prevent the fruit from sticking to the bottom of the pan. Strain the juice by suspending a medium-fine mesh strainer over a heatproof storage container or nonreactive saucepan. Cover the entire setup well with plastic wrap and let drip overnight at room temperature. DAY THREE 4. Place a saucer with 5 metal teaspoons in a flat place in your freezer for testing the marmalade later. 5. Remove the plastic wrap from the quinces and discard the quinces. Strain the juice through a very fine mesh strainer to remove any lingering solids. 6. In a large mixing bowl, combine the orange slices and their liquid,

quince juice, sugar, and lemon juice, stirring well. Taste, adding a little more lemon juice if necessary, so you can just taste a slight flavor of lemon in the mixture. Transfer the mixture to an 11- or 12-quart copper preserving pan or wide nonreactive kettle. 7. Bring the mixture to a boil over high heat. Cook at a rapid boil until the setting point is reached; this will take a minimum of 30 minutes, but may take longer, depending upon your individual stove and pan. Initially, the mixture will bubble gently for several minutes. As more moisture cooks out of it and its sugar concentration increases, it will begin foaming. Do not stir it at all during the initial bubbling. Once it starts to foam, stir gently every few minutes with a heatproof rubber spatula. As it gets close to being done, stir slowly every 1-2 minutes to prevent burning, reducing the heat a tiny bit if necessary. The marmalade is ready for testing when its color darkens slightly and its bubbles become very small. 8. To test the marmalade for doneness, remove it from the heat and take a small representative half-spoonful and carefully transfer it to one of your frozen spoons. It should look shiny, with tiny bubbles throughout. Put the spoon back in the freezer for 3-4 minutes,

then remove and carefully feel the underside of the spoon. It should be neither warm nor cold; if still warm, return it to the freezer for a moment. Tilt the spoon vertically to see whether the marmalade runs; if it does not run, and if its top layer has thickened to a jelly consistency, it is done. If it runs, cook it for few more minutes, stirring, and test again, repeating more times if necessary.
