We first worked with Mother Model Management’s Kayla Travers in early 2008 when she starred in a beauty editorial in our Spring Fashion Issue. Since, we have been excited to watch her career grow, from the runways of Marc by Marc Jacobs and Rebecca Taylor to national ad campaigns for such fashion companies as Charles David. For this month’s fashion spread (“A Fall of Moondust,” p.58), we worked with Kayla, braving steep sand dunes in the latest futuristic fashions—including knits and separates by Saint Louis Fashion Week designers Skif and Trashbiscuit and shoes exclusively by Bakers.

This month was a flurry of anticipated parties and events. We headed to Black Label Gallery Lounge in Chouteau’s Landing for Connect With…The Arts on August 13, where we enjoyed entertainment by performers from Circus Flora and the Missouri History Museum and got interactive at the art stations set up by the Saint Louis Art Museum and Missouri Botanical Garden. Nikki Weinstein, Shane Cohn, Tony Gaddis and NewsChannel 5’s Casey Nolen were among the attendees who were treated to an evening of music, mingling and live entertainment. On August 20, The Pepper Lounge was the place to be for the after-party of the Streetballers movie premiere. Castmates Justin Tatum, Ryan Johnson, Slim, Wonnie and Adrieanne Perez reunited for a star-studded evening. In addition to crewmembers including writer/ director/star Matt Krentz and producers Craig Thomas, Patrick Rooney and Vernon Whitlock, New York Knicks player Larry Hughes, Jahidi White of the Cleveland Cavaliers and St. Lunatic Kyjuan were also in attendance. I

n St. Louis’ culinary community, a lot’s been happening lately. While restaurant openings have slowed dramatically since mid-’08, something on the rise has been expansion. Many established St. Louis restaurant owners are leveraging their success to launch new concepts while others are building on their existing enterprises.

This year we saw several local restaurateurs adding second and third concepts to their portfolios of projects. Take Pat Shannon, owner of Mike Shannon’s Steaks and Seafood restaurant, who also co-owns Lumen Private Event Space Downtown. This year, she launched Midtown’s new El Borracho, a Mexican cantina that offers affordable eats until 2:30am—filling a need for Downtown diners. Or Munsok So, owner of The Drunken Fish’s three St. Louis locations—despite the recession (and perhaps because of it), he sees opportunity in the challenge of rolling out additional Drunken Fish locations in other cities this year. And while it may not be surprising to see that Joe Edwards, who has continuously hatched new concepts over the last 35 years, has added a hotel to his list of businesses, is nonetheless deserving of a big pat on the back for bringing St. Louis a boutique hotel (finally!). All in all, hanging out with these visionary foodies—with their tireless enthusiasm, endless creativity and utmost attention to detail—left us inspired. We hope you feel the same after reading their profiles (“Building Empires,” p.70), written by contributing writer/food lover Amy De La Hunt and photographed by talented local lensman Jay Fram. Amy really had her hands full this month—she also found time to catch up with cover boy Danny Meyer, acclaimed NYC restaurant mogul who hails from St. Louis. The John Burroughs grad has stayed pretty busy himself, launching several new hotspots over the last two years. His newest venture, Maialino, opens next month in Gramercy Park Hotel. Though we’re sure it will get rave reviews (read more about his accolades in “A Moveable Feast,” p.68), we can’t wait to make it to New York to try it for ourselves. Another new spot we’re particularly excited about is Taste by Niche. Adjacent to Gerard Craft’s ever-popular dining destination in Benton Park that has received much national attention over the last several years, Taste promises to please as well with its rustic food, classic cocktails and intimate, urban vibe. Kickball for a Cause August 29> The Young Friends of St. Louis Children’s Hospital once again held its annual “Kickball for a Cause” event in Shaw Park on August 29. Over 400 people and 32 teams came together on a beautiful Saturday in St. Louis to raise over $30,000 for the SPOT (Supporting Positive Opportunities with Teens), a youth drop-in center funded through support from St. Louis Children’s Hospital. The handrolled dough is topped with homemade sauce and cheese (Provel or mozzarella, your call) and baked in pizza ovens next to the prepared foods counter. Calzones, by-the-slice and breakfast pizzas are also available. Kaldi’s coffee and Benito’s gelato bar Two family-owned businesses are featured here: Kaldi’s coffees and Benito’s gelato, from Cecily Hoffius and Judy Bellos of Ces and Judy’s Catering. And don’t overlook the smoothies, with a variety of flavors and made with soy protein powder. Grille Meatball sandwiches, steak sandwiches, pork tenderloin...The Grille can also cook burgers, steaks, brats, franks and quesadillas to order here—and they can be eaten on-site while they’re hot. Thanks to its restaurant license, Culinaria offers mezzanine seating for 54 and outdoor patio seating for 64.

supermarket at the corner of 9th and Olive Streets. Built by Schnucks, but unlike any Schnucks you’ve seen before, this upscale urban market showcases innovations like an ordering kiosk that replaces pull-tag deli waiting lines and a single-queue checkout system where the goal is to have customers ringing up within a minute. Ambitious? Yes. So far it’s working, according to store manager Tom Collora, a 40-year Schnucks veteran, who says, “Sales have been beyond our expectations.” The 21,000-square-foot store—only a third the size of a typical Schnucks—is reconfigured to hold about half the number of items, plus a full-service pharmacy, meat and seafood department, deli, sandwich counter, coffee bar, floral department, wine section and more. Collora spent months coordinating with Downtown residents to make sure Culinaria offered what they wanted. Many anticipated that having a full-scale grocery store was one of the final steps to the continued growth of Downtown St. Louis. Efficient Concepts Much of the store’s sales involve small orders and readyto-eat food, so there’s a higher number of associates than at other locations. Services include time-savers like call-ahead ordering (they’ll key your prepared food order into the kiosk to be picked up 10 minutes later) and a special cooler where lunch break shoppers can store their goods until after work, then have it delivered to their cars outside or in the 14-story parking garage. Some amenities—the Kaldi’s coffee bar and the Grille for sandwiches and burgers—are popping up in other new or renovated stores, but only this location has them all. In addition, the new Culinaria label on ultra-premium pasta, sauces and other items may be on shelves soon at a Schnucks near you. But in the meantime, city residents couldn’t be happier for this Downtown milestone.

Prepared foods Most of Culinaria’s prepared foods are made in the store every day, including both entrees and side dishes (which can be purchased as a ready-to-eat combo for $6.99, or by the pound to heat later). Portions are generous, and “the value of those lunchtime meals has been a great source of compliments,” says Lori Willis, public relations director for Schnucks. Bistro salads and fresh soups No little packets here—the salad dressings are all made in-house, as are the soups and salads. Even the croutons. And if you don’t see your favorite on the menu, the cooks will toss your combination right at the salad bar.

> Barely 18 months into operation, Pi, the prodigious pizza-maker, has two locations, a third on the way and an eye on possibilities outside St. Louis. It’s a whirlwind expansion for owners Chris Sommers and Frank Uible, whose fledging business boomed thanks in part to a high-profile customer: President Barack Obama. He noshed on Pi’s pizza during a St. Louis campaign stop last October and invited Pi staff to cook at the White House earlier this year. But before Obama gave Pi the thumbs up, the original location in The Loop was already thriving, and Sommers—a St. Louis native who fell under the spell of deep-dish pizza while living in San Francisco—had already envisioned a second location and decided to expand to Kirkwood, where Pi Squared will open this month.

ALIVE: How did you get into the pizza business? Chris Sommers: Probably adult ADD is what led me to it. I thought if I ever made money, I would invest in restaurants, not knowing that I would own one outright. I still have my day job, but I’ll be leaving at the end of October to focus on the restaurants. ALIVE: Tell us about the deep-dish, San Francisco-style pizza that Pi is known for—a cornmeal crust is somewhat new to St. Louis. CS: There are probably more places in San Francisco doing a real, true cornmeal crust, though deep-dish certainly has its origins in Chicago. I’d say that the quality—and certainly the consistency in the taste and texture of Chicago-style pizza— has gone downhill. What you find in San Francisco are people getting back to the roots of a deep-dish cornmeal crust [that was introduced by Ike Sewell in the 1940s]. Most people don’t know what it used to be like, they just know what they would get at Giordano’s [the famous Chicago chain] now, which is about twice the volume per slice as my pizza. A lot of people shy away from it, particularly in a thin-crust town like St. Louis. ALIVE: I loved how the deep-dish crust has a umami mouthfeel. What’s the secret behind that? CS: That’s the olive oil and butter that we use.

There’s butter in the deep-dish crust; the thin crust is vegan, but many of our pizzas are brushed with olive oil. That’s our number-one expense in the kitchen, our olive oil, followed by our cheese. ALIVE: Pi was one of the first sustainable eateries in St. Louis and has been committed to being eco-friendly since it opened. Was this a part of its concept from the beginning? CS: From the day I conceptualized the restaurant, it was a no-brainer for me that it had to be that way. It’s unfortunate that it took so long for other people to come on board with that, but you don’t hear of a restaurant opening these days without some type of sustainability mission. At least in the upper-end ones, everybody’s talking about local and talking about green. ALIVE: Your Kirkwood location will use solar power. Tell me about your the plan for the third location. CS: It’s on the northern end of the Central West End. The bar and restaurant will open around Thanksgiving. It will be an LEED-certified, nonsmoking venue with a killer cocktail list that’s being developed by one of the top mixologists in the country, H. Joseph Ehrmann [of Elixir in San Francisco]. Before too much of the day escapes, I carve out at least an hour to explore Kirkwood Farmers’ Market. Fresh produce, damp with morning dew, glisten from their stalls as the scent of delicious baked goods— pies, cakes, cookies and treats—waft through the air. My stomach growls. Lucky for me, the vendors offer samples of their goods, and I nibble on ripe melon slices and a handful of salty-sweet kettle corn as I browse. On this particular trip, I take home a pound of heirloom tomatoes and a couple of diminutive, but fiery-looking hot peppers to make homemade salsa.

Whenever I want to do a bit of boutique shopping—whether it’s for the latest looks from L.A. at Cortney Gene, a cute dress from Paperdolls or unique fashionista finds at Blush—Downtown Kirkwood never disappoints. Autism Speaks With the help of dedicated St. Louis volunteers, the local chapter of this national organization sets out to raise $1 million this year to support autism research. By Sheniqua Faulkner

> Although researchers, specialists and

doctors continue to learn more about autism with each passing year, the disorder, which affects the brain’s development of social and communication skills, largely remains a mystery. There is no known cause or cure for autism, and most of the general population knows little about it. Autism Speaks, the largest autism science and advocacy organization in the nation, strives to educate the public on the disorder as well as to help fund research, advocacy and services for families affected by autism. Chapters across the nation mobilize volunteer efforts, supporting the vision of the organization on a grassroots level.

The Cause: It is estimated that 1 in 150

Local Impact: After tallying the monies raised

through each chapter’s walk events and other fundraising efforts, Autism Speaks’ National Scientific Advisory Board chooses which institutions will receive grant monies. Over $1.6 million has been invested into autism research projects in Missouri at institutions including the University of Missouri-St. Louis, Washington University and Washington University-School of Medicine.

Get Involved: “We have a local staff of two, therefore we rely on the initiative and dedication of our local volunteer support,” says Fehlig. Help the St. Louis chapter meet its milliondollar goal by organizing your own corporate, school or family walk team during the Walk Now For Autism Speaks event in October. alternate treatments for autism Because little is known about the cause of autism, many families seek alternative treatments to help manage some of their child’s symptoms. Some parents are interested in nutritional interventions, particularly a gluten-free/casein-free (GFCF) diet. Nutritional Intervention Some believe that children with autism have an allergy or sensitivity to foods containing gluten, a protein in grains like wheat, rye and barley—and casein, the protein in cow’s milk, and that this sensitivity causes changes in behavior. The effectiveness of the diet has not been scientifically substantiated in randomized clinical trials, but some researchers have located abnormal peptide levels in bodily fluids of people who have autism, something that may be corrected or lessened with a GFCF diet. Some parents report that their autistic child’s GFCF diet helps regulate sleep activity, bowel habits, habitual behaviors and improve speech. Parents who are curious about the GFCFautism connection should consult their child’s pediatrician before starting any restrictive diet.

ElizabEth’s NEw Vision With the advent of technologies such as LASIK surgery, it is no surprise that people are saying goodbye to their prescription eyeglasses and contact lenses. Tired of the hassle and expense of contact lenses and the need to constantly remember her eyeglasses, ALIVE’s Elizabeth Tucker received her LASIK treatment from Crown Laser Center, one of the top 25 LASIK surgery practices in the USA and part of St. Louisbased Crown Vision Center. LASIK is a visioncorrection surgery that can reduce or eliminate common vision conditions. But, as with any surgery, Elizabeth had fears and concerns when deciding to go through with the decision that changed her life. Here, Elizabeth shares her personal LASIK journey to clear vision.

contacts since the fifth grade, so it was going to be a big change. The caring team at Crown Laser Center answered my remaining questions and helped me decide which procedure was right for my needs. Dr. Chris Ullrich, Crown’s chief LASIK surgeon, did a fantastic job on the day of my surgery, calming my fears and guiding me through the procedure.

THE DECISIon While making the decision whether to have LASIK, I had the same fears anyone would have before receiving eye surgery. I was worried about the possibility of my eyes getting worse and how long the recovery time would be. “Will it work?” I asked myself.

However, after speaking to the doctor, I felt very calm about the procedure. He was soothing while giving me the facts. He said the procedure would save me money in the long run and that there are just as many risks with contacts as with the eye surgery. He let me know that there was hardly any recovery time needed. Most people who get LASIK walk out of the doctor’s office with nearly perfect vision! That aspect alone was very appealing to me.

The team at Crown Laser Center addressed many of my concerns. While doing my research, I discovered that Crown Laser Center’s helpful website (CrownVisionCenter.com) had frequently asked questions, qualifications and testimonials that helped ease my mind. I had been wearing

THE ProCESS When I first went to Crown Laser, I didn’t think LASIK would be something for me. I thought I was too busy to have the procedure and that I didn’t have enough time for recovery. I was afraid of the risks and I thought it was too expensive.

30s S tart looking at your family history and talking to your doctor about your individual risks. High-risk women can begin screening as early as 30. C onsider breastfeeding. Women who breastfeed tend to delay the return of their periods, which decreases estrogen exposure and lowers risk.

Prevent Breast Cancer at Every Age

40s Get your first mammogram and continue with annual screenings. Mammograms for average-risk women before age 40 generally aren’t recommended because the breast tissue is denser when you’re younger, which makes it a less effective screening tool. M ake sure your knowledge progresses with your age. Studies have shown that hormone therapy for postmenopausal women can increase breast-cancer risk.

> Over 9,000 women in the U.S. under age 40 will be diagnosed with breast cancer this year. In time for Breast Cancer Awareness Month, we called on cancer prevention and control expert Dr. Kate Wolin with the Alvin J. Siteman Cancer Center’s Cancer Prevention and Control Program, who shares the no-nonsense facts to help you avoid being one of them.

There’s more to your breastcancer risk than genetics. Many women think that breast cancer is mostly genetic; in actuality, only about 5 to 10 percent of breast-cancer cases are just genetic. There are many other risk factors women should be aware of, like ethnicity—white women are slightly more likely to develop breast cancer, but black women are more likely to die from it. Women who have denser breast tissue have a higher risk. The number of menstrual cycles a woman has over her lifetime increases her risk, due to increased estrogen exposure. So the later you get your period, the more children you have (more pregnancies = fewer periods) and the earlier you go through menopause, the lower your risk. It’s important to talk with your doctor about the appropriate preventative measures that are best for you.

Small changes make a big difference. New studies show that even small changes in weight gain during adulthood can increase

your risk of developing breast cancer, making it crucial to maintain a healthy lifestyle with physical activity (as little as 2.5 walking hours per week is proven to reduce your risk), a reduction of alcohol intake (consuming less than one alcoholic beverage a day lowers your risk) and practicing healthy eating habits.

For every fact, there’s some fiction. The Internet is rife with myths about antiperspirants, bras, breast implants and abortion being related to higher breast cancer risk, but there’s no conclusive evidence to support these connections. Most recently, chemical compounds in certain plastics have come under fire for their potential risks, and while it’s certainly not a bad idea to limit your exposure, there is no human data (early testing has been conducted on animals) supporting these claims. The myths can get a lot of press while basic, but important, risklowering actions like regular screenings and healthy lifestyle choices are often ignored.

Weighing your individual risk is a must. It’s important to consider all the stats and studies in the context of your own life choices and medical history. For instance, some data suggests that women have a slightly increased chance of developing breast cancer while taking birth-control pills, but it can also lower the risk of ovarian, uterine and colon cancers if taken for five years or more. Your doctor can help you determine what’s best for your

More screening options are available, especially if you’re at high risk. Improved screening tools for at-risk women are changing the meaning of early detection. For instance, the digital mammogram uses sophisticated software programs to help read images and improve accuracy, especially for women with dense breasts. The MRI is an early-detection screening option reserved for women with a family history of breast cancer and can detect problems earlier (the downside is a high false-positive rate), and allows doctors to do an MRI-guided biopsy on-the-spot in appropriately equipped facilities. Genetic testing (screening for genetic tumor markers BRCA1 and BRCA2) is another new development that should be done in discussion with your clinician based on your specific family history and circumstances. Dr. Kate Wolin, ScD, is a member of Siteman Cancer Center’s Cancer Prevention and Control Program and is a behavioral epidemiologist and Assistant Professor of Surgery at the Washington University School of Medicine. The goal of her research is to inform cancer risk reduction and survivorship through physical activity promotion and obesity control.

Add broth mixture to skillet; stir in herbes de Provence. Cook over medium-high heat 7 to 8 minutes or until sauce reduces and thickens, stirring frequently. Stir in parsley and salt and pepper to taste. Spoon mushroom sauce over steaks to serve.

How St. Louisan Danny Meyer came to own NYC’s dining scene.

R

“Restaurateurs’twomostcompellingissuesareserving quality food and welcoming people with hospitality,” says Danny Meyer, who left St. Louis to pursue internationalpoliticsandwoundupbecomingaleadingfigure in NewYork’s hospitality industry.“You can do that anywhere, from a bowling alley to a four-star restaurant.” Although he’s yet to open a 10-pin venue, the CEO of Union Square Hospitality Group definitely practices what he preaches. Granted, when I caught up with MeyerinAugust,hisrestaurant,ElevenMadisonAvenue, hadjustclaimedhisfirstfour-starreviewfromTheNew York Times. To New York diners and critics, this recent distinction comes as no surprise. His first concept, Union Square Café,whichheopenedin1985atage27,hasbecomean establishedfavoriteontheNewYorkdiningscene,and Meyers’otherfine-diningconcepts—GramercyTavern, Tabla and The Modern (inside MOMA, which immediately earned a Michelin star and won Meyer the James Beard award for best new restaurant in the country)— are splurge-worthy destinations for New Yorkers as well as foodie tourists from around the world.

Despitehisboomingbusinesses,heremainsacustomerdrivenoperator.Forthis,hecreditshisparents’Clayton restaurants and travel companies, through which he honedhisknowledgeofEuropeancuisinesand,while workingasa20-year-oldtourguide,learnedfirst-hand theimportanceofpleasinghisguests.Insteadofadapting to New York as a fledgling restaurateur, he says, “acting like a St. Louisan in a big city that was otherwise nothospitablewasanenormousadvantageformeand for Union Square Café.” Buzz is building about his newest concept, an Italian trattoria called Maialino, opening next month in the Gramercy Park Hotel. Here’s hoping he brings his next hot concept to his hometown.

ALIVE: Growing up in St. Louis, your parents owned a travel company, group tour business and the Seven Gables Inn. Did you always think you would enter the hospitality industry? Danny Meyer: No, I don’t think anyone my age really did, because it was not really considered a validated career choice if your path had been going to a nice high school and an East Coast liberal arts college. I really thought I might end up being a lawyer because I had been a political science major, and what you do with that is become an attorney if you really want to go into politics­—you don’t think about going into the restaurant business. It was really on the eve of taking the LSAT that I hit a wall and said to myself, “You actually don’t want to be an attorney. Why don’t you do what you love?” It was hard to tell my parents that I wanted to get into the restaurant business. “Is that why we sent you to John Burroughs?” I reminded them that when I was at John Burroughs I had taken home economics with all the girls!

ALIVE: When did you decide to make the move to New York? DM: I had gone to Trinity College in Hartford, Connecticut, and there’s

not a lot going on in Hartford, so many, many weekends, I would make a road trip down to New York. I just fell in love with the city. I caught the bug. I wanted to live here for a year starting in 1980, and that turned into a lifetime.

ALIVE: How did your first restaurant come to be? DM: I opened my first restaurant, Union Square Café, in 1985 when I

was 27, with no expectation that I would like it, no expectation that it would work, no expectation that I would stay in the business, and certainly no expectation that I would ever do anything beyond Union Square Café.

ALIVE: You’ve added so many restaurants since then—Gramercy Tav-

ern in 1994, Eleven Madison Park and Tabla in 1998, The Modern at the Museum of Modern Art in 2004—but they’re different from Blue Smoke, your barbeque restaurant, which opened in 2002. DM: [Blue Smoke] was really my first restaurant that paid homage to my love for St. Louis. We had a wonderful housekeeper in St. Louis named Mary Smith, who was originally from Mississippi. I would go down to her house on Lee Avenue many, many Saturdays and just watch her making fried chicken, macaroni and cheese, collard greens, sweet potato pie, coconut cake. She was one of my best friends in life, so I really wanted to do a restaurant that paid homage to her.

ALIVE: Since opening Blue Smoke, you’ve started doing more casual

dining experiences and concessions—for example, in Central Park, at the Museum of Modern Art and at Citi Field. Why that type of expansion? DM: It was because in 1998 we had opened Eleven Madison Avenue and Tabla within four weeks of each other. It was such a traumatic experience opening two fine-dining restaurants at the exact same time while trying to sustain two other restaurants and I said, “I’m never opening another fine-dining restaurant as long as I live—and if I open a restaurant at all, it’s just going to be a joint.” We had a lot of fun being in a much more casual environment, and that led to Shake Shack, which is

an incredibly popular kiosk right smack dab in the middle of Madison Square Park.

ALIVE: You also have a concession at the Mets’ ballpark. Are you a big fan?

DM: I root for the Mets every game unless they’re playing the Cardinals.

And the Wilpons, who own the Mets, know that—I fully disclosed that before they gave us the opportunity to serve food at the field.

ALIVE: Tell us about your newest venture, opening next month. DM: We’re opening a new restaurant in the Gramercy Park Hotel. It will

be our first Italian restaurant, and it’s going to be called Maialino.

ALIVE: What’s behind the name? DM: It gets back to my dad and his business, because when my brother

and sister and I each turned 20, my dad invited each one of us to pick a country in which he did tour business, and we got to work for him as a tour guide. I picked Italy. I was working for a guy named Giorgio and immediately became known as “Meyerlino,” which means “little Meyer.” I had fallen in love with this classic Roman dish, roast suckling pig, which is called “maialino,” and because my ear was not very accustomed to Giorgio’s dialect, I didn’t notice for at least two weeks that

he’d started calling me maialino instead of Meyerlino—he had been calling me “little pig,” and every time he called me that people would laugh. It took me a couple weeks to figure out why.

ALIVE: So it’s going to be more “fine-dining” than “joint”? DM: Yeah, fine dining, but when I say “fine dining,” what I mean is that

it will have waiter/waitress service, but it’s not going to be fancy— it will be more of a trattoria, a place that I hope people will want to frequent several times a month.

ALIVE: In addition to writing a book about customer service (Setting the

Table: The Transforming Power of Hospitality in Business) and being known for promoting from within at your company and focusing on empowerment, you also support a lot of philanthropic organizations in your businesses. Why is a focus on community and people so important to you? DM: A restaurant is a public place. It’s not your work. It’s not your home. On one hand it’s an enclosed public place where people come to be in public with other people. But I think it’s equally important to imagine your restaurant as if its walls were transparent and realize that it has to be in harmony with its community—and do it with a twinkle in your eye and a sense of humor so you don’t take yourself too seriously! 69 ALIVE STL October 2009

Six years later, he’s having one of his best years ever despite the tough times. Perhaps that has something to do with his ability to stay ahead of the curve; his new vodka bar/tapas restaurant Ice Kitchen in Westport Plaza is already being featured on best-tapas lists. “I thoroughly believe in competitive advantage and seeking that out in this volatile [business] world we’re in,” says So, who also owns a real estate company and XES nightclub in addition to the three Drunken Fish locations. “You have to be up on your game—that’s the fun part!” He’s living out that philosophy right now in Kansas City, where So’s new Drunken Fish will open soon in the Power and Light District, taking advantage of an up-and-coming neighborhood with foot traffic and out-of-town visitors—his formula for success in Westport, the CWE and Laclede’s Landing. Joe Edwards opened the one-of-a-kind luxury boutique Moonrise Hotel in The Loop earlier this year, fully confident that its uniqueness—the outer-space themed décor including four display cases of moon memorabilia—would carry it through the recession. In its restaurant, Eclipse, and a rooftop bar, Edwards bucked a nationwide trend towards casual dining by going slightly more upscale than his previous venues—Blueberry Hill, Pin-Up Bowl, The Pageant, The Tivoli and Flamingo Bowl. Edwards is indefatigable in improving his neighborhood and is currently advocating a trolley line linking The Loop to Forest Park. “I’m a strong believer that, if you pay attention to every detail and spend the money to do it right,” he says, “it will pay off in the long run.” With $24.5 million invested in the Moonrise Hotel and new Eclipse Restaurant, he’s looking at a big payoff.

After working in his parents’ guesthouse in Germany and attending culinary school, Frank Schmitz migrated to the front of the house, winding up in Bermuda. His brother, Claus, traveled to Australia but remained in the kitchen. Cupid’s arrow brought Frank to St. Louis, where he opened BARcelona in 2002. While helping him, Claus saw the opportunity for Mosaic. But when it comes to expansion, their goals diverge. BARcelona already has a satellite in Indianapolis, and another is coming to Nashville. Claus relocated Mosaic Downtown last year and added an adjacent lounge over the summer. In addition, in the next year he’s planning a bistro market version of Mosaic in Clayton, as well as another Mosaic tapas restaurant in Kirkwood. But first, he’ll be making good on a contract he signed a couple of years ago to bring Mosaic’s cuisine to hungry travelers at Lambert International Airport. Back in 2001, graphic designer Jeff Orbin offered to help an old friend, up-and-coming chef Aaron Teitelbaum, create the identity and design should he ever decide to open his own restaurant. Teitelbaum decided just that, and the pair entered the new venture together. Before Orbin knew it, the lofty goals of the Monarch concept—a fusion of food, wine and art—had ensnared him. “We really poured our hearts and souls into Monarch,” Orbin says. Six years wiser, the two were considering options for a new venue when the opportunity came up for them to buy one of their favorite restaurants, Balaban’s. They jumped at the chance. They see their tribute to the iconic restaurant, which they renamed Herbie’s Vintage 72, as an approachable neighborhood counterpart to their foodie destination, Monarch. When asked about the economy, Orbin replies, “We opened Monarch at a horrible time. When times are tough, people are still looking to entertain themselves.” In anticipation of a recovery, the partners have a more casual concept than Herbie’s in the works, and they’re planning “some exciting new changes” at Monarch. Pat Shannon entered the restaurant world 11 years ago at her father’s restaurant and hasn’t looked back. She’s co-owner of the private event space, Lumen, and the new Mexican eatery, El Borracho. She also consulted on Skybox on Laclede’s Landing. And she’s working on yet another Downtown project. “I love downtown St. Louis,” she explains. “I live here, I work here, I play here.” But her most rewarding role is mentoring her son, Gary VanMatre Jr., Mike Shannon’s General Manager. “It’s exciting for me to do that with him the way I was able to do that with my father.” In fact, she says, it was VanMatre who wanted to do a Mexican cantina, to “have some good, authentic Mexican food Downtown in a fun atmosphere.” The location they and their business partners chose is on the very edge of Downtown, in the Locust Business District, which Shannon predicts is a burgeoning dining destination. Given her stats, it would be hard to bet against her.

Jesse Jones’ passion for beer is evident as he talks about brewers being romantics who love the product they make. “Half of me is that guy,” he says, “but the other half of me is trying to pay the bills.” He fuses the two parts of himself at The Stable, his second venture with business partner Paul Pointer. The Stable, which is a few months past its one-year mark, successfully blends a casual pizzeria atmosphere, along with creative American dishes and a neighborhood pub vibe. Production capacity limits the South City artisanal brewery, but, Jones says, “On the distillery side, we’re moving full force ahead.” A dark rum, 85 Lashes, is available now; an original whiskey using peaches and corn from Calhoun County, IL., will be out in mid-October. As for producing hard cider at The Rotten Apple in Grafton, the duo’s original venture, Jones says having a couple of tanks remains a dream. In the meantime, they bought Jake’s Steaks on Laclede’s Landing “because we felt that it was an opportunity,” Jones says. “You can’t be afraid of drama. In this economy, I don’t think entrenching or saving your money is the answer.” alivemag.com

Even at 8am, Ami Grimes and Gurpreet Padda radiate energy. “Our creative juices get flowing whenever we’re right on that edge of chaos,” Grimes says. With their new Italian restaurant, DiSilvios, opening soon next door to year-old Café Ventana in Midtown, plus a coffee roaster and chocolate producer coming online in Collinsville next spring, chaos may be an understatement. Oh, and did we mention they are responsible for the resurrected Chuy Arzola’s, which opened in early summer on Lindell? The pair’s flair for edutainment has attracted top local names like chef Chris Lee to help realize their culinary vision. Busy as they are, the business partners love sitting down to eat with family and friends, and they extend that hospitality to their customers. “People sharing food is one of the easiest ways to create community,” Padda says. Their approach to hospitality is one of the secrets to Café Ventana’s success—and the duo hopes it will work its magic again in the new Collinsville venture, which Grimes describes as a replica of the café, only five times larger, with a more in-depth focus on chocolate and coffee. Mexico Once Upon a Time in

Two St. Louis couples make Mexico the destination of their dream weddings. By Kristin Stefek Brashares

Before he even met her, Damon Johnson had been intrigued by Adhar Usher, as he’d heard of her beauty and free spirit from a mutual friend. Turns out, the two instantly clicked on their first encounter. Not long after, Adhar invited Damon to her hometown of San Miguel de Allende, Mexico, and the two grew closer on the trip. Although they worked in different cities for a while after college—Damon took a job in Park City, Utah, and Adhar started her career in St. Louis—the distance didn’t hinder their love for each other. In March 2008, Damon proposed at his parents’ vacation home in Seaside, Florida. In April, the couple, along with 90 friends and family members, returned to the same hotel in Mexico that they’d traveled to early on in their relationship—this time to become husband and wife. SENTIMENTAL CEREMONY Adhar’s childhood dream of tying the knot in her hometown, San Miguel de Allende, Mexico, came true with a four-day bridal bash in the Sierra Madre Mountain valley colonial town. A welcome party kicked off the celebration with a guitar player, apps and margaritas, and a rehearsal dinner at an old hacienda followed the next night. An organically opulent garden and ornamental stone wall served as a breathtaking backdrop for the April 25 nuptials at the 17th-century Antigua Villa Santa Monica Hotel. FLOWER POWER A local street vendor worked wonders with native blooms. Orange and pink rose balls draped from white ceremony chairs brought out the colors of the day. Multi-hued rose, hydrangea and orchid clusters popped off the centers of the chic lace dinnertable linens, and a simple, single flower graced the top of every napkin. A gorgeous greenery-filled floral grouping exploded from atop a stone fountain in the center of the dining area. Fresh flowers even filled each layer of the three-tiered butter-cream cake from Casita Feliz bakery. UNFORGETTABLE FIESTA A traditional Mexican wedding celebration followed the nuptials, as guests carried custom porcelain shot glasses and made their way to the reception alongside a flower-decorated donkey toting tequila. A 10-piece mariachi band escorted the couple to a poolside cocktail hour, and an eight-piece Mexican rock band later jammed a mix of American oldies and Mexican tunes on the dance floor. A poolside taco stand and faux press-on mustaches upped the fun. Sparkling golden streaks streamed across a pitch-black sky in a surprise beachside fireworks display that ended the day as beautifully as it began. WALKING THE AISLE IN STYLE Adahar's fit-to-flare Pronovias gown from Amore Today’s Bridal (636.536.0007) featured an elegant elongated bodice and a bottom bell-out skirt that added a touch of poof. Damon looked dapper in a gray custom Mark

Shale suit by Coppley, and his groomsmen sported similar-color suits with matching Valentino ties and Brooks Brothers (314.726.6600) pocket squares. Flowing, deep-coral bridesmaids dresses carried out the wedding colors and the free-spirited nature of the day. A LOCAL-FLAVOR FEAST Guests got a true taste of the local drinks and cuisine—starting with a pre-ceremony sampling of agua de Jamaica, a purple-hued juice made with dried hibiscus flowers, and Horchata, a homemade rice milk. Authentic apps of sliced cucumbers and fried churros, or Mexican-style chips, bundled in a basket and served with salsa tided everyone over until dinner. Cream of poblano pepper soup and a mixed green salad with citrus avocado vinaigrette kicked off the meal, with Chiles en Nogada—a spice-and-driedfruit-stuffed poblano pepper topped with a walnut cream sauce—as the featured dish. ATTENTION TO DETAIL During the reception, votive candles encircled the dinner-area fountain and emitted a romantic evening glow. Table cards numbered in Spanish and tied to tin stars guided guests to their tables, and friend and graphic artist Kyla Strawhacker infused coral-hued floral filigree into steel-framed table setting placards.

Smitten from the start, Cabanne Schlafly and Jim Howard have a chance encounter to thank for bringing them together. After spotting Cabanne at the Contemporary Art Museum’s Dada Ball several years ago, Jim introduced himself to her at a mutual friend’s after-party. She gave him her number, but somehow, Jim came up a digit short. They figured out the mistake when they bumped into each other at a Cardinals’ game a month later and got to talking. They parted ways relieved—Jim that she hadn’t blown him off and Cabanne that he was into her. “We were just so happy that it wasn’t what either of us had thought,” she says. A first-date candlelit swordfish dinner Jim cooked at his place ignited their romance, and the more time they spent together, the more they realized they were a perfect fit. During a summer getaway in Vail, Colorado, Jim surprised Cabanne when he pulled out an engagement ring over an intimate dinner at contemporary French restaurant La Tour. A bamboo aisle runner led to a bamboo altar beautifully decorated with oranges and dendrobium orchids. Guests honored the couple’s request to wear melon-hued attire—creating a tropical sea of color among friends and family members. Sharing a just-betweenthe-two-of-them moment, the couple whispered vows in each other’s ears. The officiant performed a traditional Mayan lazo ritual. 80 ALIVE STL October 2009

ONE-OF-A-KIND CREATION Cabanne enlisted Connie Simpson of R&M Designs (314.821.2932) to custom create her dream dress from certain elements of others that she liked while shopping around. Her all-lace, fitted gown featured an elegant sweetheart neckline and a big-drama open back. The ultimate finishing touch—satin Manolo Blahniks. A RING TO REMEMBER Impressed with the jeweler’s expertise and personable service, Jim turned to Igal Alon of Mavrik Fine Jewelry (314.909.6818) to custom design the wedding rings. Cabanne’s engagement ring features a round diamond in a platinum, antique-European-style setting, as well as an etched leaf pattern that also appears on Jim’s wedding band. Alon created a pavé diamond eternity wedding band for Cabanne’s right hand because she wanted the engagement ring to stand on its own. DIVINE DISHES Hot pink sheers draped from a palapa on the sand and brightly colored custom-made cushions on stark-white lounges added decorative drama to the dining area. A salad with watermelon and goat cheese served as the first course and tlalpeno soup prepared with veggies, shredded chicken, cheese and a touch of chipotle followed. A grilled salmon filet bathed in sweet white

wine sauce, topped with sweet orange, lime, grapefruit and epazote and served with rice pilaf and grilled veggies made for a mouthwatering main course. SWEET TREATS Bamboo encircled the edges of the three-tiered, vanilla with raspberry coulis wedding cake, and dendrobium orchids decorated the top. Gateau au chocolat and ice cream served as another delectable post-dinner dessert. PRETTY ON PAPER Nationally known stationery designer Cheree Berry (917.532.0490) designed all the wedding-day stationery in the hot pink and bright orange color scheme. Save The Date cards with butterflies featured the clever RSVPs “Have wings, will fly” and “Cocooned. Can’t make it,” and the words “Eat. Pray. Love” graced the bottom of the fuchsia dinner menus. SIPPING SENSATIONS Refreshing, fuchsia-colored dragon fruit and Vodka cocktails served as the couple’s signature drink during a post-ceremony cocktail hour, and four servers enacted a Mayan celebration by heating coffee at a station with four different liquors after dinner.

S

cape’s Chef Eric Kelly dazzled diners once again during the exclusive Power Players Dinner on May 26. St. Louis’ top movers and shakers returned to the American bistro-style restaurant in the Central West End a year after Kelly, the then newly appointed chef, helped to kick off the first-ever affair. After a couple of months of serving record numbers of diners, this seasoned culinarian’s hot streak carried through in every aspect of the seven-course meal. “Last year’s event at Scape seemed impossible to beat, but Chef Eric pulled out all of his tricks to make this dinner better than last year,” says host Steve Buesching, commercial banker and assistant vice president of Peoples National Bank. Whereas Kelly kept things simple (and unbelievably scrumptious) the first go-around, he let loose a little more on the second, playing off the diverse group of guests. “We had an eclectic and hip crowd,” he says. “I wanted to make a bigger splash and be less conservative.” A pre-dinner cocktail hour featured butlered hors d’oeuvres, with one tray capturing the inventive spirit of the evening with elongated forks skewered with sweet Santa Barbara shrimp and a dollop of avocado salsa.

Guests sampled the bite-sized fancy fare as they chatted about their personal interests and professions—including the restaurant, real estate, beauty, fine art, fitness and professional sports industries—and admired a shiny new Mercedes-Benz from Power Players Dinner sponsor MercedesBenz of Progress Point parked out front. After taking their seats at whitelinen-topped tables, Kelly and his crew presented the first course—a tuft of blue cotton candy whipped in a machine visible from the dining room, sprinkled with coconut powder, topped with spicy peanuts and an Asian sprout salad and served on a rectangular gray slate. The dish set the tone for Kelly’s theme of the dinner—an innovative celebration of summer. The artful presentations continued into the second course—a tempura scallop resting on a bed of Kelly’s secret wasabi pepper sauce and a perfectly shaped shell atop pinkish baked sea salt. An heirloom tomato salad with burrata cheese and Osetra caviar followed, along with a fish course of panroasted Alaskan halibut with purgatory beans and rapini. The main course was Côte du Boeuf with a crème fraîche potato puree. A cheese course featuring another custom creation—a candied sesame kumquat with a specially blended, juicy inside that replaced the seeds—and a five-layer lemon meringue crepe with Meyer lemon sorbetto capped off the evening.

A Winning New Restaurant The Over/Under Bar & Grill scores with its unexpected and innovative menu and stellar sports-watching scene. By Cristy Miller | Photos by Liz Reiff Sloan

> The Over/Under Bar & Grill bills itself as a sports bar; it certainly appears to be at first glance, with 37 high-def flat screen TVs splattered throughout the space and smaller screens in the dining room booths. But the menu tells a different story; white bean hummus and exotic mushroom risotto aren’t exactly the markings of a sports grill, and you don’t expect ingredients like truffle butter, baby spinach and chorizo to make appearances. When it comes down to it, it doesn’t make a difference how you label it—whether you go to watch a game or enjoy a refreshingly delicious dinner, you’ll want to bet money on The Over/Under. Upscale Sports Bar The Over/Under opened somewhat quietly during All-Star Week, a well thought-out plan considering its location is just shy of two blocks from America’s Center where MLB Fan Fest was held. And its patio, hidden from Wash Ave by tall bushes, features a 150-inch projection screen and also attracted a nice crowd during a prime sports-watching week. Post All-Star activity Downtown, The Over/Under remains a spot to watch a Cards (or Rams) game— I’ve meandered over from my loft a dozen times this summer to perch on the patio and enjoy a plate of gorgonzola fries. A Winning Menu The menu is a mix of appetizers, “hand helds” 106 ALIVE STL October 2009

(sandwiches and burgers) and large plates—items are recognizable bar fare, but include unexpected twists or are an upscale version of the classic. Take the chicken BLT served with choice of homemade waffle fries, salad or fruit like strawberries and cantaloupe—the peppered bacon is served with a delicious avocado ranch sauce on ciabatta. Or the American Kobe sliders, elevated beyond an average pub dish with a side of truffle-scented fingerling potatoes. The mac n’ cheese, well-crafted with Tillamook cheddar and parmesan, is available with bacon or crab. Prince Edward Island mussels are delicately prepared and served with housemade chorizo, steamed with garlic and Guiness. The stuffed nacho small plate is just that—a flour tortilla stuffed with beef, chorizo and red beans and fried, then covered with cheese sauce. What it lacked in color, it made up for in taste—slight peppery and tasty with either the avocado crema or salsa sides. Big plate options include a nice grilled Atlantic salmon and St. Louis-style ribs, but the Cajun pasta is a standout—that is, if you can stand the heat. The combination of chorizo, jumbo shrimp and fettucine is mixed with a tomato sauce that is unexpectedly spicy. And if there’s one dessert I’d bet on, it’s the ice cream trio—perfect to share, it includes three upside-down waffle cones, served over three scoops of varying flavors of ice cream.

A Recipe for Success

> If ever a bar looked like a science lab, this is it: an anatomical diagram on the chalkboard, mysterious implements on the counter and austere gray lab stools against a white tile wall. It’s all playfully done—the diagram shows the cuts of meat on a pig—yet the connotation is of an institution of higher learning. And to go away without having learned something from Taste by Niche, the new cocktail lounge at Niche, is nearly impossible. There’s the ice, for example. Some of the cocktails, like the Keep Your Cool, use hearty square cubes that melt slowly; others, like the popular Benton Park Swizzle, use ice chips that the bartenders make behind the bar by solidly thwacking cubes wrapped in a dishtowel. Then there are the ingredients. Both the Keep Your Cool and the Swizzle use bitters, spirits distilled from or infused with herbs and aromatics, but the former calls for amaro, the latter for slightly less bitter Fernet. It’s a subtle difference, and at home we’d probably swap in whichever we happened to have. Not at Taste under professor Ted Kilgore, one of the best-known mixologists in town, whose name first started popping up in national cocktail articles while he tended bar at Monarch. Cocktail Class Tuition is very reasonable. At $9 or so, the cocktails aren’t particularly expensive, and the small plates menu sticks closely to the original Spanish tradition of offering a few bites at nominal prices. The cheese plate is a particularly good deal: Choose three from the chalkboard (first ask the host for a helpful tutorial about the artisanal and imported selections) and enjoy them with house-made crackers for $8. Niche, as students of the local food scene will know, is the four-year-old restaurant of award-wining Executive Chef Gerard Craft. He owns Taste as well and pops into it too, as if to remind customers to order some food to go with their rum punch. In fact, some of Craft’s kitchen staffers work behind the bar at Taste by Niche. It’s a bit like the old days, when Niche Executive Pastry Chef Mathew Rice performed his magic on desserts in the same space—and those who loved his bakeshop, Veruca, can still get a sugar fix at Taste, because dessert specials are listed on the chalkboard too. If you’ve heard that Taste’s enrollment is full, don’t despair. Get your name put on the board inside the door, then head next door to Niche to wait. That’s right—who’d have guessed such a popular restaurant would have competition from a cocktail lounge? Ah, the things you’ll learn at Taste. The compressed watermelon with local tomatoes and watercress dish with the Benton Park Swizzle cocktail.

Your basic Old-Fashioned is a simple cocktail of bourbon, bitters and sugar. It’s as old as the hills—almost as old as the word “cocktail” itself—and sounds about as exciting as your typical hotel bar. But what if you traded the bourbon for Jack Daniels and infused the Jack with bacon? And instead of the sugar, you used maple syrup? That’s what Edan Ballantine, director of food and beverage, has done at Red Kitchen and Bar in the Hyatt Regency St. Louis Riverfront. Ballantine merges creative mixology, small-plate dining and music in a setting featuring stylish tables and light fixtures you’d expect in a funky boutique hotel more than in a 910-room Midwestern high-rise. His influences range from a sake martini he sampled in Las Vegas a few years ago to the tapas bars he hung out in last summer in Barcelona to the artisanal pizzerias he frequented while he worked at the Hyatt Regency Phoenix before taking the St. Louis job. If those are your kinds of places, this is your kind of bar.

The bar design, part of the overall $63 million Hyatt Regency Hotel renovation, extended into the kitchen, so the culinary team has toys like an in-house smoker and a pizza oven where it turns out thin-crust pizzas from a unique dough perfected during what Ballatine calls “a lengthy trial-and-error period.”

Ballantine treasures new ideas. “I have been keeping a binder for the last four or five years of cocktail recipes that I’ve come across, or mixology philosophies that I’ve read about, so I utilized these resources in creating our menu,” he said. “The most popular right now is the Satori (which means “enlightenment” in Japanese), a blend of sake, vodka, fresh lime, mint, cucumber and sugar.” He prefers to use fresh fruits, vegetables, herbs and infusions in his cocktails, evident in his experiments like muddling watermelon in a drink with pineapple juice and fresh jalapeño (called the Voodoo Chile).

However long it took, they’ve nailed it now. The rehabbed sound system has been getting a workout since the September 4 grand opening, the first of many special events featuring live music and guest DJs. Even when nothing’s scheduled, the spot draws a crowd that’s pretty hip, the sort of people who’d be curious to find out whether bacon works in a new Old-Fashioned (315 Chestnut St., Downtown, 314.259.3244).

VIP guests, including Tony Gaddis, Debra Bass, Alderman Shane Cohn and Jassen Johnson, took in performances from Circus Flora, historical reenactments performed by the Missouri History Museum, a stage setting from The Repertory Theatre, interactive art stations sponsored by the Saint Louis Art Museum, backstage videos from the Opera Theatre of St. Louis and stunning pieces from the Missouri Botanical Garden. THE PARTY: After receiving an exclusive sneak peek at writer/ director/actor Matthew Scott Krentz’ film Streetballers at Ronnies 20 Cine, hundreds of St. Louisans hit The Pepper Lounge for the official after party. There, producers Craig Thomas, Patrick Rooney and Vernon Whitlock III celebrated with the allSt. Louis cast, including Adrieanne Perez, Justin Tatum, Ryan Johnson, Slim, Norman McKowan and John Bratkowski. Shot entirely in St. Louis, the story chronicles the struggles two athletes endure on and off the court, and touches on themes of drugs, racism, alcoholism and spirituality. The film—starring Krentz and Jimmy McKinney— hit select theaters in late August and has racked up an impressive list of accolades from numerous international film festivals, including the Audience Choice award at the Saint Louis International Film Festival and the Jury Award from the Hollywood Black Film Festival.
