SHAVED DUCK By: Amy De La Hunt Photog raphy: Car men Troesser The culinary team at The Shaved Duck is up and at ‘em before dawn, firing up the smoker (nicknamed Ole Hickory Pits) and crafting everything in-house, f r o m f r i e s t o b a c o n . T h e r e s t a u r a n t ’s c l a i m - t o - f a m e dish is their Burnt Ends, which are slow-smoked chunks of brisket that nearly always sell out. Classic barbecue staples like pulled pork, chicken and brisket are on the menu, but it also veers into non-traditional territory with items like smoked mozzarella, peppers, salmon-potato cakes and, of course, duck. From there, the combinations get even more exotic—like the root beer glaze on the smoked meatloaf or the chili with smoked brisket, corn and Bhut jolokia (a.k.a. ghost peppers). At night, the attention turns to the bartenders a n d t h e i r c r a f t b e e r o f f e r i n g s . T h e S h a v e d D u c k ’s four taps are often an eclectic collection, thanks to the heavy rotation of craft beers swapped out on a weekly basis. In bottles, the ales and ciders predominate, with a smattering of lagers and stouts. This is where you’ll find a solid selection of local craft brewers. When this tavern reopened after 20 years of gathering dust, its new owners rehabbed it without polishing away a n y o f i t s S o u t h C i t y c h a r a c t e r. I t m a y h e l p t h a t managing partner Thomas Crone is a writer with an e y e f o r p h o t o g r a p h y, f o o d , m u s i c a n d , o f c o u r s e , b e e r. C o - o w n e r s F r e d H e s s e l a n d S t e v e n S m i t h are old hands in the local bar scene themselves. Cans and bottles lean local too, but they’re interspersed with interesting guest brews f ro m o t h e r p a r t s o f t h e M i d w e s t a n d t h e We s t . Décor hedges on simplicity with a bit of kitsch, featuring some elements that feel straight out of the 1970s when the original bar opened for its 20-year r u n .
