BECKY'S SUMMER SIDE DISH
Spicy Pineapple and mango salad
1 or 2 red chili peppers, diced
2-3 limes, juiced
1 pineapple, cored and cut in 1/2"or 1" cubes
3 mangos, cut into 1/2" or 1" cubes
1/2 cup cilantro, chopped
1/2 cup fresh mint, chopped
Combine the red chili pepper and lime juice, stir. Add the pineapple and mangoes,stir. Let sit for about 1/2 hour. Add cilantro and mint and stir. Serve.
