Want to keep cool on a hot day? Why not try your hand at making these low-fat desserts packed with the goodness of fresh fruits? End your meal with a light and refreshing water chestnut and sugarcane slushie, snack on tantalising lemongrass and plum jello, or indulge in a creamy passionfruit icecream. Using Allswell Healthier Choice beverages, whipping up these sweet and tasty treats at home will be a breeze, and please all members of the family.

LEMONGRASS AND PLUM JELLO (SERVES 4) INGREDIENTS

Allswell Healthier Choice Plum drink Lemongrass, bruised Gelatine powder Plums, skinned and cut into quarters

METHOD

1 In a pot, combine Allswell Healthier Choice Plum drink and lemongrass. Bring to a boil and simmer for 20 minutes. 2 Next, whisk in the gelatine powder continuously for five minutes. Leave the mixture to cool. 3 For each serving, arrange three cut pieces of fresh plum in a bowl and pour in ½ cup of the mixture. Repeat this step until all the mixture is used up. You should get four servings. 4 Place in the fridge to set overnight. 5 Serve with a refreshing fruit sorbet.


WATER CHESTNUT AND SUGARCANE SLUSHIE (SERVES 2) INGREDIENTS

2 Tbsp 2 Tbsp 4 1 ½ cup 360ml 12 4 Tbsp

Sugar Water Fresh water chestnuts, chopped Ice Allswell Healthier Choice Water Chestnut and Sugarcane drink Fresh longans Diced aloe vera

METHOD

1 In a heated pan add in the sugar, water and chestnuts, fry until the chestnuts are caramelised and browned. Set aside. 2 Next, place the ice and Allswell Healthier Choice Water Chestnut and Sugarcane drink into a blender and blend until smooth. 3 Layer 3 longans and 2 Tbsp of aloe vera into a tall drinking glass and pour in the blended mixture. 4 Top with the caramelised chestnuts and serve immediately.

PLUM AND PASSIONFRUIT ICE CREAM (SERVES 4–6) INGREDIENTS

Passionfruits Allswell Healthier Choice Plum and Passionfruit drink Castor sugar Milk Thickened cream Egg yolks

METHOD

1 Slice the fresh passionfruits into half and remove the seeds. Reserve the seeds. 2 Into a pot, add Allswell Healthier Choice Plum and Passionfruit drink and castor sugar and bring to a boil until the liquid thickens and the volume reduces down to a quarter of the original amount. Set aside. 3 Next, in a clean pot, bring the milk and thickened cream to a boil for five minutes and combine this with the Plum and Passionfruit drink mixture. Stir well. 4 Remove from the heat and stir in the egg yolks, one at a time. Give a good stir and transfer back to the stove on low heat. Stir continuously to prevent the eggs from curdling. Keep stirring for a further 10 minutes until a custard-like texture forms. 5 Strain the mixture into a bowl and add in the passionfruit seeds. Whisk the mixture for another 10 minutes. 6 Pour the mixture into an ice cream maker (if available) or a container and place it in the freezer for at least six hours to set before serving
