Want to keep cool on a hot day? Why not try your hand at making these low-fat desserts packed with the goodness of fresh fruits? End your meal with a light and refreshing water chestnut and sugarcane slushie, snack on tantalising lemongrass and plum jello, or indulge in a creamy passionfruit icecream. LEMONGRASS AND PLUM JELLO (SERVES 4) INGREDIENTS

Allswell Healthier Choice Plum drink Lemongrass, bruised Gelatine powder Plums, skinned and cut into quarters

METHOD
1 In a pot, combine Allswell Healthier Choice Plum drink and lemongrass. Bring to a boil and simmer for 20 minutes. 2 Next, whisk in the gelatine powder continuously for five minutes. Leave the mixture to cool. 3 For each serving, arrange three cut pieces of fresh plum in a bowl and pour in ½ cup of the mixture. Repeat this step until all the mixture is used up. You should get four servings. 4 Place in the fridge to set overnight. 5 Serve with a refreshing fruit sorbet.
