Chef Recommends: Toscana Ristorante Italiano By Chef Rodel Matuba and Kat Garcia, Marketing Communications Officer
Italian food is recognized all over the world for its distinct flavors despite using only the simplest ingredients. One of the most iconic regions in Italy, Tuscany is well-known for its stunning architecture and rolling hills as well as its cuisine, which captivates visitors with its simple, fresh, and flavorful approach.
RVO’S WINE SELECTION Felciaino Giovanni Chiappini, Bolgheri Rosso Tuscany, Italy, 2012 Tuscan White Bean Soup with Pancetta Begin your gastronomic journey with a hearty white bean soup simmered to perfection. This comforting soup has a robust flavor thanks to the addition of fresh kale and a hint of rosemary. Complement this dish with our focaccia bread drizzled with olive oil and grated Parmesan cheese for a perfect start to your meal.
Tiramisù Based on the Italian word which translates to “"pick me up"” or "“cheer me up",” Tiramisù is the perfect finale for a decadent Italian meal. Each bite of our famous mascarpone cheesecake exudes rich yet airy layers, a touch of liqueur, and soft, coffee-flavored ladyfingers with a hint of sweetness.
Branzino Pomodoro Basilico e Ragù d' Oliva Literally translating to “sea bass, tomato, basil, and olive sauce”, this savory dish contains a medley of signature Italian staples. This panroasted sea bass is a crowd-pleaser—crisp on the outside and tender inside, indeed a delightful texture in your mouth! The dish all comes together after being topped with tomatoes, basil, and drizzled with olive ragùù. It goes well with creamy mashed potatoes and tender mixed vegetables.
Spaghetti alle Vongole Veraci alla Roberto A mainstay in trattorias all over Italy and now in Toscana Ristorante Italiano, Spaghetti alle Vongole Veraci alla Roberto is our own take on the famed dish. Named after Alphaland’s Chairman, this pasta is prepared with essential Italian ingredients: extra-virgin olive oil, whole garlic, slivers of chili pepper, and white wine. As a final touch, baby clams are added, allowing the clams to release a flavorful liquid which infuses the al dente pasta.

The Crucial Element You Must Have in Your Vacation Home By Sienna Muncada, Alphaland Baguio Mountain Lodges Sales Coordinator Tired and stressed from the daily grind? I mean, who isn’’t, right? We all reach a point where we feel this weight pulling us down to the point where we feel like we can’’t breathe, we can’’t think clearly, and we just want a break from our demanding life. Persistent stress takes a toll on our physical, mental, and spiritual health, which usually in turn affects our finances, career, and relationships—our overall well-being!
You get to reconnect with nature, feel inner peace, and regain clarity. Indeed, your overall wellness improves.
Good thing we have negative ions to regain balance. Negative ions are invisible molecules that we inhale in abundance in nature, and are found in waterfalls, beaches, and mountains. According to award-winning health writer Denise Mann, “once they reach our bloodstream, negative ions are believed to produce biochemical reactions that increase levels of the mood chemical serotonin, helping to alleviate depression, relieve stress, and boost our daytime energy.” In short, they’’re good for your health. Here at Alphaland Baguio Mountain Lodges, each log home was carefully plotted and designed to be surrounded by nature, from our new two- and three-bedroom quadruplex lodges to the six-bedroom lodges——each lodge has a view of the breathtaking vistas from the decks and the tranquil Cordillera landscape from the windows. By just breathing in the fresh, pine-scented air and looking at the stunning scenery, watching the sunrise or sunset, you get this feeling of peace, a sense that everything will be all right.

Sound Advice From the Island By Ana Perez
Living in the city means that the soundtrack of my life consists of the dismaying din of traffic, the annoying alerts of technology and the mind-melting Muzak that passes for music these days. Day after day I am assaulted by the cacophony of noise pollution that for sheer self-preservation, perhaps, I have, as so many others like me, managed to ignore. But this all changed in one magical weekend. As soon as I arrived in Balesin and had been driven out of earshot from the roar of the plane’s engines, the first thing I heard was… nothing! And as I explored the island, it seemed like the wonderful, blessed sound of silence was unfurling before me like a soft, fluffy blanket that I couldn’’t wait to wrap myself in. And that I did happily. It wasn’’t long, though, before I began noticing other sounds which didn’’t break the silence but rather accompanied it. First was the cool island breezes that swept through the trees, creating this soothing, almost jazzy rustling sound. Like a soothing percussion instrument, the winds set the tempo. Then the hum of the crickets and cicadas in certain areas punctuated nature’’s symphony. Then came the gently lulling sound of the waves washing across the sand then languidly receding I walked by the beach, precise in timing and timbre. Every so often I was thrilled to hear the vocalists of the world’’s most organic orchestra, the songbirds. Whether it was a soloist doing an aria or a group serenading me in perfect harmony, I couldn’’t help but feel exhilarated yet calmed by the melodious “performance”. It was truly music to my ears. There is another joyous sound I cannot fail to mention, and that is the voices of world-class artists who perform in Balesin on special occasions. The way they sing timeless songs will have you swooning, swaying, and singing along almost as if mesmerized by their God-given vocal chords. They may not be part of nature but they’’re each undoubtedly true naturals! Catch them on holidays or long weekends, and all the other irresistible sounds of Balesin Island, every day of the week. If any of this sounds good to you, we can assure you it is. Hear! Hear!

HEALTH & WELLNESS SECTION
Solutions vs. Resolutions: Simplifying Health & Wellness By Dr. Benedict Christopher A. Austria, Medical Associate, Aegle Wellness Center As human beings, we all want healthy bodies. And as the year ends, we revisit the eternity of health-related resolutions that we all manage to kick off at the onset of every year. “"I want to lose weight"; “"Exercise more often"”;"Get radiant skin"; "Reduce stress".” These are just some of the typical items in the long list of our yearly resolutions. But in a world where busy is the norm, the burning question is, “"How do I keep my resolution?" To keep your focus on your health goals, it’’s important to know what makes the difference between success and failure: Solutions! Getting the right solutions requires knowledge and its application, so pay close attention to the following tips. It can be as easy as ABC.
ACQUIRE
KNOWLEDGE. Now, more than ever, information is readily available at our fingertips; this vast amount of data can be quite overwhelming. In fact, myth-busting is now an incorporated role of the modern physician. Relatives and friends usually come up to me and ask, "What do you think of ketogenic diet and intermittent fasting?"” Most of the time, I say that what works for others may not necessarily work for everyone. That said, it’’s now the best time to visit your doctors; nitpick with them any information regarding medicine, supplements, diet, or exercise regimen. Armed with the new medically sound information that you’’ve acquired, it’’s time to set your goals.
BASELINE. To set achievable goals, they must be measurable, so it really helps to know where to start. For example, weight loss used to be the standard measure for a health goal. But from the viewpoint of precision and functional medicine, a better measure would be bringing down the percentage of body fat and increasing muscle mass. Both these factors have been associated with decreased risk of mortality (i.e., diseases which can kill you— heart attack, cancer, etc.). Worry not as this measure can easily be done with a body composition analysis. This serves as the perfect guide for any exercise program and dietary modification. Through this, you’’ll be able to find out why it’’s so easy to put on weight with just a couple of glasses of wine or a small piece of that delicious dessert. If you wish to get into the nitty-gritty about yourself and how your own body functions and responds to these changes, get a blood examination done. Hormone assays and blood chemistry results can further help you and your doctor tackle your weight management more effectively. Unusual symptoms of frequent anxiety, sleep problems, asthenia (lack of energy), and difficulty concentrating can also be explained by alterations of your hormones and should not be ignored. If you choose to do a baseline body composition with blood tests, this will be a snapshot of your current health status——use it to promote your health and longevity.
11
COAX YOURSELF SLOWLY. Rome was not built in a day, so putting in more work during the start can cause a lot of undue stress and burn you out easily. A little bit of exercise is better than nothing at all; 30 minutes per day on most days of the week will suffice. If you plan on exercising more often or regularly, I advise that you see a sports physiologist or a certified trainer. They will guide you on your ideal exercise pace by evaluating your current strength and abilities. The ultimate goal is to increase your cardiorespiratory (aerobic) fitness and improve muscle mass, because both of these factors are significant to your overall health. Some of the clients I see are in great shape in March and April but by October, they will have gained back their weight. Yoyo-ing of weight is very common if the diet is not sustainable. For dramatic results, one should engage in an effort to correct one’’s eating and drinking habits. Calorie counting and portion control are musts if you want to follow a sustainable diet. A quick discussion with our nutritionists, Yna and Bea, surprises my clients when they are coached regarding portioning. Eating either to gain muscle and/ or lose body fat will be easier if you eat with a purpose. Getting the ideal amount of protein per day with correct macronutrient proportioning has been life-changing for most of my clients. Very low-carbohydrate diets or no-meat diets can put you at risk for certain micronutrient deficiencies. If you decide to follow these diets, consider supplementation of vitamins and minerals so that you will be in a balanced state. Remember, always ask your physicians and nutritionist first if you want to change your diet. BE CONSISTENT WITH YOUR ABCs. Consistency is essential to any endeavour, and that of course includes our precious health. When you have your goals set, make sure to stick to them——I repeat, stick to them! And do regular follow-ups; monitor your progress to keep yourself motivated. You should know that muscle-building requires at least 2 to 3 weeks and safe weight loss is 1 to 2 pounds per week. All of these are attainable if you remain consistent. You will always have stressful days or sometimes lack the will to move on, but encouraging yourself to keep the ball rolling will give you the most benefit in the end. Those challenging days, as some may call them, will be a distant memory when you practice consistency and remain true to yourself. Adding value to your profession, family, and community can be easier achieved if you reach your optimum health and wellness. Stress will be a lot more manageable and your mood will be lighter and better. As writer and historian Will Durant once said, “"We are what we repeatedly do. Excellence, then, is not an act but a habit."” So prepare yourself for an outstanding year! by Rheysonn Cornilla, Physical Therapist, Aegle Wellness Center, The City Club
Physical therapy is a collaborative process, a healing relationship, a means to an end——and that end is achieving your fullest potential.
in hand through whatever obstacles might hold you back. It’’s a process, and sometimes, it’’s not easy.
Physical therapists (PTs) are healthcare professionals who literally get you back on your feet to pursue your passions and live life meaningfully.
All treatment programs start with an evaluation. This is very important. The more thorough the assessment, the more comprehensive the treatment. Each and every session is a chance to re-evaluate, re-assess, and strategize. You should be actively involved every step of the way. Always remember that a successful program ends with you being functionally independent. Appreciate the small victories. You’’re meant to move on to bigger challenges; progression is the name of the game.
As defined by the World Confederation of Physical Therapy, it refers to the services provided by physical therapists to individuals and populations to develop, maintain, and restore maximum movement and functional ability throughout one’’s lifespan. PTs are experts in body structure and function. So if you have any problems with movement or activity (i.e., pain, discomfort, weakness), chances are a physical therapist can help. In fact, there are physical therapy specializations that help people in different life stages——from pediatric to geriatric; different life goals —recovering from surgery to improving athletic performance; and different health concerns—from exercising safely after a heart attack to learning how to walk again after a stroke. There’’s always a PT who can address your needs, whether they involve recovery or optimum performance. What is manual therapy? Manual therapy is a minor part of a skilled clinician’’s arsenal. It’s a way of giving inputs to the body in order to make the nervous system respond in a way that promotes healing, recovery, and increased capacity for movements and activity. There are techniques to decrease pain and sensitivity, induce relaxation, and improve mobility by acting on muscles or joints. There are even techniques to address issues with the nerves! Manual therapy is done after a thorough evaluation or as part of the evaluation. It’’s usually done to alleviate pain and achieve better movement. A graded exercise program should follow. It’’s important to remember that your physical activity and exercise lead to long-term improvements. How does physical therapy work and what is it like? The process of physical therapy starts with you and your commitment to be better. You will have to tell your therapist how you got injured, what alleviates your pain, what aggravates it, how you feel about it, what you think is going on, and how it affects your activities and everyday life. This is a relationship. Your PT has to know you and how you feel. You will both have to work on setting your goals before he or she lays out a plan to achieve them. Then you will work together hand 14
How is The City Club’s physical therapy different? We begin with the end in mind; goals are important because they give our plans direction. With your goals set, we work together to improve your performance in your passion, and in life. We understand movement, and we know movement patterns. While others focus on the site of pain or injury, we look at your totality, not singled-out body regions. We work to refine movements and optimize them. One-sided back pain might make you put more weight on the opposite leg. A shoulder injury might impair your arm swing during running or walking. Limited extension of the big toe might change your running form. These all impact your overall movement quality. Consider the following examples: Three people came to us with knee pain. The first one plays badminton and has no deceleration control in running. The second one doesn’’t hinge at the hip and has poor ankle mobility; his movements are knee-dominant. The third one hyperextends at the knee and has weak quadriceps and tight hamstrings and calves. Three people, same symptoms, different presentations, different approaches. We take a different perspective——an individualized, movementbased perspective. What conditions can you help with? If you have pain or weakness related to movement or activity, have an old injury you never really recovered from, are coming off surgery and looking to get stronger, or just want to have your movement assessed to find points for improvement, PTs can help with that. Pain syndromes, tendinitis, shoulder and back pain, knee pain, and sprains and strains usually get better with appropriately graded movements. Just get a referral for physical therapy from your doctor and schedule an appointment with us through The City Club's friendly service assistants.

FaceFitness: The Workout You Won’t Want to Skip By Arian Tuazon, Aegle Wellness Center Brand & Marketing Manager When we think about skincare, what usually comes to mind are the pumps and creams lined up on our vanity, and the stringent regimen before and after a good night’’s sleep, not to mention the lip balm and sunscreen reapplications throughout the day. We carefully study the ingredients of what we put on our skin, making sure there are more natural and harmless substances than potentially toxic chemicals to ensure a radiant, youthful glow every day. However, even with our elaborate facial care routine, we forget one of the most important steps: exercise. Oftentimes, we feel that our face is tense, a little stiff and strained in some areas so that even smiling becomes too tiring. This is why giving our facial muscles their own workout routine helps address these concerns. FaceFitness, much like a standard exercise routine, follows a series of movements to target all 43 muscles of the face. It begins with a warm-up where the face is lightly massaged with oil to stimulate lymphatic drainage to clear out the toxins accumulated under your skin. This is followed by induced facial muscle resistance using a mini Swiss ball which helps the tense muscles to loosen up, then a series of upward strokes to encourage lift. A cool crystal roller is run on the face in a calculated manner to promote better circulation, resulting in diminished dark circles and a brighter and more even skin tone. Finishing the routine is oxygenation which improves cell regeneration, refines pores, and prevents breakouts. Immediately after the treatment, your facial muscles feel more relaxed and benefit from an instant lift. For those who need more than regular toning of facial muscles, FaceFitness Luxe is recommended by Dr. Ruby Magpantay, Head of Aegle Aesthetics at Aegle Wellness Center. It’’s essentially FaceFitness complemented by radiofrequency treatment to stimulate collagen production and further refine the contours of your face, making your face look more firm and lifted. Our skin naturally absorbs nutrients from our skin care products, but a regularly toned face absorbs them better, and brings out a more vibrant and youthful look almost instantly after each facial exercise. Once you experience it, you’’ll understand why FaceFitness is the workout you won’’t want to skip!

SPOTLIGHT ON
Dr. Ruby Ann B. Magpantay
Associate Medical Director, Aegle Wellness Center Head of Aegle Aesthetics By Arian Tuazon, Aegle Wellness Center Brand & Marketing Manager
Dr. Ruby Magpantay is one of the most sought-after doctors in the field of integrative medicine, having been the first of the very few doctors in the Philippines to complete a Master of Science in Preventive Medicine at the esteemed Dresden International University in Germany. She also received training in Advanced Bio-identical Hormone Restoration from Dr. Thierry Hertoghe in Brussels, Belgium and Kuala Lumpur, Malaysia. Like most people, Dr. Ruby used to look at diseases as related to one organ of the body, but with her extensive and continuous research and training in integrative medicine, she has come to understand that the human body needs to be treated as a whole, and that when a symptom manifests, it could be due to a wide range of factors. She has since dedicated her practice in bio-identical hormone balancing, vitamin supplementation, and integrative oncology to the management of common human struggles such as weight loss, women’’s vitality, and cancer, among others. Prior to specializing in integrative medicine, she was already making a name for herself in the field of aesthetics, especially with her fellowship training in Anti-Ageing at the American
Academy of Aesthetic Medicine in San Jose, California. What sets her apart from other aesthetic doctors is that she married the discipline of aesthetics with integrative medicine to bring out her clients’’ beauty from within. Her personalized skincare treatments are based on careful assessment of her clients’’ overall health and not just their skin condition. Dr. Ruby is client-centric, and she believes that a healthy lifestyle should be practical. Her health advice and medical interventions are practical and feasible, which is why they are successful. She believes that for any lifestyle change that we have to make, we have to find the will to correct our unhealthy habits. For her, a successful client is one whose eyes are on the goal. Fortunately, for most of us who need the extra push, we have physicians like Dr. Ruby to help us understand our complex health profile by translating our results into comprehensible information and attainable steps to take, so we can live our best possible quality of life.
