Authentic Spanish Cuisine to Remind You of Your Spanish Roots - Restaurant Review by Kara Aguas Costa del Sol, named after a region in the south of Spain, is my go-to restaurant when I’m craving authentic Spanish food. From the chic decor to the carefully chosen furniture, having a meal here makes me feel like I’m sitting in a café in Spain. Apart from its elegant ambiance, Costa del Sol serves wonderful food. Most ingredients are imported and flown in from Europe and each dish is cooked with precision. There is a good variety of dishes across the menu, ensuring that you’ll find something to your liking.
GAMBAS & SALPICAO
If you want comfort food, try the gambas al ajillo and salpicao – the garlicky taste of both dishes always hits the spot.
PAELLA NEGRA
The delectable paella negra gets its flavor and color from squid ink, and the deliciously cooked rice bursts with flavor at every bite. This is my favorite paella in Manila.
LANGOSTINOS THERMIDOR
I cannot even begin to describe this dish – each and every bite is so flavorful and yet not overpowering. The ingredients blending together give it its rich and creamy taste.
What makes Costa del Sol special is the time spent perfecting each and every dish down to the last detail. The authenticity of every meal is undeniable. I have eaten here numerous times and would like to share some of my favorite dishes:
ANGULAS
If it’s your first time at Costa del Sol, I suggest ordering angulas, which are tender baby freshwater eels prepared in olive oil with a touch of red pepper, cooked to perfection and served in a cazuela. This has got to be one of the most delicious delicacies I have ever had. 12

And of course, my most awaited part of every meal is dessert! I always order their canónigo: light, fluffy and not too sweet, this is the perfect way to cap off a very hearty meal!

James Deakin’s Sanctuary
Known for his informative automotive show, articles, and social media posts & videos, James Deakin is the most influential and trusted voice in the local motoring scene. A Henry Ford Hall of Fame awardee automotive journalist, he’s an anchor on CNN Philippines’ morning show “New Day” and has a weekly prime-time motoring show titled “The Service Road.” He also manages his own website, www.jamesdeakin.ph. When he’s not busy appearing on TV, working, travelling the world or being stuck in traffic, James likes to binge-watch Netflix series and ride his bike. But when he truly wants to unwind, he visits The City Club at Alphaland Makati Place. The City Club, located in Makati’s Central Business District, is a three-hectare private club that caters to its members’ lifestyle needs, whether they involve business, leisure, entertainment, or wellness. James calls the Club “the perfect man cave.” After a long week of work, he spends time at one of his favorite rooms in the Club – the library. “I look forward to just finding my own patch of quiet and reading or writing,” says James. The amenity he wishes to frequently use in the future is the gym. “I’m not big on the gym yet, but that’s a goal,” James laughs.

When visiting the Club, he also brings his wife and children along. They enjoy lounging by the lagoon-type swimming pool and savoring leisurely meals at the Club’s specialty restaurants. “I love the exclusivity. It’s a sanctuary in the middle of one of the most congested and bustling cities in the world. I really don’t know what I’d do without it.” Being the automotive expert that he is, James gives The City Club his stamp of approval for its convenience, distance- and traffic-wise. “It’s easy to get to. Plus, parking is a breeze so I actually prefer it.”

Your New
Baguio Home The way Baguio used to be, 50 years ago: peaceful and rustic, with fragrant pine-scented mountain air and breathtaking, unspoiled vistas. Alphaland Baguio Mountain Lodges is a master-planned development of 300 lodge-style log homes, situated on a 78-hectare property. The development is just 9 kilometers north of Baguio City on Ambuklao Road, which is now fully paved and is only about a 15-minute drive from Baguio City proper.

The site enjoys lush Benguet pine forests and totally pollution-free mountain air. The property has an elevation of 5,200 ft. as compared to Baguio proper and the Loakan airport, which are at 4,300 ft., and Tagaytay Highlands, where the highest point is 2,000 ft. and the average elevation is only 1,500 ft. The master plan was done by EcoPlan of Florida in the U.S., the same master planner for Balesin Island Club. The lodges will be built individually as horizontal condominiums, where the land will be proportionately owned by all 300 homeowners.
There are 5 designs and floor plans to choose from, and the homes will be sited to maximize the views of the surrounding pine-forested mountains. The homes range in size from 4 to 6 bedrooms, and are offered fully furnished or unfurnished. All homes will include a stove, fireplaces, and a sauna. Furnished homes will be in ready-to-move-in condition with appliances, a wine chiller, fireplaces, furniture, decorative furnishings, beds, luxury beds and bath linens, outdoor grill, and sauna.

Each home will be constructed from imported western cedar or pine logs from Scandinavia, and fully treated against termites; no part of the house that touches the ground will be pinewood but will be either concrete logs or mountain stone finish. All homes will also have two fireplaces – one in the living room and another one in the master bedroom – and its own complete genset that will serve as a backup source of power. Furthermore, each cluster will consist of 4 to 6 homes, and will have its own water cistern that collects rainwater from the roof of each house, and the usual superior landscaping of Alphaland. The property will be completely encircled by an 8-foot concrete security perimeter fence totaling more than 7 kilometers to provide complete and absolute security for homeowners, with at least about 12 security outposts along a perimeter road. To cater to the homeowners’ social and active lifestyle, the Clubhouse Inn has several sitting & lounging areas, karaoke room, bar, and restaurant with 2 indoor dining areas with a capacity of 16 people, and outdoor dining areas which can seat up to 60 guests, with magnificent views of the surrounding mountains and Baguio City. The Inn also houses 10 guest rooms. Other amenities include a covered Sports Area with a multi-use court that may be used as a tennis, basketball, or badminton court; a chapel; mountain ponies and stables; and nurseries for pine trees
and flowers. Additionally, on the main Ambuklao Road part of the property, pine log units will have a laundromat and will host the best restaurants and popular shops in Baguio. Furthermore, we will provide housekeeping, home maintenance, landscaping maintenance services, and drivers’ & maids’ housing quarters on the property, as well as a shuttle service, cellphone service, a DTH satellite TV service, and a lightning arrester network. To facilitate access to the lodges, there will be 3 helipads on the property. We are acquiring one more helicopter to accommodate those who will want to use our helicopter services, taking off from the Alphaland Hangar in NAIA or our helipad at Alphaland Southgate Tower on EDSA cor. Chino Roces Avenue in Makati City. We will also provide regular Cessna airplane service from our hangar in NAIA or Clark to Loakan Airport, with comfortable shuttle service to and from the property. For access via land, our 22-seater sleeper bus, complete with toilet and stewardess, will start bringing interested buyers from Manila to Baguio at midnight, and return to Manila after dinner the next night. Committed to sustainable tourism, the island was developed according to strict environmental guidelines. Just 9% of the island has been developed – the rest has been left in its natural state, mostly forest. Unique among island resorts, the innovative rainwater harvesting system starts with the 1.5 kilometer concrete airplane runway which simultaneously serves as a rainwater catchment. The water is then channeled to several man-made storage lagoons found around the island, which have the capacity to store over 200 million liters of water per year. The harvested water is then processed via ultrafiltration into potable drinking water, and used water is also recycled in modular sewage treatment plans, which in turn produce Class A greywater. This is used to maintain the Club’s lush landscaping during the summer months. Balesin also provides hundreds of jobs to Filipinos, a number of whom are locals from the island’s barangay and Quezon province. Furthermore, Balesin employs Ifugao woodcrafters from the Mountain Province to make handcrafted décor and furniture of the resort. Did you know that the human body is meant to last for a hundred and fifty years? Yes, that’s right, that perfectly designed piece of biologic machinery can withstand more than a century of wear and tear provided it’s maintained to repair itself the way it was designed to. If we were to look at the ageing process as a race between the degenerative breakdown of your bodily parts and the regenerative, reparative processes the body was designed to undergo due to daily wear and tear, we could better understand how to best take care of this exquisite piece of machinery we call the human body. It is unfortunate that this human machinery does not come with an owner’s manual just like your car does. But wait, when did you ever sit down and leaf through the operation manual of your new car? Maybe The Grand Architect didn’t even bother to give us an owner’s manual because we wouldn’t read it anyway. But throughout the history of mankind, we sort of learned, and are still learning, how to take care of it… the hard way. During the 1940s, the average life expectancy was 50. Now that it’s 75, we must be doing something right. Slowly, we are learning how to help the body along in repairing itself the way it was designed to – and we have more centenarians now than five decades ago. But what happens when the body gets tired of repairing itself ? Why does it even have to keep setting things right? Because you—yes, you—keep derailing it from how it was designed to function in the first place. You Are How You Live Illnesses set in when the body fails to either keep disease away or recover from an overwhelming one. The fact of the matter is that most diseases that man develops throughout a lifetime are preventable: diabetes, heart disease, arthritis, even cancer.
As all diseases are both genetic and environmental—yes, all— there is also that fast proven fact that carefully managing one’s environment can control the manifestation of one’s genetic predispositions. For example, even if one possesses the genes for diabetes mellitus (type 2) from both parents, avoiding simple sugars in one’s diet will keep this disease from developing. A rather simpler example would be smoking and heart disease; if you don’t smoke, you lessen the chances of getting a heart attack even if both parents succumbed to it. These preventable diseases, illnesses we develop because of how we live our lives, are what we call lifestyle diseases. Historically, these are commonly caused by alcohol, drug, and smoking abuse just as much as lack of physical activity and unhealthy eating. Then there’s the notably increasing incidence of cancer. Is it because of the way we live our lives, what we eat, what we are now exposed to? Or has the fact that we live longer now uncovered a totally new paradigm with regard to this age-old killer? But one basic principle now stands to be challenged; regardless of your genetic makeup, the diseases you develop throughout your lifetime hinge more on how you lived your life. You and the Foundations of Wellness Let us take a look at the three general areas to improve on in your lifestyle to minimize the risk of developing disease, something I like to call the Foundations of Wellness: proper nutrition, regular exercise, and personalized supplementation. Focusing on these three areas will not only help you keep yourself healthy, but also help you enjoy all the things you want to eat and do just by maintaining a balancing act of sorts. Some people like to call this moderation. But knowledge of what is good and not good for you is essential to this balancing act, and that is where most people fall short. 21
benefit from constant movement is your heart and lungs, but that’s age-old knowledge. A good regular exercise program is an hour of your day every day: half an hour on the treadmill or stationary bicycle and half an hour doing stretching and strengthening exercises on machines or just using your body weight, such as push-ups and sit-ups. An hour a day is a small investment to guard against a ten thousand dollar heart bypass or an eight thousand dollar knee replacement. Supplement to Betterment: Personalized Supplementation Diet for Life: Proper Nutrition I’m pretty sure everyone is familiar with the now overused quote from the great Greek philosopher and physician Hippocrates, “Let food be thy medicine and medicine be thy food.” That wouldn’t be difficult to understand considering that food is the part of the environment we put inside our bodies. What we eat not only dictates what nutrients and substances our body receives to use in repairing itself, it also consists of what can harm the body and hinder self-healing all the more. When we talk about diet, it basically means what we eat on a daily basis, our staple meals. Hence, diet should be something that you can sustain for life, not just a means of achieving a desired weight. How did you gain all that weight in the first place? Knowing exactly how much food your body needs is the first step. Then start eliminating food that makes you feel bloated right after; everyone has specific food sensitivities and, short of doing an immunology test, your gut feel (pardon the pun) is the most reliable assessment. Statistically, most guts get inflamed with grains and dairy; your basic gluten and milk intolerance. Last step is to sit down with a nutritionist and work on a meal plan that you can adhere to including all your favorite food in a delicate but practical balance.

Move to Improve: Regular Exercise Our bodies were designed to move. Fossils of our early ancestors rarely showed arthritic joints, much unlike what I see in my clinic today; x-rays with signs of arthritis are a dime a dozen nowadays. It’s a common misconception that people with the heaviest manual jobs are the ones who end up with arthritis. On the contrary, sedentary people who hardly move from their desks get arthritis more and even earlier. Nourishment of our joint linings, our cartilage, results from a pumping action of the joint itself. Simply put, no movement means no nourishing and lubricating joint fluid. Next to
How can your body heal itself when it cannot get the nutrient raw materials to do so? And believe me, you do not get everything your body needs from your diet no matter how well-balanced you think it is. This has been the topic of so much controversy in the medical world. But going back to the basics of understanding the way the cell—the foundation of all life on the planet—functions can convince even the most resistant of physicians that each and every life process of the human body is dependent on elemental minerals and substances that are not all present in the food we eat. Be sensitive to your body and what it’s telling you; heartburn, a post-nasal drip, a cough that doesn’t seem to go away, a pesky recurrent migraine, all these things are calls for help sent by your body that there is something you need to change in your lifestyle. QUICK HOLIDAY WORKOUT PHOTOS by NICO BELASCO
During the holiday season, maintaining a fitness regimen becomes more challenging with all the frantic Christmas shopping, parties, and gatherings with friends and family we attend. So it’s no surprise that we tend to gain weight during the most wonderful time of the year. But staying physically active in some way gives you the energy you need for—and reduces stress and tension from—all the holiday preparation and celebrations, and, of course, burns some of the extra calories you may be consuming. To help you stay fit this season, try this quick workout from our resident strength & conditioning coach, Evan Spargo, to blast up to 350 calories in just under 30 minutes – you’ll build strength while you’re at it! Do this routine 3 times a week to drop the excess weight.
1. Jumping Jacks. Do jumping jacks for 2 minutes.
4. Glute Bridges / Single Leg Raises. Lying on your back with your knees up and feet elevated on a platform, lift your hips off the ground so that your torso and thighs are level, then lower back down slowly. Perform this 20 times. Progress to single leg glute bridges where you’ll be in a similar position, but this time raise one leg completely off the floor and in the air. From this position, lift your hips off the ground, keeping them level as you balance, all the way to the top, hold and then slowly lower back down. After 20 reps, change legs.
2. Side Lunges. Stand holding 5- to 8-pound dumbbells. Step your right leg out to the right and bend your right knee to 90 degrees, reaching your hands down on both sides of your right foot. Push off your right foot to return to standing position, with your right foot directly in front of your left foot, arms sweeping up with palms facing in. Repeat on left side with your left foot stepping behind your right as you return to center; that’s 1 rep. Do 24 reps, then switch lead legs and repeat.
3. Line Hops. Step or hop sideways over a stretched-out jump rope for 2 minutes.

5. Squat Dumbbell Bicep Curls. Stand holding a pair of dumbbells by your side, feet shoulder-width apart, and slowly lower down into a squat position. While lowering down, perform a bicep curl with the dumbbells. Once your hips are parallel to the ground, start standing back up and relax the dumbbells down back into the starting position by your sides. Perform 20 reps.
6. Fast Feet. Step quickly forward and backward over a stretched-out jump rope for 2 minutes.
9. Lunge twists. In a standing position, take a step forward and perform a lunge by dropping the back knee and hips towards the ground, low enough to just hover above the ground. In that low position, slowly rotate your trunk towards the knee that’s up with your arms facing the direction you’re twisting. Then twist your trunk back so your body is straight again, and make your way back up to the starting position standing up. Perform 20 reps on each side of the legs.
7. Triceps Dips. Start seated on a bench and hold yourself above the edge with your legs extended out on the ground, palms facing inwards and fingers pointing out to the side. Begin to lower yourself towards the ground by bending at the elbows, get to the lowest position you can, and then push yourself back up to the starting position. Perform 20 reps. 10. Squat Single Arm Dumbbell Press. Stand up straight while holding a dumbbell comfortably above your chest and in front of your shoulder on one side. Lower yourself down into a squat, keeping your chest up and dumbbell in the same position all the way down; your weight should be on your heels as you lower down into a position where your thighs are parallel to the ground. From here, stand back up. Once back in the standing position, raise the dumbbell above your head and lower back down to your chest back into the starting position. Perform 10 reps on each arm.
8. Pikes. Lying on the ground facing up, extend your hands above your head and keep feet together. From this position perform a crunch and bring your arms and feet together whilst keeping them as straight as possible, and then bring back down to the starting position. Perform 20 reps.

At a fortuitous meeting in Baguio, Mike caught up with a former underclassman in the Philippine Military Academy (PMA). Enter Clemente G. Enrique. Dado, as he is fondly called by everyone, is a product of PMA’s Matikas Class of 1983, graduating as First Captain/Regimental Commander or the Baron of his class, an honor given by the academy to the person who best exemplifies leadership in the entire corps. As a young officer in the Army, GM Dado joined the elite Scout Rangers fighting rebels in Davao del Norte and other parts of Mindanao, and later on led Scout Ranger operations against rebels in Cagayan Valley. He was then handpicked to serve as the Military Aide of the Commanding General of the Philippine Army. After graduating from intelligence school, he served at the National Intelligence Coordinating Agency. A recipient of several military awards and commendations, a graduate of the U.S. Ranger course in Fort Benning, Georgia, USA and the Nuclear Biological - Chemical Warfare course in Hawaii, he’s an expert with the M-16 rifle and .45 cal. pistol. Also a certified Army paratrooper, GM Dado can jump out of planes and helicopters day or night at 1,500 ft. or rappel down to any objective from 150 ft! During the bloody 1989 coup where the military rebels took hold of Makati, GM Dado figured prominently as a member of the Cory Aquino government negotiating panel which resulted in the “return to barracks” of the rebel soldiers, thus avoiding any further bloodshed and damage to private property. He, along with other members of the group, was recommended for the Distinguished Conduct Star, the second-highest military honor, for his actions above and beyond the call of duty. Indeed, GM Dado’s stellar military background gives members and guests peace of mind when it comes to island security! GM Dado holds a Master in Business Management from the Asian Institute of Management, one of the foremost business schools in Asia. His corporate background includes experience as VP for Human Resources of PET Plans Inc., where he also played a vital role in establishing its affiliate company, PETNET-Western Union, which continues to be successful to this day. In 1999, GM Dado shifted to freelance consulting to focus more on his farm. His vast experience as a gentleman farmer serves Balesin well, specifically our Organic Farm, where our grapes, melons and assorted vegetables and herbs thrive under his keen eye. Our aquaculture operations also benefit from his guidance, with a record number of Balesin crabs and sea bass produced regularly. In just five short months, GM Dado has already made a big impression on our members and guests as well as the entire staff, who follow his leadership in making our visitors’ stay in Balesin the best it can be. 29
