LIFESTYLE SECTION

Chef Recommends: Tang Palace By Chef Benigno Violata and Kat Garcia, Marketing Communications Officer

With over 5,000 named dishes, Chinese cuisine is home to a rich heritage of cooking styles, techniques, and ingredients that have evolved over time. From stir-fried dishes to noodles and steamed buns, each dish has a unique history which goes all the way back to different regions and dynasties. The cuisine is traditionally enjoyed for its appearance and aroma, taste and texture, balance and harmony of yin and yang elements, and nutritional properties. As the Chinese saying goes, “To the people, food is heaven.” Experience a dash of culinary bliss at The City Club at Alphaland Makati Place’s own Chinese restaurant, Tang Palace, with Chef Benigno’s top picks.

RVO’S WINE SELECTION Montes Alpha Pan-Fried Radish Cake This savory radish cake, a symbol of prosperity and rising fortunes, is a staple in traditional dim sum houses and Chinese New Year celebrations. Initially steamed until it’s soft and juicy, this appetizer is packed with grated radish, shiitake mushrooms, Chinese sausage, spring onions, and pork. After steaming, the cake is then pan-fried to achieve a crisp, golden-brown outer coating. For an extra kick, the dish is served with our piquant sweet chili sauce on the side.

Crispy Noodles with Seafood There might be no Chinese dish better loved than sautéed vegetables and seafood on a bed of egg noodles. Once you mix them all together, the combination of the crunchy noodles, fragrant vegetables, mixed seafood, and flavorful sauce offers a delightful mix of chewiness and crunchiness. With all these different textures coming together, this dish is definitely a must-try at Tang Palace! Aside from seafood, you can also opt for its other variants, such as lohon vegetable or sliced beef.

Colchagua Valley Chile, 2012

U.S. Beef Short Ribs with Black Pepper Sauce Steamed to perfection, these U.S. beef ribs are drizzled with our special black pepper sauce and topped with sliced raw onions to create an enticing aroma. The black pepper blends beautifully with the beefy goodness of the steamed ribs—a feast for your taste buds!

Iced Sago with Pomelo & Mango A chilled soup dessert, Tang Palace’s well-loved iced sago (tapioca pearls) with pomelo and mango is a light and refreshing way to cap off your meal. The bittersweet taste and “punch” of the pomelo pulp combines with the soft and sweet mango chunks and the tapioca pearls perfectly. Not only is it a popular dessert—with the weather starting to warm up, it also helps make the summer heat more manageable!

Tasting Notes

The nose is complex with aromas of ripe black and red fruits such as blackberries, figs, and plums in syrup. Spice notes of black and red pepper intermingle with a touch of fresh tobacco and leather. This is a well-structured wine with good volume on the palate and smooth, round tannins that make it an ideal wine to enjoy now or over the course of the next 10 years.

Wine Features

Grape varieties: Merlot 90% Carmenère 10% Food pairing: Duck breast, lamb or pork chops, pasta with pesto, lamb masala, or chicken with mushroom sauce

Coming Full Circle at Alphaland Baguio Mountain Lodges By Iris Gonzales New Year’s 2019. About the same time in 2018, my family and I spent the holidays in a place so idyllic I didn’t think it was still possible there could be such a place in already crowded Baguio. We were privileged to spend a few days before the New Year at Alphaland Baguio Mountain Lodges. It was a perfect place for our small tribe of four whose New Year tradition is to be in someplace new. So there we were at Alphaland where we were greeted by the crisp mountain air, fresh morning dew, and a magnificent view of the mountains of the Cordilleras.

Alphaland Baguio Mountain Lodges, the latest project of upscale property developer Alphaland, is located some 9 kilometres north of Baguio City. The project is an 82-hectare, master-planned development of 300 lodge-style log homes made of pine logs imported from Scandinavia. The property is nestled perfectly at an elevation of 5,300 feet above sea level, above Tagaytay Highlands’s 2,000 feet and Baguio City’s 4,300 feet, allowing residents to enjoy cool, clear, pine-scented mountain air.

Yes, it is a place where the air is still very crisp, like the Baguio of olden days, and where one can still wake up to foggy mornings. It is perfect for those who miss the glorious days of Baguio when it was still quiet and not as populated as it is now. It was a meaningful journey for me, a coming full circle of sorts because my parents used to bring me to Baguio every summer during my childhood days. My siblings and I enjoyed the northern culture, the food, the view, and of course, the crisp mountain air. So it was very fulfilling for me to be able to have my own family experience something like this too.

Model D Dining Area

7

The project is being developed in phases from now to 2022. The log homes are quaint and authentic with two fireplaces, one in the main living room and another one in the master bedroom. There will also be quadruplex lodges made up of four homes in one building. There is also the Clubhouse Inn, which can be fully enjoyed by the homeowners and guests. It has three levels, with the main level consisting of a grand fireplace, several sitting and lounging areas, a karaoke room, a fully stocked bar, and two indoor dining areas with a capacity of 16 people.

There are also two outdoor dining areas which can seat a total of 60 guests, and which offer magnificent views of the mountains on the northeast side and Baguio City on the southwest side. We stayed in the Clubhouse Inn and it was so warm and cozy. Roberto V. Ongpin, the tycoon behind Alphaland, found the property more than 42 years ago and he built his very own home on it—a charming age-old rustic lodge. He later acquired adjacent parcels of land, growing the whole property to its size now. Ongpin’s latest project adds to his portfolio of luxury playgrounds, enjoyed by an elite group of people in the Philippines and the rest of Asia. These are The City Club at Alphaland Makati Place, and Balesin Island Club, off the coast of Quezon. Truly, Alphaland Baguio Mountain Lodges is a paradise of its own.

The memories of our stay still linger. It is no doubt a feast for the senses, a respite from Manila’s mayhem, and a walk back to the Baguio of the good old days.

HEALTH & WELLNESS SECTION

The No-Fad Diet By Mergynette G. Mercado, RND

When years of poor diet and lifestyle suddenly take their toll on our weight, physical appearance, and overall health, the irony of our human nature is to opt for the “quick fix.” Well, who wouldn’t want fast results in the easiest way possible? As they say, desperate times call for desperate measures, leading us to extreme methods of dieting. Have you consumed shakes, juices, or any artificial product that can help you dramatically lose weight in just a short period of time? Have you tried following an eating cycle that specifies periods of eating and fasting? Have you experimented with a diet that significantly limits calories, or a diet that completely restricts or focuses only on certain food groups like carbohydrates, fat, protein, or sugar? If you answered yes to any of these questions, were you able to achieve the too-good-to-be-true result it promised you? While these diets may help you jumpstart your weight-loss goals or improve your body image, they do not guarantee long-term benefits for your health and weight management because they fail to offer sustainable and healthy eating strategies that fit your personality and lifestyle. More often than not, these fad diets offer temporary weight changes that have a quick reversal once the diets are abandoned, which usually leads to trying another fad diet promising amazing results.

Take the next step to break the cycle of yo-yo dieting. Look for a program that’s designed to deliver personalized, science-based, comprehensive, and effective methods of improving one’s health through nutrition. At Aegle Nutrition Science, for example, we focus on your macro and micronutrient needs with consideration of current physical activities, medical history, and food habits and preferences to achieve your personal nutrition and fitness goals. In other words, the exact opposite of a “one-size-fits-all diet.” Aegle’s licensed nutritionistdietitians, together with its world-class medical team headed by integrative medicine pioneers Dr. Benedict Valdecañas and Dr. Ruby Magpantay, will help you craft a bespoke health plan focused on feasible lifestyle changes. At Aegle, we see food and diet as not just for losing weight but also to heal, prevent, and delay the onset or worsening of diseases. The program starts with a thorough one-on-one assessment of your eating habits, current diet, and body composition. Individualized nutrition education and goal-setting are done to help you achieve your nutrition-related goals—whether they are related to weight management, athletic performance enhancement, food sensitivity management, or disease management—or simply for guidance on healthy eating. An evidence-based post-consultation is also provided to assess your progress.

Tips and Tweaks for Radiant Skin and a Summer-Ready Body By Ruby Ann Bermudez-Magpantay, M.D., Msc., Associate Medical Director, Aegle Wellness Center

It’s official! Summer is here. As you plan your summer activities, what to wear, where to go, and what to do, don’t forget to take care of your skin and body.

three to five sessions. Remember to do your laser hair removal procedure before sun exposure, or at least 72 hours after sun exposure, as it will increase the risk of burns.

Did you know that just 15 minutes of sun exposure can cause DNA damage? Exposure to UV rays is a major risk factor for most skin cancers. Be smarter than the sun; don’t forget to wear sunscreen. But not all sunscreens are safe. Choose natural sunscreens that don’t contain harmful chemicals, such as Heliocare Gel Ultra SPF 90–a water-resistant sunscreen that leaves no whitening effect upon application.

Another common frustration is not being ready for figure-hugging swimwear. To fit into that perfect bikini you couldn’t resist buying, we suggest Fotona TightSculpting, a non-invasive laser treatment for sculpting and skin tightening, or a Radiofrequency treatment on all body areas. The procedure is a fast, safe, and effective noninvasive alternative to fat destruction, with no downtime.

Don’t forget to hydrate. Dehydration can lead to dry skin, headaches, anxiety, fainting, and even cravings for unhealthy foods. Refrain from too much caffeine, which is a diuretic and makes you urinate more than you normally would. And though it’s a refreshing treat, too much fruit juice can spike up sugar levels. If you find plain water boring, you can create infused water (which is also a good way to get small doses of detox) by adding slices of lemon, lime, cucumber, berries, and fresh herbs like mint and basil to a pitcher of water. Finally, after a long day of sun exposure, treat your skin with a wonderful natural body moisturizer— coconut oil. But please take note: coconut oil shouldn’t be applied before sun exposure, as it may increase the risk of sunburn. If you want to show off those smooth, hair-free legs, and wear that bikini without any worry, Aegle Wellness Center offers fast and pain-free laser hair removal powered by Fotona’s FRAC3® technology. It provides safe and effective hair reduction in just

If you still have time to spare before you hit the beach, we recommend an Aegle Nutrition Science consultation with one of our licensed nutritionist-dietitians, who will design a feasible program based on your needs and lifestyle, and guide you through a healthy weight-loss journey. And of course, it’s important that you get adequate sleep when you’re in vacation mode. It’s counterproductive to stress yourself when you’re supposed to be taking a break. Properly plan your itinerary and don’t overbook your activities. Remember, adequate sleep will bring out your skin’s luster, and also lower your appetite and unhealthy cravings. If you’re looking for a trip that will help you hit restart, complete with light therapy to help those having trouble sleeping, a wellness retreat—such as our Aegle - Balesin wellness package—is in order. Aegle Wellness Center wishes you a wonderful break this summer. Enjoy, relax, and recharge!

Summer Sports Programs at The City Club By Nic Belasco, General Manager, The City Club

Summer is upon us indeed! Along with the heat of the season comes the intensity of our summer sports offerings. Summer is the best time to renew your kids’ passion for sports and to get them to try something new. Acquiring new skills has been proven to help in their development and growth throughout childhood. The City Club Sports & Recreation Department has put together a great line-up of sports programs for your child to choose from. Club Gymnastica is one of our longest-running programs. Established in 1981, it’s the only gymnastics program nationwide that’s offered by Milo Sports. April 1 is the start of their summer program and they’re ready to accept over 250 enrollees for the summer, 100 more than last summer. We are proud to say that for the past three years, our Makati Club Gymnastica team has been the champion in all Manila competitions. They have coaches for all ages that teach basic to advanced moves for agility, dance, tumbling, and jumping. These are skills that translate to just about any sport, and a great way to introduce a child to athletic movements early on. Philippine Futsal Academy is run by program director Red Avelino with the mission to make players and teams become winners on and off the field. They are the first futsal-specific academy in the Philippines and are also the only Milo Sports provider for futsal training nationwide. Coach Red is a veteran in the soccer scene and is well-respected among his peers.

In summertime, swimming programs are always the most popular. Here at the Club, we offer the Bert Lozada Swim School and Roxy Barrios’ Mermaid Institute. With these two programs in place, we cover all levels of swimmers, from infant to competitive-level. Roxy Barrios has been teaching swimming programs here as well as at Balesin Island Club for many years very successfully. This is the first year we’ve brought the Bert Lozada Swimming School into the lineup, and we’re excited to offer their established swimming program to our members. Donnie Geisler School of Taekwondo is a great example of how we’re leveling up this summer. Donnie Geisler is an Olympic silver medalist and one of the most decorated

Taekwondo national instructors in the area, and his Taekwondo program promises to be a big hit. Coach Donnie’s high level of structured teaching has been perfected through years of discipline and excellence in his own Taekwondo journey. Another notable offering is our Belasco Unlimited Skills Academy. I started BUSA in 2014 with my wife Mafae after my professional basketball career ended. Mafae is a former Sydney, Australia junior circuit tennis player, and I’ve played 17 years in Philippine pro basketball. We decided to put up a program that teaches tennis and basketball with coaching and training methods that made us successful in our own athletic careers. Integrity, work ethic, character, and teamwork are skills taught in our BUSA programs that can be used in all aspects of life down the road. There are no limits in life, so we teach kids to have an open mind and reach for the sky. Last but not least, Heroes for Volleyball is another new program at The City Club this summer. They pride themselves in being the only grassroots development group that offers professional volleyball coaching to enhance the performance of young players who want to excel in the sport. The City Club is committed to partnering with only the best sports programs for your kids to enjoy this summer. It’s going to be a bigger summer than it’s ever been here at the Club, so get your child signed up early! Happy summer everyone. See you at the Club courts!
