ENAMELED CAST I RON Enameled cast iron is an iron alloy with a high carbon content (>2 .11%) coated with a gloss primarily made of glass. The material keeps the heat better, slowly spreading and evenly distributing it in all cooking methods. Tradition, authentic cooking and the design of Terra.Cotto give life to a cast iron collection created by designer, Stefania Vasques. Being slow food oriented and in line with the original collection’s philosophy, Terra.Cotto cast iron gives itself to today’s growing desire to go back to the good ways of eating in times gone by. With the same geometrical design and characterized by an intersecting of of circles and lines, the project consists of a wide collection of casseroles and hotplates. Names and the smells of spices from all over the world inspire this collection.

Stefania Vasques was born in Catania. She lives and works in Milan. Being an architect, a designer and a stylist, she collaborates with top décor and design magazines. She loves all that nature has to offer as it embodies ancient wisdom and a pool of knowledge yet to be discovered. She loves beauty as it is a universal resource and value. She eats organic
food, or rather biodynamic food, because it is good for the planet. She buys zero-mile food because it is less polluting. She believes a healthy diet is the real source of all healing and that a small revolution in habits, implemented and supported by “everybody”, would make “everybody” feel better.

This collection is composed of a series of oval and round casseroles from 10 to 24 cm in diameter, and of a wide gridiron which comes in a 26 cm square version as well as a 26/32 cm rectangular version. The small “cocotte” is perfect when preparing delicious single portions, while the wider shapes are perfect for the preparation of full meals and all types of soups. The aesthetically pleasing grilling plates “Mirto” and “Ginepro” may even be brought directly to the family table as the meat and vegetables get their finishing cooking touches.

A UNIQUE MOLD FOR EVE RY POT The molds that give life to the terra.Cotto cast iron are made of sand and are produced by the pressure of a steel mold on that sand. In the creation of each pot, two molds are made - one “convex” for the inside and the other “concave” for the outside. They are “ destroyed” during the operation of the extraction of each piece. The cavity created between the two molds allows the alloy to come together. The sand is recycled in order to make new molds.

THE MELT ING AND POURING THE MELTING of the metals happens in a 1540 °C electric furnace, completely computerized in order to constantly monitor the quality of the alloy produced. The temperature and purity of the cast iron are fundamental aspects for the creation of the casseroles, especially those with a minimum thickness of 5 mm. THE POURING of the alloy is done electronically into the sand mold. THE EXTRACTION of the already formed casserole happens immediately upon cooling.

THE F INISHING TECHNIQUE S All finishing touch phases for every piece are done manually to ensure Terra.Cotto cast iron product quality and to eliminate anything not in line with Sambonet standards. THE FIRST PROCEDURE consists of cleaning any remaining sand residue from the piece through a “blasting” process. This method uses propelled spherical particles to clean. THE SECOND PROCEDURE called “sanding”, removes any roughness, melting flaws and inconsistencies. THE THIRD PROCEDURE does a second “blasting” of the casserole. Every Terra.Cotto piece undergoes a steel grit sand blasting in order to obtain an even surface that still has a slightly rough characteristic. This type of surface is then ready to be painted.

FIRST LAYER OF GLAZE The “base” coating covers 100% of the casserole and has a dual purpose. Primarily, to protect the cast iron from external agents such as water and detergents, avoiding damage. Secondly, optimizing the adherence of the second layer. Drying takes place using special machinery with a temperature of 80 °C for about 10 minutes (biscuit method). The open flame firing then occurs in a 840 °C oven for about 80 minutes. FIRST LAYER OF COLORED GLAZE. . This layer is sprayed on and, in line with the collection’s concept, the designer’s color selection is applied. Drying takes place at 130 °C for another hour in the same way the the 800 °C firing was carried out.

DURABILITY. The glaze on the casserole’s interior and exterior, regardless of the color, does not absorb moisture and odors and will not stain. Terra.Cotto is dishwasher safe. NON-STICK. . The glaze finish increases the non-stick element of the cast iron. Terra.Cotto cast iron doesn’t need maintenance and greasing like traditional cast iron cookware. RESISTANCE. The glaze layers help protect cast iron from water, the main cause of rust, and acids used in the kitchen such as lemon juice, vinegar, wine, etc…They also improve thermal shock resistance and wear. PRACTICALITY. Smoothing the casserole surfaces, glazing simplifies the use and cleaning of Terra. Cotto cast iron, making it hygenic and safe. Despite the weight, the design and perfectly smooth glazed bottom makes it easy to move without damaging cooking surfaces.

HOW TO USE TE RRA.COT TO CAST I RON The glazed cast iron casseroles can be used on all cooking surfaces, including induction (careful attention must be paid*) and in elevated oven temperatures. After use, leave the casserole to cool for at least 15 minutes until it reaches room temperature. Then wash with cold water. Thanks to the special glazed bottom, all casserole and mini-casserole dishes can be placed on induction or glass-ceramic hobs without fear of scratching. The perfectly smooth Terra.Cotto bottom does not damage cooking surfaces! Pots, casseroles and glazed cast iron pans are refrigerator safe. *Preheat casserole using a third of the power for the first 5 minutes, after which, maximum power can be used. The “booster” function should be used with caution.

USE & MAINTENANCE A few simple instructions will allow you to best use and prolong the life of your Terra.Cotto cast iron casserole. PRECAUTIONS. Place casserole only on stovetop burners that can hold its size and weight. The glazed cast iron must be gradually heated and never left empty on burners. The flame beneath the casserole on the stove shouldn’t extend past its sides. Be sure to use an oven mitt or silicone when handling the casserole handles as they may be hot. To avoid damaging the glazed surface, use silicone or wooden kitchenware and do not directly cut food in the Terra.Cotto casserole.
FIRST USE. Before using, thoroughly wash with hot water and soap, rinse off and dry. When the casserole reaches a certain temperature, reduce the heat: the cast iron’s thermal conductivity allows heat to last for a long time during cooking, saving energy and allowing to simmer. CLEANING. Always let the cookware cool before washing it. Do not use overly aggressive and repetitive cleaning treatments or steel wool to get rid of hard to remove residual food. Instead, fill the casserole with hot water, wait until the residue softens and then remove it with a nonabrasive sponge. WASHING. Wash with hot water and dish soap using a non-abrasive sponge. These casserole dishes are dishwasher safe thanks to a special enameling technology. DRYING. Casserole dish must be thoroughly dried before being put away.
