Where most of the people like Roquefort cheese because of its rich flavor, many others have voted for cheddar cheese. Well most of the people might not have an idea about this but even cheddar cheese has been classified into smaller and more specific subgroups .the subgroups are-shredded cheddar cheese, sliced cheddar cheese, sharp cheddar cheese, low fat cheddar cheese, grated and finally chopped cheddar cheese.

It also depends upon the preparation mechanism at it takes time to ripe and it ages with time .thus the manufacture of cheddar requires a bit of time. But then again, the taste enhances with age, so the final product can be expected by the end of 18 months from the beginning of the procedure. If someone wants to buy a good quality cheddar cheese, he or she must check that it is not either too crumbly or too dry. This reason makes it favorite among people living in colder areas such as mountains or hills. Sharp cheddar cheese is probably the youngest cheddar available which is aged from 6 months to 9 months. At this point of time it tastes sharp and tangy.

It is not a big deal to have low-fat food but in case of cheese there is a slight disadvantage of low fat cheese. It contains higher amount o sodium than the natural one. This is the only drawback but otherwise, reduced fat-cheese is just fine and tastes the same. Apart from all this, it is also a very good source of vitamin B12 as well as riboflavin and zinc. Phosphorous is also there in mature cheddar cheese varieties. Last but not the least of course it contains loads and loads of the body building nutrient which is commonly called protein.
