There are many things one would like to see in a good chef, but Ed Douglass has something that puts him over the top: He sometimes dreams about food. “I do,” the new chef at Naniboujou Lodge said earlier this week. “Sometimes I wake up in the middle of the night after a dream and say ‘I could do this!’ It’s passionate for me.”

When Douglass told this story Lodge. he laughed and said it’s more of an indication of how much he likes his job than anything else. “I’ve been cooking for 20 years,” he said, “and I still love it.” Douglass grew up in Cottage Grove and was “cooking at an early age making omelets and pastas at home.” He went to Vermillion Community College and studied to become a natural resource technician, but, at the time, few jobs were available, so he returned
It was, he said, a fantastic learning experience—Douglass worked every station over the next few years as a cashier and host as well as at the sandwich, grill and sauté stations. He also learned how to be a display cook.
“I worked for six different chefs,” he said. “I saw different styles, different ways of doing things. When I left seven years later, I was a sous-chef.” Douglass and his wife decided to leave the city and move to the North Shore, where he was hired as a sous-chef at Bluefin Bay. You can find plenty of place to picnic in Cook County with public amenities such as picnic tables and fire rings.
By Ada Igoe A red-checkered tablecloth or lidded wicker basket are hardly required when it comes to picnicking in Cook County. Around these parts, picnic gear tends to consist of old camp pots and pans, a few zippered plastic bags and some migratory silverware that’s strayed from its kitchen home, all thrown into the bottom of a backpack or cooler. Here are some of our favorite spots to tote the proverbial picnic basket for al fresco dining around the county.
In Town: Grand Marais Rec Park Pavilion A great place to take the whole gang, the pavilion on the east end of the Harbor has plenty of seating, large grills, not to mention a roof over your head in case of unexpected inclement weather. Little ones have plenty of rocks to clamber on and an entire beach of pebbles to put back into the lake while the adults cook and chat.
Or try: Artist’s Point. The ever popular rocky point has far fewer amenities than the pavilion, but shouldn’t be overlooked as a scenic spot to sit with a friend over a coffee or sandwich.
Up the Trail: The sandy beach at the Seagull Lake Public Landing, about 52 miles up the Gunflint Trail, has long been a prized piece of property. In fact, in the late 1920s, the beach was so prized by Gunflint Trail entrepreneur Russell Blankenburg, that he was willing to buy a much larger tract of land on Seagull Lake than he originally wanted just to get the beach for his Seagull Resort. Seagull Resort is long gone now, but Blankenburg Landing, as the public landing is called, is still a place for people to gather. The site offers a picnic bench, biffy and the sand beach that is just perfect for sand castles or wading out into Seagull’s cool waters.
Got a craving for some great “lean, finely textured beef”? Go Somewhere Else
Or try: Trail’s End Campground. Drive all the way to the end of the Trail for a picnic at one of Trail’s End Campground scenic campsites, tucked among towering white pines near the rushing waters of Gull River.
East End: Mount Josephine Overlook For a picnic with a view, the newly renovated Mount Josephine overlook won’t disappoint. If you’re not quite up to the strenuous hike up Mount Josephine, the overlook provides ADA accessible facilities and a

new observation deck where you can gaze miles out over Lake Superior. If you do hike Mount Josephine, you’re sure to be ready for picnic when you reach the bottom again. Whether you hike or just observe, there are new picnic benches and restrooms available at the overlook. Or try: Judge C.R. Magney State Park. A hike to Devil’s Kettle is just the right length to work up an appetite. Afterwards, enjoy a picnic beside the Brule on the State Park grounds.
West End: Cutface Creek Wayside Rest Just five minutes outside of Grand Marais, this rest stop along Highway 61 shouldn’t be overlooked as merely a motorist’s bathroom break spot. There’s a long pebbled beach to explore and a great view of distant Grand Marais. Picnic benches are available in a grove of pines. Or try: Sawbill Campground. Head into Cook County’s interior for a picnic in the thickly forested Sawbill Campground.
“Down the Lake”: There’s no reason why you have to stay on land when seeking out picnic grounds. If you have a favorite Cook County lake, it’s sure to have a good picnic spot or two. Boundary

A good place in Grand Marais to find tasty items for a picnic (or lunch) is the Deli at Gene’s Foods.
The deli also offers a great variety of lunch meats and cheeses as well as hardboiled eggs.
The Deli has been around for more than 20 years, said Sherri Lashinski, deli manager. “We have a huge lunch following, too,” she added.
If you’re planning to have a little campfire at your picnic, you can pick up a package of Jarid Lachinski’s homemade brats at the IGA, too. There are lots of flavors, including bacon cheeseburger, pizza supreme, wild rice and the popular chili cheese. And the meat department has freshly ground hamburger for the picnic grill, too, she said.
In the deli case, one can find all kinds of tempting, homemade salads, dips and sandwiches, which are made up fresh, every day. A smiling Sherri Lashinski serves a deli special to Dan Bauman of the Gunflint Trail.
The most popular salads are the chicken wild rice, zesty seafood and homemade potato salad, she said. There are 10 salad choices available at all times, and when one slot is emp-

Beyond the Border,
Adventure Awaits
By Shawn Perich
“Why are we going to the trout ponds?” asked Jim Boyd of Grand Marais as we crossed the Pigeon River and entered Ontario. It was a fair question. The North Shore has a wealth lakes and streams brimming with fish, so why would anyone pay to fish in a stocked pond? In moments, Jim had his answer, because the Eagle Ridge Trout Ponds are just across the border. The owners, Rick and Judy Ostipenko, showed us around their property, which consists of a large pond stocked with rainbow trout and another stocked with smallmouth bass, as well as a couple of comfortable cabins, an outdoor swimming pool and a camping area.

Growing up around airplanes and aviation never seemed odd to me as a child. While most families would pile into a car to drive somewhere, my family would pile into an airplane. And every summer we fly to Oshkosh, Wis., in July for one of the biggest air shows of the year. Now that I’m older, nothing has changed, except my role in helping our family business: Roy Aero Service. Our family restores and maintains all kinds of airplanes. As the Fixed Base Operator (FBO) of the Cook County Airport, we provide service to local and transient pilots. Roy Aero also does maintenance, aircraft modifications, custom paint schemes and upholstery. Throughout the years we have been recognized for restoring three awardwinning planes, and each plane has brought us new customers from all over the country. Many of the planes we’ve restored are antiques from the 1930s, ’40s, and ’50s. The owners bring the planes to us, we restore them.
The first Stinson SR-8 we restored was turned into a Christmas ornament entitled the “Sky’s the Limit” by Hallmark and received the Bronze Age Runner-up award in the antique category at Oshkosh in 1999, competing against nearly 100 other planes for the title. Another plane we restored, a Stinson SR-10, was originally owned by the Shell Oil Company and was flown by CEO Jimmy Doolittle, who was commander of the Doolittle Raid in WWII. This plane received the Reserve Grand Champion award at Oshkosh and was later painted by Sam Lyons, a famous aviation artist, and entitled “Tribute to a Legend.” Currently, we are working on a very rare Stinson (SR9) to present at Oshkosh in 2013. As I’ve grown up, my contribution to the restoration process has grown immensely. While my dad Rodney does all the maintenance, my mom Dottie, my sister Christine and I do most of the fabric work. Most people assume that this only means the fabric inside the plane. But we also restore the airplane’s

us out on the famed Nipigon River. Jim and Amber went in one boat, while Kate and I were paired in another. Kate, who once worked for me and remains a friend, is no stranger to the outdoors, but has little fishing experience. My task was to teach her how to fish. She quickly learned how to use spinning gear as we trolled for lake trout, steelhead and salmon in the river’s strong currents. Then, in a quiet area at the mouth of a tributary creek, she learned how to cast.

Pepe said the newly arriving professionals are attracted the North Shore’s quality of life and outdoor recreation opportunities. Operations such as the sailing charter are already seeing an uptick in business. The boat on which we were sailing was reserved the following day by a group of Australian executives. The next morning, we set off to experience the North Shore’s outdoors. We drove to Marathon, stopping in Nipigon to visit a children’s park themed to the famous book "Paddle to the Sea." By chance, we met two older gentlemen who built miles of local hiking trails along the rims of cliffs towering high above Lake Superior. Outside of town, we stopped at Kate Watson shows her catch from the Eagle Ridge Trout Ponds. a highway wayside atop one of those cliffs for a view of Nipigon Bay and That evening, over dinner in Terrace distant islands. However, fishing’s just luck and Kate had none. While I managed to land two pike and a small lake trout, as well as losing two strong fish that were likely steelhead, she had nary a bite. After a couple of hours we met up with Jim and Amber, both grinning from ear to ear. Jim had caught a sizeable coaster brook trout and a laker, while Amber landed a plump walleye. We trolled for another hour, but poor Kate returned to the landing fishless. We finished our tour at Ouimet Canyon Provincial Park, about 30 minutes east of Thunder Bay. A short walk leads to a cantilevered overlook nearly 500 feet above the canyon floor. To say the view is breathtaking is an understatement. Here our host, Ed Chambers of Dorion, told us something that had become a recurring theme of the trip. Far fewer Minnesotans are visiting Ontario’s North Shore these days. No one can point a finger at the reason for this drop in close-to-home tourism, though it is likely related to the need for a passport at the border, higher Canadian gasoline prices and a strong Canadian dollar, which reduces the buying power of the American greenback. Whatever the reason, the four of us agreed our fellow Minnesotans don’t know what they’re missing.

Speakers will include Barb McCarthy, MPCA’s area coordinator for Subsurface Septic Treatment Systems (SSTSs); Ilena Berg, Cook County water planner; Mitch Everson, septic system inspector for Cook County; and Scott Robinson, an advanced designer/ installer and service provider from Finland. Take-home resources will include the Septic System Owners Guide from the U of MN Extension Onsite Septic Treatment Systems division. Four continuing education credits will be offered to realtors attending the workshop; to obtain these credits a $35 fee will be required. The credits are made available with the assistance of Cook County Higher Education. The workshop also satisfies the education requirement for recipients of a TSSSD cost share grant from MN Board of Water and Soil Resources Clean Water Legacy funds. The workshops are jointly sponsored by Tofte-Schroeder Sanitary Sewer District, MPCA, Cook County Planning & Zoning
and Soil & Water Conservation District, and the Cook County Coalition of Lake Associations.
Septic Sense According to the 'Septic System Owner's Guide," properly designed, installed, operated, and maintained septic system provides economical and effective sewage treatment. If you properly treat sewage today, future generations will not incur the cost of cleaning up the health or environmental problems that contamination may create. A septic system is professionally designed to treat sewage for a specific home, business, or group of properties. Proper treatment of sewage recycles water back into the natural environment with reduced health risks to humans and animals and also prevents surface and ground water contamination. Inadequate treatment of sewage allows bacteria, viruses, and other disease-causing pathogens to enter surface and ground water. Hepatitis, dysentery, and other diseases may result from pathogens in drinking water. Disease-causing organisms may make lakes or streams unsafe for recreation. Flies and mosquitoes that are attracted to and breed in wet areas where sewage reaches the surface also may spread disease. Inadequate treatment of sewage can raise nitrate levels in ground water. High concentrations of nitrate in drinking water can be a special risk to infants, pregnant women, and adults with compromised immune systems. Nitrate affects the ability of blood to carry oxygen; in infants this condition is called methemoglobinemia (blue-baby syndrome). Air quality may also be affected by a septic system; an inadequately vented plumbing system may release odorous or toxic gases into the home.

chef, a position he held for the next three years.

Naniboujou is a nice change for this friendly and outgoing chef. He started in December and worked with the staff this winter to develop a new menu. “I’m using all the ingredients I like to use, and I’ve been trying different things throughout the winter,” he said. “I’d try them out with the staff, and we bounced things off each other and picked the ones for the menu together.”
And it is popular. On Mother’s Day, for example, they served 421 guests for brunch. The new menu includes a great selection of salads, including a barbecue chicken salad (Boston bibb lettuce filled with roasted summer sweet corn, red peppers and red onions, tossed with a chili-lime vinaigrette, and topped with barbecued, marinated Amish free-range chicken). He also has new pasta dishes as well as entrees. Douglass said he likes to use local and regional ingredients in as many dishes as possible. He frequently buys from the Whole Foods Co-op, for example, and gets fresh herring from Joe and Joy Carlson and lake trout from Treg Axtell. One of the perks of being an executive chef is that he can create specials every night, which he does as often as possible. One selection? A seared sea scallop appetizer with celery root purée, diced apples, smoked bacon and fresh thyme. A taste treat, no doubt about it.
