Two local Chefs, Scott and Kelvin have supplied this wonderful recipe which is ever so slightly festive and a good alternative when you are getting sick of the sight of Turkey! It looks and tastes delicious and although seems complicated, if you follow the instructions, it is really easy to create and is sure to impress anyone that you have over for dinner! Salmon en croute. 300g salmon fillet (skinned and pinboned ask your fishmonger to do this for you) 2 egg whites 2 egg yolks and splash of milk for egg wash 100ml whipping cream 2 tablespoons chives salt and black pepper 2 sheets ready rolled puff pastry Buy your salmon fillet as a whole piece as we are going to cut part of it and make it into a moussaline. Slice x2 pieces of salmon on a angle to get 2 supremes about 100grams each and place to one side. Dice the rest of the salmon and place in a food processor along with the egg whites and blitz till well combined, whilst the food processor is on, gradually add the cream. Stop the food processor and scrap down the moussaline from the sides and sprinkle a good pinch of salt and freshly ground pepper. Re whizz. Turn out into a bowl and fold in the chives. The moussaline should be quite firm and not runny.

To serve
50g dried wild mushrooms 1 shallot 1 clove garlic 75ml sherry or madeira 200ml whipping cream salt and pepper Parsley

Book Review Hope & Glory by Stuart Maconie

Stuart Maconie is probably best known as a broadcaster and radio DJ and currently hosts two shows on BBC6 Music. As a columnist he’s written for such diverse publications as Q magazine and the NME, the Daily Telegraph and The Oldie. But he’s also built up a big following for his quirky travel books – books which are as much about people as places and which co-incidentally tell you some of the best venues for a teacake or bacon butty in the land. The latest volume is Hope and Glory, A People’s History of Modern Britain. He’s taken events from each decade of the 20th century and tells us about the people who made them happen and the communities they came from – from the miners of Orgreave to Sid Vicious and the punk version of God Save the Queen, from Sir Edmund Hilary and Welsh mountain pubs to the suffragettes in North Manchester. As he describes in his introduction, it’s quite a trip, “full of sex and violence and the occasional scone and jigsaw.” It’s a witty (and sometimes moving) read. At times he’s laugh-out- loud funny, sometimes he’s passionate, sometimes he provides dry insights from the sidelines. You’ll never be bored even though he may reduce you to tears – of one kind or another. Even a chapter on football – the kind of thing which would make most of us run for cover (unless we’re supporters of Liverpool or Notts Forest) - manages to be engaging. The Observer newspaper compares him to Bill Bryson and George Orwell. Maybe Stuart Maconie is good enough to simply be himself.

16 This month we go back to our roots with a variation on our very first walk. The walk begins in Riddings Park and takes you along the old Pinxton canal path and along a small stretch of the River Erewash. The walk is best done in a pair of wellies as there is a small stream to cross and is best enjoyed when the weather has been dry as it is prone to flooding in parts. The route will take about 2 1/2 hours. It is a fairly even walk but the terrain can be slippery and boggy so a good pair of wellies may be handy 1. The walk begins in Riddings Park. There is parking by the community centre entrance on West Street and at the end of Shaw Street both of which are off or near Greenhill Lane. 2. In Riddings Park head towards the bottom field which can be reached by a stile in the far corner of the cricket pitch or through an entrance in the fence located off the path in the wooded area. Take a gate at the bottom right hand corner of this field and head right along the footpath. Carry on along the footpath as it becomes a road (park Mews) with a wall on the left. At the end of the road turn left onto Church Street 3. Walk on past the Seven Stars and Moulders Arms public houses before taking the first left onto Spring Road and then the first right onto Nottingham Road. Carry on down Nottingham Road for 700 meters. Past a row of houses on your left there will be a short wall then a entrance onto the Pinxton Canal Path through a green metal barrier. The canal path is a soil path and lightly wooded. 4. Walk along the Canal Path past the Pye Bridge Pond. Just after the signed exit from the canal path, take a left up a set of steps to cross the Main Road and through a gap in the wall on the other side, down a set of steps and back onto another lightly wooded soil path. 5. Walk along this path until you approach a rail bridge. At the bridge turn left along the path which has a metal fence on the with every purchase of right hand side. Millers Complete Dog Food 6. This is a single track grass path, which may be a touch muddy if it has been wet recently, which takes you along the side of the rail track.

7. Carry on along this path for around 750 meters and then cross a fence stile which brings you our onto a wide stone path next to a bridge. Turn right under the bridge and follow the path until you pass under another bridge after which you will turn left onto another path. 8. Carry on along this path until it exits onto a wider open area and then crosses another track. Turn right onto the other path. A short distance along this path it rises up to bridge the river Erewash, Take a track to the right befo.re this, that takes you alongside the river. 9. Follow the track that runs alongside the river. Pass through a gap in a fence by a small wooded area. Walk on until the trees end and the path splits. Take the path to the right across a stream and follow it as it curves around to the right before taking a path to the left. 10. Carry straight ahead and down the small bank over the Smotherfly canal and back up the other side. Turn right heading up towards the railway track and take a gap in the fence on your left to pass under a railway bridge to bring you back to point 5. Reverse the early instructions from here to return to the start. This walk is for illustrative purposes only. DVD Review Ted (15)
This month sees the release of the funniest film I have seen in quite some time. Not that it will be everyone's cup of tea but if you’re a fan of Family Guy or you have funny bone that is tickled by crude, rude and lewd comedy than this is probably right up your street! Ted (Seth MacFarlane) came to life as the result of the wish of a lonely little boy, John Bennet but eventually that little boy grew up and so did Ted (figuratively at least) to become a beer swilling, womanising, party animal whose behaviour is threatening to ruin Johns (Mark Wahlberg) relationship with his girlfriend Lori (Mila Kunis). A note to all parents when deciding whether to let your teenage children watch this film—There’s probably nothing in this film that is worse than they will hear in the playground but expect to hear the jokes and see the accompanying actions a thousand times over Christmas! Not for the feint hearted but there is also an extended version for those who loved it at the cinema and wanted more!

You can keep herbs such as parsley and chervil going in the garden for quite a while by putting cloches over them. Greek oregano in pots needs to be inside if possible, but with all low growing herbs and sedums try to remove dead leaves – damp rotting foliage is likely to damage them and make a home for pests. Container grown herbs can be at least partly protected if you cluster them against house walls for protection and fleece against frost. There have been quite a few cheap, very young acers on sale this year. If you’ve got them in pots on the patio it’s worth trying to put them somewhere a bit warmer like a cold greenhouse – at least into as sheltered a spot as you can find. Cordylines have also been increasingly popular but need winter protection. Tie up the leaves to protect the centre especially if there’s any snow about – it will bend the leaves back and leave the growing core vulnerable. It’s probably also worth fleecing them, but watch out for wet and rot. This is a good time to propagate perennials such as phlox, verbascum and oriental poppy – all those with fleshy roots. Dig around the parent plant and cut roots which are about the thickness of a pencil into 3 inch lengths then lay them into trays of compost and grit – about half and half. Cover with a further four inches of compost and put in a cold frame (or even a frost free greenhouse). Keep just damp over the winter and you’ll have new plants in spring.

Festive Advice from your local neighbourhood team We would like to take the opportunity to advise people about staying safe in their homes, particularly around when an unexpected caller appears on the doorstep. While most people who call at your home will be genuine, it’s important to remember there some callers who will turn up unannounced may have the intention of tricking their way into your property. Bogus callers are the people that claim they are 'calling from the water board', 'checking the gas meter', or they may ask to use your phone or the toilet. They may work in pairs and while one person distracts the homeowner, the other goes into the house through another unlocked door or window. Our advice is to always be sure the caller is who they say they are before letting them in. Genuine callers will carry identification and won’t mind you asking to see it; representatives from water, gas and electric companies are unlikely to call without an appointment. If you are not sure then don’t open the door, ask them to return another day when you have a trusted relative, friend neighbour on hand. Install a door chain and use it. Keep the door on the chain until you’ve seen identification and remember to lock the back door before opening the front. Most importantly, don’t be pressured into letting someone into your home if you have suspicions. If you feel intimidated or have any suspicions about the caller then close the door and call the police. Christmas is just about on us and the annual break up day festivities are due, you know the day, when the pubs are full of people who don't drink all year, but think that they can down 10 pints and still stand up.
