Mexican corn casserole Serves 4 - 6
This time saving meal combines spicy flavours, melted cheese and sour cream, and is always a hit. Ideal for a quick and easy supper when you’re short on time and energy.
Variation: To serve as a vegetarian dish, substitute the mince with 1 - 2 aubergines, diced in small cubes. Or use a can of kidney beans instead.
250 g lean beef mince 1 onion, chopped 2 cloves of garlic, crushed ½ each red and green pepper, seeded and chopped 5 ml curry powder 10 ml ground coriander 2,5 – 5 ml cayenne pepper or 1 small red chilli, seeded and chopped 410 g (1 tin) tomato and onion mix 10 ml red wine vinegar (or vinegar of choice) 5 ml sugar
340 g (1 tin) whole kernel sweetcorn, well drained salt and freshly ground black pepper to taste 100 g plain or spicy corn chips 250 ml sour cream or Bulgarian yoghurt 100 g (250 ml) cheddar cheese, coarsely grated 75 ml fresh, chopped chives or parsley
1. Heat an AMC 28 cm Chef’s Pan over a medium temperature until the Visiotherm reaches the first red area. Brown the mince and loosen with a wooden spoon. Spoon out and set aside. 2. Add onion, garlic and peppers to the pan and sauté until soft. Add spices and fry for 2 – 3 minutes. 3. Add tomato mix, vinegar and sugar and mix through. Add the mince to the mixture, reduce

Pot-roasted chicken with vegetables

By pot-roasting and cooking over low to medium temperatures, you save electricity and ensure a juicy, tender end-result. 1,2 – 1,5 kg whole chicken salt and freshly ground black pepper to taste 2 onions, halved and quartered 4 – 6 garlic cloves, peeled 10 -12 baby potatoes, halved if needed 1 medium sized sweet potato, cubed 500 g veg of your choice, chopped
1. Heat an AMC 24 cm Gourmet Dome Roaster over a medium temperature until the Visiotherm reaches the first red area. 2. Place chicken in roaster and brown on all sides. Season to taste and remove from cookware. 3. Add onions and garlic and sauté for a few minutes before returning chicken to cookware. Cover and allow Visiotherm to reach first red area again. Reduce heat to a low setting and cook for 30 minutes. 4. Add remaining vegetables and cook for a further 15 minutes or until chicken and vegetables are cooked through. Season to taste and serve with a green salad.
Tips: To test if the chicken is cooked through, insert a kebab skewer into the thickest part of the thigh. If the juice is still pink, cook for another 10 – 15 minutes. If it’s clear, then the chicken is cooked.
