Amelia Island is deservedly known for the variety and vitality of its non-profit organizations. From the Boys & Girls Clubs of Nassau County to Micah’s Place and the Nassau Humane Society, the plethora of local organizations in many ways constitutes the heart of the island. Over the years, we have enjoyed watching recent retirees arriving on Amelia Island embark on a second career in charitable work that probably rivalled their primary career in the hours and energy devoted to it. We are grateful for the time and treasure so many talented people have contributed to helping those in need in our community. A few months ago, I got an email from Cindy Jackson of Bijoux Amelia on Centre Street to catch me up on the latest about the two Rotary clubs active on Amelia Island. Cindy is president of one of them, the Rotary Club of Amelia Island Sunrise. The other club is the original Rotary Club of Fernandina Beach, chartered in 1926, which sponsored the Sunrise club in 2007. After doing a little research, I quickly realized how many different ways Rotary is involved in our community. Rotary is the largest service organization in the world, founded in Chicago in 1905 by four businessmen who wanted to create a resource network and ended up using their resources to serve the community. Today, Rotary has 1.2 million members worldwide. Its motto is “Service Above Self.” At a time when many non-profits focus on addressing one particular issue, Rotarians seem to have a hand in everything, from providing college scholarships to eradicating polio. The two local clubs have raised money for Rotary’s international End Polio Now program, provided resources for disaster relief around the world through the Shelter Box program, supported numerous local charities, and provided Dollars for Scholars scholarships at Nassau County’s four high schools, among other things. One of the main fundraisers of the Fernandina Beach club to support Dollars for Scholars is the annual family-friendly basketball game between the Harlem Ambassadors and the Nassau Nets at Fernandina Beach High School, coming up this month on February 26. The Amelia Island Sunrise club’s big fundraiser is its annual Wine and Food Tasting, featuring outstanding food and wine with music by Crescendo Amelia, which returns this year on March 5. Don’t miss these fun community events, and take some time to learn about all that Rotary accomplishes in our area. In addition this month, we offer some real-life Amelia Island love stories to celebrate Valentine’s Day; take a look at Franciscan Earth Corps, a new Nassau County charitable group; a “Fernandina Faces” profile featuring Phil Scanlan; a vegetarian picnic in “Island Entertaining;” and much more. I
n 1905, in Chicago, Illinois, an attorney named Paul P. Harris wanted to create a professional group with the same friendly spirit he felt in the small towns of his youth. He gathered together three friends, Gustavus Loehr, Silvester Schiele, and Hiram Shorey, for a meeting at Loehr’s office in Room 711 of the Unity Building in downtown Chicago. Thus began the first Rotary club meeting. Originally, the group was meant to be a way that businessmen could connect with each other and share their resources, and they decided to call the new club “Rotary” after the practice of rotating meeting locations. As Rotary grew, members pooled their resources and used their talents to serve their communities. The organization’s dedication to this ideal is best expressed in its motto: “Service Above Self.” Within five years, clubs had formed across the country, from San Francisco to New York. In August 1910, Rotarians held their first convention in Chicago. The sixteen clubs that existed at that time united to form the National Association
of Rotary Clubs. In 1912, the name changed to International Association of Rotary Clubs to reflect the addition of clubs in other countries. The name Rotary International was adopted in 1922 and by July 1925, Rotary had grown to more than 2,000 clubs and an estimated 108,000 members on six continents. Rotary’s reputation attracted presidents, prime ministers, and a host of other luminaries to its ranks, among them author Thomas Mann, diplomat Carlos P. Romulo, and composer Jean Sibelius. Today, Rotary has 1.2 million members worldwide. Amelia Island is home to two Rotary Clubs: Rotary Club of Fernandina Beach and Rotary Club of Amelia Island Sunrise. The former has been in existence for ninety years; the Sunrise club was born of the original club. “Our club grew to nearly one hundred members,” says John Boylan, president of the Rotary Club of Fernandina Beach. “We sponsored the new group and encouraged them to expand. As a result, we have two strong groups on the island.”

Rotary, the largest service organization in the world, strives to “do good in the world,” according to Cindy Jackson, president of the Sunrise club. But part of that approach begins with doing good in the neighborhood. “Rotary connects people and opens doors,” says Jackson. “Many of our members are on the boards of local non-profits. In this way, our group is made aware of the needs of the community and can perform muchneeded community service projects, in addition to national and international endeavors.” One of the most important and groundbreaking projects was Rotary’s commitment to eradicate polio throughout the world. “Since 1985, Rotary members have helped immunize more than 2.5 billion children against polio,” states Boylan. “Today, all but two countries are free of polio, those being Pakistan and Afghanistan. Africa is completely polio-free.” Another project supported by local Rotary groups is the Shelter Box program. “Our group has funded twenty-three Shelter Boxes, which is a large box delivered to places around

the world where disasters have occurred,” says Boylan. “Each box provides food, water, bedding, clothing, and the like, which will sustain ten people for two weeks. Each box costs $1,000. We have funded boxes nationally and internationally, for people who are victims of disasters like the Indian Ocean tsunami and Hurricane Katrina in New Orleans.”
THE ROTARY CLUB OF FERNANDINA BEACH The Rotary Club of Fernandina Beach meets every Wednesday at noon at the Florida House Inn. The club was founded ninety years ago to serve the Fernandina Beach-Amelia Island area. Its members are local business and community leaders from a variety of professions, offering members the opportunity to be involved in local and international service. Since it was chartered in 1926, the club has dedicated itself to numerous projects, including raising more than $130,000 for the Rotary Foundation’s End Polio Now program; distributing more than $300,000 in college scholarships to area high school

graduates; working with the Rotary Youth Exchange Program to host students from other countries so that they can live and study in the Fernandina Beach area; and sponsoring local students who wish to study overseas, all to promote world peace and understanding. “Our fifty-six members are a diverse group,” says Boylan. “We do some of our community projects on our own, and partner with other Rotary clubs and nonprofits, too.” Just a few of the recipients of our club’s donations include Nassau County Humane Society, the Council on Aging, Take Stock in Children, and many more.” Since 1966, the Rotary Club of Fernandina Beach has sponsored the Fernandina Beach Interactive Club of Fernandina Beach High School. “The students concentrate on school and community projects,” says Boylan. “These include a Kids Carnival in Central Park. The Interact Club has 50 to 100 members, and is one of the oldest of the school’s clubs.” Boylan goes on to note that encouraging youth to participate in service projects makes them more compassionate adults. “We also provide financial support to Fernandina Beach Boy Scout Troop 89, and deliver over eight hundred dictionaries
to every third grader in Nassau County. We’re hoping that our future will include an endowment program for our College Scholarship program. While we work on our current service projects, we are always looking toward future projects.” Shannon Brown is an Assistant Area Governor, serving five area clubs. Her assignment lasts three years, and the culmination of her term will be when she serves as Area Governor in her third year and assists the District Governor, who serves all of Northeast Florida. “What I have gained from Rotary is a network of business professionals and friends, but even more, an opportunity to be part of a group of folks who want to do good in the world by working together, setting aside politics, religion, and other issues that sometimes divide people,” says Brown. “The youth programs drew me to Rotary because my children befitted from them before I was ever a Rotarian. I wanted to be a part of an organization that cared about kids here and abroad. Rotary touches our local youth throughout their school years and beyond, and we hope it encourages them to give back in the future.”

Each year, the Fernandina Beach Rotary Club sponsors the Harlem Ambassadors for a family-friendly basketball game held at the Fernandina Beach High School gymnasium. The Ambassadors take on the Nassau Nets to raise money for the club’s Dollars for Scholars program. “This scholarship program benefits all four high schools in Nassau County,” says Brown. “We have raised over $335,000 in the past twenty years. This is a very important fundraiser that allows high school seniors to continue their education.” The event will be held on February 26 at 7 p.m. Tickets are $10 for adults and $5 for students. THE ROTARY CLUB OF AMELIA ISLAND SUNRISE The Rotary Club of Amelia Island Sunrise was founded in November 2007 with thirty-two chartering members. It was sponsored by the Rotary Club of Fernandina Beach. With thirty-five members at present, the club meets at 7:30 a.m. on Friday mornings at the Fernandina Beach Golf Club, hence the name “Sunrise.” Some of the non-profit organizations the Sunrise group has supported are Empty Bowls, Healthy Start,

Amelia Community Theatre, Arts Alive Nassau, Wolfson Children’s Hospital, Micah’s Place, Barnabas, Hope House, Amelia Island Museum of History, and many more. In addition, Sunrise holds numerous field trips and social events in order for their members to get to know each other better. “We had a progressive dinner at Christmas, and in February we plan to tour a submarine at Kings Bay,” says Jackson. “We also have the opportunity to attend the international conferences, where we meet Rotarians from all over the world. Everywhere we go, we see signs of Rotary and the good they do.” Art and Theresa Schuster have been involved in Rotary for many years. They are members of the Sunrise club, where Art holds a board position as Foundation Chairman, and Theresa works as Club Administrator. Both are past presidents of other clubs, and also worked on the district level. “I got involved in Rotary twenty years ago when I was living in Georgia,” says Art. “I wanted to contribute to the community; that was important to me. But I also wanted to be part of solving the world’s issues. By attending worldwide conferences, meeting and connecting with people internationally, that is how we can bring about a sense of peace to the world.”

“I wanted to be part of something bigger than myself,” says Theresa. “As one person, I can only do so much. But as a group we can do monumental things, like the eradication of polio.” Theresa also worked on a special Rotary project when she was a member of the Orange Park Sunrise club called “Honor Air.” “We took World War II veterans to Washington, D.C. to see their memorials. It was very emotional, and the interaction with these vets was something I will always cherish.” The Amelia Island International Wine and Food Tasting has been the major fundraising activity in the club for the past three years. “This year’s event, our fourth annual, will be held on March 5 at the Coastal Aviation Hangar at the Fernandina Beach Municipal Airport,” says Jackson. “Over the past three years, this event has benefitted Wolfson Children’s Hospital and Arts Alive of Nassau County. In total, the club has raised and donated over $100,000, receiving grants from the Rotary District to supplement the club’s contributions. Our goal this year is to the help the Friends of the Fernandina Beach Library build their new tech center.” The fourth annual Wine and Food Tasting features wines provided by Wine by Steve, and donations from local restaurants. Crescendo Amelia is providing the music, and
“Throwback to the 1940s” is the theme. Tickets are $125 per person for the VIP event beginning at 5:30 pm, or $65 for the Premier Event beginning at 7 pm. Rotary International’s purpose is to bring together business and professional leaders in order to provide humanitarian services, encourage high ethical standards in all vocations, and to advance goodwill and peace around the world. There are 34,282 member clubs worldwide and 1.2 million individuals called Rotarians have joined these clubs. DUKE UNIVERSITY CHORALE RETURNS TO AMELIA PLANTATION CHAPEL The Duke University Chorale returns to Amelia Plantation Chapel on March 16 at 7 p.m. The primary choral group of the Department of Music at Duke, the Chorale performs numerous concerts throughout the year and tours annually during Duke’s Spring Break. In previous years, the Chorale has toured China, Italy, Austria, Hungary, Poland, the Czech Republic, England, Wales, Mexico, and many parts of the U.S. The Chorale’s repertoire features both sacred and secular music ranging from the Renaissance to contemporary works, and from unaccompanied works to pieces with piano and other instruments. The Chorale has performed major works in recent years with the North Carolina Symphony and other orchestras, including the Verdi and Brahms Requiems, Bach’s Mass in B Minor, Haydn’s Creation, Carl Orff’s Carmina Burana, and Duke Ellington’s Sacred Concert. The Chorale has been conducted by Rodney Wynkoop since 1984 and is accompanied by Kisun Lee. Wynkoop is also Director of Chapel Music and conductor of the 100-voice Duke Chapel Choir. The Boys & Girls Clubs of Nassau County 9th Annual Benefit, the Sweetheart Gala, will be held on Saturday, February 13 at the Ritz-Carlton, Amelia Island. This outstanding social event features a concert performance by William Joseph who, as a piano prodigy at age 8, was awarded a full music scholarship by Boys & Girls Clubs of America, and received rave reviews when he performed at the BGC benefit in 2010. rtist Susi Sax and a friend were taking a walk down South Eighth Street one day when she was drawn to a retail building that wrapped around one of the most beautiful oak trees she had ever seen. Born with the eye of an artist, Sax knew immediately that was the place she wanted to open her new gallery. She named it the Oak Tree Gallery. Sax is no stranger to the Amelia Island art world. She and her late husband, Sid, also an artist, owned a business called “Designs On” for nearly twenty years. She was also a member of the Island Art Association for twenty years. But Sax is a visionary, and she wanted to start something new. “When I saw this building, I envisioned a whole art complex, with working artist studios, plus art classes, and even crafts, anything creative that would bring people together,” says Sax. “There’s even space to work outdoors, and places for artists to have their own booths during special Amelia Island events, like the Shrimp Festival.” Sax became an artist when she was five years old, cutting holes in her
grandmother’s curtains to get a better view of the hallway. She went on to attend the Ringling School of Art in Sarasota, and then the University of Miami, where received her art degree. She landed a job as an X-ray technician at Community Hospital in Miami, where she worked for many years, using her artistic talent drawing medical illustrations. Today, Sax’s mixed media art is ever-expanding, including watercolors, acrylics, fused glass, stained glass, etched glass, photography, mosaics, and silks. She also does large-scale etched glass commissions for businesses and residential homes. The Oak Tree Gallery carries a selection of her own work, along with her studio, plus the work of local and visiting artists. Also featured are several of Susi’s late husband’s prints, her Amelia Island favorites. The Oak Tree Gallery is located at 432 South Eighth Street. hirteen years ago, Nicola Nichol, CFA, discovered Amelia Island when she was exploring the East Coast on her sailboat. A short year later, she relocated to the island, working for UBS and Merrill Lynch in Jacksonville. In celebration of Valentine’s Day, we present some inspiring tales of love we uncovered amongst our Amelia Island friends and neighbors. BY JULIE SIMMONS
y little girl came home giggling, “A boy told me I llooked nice today!” It made me blush a little as I rremembered the day in grade school when I had rreceived a notebook paper ball love note with the classic “check yes or no” boxes on it. Each of us have our own special Valentine’s Day tales, and here on Amelia Island we’ve discovered a surprising number of beautiful love stories hidden beneath the everyday lives of our neighbors and friends. Take, for example, Liz and Chris Pipes, my neighbors, who in a class photo from kindergarten are a chubby little boy, sitting Indian-style in Oxford saddle shoes, and a cute little redhead standing behind him. “We started our relationship sharing a snowflake together at age five in Bartow, Florida, and we’ll celebrate our fortieth anniversary this year here on Amelia Island,” reminisces Chris. Liz and Chris understand the importance of quality time together. On any given morning, you can see the two of them
out for a walk with a cup of coffee and their little Schnauzer, Pickle. “I goofed up a few years back and thought it was our twenty-fifth anniversary and booked a grand trip to Puerto Rico,” Chris smiles. “The funny part was that it was only our twenty-fourth,” laughs Liz. “We went anyway and had lots of fun. We truly enjoy each other’s company, and time with our 27-year-old son, Matthew.” “Just like Liz was standing behind me in that kindergarten picture, Liz has stood by me through thick and thin ever since,” says Chris. “Every Valentine’s Day, I bake a heart-shaped cake and we reflect on our journey together.” Another Amelia Island love story is Carolyn and William Dobrosky. Carolyn graduated from Fernandina Beach High School in 1956. “My mom was working at Seaside Inn (now called Sliders) over the summer before starting college,” says continued on page 53.

everal years ago, Katie Rewa made an unexpected visit to a landfill to drop off some water-damaged dry wall from her new house. She arrived in tears for her home, but she left with tears for her bigger home. “A visit to the landfill is an eyeopening experience. I couldn’t count the number of plastic bottles and containers that I saw, the furniture that couldn’t be hidden under that man-made hill of trash. Sea gulls pecked at plastic trash bags that smelled worse than I can describe. As we left, I cried because I realized how mankind was ruining our larger home, the earth God gave us.” That sad day was pivotal for Katie because it provoked a transformation in her. “I decided, ‘I want to live right.’ Initially, I focused on becoming more earth-friendly, but through the journey, it led to a deepening of my spirituality and my desire to serve the community,” says Katie. Nassau County is the beneficiary of Katie’s awakening. Today, Nassau Transit bus riders in Yulee now have a comfortable place to sit while they wait for their ride thanks to Katie’s group of local volunteers, who met last November at Family Support Services of North Florida’s Nassau County Office and constructed a pair of benches and planters from recycled wood. “The clients of Family Support Services who
use this stop are folks trying to get their lives together,” explains Katie. “To have to sit on the curb while they wait only increased their self-esteem issues.” The group of young volunteers who built the benches are part of the new Franciscan Earth Corps (FEC) chapter in Nassau County, supported by St. Francis of Assisi Catholic Mission Church. Nationally, FEC inspires its local chapters to take action, encouraging its members to pick a green project or a local charity to help, or join one of the network’s many social and ecological justice projects. Volunteers are then encouraged to connect their activity, whether community gardening, hiking, or advocating for justice, to spiritual reflection. The FEC is inspired by St. Francis of Assisi, founder of the Franciscan Order, who was renowned for his commitment to peace and to serving the less-fortunate, particularly the poorest and most vulnerable around us. Pope Francis esteemed St. Francis so much that he chose Francis as his papal name in honor of the saint. Pope Francis has described St. Francis as “the man of poverty, the man of peace, the man who loves and protects creation.” These characteristics are what inspire Nassau County’s FEC volunteers. continued on page 66.

P
hil Scanlan is passionate about Amelia Island and its quality of life. Since moving to the island in 1997, Phil has been involved in maintaining and improving the things that residents of Amelia Island treasure. His involvement in a variety of island non-profits has made a measurable difference in the everyday life of the island. Phil and his wife, Jane, found the island while on their honeymoon, staying at the Elizabeth Pointe Lodge. They fell in love with the island and committed to a house on their very first visit. From there, they never looked back and embraced the island with great enthusiasm. Both Jane and Phil were employed by AT&T. Phil served as Quality Office Vice President. He was instrumental in developing AT&T’s renowned quality library. He served as founding member and chair of Quality New Jersey, has served on the Malcolm Baldridge Foundation, as well as the Center for Marine Advisory Board. Mention dolphins and Phil smiles. By the end of the 1980s, the once beautiful New Jersey coast had become one of the most polluted stretches of beach in the United States. Beaches closed as pollution increased. It took the dramatic deaths of a thousand bottlenose dolphins, whose bodies washed up on beaches up and down the eastern seashore, to bring action. Phil published a book, The Dolphins Are Back, which describes how the dolphins and their marine environment were saved. Using a model he continues to employ, he brought together leaders in business and government with committed private citizens to begin the process of attacking the problem. One of Phil’s first projects on Amelia Island was to create an alliance of homeowner’s associations, which could then as a group consider and act on issues that had an impact on the island. Involvement in various Amelia Island non-profit organizations has helped and continues to help Phil make the connections that have ultimately evolved into coalitions that
could get things done. Perhaps the most impressive of Phil’s many achievements is the creation of the Friends of Amelia Island Trail. He serves as its chief executive officer. Not content with the establishment of 13 miles of trails available to walkers, runners, and cyclists, he continues to improve and build upon the trail’s strong foundation. Phil lost his wife, Jane, to cancer, but he has maintained his passion for the things they both loved and shared. He enjoys the many-faceted creative offerings on the island, including the theaters and music events from classical to jazz. Each day, Phil can be found either on his bicycle or with a tennis racquet in his hand. He was instrumental in the creation of the Kraft Tennis Partners group, who created a viable option for players when The Ritz-Carlton, Amelia Island closed its tennis courts to the public. What does the island’s champion see in the future? Eventually, he hopes bicyclists and runners will have available over 15 miles of continuous multi-use trail for their use. These trails are also destined to become part of the East Coast Greenway (www.greenway.org), which is planned to run from Calais, Maine to Key West, Florida. blooming bushes While your garden enjoys a winter’s nap, consider new bushes like Funky Fuchsia and Groovy Grape to add spring color to your landscape. BY BETTY MORRELL

ebruary has arrived with its colder weather, and our plants have finally settled down to a winter nap. However, you can never tell, some may start blooming tomorrow, so be sure to keep the tender ones protected from the frost, if we have any. Last issue, I was telling you about some amazingly beautiful Buddleia bushes. To refresh your memory, I told you about the Funky Fuchsia, with its rich reddish pink and fragrant inflorescences. Another one I want to mention is the Groovy Grape, which has a rounded-to-upright habit with arching eight to ten inch long rich, violet-purple fragrant flowers. The bush grows six to ten feet tall and up to eight feet wide. It likes full sun. Last but definitely not least is Psychedelic Sky, which is more compact and grows only four to six feet high, with the same width. It is similar in habit and flower display to the Funky Fuchsia. Psychedelic Sky has clear blue flowers on upright stems. The fragrant flowers are six to eight inches long. They have an upright habit, and tidy like the
TIP O F T HE M O N T H Start cleaning out beds of unwanted leaves and weeds now to make next month’s full clean-up easier, but be careful of any emerging bulbs. In dry weather, give them a little water and Milorganite to strengthen the root system. Do not fertilize Azaleas while in bloom.
Funky Fuchsia. These plants are all bred by Plant Introductions, Inc. Another very interesting plant is the Cayenne Dogwood (Cornus amomum ‘Cayenne’). This native selection shrub stands out because its bright red stems shine all winter. Fresh green foliage looks good all summer long, and porcelain blue berries form in late summer. In the fall, it has a lovely orange-red color. Cayenne appears to be disease resistant, as well as canker resistant. Like its cousins, Cayenne is well-suited to moist soil and works well in shrub borders or massed in moist areas. This is another new bush that likes to be in full sun.

Now, let’s get back to the Crape Myrtle collection. Two new ones worth mentioning are the Coral Magic Crape Myrtle and the Plum Magic Crape Myrtle. Coral Magic is an exciting development in Crape Myrtle breeding. It forms a beautiful, rounded, dense shrub loaded with salmon-pink flowers in early summer. The foliage is glossy and reddish in color, eventually turning dark green. It grows in the full sun and reaches a height of six to ten feet, with the same width. The Plum Magic is a semi-dwarf form of Crape Myrtle, blooming in early summer with fuchsia-pink flowers. It forms a rounded shrub with a dense full shape. The foliage emerges plumpurple in color and eventually matures to a rich dark green, nicely setting off the bright flowers. It will bloom again in late summer if the first burst of blooms are deadheaded. Plum Magic is perfect for foundation plantings, as well as in an informal hedge. ack Shaw was studying pharmacy at the University of Georgia and trying to put himself through college when his brother, then an exterior and interior trim sub-contractor, invited him to help out on a few jobs. “Helping my brother, I discovered a passion for making things beautiful,” says Jack. Not only did this experience ignite a passion, but it also trained Jack in the skills of the trade. “My brother taught me how to deliver quality construction that lasts.” But little did Jack suspect that when he retired he would come full circle back to the work that underwrote his college education and work a few of his own construction projects! After graduation, Jack began a successful thirty-year career in the healthcare industry, selling and ultimately managing sales teams for pharmaceutical companies. “Not too long after being in the industry, I missed working with my hands, so I began to purchase and remodel homes on the side,” Jack explains.

In the meantime, he met his wife, Tiffany, and they had a son, Jackson, now twelve. In 2001, the couple constructed their primary residence on the river overlooking Nassau Sound. Tiffany’s father, an architect, drew the plans for the home, and Jack supervised the design, managed the construction, and completed all carpentry and trim work. In the following years, the couple purchased several single-family homes, which Jack single-handedly remodeled, and the duo now leases them. “The
difference in what I do is that I refashion these properties as if they were my residence, with quality materials, custom trim, and the attention to detail that makes this an art for me.” Jack retired in 2013 and shifted his focus entirely to his rental business and remodels. Last year, the couple came across a unit at Amelia Surf & Racquet Club and decided to pay it a visit. “The wind was blowing out of the northeast that afternoon, and the place was literally howling, with gales

coming through every window in the home,” Jack remembers. “The particle board cabinets were delaminating in the kitchen, and the butcher-block countertops were a mess. This would be my first condominium project, and the challenge of a new endeavor excited me.” And so the demolition began! Jack took out every baseboard, piece of tile, cabinet, and all the plumbing in the unit, including the dated, pre-fabricated shower/tub combinations. “I wanted a full walk-in shower in the master, so
I eliminated the need for a hot-water heater closet by leveraging new tankless water heaters. This provided the space to expand the bathroom.” The new shower tile is beautiful. “When we look at homes to remodel,” Tiffany adds, “Jack notices every single tile, even if it’s an eighth-ofan-inch off. He’s so meticulous at that level of detail, and that’s what makes his work turn out so beautifully.” Jack was also creative on other features of the house to take advantage

He also relied upon the skills he learned from his brother to construct a home that will last. “The unit is built with metal studs, and it’s tough to securely fasten materials into that surface. To ensure we had solid attachments, for example, in the entryway, I tore out the entire wall and installed pressure-treatedwood, creating a strong backing to secure the bead board.” The Shaws are thrilled with their finished home. “I had a lot of fun
decorating,” Tiffany shares. “Even Jackson got in on the fun, critiquing a chair rail placement and offering a better suggestion.” Today, it’s a bonus that the family gets to enjoy the latest project. Jackson received a surf board for his last birthday, and he and his Dad are enjoying time together on the waves. Of course, Tiffany and Jack relish relaxing on the back porch, watching the ocean and starting off each day with a beautiful sunrise.

Love continued from page 29. their daughter, Dina Dobrosky Martin, “and Dad was staying at the Inn while working temporarily for Rayonier. She was a server and waited on him only about two times before he asked her out.” On one of their first dates, the couple went to see Elvis Presley at The Florida Theatre in Jacksonville. A short month later, he proposed, and another month later, they married, honeymooning in Key West and Cuba. “They settled in Fernandina Beach, a town they love, surrounded by family and friends, to raise their three sons and one daughter—me,” smiles Dina, whom many know from her children’s store, Monkey Barrel. Today, the Dobroskys still enjoy date nights in Fernandina Beach and time with their seven grandchildren. Dina, with the example of her parent’s sixty-year-marriage, knew a good man when she saw one. Her husband, Roger, now a local realtor, had been invited to speak at a women’s Bible study Dina was attending. He joked that night about how lucky he was to be a single guy in a room full of so many beautiful ladies. “The girls all laughed and turned their heads to me in the back of the room,” Dina remembers. “They’d been trying to set us up for months.” Ironically, that same evening, the two ran into each other at The Surf Restaurant and realized how much they had in common. As the night ended, Roger asked for Dina’s phone number. “I told him I don’t give that out,” she confides. “But before I got home, he left a message on my machine saying, ‘If you’re going to play hard-to-get, you’re going to have to give me something harder.” Roger, a smart man, had looked her up in the phone book. In 2004, the couple married at St. Michael’s Catholic Church, where her parents had married, and like them, their faith has remained at the center of their lives, sustaining their relationship. oe’s 2nd Street Bistro is located in the heart of Fernandina Beach’s historic district, in a restored 1900s home that is filled with flavor. Chef Ricky Pigg and his wife, Mari, welcome guests into their restaurant as if they are family, and patrons claim that eating a meal at Joe’s is like eating in a chef’s home. I invited my friend Sherry to join me at Joe’s, and it was a delight to visit with Mari and Ricky, and taste some of their new menu offerings. Our server Tanner suggested I try a glass of Staffelter Hof Riesling, a white wine that is crisp and clean on the palate with a kiss of sweetness. Sherry tried a glass of Lincort Chardonnay, a white with bright and vibrant acidity, and served at the perfect temperature for Chardonnay. Chef Ricky brought us a new item on their menu, Tuna Martini, a combination of raw tuna, mango, avocado, pineapple, lime, red onion, ginger infused oil, and cilantro. It was served in a beautiful martini glass with a stack of homemade crispy wontons. What a light and refreshing appetizer! We also shared the Wedge Salad, a quarter head of iceberg lettuce topped with sherry onions, applewood smoked bacon, diced tomatoes, and topped with gorgonzola vinaigrette. Everything about this salad was perfect, and especially the dressing, which is a much better accompaniment than a traditional bleu cheese dressing. For our entrees, I tried Cajun Carbonara, a pasta dish with a smooth, cream-based Creole sauce with Andouille sausage, roasted shallots, applewood smoked bacon, and egg. This dish was incredibly rich, and Chef Ricky really has a way with flavor combinations. For Sherry, Tanner brought Risotto Milanese, a dish made with fresh sautéed shrimp, calamari, scallops, and vegetables, tossed in a saffron broth risotto. An amazing dish,
and it’s always a good night when saffron is on the menu! The seafood was cooked to perfection, and we enjoyed a glass of Alexander Valley Cabernet Sauvignon, a mid-bodied Bordeaux blend that paired well with both entrees, which, of course, Sherry and I had to share. Chef Ricky makes delicious and innovative cheesecakes, and I love that he uses different flavors and ingredients each week. Every cheesecake is a wonderful surprise! That particular night, Sherry and I shared a piece of St. Brendan’s Sweet Potato Cheesecake, made with St. Brendan’s Irish Cream, and served within a graham cracker pecan crust, topped with fresh whipped cream and a caramel vanilla drizzle. A fantastic end to our delicious dinner, served in a real chef’s “home.” Joe’s has some terrific new items on the menu, like personalized steaks, and Ricky always has a new catch of the day. They also have a full bar now, and they make some of their own infused liquors, along with some great craft cocktails. Mari is a sommelier, so diners at Joe’s can be sure they’ll experience some new wines along with their familiar favorites. This year, Nassau County’s Franciscan Earth Corps plans to tackle a number of local projects, including starting an organic garden and orchard, adopting local needy families, organizing beach cleans-ups, and participating in several St. Johns River clean-ups. Additionally, the group hopes to assist the Nassau County Humane Society and it has already adopted a mile of beach to help the Amelia Island Sea Turtle Rescue in April. “You don’t have to travel on a mission trip halfway around the world to serve others when people in our own backyard need help today,” notes Katie. “Members can be as involved as time allows and participate in one or many projects. And you don’t have to be Catholic. If you are between the ages of 19 and 35 or so, and you’re interested in helping to improve Nassau County economically and ecologically, please join us!” For more information on the FEC, call Katie at (904) 728-8676 or email katie.rewa@yahoo.com. The group’s next meeting is March 12 at 5:15 p.m. at Yulee United Methodist Church, located at 86003 Christian Way in Yulee. When the FEC volunteers showed up to build the benches for the Nassau Transit riders, most had never built anything, so it was a great opportunity to learn some new skills while serving the community. When the benches were complete, the group left its mark – a favorite saying of St. Francis to inspire the people who would be using the benches: “Start by doing what is necessary, then what is possible. And suddenly you are doing the impossible.”

NANCY’S FAVORITE BROCCOLI SALAD Ingredients 2-3 broccoli crowns 1/3 cup red onion, diced 1/3 cup sunflower seeds 1/3 cup dried cranberries 1/2 cup mayonnaise substitute, like Vegenaise or Just Mayo 2 Tbsp. apple cider vinegar 2 tsp. sweetener, like agave or sugar Salt and pepper Preparation In a salad bowl, add broccoli, onion, seeds, and cranberries. In a small bowl, mix mayo substitute, vinegar, and sweetener. Pour dressing mixture over salad and toss to coat. Season with salt and pepper to taste. Cover and refrigerate until ready to serve, at least one hour.

I
t’s always fun to get a lunch invitation from one of my friends, but imagine my surprise when the wife and mother of Fernandina Beach Mayor Johnny Miller invited me to join them for a picnic! Lori Miller and Nancy Fishburn are vegetarians, and we all enjoy sharing our recipes on social media. Also on the guest list was local writer Pat FosterTurley, who was on her way to Thailand and Malaysia in a few days. Needless to say, we had lots to talk about. We agreed to meet at the Dee Dee Bartels boat ramp, which is a beautiful place to have a picnic. Dee Dee Bartels, located at the north end of the island, is a nice alternative to other beach parks. It has a large pavilion and great water views. We love watching people launch their boats, and hearing about ‘the one
that got away’ from the fishermen as they return to shore. We decided to contribute our favorite vegetarian dishes, and Pat set the table with pretty linens. I provided tea cups and glasses, and once we set out all of our provisions, our gourmet luncheon was a sight to behold. Our menu consisted of Iced Raspberry Zinger Tea, Chilled Butternut Squash Soup, Guacamole with Raw Vegetables and Chips, Broccoli Salad, Bruschetta, and Coconut Lime Pie with Papaya. Everything was delicious, but I think that Pat’s Guacamole and Nancy’s Broccoli Salad were the hits of the afternoon! The following recipes are perfect picnic fare: easy to make, easy to transport, and hearty enough for vegetarians and carnivores alike. Enjoy!

CHILLED BUTTERNUT SQUASH SOUP Ingredients 1 small butternut squash, baked and chilled, pulp removed 1 small onion, chopped 2 cloves garlic, chopped Extra virgin olive oil Curry powder Vegetarian broth Small can chopped tomatoes 1/2 can coconut milk, more or less to taste Salt and pepper Preparation Sauté onions and garlic in olive oil, sprinkling in a bit of curry powder to taste, about 1-2 teaspoons. When vegetables begin to get soft, add the pulp from the squash, and then the tomatoes. At this point, add enough vegetable broth to barely cover the vegetables and simmer gently for a few minutes. Cool slightly, and then puree with a hand immersion blender. The mixture will be very thick. Add coconut milk, a bit at a time until the soup is the consistency you desire. Chill until ready to serve. Be sure to give it a good stir before pouring into teacups or small bowls. For more delicious vegetarian recipes, visit www.ameliaislander.com
