One of the biggest and best events in the entire Southeast, the Isle of Eight Flags Shrimp Festival returns to Amelia Island on the first weekend of May each spring to much fanfare. With crowds exceeding 100,000 visitors, the Shrimp Festival is a perennial favorite on Amelia Island for locals and visitors, and it is a fun event for the entire community. Fernandina Beach is rightfully proud to be the birthplace of the modern shrimp industry, and while there are fewer boats today, the venerable shrimp is still a local favorite. If you are a visitor to Amelia Island and you’ve never experienced Shrimp Festival, be sure to mark your calendar. The festival is a fun-filled weekend for the whole family. It traditionally kicks off with the Pirate Parade on Thursday evening, continues with Friday’s Downtown Merchants’ Sidewalk Sale, and rolls that evening into live entertainment and delicious food—including a variety of shrimp dishes—the annual Pirate Invasion, and a fireworks display over the harbor. Saturday and Sunday bring the festival’s highly-regarded fine arts and crafts show, more food and entertainment, and all sorts of fun contests. As we note each year, much of the food at the festival is sold by local churches and service organizations, which use the food booths each year to raise much-needed funds to support their efforts. Sunday brings the traditional blessing of the fleet, which is actually how the festival got started over 50 years ago. To all the volunteers whose time and energy make the Shrimp Festival such a great event each year, we offer our heartfelt thanks. We at the Islander celebrate shrimp each year in May with our annual Shrimp Festival recipe issue, in which we share some fantastic shrimp recipes from our favorite local restaurants. We are grateful, along with our readers, that so many talented local chefs are ready to share with us their boundless creativity on the subject of shrimp. And we are amazed to discover each year so many marvelous new ways to serve shrimp! Of course, when you’re not in the mood to cook, you can always find these and many other delicious dishes at these outstanding Amelia Island restaurants. Florida House Inn 1 head romaine lettuce Oil, salt, and pepper 1/4 cup pickled red onion 1/4 cup blue cheese crumbles 1 tbsp. cooked, chopped bacon House-made buttermilk ranch dressing Grilled shrimp
12 jumbo shrimp 2 oz. bell peppers 2 oz. onions 1 oz. cilantro 2 oz. gold tequila 4 oz. tequila sauce Seasoning to taste Veggies of your choice Cilantro rice
Cut romaine head in half, drizzle with oil, salt, and pepper. Place on grill. Grill until charred, then flip over. Place on plate, drizzle with ranch dressing. Top with onions, blue cheese crumbles, bacon, and grilled shrimp.
Sauté the onions and peppers along with the shrimp. Add the gold tequila and tequila sauce, and seasonings to taste. Garnish with cilantro at the end and accompany it with a side of veggies and cilantro rice.

3 4-oz. head-on prawns 3 crab cakes: store-bought or fresh-made to equal 1 oz. per crab cake Tempura batter mix For Grits Cheddar cheese White truffle oil
For Garnish Grilled cherry tomatoes One bunch parsley Chopped parsley
Remove tail shells from bodies of prawns, but leave end of tail on and head. Take crab cake and place around shelled tail. Secure in place with long toothpick. Heat oil in fryer to 375 degrees. Dip whole shrimp and secured crab cake into tempura batter and cover completely. Cook in oil from 4 to 6 minutes until golden brown. Drain on paper towel. Make grits per directions on box and add cheddar cheese and truffle oil to taste. Place 3/4 cup grits into center of each plate. Stand up prawns on tails making a teepee look of the prawns, leaning on each other by the head of the prawns. Garnish with grilled roma or cherry tomatoes and grilled asparagus. Finish with parsley bunch in the center and chopped parsley around edges of plate.
Mustard Seed Café CARIBBEAN JERK SHRIMP KABOBS
20-8 inch wooden skewers 2 lbs. 16/20 jumbo shrimp 2 tbsp. Caribbean jerk seasoning 2 tbsp. pure olive oil 3/4 tsp. salt 2 to 3 zucchini 2 red bell peppers 2 to 3 yellow squash Salt and pepper to taste Soak skewers in water for 30 minutes. Toss shrimp with jerk seasoning, olive oil, and 1/4 teaspoon salt. Thread on skewers. Slice squash and red pepper into semi-even sizes for even cooking and thread onto separate skewers. Brush veggies with olive oil, salt, and pepper. Grill shrimp kabobs on medium high heat until shrimp are pink and opaque throughout, approximately 2 minutes on each side. Grill veggie kabobs until desired tenderness, turning occasionally. Serve skewers with side salad of your choice.

12 large 16/20 shrimp, peeled and deveined Package of spring roll wrappers 2 cups slaw mix (cabbage and carrots) 2 tbsp. Paul Prudhomme’s Seafood Magic seasoning 2-inch long piece ginger root, grated 1 egg Peel and devein shrimp, breaking inner muscles to straighten shrimp. Finely chop all vegetables and mix with seasoning, ginger, and egg. Wrap and cook as per package directions, keeping shrimp hole or leaving tail fins and wrapping like a horn. For Burger Patties 2 lbs. ground beef 1 tbsp. onion powder 1 tbsp. garlic powder 2 tsp. ground ginger 2 tsp. kosher salt 2 tsp. freshly ground pepper 2 tbsp. Worcestershire Sauce 12 dinner rolls or potato rolls For Sautéed Shrimp 24-12/15 count shrimp, peeled and deveined 2 tsp. Old Bay or Cajun seasoning 1/4 tsp. cayenne pepper 1 tsp. kosher salt 1 tsp. freshly ground pepper Freshly squeezed lemon Remoulade sauce For burgers: combine first seven ingredients in a large bowl. Divide into 12 even portions. Roll each into a ball. Between 2-pices of plastic wrap, pound each portion with a rolling pin 1/4 to 1/2 inch thick, making slightly larger than the rolls, as they will shrink as they cook. In a preheated cast iron skillet, cook on both sides until no longer pink in the middle. For shrimp: in a medium bowl, combine shrimp, Old Bay or Cajun seasoning, cayenne, kosher salt, and freshly ground pepper. In a preheated non-stick pan, sauté shrimp in a small amount of olive oil until cooked through. Once burgers and shrimp are cooked, slice rolls in half and place one burger patty and two shrimp on bottom of each roll, and top with remoulade sauce.

8 eggs 2 tbsp. mayonnaise 1 tsp. Dijon mustard 1 sprig thyme, chopped 1/4 avocado 1/4 red bell pepper Sriracha, a few drops 4 grilled shrimp Hard boil and peel 8 eggs. Cut eggs lengthwise, remove the yolk, and put into a bowl. Place hollow whites to the side. In the bowl with the yolks, add the mayonnaise, mustard, thyme, Sriracha, and salt and pepper. Whip until a smooth paste. Put filling into a piping bag or spoon inside the hollow white. After filling, garnish with sliced avocado, red pepper, and grilled shrimp. Season with salt and pepper. Serves 4.

2 slices fresh tuna 1 sheet seaweed nori 1 oz. salmon roe or masago 4 oz. sushi rice 1 oz. homemade eel sauce
3 pieces tempura crispy shrimp 1/2 avocado, sliced 1/2 mango, sliced 4 pieces lettuce
Spread sushi rice on the seaweed nori to make the foundation. Add all the avocado, lettuce, and shrimp inside the roll. On the top, layer 2 slices fresh tuna and mango. Roll and cut into 8 pieces. Top each with salmon roe or masago, and just a hint of Fancy Sushi’s homemade eel sauce.

1 cup fresh tomatoes, chopped 1 cup seedless watermelon, chopped 1 tbsp. sugar 2 tbsp. red curry paste 2 tbsp. corn starch 2 cups cool chicken stock Red pepper flakes, to taste
Render bacon in a sauté pan and remove, reserving for later. In the same pan, using the rendered fat from the bacon, sauté the shrimp for about a minute or so on each side and season with salt. Add a pinch of minced shallots and garlic, then quickly deglaze the pan with a splash of dry white wine. Reduce the wine and add 1/2 tbsp. butter. Fry the green tomato in 350 degrees for about 2 minutes or until golden brown, and reserve. Assemble the grits, fried green tomato, and shrimp on a plate. Garnish with marmalade, bacon, and bagna cauda sauce.
In a heavy stock pot, combine first seven ingredients and sauté until tender. Add tomatoes, watermelon, sugar, and curry paste. Cook for 10 minutes on medium heat. Make a slurry of corn starch and cool chicken stock. Add to other ingredients to thicken. Cook 10 more minutes. Add red pepper and more salt to taste. Use this sauce to sauté fresh peeled and deveined shrimp. Place on toasted pita and top with cucumber cubes, mint, basil, scallions, and feta cheese. 16 AMELIA ISLANDER MAGAZINE •

1 jalapeno pepper, minced 1/2 bunch cilantro, finely chopped 1 tbsp. cumin, ground 1/2 tbsp. salt 1/2 tbsp. black pepper
Mix all ingredients together in large bowl and refrigerate for 24 hours. Serve with avocado and your favorite tortilla chips, or use it as a filling for a refreshing shrimp taco. Makes 28 portions.

For White Bean Crema 2 tbsp. olive oil 2 tbsp. diced onion 1 tbsp. chopped garlic
3/4 cup cooked white beans Pinch salt and pepper
Sauté onions and garlic in olive oil until translucent. Add cooked white beans and braise for 2 minutes. Add salt and pepper and puree mixture until smooth. For Gambas Olive oil 2 thinly sliced garlic cloves Shrimp Salt and pepper 1/4 tsp. paprika
2 tbsp. dry sherry 2 tbsp. fish stock 1 tbsp. lemon juice Chopped parsley Sautéed shitake mushrooms
In olive oil, sauté garlic, shrimp, and salt and pepper at high heat for 30 seconds. Add paprika, sherry, fish stock, and lemon juice. Cook until shrimp are pink and sauce comes together. Serve shrimp on White Bean Crema and garnish with chopped parsley and sautéed shitake mushrooms.

2 lbs. 21/25 shrimp, peeled, deveined, poached in pickling spices, and chilled 1 finely diced shallot (Brunoise) 1 English cucumber, medium dice 1/2 cup garlic aioli 6 brioche squares, 1-inch thick, toasted on each side until golden brown 1 pickled shallot, sliced and pickled in red wine vinegar and sugar 1/4 bunch scallions, finely sliced Salt and pepper to taste 2 tbsp. olive oil Combine shrimp, shallot, English cucumber, pickled shallot, scallions, and olive oil in a bowl. Season with salt and pepper to taste. Place a toasted brioche on each plate and top with shrimp mixture. Spoon small amounts of garlic aioli around plate and shrimp mixture. Add smoke to the dish using a smoking gun, or heat a small amount of wood chips in a pan on the stove until they begin to smoke. Cover the plates and pan together with aluminum foil, and allow to sit for 5 minutes. The smoke will infuse into the dish and give it a light smoke flavor. Serves six.

Thirty 21/25 count whole shrimp 2 cups dry quinoa 2 cups broccoli florets 2 cups diced carrots 2 cups whole kernel corn (if you have time, cut it off the kernel it’s so worth it.) 1 diced medium yellow onion 2 tbsp. olive oil 1/4 cup toasted sesame oil 3 tbsp. low sodium soy sauce 2 eggs Cook quinoa according to package instructions, 2 dry cups quinoa and exactly 4 cups water. While quinoa is cooking, grill shrimp, season to taste, and set aside. In a medium pan, bring olive oil to a warm temperature and add onions, carrots, and corn. Sauté 1 minute only. It’s very important not to overcook the vegetables. Scramble the eggs until firm. Place cooked quinoa into a nice-sized bowl, add the vegetables you just cooked, add broccoli, sesame oil, and soy sauce to the bowl, add scrambled eggs and grilled shrimp to bowl, and gently toss everything together. This dish can be served hot or cold.
1/4 lb. lump crab meat 2 tbsp. green onion, sliced thinly 1/2 cup banana, mashed until smooth 1/2 tsp. lemon juice 2 tbsp. mayonnaise 1/4 avocado 1 tsp. dried mustard 1/8 tsp. blackening seasoning 1.5 tsp. fresh garlic, minced 1/2 fresh jalapeno, minced 1 egg Pinch salt and pepper 1/8 tsp. lavender Pinch Old Bay seasoning 1/2 tbsp. honey 1/2 tbsp. sour cream 1/2 tbsp. cilantro, chop finely 1/8 tsp. cumin 1 cup panko 20 local peeled and deveined shrimp Salt and pepper Mix banana, mayonnaise, avocado, honey, and sour cream until smooth. Add other ingredients except shrimp, crab, and additional salt and pepper and whisk until smooth. Fold in crab, trying not to break lumps. Lightly season shrimp with salt and pepper. Stuff shrimp with crab mixture, folding tail over mixture. Spray pan lightly with pan spray. Cook in a 350-degree oven until done. Arrange on a plate. To make Margarita Sauce, add sour cream to guacamole with 1/4 of a margarita until smooth. Drizzle across shrimp and serve, saving ¾ of the margarita for the chef!
Cook in the shell whenever possible, especially when you grill. The shells add a lot of flavor to the meat, and they protect it from quickly overcooking.

Prosciutto Large shrimp, peeled and deveined Garlic, chopped Roasted red pepper, thinly sliced White wine Cooked spaghetti Arugula Cut prosciutto into 1-inch pieces, Wrap shrimp with prosciutto and bake at 350 degrees for 12 minutes until prosciutto is crisp. Sauté garlic with red peppers and any leftover prosciutto. Deglaze pan with white wine. Add cooked spaghetti and arugula, twist, and serve with prosciutto-wrapped shrimp.

12 pieces Bao (found at Asian specialty markets) 24 shrimp (1 lb.), medium to large, peeled and deveined Buttermilk batter (2 cups buttermilk, 6 eggs) 5-spice rice flour mixture (3 cups rice flour, 1 cup cornstarch, 2 tablespoons 5-spice seasoning, pinch sea salt) Frying oil Sriracha Aioli (1/3 cup Sriracha sauce, 1 cup mayonnaise, 1 tsp. lime juice) Arugula Toasted sesame seeds Steam Baos according to package directions. Dip shrimp into buttermilk batter. Coat with rice flour mixture, shaking off excess. Fry shrimp in oil until golden brown. Assemble Bao with arugula and shrimp (2-shrimp per Bao), top with Sriracha Aioli, and sprinkle with sesame seeds. (Note: Sriracha Aioli can be made ahead and refrigerated.)

12 jumbo shrimp, peeled and deveined, tails on 1/2 cup Redeye Gravy (recipe below) 2 Grit Cakes cut on a 45 degree bias (recipe below) 2 oz. shredded cheddar cheese Fried okra and roasted red peppers for garnish (optional) Season shrimp with salt and pepper. Place on greased cookie sheet in oven under broiler until tails are pink and shrimp are opaque, 4 to 6 minutes. In center of bowl, place Grit Cakes and surround with Redeye Gravy. Place shrimp in Redeye Gravy, tails up, and sprinkle with cheese. Garnish with okra and red peppers. Grit Cakes 2 cups cream 1 cup instant grits 1/2 stick butter 2 cups diced bacon 1/2 cup diced jalapenos
1 cup sautéed onions 1 cup sautéed red peppers 1/2 cup sour cream 1 cup jalapeno jack, shredded
In saucepan, add cream, butter, and water. Bring to a boil, add grits, and whisk until cooked, about 10 to 12 minutes. In large sauté pan, brown bacon until crisp. Redeye Gravy 8 oz. bacon, thinly sliced 1 lb. Andouille sausage 2 tbsp. tomato paste 2 cups sautéed onions 1/4 cup minced garlic 1 tbsp. chicken base
1 cup brewed coffee plus 2 cups water 1 tbsp. Cajun spice 1 each red and green pepper, julienned 1/4 cup roux (1/8 cup butter and flour combined)
Brown bacon. Add sausage and brown for 7 minutes. Add onion, tomato paste, garlic, chicken base, and Cajun spice. Sauté 10 minutes. While scraping from the bottom of the pan, add coffee and water. Allow to simmer 15 minutes, stirring from bottom of pan. Add roux, simmer 15 minutes, stirring from bottom. Add peppers and stir. MAY 2018

2018 AMELIA ISLAND JAZZ FESTIVAL HEADLINERS The critically acclaimed Requinte Trio, featuring multiple Grammy winning vocalist Janis Siegel, founding and longtime member of Manhattan Transfer, with Chicago guitarist Henry Johnson, will headline the 2018 Amelia Island Jazz Festival from October 7 – 14, said Artistic Director Les DeMerle. Requinte Trio includes Nanny Assis (percussion, guitar, vocals) and John di Martino (piano). Their latest release, “Honey and Air,” has received worldwide praise, and the group maintains an international touring schedule. Requinte Trio will appear Saturday, October 13. Henry Johnson, a disciple of jazz guitar Requinte Trio greats Wes Montgomery and George Benson, has accompanied and performed with dozens of luminaries, including Ramsey Lewis, vocalist Joe Williams, Dizzy Gillespie, and Stanley Turrentine. Johnson’s latest release, “Organic,” is a collaboration with legendary singer Nancy Wilson. He will be backed by the Les DeMerle Trio for his show on Friday, October 12. SLAVE DWELLING PROJECT PRESENTED AT KINGSLEY PLANTATION The Florida Trust for Historic Preservation and the National Park Service are pleased to host the Slave Dwelling Project at Kingsley Plantation in Jacksonville from May 15 to 19. The Slave Dwelling Project, headed by Joseph McGill, is dedicated to preserving surviving African American slave dwellings and seeks to change the narrative around the history of slavery in the United States. The event is free and open to the public on May 15 from 6:30 to 8 p.m. “Since 2010, the Slave Dwelling Project has spent nights in slave dwellings in 19 states and the District of Columbia,” says McGill. Florida’s history of slavery and AfricanAmerican history are not well known, and Kingsley Plantation provides a unique location to share that story more broadly. With activity recorded as early as 1763, Jacksonville’s Kingsley Plantation on Fort George Island is one of the oldest properties remaining in Florida from the plantation era. “It is our hope Slave Dwelling event will serve as a catalyst to ignite interest around the unique African-American history of North Florida, and the importance of preserving the structures that tell that important story,” said Florida Trust Executive Director Melissa Wyllie. he Island Art Association (IAA) Gallery is owned and operated by over 250 artists and associates, offering a wide range of art opportunities in their Education Center to Nassau County residents and visitors alike. IAA is a 501(c)3 charitable organization whose mission is philanthropic and educational. Its purpose is to develop and sustain an interest, appreciation, and enjoyment in and of the arts. The organization is run entirely by volunteers. A year-round project for the IAA is administration of the annual Isle of Eight Flags Shrimp Festival Arts and Crafts section. Artist vendors are selected through a detailed jury process, and the artists are provided oversight throughout the festival from IAA volunteers. Guest judges review all of the art, awards are given, and then the entire process begins again for the next year. Nouveau Art, a bi-monthly themed show and sale, is among the variety of programs offered at the gallery. “New” artwork is submitted by IAA members and other community artists and citizens for five juried themed shows
each year. This gives all artists the opportunity to display and sell accepted artwork in the gallery for a period of two months. Participation is open to the public, as well as the membership. The latest Nouveau Art exhibit is called “People.” Detailed portraits and mixed media pieces are on display and for sale in the south gallery. Nouveau Art is judged by guest art experts from around the region and nearby universities. Anyone browsing the original artwork of IAA’s 48 local exhibiting artists is sure to discover a treasure. The gallery is open late during the Second Saturday Artwalk. Come downtown and be inspired by great art and conversation in the heart of Fernandina Beach’s historic district. Residents and visitors alike are invited to support the arts by joining IAA in a variety of membership and support levels. fter a 20-year career in vascular and general surgery, Dr. Gabor Kovacs and his wife, Lisa, moved from New Jersey to Alma, Georgia, where he was Chief of Surgery at Bacon County Hospital for seven years. SCHOOLPRIDE With the finish line in sight for Fernandina Beach High School’s Class of 2018, graduates share some fond memories as they prepare to head out into the world. BY JULIE SIMMONS
T
here’s something different about life on Amelia Island… we just do things a little differently than city folk. When the weekend rolls around, don’t look for us at the movies on Friday nights because we’ll be at the football game, cheering on the one-and-only Pirates! On Saturday, you won’t find us at “a town center,” but you might find us on Centre, shopping the Farmer’s Market or dining out at one of our favorite restaurants. And on Sunday, after church, you’re sure to find us with our toes in the sand! As for Fernandina Beach High School’s Class of 2018, Amelia Island life is in their blood. Just ask graduating senior Shelby Bradley, who is headed to University of South Florida in August. “To set things straight,” says Shelby, flashing a little school pride, “there is no comparison between FBHS and other schools; it is by far the best. We have the most caring faculty, hands down!”
Classmate Hayden Bowen agrees. “The most noticeable thing about FBHS is the faculty,” he echoes. “The majority of our teachers and administrative staff grew up and went through school here years ago. They not only invest their time in teaching us, but they’re also concerned about our well-being, making sure everything is going well not only on the academic side, but on the personal side of life, too.” Hayden is grateful for their dedication, which prepared him to attend the Florida Institute of Technology this fall for aerospace engineering studies. He has a dream to one day work with rockets and satellites after being introduced to aerospace science right here at FBHS. “FBHS is unique because it’s less than a mile from the beach! And it’s vibrant in its size; I still remember who was in my kindergarten class,” says Jordan Parker, who is headed to the University of West Florida on a football scholarship. Those

small-town benefits are felt by all the students, who are looking back with fondness on their years at FBHS. “My favorite memory is winning homecoming king. It showed how my fellow students supported me and didn’t just see me as the average jock. The best part wasn’t winning, but seeing the smile on my mother’s face!” Shelby is also looking back, even as she looks forward. “My parents taught me values to live by, and they have supported me and encouraged me to pursue my dreams while challenging me to be the best I can be! I would not be the person I am today without their love and guidance.” Hayden shares that he tries to spend most of his weekends with his grandpa, tinkering and working together. “I get my handiness and engineering skills from him, and every weekend, I learn something new from him – about life, manners, or some kind of mechanical or handyman skill.” “This is a great class with a lot of great students” says Rob Hicks, FBHS guidance counselor. “Our seniors can boast the U.S. Green Building Council Student of the Year, a National Merit Scholar, a National Hispanic Scholar, a senior-lead state semi-finalist girls basketball team, a first team all-First Coast football player, students who will participate in marching bands in college, serve in a variety of branches in the military, and those who have overcome unimaginable obstacles to get to today. “These seniors are the first FBHS students who have been allowed to leave campus during lunch, and they have helped us make significant strides in the evolution of the use of cell phones as classroom tools. I’m excited about the potential of these 216 young men and women.” It’s with great pride that we wish these Islanders “Congratulations!” Enjoy the years ahead, Class of 2018, and we invite you, with your experiences and new skills, to “come on back home” someday! M
s. Bean, as she is known by all, is an island treasure. She recently celebrated her 92nd birthday. Her clear blue eyes and sparkling smile are her trademark. Her school, the Bean School of Dance, has offered dancing classes to local children and their families for more than 65 years. The school is housed in a tabby building on North Third Street. When her husband, Lewis “Red” Bean, retired from the school district, he gifted his 65-year-old wife with her dream studio. She recalls that it was a family affair, with son, Mark, newly graduated from Florida State University, heading up the construction. Prior to the opening of her studio, she taught in the basement of her North 15th Street brick home, where she raised her nine children and where she still lives. She also taught classes in the old Keystone Hotel, the Recreation Center, and St. Michael Catholic Church. The youngest of the nine is Aaron Bean, a State Senator and former mayor of Fernandina Beach. She stays busy according to Aaron, and he says sometimes he has to make an appointment to see her. She still remembers the names of the kids she taught 50 years ago, and the names of their kids she taught, and their grandkids, too. She remains in her house surrounded by gardens, with a fish pond and huge back porch waiting for family gatherings. The Bean family’s first home was on the beach, and Ms. Bean smiles as she recalls that her children wore bathing suits under their church clothes so they could get to the beach as soon as possible after church. Ms. Bean received a degree in Physical Education from Western Kentucky State College, where she met Red Bean, the love of her life. Red was an outstanding athlete, who played for Bear Bryant at one time. He was able to complete his education at Western Kentucky on an athletic scholarship. After his time in the service, he and Joan moved to Fernandina Beach in 1950, where he was offered a job teaching mechanical drawing, shop, and coaching at the island high school. 49 AMELIA ISLANDER MAGAZINE •
Red Bean was a legendary teacher and coach. In 2006, when Florida State College at Jacksonville and the Nassau County School District partnered to build a Technical Center for vocational training on the FSCJ Betty P. Cook Nassau Center campus. they named it the Lewis “Red” Bean Technical Center. The 90,000 square feet facility is home to state-of-the-art computer and technology labs and classrooms, and it is utilized for high school dual enrollment and career certification courses. Ms. Bean is a fixture in the island’s traditional small town parades. One of her favorite costumes is that of the Statue of Liberty. She waves from a float while her students show off their skills as they move down the street. Ms. Bean is passionate about Amelia Island and she is a frequent speaker at City Commission meetings when topics come up that she thinks will compromise the island she loves. She is at her studio nearly every day, continuing to inspire young people and share her love of dance. She credits her oldest daughter, Diane, for her dedication to the school. Smiling her contagious smile, Ms. Bean shares, “Luckily, my daughter Diane and my talented teachers carry on my traditions. Two of them are my grandchildren!” MAY 2018

lovely lagerstroemia Like every good bellini recipe, the new Bellini Grape and Bellini Raspberry keep it simple and satisfying while adding bright color to your garden this spring. BY BETTY MORRELL

don’t know where April went, but May flowers are in full bloom, showing off new varieties that are rich in color. We all enjoy the Crape Myrtle trees that stand out in the landscape and on highway dividers and curb spaces, and in recent years a new dwarf series has been developed. Now there are two new beauties in the Lagerstroemia family: Bellini Grape and Bellini Raspberry. Like any good bellini recipe, Bellini Grape and Raspberry keep it simple and satisfying. Perfected in development, they will make bright additions to your garden. With their earlier flowering on a refreshing, compact shrub, this series is unique and garden-ready. The Grape Bellini has rich, purple/ mauve flowers all summer atop a compact mound of deep green foliage. This bush grows waist-high, about 3 to 4 feet in height and width. It’s a great shrub to plant in a small space where you need color, and they love the sun. Flowers in a rich, rose color adorn the Raspberry Bellini, which would make another lovely addition to a small space

in your garden. Like the Grape, it grows 3 to 4 feet in height and width. Use a balanced fertilizer on them in spring. Do not overfeed, as it will promote foliage growth and less bud development. In spring and summer, pruning is not necessary except to remove dead wood after new leaves appear. Trim to shape in autumn and winter if needed. If trimmed during the summer, the bush will re-bloom. These shrubs have exceptional powdery mildew resistance and flower more frequently than other Lagerstroemia. While I was strolling through a few tropical booths at the trade show this year, my eyes spotted an interesting plant, but because of its tropical nature, I walked past it. However, the more I saw of this plant, the more curious I

became and I just had to go back and learn about it. It was a dwarf Mussaenda Globia – White Wing, a tropical plant that is a relative of the coffee bean plant and produces interesting flowers. Before the plant comes into bloom, white leaves appear on the tips of the shoots where flowering will occur. They fall off, and pale creamy yellow starshaped flowers appear during the warm months of the year. This is an excellent container plant for your patio or walkway, but it must be protected from freezing temperatures. Provide a sunny locale to partial shade and well-drained soil. The plant grows 1 to 2 1/2 feet in height and has a 3 to 6 feet spread. I have been admiring the Knock Out Roses that have flushed out so wonderfully lately. Remember: all roses need to be fed once per month during the growing and blooming season all summer. I also throw a little Epsom salt around the roses and shrubs – it gives them a boost! itting on one of the highest points on Amelia Island in Old Town is one of the island’s original Captain’s houses. The 1,900-square foot house offers all the classic details typical of the era in which it was built: a sharply peaked roof, porches, and various window treatments. Laine and Kevin Berry knew it was the house they wanted. They are connoisseurs of things old, both houses and antiques. They have redone three homes, this Captain’s house and two homes in Arkansas. The couple make their home in Arkansas, where both have successful businesses, but they are able to work from either Arkansas or Florida. After three years as lead designer for a couture bridal gown business, Laine launched her own line of designer bridal gowns. Her busy life includes traveling to retail outlets for trunk shows and spending time on her Arkansas farm herding geese, snuggling bunnies, and playing with the couple’s seven

dogs. Kevin has been in advertising and marketing his entire professional life. Owner of AdWorks Concepts & Design, Kevin designs websites, mobile apps, and marketing materials for clients around the country. He also works closely with Laine Berry Bride, handling the marketing and managing finances. The dogs are Kevin and Laine’s family, and they travel back and forth from Arkansas with them. “The kids,” as the couple calls them, have names inspired by literary characters, including Atticus (Gus), Scout, Boo, Mayella, and Dill. In addition, they have Lady Catherine (Kati) from Pride and Prejudice and their tough guy, Tank. The couple wanted an historic home near the ocean, and once they discovered Amelia Island, they knew that it was where they wanted to be. They considered the historic district, but found the house of their dreams in Old Town. When their realtor called with a listing that hadn’t hit the market yet, a long-distance negotiation ensued. The house was perfect – old, in an historic area, and ready for renovation. The house sits on three lots, and its fence keeps their dogs safe. The house dates to 1888, and the Berrys are only the third owner. The limited turnover helped maintain the integrity of the structure. A small closet under the stairway is a minimuseum with documents and pictures relating to the house. The old house and the couple’s eclectic collection of antiques make a perfect marriage. Laine and Kevin have lovingly restored the house. Their combined talents transformed the house, turning the original kitchen into a master bath and a back porch into a kitchen. 54 AMELIA ISLANDER MAGAZINE •

Their pride and joy is an original Frigidaire. The refrigerator was a gift from a friend of Laine’s, who inherited it from an uncle. The friend knew it was the perfect gift for her antiquecollecting friend and her renovated home on Amelia Island. Using limited window treatments has created a home full of light. Entering the front door, one is struck by the stairs leading to the second floor. Totally restored by flooring genius John Grey, it is one of the couple’s favorite details of the house. Grey also restored the original heart of pine floors. Each room is filled with collections and interesting antiques. Each has a story. The house is also filled with found treasures. Bowls of shark’s teeth and baskets of shells are found in many rooms. Included in their collections is a bowl of 18th- to early 20th-century china chards found in the yard surrounding the house. The antiques in the home were found in Arkansas, on their travels, and antique shops on the island. The upstairs has three bedrooms and a bath. Laine has used a unique wallpaper on one wall of each room, and then used the colors to coordinate the rest of the decor. One bedroom is especially playful, making one imagine that Pippi Longstocking might have picked it for her very own. The couple agrees that all the hard work and renovation have been worth the effort. They have been welcomed into the Old Town community, and they treasure their Amelia Island home. 56 AMELIA ISLANDER MAGAZINE •

W
alking into The Crab Trap is like walking into my childhood. Everything I remember about being a kid in Fernandina Beach is on the wall in the dining room. Opened on Shrimp Festival weekend in 1979, The Crab Trap has become a Fernandina institution. Through the years, the Germano family has maintained and nurtured a straight-ahead seafood house, while delighting the taste buds of even the most discerning clients.
They have also done wonderful things with the bar and dining space upstairs, enabling guests to look out over the Amelia River and enjoy the sunset with an ice-cold adult beverage from the air-conditioned comfort of their barstool. Over the years, when family and friends came to town, they wanted to eat seafood and they wanted to do it downtown, and what better spot than the Crab Trap to accommodate them, whether with a party of two or twenty. On a recent night, I joined U.S. Army veteran, Fort Clinch Park Ranger, and my brother-in-law, Jason Allgood, at The 58 AMELIA ISLANDER MAGAZINE •

Jason retired from the Army as a Sergeant First Class, having served three tours in Afghanistan and been stationed around the globe before bringing his family home to Fernandina Beach. Like so many others, he couldn’t wait to enjoy some of what we are so famous for here: seafood. Our meal started off with an order of Peel n’ Eat Shrimp. Cooked simply in salted water with only a hint of spice, the shrimp were sweet, and most importantly, not over-cooked. Shrimp only take a couple of minutes in simmering water to be perfect. A distracted chef can quickly turn our local bounty into rubber bands. These shrimp were perfect, easy to peel, and just right with the house-made cocktail sauce. Along with our starter, we enjoyed an ice-cold Bud Light and a Florida Cracker, a Belgian-style white ale from Cigar City Brewing Company in Tampa. Its crisp flavor and citrus finish were perfect for our plate of peel n’ eats. For our entrees, Jason enjoyed Grouper Stuffed with Crab, finished with a creamy butter sauce, and I went with a local classic, the Crabber’s Delight. I ordered the dish blackened, and it arrived overflowing with oysters, fish, shrimp, and devilled crab. We both ordered a baked potato, but other traditional sides are always available. The grouper was flaky and light, just as it should be, and although it was blackened, my platter was mild and cooked to perfection. For dessert, I ordered a piece of the Salted Caramel Cake. If you have a sweet tooth, this should take care of it for a while. Not being a fan of sweets, Jason left me to my own devices. The cake was moist and rich, and drizzled with a salted caramel sauce. There is so much more to get into at The Crab Trap, from daily happy hour specials to trivia nights and a dynamite lunch menu. They make it easy to enjoy it all, as they are open seven days a week for dinner and for lunch from Wednesday through Sunday. inco de Mayo is an annual celebration held on May 5, observed to commemorate the Mexican Army’s unlikely victory over the French at the Battle of Puebla on May 5, 1862 under the leadership of General Ignacio Zaragoza. In the United States, Cinco de Mayo has taken on a significance beyond its historical importance as a celebration of Mexican-American culture, with Mexican-Americans and Americans of every ethnic background gulping down margaritas and feasting on Mexican specialties throughout the month. We like to pay homage to our Mexican friends and neighbors with Taco Night, a gathering in which we sample new types of taco fillings while sipping margaritas and dancing to Mariachi
music. It’s a fun evening, casual and festive, although there’s a bit of work that goes into the food preparation. We like to serve 3 to 4 types of fillings, featuring beef, chicken, seafood, and beans, with lots of toppings. We use both corn and flour tortillas, and sometimes make our own if we’re feeling inspired. Toppings should include fresh cilantro, lime wedges, salsa, guacamole, shredded cheese, scallions, lettuce, and other crunchy vegetables – even shredded radishes and carrots are nice on a taco. We also serve tortilla chips for dipping and a selection of hot sauces for those who like their tacos spicy. And for dessert, a platter of fresh fruit like pineapple, mango, and papaya is all you need to complete your meal. Feliz Cinco de Mayo!

Preparation Combine all ingredients in a hot, oiled pan and cook until shrimp are pink. Adjust seasoning if needed. BLACK BEAN TACO FILLING Ingredients 1 tbsp. olive oil 2 cloves garlic, minced 1 cup onion, chopped 1 red bell pepper, chopped 2 cans black beans, rinsed and mashed 2 tbsp. corn meal 1 tbsp. chili powder 1 tsp. cumin 1 cup bottled salsa Preparation Heat olive oil in a medium skillet over medium heat. Stir in onion, garlic, and bell pepper; cook until tender. Stir in mashed beans. Add cornmeal. Mix in seasoning and salsa. Cover and cook 5 minutes.
