Each year, July brings our annual Amelia Islander “Fun in the Summer Sun” issue, in which we spotlight the many and varied activities available around the island. This issue always gives us the urge to get out and enjoy a little vacation time—but what does your vacation look like? We’re surrounded by water, yet most of us stick to dry land, from work to school, shopping to appointments, day in and day out. Summertime is the best time to break free of those daily routines. From kayaking and sailing to surfing and fishing trips, there are so many great ways to enjoy the water that surrounds us. If you prefer turf to surf, perhaps the tennis court or golf course is your favorite place for fun. How about changing your mode of overland transportation? Get your balance and some quick instructions, and you can explore the maritime forests of Fort Clinch State Park or Fort George Island on a Segway. Or you can saddle up on the beach for a horseback ride. This year, it was our turn to try a horseback ride on the beach. The surf was stirred by a kick of wind, and the beach took on a new energy. In place of our usual peaceful walk on the beach, it was an exhilarating ride, as we were lead into a brisk trot with the breeze blowing through our hair. What an exciting new way to enjoy the beauty of the shore! It reminded us how trying new things can really change your perspective. Where will you start your summertime fun this year? After you’ve enjoyed some fun in the great outdoors, it’s time for that quintessential summertime non-activity: relaxing! While you’re lounging on the beach or by the pool, we hope you’ll enjoy the rest of what the Islander has to offer this month, including an article on Gogo Ferguson of Cumberland Island, a descendant of the Cumberland Island Carnegies, who, with her daughter, Hannah Thomas, has an exhibition this summer of their unique, nature-inspired jewelry at the High Museum in Atlanta; a look at the physical and mental benefits of yoga and its growing popularity on Amelia Island; a feature on Starting Point Behavioral Healthcare and the wide range of services they provide for the people and the schools of Nassau County; some great recipes from Karen Miller for entertaining “vintage-style” this summer; an “Eating Scene” review of Café Karibo; and much, much more. So, in between the pure relaxation you enjoy either on the porch or on the beach, we hope you’ll be inspired to try something new this summer and discover a fresh perspective on our little island paradise. See you around the island!

LOCAL WRITER KAREN MILLER PUBLISHES BOOK Karen Miller, freelance writer and former caterer, has published a new book, Succotash Dreams…And Other Fond Food Memories. The book is a collection of mouth-watering recipes, each accompanied by a short story. The book is humorous, poignant, and informative, as Karen reveals some of her cooking and catering secrets, such as the key to making the perfect quiche or how to make real Southern sweet tea. Miller has catered prestigious events in and around Amelia Island over the last 12 years, including the Amelia Island Chamber Music Festival and the Amelia Island Jazz Festival. “Karen Miller is a literary tour de force and a culinary powerhouse,” says Les DeMerle, founder and artistic director of the Amelia Island Jazz Festival. PAJAMADAVE VOORHEES CREATES NEW CLOTHING LINE We know him as a boat captain for Amelia River Cruises. We see him riding his motorcycle around Amelia Island. We know him as an ordained minister, performing wedding ceremonies on Amelia Island’s beaches. But what we really know about PajamaDave Voorhees is that he wears pajamas—every day of his life—in all sorts of weather, and for every occasion. Voorhees believes in being comfortable, so he developed his own signature line of clothing and accessories called Pajama Life, Livin’ Life Comfy. Clothing includes pajamas, of course, but also tee shirts, boxer shorts, decals, and beverage koozies. Items in the works include flip flops and beach wraps. PajamaDave built his reputation in pajamas as a construction worker while working on a job near St. Michael Academy. Children would walk by him and shout, “Hey! Pajama Man!” When he told the children his name was Dave, the kids then called out, “Hey, PajamaDave!” The name stuck, and the rest is history. Voorhees has worked closely with Alexandra Maddox, creating the logo and designs for the line. They currently sell the merchandise at the Amelia River Cruises office at the Fernandina Beach harbor, Halftime Sports Bar on So. 8th Street, and Amelia Island Trading Company. For more information, call the pajama man at (904) 335-0559.

or fine art, portrait, and wildlife photographer Steve Leimberg, his gallery is the natural world. He seeks out the beauty in what normally is unseen and passed by. His web site, www. unseenimages.com, is a collection of his best work. “My web site gallery is a place designed to share beauty,” says Leimberg, “both real and imagined, often missed until you look a little more closely.” Leimberg received his first camera from his uncle at his bar mitzvah when he was thirteen, and soon he was working on his high school newspaper, school yearbook, then on to Temple University and various city newspapers. His insight into people, places, and nature is curious thing for Leimberg, who has a learning disability that does not allow him to picture images in his mind. When Leimberg closes his eyes, the world goes black; he cannot see an image, or recreate something he has just seen. Through his photography, Leimberg is able to capture and hold on to images, and also to retrieve and share them with others. “Photography brings those images back to me,” says
Leimberg. “I’m by nature a shy person. My camera has allowed and encouraged me to connect with people and places.” The photographer is especially fascinated by birds and nature. He and his wife, Jo-Ann, also a photographer, came to Amelia Island on a sailboat and they fell in love with the area. “What I like to show through my work, is the color, texture, lines, and shapes of those unseen images that maybe others haven’t noticed.” Says Leimberg. “Maybe a tree, a bird, a flower, a statue, things that others pass by, that’s what I want to photograph.” Leimberg, an environmentalist who is on the board of Wild Amelia, uses his photography to raise awareness of the natural world, thereby helping to preserve it. “My photography is a way of grabbing people by the shoulders, and shaking them.” He shows his work at Amelia SanJon Gallery, Island Art Association, Omni Plantation Guild and Gallery, BarZin Restaurant, and Wines by Steve on First Coast Highway. T
he Pickers Market opened on Alachua Street in September 2011, after owner Nancy Rosenberg had worked as a dealer at another market. Her love for vintage collectibles and antiques, combined with a desire to do something new, prompted her to start her own business. The building on Alachua was just what she wanted, but this entrepreneur wanted a fresh and different look. The building once held a restaurant, and she wanted to keep the large polished wooden bar in the middle of the room and showcase her dealers’ booths around it. But the building was too dark. Rosenberg decided to paint the entire shop white, add white ceiling fans, and scrub the windows until they were sparkling, and—poof!—The Pickers Market was born. The Pickers Market is now home to over 40 dealers and consigners. Behind the bar on any given day you will find Jude, Laurie, Rhonda, Jill, Bridget, Joe, and, of course, Nancy, all of whom are experts on the collectibles and historic pieces for sale in the shop. “I’ve met so many wonderful and interesting people,” says Rosenberg, who moved to Fernandina Beach nine years ago from Atlanta. “Our dealers come from all over, and each has their own special niche.” No matter what you might be shopping for – furniture, gifts, or collectibles—you will probably find it at The Pickers Market, along with coffee, lemonade, a plate of cookies, and a bright smile from behind the bar. For more information, call (904) 432-7078 or visit their web site at www.thepickersmarket.com.
arlene Craven opened her store, The Swing Set, on St. Simons Island over 20 years ago. As a young mom with four children, she wanted to focus on beautifully made, quality clothing. The Swing Set draws customers from all over the U.S., from New York to California. Customers love the store’s traditional Southern favorites, as well as its fashionable European styles. Some of her Amelia Island and Jacksonville customers suggested she open a children’s boutique in Florida, so that’s exactly what she did! For Darlene, running the business came naturally to her, since she considers children’s clothing as just as important as adult clothing. “I can see how fine clothing actually makes a difference in a child’s self-esteem,” says Darlene. “When a child tries on a pretty dress or outfit, you can see in her face how special she feels.” The Swing Set features old favorites like Florence Eiseman, plus European brands like Deux par Deux and Catimini that are well-known for their creativity and craftsmanship, as well as several affordable quality name brands and a 35-70% off sale rack. Darlene and her staff strive to present children’s clothing that can please everyone, whether it’s traditional or trendy. “I always keep in mind what is appropriate. We have moms from all over the U.S. tells us they can’t find what we have anywhere else,” adds Darlene. From babies to tween sizes, The Swing Set specializes in babies to toddlers for boys and girls and up to tween size 16 for girls. The Swing Set is located at 1454 Sadler Road, next to Starbucks. a family affair The jewelry of Gogo Ferguson and Hannah Thomas is a shared family passion. BY KAREN MILLER • PHOTOS COURTESY OF GOGO JEWELRY
J
ewelry designer Janet “Gogo” Ferguson, a descendent of Thomas Carnegie, grew up on Cumberland Island, where she spent all of her days immersed in the majesty of a pristine island paradise. Her eccentric and fascinating grandmother, Lucy Ferguson, taught Gogo how to look at nature in remarkable ways. But it was her aunt, Cindy McLauchlan, a creative and accomplished artist, who took Gogo under her wing and introduced her to a new hobby—searching for and collecting the bones of deceased wildlife and sea creatures, and crafting them into jewelry. Gogo took her jewelry making to the next level when she began matching up her natural designs with precious stones, then adding silver and gold findings, then eventually casting her designs in gold, silver, and platinum using the lost wax method. She vowed never to allow her designs to be mass produced and to make each piece by hand. And she is still doing just that, over 25 years later. So what do you suppose happened when the likes of George Bush and Hilary Clinton began buying her jewelry? Gogo’s daughter, Hannah Sayre-Thomas, a talented designer herself, came on board, and now the mother and daughter team have taken Gogo Jewelry to the top of the jewelry world, selling their works of art to prestigious places such the famous Queen Mary Cruises, in addition to their own stores. And this year, the celebrated High Museum of Art in Atlanta is hosting a special show called Gogo: Nature Transformed, an exhibition that took two years for Gogo and Hannah to put together. Gogo: Nature Transformed is a retrospective of Gogo’s jewelry-making, from her earliest designs to Gogo’s and Hannah’s latest objects d’art, including a large seaweed wall hanging, and a sea urchin ottoman. “Hannah and I design together, on every project,” says Gogo. “I’m a little more traditional, and she is more contemporary. It is so interesting to work together and exchange ideas.” Recently the two women have begun to make more use of high-tech equipment to manipulate found forms using 3-D scanning technology. They also work with artisans who hand pound Alpaca, a metal alloy consisting of copper, nickel, and zinc, creating more fluid, interpretive works that are still based on the natural elements Gogo and Hannah find both in their travels and in the rarified environment of Cumberland
Island. Their latest endeavor is creating a line of home wares— functional pieces of art—made completely by hand. For the designing team of Gogo and Hannah, family means everything. “The most important thing to us is happiness, and the closeness of our family,” says Hannah. “Gogo and I take long walks on the beach in the early morning, and get so much of our inspiration from those walks.” She adds: “This is what we have always wanted in life—to work as a family, and live on Cumberland Island together.” Today, Gogo and Hannah sell their jewelry to celebrities such as Carly Simon, Wes Craven, John Taylor, and Jenna Bush. They have been featured in People Magazine, and on CBS Sunday Morning. Gogo Jewelry is available at several carefully selected boutiques around the world, including Amelia Island’s own Lindy’s Jewelry on Centre Street. Gogo: Nature Transformed will be at the High Museum of Art through August 2013. For more information, visit www.high.org or www.gogojewelry.com.

Fitness for Life With benefits for the mind and body, yoga is gaining in popularity on Amelia Island and across the country. BY MARY MAGUIRE • PHOTO COURTESY OF GO YOGA, AMELIA ISLAND
D
espite its widespread appeal and bendy brilliance, yoga isn’t always pretty. Ask Gianna Ragona-Suarez, the owner of Go Yoga, Amelia Island. She has just asked her class—eleven people balancing on their hands and one knee—to release their fingertips from the mat and rest their face—specifically their left cheek—on the floor for balance. The group conforms, though as one student lifts her fingertips off the ground, she falls over. The tumble makes the student laugh, but she quickly gets up and recovers the position. “We may not look pretty, but this stretch is good for us physically and mentally,” says RagonaSuarez, who leads the class with a steady calm, sunny disposition and cheerful encouragement. “Falling is fine, just don’t forget to breathe,” she says to the class where several people are now wobbling and shaking but all appear determined to stay in position. Finally, Ragona-Suarez says the magic words, “And release the pose.” There is a communal sigh from the group, a collection of people in various shapes from taut to tubby and ages spanning from early 20’s to late 60’s. Ragona-Suarez herself is 72, and that number is difficult—if not impossible—to believe because she muscles through sit-ups and push-ups like a Navy Seal and looks like a catalog model for form-fitting yoga clothes. “Yoga is a great discipline for the body and the spirit,” says Ragona-Suarez, who purchased the studio in August last year. “I practice every day.” Ragona-Suarez started practicing yoga in the 1970’s after she hurt her neck in a car accident. “For two years I couldn’t move, I couldn’t work, and I suffered terrible migraines,” says Ragona-Suarez. “A friend suggested yoga and after a few sessions I felt so wonderful that I thought this is too good to be true.” Ragona-Suarez is hoping more people discover yoga’s allure as a path to physical—and mental—wellness. The studio offers classes for beginners to advanced practitioners, teacher training for certification and recently has caught the wave on Stand-
Up Paddleboard (SUP) Yoga, a growing form of yoga that is practiced on the water, specifically on a stand-up paddleboard. “The boards are wide, stable and a good way to challenge core muscles,” says Ragona-Suarez. “Falling off the board into the water is almost a relief because it’s a great way to cool off.” Yoga is gaining popularity on the island and across the United States. According to a 2012 study produced by Yoga Journal, the number of Americans who practice yoga tops
more than 20 million. In 2008, there were 15.8 million yoga practitioners in the U.S. The study also looked at why people practice yoga. The leading reason? Flexiblity. More than 78 percent of respondents said they were motivated to improve flexibility. Overall conditioning, stress relief, improved general health and fitness level were other popular motivational factors. continued on page 65.

attractive edibles Versatile herbs like pineapple sage and Cuban oregano add color and flavor to your garden.
BY BETTY MORRELL
S
ummer is definitely here, bringing with it the scent of flowering plants. It is so nice to see an array of colors in the garden. I have written about many different flowers, shrubs, and trees, but have you thought about planting herbs in your garden? Salvia elegans, known as Pineapple Sage, might already be in your garden as a perennial plant. This sage is a shrub-like herb that offers an appealing pineapple scent and vivid red flowers. The leaves have a pineapple scent and flavor. In our area, this Salvia could be a year-round bloomer. If it’s hit a long, hard freeze, it will die back and return in the spring. Like many Mediterranean herbs, pineapple sage does not require specific soil nutrients, and it isn’t prone to disease or insect infestations. I have used the leaves in teas and salads, and also on ham. It has a lovely, delicate flavor. Be sure to plant your pineapple sage where it will have room to grow, in full sun to dappled shade. Because the plant gets bushy and heavy, it is wise to stake the plant with a bamboo stake about six inches behind the main stem. As

the plant grows, loosely tie the stem to the stake in order to give it support on windy days. Mulch it to conserve water and suppress weeds. Add more stakes as the plant grows so it won’t flop over or droop in high winds. Pineapple sage needs water once a week during blooming season. You can harvest sprigs of the plant by cutting into the stem at an angle with clean pruners. Never take more than one-third of the plants foliage at one time. Cut pineapple sage down to a few inches above ground after blooming period ends in late fall or early winter. If your plant has not gone dormant, then prune down to the ground after the fall blooming period. Examine the plant in early spring for signs of new growth, and prune any old growth that was left from the previous season. Remember to enrich the soil in spring with compost or

aged manure in a ring around the base of the plant. Worked it in gently and replace the mulch. The Cuban oregano is a plant which belongs to the Plectranthus genus. This is a succulent herb that can be used with many foods, as you would oregano or thyme. It has an attractive, thick, slightly furry leaf that also makes an attractive accent plant. This tropical perennial is used mainly in Cuban cooking and it can reach two feet in height. The leaves release a very strong aroma when handled. Cuban oregano is a good-looking plant that will thrive with minimal care just about anywhere you plant it. Since it is a succulent, it can do well even when neglected. It’s a perfect plant for someone trying to develop a green thumb. The plant grows easily, but doesn’t grow out of control. This pretty plant also blooms in several different colors, depending on the strain. They can be a lavender rose and pastel violet or lime green. As always, email any questions to bamorrell@aol.com. In the meantime, Happy Gardening!

n a recent trip to Florence, Italy, Phyllis and Frank Helmes learned how to cook gourmet Italian cuisine in the traditional manner. While others were visiting the Piazza della Signoria and the statue of David (they saw those on an earlier trip), the couple spent their days creating sauces, soups, and homemade pasta from scratch. Their Italian trip reflects their love of cooking, and, in the same way, so does their home in The Reserve, located on the south end of Amelia Island. While the couple’s spectacular exhibition kitchen is the heart of their home, everything about their residence speaks of their love of food, art, and culture, all set in a cozy and inviting ambience. The kitchen, which features mahogany cabinets and curved counter seating, encourages guests to take a seat while Phyllis and Frank are cooking, or better yet, grab a knife and join them in the fun! Their pride and joy, the stainless steel gas stove, is where Phyllis works miracles in her kitchen. “This stove is

perfect—a no-brainer, easy to use,” laughs Phyllis. She points out the oversize stove top, numerous burners, and a proofing oven, which they use to make their own bread. “We love to entertain,” says Phyllis. “And we have friends over whenever we can for all sorts of special events and celebrations.” It’s easy to see why their friends would flock to this house. The open living space allows for an ample number of guests to mingle about the kitchen, living room, and dining area. Nearby is another sitting room, sort of an open parlor, where guests can convene for some quiet conversation. Just beyond the kitchen, living, and dining area, sliding glass doors open to an enclosed lanai, which feels more like a second living and dining room. Walk outside of that space, and you’ll step out onto a charming patio, where you might sit and enjoy views of their backyard, rich with birds and wildlife, or, at night, warm yourself by their fire pit.
Phyllis and Frank enjoy doing everything themselves around their home, and that includes landscaping and gardening. Pots of brightly colored flowers, hedges of native plants, and even a small but thriving vegetable garden are meticulously maintained. Lemon, lime, and grapefruit trees line one side of the house, their fruits nearly ready to be picked and shared with their neighbors. The Helmes moved to Amelia Island from Wilbraham, Massachusetts fifteen years ago. Phyllis is a retired news production editor with The Wall Street Journal. Now she can be found working at The Book Loft on Centre Street. Her husband’s business is in the high-tech industry of photonics. They owned two other homes on the island before they settled into this Brylen home in The Reserve. Their daughter, a school teacher and artist, also lives on the island. Another daughter lives in the Boston

area, and their son lives in Newport Beach, California. When the couple first moved to the area, they decided to fill their home entirely with original and local art. After many years of visiting local galleries and attending the annual Eight Flags Shrimp Festival, the 3-bedroom, 3-bath home is filled to the brim with beautiful and eclectic drawings and paintings, including many by their own daughter. Besides her love for original art, Phyllis has a knack for interior design, and has decorated the house entirely on her own. Besides the many accessories and items she has collected throughout the years, Phyllis purchased a set of “slipcover” furniture for the living room, which allows her to change out the room’s look with the seasons. At present, the furniture sports a summery golden and cream striped cover, while the winter set is a cozy and warmer design, a perfect match for a toasty fire burning in the fireplace. No matter what the season, Phyllis and Frank Helmes are keeping busy— working in the yard, entertaining their friends, rolling out pasta like pros—and enjoying everything life has to offer in their lovely and welcoming home on Amelia Island.

Café Karibo With a lovely garden patio and relaxed ambience, Café Karibo expands its culinary charms with a distinctive brunch. BY KAREN MILLER • PHOTO BY WILLIAM RASER
W
hen I heard recently that Café Karibo had brought back their Sunday brunch menu, I was thrilled. Of course, Café Karibo continues to serve their outstanding lunch and dinner favorites every day of the week, but brunch is one of my favorite meals, and their brunch menu is just a little different than other restaurants. When I want brunch, that means I don’t want breakfast. I want something a little more interesting than eggs, toast, and coffee, and Café Karibo hits the mark. My beau Bruce and I stopped by Café Karibo on a recent Sunday, and the place was hopping, as usual. We love to eat in their courtyard, so we grabbed a table and said hello to our many friends whom we discovered there. So many people we know love to have brunch at the Karibo! We began our meal with a Bloody Mary for me and a Mimosa for Bruce. My Bloody Mary was good and spicy, with
horseradish and seasonings, garnished with lemon, lime, and olives. Bruce’s Mimosa was served in an interesting way. He was given a small bottle of champagne, Kenwood Cuvee Brut, and a little pitcher of orange juice, with a champagne glass, which
allowed him to pour his own drink and make it as strong or weak as he wanted. The advantage to serving a mini bottle of champagne is that it’s very fresh and bubbly, unlike champagne that may have been opened already and is beginning to lose its fizz. Nice touch, I say! We ordered a giant Lemon Poppy Muffin to snack on while we waited for our brunch items to arrive—for me, a Breakfast Burrito, and for Bruce, Steak and Eggs. Karibo’s Lemon Poppy Muffin is one of my favorite goodies at the restaurant. It’s loaded with blueberries, and iced with a lemon glaze. Perhaps I should have eaten it for dessert, but I still had plenty of room for my meal. The Breakfast Burrito is a tortilla filled with eggs and black beans, cheese, sour cream, served with homemade salsa. It’s quite substantial and very delicious. I love that Café Karibo makes their wonderful fried potatoes that are cooked with red bell peppers and onions. And a nice piece of orange on the plate makes this dish a winner. Bruce’s Steak and Eggs was a fabulous brunch dish. The eggs are cooked sunny side up and served on top of the tender, sautéed steak. There is a fresh vegetable medley served with this dish, with zucchini, broccoli, yellow squash, and onions, and there’s a savory demi-glace that pulls it all together. Naturally, Café Karibo has their regular menu on Sundays, too, so you can order any of your favorites, no matter what time of day. They also have a private catering menu, and a banquet room upstairs, where they host parties, weddings, fundraisers, and the like. They will also create a custom menu for your special event. Situated in a charming historic building in downtown Fernandina Beach, an eclectic palette of colors and furnishings adds to the relaxed ambience that permeates Cafe Karibo. And with its large garden patio shaded by huge oak trees that welcomes guests, it all adds up to a fun and unique culinary experience! For more information, call (904) 277-5269 or visit www.cafekaribo.com.

Fitness from page 35. Julian Sauer, a 60-year-old certified public account on Amelia Island, practices yoga two to three times a week to release stress. “Yoga got me through tax season,” he says. Sauer attends classes at Go Yoga with his wife, Merle Sauer, 58. “I had back surgery and have fused vertebrae, so I have to be careful with my spine,” she says. With any activity, it is important to consult with your doctor first, especially when the back and spine are involved. Dr. Joseph Lee, a chiropractor with a bustling practice on S. Fourteenth Street, believes yoga can offer significant benefits to people seeking a holistic approach to wellness. Further, he believes that participating in a structured class taught by a trained professional offers greater benefit than sitting at home and popping in a videotape. “You need someone to sure that you perform the correct pose with the correct alignment,” says Dr. Lee. “And participating in a class with likeminded people helps you stay plugged in and motivated.” There are some excellent yoga studios to choose from, including Go Yoga, Y Yoga, Dome Healing Center, and Mind/Body Fitness. The Fernandina Beach Parks & Recreation department also offers several yoga classes, including sunrise sessions at the beach. Additionally, instructor Brenda Kayne has created a yoga class for people who need to stay off the floor because of age or physical ailments. “Yogapods (ottomans topped with a yoga mat) allow people to move but give them stability, freedom and peace of mind as they go through a full yoga class,” says Kayne. People of all ages can enjoy yoga. What’s your excuse for not trying it?

Vintage Summer Entertaining
Cold Leek Soup with Fresh Herbs
BY KAREN MILLER • PHOTO BY SHERRY GARBARINI
I
recently pulled some vintage tea cups that belonged to my mother out of my china cabinet. I then discovered all sorts of other quaint table items in there, and I decided immediately to host a vintagestyle dinner party. This summer, my garden is growing like crazy, so I thought I would try to create a menu using only my garden’s vegetables and herbs, along with some fresh Fernandina shrimp, and serve it all on these lovely dishes. What a fun challenge! I always serve soup when I have people over for dinner, and, because it’s summer, I decided to make a cold leek soup with herbs and serve it in the little teacups, garnished with more fresh herbs and bleu cheese crumbles. Everything in that soup came right out of my garden, and the mix of various herbs—parsley, mint, arugula, thyme, and chives—created a bright and almost peppery bouquet. A perfect summer soup! My tomatoes had not ripened yet, so I sliced up the green ones and made fried green tomatoes and some remoulade sauce to go with them. My green beans are so prolific I have to pick them every day, and we’re eating them at each
meal this summer. For my dinner party, I wanted to make them a little more special, so I French cut them lengthwise into strips, then julienned some carrots to go along with them. This is a very labor intensive task, but well worth the extra time because they look beautiful, and I love the texture. When I cook shrimp, I like to keep it simple. I peeled and deveined them, placed them in a casserole dish with lemons, garlic, and butter, sprinkled a bit of Cajun spices over them, and baked them for a few minutes in the oven. Everything looked great, and I was very happy that I had created a dinner for my dear friends using only local, seasonal foods, most of them grown by myself. However, I did receive a special request from one of my guests for an apple pie with a cheddar crust, and how could I refuse? Even though apples aren’t local or in season right now, apple pie is always a hit. My mother taught me how to make a perfect apple pie when I was a very young girl. Between her beautiful vintage dishes and tablecloths, and her pie recipe, I think she would have been proud.
68 AMELIA ISLANDER MAGAZINE • JULY 2013
Ingredients 2 large leeks, cleaned and thinly sliced, white part only 2 cloves chopped garlic 3 tbsp. extra virgin olive oil 3 sprigs thyme, tied with string 1 quart vegetable stock 1/2 cup dry sherry 1 cup heavy cream Salt and pepper to taste 2 very large handfuls of herbs, leaves only (no stems allowed), washed and dried. Preparation Sauté the leeks and garlic in the olive oil for a few minutes until they begin to soften. Add the thyme, stock, and sherry, and simmer until the vegetables are tender and the alcohol from the sherry is cooked off. Remove the thyme from the soup. Chill the soup for several hours. Transfer the soup to a blender, add the fresh herbs, and blend on high until pureed completely. Transfer to a pitcher, and whisk in the heavy cream. Taste and add salt and pepper to your liking. Chill until ready to serve. Pour into cups or mugs, and garnish with more fresh herbs and bleu cheese crumbles. Serves 6. For a delicious apple pie recipe, visit www.ameliaislander.com.
