Each year, the July issue brings our annual “Fun in the Summer Sun” guide, in which we highlight some of the varied and exciting activities that are available on and around the island during our beautiful summer season. Putting together this issue always makes it difficult for us to stay in our beach chairs because we are reminded once again about all the fun things to do around Amelia Island, which our summer visitors are enjoying, and we want to get in on the fun, too! We don’t like to admit it, but for a good part of the year, as we struggle to keep up with the responsibilities of work, family, kids’ activities, and so forth, we sometimes forget that we live between an unspoiled, miles-long Atlantic Ocean beach and the tranquil Amelia River and Intracoastal Waterway. That’s why we always commit in the warm summer months to getting out of the house as much as we can. When summer arrives, we can all hardly wait to abandon our usual routine and start kayaking, surfing, fishing, cruising, and whatever else we can think of to bring the extraordinary into the everyday ordinary of our lives. We’re ready to jump on a river cruise, take a sailing trip, hop into a kayak—that’s our summer homework! We like getting out on the water, but if you prefer keeping your feet planted firmly on the ground, there’s plenty of other fun things to do, like taking a Segway tour, biking off the south end of the island, or grabbing your tennis racquet or golf clubs. There are a lot of very good reasons that people from all over the Southeast visit our island paradise in the summer, so get out and enjoy it—whether you live here or you’re here for a much-needed vacation. Of course, we don’t want you to get so busy searching out summer fun that you forget to enjoy a quiet walk on the beach or find a good book to read. And while you’re relaxing, we hope you’ll enjoy the rest of this month’s Islander, which includes an article on the wide variety of excellent trails available on Amelia Island for biking, walking, or running; a feature on the striking swallow-tailed kites, which travel north from South America to show off their elegant flight skills above Amelia Island each summer; a “Fernandina Faces” feature on Evelyn McDonald, president of Amelia Lifelong Learning, who reminds us that learning is an adventure for our entire lifetime; an “Island Entertaining” on an easy grilled dinner that won’t keep you sweating over the hot coals too long; and much more.

TAKE TO THE TRAIL Here in Northeast Florida, our favorite paths are paved with sand, and our local beach parks provide people of all ages access to a spectacular shoreline and the crashing waves of the Atlantic Ocean. But there are lots of other paths you can take throughout the island, too. Egans Creek Greenway, with its grass-covered paths, serve as a network of trails that are suitable for walking and bicycling, and its environment exhibits a variety of natural wildlife and vegetation. Local wildlife, such as alligators, snakes, bobcats, and many birds, may be enjoyed from a distance. Friends of the Amelia Island Trail have completed a bike path that covers over seven miles, between Peters Point County Park to the south end of the George Crady Bridge Fishing Pier State Park, where it connects to Big Talbot Island. The trail takes advantage of the tree canopy alongside A1A so that much of the trail is shaded and shielded from the wind. A map of the 14 AMELIA ISLANDER MAGAZINE •

In addition, the Amelia River-to-Sea Trail is set to be completed by the end of this year, along Simmons Road from South Fletcher Avenue westward to the city ball fields off Bailey Road and then onward to the new privately-funded Crane Island development on the Amelia River. White Oak Conservation (904-225-3200) offers “Safari from the Saddle” horseback rides with experienced guides through manicured trails, while passing by a number of endangered and threatened species. Rides include lunch and a chance to talk to their animal experts. Active outdoor adventure-seekers will want to check out the local maritime forests, state parks, and green spaces located in and around Amelia Island. Fort Clinch State Park, Pumpkin Creek Preserve State Park, Little and Big Talbot Island State Parks, Fort George Island Cultural State Park, Yellow Bluff Fort Historic State Park, and George Crady Bridge Fishing Pier State Park all provide a remarkable wilderness experience, offering hiking biking, fishing, camping, picnicking, bird watching, and beachcombing for the whole family. Only a short day trip from Amelia Island, the Okefenokee National Wildlife Refuge is one of the world’s most unspoiled, fascinating, and precious black water wilderness swamp in North America. ALS GOLF CLASSIC CELEBRATES 14TH YEAR ON AUGUST 3 When John Louis O’Day retired on Amelia Island in 1996, little did he know that in just two short years, he would be diagnosed with ALS, or Lou Gehrig’s disease. Within four years from diagnosis, O’Day would lose his life to this progressive and fatal disease that slowly robs the body of its ability to walk, speak, and breathe. In 2002, O’Day left behind his wife, Ardith, five children, twelve grandchildren, and many friends and family members. After O’Day’s passing, his son Mark decided to start a yearly golf event to honor his father’s memory and raise money for the ALS Association Florida Chapter. “Besides money going to funding research, proceeds also help families whose loved ones are suffering from the disease,” said Mark. “The outpouring from the community and our sponsors has been overwhelming.” This year’s tournament will be held on Friday, August 3 at The Golf Club at Long Point. Registration and Lunch Buffet will be held from 10:30 a.m. to noon. A Shotgun Start is at noon, which will be followed at 5 p.m. by a Dinner Reception with raffle prizes, awards, and a silent auction. n Amelia Island, William Maurer is well known for his watercolors depicting the town of Fernandina Beach, with its quaint streets, harbor, and shrimp boats. These images are featured in his book, Sketches of Amelia Island and Fernandina Beach: The Mark of William Maurer. In his reflections in the book, Maurer expresses in a quiet way his inner emotions and love of these subjects. In 2009, he was selected by a jury to represent the community’s favorite event with his Shrimp Festival poster design. At present, William recently completed a 56-foot mural for Baptist Medical Center Nassau, featuring the beauty of Nassau County from the outer county to the beaches. He has also painted a very large canvas for the Fernandina Beach Library’s historical room, depicting the early history of Amelia Island. Prior to moving to Amelia Island in 1979, Kathleen Maurer attended the Ringling Art School in Sarasota. Currently she teaches acrylic painting, sharing her knowledge and introducing beginners to the medium. Her inspirational manner of teaching motivates students to return time and
time again. Offering an art class each week, she believes that painting is the best distraction, offering relief from stress, all while having fun. Kathleen has also recently published a coloring book for children entitled The First Enchanted Amelia Island Coloring Book. The Maurers visit France frequently, having resided part time in Cannes for many years. Coupled with his love of books, William is fluent in French and history, leading to the development of his formidable skills. Maurer’s watercolors are rendered in the style of Impressionism. Maurer’s late close friend, Neal Coleman, referred to the artist as “the master of perspective.” His home portraits and commissions are never a disappointment. Maurer received a Master of Architecture degree from Harvard and enjoys painting as an extension of the architectural experience. ichele Herron’s love for needlepoint began when she was young, and it has grown as the craft has grown, growing her business as well. When her shop, The Bristly Thistle, moved to its new location at 811 Beech Street in 2016, it was the perfect “next step” in her life and love of needlepoint. She and her late husband, Chris, owned a needlepoint store in Michigan. Nine years ago, they moved the business to Fernandina Beach, where it remains one of the top-five internet needlepoint businesses in the country. “We have customers from all over the world,” says Michele. “We ship to Europe, Africa, many places. We have the most wonderful and dedicated customers.” Bristly Thistle’s needlepoint canvases are all painted entirely by hand, by artists from all over the country. Michele attends needlepoint shows each year, seeking out new artists and designs. An expert needlepoint teacher herself, she teaches a class at a retreat in Montgomery, Alabama called “Canvas: A Needlepoint Adventure.” In addition, Michele invites distinguished instructors to give classes at The Bristly Thistle. Michele also holds special Trunk Shows at her shop, where she introduces new needlepoint artists to her customers, allowing them to see the depth of their work. “Today, needlepoint has taken on a whole new vibe. ace up your hiking boots, pump up your bike tires, slip on your trail runners, and hit the trail! Summer is here, and what better time to get out on one of Amelia Island’s numerous hiking and biking trails? From north to south and east to west, paved and off-road trails provide a multitude of biking and walking experiences, through maritime forests and stretches of beach, or along the city bike lanes throughout the island. Amelia Island and the surrounding area has numerous hiking and walking trails suitable for people of all ages and abilities. The Fort Clinch Trail is a 3-mile moderately trafficked trail located in Fort Clinch State Park that can be accessed near the front gate. To make the trail a full loop of about six miles, you can hike the trail to the fort, then walk back along the beach for a good work out! The trail is also makes for a challenging bike ride. Egans Creek Greenway includes several miles of flat dirt paths that let you get close to nature. You can access this area from three points: behind the Atlantic Avenue Recreation Center (2500 Atlantic Ave), at the trail crossings on Jasmine Street, or from the access on Sadler Road near the Residence Inn Amelia Island. The Greenway is also a great off-road biking trail for all ages, but fatter tires are recommended. 35 AMELIA ISLANDER MAGAZINE •

The Dune Ridge Trail is a 4-mile loop located at Little Talbot Island State Park which takes you through a tropical forest, sand dunes, and out to the beach. From there, you can walk a mile-and-a-half along the Atlantic Ocean on a beach covered in shells and driftwood back to the parking lot. The Amelia Island Trail (AIT) is a 6-mile paved, off-road, multi-use path suitable for all types of bicycles and riders. The AIT is a designated part of the National East Coast Greenway, a long-term project to provide a paved, off-road cycling path connecting Calais, Maine to Key West, Florida. The AIT runs along the south end of Amelia Island and can be accessed at numerous locations running parallel to South Fletcher Avenue or A1A. The northern trailhead is at Peters Point Beachfront Park, and the trail terminates on the southern side of the Nassau River. Amelia Island’s premier casual riding venue, it is extremely popular with visitors and locals alike. The trail is mostly shaded and flat, and on its most southerly segment through the Amelia Island State Park (entry fee for cyclists is waived), it offers a trafficfree ride via the Crady Fishing Bridge over the Nassau River. There are several Amelia Island roads with marked bicycle lanes making them very suitable for accomplished JULY 2018

“road cyclists.” Cyclists must obey all traffic laws, rules, and signals. The most popular routes are along South Fletcher Avenue or A1A from Atlantic Avenue south to the Nassau River and across the river to the Talbot Islands, and alongside the Amelia Island Parkway. Depending upon the time of day and subject to any special events in progress, many of the island’s secondary roads offer safe cycling. Centre and Front Streets in the historic downtown provide access to river views, restaurants, and shops, but you must share the road with motorists, and city ordinances prohibit bicycles from riding on the downtown sidewalks. Connecting downtown to the beach, Atlantic Avenue is a wide boulevard with ample room to cycle safely on the road or on the sidewalks. Of course, another favorite of local cyclists is the paved road inside Fort Clinch State Park, which offers a great shaded ride on a warm day. The Amelia River-to-Sea Trail (ARTS) will be completed by fall of this year, and runs alongside Simmons Road from South Fletcher Avenue westward to the city ball fields off Bailey Road, and then onward to the new privatelyfunded Crane Island development on the Amelia River. Skies
With its striking appearance and exceptional flight skills, the migrating Swallow-tailed kite brings a singular beauty to the summer skies above Amelia Island. STORY AND PHOTOS BY GAIL PFOH
I
F YOU ARE LUCKY ENOUGH to live on or near Amelia Island, you are lucky enough. Should you catch a glimpse of a Swallow-tailed kite floating overhead, well, then you are exceptionally lucky. Swallow-tailed kites are large black-and-white raptors with a long, pronounced forked-tail. They use this tail as a rudder to glide effortlessly through the skies, rarely flapping their wings. According to The Crossley ID Guide to Raptors, “the Swallow-tailed kite is perhaps the most striking and graceful bird on the planet! In flight, it is simply mesmerizing, moving through the air with unparalleled elegance, buoyantly floating above the treetops in search of prey.” You are not likely to confuse this graceful flyer with any other bird species. From below, it is black-and-white with a snow-white head. If you see their topside, you will see their black iridescent
plumage and always that deeply-forked tail. These kites have a 48” wingspan, yet are able to turn and dive in the blink of a nictitating membrane to pluck an anole from a tree branch or a dragonfly right out of the sky. Look for them over the Egan’s Creek Greenway, in Yulee, over Amelia Park, in Flora Parke, or over the fields at the Fernandina Beach Municipal Airport as they glide at low altitudes feeding on flying insects, frogs, lizards, nestling birds, and even snakes! Swallow-tailed kites spend most of them time aloft, and unlike other raptors, they usually eat as they fly. They even drink on the fly! They use their exceptional flight skills to swoop low over a pond then skim the water drinking as they go. When Swallow-taileds arrive in our area in March, it is the culmination of an approximately 5,000 mile migration from South America. They fly an arduous, perilous ‘highway in the sky’

subject to many dangers along the way. Some must cross the Andes Mountains as well as the Caribbean, often during rough weather. Many Swallow-tailed kites lose their lives during migration. The Avian Research and Conservation Institute tells us that 87% of mortality is associated with migration, so when you see one of these beautiful birds, remember how far they have flown and the many obstacles they have overcome on their journey. Aviation Research and Conservation Institute (or ARCI) works to develop management techniques for these atrisk raptors. ARCI stresses that these techniques must be applied now before recovery becomes impossible. Since 1988, ARCI has studied the Swallowtailed kites here in the southeast. Gina Kent is a Research Ecologist and Coordinator at ARCI. She explains that since 1996, ARCI has used satellite telemetry to study the ecology of Swallow-tailed kites, including the

E
velyn McDonald is committed to learning. The opportunity to learn never seems to stop, no matter our age, if we are on the lookout for it. As president of Amelia Lifelong Learning, McDonald is insuring that Amelia Island and Nassau County have plenty of opportunities to take part in classes offering a potpourri of interesting subjects. McDonald moved to Fernandina Beach from the Maryland suburbs of Washington, D.C. in 2006. She first discovered Amelia Island while on vacation, and like many others before her, she soon decided that Amelia Island would be a perfect choice for her retirement. She has an M.S. in Technology Management from the University of Maryland’s University College and a B.A. in Spanish from the University of Michigan. Amelia Lifelong Learning recently celebrated 20 years of offering courses to the community. Many of its teachers come from academia, while others have been successful in specialized fields. Courses are offered twice a year, in the spring and fall. Courses may be offered during the summer months as well. Amelia Lifelong Learning’s catalogue includes course offerings in literature, history, languages, technology, arts, and current events, among other things. She credits the program’s success to the dedication of volunteers, teachers, students, and her board. The lifelong learners taking the classes are not typical retirees. They are looking to explore a variety of topics, from photography to wine tasting and everything in-between. Among its current offerings, Ron Kurtz shares his knowledge and passion for the theatre by creating courses in partnership with Amelia Community Theatre. From the programs earliest days, Bernie McCabe has offered classic literature courses. Photography classes are offered by island photographer Lee Gallardo. Norman and Marilyn Wesley lend their love for literature to a variety of courses. You can even learn to fish, with local Captain Lawrence Piper teaching the basics. His final class is cleaning, cooking, and eating a fish dinner of locally caught fish.
McDonald herself teaches a course she calls Implications of Artificial Intelligence. So why this topic? “I spent my professional career in the computer field,” she shares. “It seemed to me that given the driverless car, a discussion of the implications of artificial intelligence would be appreciated.” She was right. Her course has been popular. McDonald writes an Arts and Culture column for the Fernandina Observer, an online newspaper. She takes part in two writing groups and the Friends of the Library Book Club. She is also on the Dean’s Council for the Carpenter Library at the University of North Florida. She shares her home with her two cats—Sugar, the alpha cat, and Bodie, whom she describes as large and loving. Always eager to explore new horizons, she treasures her yearly trips to Europe and Hawaii with her daughter and grandchildren. Asked about her involvement in Amelia Lifelong Learning, she shares, “At our stage of life, we have a unique opportunity to learn something new for the sheer pleasure of learning it, not for grades, work, or such. fabulous foliage If you want to add new life to your summer garden, try a tree named Sweet Tea, two new Dianthus called Coconut Surprise and Raspberry Surprise, or variegated shrubs. BY BETTY MORRELL

ummer has arrived with a bang! Lots of fireworks, barbecues, boating, vacations, and of course, a little gardening. With all the rain we had earlier, plants, trees, and grass have been thriving. An exciting new tree is the unique Sweet Tea Mountain Gordilinia. Fried egg-like flowers with showy white petals accentuating a large, eye-catching, gold floral center bloom from July through September. These flowers resemble beautiful Camellia blooms. They have a light sweet fragrance and measure five inches in diameter. When temperatures turn cool, this Sweet Tea’s foliage turns beautiful shades of red and orange. Mountain Gordilnia grows best in morning sun and afternoon shade. Because this tree is new on the market, its mature size is not yet known, but it is estimated that it will grow 20 to 30 feet in height and 10 feet wide. As a smaller landscape tree, it is ideal as a single specimen in the yard, a foundation tree, or mixed in with a perennial and shrub border. For nighttime landscape, up lighting would beautifully accentuate its

branching structure and form. Planted in the ground or in large, decorative containers, a pair framing a front door would be ideal to greet visitors with a warm southern welcome. Dianthus is a hardy little perennial that most gardeners have tucked somewhere in their garden in full sun to part-shade. This adorable plant adds color and spring fragrance. Dianthus Coconut Surprise has a spicy fragrance, with double and semi-double white blooms and burgundy centers. Once established, these plants are droughttolerant. Plant them in containers, or as a border or accent. They are very versatile, with a compact growing habit of 10 inches by 10 inches. Dianthus Raspberry Surprise is fragrant, with double pink blooms with

burgundy centers. A little larger than Coconut Surprise, it has a showy upright habit of 10-inches high and 12-inches wide. Fertilize these plants throughout the growing season. Both these plants are new and belong to a new series called Scent First. For salt-tolerant shrubs, try a new holly called Low Rider, which has a dense growth habit that is perfect for topiaries, borders, containers, or as a hedge. Besides being salt-tolerant, this compact shrub is disease- and pest-resistant. Plant it in full sun to part shade. Another striking new shrub is Romeo Cleyera, with attractive buttery-golden variegation in spring and summer, and rose-colored variegation in fall and winter. Pest-resistant and heat-tolerant, Romeo has year-round interest with its changing colors. Use it as an accent plant, border, container, edging, mass planting, or as a privacy planting. is and hers is now theirs. Both widowed, Brian and Candace Loftus found each other, and they have successfully blended their lives in the renovation of a marshside home in Amelia Island Plantation. From Chicago, the couple met after each had lost their spouse, and they found that they had a lot in common. Candace’s husband had been a lawyer, and Brian was a successful practicing lawyer in Chicago. They both love travel, music, and art. Between them, they have five children and nine grandchildren. Brian owned property on the beach side of Amelia Island Plantation, where his family vacationed for years. When he and Candace were considering a home on the island, they

island home looked at many properties and found the perfect marshside view, but not the perfect house. Set back from the street, the house has a canopy of live oaks and amazing views of the tidal marsh and Amelia River, but the house needed a lot of work. The house was custom built in the 1980s, and it had many unique details that were not consistent with what the Loftuses had in mind. The original house was divided in half, with bedrooms on one side and the living areas, including the kitchen, on the other. Oddly incorporated within the house was a cage-like structure where the original owners grew orchids. Creating the delightful space that welcomes visitors today took quite a bit of work. The couple, both experienced in design and building, took on the challenge. Brian was general counsel for

a large building company, and Candace had her own design business, built homes on spec, and developed a 30-townhome project in Illinois. They worked closely with their contractor, Bryan Bunk, and Amelia Island interior designer Julie Johnson. Johnson worked closely with Brian and Candace. Both had collected a variety of wonderful art, and they wanted to use some of their own furnishings. The challenge was marrying the two while adding a few new items to tie it together. The couple was often traveling, so Johnson would coordinate on Facetime and walk the couple through the house on-line. Once inside the front door, a beautiful open area extends all the way to the back of the house, revealing a series of decks and 60 AMELIA ISLANDER MAGAZINE •
views of the marsh. The large open area offers a gallery-like space for the couple’s collected artwork and two treasured clocks. Decor in the house is a rich combination of his and hers. Each brought a clock to the marriage. Brian’s wall clock is French and dates to the 19th century, chiming twice rather than the usual once on the hour. Candace’s clock is an English farmhouse clock, purchased in Richmond, England and also dating to the 1800s. The redo of the kitchen was important to both Brian and Candace. Both had designed oversize kitchen islands in prior homes, and they wanted one in their renovated home. The generous space allows plenty of room for entertaining at home. JULY 2018

Much of the furniture in the house belonged to parents of the couple. Favorites of Candace are colorful art deco Chinese rugs from the 1920s, which add bright touches without distracting from the marsh views. The glass dining table belonged to Brian and his first wife; Candace’s mid-century dining chairs were a great match. An unusual round marble pedestal table in the living room belonged to the parents of Brian’s first wife, who had it in their home in Hanover, Germany. It survived a bomb that hit their home in a World War II air raid. A desk in the couples shared office is a partner’s desk that belonged to Candace’s husband and was originally from the old Chicago Public Library. Photos from Brian’s career adorn 62 AMELIA ISLANDER MAGAZINE •
the walls. Specializing in corporate legal work, he traveled to China more than 20 times between 1980 and 1986 to negotiate joint venture agreements with Chinese state-owned enterprises. The signing ceremonies were attended by former Vice President Walter Mondale and former Illinois Governor James Thompson, among other dignitaries. Brian is an avid skier, and the couple spends time at their home in Vail each winter and for a couple of months in the summer. They look forward to getting involved in their new community, which they have already begun by joining Cummer Amelia, an Amelia Island group supporting the Cummer Museum in Jacksonville. JULY 2018

Burlingame Although relatively new to the downtown eating scene, Burlingame has firmly established itself as a favorite with its superbly prepared fresh cuisine and excellent service. BY MICHAEL GASS • PHOTO BY WILLIAM RASER
W
hile still fairly new to the downtown scene, Burlingame has quickly established itself as one the finest restaurants on the island. For my visit tonight, I decided to trade in my napkin for an apron and head into the kitchen to help make the magic happen. In the culinary world, a “stage” is a term derived from the French word stagiaire, meaning trainee. Simply put, a culinarian of any degree will go into another kitchen and work for free for the opportunity to learn new techniques. I was excited to go into the kitchen at Burlingame for a host of reasons, not only to see the delicious food prepared, but also for the people. Chad Livingston, chef at Burlingame, is a talented Culinary Institute of America graduate, who has trained with some of the world’s best chefs at The Ritz-Carlton. Like me, he is a Fernandina native and a graduate of Fernandina Beach High School. When I entered the kitchen, three of my former culinary students were also there to greet me. Sharing the kitchen with three generations of local culinary talent—swapping stories as we prepped for dinner—was an unforgettable experience. 64 AMELIA ISLANDER MAGAZINE •
Kendall Kratky, an FBHS junior and culinary student, would be my guide. When I found her, she was busily weighing out ingredients for the scratch-made sourdough served with the meals. These loaves rise in wooden baskets and are baked in cast iron domes to create the crunchy and rustic crust and tender structure inside. This task takes all day, but there is no substitute for excellence. As I worked around the kitchen and service began, I saw some very interesting plates headed for the dining room. Chef Chad and Sous Chef Jarrod (also a local talent) showed me their stations, where all the ingredients were stored, and they showed me how to prepare a series of the dishes on the menu. Their kitchen tidy was very tidy, with no wasted space and nothing left indiscriminately lying about. As the dinner rush began to draw down, I had the chance to try some the items on offer. Earlier I had the opportunity to taste the base for the Shrimp and Corn Bisque, and I could not get it off of my mind. The dish consists of the most delicate corn pudding—which can scarcely maintain its composure once it reaches your mouth—tender local shrimp, Honshimeji mushrooms, and micro greens, all floating on a delicate creamy soup with a flavor more dense than a neutron star. When I finished the soup, the chefs fired a series of tasting portions of various menu items. Most notable for me were the scallops and the duck, two of my very favorite entrée items. The scallops were seared and served in a lovely sherry cream with potato confit, house-cured egg yolk, asparagus, prosciutto, and grapefruit. The duck breast came with beautifully crispy skin, grilled baby bok choy, pickled mushrooms, lentils, and kimchi. Wine tasters were poured, and we talked about flavors, ingredients, and good times. I can’t pack enough praise about Burlingame into this one article, but you can experience it for yourself Tuesday through Sunday at 20 South 5th Street in downtown Fernandina Beach. JULY 2018

M
y parents love to cook on the grill, but the summer heat can be a bit much for them down here in the South. During the warmer months, I like to invite them over for a quick grilled dinner of skirt steak and veggies, a snap to make, and let them rest in the shade of a magnolia tree with a pitcher of icy drinks while dinner is prepared. Skirt steak, the long piece of meat cut from the diaphragm muscle, has an intensely “beefy” flavor, even more so than flank steak, and lends itself well to hot, fast cooking. When it is sliced on the bias and served very rare, it is truly a treat, and one of the easiest cuts of meat to monitor on your grill. The key to perfect skirt steak is to not overcook it. I don’t even use a thermometer for this piece of meat. The grill needs to be smoking hot – around 700 degrees – and my rule of thumb is to cook it for 2 minutes on each side, or even less. With skirt steak, you’re trying to get a good char and crust on the outside without cooking the inside too much. I’m a coffee-holic, and lately I’ve been adding coffee to everything – marinades, rubs, desserts, and the like. For beef, coffee adds a dark, rich layer of flavor, so I’ve made a rub with 80 AMELIA ISLANDER MAGAZINE •
COFFEE-ENCRUSTED GRILLED SKIRT STEAK Ingredients 1/4 cup finely ground good espresso coffee (not instant!) 1/4 cup dark brown sugar 1.5 tsp. sea salt 1/8 tsp. cinnamon 1/8 tsp. white pepper
1 tsp. minced ginger root 1/8 tsp. five spice powder Cayenne pepper to taste (a pinch or two) 1 tbsp. olive oil 2.5 lbs. skirt steak
Preparation In a bowl, mix all the ingredients except the olive oil and steak. Remove steak from refrigerator and let it come to room temperature. Cut into 2-3 pieces to fit your grill. Rub steak with olive oil, and then sprinkle with the coffee/spice mixture. Rub the mixture into the meat and let it rest for about an hour. Heat the grill so it’ s very hot – about 700 degrees. Cook the steak for about 2 minutes on each side for rare. Let rest for about 5 minutes, then slice on the bias.

I’m a little weary of corn on the cob, so lately I’ve been experimenting with different veggies on the grill. For this meal, I’m grilling okra that has been tossed with oil, garlic, salt, and pepper. The okra takes longer than the steak, so cook it first, grilling it over medium-high heat on an oiled veggie grill pan until it is charred and tender. Remove the okra from the heat, turn up the grill, and cook the meat. After the meat is cooked, my partner, Rusty, suggests putting slabs of homemade corn bread on the grill for a few minutes while the meat is resting. That’s another key to good skirt steak: let the meat rest for 5 minutes before slicing, and it will be absolutely perfect. Served on a platter with the okra and corn bread, it looks as good as it tastes! JULY 2018
