It is perhaps fitting that this, our annual Home & Design special issue, arrives during these winter months, a great time for dreaming about updating or renovating our homes.

For gardeners, winter’s dormancy, combined with the New Year, creates the perfect time for reflecting on our gardens and considering some changes for the year ahead. In our “In the Garden” column, Betty Morrell often refers to this as the season of “armchair gardening.” During these cooler months, when the temperatures can dip below the freezing point at night, we on Amelia Island enjoy our own short winter dormancy—retreating to the indoors, perhaps turning on that gas-lit fireplace and pulling out our warm sweaters.

For those of us who originally hail from up north, it’s definitely “winter-lite,” the merest suggestion of the long winter’s quiet and cold that we remember with a shiver. Yet isn’t it wonderful to enjoy the change of seasons and the way it changes our environment? On the beach recently in our fleeces, we noticed that the ocean had calmed and seemed to become enervated in the thick, cool air. Tidal pools were crystal clear and still, reflecting the sparsely populated beach and a more quiet and pensive mood. Of course, these “winter-lite” days are frequently punctuated by warmer sunny days, but the change of scenery and mood is indeed inviting.

It is perhaps fitting that this, our annual Home & Design special issue arrives during these winter months, a great time for dreaming about updating or renovating our homes as we enjoy a blanket on the sofa and a warm cup in our hands. This month, we present two fascinating stories of homes that reflect what is important to the homeowners and what they love most. In the first, Bob and Judy Schmonsees’ Long Point home reflects their love of marsh views and their desire to maximize those views by creating a home that is uniquely adapted to its unusual lot. In the second feature, on the Nolan home, the homeowner’s love of antiques is combined with her love of whimsy to create a house that is at once unique and bold, yet elegant and inviting. They are two extraordinary homes and we thank Harriet Nolan, as well as Bob and Judy Schmonsees, for so graciously inviting us in and sharing their stories with us.

Also this month, we present everyone’s top room to redesign: the kitchen. We hope you’ll enjoy reading about how some local residents and local kitchen specialists have been cooking up some great designs in the kitchen. ometimes there is a piece of property that is a challenge to even the most creative architect. One such lot, in the Long Point area of Amelia Island Plantation, boasts a magnificent view of the marsh and Intracoastal Waterway, yet it had been passed over by many prospective buyers because of the challenges of construction it presented. “Most people couldn’t figure out how to maximize the wonderful view,” says homeowner Bob Schmonsees. “The house needed to be perched on the edge of the marsh and designed so that it wrapped around the backside of the lot.”

With the help of a talented architect, the design was creatively adapted to the unique lot, and the result is a show-stopping home. A blend of Nantucket

and Key West architecture, the home has gray shingles, a standing seam metal roof, and many gables. It sits at the end of a long drive, reaching out with many angles to command the view of the everchanging marsh.

The architect, Jeff Barnes of Manchester, Vermont, just happens to be a childhood friend of Bob Schmonsees and also the brother of the well-respected local interior decorator, Wendy Smith.

Jeff knew Amelia Island well, as he often came to visit Wendy, as well as their nowdeceased parents, who lived in Ocean Village in Summer Beach.

Jeff was also aware that Bob had been paralyzed in a skiing accident at age 36, and so he needed a home

that would easily accommodate his wheelchair. Those accommodations included a ramp from the garage, wider doorways, a special shower, and an elevator. Other than these elements, the focus was on designing a home to beautifully complement the lot and to reflect the Schmonsees’ sense of beauty. In fact, Bob has not allowed his handicap to master him or his home in any way. He plays golf from a specially adapted golf cart (which he helped design) and was the 1987 top ranked over-40 wheelchair tennis player in the world.

He and Judy were high school sweethearts in River Edge, New Jersey, and they moved to Amelia Island from

the Washington, D.C. area. Bob, who says he is “rapidly easing into retirement,” was a software executive, has several patents to his credit, and is also a published author. They searched all along the East Coast for a retirement home for several years before deciding on Amelia Island Plantation. The beauty of the beaches and maritime forest, as well as the low-key lifestyle on Amelia, was very appealing to them. Unafraid of the challenging lot, they turned to Jeff to weave his magic.

The Schmonsees had previously built seven houses and restored a vintage farmhouse and so they had developed a trademark style for their houses and wanted a “cozy and unpretentious” décor.

The gray cedar-shake house looks as if it were plucked from some Nantucket beach. The architecture snuggles into its surroundings in an elegant and inviting way, as it juts into angles and corners, making it both adaptable to the land and interesting to the eye. Waterway, there are rear porches on two levels—one screened and one open— as well as a third-floor perch with a breathtaking panoramic view of the south end of the island.

Inside the 5,200-square-foot home, a soft sage green color (Benjamin Moore’s Raindance) unifies all the areas. Judy did most of the decorating, with help from Wendy Smith on fabric choices. The oak flooring is especially attractive and was reclaimed from factories around the Philadelphia area. It is finished in satin varnish and the black nail holes from its previous use add interest.

Two-hundred-and-fifty-year-old beams from a Pennsylvania barn are used handsomely throughout the living area, while the kitchen is designed to echo 1700’s-style cabinetry. The distressed

cherry cabinets from Island Kitchens have beaded insets to reflect that early colonial flavor. A copper farmhouse sink completes the picture.

The master bedroom is on the first floor with Bob’s “man-cave office” retreat close by. Access to the upstairs two guest rooms is by a dramatic partially suspended staircase. A large open recreation area on the 2nd floor houses a pool table from the 1890’s that was once the center of attention at the Pleasure House Pool Room in Springfield, Massachusetts.

There is also a large guest suite over the garage for extended family visits.

The Schmonsees are fortunate that no one before them had the vision to see what could be placed on this particular piece of property. Or just maybe it had their name on the mailbox all along.

DUKE UNIVERSITY CHORALE RETURNS TO AMELIA After their acclaimed concert on Amelia in 2008, the Duke University Chorale is set to return to the Amelia Plantation Chapel on Tuesday, March 6, 2012, at 7:00 p.m.

The primary choral group of the Department of Music at Duke, the chorale is composed of 50 singers and performs numerous concerts throughout the year, touring annually during Duke’s spring break. In previous years, the chorale has toured China, Italy, Austria, Hungary, Poland, the Czech Republic, England, Wales, Mexico, and many parts of the U.S. Their 2012 tour will take them to southeastern U.S., with concerts in Gastonia, NC; Mt. Pleasant, SC (near Charleston); Sarasota, FL; Macon, GA; and Salisbury, NC; as well as Amelia Island.

The chorale’s tour repertoire features both sacred and secular music, ranging from Renaissance to contemporary works, from serious to relaxed music, in accompanied as well as unaccompanied works. ocal glass and mosaic artist Denise Murphy was vacationing in Austria when she had an “ah-hah” moment.

The source of her inspiration was the distinctive Hundertwasserhaus, an apartment complex draped in color and mosaics that attracts over one million visitors annually to a once ordinary neighborhood in Vienna, Austria. “As I stood admiring the splashes of color, I was struck by the busloads of tourists and the gift shops and restaurants that now flourish there,” she recalls. “‘We could have that in Fernandina Beach!’

I thought.” That moment sparked the idea for the glimmering abstract mosaic that now gracefully winds its way around the Island Art Association (IAA) properties on N. 2nd Street.

Murphy’s idea was to enliven IAA’s buildings and courtyard with architectural-type detailing that would dress up the street as well. She won immediate support from her colleagues, then a green light from the City of Fernandina Beach after she demonstrated that aesthetic, safety, and durability standards would be

met. Artists Susi Sax and Pam Bennett signed on as primary designers, and a team of multi-talented IAA artists joined them.

After fine tuning design concepts and construction techniques last winter, the artists were well underway by spring.

Soon, the mosaic’s intriguing twists and turns were attracting scores of admirers.

Over 50 people, including children, have chipped in with construction, grouting, cleaning, sanding, and other chores, and contributed thousands of chunks of brightly colored vases, tile, pottery, glass, mirrors, and mementos.

“Some pieces hold special memories for people, and their inclusion is almost like a living legacy,” says Murphy. “We have fun working together - friendships are blossoming and the design seems to take on a life of its own!”

s Amelia Islanders, we all share a love of the coast. Yet many of us also relish city environments. Nicole Herbert, owner of Vignette Design, brings that love of both coastal and city aesthetics to her interior design studio, where she offers complete home redesign services, from renovation to real estate staging.

recent article in The Wall Street Journal proclaimed: “The era of the perfect home has passed. This is fortunate for two reasons: One because perfection is, of course, unattainable, and the other, because it is boring.”

While perfection may be unattainable, this Amelia Park home is perfectly suited to its owner, Harriet Nolan– and it’s anything but boring. “Eclectic” might be a better description, as the decorating is drawn from many different and disparate sources, but it is also whimsical, reflecting Harriet’s light-hearted, fun-spirited love of fabrics, furniture, and art. “I love whimsy,” she says, “but with a little bit of sophistication.”

Harriet moved to Amelia Island six years ago from Waycross, Georgia. She and her late husband, Tom, bought a condominium during the construction phase of the Dunes Club in the mid-1980’s

and spent a lot of vacation time here, along with numerous other Waycross families who have found their way to the island. When Tom died suddenly while attending a University of Georgia football game, life for Harriet changed dramatically. His family owned the Pepsi company in Waycross and they had been living in a home that Harriet had designed for Tom and their two daughters, a stone mansion on 30 acres where they raised St. Bernard puppies. When the property was sold to an evangelist who planned to use it for religious retreats, Harriet was ready to start anew. She had one daughter in Greenville, SC., and another here, living in Oyster Bay Harbour. The choice was easy: Living here would give Harriet the opportunity to see both daughters and the four grandchildren on a regular schedule, as her daughter in South

A cozy dining room is enhanced by family antiques. The china cabinet and chandelier were purchased from French Market Antiques. The fresh flower arrangement from Artistic Florist complement the antiques.

Carolina loves to visit the island and its beautiful beaches.

Yet Harriet had difficulty finding just the right location on Amelia Island for her home. She wanted to be in a community “with people.” “It was important to me as a single woman to find a neighborhood with a closeness to it,” she says. “Once I drove into Amelia Park, I knew I had found my home.”

The real estate market was at its peak, however, and there were only two houses available in all of Amelia Park. When she saw the home she finally purchased, she describes it as like walking into a snow bank: “Everything was white, white, white. I knew I could add my touches though, and what the house did have was enough wall space for three massive

antiques I was bringing from my Waycross home.”

The biggest challenge was finding one large open space in the house for entertaining. Although the home has large square footage and four bedrooms and three baths, she discovered on Thanksgiving that there was not an adequate area to accommodate a dining table to seat all of her family. Always one to improvise, she placed her table, extended with all its leaves, in the garage.

After the holiday was over, she realized that she really liked having that outsized spot for parties and quickly made the garage into a permanent part of the house. She put travertine tile on the floor and had a friend—Janie Atkinson, formerly of Amelia Island, but now

Although Harriet added large walls of glass in the garage door openings, she retained the original roll-down garage doors for privacy and light control and had Janie use her faux-paint-magic to turn the doors into a bamboo garden.

Janie also constructed and painted a large screen to hide utility areas and applied silk ivy as if it were growing on the brick wall surrounding one of her large paintings. Jamie and Eric Miklas fashioned a “tiki hut” in the center of the room for an intimate area. Harriet can now seat 28 people in her whimsical garage-turned-family-room.

Harriet credits many of the artisans on the island for helping her create her fantasy home. Much of the upholstery has been fabricated by Bruce Blacker of Eight Flags Upholstery, who assisted

Slip covers have been made by Christy Dinkins, but it was Judy Nelson of the recently closed French Market Antiques who finally said to Harriet, “That’s it. You cannot get one more piece of furniture in this house!”

It is easy to see that Harriet Nolan has a joie de vivre when it comes to décor. She has pulled together many unconnected pieces and filled her space to overflowing.

“I have never ever regretted coming here,” she says. “The house has been fun to decorate and I have loved incorporating the madness of color to the home.”

Harriet Nolan’s home has achieved her own perfection. Whimsical? Yes. Boring? Never.

The kitchen is the one room that people love to redesign.

A

n inch of dust covers the mantle and floors, you are stuck eating take-out for days, and, if you’re like the Waas family, you invite friends to bring a sledgehammer and rip the old thing apart. This extraordinary mess is an unavoidable part of the process of a kitchen redesign, yet the kitchen still remains the most popular room to remake in the home.

New island resident Dawn Tiura Evans explains why she put so much time and energy into her new kitchen: “Because I love the feeling of people gathering in the kitchen.” The kitchen truly is the heart of the home, and, as you probably just experienced during the holidays, no matter how many comfortable seats are spread throughout your living room, people like to congregate in the kitchen around the food. “We cook frequently for family and friends and had an adequate kitchen, but we were always stumbling over each other,” explains Lisa Waas, who recently redesigned her kitchen.

Both families dreamed of a kitchen that would allow room for more friends, as did longtime residents Bill and Chris Bryan.

“Bill loves to cook, so when we did our kitchen this time we designed it with both a work area and a space where everyone can visit while we are preparing the meal,” explains Bryan, who has redesigned her kitchen more than once.

In addition to redesigning to create gathering space, people redesign for technical purposes. Don Taylor of Island Kitchens, located at 731 South 8th Street, explains that today’s kitchens are streamlined with functional spaces—although not necessarily as large as in the past—to meet the specific styles and needs of the family.

“I’ve seen a lot of clients opting for professional-style gas cook tops and warming drawers,” explains Taylor. The Evans’ kitchen is one example. “We did a microwave drawer which has turned out to be much handier than the normal door-type,” says Evans. “I also love my new oven, where you can pull out all the racks and they don’t fall out.”

The Bryans also chose appliances to suit their needs.

“Cakes and desserts are what Bill cooks so well, so we have a six-burner stove and two double ovens. He can do four cakes at a time, and we included two subzero refrigerators with drawers just for his butter, cream cheese, and eggs,” explains Chris.

to cook new recipes. “The first year we hit 101 new recipes. In 2011, we hit 112!,” says Lisa.

Sometimes the personal preferences motivating the design have nothing to do with cooking, according to Mike Gleason, owner of Kempsville Custom Cabinets, 1745 South 8th Street.

“People want to be organized and are designing custom spaces to achieve a place for everything,” he explains. “Most customers these days opt for a built-in trash. Some even include features like hidden message boards and special compartments to hide the telephone.”

Some of Gleason’s clients aim to meet their physical needs.

“I recently designed a kitchen with high drawers, two inches higher than the normal counter height,” he says. “The reason was that the clients have bad backs and the height prevents them from straining, and the drawers eliminate reaching. Clients also love the new self-closing feature of most drawers.”

The one thing all designers and customers have in common is the idea that the kitchen is one of the most vital spaces in the home. Whether one redesigns for more social space, cooking space, or another personal preference, the kitchen is the one room worth the cost of redesigning because the end result is a 15 to 20 year gift that brings family and friends together.

Bonnie St. John, one of America’s most inspiring women, to speak at Boys & Girls Clubs benefit

W

hen you hear about someone who has been a graduate of Harvard, a Rhodes Scholar, a world-class ski racer, and a member of the White House National Economic Council, it would be easy to imagine a background of privilege. Those achievements belong to Bonnie St. John, but her background was not one of privilege. “I was a black girl from San Diego, living in poverty. I had my leg amputated when I was five, and I wanted to be a ski racer,” remembers St. John, who was the first African-American to medal in downhill ski racing, winning one silver and two bronze medals in the 1984 Paralympics. “I was ahead in the slalom,” St. John remembers, “but in the second run, everyone fell at a dangerous spot, and I was beaten by a woman who got up faster than I did.

I learned that people fall down, winners get up, and gold-medal winners get up faster.”

Bonnie St. John will be bringing her incredible story and her strategies for joy and success to the Boys and Girls Clubs’ 5th Annual Benefit Dinner, to be held February 24 at The Ritz-Carlton, Amelia Island.

Dubbed one of “the five most inspiring women in America”

by NBC Nightly News, St. John is thrilled to be making her first visit to the area to support the Boys and Girls Clubs. “My local club was a big part of my childhood,” she recalls. “We got to make clothes, do crafts, and—what I really loved —to put on plays. That built my confidence. There, my disability didn’t matter, and my Mom had peace of mind knowing I was in a positive place.”

The people who made a difference to St. John inspired her to focus her energy on helping others. While working on

the White House National Economic Council, she relished the opportunity, but realized that helping others was more important to her than her work as an economist. “I have an especially graphic story of overcoming the odds,” she explains.

“I went through a lot, including recovering from childhood sexual abuse, and other people made such a difference for me. I needed to hold up my end of the bargain.”

St. John tells her story to live audiences and through her writing, including Live Your Joy!, one of the most popular motivational books on Amazon. Instead of trying to present a one-size-fits-all approach, St. John guides readers toward finding the solutions that are most effective for them. This practical mindset underlies her upcoming book, How Great Women Lead, a collaboration with her teenage daughter, Darcy Deane. The two traveled the world interviewing female leaders, including Hillary Clinton, Geena Davis, Condoleeza Rice, and Teach for America founder Wendy Kopp, exploring the qualities that motivate these women. All in all, her current career is, as St. John put it, “a ridiculously exciting life!”

It’s the kind of life St. John wants us to consider when we look at the children in our lives and those who benefit from the Boys and Girls Club. “When you help, you are altering the life of a child,” she says. “You are helping them see what is possible.

You are investing in someone the same way that others invested in me.” Just imagine what could happen!

tropical beauty With its showy blossoms, this “most beautiful” Caesalpinia makes a striking tree or shrub.

I

am in love again! It’s not a new plant this time, but a well-known standard that is often overlooked: the Caesalpinia pulcherrima. Better known as the dwarf poinciana, it is a real a show stopper in the garden.

It is a shorter version of the large royal poinciana tree, which is considered by some as the most beautiful flowering tree in the world. The royal can reach heights of 30 feet with a 50 foot spread, and so it takes up a lot of space. The dwarf poinciana, on the other hand, is perfect for smaller yards and retains all of the beauty of this celebrated tree.

This evergreen/part deciduous shrub can be pruned into a small specimen tree in frost-free climate zones. In zones eight and nine (we are in zone nine), it can be damaged by frost, but it will return in the spring and quickly re-grow. In normal garden cultivation, it will grow to about eight to ten feet tall and the same width, but tolerates pruning in order to maintain shape and form.

It is a striking tree, with very fernlike (feathery) foliage and breathtaking flower blossoms. The flower colors vary

If you can’t move them into a protected area, then water the roots well before the freeze and cover them if possible. If you can’t cover them, you can string some lights around the plant to help keep it warmer than the air. With young citrus trees, water and then wrap the graft well with newspaper to insulate it. If you lose the top of the plant, the graft will stay true, and your new growth will be the same as the original tree you bought.

from scarlet red, vibrant orange, and brilliant yellow. There is an all-yellow variety and another with a pinkish rose coloration. My favorite is the abovepictured variety.

Full sun is preferred for best flowering, but some shade is tolerated. Any soil is suitable, as long as it is well-drained. Perfectly suited to informal plantings, dwarf poinciana makes a beautiful, refreshing addition to any garden or yard, either as a specimen or as an accent placed toward the middle or back of a shrub border. This shrub is

very drought-tolerant and moderately salt-tolerant, as well as resistant to pests and diseases, so it is strong as well as beautiful.

The dwarf poinciana can also be grown in a pot or container and then simply brought inside when there is a threat of frost or freezing temperatures.

Planting in pots will curtail their growth, as well. Planting in the ground, however, remains more highly recommended for this plant.

Tipping the branches (cutting off new growth) during the growing season creates a fuller shrub and more flowers. With some training and pruning, you can create a small multistemmed tree, if that is your preference, but the natural form is that of a full, low-branched, wide-spreading shrub. If you choose to let it develop as a shrub, then allow plenty of room. I can’t wait to get one of these beauties for my own garden!

PLaE

Dazzling diners, PLaE offers imaginative dishes, drinks, and desserts – for lunch, as well as dinner.

T

he most memorable meals happen at PLaE Restaurant & Lounge, that is, People Laughing and Eating, located at The Shops of Omni Amelia Island Plantation. Owners Brett Carter and Tip Fisher, along with General Manager Shari Murphy and Executive Chef Robert Camp, have created an amazing eatery that surprises its diners every evening. Now, they are also dazzling their diners during the day, as they have recently begun serving lunch. I stopped by PLaE on a recent weekday for a lunchtime break. I’ve always loved PLaE’s urbane atmosphere, where you feel like you’re enjoying a special getaway any day or night of the week.

My server suggested I try the Peasant Lunch, which I had been eyeing on the menu. The plate is a combination of various cheeses, fruits, pickles, meats, breads, and other goodies, served with a glass of house sangria. The sangria was amazing, a white sangria—which I prefer over red any day—that is made with Pinot Grigio, simple syrup, and fresh lemon, lime, and orange juices. The beverage is served in a lovely pilsner glass and garnished with fruit. Very refreshing, but not too sweet, it makes a wonderful lunchtime drink.

The Peasant Lunch was a remarkable dish. Enjoying the many different items around the plate, I soon found that I was enjoying appetizer, entrée, fruit, cheese, and even dessert, all in one offering. There were tasty bread and butter pickles

and pickled green tomatoes and okra, fresh asparagus, and homemade cranberry sauce. Carter prepares all his own pickles at PLaE, using fresh from-the-farm ingredients. There was also a small wedge of brie with peach chutney, turkey breast with a seasoned rub, spicy boiled peanut hummus, and pimento cheese with flatbread. But wait, there’s more: tangerines, sharp cheddar, dried cherries, apricots, dates, and pineapple, plus a beautiful poached pear filled with gorgonzola. This is a plate of food that you could enjoy with a friend or while conducting some lunchtime business, as it is all nibbles and plenty of them.

What a great offering!

Chef Camp wanted me to sample a couple of his other menu items, and I was more than willing. Although it’s hard to choose just one, I think my favorite was his Fried Oysters on Corn and Ramp Hoecakes, served with Texas Pete mayonnaise, sliced tomatoes, and arugula.

A ramp, by the way, is a type of wild onion that is now available commercially, although it can be difficult to find. The oysters were perfectly cooked and succulent, with a crisp coating; the hoe cake was bright and slightly sweet. I loved the bite of the mayonnaise. This lunch entrée is really scrumptious.

I also tried PLaE’s Squash Risotto served with Crispy Duck, and a red wine demi glace with parmesan cheese. What a rich and luscious dish! PLaE makes the best risotto on the island, and the squash risotto is no exception. It’s creamy, and the squash gives it a bit of sweetness. The duck is unique—it is a duck leg that is deep fried—and the batter is of the flour and ice water variety. It is light and super crispy. A different take on duck confit, it is really wonderful.

And then, there was dessert. PLaE makes all their desserts on site, and, trust me, whatever you order will be perfect. Carter suggested the Chocolate Bourbon Pecan Pie, served slightly warm with gourmet vanilla bean ice cream and hot fudge.

Of course, I love my desserts, and this version of a Southern favorite was over-the-top fantastic.

The restaurant also offers some gluten-free desserts, so everyone can enjoy a sweet treat for dessert. PLaE is open for lunch Tuesday through Saturday, 11:30 a.m. to 2:30 p.m.

Paul Prudhomme’s seafood magic In a heavy bottom sauce pan, sauté the first four ingredients until translucent. Add sweet corn and sauté for approximately five minutes on medium heat. Add garlic and stir in seafood magic. As the vegetables start to stick to the bottom of pan, use a wooden spoon to scrape. Remove from heat and allow to cool. Once cooled, add crabmeat and cheese. Mix mayonnaise and egg in a separate bowl, and then add to crab mixture. Once all ingredients are mixed, put into an ovenproof casserole dish and bake at 350 degrees until bubbly and golden. Approximately 30 minutes. Serve with crusty bread.

had this dish for the first time at Lake Pontchartrain Yacht Club with Uncle Tommy, a man of Buffettesque stature in the sailing world. As I sat in the club’s trophy room admiring Uncle Tommy’s many accomplishments, we enjoyed this crab dip accompanied with a Sazerac cocktail. Iberville Parish, for which the dish is named, is located south of Baton Rouge in bayou country. The area spawns many seafood dishes due to their plentiful supply of local product.

For those who haven’t heard of Uncle Tommy, Thomas Shackleford Allen is a lifetime resident of the city of New Orleans. He lives in a registered historic home in the garden district,

close to Tulane University and the Audubon Zoo. Well into his seventies and still one of the most eligible bachelors in the city, Tommy regularly attends many Mardi Gras balls. Lake Pontchartrain Yacht Club is located to the north of the city and unfortunately burnt to the ground during hurricane Katrina. Tommy, a lifelong competitive sailor, was lucky to be one of the few not to lose his boat during this disaster. Still racing sailboats to this day and using his crew of volunteers from Tulane, he is still a member of the rebuilt, greaterthan-ever, Pontchartrain Yacht Club. At LuLu’s, we love to offer premium first coast seafood with a N’Orleans twist.

Here are a couple of our favorites. Enjoy!

With no grill, no sauce, and no smoke, the secret is in the jumbo head-on shrimp, which we are lucky to have available here on Amelia Island. Prepare the shrimp by locating the eyes, just below the horn on the top of the head, and then grasp, twist and pull. Discard and repeat for all the shrimp.

Wash in cold water and pat dry.

In a large skillet (big enough to hold shrimp in one layer; do two batches if necessary), melt whole stick of butter with seafood magic and Worcestershire. When butter starts to foam, add garlic and shrimp. Saute for approximately one minute, turning once. Add stock.

The secret here is the motion of the pan: You need to achieve a backwards and forwards shake, as opposed to a swirling motion. After two minutes, add second stick of butter in pats, all at once, continuing the backward and forward motion.

Once butter is melted, add beer and continue the same motion until sauce starts to thicken. Pour contents into serving bowl and serve with plenty of white rice and crusty bread for dipping. Hint: removing the eyes allows the sauce to enter the body cavity. So just like with crawfish, you need to pinch de tail and suck da head. Bon appetit and Laissez les bon temps rouler!
