This month, the Amelia Island Book Festival (AIBF) celebrates its 16th year, and over the years, they have hosted some splendid literary events here on Amelia Island, which many of us have had the pleasure of enjoying. The Festival’s community-centered vision is elegantly simple: they seek to “open up the world” for people of all ages in our Amelia Island community through the promotion and celebration literacy. In order to implement this vision, the Festival’s mission is to “promote life-long learning through fostering an appreciation for books” through quality events with authors. The AIBF has been attracting a number of top-flight authors to Amelia Island in recent years, and that is due in no small part to the efforts of Honorary Chairperson Steve Berry of St. Marys, Ga. Berry, whose wonderful historical novels consistently rank near the top of the New York Times bestsellers list, is always a popular presenter at the Festival. He has also spread the word on our growing event to many of his author friends, who are now joining him in our annual celebration of reading. In fact, for this year’s event, the Festival boasts what they have accurately described as a “dream team” of best-selling authors, including Berry, Mary Kay Andrews, Lara Adrian, David Baldacci, Joseph Finder, R. L. Stine, as well as many others, who will be presenting their work, appearing in our schools, and conducting break-out sessions for writers and readers alike. During the authors’ appearances at our Nassau County schools, the AIBF will be handing out a new book to every student as part of their effort to promote reading. What a tremendous gift to our community! The books are distributed in the schools each year as part of the Festival’s “Authors in Schools” program, through which every student receives a book written by the author who visits their school. This year, 8,200 books will be distributed. In addition, the AIBF and the Boys & Girls Clubs of Nassau County are launching the “Tween/Teens Scene,” an event featuring four renowned authors covering four areas of the creative arts—poetry, graphics and illustration, novels, and playwriting. These programs, as well as the popular Authors Face-Off Gala and the many wonderful presentations by dozens of authors, go a long way towards fulfilling the AIBF’s mission to promote a lifetime of learning. Also this month, we take a look at Amelia Island’s triennial quilt show; learn about an outstanding team of culinary arts students at FBHS who are preparing for a competition in Orlando this month; discover a new recording studio on the island; get some great recipes for the cooler weather; and much, much more. See you around the island!

eading to the mind is what exercise is to the body, and children who develop good reading skills at a young age are on their way to a lifetime of learning. That’s the mission behind the Amelia Island Book Festival, seeking to open up the world through books by providing quality events featuring local and world-renowned authors. The Amelia Island Book Festival is committed to kids, providing a unique literacy program that puts an author in every school so students can engage in a 360-degree experience with an author and their book. “We’re very excited about our 16th year,” says Marie Rizzo-Fenn, volunteer president of the AIBF board. “The Amelia Island Book Festival supports our Authors in Schools Literacy Program, the Tween/Teen Scenes,
and Short Story Writing Contest. This is what our festival is all about, getting a book into every child’s hand and promoting a lifetime of learning.” Last year’s festival featured numerous bestselling and celebrated authors, including Steve Berry, Greg Iles, Andrew Gross, Janice Gable Bashman, Brenda Jackson, Ellen Malphrus, Vic DiGenti, Michael Wiley, Carla Norton, Lisa Black, Jane Wood, Charles Benoit, and numerous local and area authors. “Thousands participated, but the real winners were the students of Nassau County,” says Kristi Simpkins, head of elementary education for the Nassau County School District at the Kick-off Luncheon. She noted that the festival bought more

than 6,000 books for students at every public school in the county. “This is a huge investment in our children’s education.” Returning this month on February 16, 17, and 18, this year’s festival features New York Times bestselling author Steve Berry, AIBF’s honorary chairman, leading a dream team of notable authors including Mary Kay Andrews, Lara Adrian, David Baldacci, Joseph Finder, R. L. Stine, and more. Over 120 authors will be present at the Author Expo/Reader Extravaganza, featuring the theme “An Amelia Island Encounter—Romance, Action, and Mystery,” held at Fernandina Beach Middle School. Residents and visitors alike will be able to meet local and national authors, have their books signed, and also attend various “breakout sessions,” in which authors speak about their writing processes and answer questions from participants.
“This festival has come a long way,” says Berry. “It started big years ago, but now it’s much bigger. It’s truly a celebration of books, reading, and writing. A triple play that filters into every school, and every person, in the community. Literacy has no greater friend than the Amelia Island Book Festival. I’m proud to serve as its honorary chairman.” The AIBF kicks off festivities on February 16 with a luncheon held at The Amelia Island Club featuring keynote speaker David Baldacci, introduced by Steve Berry. Baldacci published his first novel, Absolute Power, in 1996. A major motion picture adaptation followed, with Clint Eastwood as its director and star. In total, Baldacci has published 33 novels for adults, all national and international bestsellers, with several adapted for film and television. His novels have been translated into more than 45 languages and are sold in more than 80

He has also published five novels for younger readers. “Book festivals like this one bring out the best in all of us,” says Baldacci, who is thrilled to be part of the AIBF this year. Also on February 16, the AIBF and the Boys & Girls Clubs of Nassau County have teamed up to put on the Tween/ Teens Scene, an event featuring four renowned authors, all in one location, covering four areas of the creative arts—poetry, graphics and illustration, fiction novels, and playwriting. It will be held from 4:30 to 6:30 p.m. at the BGC Miller Freedom Center, located at 942259 Old Nassauville Road. This free event is open all students grades 6 to 12 across the county, although reservations are required. Students will have the opportunity to meet and mingle with renowned authors in both large gatherings (opening ceremonies and during refreshments), as well as small individual
breakout sessions. Students will get the chance to attend at least two sessions of their choice. “This fits perfectly with our efforts to help youth create aspirations for their future,” says Jamie Thompson, chief operations officer of the Boys & Girls Club. “By providing opportunities in this core area, we are enabling youth to develop their creativity and cultural awareness through knowledge and appreciation of the arts and creative writing.” On February 17, honorary chairman Steve Berry and his wife, Elizabeth, will lead “Lessons from a Bestseller—Steve Berry’s Writing Workshop,” held at FSCJ’s Bean Center, located at 76346 William Burgess Boulevard in Yulee, from 8:30 a.m. to 2 p.m. Steve Berry is the New York Times and #1 internationally bestselling author of The Lost Order, The 14th Colony, The Patriot Threat, The Lincoln Myth, The King’s Deception, The Columbus Affair, The Jefferson Key, The Emperor’s Tomb, The Paris Vendetta, The Charlemagne Pursuit, The Venetian Betrayal,

Also on February 17, the festival’s authors will be visiting all of Nassau County’s schools for the AIBF’s most beloved projects,
“Authors in Schools,” where each student receives a book, free of charge, written by the author who visits their school. “This year, we have provided 8,200 books to local students,” says Rizzo-Fenn. Authors in Schools is held throughout the day and open to each and every Nassau County school student. Later that evening, the AIBF presents its Authors Faceoff Gala, held at the Omni Amelia Island Plantation Resort, located at 39 Beach Lagoon Road, from 6 to 10 p.m. Supporting Authors in Schools, Steve Berry will be joined by R. L. Stein, David Baldacci, Joseph Finder, Lara Adrian, and Mary Kay Andrews. Beginning with a cocktail hour, then followed by a sit-down dinner, this fun-filled evening features friendly banter between world-famous authors, a not-to-bemissed event.

On February 18, the last day of the 2017 Amelia Island Book Festival, an Author Expo/Reader Extravaganza will be held all day at Fernandina Beach Middle School, from 10 a.m. to 5 p.m. Visitors to the Expo will have a chance to meet local and international authors, purchase books, have them signed by the authors, and engage in various breakout sessions with numerous writers for 30 to 40 minute intimate talks, plus question and answer sessions. There will be over 120 authors in attendance. This family festival and celebration of the written word also features entertainment, activities, contests, and prizes. It’s free and open to book-lovers of all ages. Food and beverages will be offered by area schools and non-profits throughout the day.
In addition on February 18, a special free ticketed breakout session with R. L. Stine will be offered. TAKE STOCK IN CHILDREN PRESENTS LIGHT UP A LIFE GALA ON MARCH 2 Take Stock in Children begins the New Year with a major scholarship drive underway and it has moved its annual Light Up A Life Gala from the holiday season to March 2. Take Stock will benefit this year from a special matching fund which has been made available for scholarships by longtime local supporters. The State of Florida already matches all scholarship gifts and will also now match all special local matching funds given to Take Stock in this period. “A new or increased local gift of $100, for example, qualifies for double matching and generates $400 in scholarship funds,” says Bob Henderson, Take Stock chairman. “There is just no other opportunity to help kids that gets this much bang for the buck.” This year, there are 136 Nassau County scholarship students working their way toward college. All have the advantage of a local volunteer mentor to stand with them against all challenges as they advance through high school. Take Stock in Children’s Light Up A Life gala raises money to support TSIC’s programs and mentors. This concert is not to be missed!” Born in Los Angeles, Armstrong formed his first band in the seventh grade and was touring the country by the age of 17. Over the years, Armstrong has performed throughout North America, Europe, Scandinavia, Asia, and the Middle East. n Amelia Island, William Maurer is well-known for his island watercolors of the town of Fernandina Beach, with its quaint streets, harbor, and shrimp boats. These images are featured in his book, Sketches of Amelia Island and Fernandina Beach: The Mark of William Maurer. In reflections included in the book, Maurer expresses, in a quiet way, his inner emotions and love of these subjects. In 2009, he was selected by a jury to represent Amelia Island’s best known event, the Shrimp Festival, with his poster design. The following year, he was one of two judges for the same event. In January 2015, he judged the prestigious Miniature Art Society of Florida show. With close to 900 entries in all mediums, Maurer enjoyed the challenge. Prior to moving to Amelia Island in 1979, Kathleen Maurer attended the Ringling Art School in Sarasota. Currently, she teaches acrylic painting, sharing her knowledge and introducing beginners to the medium. Her inspirational manner of teaching motivates students to return time and time again. Offering an art class each week, she believes that painting is the

best distraction, offering relief from stress while having fun. Kathleen also recently published a children’s coloring book titled The First Enchanted Amelia Island Coloring Book. The Maurers visit France frequently, having resided part time for many years in Cannes, where they draw much of their inspiration. Coupled with his love of books, William is fluent in French and history, leading to the development of his formidable skills. Maurer’s watercolors are rendered in the style of impressionism. Maurer’s late close friend, Neal Coleman, referred to the artist as “the master of perspective,” ensuring his home portraits and commissions never disappoint. Maurer operated his own architectural offices in Casablanca, Morocco, for ten years, and he has enjoyed painting as an extension of the architectural experience. crazy about quilts The Amelia Island Quilt Guild hosts its triennial Quilts by the Sea Show, featuring over 180 quilts, a craft boutique, and plenty of fabric, patterns, and sewing machines. BY KAREN MILLER
A
melia Island quilters are unique, creative individuals with more fabric in their homes than food, each pile of fabric containing a quilted masterpiece ready to be crafted, which eventually finds its way to the Quilts by the Sea Quilt Show. This year, the triennial show will feature over 180 quilted creations from members of the Amelia Island Quilt Guild, all displayed at the Atlantic Recreation Center on February 17 and 18. The Amelia Island Quilt Guild was established in November 1989 with 30 members. Today the group boasts 116 members, whose mission is to promote quilting and educate the public about the art and craft of quilt-making. The guild is made up of a varied group of women from all across the country, with skills ranging from beginners to seasoned prizewinners. Quilting in America became popular in the 19th century, when American patchwork and appliqué designs were created.
These quilts were produced for utility and pleasure, and they are the inspiration for today’s quilters. Quilts are also an important part of American Folk Art. “Modern quilting can be compared to a sport, with endless techniques to explore, multitudes of tools, glorious fabrics, and interesting patterns to entice creativity,” says Rozlyn Warren, Guild president. “Creating a quilt is challenging, and at the same time, meditative. Lasting friendships are forged through our love of quilting. It is a recognized art form, with shows and museums across the country dedicated to displaying the best of the best.” This year’s Quilts by the Sea Show will display quilts demonstrating a variety of techniques, from traditional and art quilts to hand-pieced and appliqued quilts, as well as continued on page 60.

n March 3 and 4, four students from the Fernandina Beach High School (FBHS) Culinary Arts program will cook like they’ve never cooked before at the 2017 ProStart Competition in Orlando, sponsored by the Florida Restaurant and Lodging Association. Since the end of January, the students have been honing their culinary skills as they prepare to produce a three-course gourmet meal in under 60 minutes. “The four students were chosen because of their motivation, dedication, and ability to work as a team,” says Chef Michael Gass, FBHS Culinary Arts Teacher. “They came up with the menu and the recipes, and they have been working on this project since the beginning of the school year. In addition to the culinary crew, we’ll be sending four more students to compete in the waiter relay, in continued on next page

which each team must set a table with three different place setting styles and three different napkin folds.” The final push, however, will be the twelve or so practice sessions the students will use to perfect their dishes before the big competition in Orlando. Participating students include Macy Waters, Zach Dinh, Jonah Schwend, and Tressa Glackin. Their three-course meal includes Fried Pickles with Cole Slaw, Garlic Chile Aioli, and Barbeque Pork Lardons; Pan-Seared Scallops with Andouille Macaroni-and-Cheese and Sautéed Greens; and for dessert, Avocado Chocolate Mouse with Raspberry Sauce, Aquafaba, and Spun Sugar. The students have certain limitations in the competition, as they are only provided with two small gas burners to cook on, with no electricity, no deep fryers, and no grill. That means that everything—from frying the pickles to whipping the mousse and aquafaba—must be done by hand, the way they have learned in their classes. In their first practice session, students took turns working on the various dishes, learning to cook as a team, with everyone staying on task and no time wasted. Dinh works as an expeditor during the first session, making sure that the young chefs have everything at their fingertips. Chef Gass hovers over their work, making suggestions to them on how to perform a task better, or with more proficiency. From cleaning as they go, to completing each step properly, Gass conducts the practice session with stern kindness.
The Florida ProStart program began as a pilot program in the 1994-1995 school year; today, it is 238 schools strong. This directly correlates to the explosive growth of the foodservice industry, which was the original intention of the ProStart program founders, the National Restaurant Association Educational Foundation (NRAEF). As the foodservice industry was growing, the NRAEF forecasted an alarming shortage of restaurant managers. ProStart was created to interest high school students in this diverse industry to head off these shortages. ProStart is a nationwide, two-year program for high school students, which develops the best and brightest talent into tomorrow’s industry leaders. From culinary techniques to management skills, ProStart’s industry-driven curriculum provides real-world educational opportunities and builds practical skills and a foundation that will last a lifetime. “By bringing industry and the classroom together, ProStart gives students a platform to discover new interests and talents and opens doors to fulfilling careers,” says Chef Gass. “It all happens through a curriculum that teaches all facets of the restaurant and foodservice industry, inspires students to succeed, and sets a high standard of excellence for students and the industry.” The Salute to Excellence Awards Dinner will take place on Saturday, March 4 at 6:30 p.m. at the Rosen Plaza Hotel in Orlando. All ProStart competition awards will be presented, along with Hospitality Excellence Awards, Pineapple Awards, and FRLAEF Scholarships.

W
hen my granddaughter, Eloise, was about to turn five years old, I wanted to give her a gift that would last a lifetime, something that would never wear out or get lost at the bottom of the toy box. After much deliberation, I decided to write her a song that I named “Ol’ Floridy,” drawn from my love for the Florida wilderness. Because I don’t have a great singing voice, I turned to my musician friend, Stephen Mason, to come up with a melody and chord structure to match my lyrics. Steve’s home music studio, Two PM Junction, is capable of producing high quality recordings, as well as voice-overs, acoustic accompaniment, and many other services for musicians hoping to make demos, or “work tapes,” which can be submitted to record companies for their consideration. But he also offers music services to people like me who just want to record a song, or perhaps convert old tapes and 4-track analog music to digital files.
After I submitted my lyrics to Steve, he produced a broadcast-quality MP3 file that I was able to email to my daughter, Avery, which she played for Eloise on her birthday. “I thought it was a lovely song and a very sweet gift idea,” says Avery. “Eloise loved it and wanted to listen to it over and over!” Steve is a singer/songwriter specializing in country music, with overtones of folk/rock and blues. His eclectic style heralds from his days living in Chesapeake, Virginia, where he studied chord and scale theory under the instruction of Lewis McGhee, one of Tidewater Virginia’s finest musicians. Steve’s career in civil service brought him to Amelia Island in 1990, where he met his wife, Marsha, and the couple’s love for music grew as they became connected to local musicians. After his retirement, Steve’s dream of a professional home recording studio came to fruition. continued on page 61.

sizzling spicebush February is the perfect time to start dreaming about renewing your garden in the spring with Spicebush, Pentas, and a lovely new Coreopsis. BY BETTY MORRELL
W
inter is here, and many plants are taking a much-needed rest, although a few are spreading out their leaves and sprouting pretty flowers. That’s one thing I love about our area— we can have blooms all year ‘round! You know how much I love yellow, and at the latest plant show my eyes landed on yet another yellow beauty, the new Spicebush (Lindera benzoin). Not only is it fragrant, but it’s also eyecatching and a great addition to your garden. When this early bloomer displays its dense clusters of fragrant flowers, we’ll know for sure that spring has arrived! Its lovely yellow blooms appear before the leaves emerge, and in summer, the light green foliage makes an attractive backdrop. In autumn, the leaves turn a bright golden yellow. Yellow is a happy color, and it really brightens up a garden. Lindera benzoin is native to eastern North America and makes a handsome addition to woodland gardens or moist areas around ponds and streams. Another reason to love the Spicebush is that the swallowtail butterfly depends upon it as a food source for its caterpillars. This

genus is comprised of 80 species of trees and shrubs, which are known for their aromatic leaves, star-shaped flowers, and colorful fall foliage. The plants have a multi-branched rounded form that works well in woodland gardens. The Spicebush likes sun to part-shade, yet blooms well in the shade, growing 6 to 12 feet in height. Another plant from the show I really liked is a Coreopsis called Sizzle and Spice, a dark red flower with a yellow center. The spicy red blossoms of this compact coreopsis form a round mound of eye-catching color, which would be a standout in any garden as an edging or border. Add a bit of this plant’s striking color to a mixed plant grouping, or just fill a pretty pot with them. The

thread leaf foliage adds a nice textured background to any garden. Once established, the coreopsis is drought tolerant, as most are native to the southeastern United States and Mexico. These plants are not fussy about soil, but they require full sun. Remove spent flowers to ensure continuing bloom. Use a 10-10-10 fertilizer once lightly in spring. Shear these plants down by one-quarter or one-half in late July, as flowering slows then. Daily deadheading can achieve almost continuous bloom, with the possibility of re-bloom in autumn. Another plant I liked is a lavender Penta called Northern Lights. I love pentas because they can be put in so many places in the garden. Unfortunately, they can have trouble in a hard freeze, so it should be considered an annual. However, if the winter is mild, it will put out a pretty green and lavender plant come spring. For Allison and Bruce Dahlgren, it’s Amelia Island, of course! “Allison and I met at Stetson University in Deland,” explains Bruce. “Today, after 31 years of marriage, we’ve moved six times in the U.S., have three amazing children of whom we are so proud, and we are now living in Singapore on our first international assignment.” Bruce is Hewlett-Packard’s Managing Director for the Asia-Pacific region, which includes Australia, China, India, Japan, New Zealand, and Southeast Asia, yet his home address is Amelia Island.

“Thirteen years ago, we were living in Kentucky and looking for a second home, a vacation place on the East Coast, and that’s when we fell in love with Amelia Island,” says Bruce. The beach, the golf, and the natural feel of the island is what the family loves best, and it’s what has kept them coming back through various moves, college years, and now for holidays and vacations. The couple’s daughters live and work

in Santa Monica, California, while their son studies at Stetson University, where he plays on the golf team, just like his father. The Dahlgrens developed a special affinity for their Amelia Island home through a tragic event. “In 2007, we lost our home and everything we had in the San Diego wildfires,” Bruce shares. “A knock on the door gave us a 30-minute warning to evacuate, and

our home burned to the ground.” That day, their condominium at Amelia Island Plantation held all the family’s tangible memories. “Amelia Island is the one stable place for us as a family. Between the moves and the loss of a house, Amelia Island has been there for us.” The couple rebuilt in California and spent the next six years there as their daughters finished high school. Living abroad, and with the children transitioning to their own homes, the family did not need the large San Diego house. “We sold our U.S. home, we are now living in Singapore, but we needed a home base,” Allison explains. Allison and Bruce conferenced with their children, and the vote was unanimous: Amelia Island. In April, the couple closed on a new Dunes Club Villa, and they wanted to make their new space perfect. “I met Robyn Branch when I visited Robyn Branch Design several years ago,” remembers Allison. “Robyn is extremely talented, hard-working, and fun. two-months, and I returned, I was overwhelmed with sentiment,” says Bruce. “All of our 30 years of memories are here, but they look brand new! In one room, I see our old Amelia table, a photograph from Singapore, and a painting from the San Diego home, and they all work together.” “Robyn was able to pull together our existing pieces with our new purchases and give our home a ‘wow’ factor,” says Allison. “Our three kids had decisions to make, and they enjoyed the whole process. It was a true family affair! We all love our new look and are very thankful to Robyn and her whole team for turning our place into a beautiful space which we are so proud to call home!” The Dahlgrens “come home” as often as they can, considering they work on the other side of the world. When they do, each visit is filled with the family joys of riding bikes, walking on the beach, and of course, golfing on this lovely island they are proud to call home.

Holiday quilts, wearables, and a special exhibit called “Pirates of Amelia Island” will be found at the show. “The Amelia Island Quilt Guild is pleased to share the beauty and artistry of modern-day quilting,” says Warren. “The talent and dedication of our members is evident in the amazing works displayed at the show.” Quilt entries will be judged by Brenda Kalata, a National Certified Judge from St. Augustine. Ribbons will be awarded for creativity and workmanship, and visitors to the show will be able to vote for their favorite to win the “Viewer’s Choice” award. In addition to the quilts on display, a craft and quilt boutique will have handmade items for sale. Fabric, patterns, sewing machines, and other merchandise from a variety of vendors will be available in the Merchant Mall. A silent auction will feature wall-sized, beautiful quilted creations, along with door prizes, basket raffles, and technique demonstrations. Proceeds from the show go to fund the many community service and educational projects of the Amelia Island Quilt Guild, a non-profit 501(c) (3) organization. The guild donates a quilt to each new Habitat for Humanity homeowner in Nassau County. Other recipients of the guild’s generosity include Community Hospice, Cedar Haven transitional house for homeless women, Ryan’s Case for Smiles, and Quilts of Valor for veterans. Tickets for a queen size quilt will be available at the show for $2 each or 6 for $10.The drawing will be held on February 18 and the winner need not be present to win. Quilts by the Sea Show will be held Friday and Saturday, February 17 and 18 from 9 to 5 p.m. Admission is $10 with tickets available at the door. It was a great team effort, with lots of help from some of our dearest friends,” says Steve. “Smoky Coe is a very talented songwriter/producer and he ran a full studio in North Carolina for decades. He also wrote the hit ‘Good Intentions’ for Randy Travis in the 1980s. He has given me some vintage equipment, for which I’m very grateful, and he’s provided many tips on recording. “Also, I’m blessed to be collaborating with good friend and dynamic musician Phil Maphey on an ongoing progressive rock instrumental project, which we call the ‘Mason Maphey Project’. Phil and his wife, Kathy, are Amelia Island’s very popular entertainers, The Macys.” One of Steve’s missions is to help young artists maneuver their way through a career in music-making. “I help them navigate though the insand-outs of the business, and their enthusiasm is so inspiring,” says Steve. “Helping them produce a good work tape makes all the difference in the music business.” Steve also teaches guitar lessons to young people through the Boys and Girls Clubs of Nassau County, and he networks with regional music stores and other local businesses. Steve and Marsha consider themselves blessed to be doing what they’re doing on Amelia Island, a place they feel is akin to paradise. “Here we are, working with great friends like Monica da Silva and Chad Alger from Complicated Animals. ablo’s Mexican Cuisine is a restaurant owned by a warm, loving family with a passion for what they do. Featuring a myriad of authentic Mexican recipes and a friendly atmosphere, Pablo’s is a great place to eat, any day of the week. I recently invited my friend Dan Voll to join me at Pablo’s for dinner. Dan is a well-known local musician who spends most of his nights entertaining Amelia Islanders and visitors alike, but this evening he was free for dinner and looking forward to a relaxed, authentic Mexican dinner hosted by Pablo and Katherine Madrigal. Katherine started me off with a Mojito, crisp and bright, made with rum, fresh lime juice, mint, simple syrup, and delicious fruit flavorings like strawberry and mango. Wow, what a great start to dinner! I enjoyed my drink with Pablo’s delicious homemade salsa and chips. The salsa was very fresh, and we could really taste the cilantro and spices. Pablo then brought us an amazing Queso Dip, unlike any I’ve ever had. The hot cheese was spicy and loaded with
homemade chorizo, along with achiote and garlic, and it was served flaming! What a treat, served with more hot and crispy tortilla chips. Pablo asked us to try his guacamole, too, which Dan and I concurred is probably the best in town. All of Pablo’s dips are made fresh daily. Next on the menu was Pablo’s famous Chile Relleno, and I say famous because everyone I know talks about it—a roasted poblano pepper filled with chorizo or grilled chicken, queso, and served on a bed of roasted tomato sauce. We had our Chile Relleno with cheese only, and Pablo told us he makes his own special blend of four types of cheese. I especially loved the rich and smoky flavor of the tomato sauce, and I was afraid that Dan and I would argue over who got the last bite! Shrimp Tequila (or Camaron Tequila) was the next dish we tried, made with sautéed spicy shrimp, roasted tomato sauce, and gold tequila, served with yellow rice. This is a lovely entrée for shrimp lovers, and I really appreciated the care put into the perfectly cooked and seasoned rice. We also sampled Pablo’s Chile Colorado, which is his grandmother’s recipe, made with pork tips, chile guajillo, and ancho sauce, served with tortillas. This dish was so rich; the pork was incredibly tender, and the sauces balanced out the dish perfectly. For dessert, Katherine brought us Flan, a rich custard with golden syrup, decorated with a smiley face made with maraschino cherry pieces. The flan resembled Dan himself, smiling as he gobbled it up! This sweet and creamy dessert was the perfect ending to a memorable meal. FRENCH CASSOULET This recipe is a simplified version of the traditional cassoulet, and can be made from ingredients readily found at the local grocery store. Ingredients 1 lb. dried white beans Chicken stock 2 oz. duck fat (optional) 8 oz. salt pork, diced 8 pieces chicken, preferably legs and thighs 1 lb. garlic sausage, sliced or cubed 1 onion, peeled and chopped 2 carrots, peeled and chopped 2 stalks celery, chopped 1 head garlic, peeled and chopped 2 bay leaves and 6 cloves, wrapped in a sachet

Preparation Place white beans in a pot, cover with salted water, and let sit overnight at room temperature. Drain and rinse. In a large Dutch oven, warm duck fat, if using, and add salt pork, cooking until pork begins to brown. Remove to a bowl with a slotted spoon. Add sausages to pot, sauté, and then remove. Season chicken parts with pepper and brown in fat. Remove. Add onions, celery, carrots, and garlic and lightly sauté. Then add beans, sachet, and enough chicken stock to cover, and cook for about 45 minutes.

o matter how long I live in balmy Florida, February will always be my favorite month for preparing onepot winter meals. Although our weather is mild and welcoming, my palate yearns for hearty bowls of soup and stew, served with bread and wine. Winter is a great time for entertaining, as our snowbird friends have arrived and the farmers markets are overflowing with fresh, winter vegetables, homemade sausages, and farm-fresh meats. One-pot meals are perfect for entertaining. They are easy on the chef, and they will be savored by your guests. After all, who can resist a succulent French cassoulet, containing meats,
duck fat, and white beans, slow cooked in an earthenware vessel? Or German sauerbraten that has marinated for several days, then slow cooked for hours, and served with egg noodles and a dollop of sour cream? Although one-pot meals may take a bit of prep time, they can be made a day or more in advance, and then heated for dinner when guests arrive. The best side dish for a hearty winter dish is salad, created from whatever fresh greens are in season, like kale and spinach. And be sure to find a nice baguette and a good bottle of wine. After all, that’s what makes your one-pot meal complete!

Remove the sachet and put all the meats back into the Dutch oven and place it into an oven on low heat, 275 to 325 degrees, and cook uncovered for about 2 hours. Check the dish every now and then and add water as the chicken stock evaporates so the beans will remain moist and cook properly. Continue to cook for 1-2 hours more until you are pleased with the consistency and the flavor. Adjust the seasoning at the end of the cooking time. This dish can be made 2- days before you want to eat it, and reheated gently in the oven. Serve with a salad, baguette, and a bold red wine. Makes 6 to 8 servings.
