The Amelia Island Concours d’Elegance culminates Sunday with a display of three hundred rare and restored automotive gems on the fairways of The Golf Club of Amelia.

March is one of our favorite months on Amelia Island. With its arrival comes the eagerly anticipated end of winter, felt more acutely this year, with longer stretches of cooler temperatures than we’re used to here. Beautifully blooming azaleas are our first clue that the weather is becoming more favorable, and, here on Amelia Island, our second clue is that much-anticipated harbinger of spring, the Amelia Island Concours d’Elegance. Known affectionately around the world as “The Amelia,” our favorite automobile show is a two-time winner of the Motoring Event of the Year at the prestigious International Historic Motoring Awards in London. Celebrating its twenty-third anniversary this year, the Amelia Concours is a dizzying three-day extravaganza of everything automotive, with seminars, social events, road rallies, an automobile auction, Saturday’s “Cars & Coffee,” the Porsche Driving Experience, and, of course, all those beautiful automobiles. The event culminates Sunday with a display of three hundred rare and restored automotive gems on the fairways of The Golf Club of Amelia. These painstakingly restored classic cars represent almost every era of automobile production, including very early models, the great luxury cars of the 1930s, classic models from the 1950s and beyond, and even some of the best racing cars ever produced. The inclusion of racings cars and the stars of racing is one of the things that sets the Amelia Concours apart, earning it the nickname “The Racer’s Concours.” (It’s also known as “The Fun Concours.”) This year’s honoree is Emerson Fittipaldi, double Formula 1 World Champion and two-time Indy 500 winner. Congratulations to Bill Warner and his staff for presenting another spectacular Concours weekend. Over the past 22 years, Amelia Island Concours d’Elegance has given over $3.2 million dollars to local charities, including over $1 million dollars to Community Hospice & Palliative Care. Community Hospice has been an innovative national leader in palliative and hospice care, as well as being an important provider of programs and services dealing with advanced illness here in Nassau County. During its 39-year history, Community Hospice has served 200,000 adults and children in Nassau and the surrounding counties, including at the Warner Center, named in honor of Jane and Bill Warner, founders of the Amelia Concours, whose vision and generosity has helped fuel the success of Community Hospice. In addition, we take a closer look this month at the history of Community Hospice, which continues to expand across north and central Florida; we look ahead to the Amelia Island Museum of History’s new “Cottages & Courtyards Tour,” which take place in the downtown Historic District next month; we discover a delicious, non-traditional way to enjoy the traditional Easter dinner; and much more. Concours d’Elegance 2018

Now in its 23rd year, the Amelia Concours returns this month with incomparable automobiles, historic race cars, and the legendary Emerson Fittipaldi.

W

hen the 22nd Annual Concours d’Elegance’s Sunday car show was threatened by rain last year, Chairman Bill Warner had a tough decision to make – to move the show from Sunday to Saturday, forecasted as a nearly perfect, sunny day. “It was truly a miracle because what was front and center in everyone’s mind about the 2017 Amelia Island Concours d’Elegance was ‘the move,’” says Warner. “By now you’ve likely heard that the move was seamless; the 22nd Annual Amelia Island Concours d’Elegance, Cars & Coffee at the Concours, the RM/Sotheby’s auction, the seminars, the ride-and-drives, and the fashion show all happened in Saturday’s perfect weather.” After 22 years of The Amelia Island Concours, Warner has come to believe this is an event that can’t be experienced

anywhere else. “The reason is people,” says Warner. “That’s the sole element of the Amelia Island Concours that is even more important than the extraordinary cars the event continues to attract or even its location. People have made The Amelia the double Octane Magazine award-winner that it has become. Watching them drive up the fairway to get their awards, to see the joy on their faces, is a priceless part of The Amelia. That connection between human and machine is something very special. I suppose that’s why many people call the Amelia ‘The Fun Concours’ or the ‘The Racer’s Concours’ and understand what we’re trying to do.” Warner, founder of the Amelia Island Concours d’Elegance, was an antique car collector and a writer/photographer at Road

and Track Magazine, who together with Patti Hendrix of The Ritz Carlton, produced the first event in 1996. It has grown dramatically over the years, attracting thousands of people to the island. Along with the public display of automobiles, the Concours offers various seminars, social events, and auctions, rounding out a fabulous weekend of exceptional autos, their owners, and car enthusiasts from all over the world. Now in its 23rd year, The Amelia is among the top automotive events in the world. Always held the second full weekend in March, it draws rare vehicles from collections all over the world to The Golf Club of Amelia Island and the RitzCarlton, Amelia Island, for a celebration of the automobile like no other. The annual event will be held March 9, 10, and 11 on the 10th and 18th fairways, replacing golf carts and caddies with high style race cars and their enthusiastic owners. Emerson Fittipaldi, double Formula 1 World Champion and two-time Indy 500 winner, will be the honoree for this year’s event. “Meteoric” is the most apt and accurate description

of Fittipaldi’s illustrious racing career. He was victorious in just his fifth World Championship Formula 1 race, the 1970 U.S. Gran Prix at Watkins Glen. Two years later he became the youngest Formula 1 World Champion at that time, at just 25 years old; that record stood for 33 years. In 1974 he logged his second F1 world title. He went on to win the Indy 500 in 1989. “In a century just five racers have won both the Formula 1 and the Indy 500,” says Warner. “Having Emerson as our 2018 honoree is an unprecedented honor for The Amelia.” This year, the Concours will honor the legendary racing and rally cars that wear the iconic red and double-blue stripes, and the famed “bar-and-ball” of the Martini International Racing Team. These cars, which have worn Martini’s internationally famous colors are an all-star squad of some of the greatest and grandest marques and cars in motorsport history. The centerpiece on The Amelia’s 23rd Concours field will be the 1971 Le Mans-winning Porsche 917, which set speed records that took four decades to beat. That was followed by

a second and third Martini Racing Le Mans 24 Hour victory in 1976 and 1977 with Porsche’s turbocharged 936 spiders. Martini earned victories for a total of 20 World Sports Car and Endurance Championship race wins from 1975 to 1989. “Martini not only makes vermouth, they create motorsport history,” says Warner. “No wonder their ‘bar-and-ball’ emblem is one of the most famous and recognizable motorsport logos of all time.” Still wearing Martini’s logo, the 1971 Le Mans winner will come to Amelia Island on special loan from the Porsche Museum in Stuttgart, Germany. A special class of electric horseless carriages will highlight the renewed enthusiasm for the 120-year-old technology at the Sunday show. When electric cars first took to American roads over a century ago, many homes were still lit by gas lamps; while the “exhaust” of domestic animals was still an impediment to convenient and dignified travel. The duty of the first electric cars was local transport, not much different than the tasks performed by horses. Very early in the 20th century, American industrial legend Thomas Edison and the brilliant electrical engineer Charles Steinmetz both drove electric cars. A lack of any sort of road system kept most cars in town. In those days, even heavy battery powered cars an effective mode of local transport. That all changed as technology made the internal combustion engine a more obedient servant and the American

highway system put greater demands on the duties of automobiles. In 1912, Cadillac’s “Boss” Kettering invented the self-starter, and within a few years no one had to crank-start and automobile. That invention drove the first nail in the coffin of the electric car. “It certainly seems the electric car’s time has come again,” stated Mark Becker, Vice Chairman of The Amelia. “Maturing technologies and changing attitudes have revived the flexibility of the electric car concept. The reality surrounding the current strain of electric cars has the look of renaissance about it. So it’s time for The Amelia to honor those early pioneers who saw the future of the electric car.” “The urgency of war was the primary factor forcing the evolution of the internal combustion engine during the first half of the last century,” says Warner. “But it will likely be the enlightened progress of civilization that will make the electric car a practical and modern reality in the 21st century.” To complement the 2018 electric car class, The Amelia will feature the newest electric and hybrid powered cars from the world’s leading manufacturers plus a seminar entitled “WATTS NEXT? Design Challenges of the Electric Car” on Friday, March 9. Since 2010, The Amelia Island Concours d’Elegance has partnered with Hagerty, the leading insurance agency

Launched in 2007, Hagerty’s program provides a one-of-a-kind opportunity for children to learn about a variety of classic cars through participation in a simple and fun judging process. It is now an integral part of more than 125 classic car and boat events throughout the U.S., Canada, and the U.K. annually. Early Sunday morning the young judges are guided through the show field where they encounter pre-selected show cars and interact with their owners, allowing the judges to learn details, history, and fun facts about each car. Judging takes place using a simplified score card that highlights five basic categories. The winners are celebrated during the Amelia’s award ceremony where the young judges help present the owners with their trophies. Other highlights of the 23rd Annual Concours include the beloved “Reliable Carriers Eight Flags Road Tour” held on Friday

from 8 a.m. to 4 p.m., departing from The Ritz-Carlton, Amelia Island’s main driveway. The tour stops at various points on and around Amelia Island and concludes with a public display and lunch in downtown Fernandina Beach. The event is open to Concours registered vehicles only, but the public is welcome to join the cars and their owners for the downtown show. Also held on Friday is the “Porsche Driving Experience,” beginning at 7 a.m., departing from the Fernandina Beach Municipal Airport. This event includes a spirited ride with a professional driver and an entrant participation autocross. Price per car is $250 for 2-people, and the event is open to the public. Ownership of a Porsche is not required, but you must be 21 years old to participate. On Saturday, the Concours hosts “Cars & Coffee” held on the 10th, 18th, and 1st fairways of the Golf Club of Amelia Island, a presented by Heacock Classic Car Insurance.

ANNUAL GALA CELEBRATES THE LIFE OF TRINITY HOBLIT

BARTRAM GARDEN CLUB SWINGS INTO SPRING The Bartram Garden Club is hosting two events this spring to help get your garden growing! The first is their March 8 meeting, held at 10 a.m. at the GFWC Woman’s Club of Fernandina Beach, with a program entitled “Herbs,” presented by Nassau County Extension Director Rebecca Jordi. Jordi will lead a discussion on which herbs thrive in Northeast Florida’s soil and climate. In addition, a representative from Pelindaba Lavender’s shop in downtown Fernandina will present the myriad ways lavender is used. Members and guests are invited to share a favorite herb recipe. Join the group at 10 a.m. for a meetand-greet, followed by the program at 10:30 a.m. In addition, the Club is also hosting a floral design program and lunch called “The Sisterhood of the Traveling Plants” on April 19 at 10 a.m., in conjunction with members of the Woman’s Club, which will include lunch following the presentation. On Saturday, March 17, the Trinity Love Hoblit Foundation presents its 2nd annual Gala at the Omni Amelia Island Plantation Resort at 6 p.m. The event includes cocktails, hors d’oeuvres, dinner, entertainment, and a live auction. Proceeds support and fund neuroscience research for stroke and aneurysm for pediatric and adult patients receiving treatment at Wolfson Children’s Hospital and Baptist Neurological Institute. Trinity Hoblit was born with a rare form of primordial dwarfism. Although small in stature, she had an enormous spirit that captured the hearts of everyone who came into contact with her. At age nine, Trinity was diagnosed with multiple brain aneurysms. She passed away on June 30, 2015 at age fourteen. Trinity was an advocate of organ donation, and with her family’s support, she gave life to three donor recipients after her death. These three recipients are alive today as a result of Trinity and her family’s support. The Gala highlights music by multiple Grammy Awardwinning pianist Dave Yaden, along with The Decades Band, featuring Isabella Martin, Anthony Llerandi, and Eden Rewa. Aaron P. CUMMER AMELIA HOSTS ITS ANNUAL GARDEN WALK AT AMELIA ISLAND PLANTATION On Friday, April 6, Cummer Amelia will host its 4th annual Garden Walk at Amelia Island Plantation from 1 to 4 p.m. Cummer Amelia is an affinity group for the Cummer Museum of Art and Gardens in Jacksonville, whose purpose is to support the museum’s programs and bring awareness of fine art to the people of Nassau County. Cummer Amelia sponsors programs at the Cummer, and its main project is to send all third graders in Nassau County to the Cummer for a day of art enrichment. For most of the children, it is their first introduction to fine art, formal gardens, and museums in general. The Garden Walk includes a walking tour of four beautiful home gardens, each with its own unique charm. Art demonstrations, live music, and refreshments will be provided along the tour route. In addition, a Garden Market located near The Shops at Omni Amelia Island Plantation Resort is available from 11 a.m. to 4 p.m. Transportation will be offered during the event. Tickets purchased in advance are $20 for Cummer Museum members and $30 for non-members. Tickets purchased the day of the event are $40. Group rates are available. oraine King, Amelia Island’s wellknown house portrait artist, is currently displaying her traditional works of art at the newly expanded Baptist Nassau Hospital. Though Loraine’s one constant in her career has been her house portraits, the display of thirty of her pieces at Baptist move from realism to impressionism and abstract styles in watercolor, acrylic, pastel, pen and ink, and oils. They represent the other side of Loraine’s talent, where she embraces the nature and essence of the communities in which she has lived. The works on display at Baptist range from roseate spoonbills to ocean renderings, landscapes, florals, and more. Loraine’s interest in art began early since parents had art-related careers. She was an art education major, became a teacher, and then becoming art director of the Shenendahowa School District in Clifton Park, New York. She became an advocate for the arts in her community, directing art shows of her students’ works as well as others in the community. She was recognized by the Schenectady Museum and in many art publications, including Early America Magazine.

While living in New York, her American Primitive paintings sold through the Folk Art Museum in New York City, as well as many shops throughout the area. She was also instrumental in starting the Dublin Art League in Ohio. Upon moving to Amelia Island with her husband, Tom, she started The Plantation Guild & Gallery with the support of the Cooper family. Loraine not only represents the homes she paints, but also includes pets, cars, and even family members. egan Westra grew up loving the coastal, Low Country life. Growing up fishing, shrimping, and crabbing in the creeks of South Carolina, she has an appreciation for an easygoing way of living. When she and her husband, Dan, visited Fernandina Beach, they discovered a similar lifestyle and moved to Amelia Island permanently in 2014. Regan developed an eclectic, efficient, comfortable style that reflects the beauty and serenity of nature in the southern coastal areas. uality Health of Fernandina Beach opened in 1984, the only skilled nursing facility of its kind on Amelia Island, offering rehabilitation services, as well as long-term and palliative care. A 120-bed facility, one quarter of Quality Health’s residents are short-term rehab patients, the majority of whom are discharged to their homes after rehabilitation. With a mission statement that reads “to serve selflessly with a loving smile and compassionate heart,” Quality Health Administrator Stephen Jordan believes their staff is what makes their facility different. “We are a family here,” he says. “Our patients are our friends and neighbors. Some of our team members have worked here for over 30 years. Our longevity is high value for our patients.” Admissions Director Chasta Moore believes Quality Health’s success is driven by the quality services available to patients and residents alike. “We offer speech, occupational, and physical therapy, along with comprehensive medical care on all levels,” she says. “But we also have music, art, and pet therapy, and many activities that provide our patients quality of life, like outings and field trips. stablished in 1979, Community Hospice & Palliative Care has been an innovative national leader in palliative and hospice care, as well as an essential provider of programs and services to meet the diverse needs of the communities it serves. During its 38-year history, Community Hospice & Palliative Care has served nearly 200,000 adults and children in Baker, Clay, Duval, Nassau, and St. Johns counties, and they have recently expanded their service area to include 11 counties in north and central Florida. Through the support of more than 950 employees and 1,000 volunteers, the organization helps approximately 1,500 patients per day to live better with advanced illness – at home, in long-term care and assisted living facilities, in hospitals, and at its eight inpatient care centers.

On Amelia Island, the Community Hospice Jane and Bill Warner Center for Caring is located on the first floor of its medical office building adjacent to Baptist Medical Center Nassau. The Warner Center opened three years ago and provides acute end-of-life care in a home-like setting. It is named in honor of Jane and Bill Warner, founders of the Amelia Island Concours d’Elegance, in recognition of the remarkable legacy the Warners and the Concours have left – and will continue to leave – in Nassau County. Their support of Community Hospice has provided patients and families with compassionate care from exceptionally dedicated physicians and nurses. It features eight private bedrooms and bathrooms, comfortable and spacious family gathering areas, a family laundry area and kitchen, and a meditation room. A large walled garden surrounds the center. Family and friends may visit any time, including overnight stays, and family pets are welcome. The center has its own private entrance, making it feel like a stand-alone building while enjoying the advantage of being closely connected to the hospital. When Susan Ponder-Stansel was asked to become a volunteer at Community Hospice, little did she know that she would eventually become president and CEO of the foundation. Today, she is their longest running director. “Community Hospice has truly become my life’s work,” says Ponder-Stansel. “We plan to open a new office facility in Fernandina Beach in July, in the new Council on Aging MARCH 2018

This will give us a more visible face in the community and allow us to provide more efficient training for our caregivers, along with the opportunity to educate the local medical community on palliative care.” Palliative care is defined as the treatment and relief of mental and physical pain without curing the causes, especially in patients suffering from a terminal illness. “We are here for patients and their families to ease pain and suffering,” says Ponder-Stansel. “Our services include hospice, advance care planning, veterans’ concerns, grief and loss support, as well as community education.” Community Hospice also provides a special children’s program called Community PedsCare. “Community PedsCare brings comfort and care to enhance the quality of life for patients from prenatal (before birth) to age 21,” notes Ponder-Stansel. “The program supports the specialized needs and medical care of the child, their parents and siblings, other family members, caregivers, classmates, and teachers.” The Amelia Island Concours d’Elegance has given over $1 million dollars to the foundation through the years, which began with the work of three visionaries – Bill Warner, who started the Amelia Concours, Patti Hendrix Joyce, formerly with The RitzCarlton, Amelia Island, and Trudy Harris, then director of the Community Hospice Foundation. “Through the work of these three amazing people, Community Hospice & Palliative Care will continue its work to improve the quality of life for patients and their families across north and central Florida,” says Ponder-Stansel. O

nce again, the Amelia Island Museum of History offers a unique event that showcases what is special about Amelia Island and downtown Fernandina Beach’s Historic District. “Visitors come to Fernandina to see the historic stately homes in the downtown area and stroll past the many small attractive cottages that line the streets to the north and south of Centre Street,” says Jennifer Harrison, coordinator of this first-time event. “Now visitors will have the opportunity to visit a collection of ten cottages, all south of Centre Street, and tour some of these charming and unique homes.”

Amelia Island’s Historic District is a living museum of houses built from the late 1800s, typifying the architectural splendor of the Victorian period. Visitors to the area are familiar with many of the grand houses of the district, which include the Fairbanks, Bailey, BakerHinton, and Chatwick houses. This April, the Amelia Island Museum of History, for the first time, will offer a tour of a collection of the smaller cottages that are clustered on the south side of Centre Street, all within walking distance of one another. None of the homes have stairs, the tour’s organizers promise.

Many of these small gems were built in the early 1900s. The oldest cottage on the tour was built circa 1905, while the newest was finished just last year. These small spaces have been lovingly and cleverly designed and decorated to create some cozy and convenient spaces. Beautiful heart of pine floors, fireplaces, and unique details make each house a treasure. The small garden spaces, beautifully realized, are bound to excite gardeners. Each cottage showcases owners who have used their particular talents, interests, and styles in these lovely homes, all while preserving the charm and distinctive qualities of each. The owners of the cottages are a unique group themselves, including artists, antique collectors, retirees, and newlymarrieds. The artists on the tour have created studios out of sheds and garages, and their work will be on display. Some owners are master do-ityourselfers, and their ideas are sure to inspire. In some cases, the courtyards steal the show and demonstrate creative ideas for spring gardens. Docents at each property will share some history of the home and/or courtyard, and point out unique features. Those touring are asked to wear flat shoes as beautiful old wooden floors need to be protected. Water will be available in one of the courtyards (606 Date). A free cookie is also available with water sold as long as the cookies last! In addition, Bright Mornings is offering a 10% discount to any tour ticket holders who brunch or lunch there. It will be a celebration of spring in Fernandina Beach, as participants enjoy the charm of the crisscrossing streets that lead them from cottage to cottage, and through the lovely garden courtyards.

Purple Daydream

popular podocarpus New varieties of Bottlebrush, the reliable Loropetalum, and Podocarpus, or Japanese Yew, will provide outstanding color and texture for a beautiful landscape this spring. BY BETTY MORRELL

B

ottlebrush plants have been loved and admired for many years. They grow as trees, both weeping and upright, and as beautiful bushes both large and small. Now there is a new and improved dwarf Bottlebrush called Light Show. This wonderful new plant is upright, growing 2 to 3 feet in height and width. The little brushes on this plant start showing their red flowers in early spring and bloom into summer. Light Show grows in full sun and it is a great addition to any garden. Use it as a border, a specimen, or pot it and place it in a sunny spot. Hummingbirds really like Bottlebrush plants! Most of you who read this column regularly know how much I like Loropetalum plants. Recently, a number of outstanding dwarf varieties have caught my eye. Purple Daydream is a compact dwarf Loropetalum with a layered habit. It grows 2 to 3 feet in height and 3 to 4 feet in width, and it sports dark pink to red blooms in the spring. It grows in full sun to part-shade. Plant Purple Daydream in front of Emerald Snow Loropetalum, a

stunning, beautiful white variety with green foliage, and both plants will stand out. You could also use them as plantings in the landscape. Loropetalums are evergreen, so they will provide color throughout the year. Traditional Loropetalums grow very large, and their foliage fades from purple to green. Southern Living has come up with compact plants that retain their rich purple hue year round, and Emerald Snow is a semi-dwarf variety. Another very pretty dwarf Loropetalum is the weeping Purple Pixie. This awesome little plant has layers of cascading foliage and sports pink ribbons in the spring. Since it grows only 1 to 2 feet in height and 4 to 5 feet in width, it is possible to use this plant as a ground cover. However, a border

of Purple Pixie would be outstanding backed with a contrasting color. Plant in pots or use as accents throughout your garden landscape. A very versatile shrub is the Podocarpus. This plant, also known as the Japanese Yew, can be used as a screen or background planting. Many of us have had this wonderful shrub in our garden for years. Some have shaped them as a topiary, while others either let them do their thing or kept them trimmed to suit the landscape. Southern Living has introduced a very interesting new Podocarpus. It is called Mood Ring, and it has bronzy, pink new growth. It is a very attractive plant. It is a low-maintenance, upright shrub that makes a great privacy screen. Mood Ring, like other Podocarpus, grows 10 to 15 feet in height and 4 to 6 feet in width. When new growth appears, this plant is a definite conversation piece. “A

melia Island is the whole package; there is no contest,” agree Cathy and Jim Ratliff, new homeowners at Oak Marsh in Amelia Island Plantation. It didn’t take this couple long to figure out what Amelia Islanders already know: our island home is a place filled with natural beauty and manmade fun. For Cathy and Jim, this discovery led them to a new address, a new Arthur Rutenberg home, and a couple of dozen new favorite things to do! The Ratliffs married 45 years ago and spent most of their years in Ohio, where they built a large custom home and raised their children. Around five years ago, it was time to downsize, so they sold the family residence and remodeled two smaller abodes, one on Lake Erie and the other in Stuart, Florida. “We were not crazy about Stuart,” Jim explains. “Friends of ours suggested we stop in Fernandina Beach on our way south, and the rest is history.”

Cathy and Jim were delighted with Amelia Island’s proximity to the water, its climate, the small-town feeling, its unexpected history, and its restaurants and shopping, as well as the plethora of biking, boating, fishing, and golf that are available here. After a quick stop at Amelia Island Plantation Real Estate, the couple was soon touring the island and checking out available listings with Danny Leeper. “Danny was amazing. At that point, they visited an Arthur Rutenberg model home and made a quick change of course, pivoting from buying a house to building one. Jim and Cathy adored the Oak Marsh area of Amelia Island Plantation, so they purchased a parcel of land and began the home design process with Vic Buscaino of Plantation Housing Corp. The Ratliffs were grateful that Vic was able to accommodate their every design request, including incorporation of an art studio for Jim, a well-respected amateur artist. “He will not be MARCH 2018

honest about how great is his work,” smiles Cathy. Specializing in oil paintings and studio-sculpting, the best part is that Jim only creates things he loves. He recently finished a clay model of a group of wild horses, which will be a bronze sculpture. Vic worked with the couple to personalize many of the features of their 4,200 square foot home. “Jim and Cathy were great to work with, as their attention to detail added some of these extra special spaces,” Vic explains. “The downstairs is designed to allow them to enjoy their home on one level, and then also have plenty of space on the second floor for when family visits.” 56 AMELIA ISLANDER MAGAZINE •

“We changed so many components of the original plan that it is a complete custom home,” Cathy notes. Cathy has a great eye for interior design, and Jim believes his wife may have missed her calling. A tour of the home invites no argument. “I study design articles,” smiles Cathy. “I love it.” One of the signature design elements of an Arthur Rutenberg home is the outdoor living space. “The outside patio and pool area was designed with a fireplace, pool, and spa. Joe’s 2ND STREET BISTRO Long a favorite on Amelia Island, Joe’s 2nd Street Bistro continues to offer beautifully prepared steaks, seafood, and duck, all served with Chef Ricky’s creative flair. BY MICHAEL GASS PHOTO BY WILLIAM RASER

I

t always feels strange to walk through the front door at Joe’s Bistro. From the earliest days, I’ve spent my time there in the kitchen, with some big personalities and legendary locals. While working as executive chef at another local establishment, I would moonlight on nights off as a dishwasher at Joe’s just for fun. The crew at Joe’s is tight-knit, and while people come and go, the atmosphere and quality at Joe’s Second Street Bistro has never faltered. As fond as I am of the old days, I am equally enamored with owner, chef, and native talent Ricky Pigg. Ricky and I studied at Johnson & Wales University in Charleston, South Carolina at the same time. My travels took me to the Caribbean, and Ricky made it to Music Row, making a name for himself on the restaurant scene in Nashville before coming home to Fernandina with his wonderful wife, Mari. On a recent Saturday night, my wife, Allie, and I had the chance to visit with Ricky before things got busy. I checked out the menu before we went in and I was looking forward to the Chicken & Andouille Wontons. The homemade barbecue sauce and crisp slaw were perfect with the creamy and crunchy wontons filled with chicken, sausage, leeks, and cream cheese. We also had a bowl of Joe’s famous gumbo, with tender chunks of prime rib and sweet local shrimp. The spicy finish and ripe berry of the Trapiche Malbec paired wonderfully with both starters. I asked Chef Ricky what he wanted us to enjoy, and he didn’t hesitate. He suggested the New York Strip with Palmetto 60 AMELIA ISLANDER MAGAZINE •

Cheese, his own guilty pleasure. For the uninitiated like myself, Palmetto Cheese is a Pawley’s Island, South Carolina take on pimento cheese, with a little extra soul and chunks of chili. The Palmetto Cheese was melted on top of a perfectly grilled strip steak and served over beer-braised collard greens. These greens were amazing. They had a flavor I hadn’t experienced before, a sweetness the chef attributed to the beer, with just the right amount of bacon. Allie loves a good steak, and I cannot resist a lot of things Allie won’t eat, duck being at the top of the list. Braised, roasted, seared; you name it, and I love duck prepared that way. Tonight, it was crusted in macadamia nuts, served medium, and finished with a creme de cassis glaze. The dish was rich, but the Concannon Cabernet Savignon from California had just the right blend of arid flavors to slice through the richness of the duck and the delightfully sweet sauce. When we could take no more, the siren song of dessert beckoned us on yet further, but rather than crash upon the rocks of gluttony, we opted to split a slice of the Tiramisu Cheesecake and Allie enjoyed a nice cup of coffee. It was a beautiful end to a lovely meal, and a fine way to celebrate the fifteenth anniversary of our first date. If you’ve got someone or something worth celebrating, let Joe’s 2nd Street Bistro do all of the hard work, and you take all the credit. ORANGE MAPLE GLAZED SALMON Ingredients Six 6 oz. salmon fillets 3 tbsp. maple syrup 1 tbsp. orange zest 1 tbsp. orange juice 1 1/2 tsp. Dijon mustard 1 clove minced garlic Salt and pepper to taste Preparation Preheat broiler. Line a large baking sheet with foil and spray generously with nonstick cooking spray. Place salmon, skin side down, on prepared baking sheet. In a small bowl, whisk together syrup, orange juice, and zest, mustard, garlic, salt and pepper. Brush mixture over salmon. Broil for 7-10 minutes, or until salmon flakes easily with a fork. Serves six. ASPARAGUS GOUGÈRE Ingredients 4 oz. flour, measured and sifted 1 cup milk 1 tsp. salt 2 oz. butter 4 eggs at room temperature 3 ounces grated Gruyère cheese 1/4 tsp. black pepper 1/8 tsp. nutmeg 1 lb. steamed asparagus (kept warm) 1 cup Hollandaise sauce (kept warm)

A

fter years of holiday entertaining, I realized I’ve brought way too many crown roasts of pork to my Easter dinner table, along with glazed hams, turkeys, and standing rib roasts. We’ve downsized our dinners quite a bit and we’re also eating a lot less meat than we did 20 years ago. So for this Easter I’m making Orange Maple Glazed Salmon served with a gorgeous Asparagus Gougère, which is a puffy, cheesy pastry filled with asparagus and topped with Hollandaise sauce. Gougère can be a little tricky to bake—it puffs up beautifully in the oven but often collapses mercilessly under the weight of the goodies piled up on top of it. But as long as it looks and tastes divine, which it always does, we don’t care about that. The key to this dish is to

have all your food ready to serve when the Gougère comes out of the oven. So the asparagus should be steamed, the Hollandaise prepared and kept warm, and the salmon baked, tented with foil, and ready to plop on a plate. You could serve other side dishes with this dinner, but they are sure to be overlooked when your guests feast their eyes on the Gougère and salmon. But if you want more for your Easter table, a side salad might be nice, and of course a bottle of French white wine, perhaps Viognier or Champagne. Because Gougère is so rich, buttery, and cheesy, a light dessert bite, like chocolatecovered strawberries would also be a tasty addition, or perhaps just a handful of Peeps, stolen from your child or grandchild’s Easter basket!

Preparation Butter a piece of parchment paper front and back and place on a baking sheet. Preheat oven to 375 degrees. Place milk, butter, salt, pepper, and nutmeg in a saucepan and bring to a boil. Add the flour all at once and stir vigorously over medium heat until the mixture comes away from the sides of the pot. Then add the eggs one at a time, beating with a spoon until incorporated. Using 2 spoons, place spoonfuls of the pastry in an oval ring about 7 inches wide on the parchment, piling it up as needed. Don’t worry about how it looks. Bake for 45 minutes or until inside of the pastry ring is baked through, and the whole thing is golden and crisp on the outside. Let it cool for just a few minutes. Place on a serving platter. Fill the inner ring with asparagus and drizzle the Hollandaise over all. Place the salmon pieces around the ring if you have room or place the salmon on individual plates and let guests help themselves to the Gougère. Serves six.
