Most businesses and individuals mark the passing of a year at the New Year; others choose the end of the fiscal calendar as their time to review the past year and look forward to the next. Here at the Islander, we could find no better time of year to mark our anniversary than the arrival of the Isle of Eight Flags Shrimp Festival. In fact, our first issue as publishers of the magazine ten years ago was a shrimp festival issue, and so in a sense our year begins and ends with shrimp! We just loved featuring those mouthwatering shrimp dishes in our very first issue, and we still do now. This little crustacean that is at the heart of a local tradition continues to surprise us with its versatility. Each year, we are also impressed anew with the talent of our local chefs. Each spring, we invite them to submit a recipe, and they don’t miss a beat, continually whipping up delicious and unique dishes or inventing new takes on classic ones. One of them is bound to become a new favorite in your household. We hope you enjoy the recipes, and don’t forget to raise your forks to our wonderful local restaurants and chefs. Of course, if you’re not in the mood for cooking, then you can always find delicious shrimp on the menu at all of these great local restaurants. With the gorgeous weather, it’s a great time to step out with the family. Also this month, we hope you’ll enjoy our Healthwise column on the important topic of breast cancer treatment; an update on the exciting new happenings at the Amelia Island Club at Amelia Island Plantation; a peek at the new renovations in the gorgeous home of Chris and Bill Bryan in our Island Home column; and much more. Jan Davis wrote the Island Home and Amelia Island Club articles for this month’s issue, and we have been so blessed to have worked with her for many years. The community suffered a great loss on March 10, when Jan passed away after having undergone heart surgery. Those who regularly read the Amelia Islander and Amelia Island Weddings know how much Jan meant to us professionally. She also meant so much to us personally—as she did to many people—and so on page 37, we have tried to share something of what it was for us to know and work with this extraordinary woman. Our heartfelt condolences go out to Jan’s husband, Don, and their daughters, Laurie and Ashley. Her final articles written for us will be published this month and next. She will be so greatly missed.

BONITO SUSHI & GRILL Grilled Bacon Shrimp Salad 3 strips bacon 6 large shrimp (peeled and deveined) 2 tsp. chopped fresh parsley For the salad 2 cups young arugula leaves, rinsed and dried 1 cup of julienne daikon ½ cup mandarin oranges 1 cup cherry tomatoes, sliced in half ½ cup diced mango

1 can mandarin oranges 2 tsp. finely chopped fresh garlic 2 tbsp. dry white wine

For the Dressing ¼ cup balsamic vinegar 2 tsp. brown sugar ¾ cup olive oil ¼ tsp. salt 1 tsp. chopped garlic

Separate three strips of bacon and slice in half crosswise. Wrap one slice of bacon around each individual shrimp, secure with toothpick if needed. Grill bacon-wrapped shrimp for two minutes on both sides. After grilling, place bacon wrapped shrimp in the oven for one minute. Combine the balsamic vinegar, brown sugar, olive oil, salt, and chopped garlic in a blender and mix ingredients very well. Mix arugula, daikon, mandarin oranges, cherry tomatoes, and diced mango in a bowl. Lightly dress the salad and place shrimp either on top of the salad or on the side.

Shuck oyster and remove from bottom shell, reserve juice. Peel, devein and dice shrimp. In medium sauce pan on high heat sauté olive oil, bell pepper, onion, shrimp, and tomatoes. Cook until shrimp are half-cooked. Place mixture in bowl, add oyster juice, bread crumbs, basil, and lemon juice. Blend until mixed. Place oysters on shells, one each. Top each oyster with stuffing mixture. Bake at 400 degrees for 6 to 8 minutes. Sprinkle with parmesan cheese.

1 green bell pepper, seeded and diced 1 lb. medium shrimp, peeled and deveined ¼ cup dry roasted peanuts, coarsely chopped ¼ cup chopped scallions chopped cilantro leaves, for garnish, optional

Cook noodles according to package directions. Meanwhile, in a medium saucepan, combine chicken broth, soy sauce, peanut butter, sesame oil, and hot sauce. Whisk until blended and set pan over medium heat. Bring to a simmer. Simmer 10 minutes. Heat peanut oil in a large skillet over medium heat. Add ginger and garlic and sauté 2 minutes. Add bell pepper and sauté 2 minutes. Add shrimp and sauté 2 minutes. Add 1 cup of the peanut sauce and simmer 2 minutes, until shrimp are bright pink and cooked through. Drain noodles and add to shrimp mixture. Toss to combine. Transfer noodle mixture to 4 individual plates and top each serving with peanuts, scallions, and cilantro, if desired. Serves 4.

Plunge shrimp into boiling water for 90 seconds and immediately plunge into an ice bath to cool. Dredge the tomato slices in milk then bread, back to milk and then bread again to coat. Deep fry or pan fry until golden brown. Remove and drain onto kitchen towel, and immediately season with a pinch of salt. Coat the shrimp in a liberal amount of remoulade dressing. Arrange the four tomato slices on a plate and top with the shrimp. Garnish with green onions. Remoulade Sauce 2 cups mayonnaise ¼ cup minced celery ¼ cup minced capers

¼ cup horseradish ¼ cup Zatarain’s creole mustard 1 ½ tbsp. tabasco

Mix all ingredients together and refrigerate until need. Bon Appetit!

MERGE Poached Shrimp with Cucumber, Mint and Basil Salad and Black Sesame Seed Puree 4 each poached shrimp 1 each shredded English cucumber bunch of fresh mint bunch of fresh basil 2 tbsp. good quality olive oil 1 tbsp. black sesame seeds In a bowl mix the cucumber, mint, basil, and 1 tbsp. olive oil and let rest in the refrigerator. In a blender, puree the sesame seeds and the remaining oil until smooth. BEECH STREET GRILL Mojo Shrimp Skewer 10 local shrimp and cover them with Mojo sauce for about 10 minutes. (Beech Street Grill makes their own Mojo shrimp sauce, but to save time at home, you can use a prepared sauce.) Grill the shrimp until done, and then combine them with your favorite Black Bean and Rice recipe and garnish with Sofrito or Avocado Salsa. Beech Street Grill uses a Rum Butter Sauce, as well, but the fun thing about these flavors is that the options are many. Have fun with this recipe and enjoy!

29 SOUTH Low Country Cioppino 3 tablespoons extra virgin olive oil 2 cloves of garlic chopped 2 tablespoons of chopped parsley one sprig of fresh thyme, leaves removed 2 tbsp. chopped fresh oregano 2 shallots, sliced ½ pound mussels ½ lb. little neck clams ½ lb. firm fish in 1 inch cubes (sword fish, grouper, marlin, tilapia) ½ lb. shrimp in shell ¼ lb. sliced andoullie sausage 1 ear of corn sliced into 6 pieces ½ lb. cooked quartered new potatoes 1 cup dry white wine 2 cups diced tomato in juice (canned) 3 cups clam juice ½ cup pesto (see below) tsp. fresh red chili flake

CAFÉÉ KARIBO Sautéed Cajun Shrimp with Grape Cream Sauce 5 jumbo shrimp, peeled and deveined 1 tsp. Cajun seasoning 1 tbsp. butter or olive oil 1 tsp. chopped shallots 1 clove garlic, minced ¼ cup white wine ¼ cup heavy cream

½ tsp. cilantro leaves, whole ½ lime, juice only ½ cup green and red grapes, halved 1 tortilla basket (corn tortilla deep-fried between two ladles) Salt and pepper to taste

Sauté shrimp in butter, add garlic and shallots, deglaze with white wine, and reduce. Add grapes. After two minutes, add cream. When you reach the texture you want, add cilantro and lime juice. Serve in the basket, over rice and vegetables. Enjoy!

In a soup pot sweat garlic, red chili flake, shallots, thyme, parsley, and oregano in 3 tablespoons of extra virgin olive oil over medium high heat. Toss mussels and clams in with garlic and herb mixture. Add one cup of dry white wine. Cover and steam for 4 minutes. Add fish, sausage, corn, tomatoes, and clam juice. Bring to a simmer for 5 minutes. Add shrimp and potatoes and simmer for 5 minutes. Remove from heat. Season with salt and pepper. Serve in large bowls with crusty bread and top with a tablespoon of pesto. Pesto ½ lb of fresh basil chopped 3 cloves of garlic chopped 1 cup extra virgin olive oil

¼ cup pine nuts, toasted ½ cup grated parmesan

Place basil, garlic, olive oil, and pine nuts in blender or food processor and blend until smooth. Remove from blender and carefully fold in grated parmesan. Season with salt and pepper

SANDY BOTTOMS Pecan Crusted Shrimp with a Honey Roasted Shallot Cream Sauce 40 shrimp 12 oz. pecans 4 oz. bread crumbs 4 eggs 8 oz. butter

1 quart heavy cream 12 shallots 4 oz. honey 4 oz. olive oil

Preheat oven to 450. Peel shallots and toss in olive oil and honey and roast for about 15 minutes or until soft to touch. Puree shallots and add to a quart of heavy creamy and reduce until it’s a thick, creamy consistency. Leave on burner at minimal heat. Sauce is ready. Chop pecan and bread crumbs in a food processor to about the consistency of grits. Whip the eggs and melted butter together. Dip the peel and deveined shrimp in egg wash, then roll in pecan crusting, coating thoroughly. Place on greased baking pan and bake for 15 minutes or until done. Serve shrimp atop a puddle of the cream sauce. Serves four. Enjoy!

Barbeque Shrimp 8 cups Sweet Baby Ray’s BBQ 2 cups yellow mustard 4 tablespoons of Cajun seasoning 1 cup of apple cider vinegar Peel and devein shrimp and skewer for presentation and cooking. Seasoned with salt and pepper and grill on each side for 6 minutes. About 3/4 of the way done, brush on the BBQ sauce to finish.

BAR ZIN Blackened Shrimp with Spicy Sausage over Pasta 2 cups penne ¾ quart heavy cream 1 cup sharp cheddar 1 cup gruyere 1 tbsp. dry mustard ½ tsp. cayenne pepper

½ tsp. nutmeg salt and pepper to taste 1 cup sliced or diced sausage (chef’s choice) 24 shrimp (6 per person)

Cook pasta according to package instructions. Heat cream, pepper, mustard, nutmeg, S&P until it comes to a soft boil. Slowly stir in cheese. Add a roux till desired thickness, then add sausage. Place warm penne in bowl and ladle sauce over the top. Season shrimp, then pan-sear for about 1.5 minutes each side and serve over pasta.

GOURMET GOURMET Baby Arugula Salad with Coconut Shrimp, Pancetta, Watermelon, and Sweet Chili Vinaigrette Per serving you will need the following: 3 cups baby arugula ¼ cup thinly sliced red onion ½ cup seedless watermelon, cubed into 3/4 inch chunks, plus 2 to 3 thin wedges for garnish 2 tbsp. diced, cooked Pancetta (sauté on low heat until crisp and drain on paper towel) 6 each coconut shrimp, 21/25 count or larger To prepare shrimp, peel and devein, then lightly dust with flour that has been seasoned with salt and pepper. Dip into egg wash made with 1 cup milk beaten with one egg, then roll into coconut breading made with equal parts Panko crumbs and flaked coconut. Allow to dry slightly before frying in 375 degree canola oil for 2 to 3 minutes or until golden brown. Sweet Chili Vinaigrette (2 to 3 tbsp. per serving) Combine 1 cup Thai sweet chili sauce (available in Asian markets and some supermarkets), 1/8 cup soy sauce, and 3/4 cup canola oil in blender and emulsify, cover, and chill. (Will keep refrigerated for several weeks.) To assemble salad: Toss arugula, red onion, cooked pancetta, and cubed watermelon with 2 to 3 tbsp. dressing in a mixing bowl, then transfer to serving dish. Top each salad with 6 coconut shrimp, and garnish with additional watermelon wedges. You may also garnish the salad with other seasonal fruits, such as diced mango or sliced strawberries. Drizzle serving dish with a little more dressing.

Sauté sausage in oil. Add onions and peppers. Remove sausage and vegetables and set aside. Add chicken and brown. Add dry white wine or vermouth, garlic, broth, saffron, paprika, coriander, bay leaf, and the sausage and vegetable mixture. Cover and simmer slowly 15 minutes; add rice and boil uncovered for 5 minutes. When the rice is swollen and has begun to rise to the surface, push the shrimp in, tails down. Do not stir. Garnish the Paella with the peas, olives, lemons/ limes, parsley, and tomatoes. Enjoy!

THE SURF Sweet Potato Shrimp Cakes 1 lb. peeled, boiled shrimp (rough chopped) 1 medium sized sweet potato, small dice, cooked in salted boiling water until tender, then cooled. 1 medium sized red bell pepper, small dice 3 cups panko breadcrumbs 2 eggs 1 tbsp. whole grain mustard ¼ cup fine chopped cilantro 1 cup mayonnaise Juice of one fresh lime

ESPAÑA Johnny’s Favorite Escabeche Gather your favorite shellfish: 8 local shrimp (shells removed and deveined), 8 clams, 8 mussels, 4 baby calamari, and 4 large scallops (sliced in half) and season with salt and pepper, then char-grill for a few minutes only, until they are barely cooked. Remove from grill and let stand to cool. Once cooled, remove clams and mussels from shells, then dice all the seafood proportionate to the clams.

In one bowl, mix shrimp, chilled sweet potato, red pepper, and panko breadcrumbs. In another bowl, mix mayonnaise, lime juice, mustard, eggs, and cilantro. Fold liquid ingredients into dry ingredients slowly with hands and mix until breadcrumbs soften and mixture binds. Divide the mixture into 8 portions using a 4 oz. scoop. Heat a flat skillet or cast iron pan lightly greased with vegetable oil. Pat cakes semi-flat, place in pan, and cook until golden on both sides. Can be served with sauce of choice. Makes 8 4 oz. cakes or 16 2 oz. appetizer cakes.

Place the following in a bowl and use to marinate the seafood: juice of 2 lemons and 1 lime 4 tbsp. of extra virgin olive oil 2 tbsp. of apple cider vinegar chopped cilantro ¼ tsp. of chopped raw garlic ½ red onion, finely diced ½ each red, green, and yellow pepper, finely diced 1 jalapeno pepper, finely diced (optional) salt and pepper to taste Refrigerate for two hours before serving. Makes for small, snack-size portions. Best served on warm summer days with an ice cold beer!

JADE’S BISTRO Basil Shrimp ½ lb. jumbo shrimp 2 garlic cloves, minced 1 cup fresh basil ½ green pepper, sliced ½ red pepper, sliced 1 tbsp. soy sauce

1 tsp. sugar 1 tsp. lime juice 1 tsp. fish sauce (to taste) 1 tbsp. water snowpeas, handful or to your taste

In a medium bowl, mix soy, water, fish sauce, and sugar. Let shrimp marinate a few minutes. Heat oil in a wok and add all vegetables, stir frying for 2 minutes. Add the garlic and cook for 30 seconds. Using a slotted spoon, remove the shrimp from the marinade and place in the wok, stir frying for 3 minutes. Do not completely cook the shrimp. P.L.A.E. Spiced Shrimp with Root Vegetables Season peeled and deveined local shrimp with blackening spice and pan-sear in hot pan with clarified butter. Cook 2 to 3 minutes, about 1 1/2 minutes per side. For the root vegetable hash, medium dice peeled butternut squash, peeled sweet potatoes, red bell peppers, yellow peppers, and deseeded pablanos, and sauté in bacon drippings. Cook until tender. Chive oil Blanch and drain 1 bunch of chives, then puree, add olive oil, salt, and pepper. Drizzle chive oil over entire dish.

Slice vegetables. Put bell peppers and onions in sauté pan with oil and sprinkle with fajita seasoning. Cook until your desired tenderness and then add shrimp. Cook shrimp just until they’re no longer translucent and then add tomatoes at end for about a minute or two, and season again as desired. Toss together and serve on a sizzling platter with warm tortillas and a side of rice and beans and guacamole, lettuce, sour cream, and pico de gallo. 1 ½ pounds of raw shrimp (peeled and deveined) 2 cups of freshly squeezed citrus juice ½ cup finely chopped onion 1 cup finely diced tomatoes ½ cup finely chopped fresh cilantro 3 tbsp. chopped jalapeño 1 tbsp. hot sauce ¼ cup of white grape juice salt and pepper to taste To create the marinade, mix together everything but the shrimp in a small mixing bowl. Place the shrimp in a glass baking dish, top it with the marinade mixture. Make sure the shrimp is submerged in the marinade so it will ‘cook’ (denature) appropriately. (Denaturing is a form of cooking without changing the temperature). Be sure to cover the dish with clear plastic wrap so you can observe it from time to time. Place it in the refrigerator to marinate overnight. After about 4 hours in the marinade, turn the shrimp over, cover and continue marinating in the refrigerator for the remaining time. You should notice the shrimp turning pink and opaque as it ‘cooks’. Serve cold with tortilla chips for dipping, and enjoy! www.AmeliaIslander.com

AMELIA ISLAND VOTED TOPS IN FIVE CATEGORIES OF 2011 CONDÉ NAST TRAVELER READERS’ CHOICE AWARDS Amelia Island, Florida placed in five categories in the 2011 Condé Nast Traveler Readers’ Choice Awards, including a #8 ranking among the Top 10 Islands in the United States. This was the fifth consecutive year Amelia has been voted a Top 10 Island destination, finishing this year ahead of Hilton Head, S.C. and Cumberland Island, Ga. on a list topped by Maui, Hawaii. Three of Amelia Island’s award-winning accommodators were also ranked in four other categories. The Fairbanks House, a 12-room bed and breakfast inn located in historic Fernandina Beach, was voted #2 in the Top 50 Small Hotels in the US, and #56 in the Top 100 Travel Experiences in the World. The Elizabeth Pointe Lodge, a 25-room, oceanfront boutique hotel, was ranked #6 in the Top 30 Small Resorts in the US. Additionally, The Ritz-Carlton, Amelia Island, a 444-room beachfront resort was voted #46 among Top U.S. Mainland Resorts. The awards are based on the results of the magazine’s annual Readers’ Choice Survey, in which more than 28,800 travelers voted.

The 2012 Amelia Island Chamber Music Festival, one of the largest music events in the Southeast, will run from May 13 through June 8, featuring more than 40 internationally acclaimed artists performing in 16 concerts. This year’s festival presents a galaxy of international stars and outstanding emerging talent, including cellist Lynn Harrell, violinist Anne Akiko Meyers, pianists Orli Shaham and Natasha Peremski, the Four Nations chamber ensemble, the Linden String Quartet, and violinist David Coucheron and his sister, pianist Julie Coucheron. On the lighter side, the Festival will offer three of its popular Beer & G Strings performances, including an old fashioned hoedown with fiddler and composer April Cellist Lynn Harrell returns to play at this year’s Festival. Verch and her band, as well as a French cabaret and series of free community concerts. As part of its continuing education outreach, the festival will host the Beth Newdome Resident Festival Artists, composed of graduates from Philadelphia’s internationally famous Curtis Institute. melia SanJon Gallery proudly features Jacksonville artist Leigh Murphy for the months of March and April. Gallery owner and artist Sandra Baker-Hinton has admired this artist’s work for a number of years, and both have been regular exhibitors in the Jacksonville Watercolor Society Exhibitions, often competing for prizes. Leigh is a life-long resident of Jacksonville, who received her Bachelor of Fine Arts in graphic design from the University of Florida, where she also studied marine biology. Murphy first worked as a graphic artist, but after taking a course in watercolor in 1992, she decided to follow her love of art and nature, turning to painting full time. Although she works largely in watercolor and has an affinity for marine studies, she is a versatile artist who paints in oil as well. Influenced by her family’s background in the Navy, she paints large-scale images of vintage aircraft. She also enjoys capturing the contours of vintage automobiles, as well as her other love, motorcycles.

Murphy has been the recipient of numerous awards, grants, and commissions, and maintains a busy exhibition schedule, primarily in museums, galleries, and juried exhibitions in Florida. She has been awarded a signature membership with the American Watercolor Society and is the youngest member of the Florida Watercolor Society to have earned signature member status. Her art has been displayed in three U.S. embassies, appeared multiple times in the AWS Exhibition in New York City, and has been featured in numerous magazines and museums. She has received countless awards, including the grand prize in Watercolor Magic magazine’s national “Watermedia Showcase” competition and second place in the National Watercolor Society’s 2010 Members’ Show. You never know where a conversation will lead,” says Otis Lee. Five years ago, he was in the pool business when he sat down to rest at an expo and started talking to a furniture representative. The next thing he knew, he and his wife, Susan, opened The Patio Store, just east of I-95 in Kingsland, GA. Renovations were in high gear during the winter months and are now close to completion. Ron Kolar and Dennis Schroeder have been volunteer supervisors of the construction. “We are fortunate to have highly qualified architects and contractors working to complete these projects in a fast-track manner, with quality results,” says Kolar. The most significant change at the upscale dining and beach facility includes new decking and reconfiguration of the exterior to take advantage of the ocean view. Long Point Clubhouse, however, has undergone the most dramatic changes, with the addition of large glass windows wrapping around the building, opening it up to the manicured golf course, and a stunning new bar with a dramatic vaulted tongueand-groove ceiling. W

e at the Islander do our best each month to represent the beautiful community spirit that is so strong—and so singular—on this little barrier island in northeast Florida. To the two of us, Jan Davis was at once the very embodiment of that spirit, and, ultimately, its greatest chronicler. When we moved here ten years ago to take over the Islander, we were immediately impressed with one person in particular whom we came to know: Jan Davis. Right from the start, we found Jan cheerful, infectiously positive in her approach to life, boundlessly energetic, and prodigiously productive. She was actively involved in a variety of non-profits over the years, especially Micah’s Place, the Amelia Island Museum of History, and the museum’s major fund-raiser, the Holiday Home Tour. Jan also possessed an impressive talent for cultivating roses, and a deep and abiding faith in God that she generously shared with the congregation at Amelia Plantation Chapel each year in their collection of Lenten reflections. She was truly a multifaceted and multi-talented wonder. To our eyes, she was the perfect representative of retirement living—happy, dynamic, and ready to share the gifts and wisdom accumulated over a lifetime, someone who made the place in which she settled better than it was when she found it. To tell the truth, we used to watch Jan, shake our heads in amazement, and admit that she was the person we wanted to be when we grew up. After getting to know Jan through her tireless work in the community, it turned out that we were able to enjoy the great privilege of working with her on the Islander. It began when she asked if she could write the Fernandina Faces column, an occasional feature in which she catalogued the wide assortment

of interesting people who have made Amelia Island their home, and it continued with Jan taking over the popular Island Home feature, sharing the happy memories of the newly married in Amelia Island Weddings, and quickly becoming a writer for all occasions, someone whose judgment, intelligence, and good will made her a natural choice for almost any assignment. She was a talented writer, to be sure, but it wasn’t only her writing skills that impressed us. It was the heart and passion that she brought to each subject. Jan had a unique ability to connect with people. She would often complete an article for our Fernandina Faces column and say: “What a wonderful person! I’m so glad I met [him/her]!” That same generous spirit was apparent in all of her Island Home columns, where a warm appreciation for people and their varied talents and interests transformed a “story of a house” into a celebration of the homeowners’ lives and achievements. Her magnanimous spirit shone through in all her writing, and in her relationships, too. She was quick with words of encouragement, and always ready to credit others. Her contributions to the magazine, through her terrific story ideas, her writing, and her knowledge of the community, were considerable, and greatly enriched our magazine as a chronicle of island life. Jan will be sorely missed by so many people, yet her life has not left them unchanged. We are all richer for having known her, and the effects of her kindness and generosity will continue to reverberate throughout the community. Our condolences go out to Don, her husband of 54 years, and their daughters, Ashley and Laurie. Jan, we love you, we salute you—and your generous spirit will continue to inspire us. ~ Deana and Phil Kelly

T

he azaleas really outdid themselves this year, with multitudes of gorgeous colors engulfing the local landscapes. All sizes and all types of azaleas were breathtaking. I noticed many tourists and local residents taking pictures to show what Amelia Island gardens and landscapes have to offer. This spring, a great addition to the succulent garden is the spectacular sedum plant. One of the ones that I really like is the lemon coral sedum, Sedum reflexum, a very attractive ground-hugging succulent that forms a fine textured carpet of goldenyellow foliage. Clusters of small yellow star-shaped flowers attract the butterflies. The lemon coral makes an ideal border or an interesting cascading container plant. Lemon coral likes a very welldrained soil. Follow a regular watering schedule during the first growing season to establish a deep, extensive root system. Watering can be reduced after establishment. For a neat appearance, remove old foliage before the new leaves emerge. You can tuck

TIP O F T HE M O N T H After the azaleas have finished blooming, it is time to trim them back and give them some fertilizer. Cutting them by hand is favored, so that the bush remains as natural as it can be. Trimming with a hedge trimmer gives it a very tailored look, which is not natural, and it also leaves small sticks standing up in the air all over the bushes. Trim again before the 4th of July, as after that point, they will start setting buds for the next season.

this sedum into a mixed container for a splash of sunny foliage. Plant in mass to create a colorful and waterwise ground cover. Tuck into crevices of a rock wall, or add to a green wall planting to add cascading color and texture. Grow this plant in partial to full sun. The average size is six to ten inches tall and up to 24 inches wide. Plant it in normal to sandy soil that has excellent drainage. Another pretty Sedum is the blue spruce. With its steel blue foliage and yellow flowers, it is a

wonderful choice for those poor-soil areas. In fact, this fast-growing ground cover practically thrives on neglect! It adapts to soils ranging from pure sand to solid clay, so it will do well here in our areas. Masses of bright yellow flowers stand atop the silvery blue foliage in late summer. Plants grow eight inches tall and can spread to form a colorful low-growing matt to 20 inches across. The blue spruce is perfect for edging a driveway, or it can be a colorful companion to put amongst fragrant coneflowers, long blooming knockout roses, or flowering shrubs. This Sedum also needs to be planted in normal to sandy soil with excellent drainage. Easy to grow with low moisture requirements, Sedums tolerate well the heat and humidity. Blue spruce is a show-stopping, sun perennial that will add interest all season long. Even the spent flower heads have tremendous winter effect. ince 1986, when they built the house on Egan’s Creek, Chris and Bill Bryan have renovated/redecorated their home three times. Each time, in charge of all the work has been their good friend and local decorator, Brett Carter. Most know Brett and his partner, Tip Fisher, as owners of two island restaurants: Brett’s Waterway Café and PLaE. Yet many on Amelia Island also consider Brett one of the most talented decorating stylesetters in the area. His recognizable combination of distinctive fabrics, one-of-a-kind antiques, and unique accessories gives any home a pleasing look of quality and exuberance. It is always a pleasure to see a completed Brett Carter project.

Obviously, Brett and the Bryans are good friends after working together so many times. “The first time we told Brett to do whatever he thought best,” remembers Chris. “We came home several days later, delighted to see a wonderful transformation in our home. We have complete confidence in him and are never disappointed.” They have known each other since 1984, when Brett and Tip arrived on the Island and started a restaurant in the old telephone building across from Fred’s Department Store. Bill and Chris, who have been married 42 years, met through friends when Bill was a social worker. Chris is a native

of Fernandina and her father, Y.E. Hall, had a fleet of shrimp boats locally. When her father decided to go into the seafood business, he appointed Bill to run the company, while Chris later became president of the family petroleum company. Once both Chris and Bill retired, Bill discovered a love of cooking, baking in particular. When he tasted a scrumptious coconut cake made by their friend Pam Simmons, he asked for the recipe. Armed with that secret treasure, he came home, and made his first six coconut cakes ever! When everyone said “Wow!” he was hooked. Now he bakes dozens and dozens of cakes, pies, and cookies to share with friends or to use when they entertain at their large parties.

Chef Bill’s love of cooking inspired the most recent renovation: the kitchen. Brett collaborated with Mooney’s Custom Woodworks to produce the most workable kitchen possible. There is a Viking six-burner stove with a grill, a griddle, and double ovens. There’s also a very large marble topped center island, with one side for prep and the other as a sideboard. There are two Sub Zero refrigerators, and one of the freezer drawers is devoted entirely to Bill’s supply of butter and cream cheese! The home has uninterrupted views of Egan’s Creek. A new deck, built by Donna Lynne Custom Homes, features not only grills, but also built-in ice compartments, several conversation

areas, and even a large screen TV that pops up out of nowhere. The pool is handsomely landscaped by Bob’s Irrigation and surrounded by an elegant new brick enclosure. The more formal areas are also inviting and comfy, never austere. Color combinations and fabric choices are unusual and the smattering of accessories is eye-catching. Knowing Chris and her support of the University of Florida athletic department (Bill is a Seminole), an elegant bronze “gator” decorates the antique coffee table. A balcony office overlooking the family room is overflowing with “gator” memorabilia. The dining room was not changed in this redecoration and a table long enough to accommodate the entire Bryan family centers the room. “The dining room furnishings were

purchased with a small life insurance policy my Daddy left me,” says Chris. “I feel his presence whenever I enter that room.” The light fixtures have not been changed either as they are still distinctive and scaled perfectly in both the living room’s barreled alcove and in the dining room. The silk living room furnishings from the last decoration project used tones of green and apricot. They have been repurposed in the master bedroom. The fabrics look so fresh, no one would ever guess they had an earlier life. Thanks to the magic of Brett Carter, the Bryans’ home has achieved that elusive marriage of elegance and comfort. Although Bill’s cakes always deserve a chorus of “Wow!”, a few of those “wows” should be saved to applaud such a spectacular home.

spaña Restaurant and Tapas is a foodie’s gem, a restaurant that is brimming with authentic traditional flavors of Spain and Portugal. Located in historic downtown Fernandina Beach, the restaurant boasts a cozy atmosphere, a friendly and knowledgeable staff, and a lovely kitchen garden. Owners Roberto and Marina Pestana have over 20 years of restaurant experience in both the culinary arts and management. The couple takes great pride in their recipes, which are inspired by their experiences traveling across Spain Portugal and come to life at the España table. The restaurant’s menu highlights include varied hot and cold tapas, evening specials, seafood, steaks, and homemade desserts. Recently, I met my friend Bruce at España for dinner. He had never been there before, as he lives near Jacksonville, and he was eager to try some of España’s specialties. Our server, Mandy, brought us some of Roberto’s homemade bread, one of my favorite things at the restaurant. I had my heart set on the mussels riojana that evening, so that was the appetizer we decided to try. The mussels are incredibly tender and almost buttery in flavor, and the sauce features traditional Spanish ingredients, lots of garlic, tomatoes, white wine, parsley, and cilantro. This is a really nice appetizer to share as it is bountiful, but light, and I love to soak up all the juices with the homemade bread. We sipped a glass of Alberino, a Spanish white wine made from grapes grown in northwest Spain. The wine is light, with high acidity and flavors of peach and apricot, and it was just wonderful with the flavorful mussels. Roberto suggested two specials for us, a seafood dish that featured grouper, shrimp, and scallops, and also baby lamb

chops. The seafood dish was spectacular—and how could it not be, with all my favorite fishes on one plate? A lovely tropical sauce made the dish creamy and succulent. The lamb chops were perfectly cooked and served with a savory mushroom sauce. I like my lamb on the rare side, and it was perfectly cooked. Both dishes were served with delicious garlicky mashed potatoes and also a fabulous vegetable side dish that was a combination of red cabbage, zucchini, onions, and garlic. What a nice surprise and change from the “usual” vegetable medleys that accompany entrees! We also tried a lovely red wine to go with the lamb: El Coto de Rioja, a smooth and mediumbodied red wine bursting with the flavor of berries. It was the perfectly paired with the lamb. I always have room for dessert, and my favorite at España is their Tres Leches Cake. I thought it best to bust free of my routine, however, so Mandy brought us Tiramisu and Caramel Flan. How wonderful it was to have two desserts to try! I love that España makes their own desserts from scratch. That really makes all the difference, along with the fact that España’s desserts are all traditional recipes, created the proper way. The flan was melt-in-your-mouth, and the tiramisu rich with flavors of coffee and cocoa. Served with a cup of espresso, España’s tiramisu is a lighter dessert than you would think. Some of España’s other must-have offerings are their Sangria, their fabulous paella, and their wonderfully varied hot and cold tapas. redness or darkening of the skin to areas of blistering. Most patients do not have significant skin side effects, and can apply prescription lotion or aloe gel daily to help minimize it. Less common side effects include a one percent risk of pneumonitis, which is a lung inflammation (a small part of the lung is in the radiation field) characterized by a cough and shortness of breath. Usually this is treated with a short course of steroids. The skin heals quickly after radiation, and most patients are happy with their cosmetic outcome. APBI takes only one week to complete. Only patients with small tumors and negative lymph nodes are typically eligible for this treatment. A balloon catheter is placed by the surgeon into the site of the lumpectomy and kept in place for a week. During this time, a radioactive wire is placed very precisely into the catheter to irradiate a sphere of tissue surrounding the lumpectomy cavity. Treatment is twice a day and lasts only a few minutes. Patients are on antibiotics and must avoid showers during the week. Bathing is permitted, but the treated breast cannot be submerged due to the open wound where the catheter enters the breast. Patients have minimal discomfort with the APBI catheter. The biggest complaint tends to be skin irritation from tape with the daily bandage changes, but long-term skin reactions tend to be minimal. As the lung is not irradiated, pneumonitis is not a concern. Patients do not typically have any fatigue. After the last treatment, the balloon is deflated and removed, and the wound is closed with steri-strips. Both conventional and APBI treatments are well tolerated. The best method of treatment depends on the characteristics of the tumor and the patient. The radiation oncologist will present both options and answer any questions, and help guide patients through their treatment and recovery.

Radiation Treatments for Breast Cancer: What Should I Expect? BY TIMOTHY A. JAMIESON, M.D., PH.D.

R

adiation therapy for breast cancer has progressed significantly in the past few years, and is typically very well tolerated. There are two main types of radiation for breast cancer: conventional whole breast radiation or accelerated partial irradiation (APBI), in which only the area around the tumor is treated. Conventional treatment takes approximately seven weeks. The first five weeks entails radiation to the entire breast, followed by a boost for the last one to two weeks directed to the lumpectomy site. Treatment is daily, Monday-Friday, and the patient is in the clinic about 30-45 minutes. The treatment itself takes only a few minutes. Patients do no feel each individual radiation treatment, but side effects gradually accrue over the seven weeks, and slowly subside after completion. Fatigue and skin irritation are the main complaints from patients. Fatigue tends to be mild and does not typically limit one’s activities. Skin reactions range from mild
