This year, the Isle of Eight Flags Shrimp festival will celebrate its 50th anniversary. What began as the traditional blessing of the shrimp boats has evolved into a weekend celebration of shrimp that attracts 100,000 people to Amelia Island during the first weekend of May each year. Fernandina Beach was the birthplace of the modern shrimping industry and a major local industry for decades, and the iconic shrimp is still beloved by all. The Shrimp Festival is one of the premier events in the Southeast, a highly regarded art show, fun for residents and visitors alike, and a great place to eat some delicious local shrimp. Everyone has their favorite food booth they return to year after year—whether it’s for fried shrimp, shrimp pie, or funnel cake—and many local churches and service organizations use the food booths each year to raise much-needed funds to continue their work. Of course, we also love the Shrimp Festival parade, the fireworks, the beautiful art, the KidsZone, and everything else that weekend. The Shrimp Festival is one of the highlights of the year on Amelia Island for all those reasons. To everyone who makes the Shrimp Festival such a great success each year—and to all those who have made it such a great tradition for the last fifty years—we send our thanks and congratulations. Each year, we celebrate shrimp and the Shrimp Festival at the Islander with our own tradition: mouth-watering shrimp recipes from our favorite local restaurants. We are very grateful—as are our readers, we so often hear—that they generously share with us their boundless ingenuity on the subject of shrimp. We never knew there were so many fabulous ways to prepare shrimp! Of course, when you’re not in the mood to cook, you can always find these and many other delicious shrimp dishes at these outstanding Amelia Island restaurants. Also this month, we are so happy to include a special section on the Amelia Island Book Festival’s 2013 season. Each year, the number of exciting events and talented authors grows, and we hope that this section will serve as a guide to help you celebrate and explore the written word at this year’s book festival. Sweet Red Pepper Shrimp Scampi 24 large shrimp, peeled and deveined 1 red bell pepper, julienne 1 purple onion, julienne 2 oz. minced garlic

4 oz. butter 1 cup white wine 1 lb. fresh spinach 2 oz. olive oil

Combine the olive oil and spinach in a saute pan and cook until the spinach is wilted. In a separate pan, combine all the remaining ingredients and cook until the shrimp turn pink all the way through. Plate the spinach first on the bottom and then serve the shrimp and remaining ingredients on top of the spinach. Enjoy!

Dynamite Shrimp with Sesame Seaweed Salad and Kahuna Sauce 7 large shrimp, peeled and deveined 4 oz. seaweed salad 2 oz. Dynamite Sauce 1 oz. Kahuna Sauce

Kahuna Sauce 4 oz. sweet chili glaze ½ oz. Teriyaki glaze 1/8 oz. sesame oil

Fry the shrimp in oil to a crispy brown. Toss the shrimp with The Surf’s special Dynamite Sauce. Serve with Kahuna Sauce and The Surf’s Seaweed Salad.

THE CRAB TRAP Blackened Shrimp

Heat non-salted sweetened butter in a saute pan. Dust 16 large shrimp in blackening seasoning. Cook shrimp until firm and done, with a black/red color. Toss shrimp in a bowl with the Crab Trap’s Coconut Rum Glaze, or your choice of sauce. Serve over 1 cup of Chef Jimmy’s Special Cajun Rice. Serve with steamed broccoli and and baked sweet potato, topped with Jimmy’s brown sugar maple butter. Also serve with our famous Crap Trap coleslaw and hushpuppies!

Sauteed Local Shrimp with Chevre 2 lbs. local shrimp, peeled and deveined 1 bag baby leaf spinach 4 shallots, sliced 1/4 cup White Wine 2 tbsp. butter

1/4 cup heavy cream 1 small roll of fresh goat cheese Pinch of oregano Pinch of red pepper flakes

Place 1 tbsp. butter and 1 tbsp. sliced shallots in pan and lightly cook shallots until translucent. Deglaze with a splash of white wine, add spinach, and toss until wilted. Arrange spinach on serving plates. In a separate pan over medium-high heat, saute shrimp in 1 tbsp. butter, oregano, pepper flakes, and remaining shallots just until shrimp turns pink. Deglaze pan with remaining white wine and reduce by one third. Add heavy cream and reduce until desired consistency is reached. Remove pan from stove and finish with 4 tbsp. fresh goat cheese, toss just until goat cheese is warmed through. Pour sauce and shrimp over spinach, and serve with a crusty baguette.

Shermola Shrimp with Tabouleh Salad and Black Bean Mango Salsa Shrimp Marinade 1 lb. fresh Mayport shrimp 1 tbsp. extra virgin olive oil 1 tsp. fresh ginger (minced) 1 tsp. fresh jalapeno (seeded and diced) 1 pinch cumin

1 pinch coriander 1 tsp. lime juice 1 tsp. cilantro (chopped) 1 tsp. parsley (chopped) Salt and pepper to taste

Combine ingredients in a bowl and marinate shrimp at least 30 minutes. Black Bean Mango Salsa 1 cup black beans (canned) 1 fresh jalapeno pepper (seeded and diced) 1 cup fresh mango (cubed) 2 green onions (thinly sliced) 1 tbsp. red bell pepper (minced)

Juice of 1 lime 1 tsp. cilantro (chopped) 1 pinch cumin 1 tbsp. extra virgin olive oil Salt and pepper to taste

Combine all ingredients and set aside. Grill marinated shrimp (3-5 minutes). Place on plate with Tabouleh Salad and top with Mango Salsa. Garnish with arugula. Find the recipe for Café Karibo’s Tabouleh Salad at www.ameliaislander.com.

ESPAÑA RESTAURANT Rancho Palos Verdes

16 to 20 large shrimp with shell (21-25 count per pound) 3 tbsp. olive oil 2 heaping tsp. garlic, chopped 1/4 cup onion, diced 1/4 cup beer

1 tsp. Sazon with cilantro 2 tbps. butter Tabasco Juice of 1 lemon 1/2 cup coconut milk Sea salt

Heat a medium skillet over medium-high heat until hot, then add oil. Stir in chopped garlic and diced onion and cook until aromatic (1 to 1 1/2 minutes). Stir in shrimp, then add beer, Sazon, butter, and a few dashes of hot sauce (to taste), lemon juice, and coconut milk. Poach the shrimp in sauce, stirring occasionally, until the shrimp are cooked through (2 to 4 minutes). Taste and season with a pinch of salt as desired. Divide the shrimp and sauce in two wide, shallow bowls, and sprinkle over the cilantro. Serve immediately.

Grilled Shrimp and Romaine Salad

Asian Shrimp Cakes Shrimp Cakes 1 lb. shrimp, peeled and deveined 1 tbsp. toasted sesame oil 1 tsp. Shriracha hot sauce 1 tbsp. cilantro, chopped Salt and pepper to taste

Cut a head of romaine in half lengthwise. Brush the cut side with olive oil. Sprinkle salt and cracked pepper to taste. Grill the romaine cut side down between 3-5 minutes or until grill marks appear. Take off the grill and cut the core of the romaine off. Add grilled shrimp and garnish with avocado, blood oranges, tomato, and chopped bacon. Sprinkle gorgonzola cheese over the top. p Serve with dressing g of choice.

Beurre Blanc Sauce 2 shallots, chopped 1 tsp. whole black peppercorns 3/4 cup white wine. 2 tbsp. lemon juice 1/2 cup heavy cream 1/4 lb. unsalted butter (room temp.) In a sauce pan, add the shallots, pepper, white wine, and lemon juice. Reduce over medium heat until almost dry, then add the heavy cream and reduce by two thirds. Remove the pan from the heat, and slowly blend in the butter. Strain, and set aside in a warm place. In a food processor, grind the shrimp until smooth. Empty the shrimp into a bowl, add the rest of the shrimp cake ingredients, and mix to combine evenly. Divide the shrimp mixture into 16 equal portions, and form into patties. Lightly dust the shrimp patties with corn starch, and sauté in a hot, non-stick pan with a touch of canola oil. Cook patties until brown, about two minutes each side. Place four shrimp cakes on each plate, and spoon sauce around the plate. Garnish with alfalfa sprouts or parsley and lemon wedges.

Shrimp and Grits with Red Eye Gravy Grits 4 cups grits Half & half 1 tsp. salt

1 tsp. black pepper Chicken stock Smoked Gouda cheese

Follow the cooking instructions on the package of grits, except use half the quantity of the water and an equal amount of chicken stock. Add salt and pepper at the end. Stir in half & half until desired thickness and let simmer. Add smoked Gouda cheese to flavor. Grill 6-8 (per serving) large wild Florida shrimp in a skillet pan. Add butter, seasoning, and Old Bay to taste. In a large bowl, pour in the grits, top it with the red eye gravy*, and then finally with the grilled wild Florida shrimp. Crab and Shrimp Topper First cook the shrimp in your favorite shrimp boil, then mix with cooked crab lump meat in equal parts. You can add Surami as well if you choose. Mix in melted garlic butter and top the crepe.

Shrimp and Lobster Fettuccini 6 (16-20 count) shrimp 1 4 oz. lobster tail 1 garlic clove minced 1/2 shallot minced 1/2 cup julianne veg (yellow squash, zucchini, carrot) 1 tsp. tomato paste

1/2 cup heavy cream 1/4 cup parmesan cheese 1 tsp. parsley, chopped 1 oz. canola oil 4 oz. fettuccini pasta Salt and pepper to taste

In a hot sauté pan, cook the lobster, shrimp, shallots, and garlic, being careful not to burn or brown the garlic. Add the veggies and tomato paste, and cook until tender. Deglaze the pan with white wine and add heavy cream, reduce by half. Add pasta, and finish with grated parmesan cheese, parsley, and salt and pepper to taste.

With all the fuss north of the Mason-Dixon line over Lobster Mac & Cheese, we decided to prepare our own version using fresh local shrimp. 1 1/2 lb. Fernandina shrimp, peeled and deveined 1 lb. penne pasta cooked 2 oz. chorizo, finely diced 2 oz. sundried tomatoes, julienned 2 oz. baby arugula 4 oz. grated Parmesan Reggiano 8 oz. heavy cream 2 oz. panko bread crumbs Set oven to 400 degrees. Toss the panko bread crumbs with a little olive oil until damp. Put on a baking sheet and toast in the oven until light brown. Set aside. In a 14 inch skillet and in two batches, saute chorizo in olive oil until cooked and the oil turns pink from the paprika. Add the shrimp and saute until just cooked. Add the sundried tomatoes and let warm thru about 30 seconds. Empty into a large bowl (big enough to hold both batches). Return skillet to heat and add cream and cheese. Let reduce until thickened and all cheese has melted. Add cooked penne to the shrimp mixture and top with cream and cheese mixture. Add arugala and mix together with a spatula. Empty into a large casserole dish, top with the toasted panko, and place in the oven for approx. 15 minutes until heated through. Serves four. Bon appetit!

Slice vegetables. Put bell peppers and onions in sauté pan with oil and sprinkle with fajita seasoning. Cook until your desired tenderness and then add shrimp. Cook shrimp just until they’re no longer translucent and then add tomatoes at end for about a minute or two, and season again as desired. Toss together and serve on a sizzling platter with warm tortillas and a side of rice and beans and guacamole, lettuce, sour cream, and pico de gallo. Squeeze a fresh lemon on top and enjoy!

Combine all above ingredients and simmer until cheese has melted.

Pan-Seared Local Shrimp over a Soba Noodle and Pea Tendril Salad 6 large local shrimp 1/4 cup white wine 2 tbsp. butter 1 cup soba noodles, drained 1/2 mango diced 1 tsp. honey 1/2 tsp. mint

4 wonton skins carrot threads dash of chili sauce 1/4 soy sauce fresh micro greens salt & pepper

Julienne the 4 wonton skins, and deep fry until light golden brown. Tie wonton bundles together with a scallion. Saute shrimp in white wine & butter until cooked, with salt & white pepper to taste. Remove from pan and set aside. Saute soba noodles until cooked through, add carrot threads, dash of soy sauce, and chili sauce. Dice fresh mango, and combine with honey and mint. Create an individual bed of greens. Place one shrimp on each mound. Swirl soba noddles on top, place shrimp on the noodles, and add the mango mint salsa. Garnish with bundle of wonton skins. Makes two servings.

Lavender Simple Syrup 1 cup water 1/2 cup sugar 1/2 tbsp. lavender In a sauce pan, heat water and sugar until sugar is dissolved. Add lavender and steep for 5 minutes on simmer. Using the oregano stems, skewer 7 local shrimp and season one side with salt and pepper. Place on grill and cook until pink. Turn and cook on other side, brushing shrimp with lavender simple syrup (this will caramelize the shrimp). Once the shrimp have cooked, place 1 cup of orzo in the middle of a plate. Make shrimp oil by deshelling the shrimp and sautéing the shells with onion and garlic in extra virgin olive oil over medium heat. Set aside to cool. Cut bulbs of fennel into quarters and marinate in extra virgin olive oil, champagne vinegar, salt and pepper, garlic, and herbs. When ready, grill fennel until tender, then slice into a fine julienne along with red peppers. Then, lightly poach shrimp in garlic, butter, white wine, and herbs. Combine shrimp, fennel, and red pepper until a good ratio is established. The juices from the shrimp and fennel will create its own vinaigrette, but you will want to adjust it with the shrimp oil, salt & pepper, lemon, and cilantro.

MERGE RESTAURANT Shrimp Burger Recipe 1 lb. shrimp, chopped fine 1 lb. raw sausage 1 red bell pepper, minced 1 /2 onion, minced 3 tbps. blackening seasoning 3 eggs In a large bowl, mix all ingredients together, scoop out and form into burger patties, and sauté in a pan with olive oil for 7-8 min. Serve on any bun with burger toppings.

Roll the shrimp in your hands to remove the excess flour and smooth the texture of the breading. Fry in 350 degree oil until golden brown and delicious. Toast 4 hoagie rolls until just crisp on the outside and steamy on the inside. Dress the inside with liberal amounts of remoulade, green leaf lettuce, and 3 half slices of tomato. Load the hot shrimp on the sandwich and enjoy!

Wild Mushroom Risotto with Grilled Shrimp 24 large shrimp, peeled and deveined 1/2 tsp. salt and pepper 1/2 tsp. blackening seasoning Wild Mushroom Risotto 1 cup Arborio rice 1 cup chicken stock 1 med onion, chopped 1/4 cup white wine 1 tsp. extra virgin olive oil 1 tbsp. butter 1/4 cup grated parmesan 1/2 tsp. salt

2 cups wild mushrooms, sliced rustic 1 clove garlic, chopped 1 tbsp. shallots, chopped 2 cups baby spinach 1 tbsp. extra virgin olive oil Pinch salt and pepper

Sauté mushrooms, garlic, and shallots in olive oil in a 10-inch skillet on medium high heat. Remove when tender and reserve warm. In same pan, deglaze with white wine, add rice, and reduce heat to medium. Stir, add broth, and bring to boil. Cover, and cook 15-25 minutes to “al dente”. Stir in mushroom and spinach. Finish with butter and parmesan. Coat shrimp with salt and pepper, blackening, and spray oil, then grill. Makes 4 servings.

Pork Cheek and Shrimp Surf and Turf with Creamed Corn 1 1/2 tbsp. vegetable or corn oil 1 medium. onion, chopped fine (about 1 cup) 3 medium cloves garlic, minced or pressed (about 1 tbsp.) 3 tbsp. chili powder 2 tsp. ground coriander 2 tsp. ground cumin 1/2 tsp. table salt 2 tsp. granulated sugar 8 pork cheeks 2 cans tomato sauce (8 oz. each) 1/2 cup chopped fresh cilantro Preheat oven to 350 degrees. Heat oil in medium saucepan over medium-high heat until hot and shimmering, but not smoking, about 2 minutes. Brown the cheeks, and then remove from the pan. Add onion and cook, stirring occasionally, until softened and browning, about 5 minutes. Add garlic, chili powder, coriander, cumin, salt, and sugar; cook, stirring constantly, until fragrant, about 30 seconds. Add cheeks and cook, stirring constantly, until coated with spices, about 30 seconds. Add tomato sauce and 3/4 cup water, and stir. Cover tightly and place in oven for 2 hours or until the pork is fork tender. Set aside.

Then cut as desired, and fry.

Preheat oven to 400 degrees. Toss the shrimp in olive oil and season with salt and pepper. Roast for 8 minutes or until the shrimp are just cooked.

Serve the shrimp with the grit stick, black bean puree, and fondue.

Place the corn in the water and bring to boil. Remove from heat, and place corn and water in a blender. Run till very smooth and strain through a mesh strainer. Season with salt and pepper, and add the heavy cream. Make a nice pool on the plate with the creamed corn. Top with a cheek and some of its sauce. Top with 3 shrimp, and then garnish with greens or fresh cilantro.

On Saturday, April 20, the Katie Caples Foundation will host the sixth annual Katie Ride for Life, a premier cycling event that raises money for organ donor education. The Katie Ride is a cycling event for all riders, from novice to advanced. Several different rides provide varying levels of challenge and fun, and riders may participate as individuals or groups. The fullysupported ride caters to cyclists of all abilities and includes rides of 18, 36, 62, and 100 miles, as well as a funride and an off-road option. In 2009, 5K and 10K walks were added as other options for participants to support the cause. All funds raised through the annual event support the Katie Caples Foundation’s organ donor education program. The start of the 18, 36, 62, and 100 mile rides is at 8 a.m. at the Atlantic Recreation Center, and they continue through some of northeast Florida’s most beautiful terrain. The 5K and 10K walks begins at 9 a.m. A post-ride celebration at 11 a.m. features live entertainment by the Honey Badgers, giveaways, the opportunity to meet transplant recipients and donor families, and more. The festival has developed an exciting schedule of established stars and impressive talent, including internationally renowned violinist Robert McDuffie, cellist Zuill Bailey, and pianist Robert Spano. The season kicks off with a free concert at the Amelia Park Pavillion, featuring Dixieland music from Hotlanta. Other concerts this season include Sylvia McNair, the Linden String Quartet, Cheeyun, Andres Diaz, Wendy Chen, and the Beth Newdome Fellowship Artists. “The Festival strives to meet a wide range of musical tastes,” says Artistic Director Christopher Rex, “including traditional chamber music string quartets, larger chamber music ensembles, some including voice, guitar, and wind instruments, and non-traditional music that explores American folk music.” Providing access to great music and public education are important parts of the Festival’s mission. BEECH STREET BLUES BAND TO PERFORM AT GEORGE’S MUSIC SPRINGING THE BLUES AT JACKSONVILLE BEACH Amelia Island’s Beech Street Blues Band will be joining some of the finest blues performers in the world this month at Jacksonville Beach’s celebrated George’s Music Springing the Blues Festival, the three-day oceanfront event held each year in April. The band members—Mike Hawthorne, Jay MacPhearson, Jeff Malone, Dan Voll, and Ronnie Stoots—were asked to perform at the festival by founder Sam Veal, who heard them perform at the Amelia Island Blues Festival last year. Malone, president of the Amelia Island Blues Festival, and committee member Chief Jim Hurley, were introduced to Veal by blues performer Roger “Hurricane” Wilson. Malone recalls it was like they had been friends for years. “Sam rolled out the red carpet for us, including VIP tickets, and he shared valuable Beech Street Blues Band information about running a festival,” explains Malone. etty Philipps and Julie Patton opened Amelia Island Antiques on South Eighth Street 18 years ago. An antique lover and collector herself, Betty became friends with Mercedes Deacon, who had a booth in the shop. When the lease was up on the building in Fernandina, the enterprising Betty and Mercedes, along with Lucille Anderson, decided to open a new shop at the south end of the island on busy A1A. Betty and Mercedes have learned a lot about antiques and collectibles through their travels and love for vintage items, and each woman has her own specialty. Betty is fond of furniture, including refinishing, repairing and repurposing, while Mercedes’ expertise is in linens, sterling, and glass. It’s a perfect pairing for a charming and successful antique and collectibles shop, which hosts thousands of visitors each year. Besides buying and selling antiques, the women also help customers identify their treasured items—what they are, what year they were made, where they come from, and how much they are worth. Both Betty and Mercedes travel extensively and search out collectibles for

the store, concentrating their searches in places like Oklahoma, Louisiana, Indiana, and Missouri, along with areas of Florida and Georgia. And what is the most interesting piece they have ever come across? “We found a secretary bookcase from the 1850’s at an estate sale and discovered it had belonged to the family of John Adams, and had wound up in Waycross, Ga.,” says Betty. “Later, we ended up selling the bookcase to a woman from Waycross. The desk went full circle, back to where it belonged!” Betty plans to retire from the shop at the end of May this year, but will have several booths in the downtown antique stores. Once hooked on antiques, there is no quitting. Mercedes will run the shop on AIA herself. “We’ll continue to serve our customers as we have been doing since we opened the shop,” says Mercedes. A

lifelong resident of northeast Florida, building is more than just a business for Dale Cole—it is his passion. An entrepreneur since elementary school, eight-year-old Dale used to pull old and damaged bicycles out of the trash, rebuild them to look like new, and then sell them to the neighborhood kids. While his friends were playing, Dale mowed lawns, raked leaves, and cleaned the exteriors of his neighbors’ homes. In high school, Dale worked in the construction business with his uncles, cousins, and brothers, acquiring valuable handson experience. During summers, he worked installing shingles, framing houses, and installing drywall and trim. He discovered he loved every aspect of construction, and, ultimately, this work was Dale’s inspiration to become a general contractor himself. In 2000, Dale opened his first construction company, specializing in interior finishes. That company eventually became Cole Builders, which started building homes from the ground up. Dale attended AAA Construction School in Jacksonville and received three separate licenses: Certified General Contractor, Certified Roofing Contractor, and EPA Lead Paint Certified Renovator. Dale has been personally responsible for the ground-up construction of more than 150 homes and businesses in the greater Jacksonville area. Dale’s wife, Amy, is vice-president of Cole Builders. native pawpaws The native pawpaw is a delightful shrub or small tree that also bears edible fruit.

love this time of the year so much that my fingers literally are itching to get in the dirt. Now is the time to start planting new annuals, perennials, a few vegetables, and some shrubs. I have been envisioning what my garden would look like; do you do that, too? While visiting the Amelia Island Garden Show last month, I came across a booth with Pawpaw plants (bushes and trees). I did not know that the Pawpaw is a native plant. (You’re never too old to learn something!) The native Pawpaw is a deciduous shrub to small tree. The size varies with the species. This is the only host plant for the Zebra Swallowtail butterfly. It is drought and freeze resistant. It blooms in the spring to summer, with white or maroon flowers (varies by species) and bears edible fruit. The taste is between an apple and vanilla custard (known as a custard apple). The Dwarf Pawpaw (Asimina pygmea) is a perennial shrub that grows to about 20 inches. It has alternate green leathery leaves. The flowers are yellow and maroon. The blooms first appear in mid-spring and continue into early summer. It has three outer petals and

three smaller inner petals. The flowers are drooping and borne in the axial of the leaves on the current season’s growth, after the leaves emerge. These plants, like all Pawpaws, prefer sandy soil in sun to part shade. The Dwarf Pawpaw is also known as the Gopher-berry. Other species of the Pawpaw include the Woolly Pawpaw (Asimina incana), also a shrub, and the Big Flower Pawpaw (Asimina obovata), which can be a shrub or small tree. If you email me, I will get you more information on these plants. While meandering through a nursery, a plant caught my eye. I remember it from many years ago. It’s called the Joker Lenten Rose, from the Hellebores family. What a pretty little plant, and so reliable. It is definitely cold hardy, as it starts blooming in January

and blooms through March. It might be a little late to find the plant now; if you don’t, keep it on your list for next winter. They provide two to four months of vibrant color. It can be used as a shady garden border, where you will have flowers blooming when nothing else is blooming (except your Camellias). The Joker Lenten Rose is a perennial. It is also great in containers in a shady spot. The Joker, with its vibrant bright and dramatic colors, forms a perfect centerpiece plant for your container, with possibly smaller plants or hanging succulents planted around it. If you haven’t already cleaned up your gardens, now is the time to do it. The grass can be raked and fertilized; a spring boost is always welcome after a dormant winter. Old annuals need to be pulled along with the weeds, perennials cut back to new growth, shrubs trimmed back (not azaleas if blooming), new additions put in, and the beds mulched. I

t was the potential of the marshfront villa that drew Julie Johnson, an Amelia Island decorator, to take on an ambitious building project. After living on Amelia Island for thirteen years, she had found the perfect property and she got right got to work. With the help of local architect John Dodd, Julie was able to take her ideas and create the house plan of her dreams. The teardown totally reconfigured a tiny space into a 2,100 square

foot villa, allowing her to utilize as much open living space as possible during the rebuild. Johnson, who moved here from Tifton, Georgia, has assembled a design team at Julia Hall Interiors that is busy with a variety of projects on Amelia Island, Atlanta, and the New York area. Her design philosophy is to fill the homeowners’ space with things that make them happy. She has a strong instinct to keep things simple. She mixes old with new, but

rarely uses sets of furniture, preferring more of a collected look. “I think a guest to your home should see your entire life, not the latest trend,” says Johnson. A generous courtyard surrounds the front entrance. Once in the house, the soft colors of nature that cover the walls and the elegant gray barnboard-colored flooring throughout the house offer a gentle transition from the beauty of the outside. Through a trick of the architect, the expanding entry hall delivers you into an open space that is, in fact, a series of rooms without walls. An elegant living room area defined by a large sisal rug focuses on the driftwood gas fireplace, which offers warmth on cool, blustery island days. A unique light fixture made by an Atlanta craftsman offers a dramatic focal point, further defining the space. A series of brightly colored, embroidered renderings of coral offer just the right splash of color on one wall. Dramatic marsh scenery dominates the view from the kitchen. “I placed the kitchen sink before I decided where any other thing would go. I knew I wanted to be able to look out and enjoy every minute of the marsh.” The talented

decorator kept a photograph of the exact view from where the kitchen window is now to keep her motivated. Tucked in one corner adjacent to where the windows open to the outside is an intimate dining space in shades of marine and navy blue. Throughout the house are touches that reveal the homeowner’s love of natural things. A large print of an octopus over a blue-painted buffet does double duty, reinforcing this subtle theme of nature while anchoring the dining space. The elegant and generous kitchen, with its cleverly disguised refrigerator, features a commercial range with a backsplash of stunning white marble tiles with black veining. Collected art is highlighted in lighted glass-front cabinets high above the generous cabinetry.

A high-ceilinged bedroom is simply furnished, creating a restful space. The soft whites and gray tones are punctuated by the bright navy and peacock colored pillows on the bed and chair. “I like to update my space often, and changing decorative pillows on a bed is an easy way to achieve this.” The dramatic bath area is flooded with light from the large windows that invite the private patio outside in as part of a bigger space. The full walls of shimmering glass tiles in an aquatic hue make the shower the focal point of the room. The large soaking tub almost feels like it is in the outdoor space. The marsh drew Julie to this property, and its gentle serenity pervades the house, creating an almost otherworldly retreat for homeowner and guests on the edge of Amelia Island’s spectacular natural beauty.

Lulu’s AT THE THOMPSON HOUSE Delightful Lulu’s uses Southern and English influences to create a memorable dining experience. BY KAREN MILLER • PHOTO BY WILLIAM RASER

rian Grimley, a self-taught chef, was born in the west country of England and moved to America twenty-five years ago. He and his wife, Melanie, came to Fernandina Beach from Virginia, where they had previously owned a large restaurant, and they purchased Lulu’s at The Thompson House, located in the heart of historic downtown Fernandina Beach. Brian’s influences exhibit a southern bias with his love for the cuisine of New Orleans and Charleston, and recently I visited Lulu’s with my friend, Sherry, for some of my favorite dishes. I love Lulu’s because it’s cozy and warm inside, with a fireplace and funky artwork. The outside patio and kitchen gardens are delightful as well, the perfect place to celebrate Sherry’s birthday. We began our meal with a New Zealand Sauvignon Blanc, Whitehaven, a classically vibrant white wine. We ordered Lulu’s Artisan Salad to start, tender mixed greens with creamy gorgonzola cheese, toasted pecans, and a light vinaigrette. I love the fact that Lulu’s salads are big enough to share with your dinner companion. Our server, Becky, suggested an appetizer, so we decided on three! Yes, a plate of three offerings – Calamari, Crab Cakes, and Fried Oysters. These appetizers are a treat, and they are my favorite offerings from Lulu’s menu. The hand-cut calamari rings with Anaheim chili peppers are flash fried and tossed with Thai sweet chili sauce. They are so tender, and such a nice change from traditional fried calamari dishes. The crab cakes are Maryland-style, all lump meat, delicate and rich, and served with a spicy remoulade sauce. The fried oysters are served on Japanese soup spoons, with a creamy horseradish sauce. The batter is crispy, and the oysters are sweet and perfectly cooked. Becky brought us a glass of Louis Martini Cabernet, a fullbodied red wine, to pair with our dinner entrees. My special indulgence that night? Lulu’s Mac and Cheese! It is nothing like any mac and cheese I’ve ever had before, and it is incredibly wonderful. The penne pasta was served alfredo-style with local shrimp, sundried tomatoes, chorizo sausage, arugula,

and pancetta cremolata. This dish is rich, rich, rich! I could hardly get Sherry to take her fork out of my bowl and stick to her own dinner, which, by the way, was a Painted Branch Montana Strip Steak Au Poivre. The steak was cooked medium rare, tender, with a lovely green peppercorn sauce, served with roasted fingerling potatoes and baby green beans. Her dinner was divine, a birthday luxury, and I was very impressed by what a great job Brian does with his sauces. They really make his dishes special. I swiped my share of Sherry’s steak as well, and our dinner was a thoroughly enjoyable event. “Lulu’s is a breath of fresh

air,” declared Sherry, as she and I dug into Lulu’s famous Banana Toffee Pie. Even if you don’t usually have room for dessert, I would suggest that you order this pie to go. It’s that good, bursting with bananas, and covered with Chantilly whipped cream. An English specialty, Brian makes this pie, and all his desserts, from scratch. Lulu’s attention to detail creates a memorable dining experience. They are open for lunch and dinner and serve a fabulous Sunday brunch, plus they offer catering services and private cooking classes.

T

here are lots of ways to tour Amelia Island, but one of the most exciting and adventurous is from above! Yes, there are planes, and perhaps a sky dive, but the newest option is on an ultralight motorized hang glider with Air Amelia. Jumping at a chance to try it, I joined friends at the Air Amelia hanger just off Jamestown Road at the Fernandina Beach Municipal Airport. After touring the hangar and getting a look at the machine which would take us up, up and away, I pulled on a spiffy navy and red flight suit. I was cautioned that no matter how hot it may be on the ground, it can be cool when you are flying. Next came the helmet, earphones, and speaker to communicate with the pilot. Feeling like an astronaut, I approached an amazing machine that has a large wing, a high tech engine, and two

seats. That’s it, not much else. We were going to make like birds, but with a powerful engine to boost us along. My pilot, Kent Heitzinger, who owns the Amelia Islandbased business, reassured me that trike flying, as is called, is not an “extreme” sport. His enthusiasm and that of his local partner, Bob Allison, is contagious. Dressed for a trip to the moon and back, I climbed into the snug back seat and was strapped in. Next, my pilot slipped into the seat directly in front of me. We were able to talk back and forth easily, which gave me a degree of comfort as we headed away from the hangar and onto the runway. Cleared for take-off, we accelerated rapidly and popped quickly into the air. As we climbed to about 700 feet, I watched Amelia Island stretch out below me.

Moving through the air at around 70 mph, the wind whistled in my helmet. The temperature was perfect, in fact, much better than the heat we had left on the tarmac. We headed north along the beach. To see familiar sights from the air was simply exhilarating. Cumberland Island, with its beautiful

crescent beach, could be seen in the distance. Ft. Clinch, Egan’s Creek, the paper mills, golf courses, the historic downtown, and the hotels along the beach all spread out below us. Heitzinger explained how the ultra light operated as we flew. It weighs about 500 pounds and operates on a minimum amount of fuel. The micro-light trike provides the experience of hang gliding, but it is capable of flying in a wider range of weather conditions. Ultralights are becoming increasingly popular with those who love to fly. Heitzinger is currently training several pilots, as well as piloting the regular tours offered by Air Amelia. As we turned to return to the airport, a rainstorm could be seen in the distance, and we were treated to a beautiful rainbow. Too soon, we turned back to the airport, chasing our rainbow and enjoying a gentle landing. This particular Backyard Adventure may not be for everyone, but it proved to be a very safe, exciting way to experience Amelia Island from above.
