What began as the traditional blessing of the shrimp boats has evolved into a weekend celebration of shrimp that attracts 100,000 people to Amelia Island each year.

One of the largest events in the entire Southeast, the Isle of Eight Flags Shrimp Festival returns to Amelia Island once again this spring, as always on the first weekend of May. What began as the traditional blessing of the shrimp boats has evolved into a weekend celebration of shrimp that attracts 100,000 people to Amelia Island each year. The Shrimp Festival is a high point on the Amelia Island calendar and a great event for the whole community. Fernandina Beach was the birthplace of the modern shrimping industry and shrimping was long a major local industry, and the iconic shrimp is still beloved by all. The Shrimp Festival is truly a multi-faceted event with something for everyone. In addition to its celebration of shrimp, it is a highly regarded art show complemented by a full weekend of events including the Pirate Parade on Thursday evening to kick things off, Friday’s Downtown Merchants’ Sidewalk Sale, a fireworks display over the harbor, live entertainment, the annual Pirate Invasion, the Shrimp Festival Run, the ever-popular Kids’ Zone, and lots more. The festival is fun for residents and visitors alike, and a great place to eat some delicious local shrimp. Everyone has their favorite food booth they return to year after year—whether it’s for fried shrimp, boiled shrimp, shrimp pie, or funnel cake— and many local churches and service organizations use the food booths each year to raise money to fund their invaluable charitable work. Here at the Islander, we celebrate the Shrimp Festival each year with our Shrimp Festival recipe issue, in which we share some tantalizing shrimp recipes from our favorite local restaurants. We are very grateful that our outstanding local chefs generously share with us their varied and ingenious ways to prepare and serve shrimp. We love to try these recipes at home, and when we’re not in the mood to cook, we know we can always find these delicious dishes and many others at our fine Amelia Island restaurants. Also this month, we are happy to feature an article on the Nassau Education Foundation, a new non-profit organization founded by State Senator Aaron Bean and his wife, Abby, to support education in Nassau County; a “Fernandina Faces” feature on Jennifer and Mike Harrison, who fell in love with Old Town, built a home, and are actively involved in a number of Amelia Island organizations; another installment of “Great Homes of Fernandina” with Dickie Anderson on the Lesesne House, a “Backyard Adventure” with Karen Miller to nearby Fort Caroline National Memorial in the Timucuan Preserve, and much more. 1/4 cup chicken broth 1 cup chopped cauliflower florets 1/2 cup cubed potatoes 1/8 tsp. salt 1 tbs. butter 1/8 tsp. crushed red pepper 3 tbs. smoked gouda cheese Large shrimp, peeled, tails left on Oil of your choice 1/4 tsp. dried thyme 1/2 cup snow peas 1/2 cup grated or julienne carrots 1/4 cup sliced mushrooms 1/4 cup julienne red peppers

Basil Pesto Shrimp Pasta 1 tbs. shallots Garlic Olive oil Artichokes Mushrooms Diced tomatoes 2 tbs. pesto White wine Cream Salt and pepper Pasta Parmesan cheese

Cook cauliflower and potatoes in chicken broth until tender. Allow to cool slightly, then place in blender with salt, butter, crushed red pepper, and gouda cheese. Blend until smooth. Grill the shrimp, basting with a butter, garlic, and salt mixture. Cook on both sides until pink, approximately 2 to 2 ½ minutes. Sauté snow peas, carrots, mushrooms, and red peppers in oil with thyme. Cook about 4 minutes or until tender.

Sauté 1 tbs. shallots with a few drizzles of olive oil, enough to cover pan. Add a handful each of artichokes, mushrooms, and diced tomatoes. Add 2 tbs. of your favorite pesto, a splash of white wine, and finish with a touch of cream. Add salt and pepper to taste. Let simmer. Grill or sauté large fresh shrimp until pink. Cook your favorite pasta. Drain, toss with all the ingredients, and finish with fresh Parmesan cheese.

LA MANCHA RESTAURANT Copacabana Shrimp 1 cup unsweetened coconut milk 1 egg, beaten 1 garlic clove or 1 tbs. garlic powder 1 tbs. cayenne pepper

1 lb. jumbo shrimp, cleaned and deveined, tail left on 8 oz. Kataifi wrap Seafood flour Salt and pepper

In a medium bowl, mix the coconut milk, egg, garlic, and cayenne pepper. Hold in refrigerator for 1 hour. In another medium bowl, mix seafood flour with garlic. Make sure you have pulled out your Kataifi dough to defrost, but remember to keep moist with a damp cloth while working with it so that it does not dry out. Clean and devein shrimp, but leave on the tail. Dip shrimp into flour mixture and then into egg mixture, then wrap with the Kataifi dough. Place on a baking sheet until ready to be fried.

Lime Cilantro Apple vinegar Salt and pepper

Chop up finely the pineapple, red onion, red pepper, hot sliced cherry peppers, and fresh cilantro, and put into another mixing bowl. Add the freshly squeezed lime juice, apple vinegar, salt and pepper. Taste to your pleasure and put into the refrigerator to set. Fry the shrimp and serve with the Tropical Salsa.

Jack and Jim Sauce 1/2 cup soy sauce 1/4 cup Jim Beam 2 tbs. Jack Daniels 2 tsp. minced garlic 2 tsp. grated fresh ginger Splash water 2-3 tbs. brown sugar (taste for desired sweetness) Coat a medium size pan with olive oil. Add shrimp, scallops, salt, and pepper, and sauté until shrimp start to turn pink, about 2-3 minutes. Add in onions and mushrooms and cook until veggies start to soften, 4-5 minutes. Add in sauce and cook until sauce begins to caramelize and makes a thick glaze over shrimp, scallops, and veggies. Serve over your favorite rice pilaf and add scallions for garnish.

BRETT’S WATERWAY CAFÉ Brett’s Low Country Boil 1/2 pound peel and eat shrimp 6 whole crawfish 6 littleneck clams 5 oz. kielbasa sausage 2 pre-cooked corn on the cob 2 pre-cooked red potatoes, cut in half Boil all ingredients in Old Bay seasoning, lemon, salt, pepper, and Bay seasoned water. HALFTIME SPORTS BAR Buffalo Shrimp Dip 1 lb. 21/25 shrimp, chopped 4 1/2 oz cream cheese 1/2 cup Gorgonzola cheese 3 celery stalks, diced

6 oz. lump crab meat 1/3 cup buffalo wing sauce 1/2 cup shredded cheddar Warm pita slices

Mix the first seven ingredients together, then serve with warm pita slices. The smooth cream cheese and Gorgonzola cheese balance the blazing flavor of the buffalo sauce in this favorite dip from Halftime!

CUCINA SOUTH Crab Stuffed Prawns Crab Mix 2 lbs. special crab meat 1 red pepper, roasted, peeled, and diced 2 bunches basil, sliced thin 6 green onions, sliced thin 1/4 cup Old Bay seasoning 1/4 cup Dijon mustard 1/4 cup mayonnaise 10 lbs. U10 prawns, peeled, deveined, tail on (save shells) Mix first 6 ingredients together. After peeling shrimp, cut shrimp to butterfly. Place 1 tbs. of crab mix on back of each shrimp and fold tail over. Place 3 stuffed shrimp in baking dish with white wine and butter, then bake at 500 degrees for 6 minutes. Lobster Sauce 3 Maine lobster shells Shells from the peeled prawns 6 cloves garlic, minced 4 shallots, minced 1 cup brandy 1/2 tsp. crushed red pepper 1 quart vegetable stock, reduced by 30% 1/2 quart heavy cream, reduced by 30% 2 cups tomato sauce Salt and pepper Sweat garlic, shallots, and shells. Add brandy. Cook off the alcohol. Add vegetable stock, heavy cream, tomato sauce, and salt and pepper to taste.

THE SURF RESTAURANT Shrimp on a Stick Appetizer 8 large local shrimp Key West seasoning Teriyaki glaze Fried onion straws Season shrimp with Key West seasoning and grill the shrimp on a stick. Brush with Teriyaki glaze and serve with fried onions straws.

Wrap shrimp tempura with mango, cream cheese, and crabmeat in soy paper. Top with Cajun shrimp and tobiko. Serve with shrimp sauce and wasabi mayo.

Crab Stuffed Shrimp 1/2 diced roasted red pepper 1/2 tbs. granulated onion 1/2 lb. jumbo lump crab 1/8 cup mayonnaise 1/2 tsp. Dijon mustard 1/2 tsp. lemon juice 1/4 tsp. salt and pepper Pinch cayenne pepper 1/2 tsp. Old Bay Seasoning 1/2 cup Ritz Crackers crumbs, finely crushed 2 lbs. local jumbo shrimp, peeled and deveined In a mixing bowl, combine all wet ingredients together. Add jumbo lump crab and toss lightly so as not to break lumps Add Ritz Crackers. If mix is wet, add more crackers until slightly under crab cake consistency. Peach Jam 1 ¾ cup sugar 2 oz. apple pectin 1 ½ cups peaches Simmer peaches until soft over low heat. Add sugar and pectin, and then simmer until sugar melts, making sure not to boil. Peach Glaze 1 cup peach jam 3 tbs. whole grain mustard 1 garlic clove, minced fine ¼ cup roasted red pepper, diced fine

Mix all ingredients in bowl. To prepare dish, peel and devein shrimp. Along the curve of the shrimp, make a slight cut, making sure not to cut all the way through. Cut just deep enough to flatten the shrimp out. Place 1 oz. of crab mixture in shrimp and curl tail over the top of mixture. This will ensure the mixture will not fall out. Brush lightly with butter and place on a lightly oiled pan. Place in 350 degree oven and let cook for 7 to 10 minutes (depending on oven), until shrimp is cooked and mixture is warm. Drizzle Peach Mustard Glaze over top of shrimp.

Combine and cook on a hot griddle. Sprinkle with mozzarella and serve on a Mexican black thermic rock to maintain temperature.

DOO WOP DINER Shrimp Scampi with Roasted Peppers 3 cloves garlic 1 oz. finely grated Parmesan cheese 8 oz. linguini pasta, cooked and drained 2 tbs. extra virgin olive oil 1 cup chopped roasted peppers

1/4 tsp. red pepper flakes 1/2 tsp. kosher salt, divided 1/2 tsp. pepper, divided 1/2 cup chicken broth or stock 3 tbs. unsalted butter 5 oz. baby spinach (4 cups) Shrimp

Preheat large sauté pan on medium for 1-2 minutes. Place oil and garlic in pan, and cook 3-4 minutes until garlic begins to turn golden. Add peppers, shrimp, pepper flakes, 1/4 tsp. salt, and 1/4 tsp. pepper. Cook and stir 1 minute. Add broth and cook 2-3 minutes or until reduced by half and shrimp have turned pink. Reduce heat to low, stir in butter, spinach, cheese, pasta, and remaining salt and pepper. Toss until butter and cheese melts and spinach wilts.

HORIZONS Citrus Shrimp Risotto 5 tbs. extra virgin olive oil 2 tsp. kosher salt 1/2 tsp. freshly ground black pepper 1 lb. extra large shrimp, peeled and deveined 1 small onion, chopped (about 1 cup) 1 large clove garlic, smashed, peeled, chopped 1 cup Arborio rice (about 6 ½ oz.) 1/4 cup dry white wine 3 cups low-sodium chicken broth, plus extra as needed 1/4 cup fresh lemon juice (from 1 large lemon) 1/2 cup heavy cream Zest of 1 large lemon 3 cups arugula Heat 2 tbs. of the oil in a heavy large saucepan over medium heat. Add the shrimp and sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until the shrimp are just opaque in the center, about 3 minutes. Remove the pan from the heat. Transfer the shrimp and juices to a bowl to cool. Add the remaining 3 tbs. oil to the pan. Add onions. Cook until tender, about 4 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the rice. Stir until wellcoated and translucent in spots, about 2 minutes. Add the wine. Cook until the wine is absorbed, stirring often, about 2 minutes. Add the broth, lemon juice, zest, and the remaining 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Cook for 2-3 minutes, then add the heavy cream. Increase the heat and bring to a boil, stirring often. Reduce the heat to medium-low. Simmer until the rice is just tender but still has some bite and the risotto is creamy, stirring often, 13 to 14 minutes. Mix in the arugula. Stir until the arugula wilts, about 30 seconds. Add the shrimp. Mix in additional broth if needed, 1/4 cup at a time, until the risotto is creamy. Spoon the risotto into bowls and enjoy!

1/2 cup Panko bread crumbs 2 whole eggs 1 cup mayonnaise 1 tsp. dry English mustard 1 tsp. black pepper 1 tsp. Old Bay seasoning 1 tsp. Tabasco 1 tsp. Worcestershire sauce

In a large bowl, mix mayonnaise, eggs, Tabasco, and Worcestershire. In a separate bowl, fold together crabmeat, Panko bread crumbs, celery, onion, red pepper, and spices. Then fold both together gently as not to break up the crabmeat. Grease cookie sheet and lay out shrimp split side down so tails will fold over crab stuffing. Stuff each shrimp with equal amounts of crab stuffing. Bake at 425 degrees for approximately 15 minutes. THE CRAB TRAP Grilled Shrimp 1/2 pound wild caught shrimp Grill sauce 3 cloves garlic, diced and roasted 2 cups honey mustard sauce 1 tsp. coarse black pepper Mix grill sauce ingredients together and brush over shrimp while grilling. Serve with your choice of vegetable and a sweet Southern hush puppy.

29 SOUTH RESTAURANT Roasted Shrimp with Pea Midd lins and Brown Butter Carrot Puree Roasted Shrimp 30 colossal shrimp (U-15) 1/4 cup olive oil Salt and pepper Preheat oven to 400 degrees. Toss shrimp in olive oil and season with salt and pepper. Place on cookie sheet and roast in oven 7 minutes or until shrimp is just cooked. Middlins 1/2 cup pea puree 3 1/2 cups chicken broth or water 4 tbs. butter 1/2 cup diced leeks 1 cup Anson Mills Carolina Gold Rice Grits or Congaree and Penn Rice Grits 1/2 cup white wine 1/2 cup Parmesan In a small pot, heat the chicken broth or water until warmed through. In a heavy-bottomed saucepan, heat 2 tbs. butter over medium high heat. When it starts to foam, add leeks and stir until softened, about 3 minutes. Add the rice and stir for a couple of minutes to toast the grains. Stir in the wine and cook until absorbed. Begin adding the warmed broth, about 1/2 cup at a time, stirring all the while. Cook until the rice grits are softened and creamy. Add the pea puree and stir in the Parmesan and remaining 2 tbs. butter. Adjust the seasoning with salt. Carrot Puree 1 lb. carrots, peeled and diced 1/4 cup hot water 2 tbs. heavy cream 3 tbs. butter 1 tsp. kosher salt 1 pinch fresh ground pepper (one turn on grinder) In a small sautĂŠ pan, heat butter over medium heat until it just starts to brown, then remove from heat. (Be careful because butter can go from brown to burned quickly.) Boil carrots for 15 minutes or until very soft. Drain the carrots and place in a blender with the water, salt, and pepper. Puree until completely smooth like mousse. Add the cream to the puree while blending 1 tbs. at a time, and then drizzle in the browned butter.

PLAE RESTAURANT Asian BBQ Shrimp Ten 16/20 shrimp, skewered and grilled Salt and pepper to taste Steamed jasmine rice Flash sauté julienne of zucchini, squash, and carrot BBQ sauce (made with hoisin sauce, plum sauce, soy sauce, fish sauce, mirin, and lime juice) Hot oil (made with sambal, crushed red pepper, and sterling oil) Lightly stripe the plate with hot oil. Glaze shrimp with BBQ sauce. Serve shrimp with jasmine rice and vegetables.

SLIDERS SEASIDE GRILL Garlic Glazed Shrimp with Chimichurri Squash 6 oz. large tail-off shrimp 1 cup shrimp stock 2 tbs. roasted garlic puree 1 cup roasted new potatoes, large dice 1/2 cup marinated yellow squash, large dice

1/2 cup marinated zucchini, large dice 1/2 cup chimichurri (see recipe below) 1 lemon, juiced 1/4 cup white wine Butter

Marinate the squash and zucchini in the chimichurri overnight. In a large sauté pan over medium heat, cook the shrimp with the olive oil until it is two-thirds cooked. Add potatoes, squash, and zucchini. Cook all ingredients together until the shrimp are fully cooked and the vegetables are tender. Deglaze with the white wine. Add the shrimp stock and garlic puree, and reduce until sauce consistency. Turn off the heat and add butter, stirring constantly. Season with salt, pepper, and lemon juice. Chimichurri 3 cups chopped basil 3 cups chopped cilantro 1 cup chopped parsley 1 cup chopped garlic 4 oz. red wine vinegar

2 lemons, juiced 2 tbs. house seasoning 2 tbs. black pepper 3 cups olive oil blend

Place all ingredients in a blender and pulse until smooth.

SHRIMP BUYING TIPS Wild shrimp feed on seaweed and crustaceans which gives them a more enriched flavor and thicker shells. The ability to swim freely also makes the meat firmer. Shrimp sold in the shell will have the best flavor. Purchase by count rather than size, as the terms such as “jumbo” or “large” are not standardized. Fresh shrimp should have the smell of sea water. If they smell of ammonia, they are past their prime. Shrimp that has been peeled and deviened before freezing will have less flavor and texture. Fresh shrimp has a shelf life of about 24 hours. he Pickers Market, located at 201 Alachua Street, is over 5,000 square feet of pure excitement. With over 50 dealers and consigners, you are sure to find something you just can’t live without. It’s fun to walk around the store, looking at things you may have had as a child, utensils your mother used to cook with, or things you’ve never seen before. When you walk into the shop, you are greeted by a beautiful old bar and a smiling face from one of the vendors working that day, along with complementary coffee, lemonade, and a plate of cookies. The Pickers Market opened on September 15, 2001, and it has continued to grow every year. Owner Nancy Rosenberg believes the store’s success is due to her manager, Laurie, and her dealers. “Our dealers come from all over Florida, and as far away as Atlanta, “says Rosenberg. “I’m proud of our shop and our dealers. Word on the street is that The Pickers Market has the best prices on the island. We get compliments from people every day.” Manager Laurie is always moving.

“Laurie is the store, as far as I’m concerned,” says Rosenberg. “She knows where everything is, and that’s quite an accomplishment since dealers are bringing in new merchandise every day.” “We try to keep everything new and fresh,” says Laurie. “We sell great beachy, cottage-style furniture, and lots of accent pieces. Some of our new vendors include Vintage Settings, a booth that offers rentals for special events. Amelia Island Florist has some beautiful floral displays. Charlene Kingsnorth formally of Fern Lily is now with us, and Natalie Blackwell, a well-known decorator, has a booth here, too. Rhonda Baine, one of our dealers, is responsible for our Facebook page. a little help from friends The newly founded Nassau Education Foundation improves education in Nassau County by empowering teachers one dollar at a time. BY JULIE SIMMONS

T

he first-quarter of 2015 hasn’t even arrived yet, and Nassau County’s newest non-profit organization has already raised over $140,000. Can someone shout, “Hooray!”? Nassau Education Foundation (NEF) President Abby Bean will, that’s for sure! Florida State Senator Aaron Bean and his wife, Abby, were responsible for founding this organization late last year. “In Aaron’s networking in Tallahassee last year, we learned that of Florida’s 67 counties, 64 have education foundations that fundraise for their schools and apply for grants from the state for matching dollars,” Abby explains. “When we learned Nassau County was one of the three counties without an education foundation, we approached Superintendent Dr. John Ruis and partnered to create NEF.” Larry Myers of VyStar Credit Union’s board of directors joined the effort as vice president, Brandy Carvallo of White Oak Plantation serves as treasurer, and David Richardson of Florida Public Utilities is the foundation’s secretary. NEF seeks to establish relationships between the community and the public school system to link community resources with the needs of the teachers and students. “We use the dollars we raise to fund grants for teachers and schools to supplement educational supplies and help students meet their goals,” says Abby. “I’ve served

on the Fernandina Beach High School Foundation for over six years, and I see the great work the money it raises does for teachers and classrooms. It empowers the teachers to pursue innovative ideas when they have the opportunity to secure resources to fund special projects outside the normal educational budget. I am so excited that we will have this on a county-wide level in the years to come, offering teachers more opportunities than ever before.” The cherry on top is that the State of Florida will match many of the dollars raised by the foundation. The Consortium of Florida Education Foundations awards dollar-for-dollar grants for six areas including career/technical education, increasing graduation rates, literacy, STEM (science, technology, engineering, math) education, teaching quality, and support for low-performing students. Since 2001, $29.9 million dollars has been allocated by the Florida Legislature for the School District Education Foundation Matching Grant Program. For school year 2014-15, $4.5 million has been allocated and is being used to fund 153 projects across Florida to help raise student achievement, according to the consortium’s web site. “We are eager to start applying for these grants,” states Abby. “We want to be good stewards of the dollars our community has so generously given.” continued on page 45.

J

ennifer and Mike Harrison live in a cozy cottage they built in Old Town in 2001. The house offers amazing views of the Amelia River across San Carlos Plaza, the original parade grounds for the Spanish fort which once stood there. The Harrisons have lived many places since leaving their native England 35 years ago, traveling from Stratford-on-Avon to Evergreen, Colorado, Gainesville, Florida, and eventually, Old Town, Amelia Island. Both have Ph.Ds, Jennifer from the University of Florida and Mike from Florida State University. A camping trip to Ft. Clinch more than 20 years ago resulted in the land purchase where their cottage sits today. The Harrisons were attracted to the small Old Town community, with its river, marsh, creek, and state park close by. For years, prior to building their house, the Harrisons would camp nearby in their vintage Airstream and maintain and trim their property. “We were first attracted here because it’s such a beautiful island with great beaches, state parks, wonderful trees, and yet it wasn’t too touristy. It is a healthy mix of locals, whose families have been here for generations, working folk, retirees, and tourists,” says Jennifer. Mike has served on three city boards: the Underground Utilities Committee, the Planning Advisory Board, and currently, the Historic District Council. He volunteers to solve electrical issues at Fernandina Little Theatre, and he had three parts in Amelia Community Theatre’s Christmas play in 2014. The City of Fernandina Beach named him Preservation

Champion in 2012. He also built and maintains the website www.oldtownfernandina.org to promote Old Town. Jennifer, a master organizer and promoter, has lent her talents to a wide variety of island organizations and events. She worked with Friends of the Library in organizing their first Story Telling Slam. The second is scheduled for September 25. She volunteers at the Nassau County Council on Aging, and she is captain of a Nassau Women’s Tennis League team. She is currently vice president of the Board of Trustees at the Amelia Island Museum of History, is a trained docent, and chaired the museum’s Holiday Home Tour in 2012. Her current project is a fundraiser on April 18 called “Tough Times, Strong Women: Tales from Old Fernandina,” which will introduce attendees to seven amazing ladies from old Fernandina’s past. Tickets are on sale at the museum. The Harrisons are committed to their Old Town community, and they were instrumental in coordinating a gala Old Town Bicentennial Celebration in 2011. In 2013, they worked tirelessly to make Old Town the perfect place for the Viva Florida 500 celebration. When Road Scholars (formerly Elder Hostel) come to town each year in the fall, the Harrisons offer programs on Old Town. Working with RockTenn, they were able to restore a section of Estrada Street to public use. They also applaud RockTenn’s commitment to landscaping the new Seton (pocket) Park. O

ne of the oldest homes in the Historic District is found on busy and mostly commercial Centre Street. Its generous, double-galleried porches stretch across the front of the house. Friendly rocking chairs seem to invite those passing to enjoy a quieter, slower-paced, and more elegant time. The center door is framed by sidelights and an overhead transom. The house is constructed of rough hand-hewn lumber fastened with wooden pegs. It is guarded by a picturesque fence and lush vegetation. David Levy Yulee brought great changes to Amelia Island as he built his railroad. He was actually able to move the town of Fernandina from a beautiful bluff overlooking the river several miles to the north to its current site. Old Town, as the original site the town of Fernandina is now called, was where the river boat captains lived. The bluff allowed them views of the river on which they made their livings. Yulee did not find the bluff and the large swamp area that bordered the town on its south side an ideal place for his railroad. Following the acquisition of Florida by the United States in 1821, the heirs of Domingo Fernandez

sold the land grants which contained the Eliza and Louisa and Yellow Bluff plantations to Yulee. The Florida Railroad Company first platted the City of Fernandina in 1857, and New Town began to take shape. Dr. John F. Lesesne, the original owner of the Lesesne House, would have been one of the early home builders in New Town, as the house was built prior to the Civil War on the emerging town’s Centre Street. However, he left Fernandina during the Civil War and never returned. The house eventually became the property of Judge John Friend, a German immigrant, who was appointed district tax commissioner by President Andrew Johnson. A prominent man, he served as County Commissioner, a judge, and, at the time of his death, he was the State Senator-elect from Nassau County. At one time, an olive orchard thrived on the lot next door where the Centre Street post office now stands. At the time of this writing, the house remains in the family. It was inherited by Judge Friend’s daughter and, through the generations, it has passed from mother to daughter rather than the more traditional father to son.

love the phrase “April showers bring May flowers,” but it doesn’t apply in Florida since April is one of our driest months of the year. Our summers usually go from May through October, so, dear gardening friends, now is the time to shape up those gardens for summer. Did you know that variegated foliage can make your garden come alive? Flowers are fantastic for providing seasonal pops of color, but foliage is a constant in your landscape, offering vivid color all season long. By carefully selecting and pairing plants, gardeners can create drama throughout their landscapes using vibrant foliage. Some suggestions are Sunshine Ligustrum with its gold variegation, Purple Diamond Loropetalum, or Purple Pixie Loropetalum, Olive Martini Abelia, or the bright Lavender Meerlo. All these wonderful plants will put drama into your garden. Some very pretty bulbs to complement the purple Loropetalum are Rain Lilies. The Habranthus Pink Rain Lily (Habranthus Robustus) will bloom four to six times in one summer,

regardless of heat or humidity. They perform in shady areas and full sun. These pale pink large Rain Lily bulbs quickly clump and spread, offering a showy display in an otherwise dormant summer garden. The Habranthus Pink Rain Lily sports three to four blooms per stalk. They are hardy to 10 degrees and make wonderful border plants, container plantings, or accents in the garden. Zephyranthes Pink Rain Lily is a large-flowered traditional in bright pink, which blooms many times each summer and fall, usually after rain. These special bulbs are uniquely suited for our warm climate and require virtually no maintenance. This lily is one of the largest blooms and bulbs amongst Rain Lilies, with three to four successive

blooms, and they are hardy to 10 degrees. They are heat tolerant, drought tolerant, water-wise, and re-blooming. Plant in full sun or part-shade. Two new 2015 Tecoma Southern Living Plants are the Tecoma Fire Bells, which I wrote about last November, and the Lydia Tecoma. Unlike traditional varieties, Lydia grows compactly, with less seed pods, which enables it to produce flowers from spring until frost. Lydia is self-cleaning, dropping the spent flowers when they fade, giving the plant a cleaner appearance throughout the blooming season. The Lydia Tecoma plant has a spreading, yet compact form, growing to about six feet tall and over five feet wide without pruning. Prune it to give it the shape and size you want, cutting to about a foot from the ground in early spring. This shrub has attractive branching and is good as a foundation planting, in a container, or as a tropical accent. You can plant Lydia in full sun. The couple smartly designed the space so that every gathering area and all three bedrooms would boast front-row seats on the waterfront, while more private spaces like the kitchen and bathrooms take the second row. It’s all so perfectly designed that the jury is still out on whether more time is spent in the outdoor, screened living space and pool or the interior space. Even the master suite, which includes a large indoor sitting area, offers access to the outdoors when it opens to a large veranda.

However, my favorite part of the home is not just the lovely design, but the fact that it is filled with the couple’s most treasured heirlooms. Steve and Cheryl met at the United States Naval Academy in Annapolis, where Steve was a member of the Drum & Bugle Corps and played the trombone, which is displayed with his name on the case in the guest suite. “After four years in the Navy, with moves to Florida, Rhode Island and Virginia, I left the Navy to attend the University of Maryland Dental School,” Steve explains. “After graduation, I resumed

my career in the Navy Dental Corps.” Cheryl, and the couple’s children, David, Doug and Penelope, traveled with him as the Navy moved them to North Carolina, Tennessee, Kings Bay, Georgia, and Hawaii, eventually landing them back to their home on Amelia Island. Upon retirement from the Navy, Dr. Potter opened his Yulee practice. Along the journey, the couple collected family memories which are framed and displayed throughout the home alongside antiques and silver received from Cheryl’s grandmother, aunts, and friends. Steve’s talents are apparent throughout the house. In one room, you’ll find a stained-glass piece handcrafted by him, and,

in the garage, you can get a peek at two of his favorite hobbies: a 1929 Model-A Hot Rod and a 1948 Ford, which he enjoys showing. But perhaps the showcase for his varied talents lies at the edge of the river, where his architectural skills are on display in the multi-story dock with a hammock on the top level that he designed to fit the small space allowed by code. Any afternoon you knock on the door, you likely to find the couple relaxing out back, laughing with their grandchildren, Beth, Luke, and Shelby, or enjoying their two Yorkies, Maggie and Molly, and waiting on the sunset. Just another heavenly day on Amelia!

D

inner at David’s Restaurant and Lounge is always a special indulgence for me. It’s so unlike any other place on Amelia Island that when I walk through the door, I feel like I’m in a different world. I invited my friend Cindy to join me for dinner at David’s one evening, and it was one of the finest meals I have enjoyed. Our server, Marc, suggested that Cindy try David’s Lemon Drop Martini, a luscious libation made with Citron Vodka, Triple Sec, and fresh lemon juice. It was very refreshing, a bit tart, and, with a bit of sugar on the rim, it tasted just like a lemon drop. I had a glass of Giesen Sauvignon Blanc, a crisp and citrusy wine from New Zealand, and Marc brought us a bread box filled with the restaurant’s own homemade bread. I love that David’s begins each meal with an amuse bouche (“mouth-amuser”), a one-bite hors d’oeuvre that is created by the chef each night. That night, Chef Wesley Cox brought us a taste of his barbecue pulled duck with celery and cucumber, served on little spoons. Delicious! While we nibbled on our

bread, Marc suggested Beef Satay, one of their bar items, for our appetizer. The tenderloin was skewered, and served with sesame seed, Sriracha, and micro cilantro. It was extremely tender, with a delicate jasmine flavor. Cindy and I shared a bowl of Crab Bisque, a rich crab soup drizzled with basil pesto oil, which is one of my favorite menu items at David’s. Marc then brought us a small taste of Raspberry Sorbet with fresh mint, a traditional continental palate-cleanser. We ordered a glass of Steel Chardonnay after our sorbet, and for our entrée, a chef special that evening, Chilean Sea Bass. I love that David’s cooks their fish so impeccably. It was tender and moist, and served atop a mound of truffle mashed potatoes, and grilled asparagus. The plate was drizzled with buerre blanc and roasted red pepper coulis, perfect accompaniments to the fish. The mashed potatoes were rich and fluffy, and the asparagus was tender and delicious. An amazing entrée! After our rich dinner, I doubted that I would have room for dessert, but Chef Wesley insisted that Cindy and I share their Chocolate Lava Cake, and how could we refuse? This dessert is similar to a soufflé, and it’s best to order it in advance. The Lava Cake has raspberry sauce in the middle, and Chef Wesley explained that it is cooked frozen, so that when served, the cake is hot and chocolaty, while the inside is still slightly cool. The whole thing is then sprinkled with powdered sugar. The Lava Cake is not on their regular menu, but it’s always available, so be sure to ask your server for this fabulous dessert. David’s began a special King Crab offering last year, which has been very popular with diners. Anywhere from 6 to 9 lbs., these are whole crabs, cleaned, cooked, and ready to enjoy at table or for pick-up. These need to be ordered 2-days in advance and make for a wonderful special occasion. a walk through time

Hiking at the Fort Caroline National Memorial offers a glimpse into the region’s rich history, amidst the natural beauty of forest and marsh. STORY AND PHOTOS BY KAREN MILLER

I

f you live in a populated resort locale like Amelia Island, you may be surprised to discover the number of hiking and biking trails that are practically in your backyard. Recently, my friend Cindy decided to take a hike at Fort Caroline National Memorial, located in the Timucuan Preserve, about halfway between Amelia Island and Jacksonville Beach. The Timucua were the Indians who made contact with the first European arrivals in this area in the mid-1500s. These people hunted and gathered in the forests and marshes, collecting clams and oysters, and they used waterways like St. Johns Creek for transportation. Within the preserve is the Theodore Roosevelt Area, a place where people can leave the everyday pressures and stresses of life

behind and enter a world where their senses can indulge in the sounds, smells, and sights of Old Florida. The park is a gift offered to the people of the Jacksonville area by an insightful gentleman named Willie Browne, who lived his entire life on the property. Towards the end of his life, he became worried that Jacksonville would become a concrete jungle with no wild areas remaining. Developers offered Browne millions of dollars to buy his land, but he declined and donated the land to the Park Service so that future generations would have “a place in the woods to go to.” Fort Caroline National Memorial is an area within the Timucuan Ecological and Historic Preserve, a fort that protected the first planned French settlement in the United States. Jean Ribault led the expedition in 1562 and he erected a monument on the bluff above what is now the St. Johns River. Spain sought to dislodge the French and sent Pedro Menendez to set up a base at St. Augustine. Menendez marched north with 500 soldiers and massacred 140 settlers, before marching south and slaughtering 350 more men. This area was eventually named Matanzas, which means “slaughter.” The original site of “La Caroline” no longer exists, possibly washed away after the river channel was altered in the 1880s. The fort exhibit is based on a 1500s sketch by Jacques le Moyne, colony artist and mapmaker. Cindy and I stopped into the visitor center to chat with the rangers, and then headed out to the hiking trails. The preserve has many places to hike; we began at the Timucuan Preserve Headquarters and hiked north, crossing Hammock Creek to a viewing area called Round Marsh. A connecting trail took us along the bank of St. Johns Creek, where we saw mounds of oyster shells, built by the Timucuans. Taking a left off that trail, we came upon the grave of a Confederate soldier, and then further down the trail, Browne’s home site and his family cemetery. We decided to loop around so we could hike back to our vehicle, but if we had continued northwest we would have come to Spanish Pond, where the Spanish soldiers camped before they attacked the French settlers. What’s great about this hiking spot is that you can enjoy the beauty of the forest, the marsh and its wildlife, and St. Johns Creek, while learning the history of this very significant area.
