April is upon us and spring is undeniably here, and, in a new twist for us, so is our annual Amelia Islander Magazine “Home & Design” special issue. As longtime readers will recall, the Home & Design issue has traditionally come in January, but this year, we decided that Yo-Yo Ma’s first appearance in northeast Florida at the Amelia Island Chamber Music Festival was a good reason to move this issue to April, and so here it is. The Home & Design special issue is always one of our favorites. Building a home, purchasing a home, or finally turning the home you love into the castle of your dreams is one of life’s most satisfying accomplishments. As it has been said, home is where the heart is, and creating a peaceful, comfortable environment where one can raise a family or enjoy retirement is a vital part of life. A home should be a place of rest from the hustle and bustle of the world, a place where we relax, recharge, and enjoy the things that matter most to us. When we create—or recreate—a home for ourselves, we make decisions about where we want to live, the style or feel of the house, whether we want an extra bedroom for out-of-town guests or a private study, garage space for hobbies, and so forth. Once we are settled, we get comfortable with familiar ways of doing things, but as we evolve from year-to-year, our homes should reflect those changes. Each year, many homeowners set out on ambitious renovations, or decide to redecorate one or two rooms to keep things fresh. Redefining our home environment is like creating a work of art, and it often remains a work-in-progress. Fortunately, the work of creating our masterpiece is a rewarding journey in itself. In this issue, we are happy to share interesting, new ways to update your home with the latest interior trends, recommended by some of our favorite local experts. We also have the opportunity to feature two of the many exceptional homes here on Amelia Island. In the first, Teresa and Ken Hunter bought a lot in the downtown Historic District and made a childhood dream of Teresa’s come true. In the second, Kristen and Wally Mulholland found a villa overlooking the ocean at Amelia Island Plantation and began a renovation that beautifully balances contemporary and traditional elements. Also this month, we feature the Island Chamber Singers, who perform a concert this month; we have a “Fernandina Faces” profile by Dickie Anderson of Rich Smith, who is a familiar face around Amelia Island; we present spring grilling recipes; and much more. “I
’ve been working on this house since I was a little girl,” beams Teresa Hunter, as her she shares the secrets of her new plantation-style home on Atlantic Avenue in her charming Dothan, Alabama accent. “I always wanted a Georgian Plantation-style home like we had in Alabama. I remember the most beautiful homes in this style, with large magnolia trees.” The Hunters moved to Fernandina Beach eighteen years ago, shortly after their marriage. “Ken traveled all the time, and he wanted me to be in a strong community, and we’ve loved Fernandina Beach since we arrived.” The couple built two homes in the area, but they always dreamed about living downtown.

The Carrera marble countertops are stunning beside the custom cabinets, and the white milk glass, collected for the Hunters’ daughter’s wedding, is paired with a farmhouse sink. “When I saw lot number 909 was going up for auction, I called the bank, made a pre-auction offer, and they accepted,” says Teresa. “We were so excited to move into the Historic District, even if we are the very last home!” Building in the Historic District quickly turns a home-building project into a team effort because the City of Fernandina Beach’s Historic District Council governs exterior design features, and every exterior design element must go through the approval process. “I spent years drawing my perfect home,” confides Teresa, who has a natural talent for design and decorating. “When we acquired this property, I contacted Harrison Design in Atlanta to bring my drawings to architectural standards.” Bryan Lendry of Lendry Homes, LLC built the couple’s first Amelia Island residence, and they contracted with him again on this project. “Bryan has always been there for me and has

outstanding customer service,” says Teresa, and the two of them spent a solid three years—from conception to the January 2014 completion—working together. A three-story elevator ride covers the home’s over 9,000 square feet of stunning completed living space. The entry hall welcomes visitors to the Historic District with an antique front door that Teresa found at an Amelia Island estate sale. The door’s hardware dates to 1876. The door is painted, but all of the features, including the mail slot, are original. The foyer has a nautical feel thanks to a sunburst glass panel on the front door, starfish decorative accessories, a cushion revealing Fernandina’s nautical position, and a compass inlay in the center of the floor – all lovely reminders that this home is on an island.
A visit to the second floor is introduced by the bannister’s newel post, which is a hand-carved replica of the one in the Old School House across the street. Visitors love the signed and numbered Robert Harter prints of historic homes and buildings on Amelia Island, including St. Peter’s Episcopal Church next door. The focus upstairs is on Ken and Teresa’s children and grandchildren. “We wanted a ‘forever’ home with space for everyone,” says the couple. Kendall Kay, the couple’s youngest daughter, enjoys her black-and-white themed suite, complete with a study and recreation room where her high school friends love to gather. Down the hall, the oldest brother, Kevin, and his wife, Melissa, have a peacock-themed room decorated with

feathers that were used at their wedding, and a commissioned peacock painting that was a gift from Teresa. Finally, Brittany, the oldest daughter, her husband, Ryan, and their one-year-old son, William, have a colorful suite filled with heirloom toys the Hunters love to share with their first grandson. Teresa’s love for her family is evident in the abundance of photos and memorabilia throughout, as well as such thoughtful touches as the coffee pot in each bedroom, designed to ensure the grown children enjoy all the comforts of home. As pronounced as Teresa’s love for her family is her faith. Chalkboards with handwritten Scripture remind the family of what is important. “We are really involved at Memorial United Methodist Church,” explains Teresa. “We adore living so close and walking to church together. I am involved in a couple of church circles, and I enjoy opening my home for choir parties and other gatherings.”

In the past two years that they have resided in their new home, the family has hosted five wedding parties (many dressing for nuptials at next door St. Peter’s Parish), several showers and tea parties, fundraisers, the 2014 Amelia Island Holiday Home Tour, and plenty of porch parties during Shrimp Festival. Teresa supports local thrift store charities, including New to You, Purple Dove, and Cats Angels. Many of the treasures in her home were purchased at these venues, at estate sales, or were gifts from local friends. “Our favorite part about living downtown is being able to walk to restaurants, and for Kendall Kay to have the opportunity to live in town,” say Teresa and Ken. For Teresa, she’s living her own childhood dream, in her beautiful plantation-style home right here in downtown Fernandina Beach.

The Amelia Island Blues Society is pleased to announce their partnership with the 2016 Isle of Eight Flags Shrimp Festival, presenting “Chicago Blues Night” on Friday, April 29 at 7 p.m. featuring Mud Morganfield, eldest son of blues legend Muddy Waters. Morganfield first appeared at the Amelia Island Blues Festival in 2013 as the headliner following the release of his Son of the Seventh Son album. “We are looking forward to having Mud Morganfield back on Amelia Island”, says Jeff Malone, president of Amelia Blues Society. “He delivers the Chicago Blues sound that brings his audience to their feet just like his father, Muddy Waters, did.” Morganfield has won the 2013 Blues Blast Magazine Award and the 36th annual 2015 Blues Music Award for his CD For Pops: A Tribute to Muddy Waters in the “Traditional Blues Album” category. Morganfield will also be appearing as the headlining star of “Ghost of the Blues” at the historic Orpheum Theatre on Beal Street, produced by Jeff Malone and Randy Knight. AMELIA TREE CONSERVANCY HOSTS A CELEBRATION OF TREES On April 15 from 5:30 to 8:30 p.m., the Amelia Tree Conservancy celebrates the beauty of Amelia Island trees and the contributions they make to our lives. The public is invited to a special evening of entertainment, music, gourmet food, and fine wine at Burns Hall, St. Peter’s Episcopal Church. Some of Amelia Island’s finest actors and dancers will perform, and a silent auction will include outstanding art by local artists, and many other items. Light fare will be provided by LuLu’s at the Thompson House, and participants will be treated to a cash wine bar stocked by A Taste of Wine by Steve. This is the first fundraiser for the Amelia Tree Conservancy. ATC is a non-profit organization, the only group whose sole mission is to advocate for the preservation and welfare of the Amelia Island tree canopy. Their mission is educate the public and increase awareness regarding the nature and composition of the Amelia Island maritime forest canopy ecosystem and its importance in creating a habitat for humans, birds, animals, and plants. hris “Dube” Dillon was 18 years old when someone showed her how to use a mallet and a chisel. “That moment changed my life forever,” says Chris. “That’s when I decided to become a woodcarver.” She began her woodcarving business in Maine, and then moved to Key West, running a very successful gallery there. The Isle of Eight Flags Shrimp Festival brought her and her husband (also named Chris!) to Amelia Island, and they fell in love with the charm of this friendly, coastal community. The couple opened their business in 2001, but moved three times before they found their forever home at 505 South 9th Street, where their 4,000 square foot building allows for the myriad of sculptures, antiques, and collectibles they have acquired. “I am a very aggressive yard saler,” laughs Chris. “It’s like being on a treasure hunt every day!” She also peruses estate sales and flea markets, finding the unusual and obscure items she knows will sell at
her shop. Chris’s husband is an integral part of the business, being the “muscle” behind their thriving partnership. “He can fix anything,” states Chris. “He helps with the buying, moving, and the heavy lifting, and supports me in everything I do with the business.” Swamp Art, Too’s customers come from all over the country, but most are regular local customers who stop by on a weekly basis, often after hearing about Swamp Art, Too from their friends. Chris also sells to dealers because her prices are so reasonable. But her first love is still woodcarving. Every day she uses the natural beauty and structure of wood to create the whimsical sculptures you’ll see at Swamp Art, Too. “I just can’t help myself,” she laughs. “I spend all my spare time carving and painting!” Swamp Art, Too is open Tuesday through Saturday from 10 a.m. to 5 p.m., but they are closed for siesta from 1 to 3 p.m. For more information, call (904) 321-3404.

usinessmen and world travelers, Julian Sauer and Pierre Laporte knew that their unique backgrounds would help them provide a different approach to navigating the world of accounting. In 2004, the two became the third generation of CPA’s at Courson & Stam, a certified public accounting firm that has served Amelia Island for over half a century. Prior to becoming public accountants, Julian and Pierre had extensive financial and business experience working with a variety of industries, working for small and large companies as controllers, auditors, and chief financial officers. “It’s our business backgrounds that help us understand our clients’ needs,” says Julian. “We have sat on both sides of the desk, so we know the challenges and pressures facing small businesses.” Added to that experience is a knowledge of international business. Julian is from South Africa, and Pierre worked for seven years in Europe and has an MBA from London Business School. They have traveled extensively, which has given them an understanding of a variety of different business practices. “We feel this mix of experience is a unique asset we bring to our clients, who are extremely diverse,” says Julian. Pierre and Julian are also very invested in the community. Julian volunteers at the Coalition for the Homeless of Nassau County and Amelia Community Theatre. T
here’s something timeless about Amelia Island that plants an affinity in one’s heart and keeps calling it back, and such is the case for Kristen and Wally Mulholland. Kristen started visiting Amelia Island in high school when her parents bought a place at Long Point on Amelia Island Plantation. “My best memories from high school were days on the beach, followed by a visit to Fantastic Fudge,” reminisces Kristen. Fast forward to a successful career at Johnson & Johnson, when Kristen decided to return to Amelia Island and marry her husband, Wally, at beautiful Walkers Landing on Amelia
Island Plantation. “I love the timelessness of Amelia Island, couple with the constant evolution that keeps the island fresh and exciting,” she shares. “Our wedding was the most special memory for us, and it kept us coming back!” After so many visits, the couple decided that they would look for their own place on the beach. “I remember I was visiting by myself,” says Wally, “when Dee Chaplin brought me to 1410 Windsong. It took me about ten minutes and a phone call to Kristen to make an offer!” The couple’s primary residence is in New Jersey, where they

restored a traditional historic home, quite a different situation from their new oceanfront digs. Wally is retired and he was ready to spend a summer in Florida working as a contractor on his new home. Amelia Island architect John Cotner drew the original Windsong Villas, and he and Wally analyzed the plans to determine what design modifications were possible. “I wanted to open up the series of mini-rooms on the main floor,” Wally confirms. “John helped me to know where the supports were and understand what needed to occur from an architectural point of view.” 32 AMELIA ISLANDER MAGAZINE • APRIL 2016

After that, Wally put on his hard hat and started demolition. “I had a hand in all aspects of the construction.” An important memory from the project was the day Wally and 12 men carried an approximately 1,500-pound beam—Seven-Dwarf-style on their shoulders—and installed it above the kitchen bar. There was nothing Wally was afraid to undertake, and the couple was committed to using local talent and resources to help them get it done. When it came time to design the interior, the couple invited Robyn Branch of Robyn Branch Design to join their team. “When you enter our home, what you see is the ocean,” says Kristen. “We wanted a neutral palate, amazing art work and accessories, and then allow the ocean to be the crown jewel.” Robyn listened to what Kristen and Wally wanted, then supporting their vision with lighting, stone, tile, window treatments, and all aspects of the design process.

“Kristen and Wally are the perfect clients,” smiles Robyn. “They are happy to explore possibilities, they told me what they wanted, and they let me run with it.” With Wally’s construction talents and expertise mixed with Robyn and Kristen’s design choices, the finished product is clean and serene, with plenty of contemporary elements and a healthy dose of tradition. “Transitional,” as Robyn describes it. “At the end, it makes me happy to know that they love their new space,” says Robyn. And they certainly do! With their two puppies, Padme and Pepper, Kristen and Wally curl up on their sofa, watch the waves, and think about the bike ride they’ll take on the beach tomorrow. “We spend as much time as possible on the island with our family and friends,” says Kristen. “And, of course, I still enjoy going to Fantastic Fudge!” 36 AMELIA ISLANDER MAGAZINE • APRIL 2016

T
he Island Chamber Singers will perform composer John Rutter’s Mass of the Children with the Jacksonville Children’s Chorus on Friday, April 15 and Sunday, April 17 at Amelia Plantation Chapel. Accompanied by an orchestra and soloists David Scheininger and Glynis Wood, the 54-member adult chorus will be joined by thirty singers from the Jacksonville Children’s Chorus for a rare performance of this work, which debuted at Carnegie Hall in 2003. The Mass will be sung in Latin and English, with interplay between the adults, children, and soloists. Musical Director Jane Lindberg, DMA, founder of the Island Chamber Singers, will lead the performance, which marks the twelfth season for the group. Lindberg came across Mass of the Children five years ago, as she was eagerly searching for major works by Rutter. “The piece is pensive, thoughtful, and beautifully poetic,” says Lindberg. “Rutter is very different from other composers. We
are excited to be working with the Jacksonville’s Children’s Chorus for the first time.” Mass of the Children is widely considered to be Rutter’s most magnificent, powerful, and emotional composition, written following the sudden death of his son Christopher while a student at Clare College, Cambridge, where Rutter himself had studied. Featured in the second half of the concert will be other favorites by Rutter, including When the Saints Go Marching In, The Lord Bless You and Keep You, and I Will Sing with the Spirit, in addition to Musica Dei Donum with flute accompaniment. The Island Chamber Singers was formed in May 2004 through a community meeting designed to gauge interest in starting a choral group that would perform only classical literature. The community embraced the idea, and Lindberg continued on page 69.

R
ich Smith is a familiar face to anyone attending St. Peter’s Episcopal Church, or anyone who has attended one of the many activities that always seem to be going on at the busy sanctuary located on the corner of Eighth and Centre streets. Smith has been Parish Life Director at St Peter’s for 15 years. A retired education professor at Pennsylvania’s Kutztown University, Smith and his wife, Julie, moved to Amelia Island in 1996, looking forward to retirement. At age 56, Smith quickly found that once he settled into his new home, he needed to be busy and productive. He soon found Barnabas, or you might say Barnabas found him. He quickly became very involved in the non-profit, which provides a variety of services, including a food pantry and popular resale store. His time commitment increased, and before he knew it, he became assistant director for five years. While working at Barnabas, Smith got to know board member George Young, the charismatic and forwardthinking rector of St. Peter’s Episcopal Church. Young saw in Smith the perfect person for a position he planned to create at the church —Parish Life Director. Smith agreed to give him a year. He is now in his 15 year. Young felt strongly that a church located in the heart of the community should be more married to the many activities on the island. Smith had the luxury of creating his own job and quickly linked St. Peter’s to island organizations that included many of the island’s festivals— Chamber Music, Book, and Jazz, to name a few. He has also served on the boards of Keep Nassau Beautiful, the Amelia Island Chamber Music Festival, continued on page 71.

pretty perennials When you plant perennials like Kudos Mandarin and Yellow Meadow Rue, you’ll enjoy bright color in your garden all summer long. BY BETTY MORRELL
M
arch was a beautiful month, with lots of good weather for chores in the garden. If you haven’t done your spring clean-up yet, do it now, as planting time is here. The garden centers are overflowing with beautiful annuals and perennials. I love to get lost among the rows of plants! My favorites are perennials. If you buy them in bloom, make sure you leave space around them for the next round of blooming perennials. That way you’ll have color all summer long, and they will return again year after year. Fill in those spaces with colorful annuals, which will last all summer and into the fall. Last month, we covered ground covers, and I want to mention one last variety of Thyme, Thymus cocaeneus, which is very pretty. It is a flat-growing Thyme, with dark green leaves smothered with bright, magenta and red flowers in early summer. It is a strong grower. Use it as a drought tolerant lawn substitute or for planting between flagstones, as it tolerates medium foot traffic. The creeping Thymes are easily divided in spring or early fall and even small pieces will take

root and grow. Thyme is an evergreen and attracts beautiful butterflies. I have discovered a few new perennials, which some of you might enjoy. The first is a diminutive plant which maintains a tidy, upright habit while producing eye-catching orange blossoms over a long season. It’s called Kudos Mandarin (Agastachee kudos). Once established this plant is droughtresistant and it will be a special attraction for hummingbirds. It produces fragrant blooms from July through September. It is also known as Hummingbird Mint. The Kudos Mandarin has few insect problems, although mildew can affect the leaves during dry summers. Plant it in full sun, but some afternoon shade will protect the leaf color of this yellow

-foliaged Agastachee. Do not fertilize the first spring after planting. In subsequent years, fertilize once in early spring with 10-10-10 fertilizer or a layer of wellrotted compost. At the end of the season, cut stems back half-way to protect the plants from any damaging winter winds. It is hardy for this area. Continuing with yellow flowering plants, another one I like is the Meadow Rue (Thalictrum flavum), also new PP. In early spring, Yellow Meadow Rue makes a bright display with striking clumps of blue and green foliage. In June and July, clusters of bright yellow flowers on six-to-seven inch stalks complete the picture. You’ll certainly notice the blooms’ sweet fragrance downwind from this plant. This tall and graceful perennial won an Award of Garden Merit from the Royal Horticultural Society, and it deserves wider use in the garden. Plant in full or part-sun. T
he Picnic Basket, located on Centre Street in downtown Fernandina Beach, is a joyful place to grab a bite with friends. I say joyful because the atmosphere is friendly and fun, and everyone has a smile on their face. Chef Lisa Langshaw is all about preparing and serving fresh, creative foods. Recently, I asked her to prepare a picnic basket to share with my friends at the beach. She was happy to oblige, and when I arrived to pick up my basket, I knew we were in for a treat. My friends, Sherry and Sonia, joined me at the beach for a casual, yet elegant lunch, which consisted of many of The Picnic Basket’s most popular offerings. Everything was packed in a returnable basket, complete with a beautiful blanket, silverware, napkins, and glasses. The basket also included a bottle of Aqua Panna Spring Water and a bottle of Pellegrino Sparkling Mineral Water. It was fun to unpack the basket and see what surprises Lisa had created for us. First up was House Tuna Salad, made with line-caught tuna, eggs, freshly-cracked pepper, and dill. I really loved this salad, which was very fresh and tangy. We also enjoyed House Chicken Salad, made with all-natural Cajun-spiced chicken tossed with dried fruits and seeds, and flavored with candied ginger. These were served with Black-Eyed Pea Pasta Salad with heirloom tomatoes, fresh basil, Parmesan cheese, and mayonnaise. Also included was a distinctive Red Wheat Berry Salad, flavored with dried fruit and ginger. Wheat Berries are the entire wheat kernels, and they have a crunchy, nutty taste. All these delicious salads are unique because they are not overly dressed, yet they are moist and full of fresh flavors. Also in our basket, we discovered sliced Cremenelli Whiskey Salami and a wedge of Mimolette Cheese. Cremenelli is an artisan, handcrafted salami that gets its distinctive flavor from being marinated in fine whiskey, truly a gourmet treat. Mimolette is a hard, cow’s milk cheese from France, with a slightly sweet and nutty flavor. We nibbled on baby French baguettes with our cheese and salami, and then, voila, Sonia discovered another cheese in our basket: a Saint-André, which is soft and buttery, and tastes like an intense Brie. Just fabulous! Along with our savory picnic items, Lisa packed some lovely nibbles to keep us munching throughout the afternoon:
Herbed Marcona Almonds from Spain, which have a softer and more delicate flavor than traditional almonds (we fought over these goodies!), plus Dried Tart Cherries, Peaches, and Apricots, and Mini Salted Caramel Cheesecakes. This was truly a picnic basket to be savored over conversation with good friends, and since we were at the beach, we didn’t want our picnic to end! One of The Picnic Basket’s favorite quotes is by Virginia Woolf: “One cannot think well, love well, sleep well, if one has not dined well.” I definitely agree with that! The Picnic Basket offers breakfast and lunch. Their hours are 8 a.m. to 5:30 p.m. Monday through Wednesday, and 8 a.m. to 8 p.m. Thursday through Saturday, including dinner specials. The first concert was performed in November 2004 at First Baptist Church in Fernandina Beach, with twenty-four members of the group singing with a professional string quartet. Since that time, Island Chamber Singers has grown to fifty-four strong. The vision of the group is to provide an opportunity for members to sing classical literature and to develop an audience on Amelia Island for that literature. The Jacksonville Children’s Chorus was formed at Jacksonville University in 1995 by Dr. Frances B. Kinne, Dr. Jon O. Carlson, and Jim Taylor, who was their first director. It has grown from sixteen voices to over three hundred fifty. Currently, Darren Dailey is the director of the group, and performing with Island Chamber Singers will be their Treble Choir. The orchestra is comprised of a woodwind quintet, keyboard, and percussion. They are all professional musicians who have been contracted by Pegge Ealum, of Music By Pegge to perform with the Island Chamber Singers. The spring concert will take place at Amelia Plantation Chapel, 36 Bowman Road, on April 15 at 7 p.m. and April 17 at 3 p.m. An opening night reception will be held in the Fellowship Hall immediately following Friday evening’s performance. He served as a founding board member of Life Long Learning, and he helped establish the island’s Men’s Newcomers Club. Says Stephen Mazingo, current rector of St. Peter’s, “Rich Smith is one of those people that has the ability to change everything he becomes involved in for the better.” One of St. Peter’s initiatives involved offering Sunday school classrooms for other educational classes, groups, and activities. One class offered was a writing class focused on children’s books. Smith signed up for the class. The group learned about what must be considered in putting together a book for children. Smith was intrigued, and he found the perfect story for his own book. His niece, Adrienne Hall, was studying in Costa Rica, and while she was there a street dog adopted her. She named the small bundle of fur Tico. When it was time to come home, Tico came, too! Smith created his children’s book around that story. Smith’s book, Tico, is the story about a girl, a dog and three languages (English, Spanish and “dog”). While writing the book, a unique idea occurred to Smith: why not do the book in Spanish and English? He designed the book so you could read it two ways—one way in English, then when you turn it around, it’s in Spanish. Next Smith needed an illustrator, and he found her sitting next to him in his writing class—Mandy Stoffa. The charming illustrations are a perfect balance to Smith’s inspiring story. “There is so much on this island to embrace either as a participant or volunteer,” says Rich. “We feel blessed to have found a very special island, and we look forward to the years ahead.” Rich Smith and his contagious smile are a familiar sight in the Amelia Island community. MARINATED GRILLED COBIA Ingredients 4 cobia steaks, approximately 1-inch thick 1/4 cup lime juice 1/4 cup olive oil 1 clove garlic, minced Salt and pepper

Preparation Mix marinade in a Ziploc bag and add cobia steaks. Marinate for about 5-10 minutes. Heat grill to medium, making sure it’s well-oiled. Grill the cobia for about 4 minutes on each side, making sure not to overcook.

or most Amelia Islanders, April means getting pumped up for the annual Isle of Eight Flags Shrimp Festival. But for me, April is the beginning of grilling season. I love
dusting off my gas grill, gathering my barbecue tools together, and inviting a few folks over for a spring dinner in the
backyard, when the weather is at its best. Over the last few years, I’ve been trying to eat only fresh, local foods when they are at their seasonal best, and one of those is cobia. Cobia can only be found this time of year, either from your local fishmonger, or perhaps a generous fisherman who is willing to share his catch. This species winters in the Gulf of Mexico, and then migrates north as far as Massachusetts for the summer, passing Florida during March and April. Cobia can be quite large, up to 175 pounds, and when you see it in the market, you may gasp at its price. It’s right up there with fresh grouper, but well worth it, particularly for a special dinner. Cobia has an excellent flavor, especially when grilled, and since strawberries are in season right now, I’m making strawberry salsa to go along with the fish. I also have baby lettuce, spinach, and kale growing in my garden, in addition to young snap peas, abounding with pea shoots. These can be combined with other spring veggies to make a delicious salad, and with a freshly baked baguette and a bottle of chilled French rosé, my backyard dinner is sure to be a hit. Aren’t you glad that spring is here?

PLANT CITY STRAWBERRY SALSA Ingredients 1 pound Plant City strawberries, hulled and chopped 2 tbsp. lime juice 2 scallions, thinly sliced 1 jalapeno or other hot pepper, finely sliced 1 cup chopped cilantro Splash of olive oil Sea salt to taste Preparation Mix all ingredients in a bowl and serve. (This salsa is best served immediately and does not hold up well in the refrigerator.) BABY GREENS AND PEA SHOOT SALAD Ingredients 4-5 cups baby greens, like lettuce, kale, and spinach 1 1/2 cups pea shoots 1 cup snap peas or green beans, julienned 1/4 cup grated carrots 4-5 thinly sliced radishes White wine vinegar Grape seed oil Sea salt Freshly ground black pepper Preparation Gently mix salad ingredients and divide amongst four plates. Dress lightly by sprinkling with white wine vinegar, grape seed oil, sea salt, and freshly ground black pepper.
