Beginning last year, our Amelia Islander Magazine Home & Design special issue now arrives each year in the month of April, and upon reflection, it seems like a fitting time. After all, spring is the traditional time for new beginnings, some out-with-the-old spring cleaning, and all manner of jolts to the sleepy routine of our daily lives. One of the most satisfying ways we can shake things up a bit is to make a few changes to our home. Of course, we can move into an entirely new home, but that’s not usually a serious option for most of us. Instead, we begin by daydreaming with articles clipped from various home magazines that we flip through in bed on those cold winter nights. Making changes to our home can be compared to creating a work of art, and the process of creation is often a rewarding adventure in itself. Turning a house into a home is no small achievement. A home is founded on love, and creating a home proceeds on its own timetable, more or less organically, as we work to build a peaceful place to raise a family or enjoy retirement. Our homes should be safe harbors, places where we can relax and recharge. Needless to say, for many of us, the state of our house is sometimes less important than the beautiful island where we live. In this issue, we are always happy to share with our readers two of the many extraordinary homes that are found on and around Amelia Island. In the first of our two featured homes, one couple spent a lot of time visiting Amelia Island, then rented here, and eventually decided to build their “forever” home. They found a beautiful lot filled with oak trees in Oyster Bay Harbour and built a perfect home for entertaining family and friends. In the second, the homeowners had shepherded their children into adulthood and they were ready for adventure. After looking at towns all over the southeastern United States, the couple kept coming back to Amelia Island, enjoying its natural beauty, the historic downtown, and all the wonderful restaurants! Soon, they were building a home in Brady Pointe Preserve and embarking on a new chapter in their lives. Also this month, if this issue gets you in the mood, we look at some interesting ways to update your home with recommendations from some of our favorite local experts. In addition, you can check out an incredible Civil War re-enactment of Florida’s Battle of Olustee, learn about Island Chamber Singers’ recent performance at Carnegie Hall, and discover some great seasonal recipes for fresh asparagus in this month’s “Island Entertaining” column. deally situated on a lot full of trees in Oyster Bay Harbour, Rebecca and Greg Ott’s dream house overlooks the placid Amelia River. The Otts first discovered the beauty of Amelia Island when Greg was stationed at the Naval Submarine Base at Kings Bay, Georgia. At first the couple rented, then they fell in love with Oyster Bay, and eventually they bought a lot where they could build their forever home. The marshfront lot begged for a house that would maximize all its natural beauty. The Otts decided that Bryan Lendry of Lendry Homes was the builder who could bring their 3,250-square foot dream house to reality. The couple credits Bruce Sikes of Floridian Design

for many of the home’s custom built-ins, including two Murphy beds in Greg’s office. Rebecca and Greg wanted to retire to a place where their two children, Jessica and Michael, would look forward to visiting them. Fernandina Beach offers everything the family loves – beach, boating, restaurants, biking, and lots of friendly people. Once they committed to the process, Rebecca went to the internet to explore ideas for their new home. The two-year process was well worth it, shares the couple, as each detail was carefully planned and executed. windows on the far side of the room. Aged live oaks stand as living sculptures, with a view of the river beyond them. The room’s high stone fireplace adds a dramatic accent. In preparation for the new home, Rebecca had collected a few pieces of artwork before the house was even under construction. She smiles as she points out a tile mural in the kitchen behind the stove top. It is a beautiful, detailed heron

in shades of gray and blue. The colors in the artwork inspired the choice of colors throughout the house. Benjamin Moore produced the colors, including Weimaraner and Stormy Sky, which are used in the kitchen and the bar area. A small bar on the left after entering the front door is a showcase for the couple’s beer stein collection, which belonged to Greg’s father, a dentist, whose patients would bring him mugs

from their different colleges. His father would display the stein with a card with the name of the donor and the year. There are about 80 mugs in the collection. A favorite room in the Ott house is the kitchen. The couple loves to cook and entertain, and they planned a kitchen where they both can work without getting in each other’s way. The kitchen opens into a family room that is made for entertaining. The room includes a pull-down screen to watch movies and a pool table. One of the things on Rebecca’s wish list for the house was a fireplace in the master bedroom. The couple loves their private space in the master suite. The master bath features a steam shower, which can be used as both a shower and a sauna. The home has two garages. The one with the “Captain’s Quarters” sign over the door is Greg’s dream work space, where he enjoys hobbies such as working on his 1965 Corvette and brewing beer, which he kegs for their taps in the garage and the bar area in the main house. The other garage is for parking the cars and the workout/ storage area. Their dream house has become a reality for Rebecca and Greg Ott and their children. BAPTIST MEDICAL CENTER NASSAU OPENS CARDIAC REHABILITATION CENTER

AMELIA BAPTIST CHURCH PRESENTS GOOD FRIDAY MUSICAL DRAMA Amelia Baptist Church invites the public to a service of music and drama on Good Friday, April 14, at 7 p.m. These special musical services have become an annual Holy Week tradition in their community and have been well attended since their inception in 2005. Music Minister Pam Helton has selected a combination of familiar Lenten anthems along with several entirely new arrangements that convey the story of Jesus Christ’s sacrifice on the cross of Calvary. Peggy Strickland, Drama Director, has written an original piece entitled “Amazing Love,” which weaves the musical pieces together though the eyes of Biblical and contemporary witnesses who reflect on the profound impact of Christ’s willing sacrifice, both then and now. More than 70 talented singers from the community representing several area churches are presenting this inspirational Good Friday service. The choir will be accompanied by an ensemble of strings, woodwinds, brass, piano, and percussion comprising instrumentalists from the Northeast Florida area, all under the direction of Mrs. Helton. A former registered nurse with five heart stints, Jane O’Malley, along with her husband, Bill, were the lead donors for Baptist Nassau’s new Cardiac Rehabilitation Center, which was named in their honor. Before the Cardiac Center opened, recovering heart patients had to travel to Jacksonville to get the rehabilitation services they needed. The new center is on the main hospital campus in Medical Office Building B. The O’Malleys have been generous benefactors of Baptist Nassau since 2002. “When you’re recovering from heart surgery, the last thing you want to do is to drive a long way to get the rehabilitation services you need,” says Jane. “It can be a scary time for some people, and you need all the support you can get.” Physicians, dietitians, nurses, and exercise physiologists work together to provide an individual treatment plan for each patient. “Going through a formal rehab program like ours gives patients confidence as they transition from a serious illness to getting stronger and healthier,” says George Le-Bert, DO, a Baptist Nassau cardiologist. “Many patients are worried they may never return to their normal lives, but they can by going through a medically supervised program like ours.” For more information, call (904) 321-3870.

“PARTY FOR A PURPOSE” AT OCEAN CLUB OF AMELIA ON APRIL 20 On April 20, Team Fernandina will host “Party for a Purpose: Epilepsy Awareness” at the Ocean Club of Amelia from 6 to 9 p.m. The event features food, live music, beverages, and raffles, and the money raised will be donated to the Epilepsy Foundation of Florida (EFOF) to support Floridians fighting epilepsy. Nearly 400,000 Floridians are living with this disorder. More common than Parkinson’s, Multiple Sclerosis, Cerebral Palsy, and Autism combined, 1 in 26 people in the United States will develop epilepsy, and 1 in 10 will have a seizure. Epilepsy can strike any age, race, or gender without a known cause. The EFOF leads the fight to overcome the challenges of living with the disease and to accelerate therapies to stop seizures, find cures, and save lives. EFOF relies on volunteer fundraising and its annual “Walk the Talk” event to fund its programs. Team Fernandina has raised $5,000 each of the past two years, and their goal this year is to raise $10,000. Tickets are $50. hen Pam James and Heather Edge were vacationing in Washington State, they toured Pelindaba Lavender, an organic lavender farm on San Juan Island. The farm produces flowers and essential oil from their organically certified lavender fields to handcraft a wide range of personal care, therapeutic, culinary, botanical, household, and pet care products. The two friends were so impressed with the quality and aesthetic standards of the farm that they decided to open their own Pelindaba Lavender in downtown Fernandina Beach. “W

hat’s our next adventure?” Marion and Kevin Kucharski asked each other recently, now that their children are moving into adulthood and their home life is settling into a different season. As the exploration for “what’s next” commenced, the couple had no idea that they’d end up building a home on Amelia Island. “We decided to travel a bit and see what places we enjoyed, with the idea of choosing one to spend more time and see if that’s where we may want to eventually retire,” explains Marion. They packed their bags and spent the next two years visiting all over the Southeast, including the Carolinas and Florida’s east and west coasts. “We

focused on the Southeast – a place where we would find some kind of warmth. The New Jersey winters are brutal.” After all the tours of all the towns that interested them, the couple recognized that they kept coming back to Amelia Island. “The Fernandina Beach area is always our last stop before making the 13-hour drive home,” Kevin explained. Over the years the couple enjoyed all of their stays at The Ritz-Carlton, Amelia Island and the Residence Inn Amelia Island, with its kitchen amenities for longer visits. “We would find ourselves saying, ‘We haven’t tried this restaurant,’ or ‘That’s a new shop,’ or ‘Oh, I remember walking

to there for dinner.’” Marion smiles when she reflects on the day she and Kevin decided on Amelia Island. The charm of the historic downtown, the appeal of the ocean, and the amazing golf in the area offered the perfect package for this family. The couple was introduced to Arthur Rutenberg Homes during their travels and they were familiar with their spacious home plans. They visited a model at Amelia Island Plantation and met Vic Buscaino of Plantation Housing Corp., the Fernandina Beacharea Arthur Rutenberg builder. “We really liked not just their floor plans, but also their interior designer’s work and the quality of the product,” the couple confirms. When they were introduced to Brady Point Preserve, Marion and Kevin knew they’d settled on their next adventure. Brady Point Preserve is a gated, private community of homes on the Intracoastal Waterway just off Amelia

The development is canopied with oaks, large wooded lots with lake or Intracoastal fronts, and it includes 53 acres of preservation. “In New Jersey, our home sits on over two acres,” says Marion. “Brady Point Preserve was attractive to us because of the larger lot size, natural beauty, and the buffer between homes.” The Sheerwater home plan is just under 2,900 square feet and includes three bedrooms and three bathrooms, ample space for the entire family, says Marion. “We have two children, one in grad school and one in medical school. And we both still have our parents, whom we hope will run away from the cold with us and come to enjoy Amelia Island as much as we do!” Signature to the home design and Arthur Rutenberg product is abundant outdoor living space with multiple

lounging areas, a gas fire pit table, a grill and outdoor kitchen area, and a pool. The screened-in open-air space connects to the home through glass slider doors to bring the outdoors in. “The great room, kitchen, and dining area is a special place to gather with the family,” says builder Vic Buscaino. “The 90-degree doors open up to the pool and patio, and suddenly, your square footage expands and even while you are indoors, you feel like you’re dining by the pool and lake.” Arthur Rutenberg also offers full interior design services, which was a bonus for the Kucharskis. “I couldn’t imagine outfitting this new home without them,” says Marion. “Living out-of-town would’ve been so difficult. They did an outstanding job, and we are absolutely thrilled about our life to come on Amelia Island.”

The Arthur Rutenberg attention to detail is superb. For example, the light switches and door handles are all at the same level, which creates symmetry in the design. The stained wood paneled ceiling in the entry way is stunning, especially next to the textured, coastalhued wallpaper, another instance of the exemplary quality of the home’s design. The couple made quick friends with Vic and Myra Buscaino, as well. “I am looking forward to sitting outside in the pool area overlooking the lake with Marion and Kevin and sharing a bottle of wine,” says Myra. “It’s a treat with the birds in the area, and maybe we’ll have the pleasure of seeing a deer in the backyard!” With the planning done on their new adventure, the couple is ready to enjoy it with frequent trips to their new home, where they spend time doing their favorite things—visiting the beach, golfing, and strolling Fernandina Beach’s historic downtown, and dining at their favorite restaurants.

On February 20, 1864, a Confederate force under General Joseph Finegan defeated an army commanded by General Truman Seymour, and this victory kept the Confederates in control of Florida’s interior for the rest of the war. Union casualties numbered 1,800 killed, wounded, or captured, while the Confederates lost approximately 900 men. The battle disrupted the flow of supplies from Florida to other Confederate armies, but it failed to bring about a new state government. Most of Florida remained in Confederate hands until the end of the war. Each year, a reenactment of the battle is performed at Olustee Battlefield Historic State Park, the largest annual Civil War event held in the southeastern United States. Nearly 2,000 reenactors from all over the world come to recreate the battle, including a group from Amelia Island’s own Fort Clinch State Park. Headed by Park Ranger Frank Ofeldt, the Fort Clinch group is part of the 3rd Rhode Island Artillery, which served in a variety of roles

during the Civil War, including artillery, infantry, and cavalry, as well as manning U.S. Navy gunboats. The regiment fought in battles in Virginia, South Carolina, Georgia, and Florida. several days before the battle. “It takes us several days to set up our camp and cannons,” says Ofeldt. “Our group is in charge of safety procedures as well, and making sure that protocol is followed during the reenactment.” The Battle of Olustee is a weekend event that begins on Friday, when thousands of students invade the site with their teachers and parents to learn more about the Civil War, witnessing medical, cavalry, infantry, and artillery demonstrations. Food is served throughout the day, while sutlers sell their wares. Hundreds of encampments feature reenactors living as they would in 1864, cooking stew over open fires, playing music, and telling Civil War tales. On Saturday, a Civil War battle is performed on part of the field where the actual Battle of Olustee was fought. This is not the scripted battle (which is held on Sunday), but a performance designed to help spectators understand what a true Civil War battle was like. Replete with cannons, gunfire, horses, wagons, and music, Fort Clinch’s 3rd Rhode Island is at the forefront of the battle, which is surprisingly realistic. That evening, spectators are welcome to stay and watch the reenactors cook their evening meals, which range

from bacon and hardtack at some camps to full sit-down dinners at others. After dinner, many reenactors don their dress uniforms and gowns to attend the Reenactor’s Ball later that evening. On Sunday, the Federal and Confederate camps each host authentic, non-denominational, church services with real ministers who are also reenactors. Religion was an essential part of life in the 19th-century America, and most Civil War soldiers and their families felt very strongly about their faith. The scripted Battle of Olustee begins at 1:30 p.m., while an authentic Confederate band plays Civil War music to entertain spectators while they wait for the battle to begin. An announcer offers an explanation to the audience during the performance, in order to help them understand what is happening on the battlefield as the conflict progresses. Because the battle is so realistic, many spectators gasp in horror as soldiers begin to fall, while chaplains and medical personnel come to their aid. Within 90 minutes, the Confederates have taken down the Union troops, and the battle ends with a tribute to those who lost their lives. The Battle of Olustee reenactment was started in 1977. Aided by the funding of the Blue-Grey Army, Inc. and the State of Florida, the battle reenactment has grown to include up to 28 artillery pieces, over 50 mounted troops and horse-drawn artillery, 100 ground charges, and greater degrees of authenticity each year. choices When surveying this year’s trends in home décor, classic and timeless are good guides, but don’t be afraid to choose what you like, including in home technology. BY JULIE SIMMONS

esign consists of function, comfort, and beauty,” says Robyn Branch of Robyn Branch Design. As always, your home should be your haven, a place you want to be and where you find great joy. One strategy that works well, without the risk of being over-the-top trendy, is to think timeless. “Timeless is always an important trend,” suggests Robyn. “You can enjoy new looks and new ideas without abandoning taste and sensibility in your home.” Classic and timeless are always in style, echoes Benjie McEntyre of Julia Hall Interiors. “White sinks. Everywhere.

Always! Same with toilets!” he laughs. Homeowners often get hung up by new design features because they wonder if their selections will age well, but Benjie encourages his customers to fall back on what you like. “Always consider how your decisions will impact the resale of your home, but also factor in how much joy or use you will get in the meantime.” Another interesting trend in décor is DIY, or do-it-yourself. While Robyn likes a bit of DIY, she cautions that you can go overboard imitating what you find in the latest catalog. “Think about quality as you take on these projects. A mix of art and style in a home shows imagination, a good eye, and is immensely interesting. That is a wonderful trend: to think forward while still staying with a classic overall taste.”

When making those decisions about your home, Benjie suggests going slowly. “If every design element is high impact, then nothing is impactful. The less red you use, the more pop you get from it. Don’t paint the walls red, just put one red chair in the room and see how it shines!” In home technology, there are interesting options for automating your home. Mobile apps have emerged lately to make things in your home smarter. For example, when your thermostat wears out, purchase a new one that connects to Wi-Fi. Then you can turn down the air conditioner from your mobile device before you leave the office, or even preset the time to automatically adjust the temperature. Hue by Phillips offers a web-enabled LED home illumination system which allows you to control the color and brightness of lights in the home from an app. Forget about setting a timer on your lights! You can also set the mood for a romantic dinner, turn on lights to wake up, or create party lighting with the touch of your finger. Many of these smart products can provide security, like doorbells with a camera and speaker so you can answer the door from your mobile device. Last year, the market boomed with smart speakers, also known as voice-controlled assistants, which let you activate other smart devices in the home. Amazon’s Echo assistant, Alexa, can make to-do lists, give information on weather and traffic, and connect to other apps to control alarms, lighting, and temperature in the home. Google Home’s assistant is capable of two-way conversation while it executes your commands. It’s 2017, and there are lots of options to investigate. Check out the new, keep an eye on the classics, and have some fun putting your own personal stamp on your home.

O

n February 16, 38 members of the Island Chamber Singers boarded a plane at Jacksonville International Airport for New York City. Their mission? To sing at Carnegie Hall. It all began last year when ICS Music Director Dr. Jane Lindberg sent an audio recording of the group’s recent concert pieces for consideration to the Distinguished Concerts International New York City (DCINY). Lindberg could barely contain her excitement when she received word that ICS had been chosen to perform, and announced the surprise at one of the group’s rehearsals. “The performance was to be in Isaac Stern Auditorium at Carnegie Hall on Sunday, February 19,” says Lindberg. “We would be joining with other choristers in a performance of the French composer Francis Poulenc’s Gloria, with Dr. Erin Freeman serving as conductor of the performance and clinician for the residency.” Members of ICS and their entourage boarded their flight to the Big Apple in grand style. “Southwest Airlines had a

special sign made congratulating us on our venture, complete with hot coffee and donuts,” says Lindberg. “They made us feel really special.” The group spent four nights in The Big Apple, spending several hours per day in rehearsals over the five-day residency. When not in rehearsal, the group enjoyed the many pleasures that New York has to offer, including theatre, art, museums, and fine dining. On the day of the performance, the choristers were surprisingly relaxed, even though the performance was sold out to nearly 3,000 concertgoers. “There were six groups who formed a choir of about 150 singers,” says Lindberg. “They were the Virginia Symphony Chorus, Richmond Symphony Chorus, the choir from Virginia Commonwealth University, The Rugby School from England, Citrus Community Chorus from Florida, and Island Chamber Singers. She was excellent, to say the least, and fun to work with!” “When we walked out on the stage of Carnegie Hall for the rehearsal, I had goose bumps,” says Lindberg. “I couldn’t help but think of all the feet that had walked the same path. I don’t think any of our group ever even thought of doing this as a goal or an option. But when the opportunity presented itself, we were ready. We have an open invitation to return and I feel certain we will make plans to do so in the future.” For Amelia Islanders who didn’t get to Carnegie Hall in February, ICS will be performing an encore of Gloria on April 7 and 9 during their spring concert at Amelia Plantation Chapel as part of a program called “The French Connection.” Gloria’s composer, Poulenc, was well known in Paris for his high spirits and irreverence, but his serious side emerged later in his career. Gloria is the traditional Gloria in Excelsis Deo broken into six movements, each with its own style and characteristics. Also featured for this concert are three pieces by Gabriel Faure, Vocalise, Madrigal, and Ici-Bas, and two by Claude Debussy, Reverie and Beau Soir. The concerts will take place on Friday, April 7, at 7 p.m. and Sunday, April 9, at 3 p.m. An opening night reception will be held in the Fellowship Hall immediately following Friday evening’s performance. Tickets are $20 for adults when purchased in advance of concert day, and $25 at the door. They can be purchased online at www. IslandChamberSingers.org, from a member of Island Chamber Singers, and at various locations around the island. The Island Chamber Singers was formed in May 2004 by means of a community meeting to see if there was enough interest in starting a choral group to perform only classical literature. “The vision of the group has been to provide an opportunity for members to sing classical choral pieces and to develop an audience on Amelia Island,” states Lindberg. “But more than anything, we love to bring the joy of music to all!”

W

e’ve had a very mild winter, and some May flowers are up before the April showers have come! When I was at the recent Florida Growers show, I spotted a yellow sign that said “Worm Castings.” Instead of wriggly critters in the bin, I found a rich soil created from worm castings. As I stood running my fingers through the soil, the benefits of this wonderful product were explained to me. This soil increases moisture retention and provides beneficial bacteria and fungus to plants. It also provides slow-release nutrients, vital minor elements, and it works with all soil types. You can plant directly in the soil, top dress your plant area, or incorporate it into your existing soil as it improves soil structure. The worm castings will not burn the roots. Since I came across this product, I have been using it on, around, and in the soil of my plants, and it really works. My plants are healthy and beautiful. Worm castings are non-toxic, so it’s safe around children and pets, and it contain no chemical fertilizers, insecticides, or

herbicides. The soil at the show was from Wormganic Farms in Tennessee, but another brand of worm castings is available at Walmart. Also at the trade show, I came across a beautiful little bush called Sun Trumpets Tecoma. I’m sure most of you are familiar with the Tecomas, but this little bush is an exceptional one. Not only does it not vine or create a huge bush, it only grows about one foot tall and spreads 2 to 3 feet. The trumpet flowers on this dwarf bush are an orange color tinged with yellow and mixed with solid orange and solid yellow flowers, making it a striking plant. Tecomas are widely used in landscapes in the South. Traditionally,

these plants have been large and unruly, but the new Sun Trumpets are compact and early flowering, and they’re also more tolerant of the cold, so they will bloom year-round. If you’re wondering if there were any other colors of plants and flowers at the show, the answer is yes—too many to list—but the new Mandevilla stood out. What a gorgeous plant! Also, Sun Parasol Original Strawberry Sunparaosto is a wonderful new color, like a ripe strawberry. This new plant has bigger flowers and is dense, with vigorous growth and thick leaves. It’s a bushy plant and is more disease resistant and mite tolerant. There are two more Sun Parasols: Designer White with a sturdy bush habit so there’s no need for stakes or trellis, and Giant Dark Pink, which is a beautiful improvement on the original Giant Pink. S

ince 1985, Nassau Health Foods has been Amelia Island’s leader in healthful, natural foods. The Mustard Seed Café is an extension of their commitment to nutritious and organic food choices, providing breakfast and lunch using only the freshest local and organically grown products. My friend Sherry and I shop at Nassau Health Foods weekly, and on a recent trip, we decided to enjoy lunch. The Mustard Seed is always bustling with happy customers; they have a great vibe going on! Chef Devon Mitchell was at the

helm that day, and we were eager to try some of his offerings. We started out with a fruit smoothie, made with strawberries, mangos, and raspberries. I like that we could choose whatever we wanted in our smoothie, and the café offers lots of add-ins like wheat germ and bee pollen if you want to up its nutritional level. Ours was thick and fruity, not too sweet, and a good start for lunch. Next Devon brought us Clam Chowder, which was a special that day. The chowder was chock full of clams and lots

of herbs, including oregano, parsley, dill, thyme, tarragon, and more—a flavorful twist on a traditional chowder! Sherry ordered Turkey & Brie, a smoked turkey sandwich served on Ciabatta bread with mayonnaise and brie, along with mixed greens tossed in a peach vinaigrette. The sandwich was hot, the bread crusty and fresh, the brie rich and melty, and it was served with homemade cole slaw. Healthy and delicious! I ordered Brown Rice Stir Fry, a vegan and gluten-free dish that is my favorite menu offering. The stir fry is made with organic onions, cabbage, red bell peppers, carrots, spinach, and mushrooms seasoned with Asian vinaigrette, sesame oil, and Bragg’s Liquid Aminos. This is a beautiful and healthy dish, and if you want more than vegetables, you can order it with tofu, tempeh, chicken, mahi, or salmon. For dessert, we shared a gluten-free Key Lime Tart, and it was amazing. Sherry especially loved the lighter-style crust and the tartness of the creamy filling. The Mustard Seed has a new pastry chef named Ellie, who is baking lots of fresh and healthy sweets these days. My sweet tooth is very happy about that! Another thing I love about The Mustard Seed and Nassau Health Foods is the way the store is set up. I can always find exactly what I want. They have a huge selection of freshly made take-away items like salads, wraps, and sides, like Hummus and Southwest Quinoa. They also have an array of organic produce, free range chicken, turkey, and wild-caught fish. Their breakfast menu features Build-Your-Own Omelettes, Breakfast Burritos, and Sweetwater Organic Coffee. On Saturday mornings, try their Paleo Pancakes, Quiche of the Day, or a Breakfast Pita that’s loaded with shaved turkey and fried egg, and lots of cheese. island entertaining STEAMED ASPARAGUS WITH EASY BLENDER HOLLANDAISE SAUCE Ingredients 1 lb. asparagus, trimmed and pressed 10 tbsp. unsalted butter 3 egg yolks at room temperature 1 tbsp. lemon juice Salt to taste Preparation Make the sauce first: place the egg yolks and lemon juice into a blender and blend for about 30 seconds. Melt the butter in a small pot, and turn the blender back on, drizzling the hot butter into the egg mixture slowly, until it thickens. Season with salt and keep warm. Steam the asparagus until desired consistency. Place on a platter and drizzle the Hollandaise over the top. Makes 3 to 4 servings. SPAGHETTI WITH JULIENNED ASPARAGUS Ingredients 4 cloves garlic, finely minced 1 tsp. dried oregano 1/4 cup extra virgin olive oil 1 tbsp. butter 1 lb. asparagus, trimmed, prepped, and julienned 1/2 lb. cooked spaghetti Salt and pepper to taste Parmesan cheese Lemon juice

W

hen I was a young girl, my mother planted a patch of asparagus in our backyard. As soon as I saw those green shoots popping up from the earth, I knew that spring had arrived and I would soon be enjoying our favorite vegetable in all kinds of recipes. Our favorite family dish was steamed asparagus with hollandaise sauce, a rich and decadent recipe that Mother made only for Easter dinner, alongside a baked ham. Aspagarus is one of the most versatile vegetables, and I like to use it in soups, pasta dishes, quiche, and even hors d’oeuvres. The stalks should be properly trimmed and prepped for the best flavor and texture. The way to do

this is to remove an inch or two of the woody stalks, and then, using a vegetable peeler, peel off the skin from the bottom half of each asparagus spear. You want to expose the lighter green and white part of the stems under the peel. If your asparagus is freshly picked or particularly thin, you won’t need to do this. Another thing I like to do with asparagus is to julienne it horizontally as you would a green bean. It’s a laborintensive task, but it gives the asparagus a lovely texture, and it’s especially nice in a pasta dish made with long noodles. Asparagus may be steamed, sautéed, roasted, and even grilled, and no matter how you plan to prepare it, enjoy it in the spring, when it’s at its freshest best!

Preparation Sauté garlic and oregano in olive oil and butter until soft. Add asparagus and sauté gently until tender, then add spaghetti and toss until pasta is hot and well-coated. Add salt and pepper to taste, sprinkle Parmesan cheese over all, and serve in a large bowl with lemon wedges. Serves 4. ASPARAGUS SOUP Ingredients 1 onion, chopped 2 tbsp. butter 1 lb. asparagus, trimmed, prepped, and chopped 1 cup vegetable broth 1 cup half and half Salt and pepper to taste Preparation Sauté onion in butter until soft. Add vegetable broth and asparagus and simmer gently until asparagus is soft. Using an immersion blender, puree soup until smooth, then add half and half and warm gently. Add salt and pepper to taste. Make 3 to 4 servings.
