The Amelia Island Chamber Music Festival (AICMF) has been bringing extraordinary musical performances to our little island for fourteen years now, and this month they embark on their exciting Spring Series. We feel very fortunate to have enjoyed these many years of beautiful music from the acclaimed group of world-renowned musicians that have appeared here. Artistic Director Christopher Rex continues to keep each season fresh with remarkably innovative programming that always includes a few surprises every year. Throughout the history of the festival, we have enjoyed the concerts at Amelia Park, the family concerts at the Peck Center with our kids, and such world-renowned talents as Hilary Hahn, Lynn Harrell, and the Eroica Trio, who return for this year’s gala performance at The Ritz-Carlton, Amelia Island. The AICMF has evolved recently into two concert series—winter and spring—rather than the tightly-packed two-week festival from its early days. Last month, we enjoyed a performance on Amelia Island by acclaimed violinist Anton Nel, probably the most soughtafter violinist performing today. How far Amelia Island has come as a center for the best classical music since the festival was launched 14 years ago! We listen to a lot music at our house, from pop and classic rock to jazz and classical, but nothing compares to hearing live musical performances. It is one of our favorite things to do, and we try to bring the whole family whenever possible. The masterpieces of the chamber music canon are worth hearing for the incomparable musical enjoyment they provide, and we are grateful to the many sponsors and tireless volunteers who make the Amelia Island Chamber Music Festival possible each year. As we have experienced here over the past few years, new concepts and ideas are invigorating classical artists, and that dynamism has been happily reflected in the AICMF’s recent programs. We look forward with anticipation to this year’s offerings. In addition this month, Julie Simmons gets to know some members of the Fernandina Beach High School Class of 2015, a diverse and accomplished group of students who cherish the happy times shared in the last four years and the strong friendships built. Also, we have a “Fernandina Faces” feature on Jim and Bonnie Tippins. A former minister and missionary, Jim is senior chaplain at Baptist Medical Center Nassau, where he has helped establish some innovative spiritual wellness programs. We also have a delicious picnic menu for Memorial Day from Karen Miller, another “Great Home of Fernandina” from Dickie Anderson, a house that underwent a striking rejuvenation in this month’s “Island Home,” and much more. See you around the island!

Swinging into Spring

With this year’s exciting Spring Series, the Amelia Island Chamber Music Festival celebrates 14 years of outstanding music. BY KAREN MILLER

T

he 2015 Amelia Island Chamber Music Festival (AICMF) is in full swing this spring with another slate of outstanding musical talent. AICMF’s Winter Series wowed audiences with internationally renowned artists such as Joshua Bell, who is universally considered one of the greatest violin virtuosos on the world stage today. Violinist Rachel Barton Pine opened the AICMF’s season in November, and the magic has continued with Anne Aikiko Meyers, Terry Barber, the Kruger Brothers, and many more. The AICMF Spring Series kicked off on March 29 with a concert by distinguished pianist, Anton Nel, with Christopher Rex, cello. Nel, first prize winner of the 1987 Naumburg International Piano Competition at Carnegie Hall, has an active repertoire of more than one hundred works for piano and orchestra. Considered an acclaimed Beethoven interpreter, Nel dazzled concert-goers at the Prince of Peace Lutheran Church with Beethoven’s Cello Sonata, along with works by Mozart, Debussy, Chopin, and Granados. “In addition to renowned artists like Anne Akiko Meyers, the Eroica Trio, and the Dover Quartet, you will hear such emerging talent as Russian pianist Daria Rabotkina and the Beth Newdome Fellowship Artists, comprised of promising young artists from the nation’s foremost conservatories,” says Christopher Rex, AICMF’s artistic director and principal cellist with the Atlanta Symphony Orchestra. “We are able to present such an impressive array of musical genius because the Amelia Island Chamber Music Festival has become widely recognized as one of the nation’s preeminent cultural events.”

Festival sponsors and underwriters are responsible for making the AICMF what it is today. This year the Rayonier Advanced Materials Foundation and CBC Bank have joined with the likes of Florida Public Utilities, RockTenn and others, to bring some of the finest chamber music in the country to Amelia Island. Dr. Joseph Marasco, AICMF’s executive director states “Our festival has attained its status because of our thousands of concert-goers, our generous sponsors and donors, and our dedicated corps of hardworking volunteers. This broad base of support makes the Amelia Island Chamber Music Festival everyone’s festival.”

SPLENDOR IN THE BRASS: FREE CONCERT IN AMELIA PARK On May 9 at 2 p.m., the Jacksonville Symphony Orchestra Brass Quintet will perform a free concert in Amelia Park, featuring pops and light classic works. Performing artists include Julian Kaplan, trumpet, Brian Osbourne, trumpet, Debra Fialek, horn, Jeffrey Peterson, trombone, and James Jenkins, tuba, all members of the JSO. They will present a concert of traditional light classical favorites, with works by Dukas, a Baroque trumpet concerto, and some familiar favorites from television and the movies by composers John Williams and Henry Mancini. Guests are encouraged to bring their own lawn chairs, a picnic lunch, and beverages while enjoying the concert. GALLARDO PHOTO BY LEA

PRESENT MEETS PAST WITH DARIA RABOTKINA Russian-born pianist Daria Rabotkina won the 2007 Concert Artist Guild International Competition; she will be performing a concert called “Present Meets Past” with Christopher Rex, cello. Her career has included solo appearances with the San Francisco and New World Symphonies under the baton of Michael Tilson Thomas with the Kirov Orchestra in a four-concert North American tour. Ms. Rabotkina also has given recitals at the Kennedy Center, Weill Recital Hall at Carnegie Hall, Merkin Concert Hall in New York, Ravinia’s “Rising Stars” recital series, and the Moscow Tchaikovsky Conservancy. “Daria is a great young talent,” says Rex. “There’s a maturity in her playing, and she has a great rapport with the audience.” In addition to playing music by Bach, Beethoven, and Schumann, she is also performing an arrangement of Bizet’s Carmen, written by her father. The concert will be held at Prince of Peace Lutheran Church on May 17 at 5 p.m.

Phillip Pan, who has been concertmaster of the Jacksonville Symphony Orchestra’s Plugged In and Pops series and at various clubs around town, will demonstrate the amazing characteristics of both the normal acoustic violin and the Viper electric violin. Frequently featured with the JSO, Pan has also appeared as soloist with the Boston Pops, the Albany and Schenectady Symphonies, and the Bach Aria Festival in Stony Brook, New York. He performs in recital at the Friday Musicale, the Cummer Museum, and MOCA Jacksonville, as well as with Synergy and the St. Mark’s Bach Ensemble. “Phillip is so eclectic; he has so much talent,” says Rex. “You’ll be amazed at the sound of the Viper. The Beth Newdome Fellowship Artists are composed of outstanding young artists from the nation’s premier conservatories. Beth Newdome, a talented violinist and associate concert master at the Atlanta Symphony Orchestra with Rex, was a leader in getting the AICMF off the ground in its early years before succumbing to cancer. “Beth was always there for me,” says Rex. “She helped get this whole thing started. She was bubbly and enthusiastic about everything we were doing, and present at every festival until her passing.” This year’s artists will train with several Festival musicians; the program is part of AICMF’s ongoing educational outreach. This year’s Fellowship Artists include Jecoliah Wang, violin, Leah Latoracca, violin, Nina Bledsoe Ray, viola, Elaine Shin, cello, and Cecelia Kao, piano. This free concert will feature each artist’s individual talents performing both solos and duets. It will be held at Savannah Grand on May 19 at 1 p.m.

A TRIBUTE TO DR. HENRY NEAL COLEMAN, III

I

t is with deep sadness that the AICMF notes the passing of their long-time friend, passionate supporter and past president, Dr. Henry Neal Coleman, III. An Alabama native, Neal and his wife, Imogene, moved to Amelia Island in 2001, following his retirement from his Chicago cardiology practice. He immediately immersed himself in the fledgling AICMF, becoming one of their foremost supporters. An accomplished watercolor artist, Neal was elected to the board of directors in 208 and named president the same year. He served in this position for four years and under his leadership the Festival enjoyed steady growth into a nationally prominent event. “The Festival could not have attained its current stature and success without Neal’s enduring contributions,” says Rex. “We will miss his personal warmth, humor, and wise counsel.”

THE DOVER QUARTET: MUSIC OF THE AGES The Dover Quartet catapulted to international stardom following a stunning sweep of the 2013 Banff International String Quartet Competition. The ensemble since has become one of the most in-demand ensembles in the world, and they will be an exciting addition to this year’s Spring Series. The New Yorker recently dubbed them the “young American string quartet of the moment,” having pulled away from their peers with their exceptional interpretive power. Members of the Dover Quartet include Joel Link, violin, Bryan Lee, violin, Milena Pajaro-van de Stadt, viola, and Camden Shaw, cello. They will be performing with James Dunham, viola, and Christopher Rex, cello. “These artists are the most exciting of today’s quartets,” say Rex. “Each member of the Dover Quartet has a completely different personality, and they work so well together. The concert also features James Dunham, who has been with us since the very first season of the AICMF. He is responsible for bringing many musicians to our festival.” The group will be performing Beethoven’s Op. 18, No. 5, Tchaikovsky’s Sextet Souvenir of Florence and Ullmann’s Quartet No. 3. Ullmann’s work, a melodrama based on Rilke’s Cornet poem, was written while he was he was interned at Theresienstadt concentration camp during World War II. This concert will be held at the Historic Nassau County Courthouse at 7:30 p.m.

Ms. Pridgen has also performed at Alice Tully Hall, Carnegie Hall’s Weill Recital Hall, and the Kosciuszko Foundation, and in recitals in Washington D.C., Aruba, Curaçao, and throughout the Southeast. For seven consecutive seasons, she has been a featured performer at the Amelia Island Chamber Music Festival. “Elizabeth has been with us since the beginning of the festival,” says Rex. “She began as one of our fellowship artists. It’s been a pleasure to watch her mature into the talented artist she has become.” The Fellowship Artists and Pridgen will be performing the music of Brahams, Dvorak, Schubert, and Franck. The concert will be held at St. Peter’s Episcopal Church at 7:30 p.m.

WILD AMELIA FESTIVAL OFFERS ECO NATURE TOURS The Wild Amelia Festival began when a group of naturalists, business owners, and local residents joined with city, state, and agency employees to showcase Amelia Island’s bioregion. As a group of nature-minded citizens, the festival coordinators educate residents and visitors about the local environment and encourage stewardship of the area’s natural resources with events and programs, which entertain and promote a conservation ethic. This year’s festival will be held May 15 to May 17, and it will include two dozen Eco Nature Tours. These tours are very diverse, bringing participants face-to-face with the “wild” side of the area. By definition, ecotourism is “responsible travel to natural areas that conserves the environment and improves the wellbeing of local people”. It is all about connecting conservation, communities, and sustainable travel. The Eco Nature Tours will educate participants about the local environment and the animals who share our island paradise. This year’s tours include Segway explorations, kayaking tours, beach and barrier island walks, sandbar-hopping, sailing tours, sunsets on the Greenway, a nature cruise fundraiser, birding trips, bike rides, yoga and SUP yoga, and a special photo trip to the Jacksonville Zoo. The annual “Let Freedom Ring” concert by the Jacksonville Symphony Orchestra (JSO) kicks off Memorial Day weekend on Amelia Island on May 21 with a program of orchestral excitement selected by guest conductor Sameer Patel, including Sousa’s “Stars and Stripes Forever,” Gershwin’s “Strike Up the Band,” and Amelia Island’s favorite, “Armed Forces Salute.” Also included are Tchaikovsky’s “1812 Overture,” music from “Victory at Sea,” and much more. Patel first conducted the JSO during the League of American Orchestras National Conductor Preview in 2013. Robert Quinby, long-time board member of ARIAS (Amelia Residents In Action for the Symphony) will open the program with “The Star-Spangled Banner.” The concert will be held at First Baptist Church on South Eighth Street on Thursday, May 21 at 7 p.m. Tickets are $20 for adults and free for children 12 and under, an affordable price for a concert by an orchestra of the JSO’s stature. “A BRIEF HISTORY OF FOOD” DEBUTS Local writer Karen Miller has teamed up with Ray Hollister, host and executive producer of Deemable Tech, to produce a new blog and podcast called A Brief History of Food. Miller met Hollister when she sent a tech question to the show, which airs on WJCT every Thursday morning. Miller’s idea for a podcast featuring a short history of classic American dishes interested Hollister, and after several meetings, they decided to launch the project together. The podcast is a 4-minute broadcast that discusses a different food each week, using history and memoir to tell the story. “Podcasting is a modern form of broadcasting over the internet, and it’s becoming the new face of radio journalism,” says Miller. “It allows listeners to access episodes of their favorite shows whenever they want.” Miller is senior writer for Amelia Islander Magazine, and a monthly contributor to Jacksonville Magazine. She also works as a cookbook editor for The Art of Dining in Memphis, Tennessee. Hollister graduated from Douglas Anderson School of the Arts as a vocal arts major, and was an internet services technology major at Florida State College at Jacksonville. oraine King’s interest in art began as a youngster, growing up in a family with parents who enjoyed artrelated careers. Her journey began as a teacher and art director after graduating as an art education major. Loraine has a broad knowledge of many mediums and techniques. As an art director for the Shenendahowa School District in Clifton Park, New York, she became an advocate for arts in the community. Upon moving to Amelia Island with her husband, Tom, Loraine started the Plantation Artists’ Guild and Gallery with help from the Cooper family. Loraine’s art moves easily from American primitive to traditional realism, impressionism, and abstract. Her mediums include watercolor, acrylic, pastels, pen and ink, and oils. Her American primitives have sold through the Folk Art Museum in New York City. She has been recognized by the Schenectady Museum and featured in many art publications. Her art can be found in collections throughout the United States and abroad. Loraine has been in tune with the nature and essence of the communities she’s lived in, and

her techniques, methods, and form create interest in her pieces. The one constant in Loraine’s career has been her house portrait work. Working from photographs, she creates paintings in pen and ink, watercolor, or acrylic, in contemporary or period style. Loraine paints on environmentallyfriendly clay board, which is easily framed. Clients commission house portraits for various reasons. “Perhaps you have just purchased your first home, or you have finally completed your dream home,” says Loraine. “Perhaps it’s your family home or your grandparents’ home that brings a flood of memories. A house portrait is a unique way to celebrate the heart and soul of your life, or those you care about. hen Bill Scheff of Great Windows decided to retire from the window treatment business, the first person he approached about purchasing the business was Leo Mesquita. Leo had worked in Maryland as Bill’s manufacturer’s representative for his successful window treatment business. t’s true that it takes a village to raise a child, and there is no better village than Amelia Island,” smiles Rita Kane, mother of not one child, but three, who will graduate from Fernandina Beach High School (FBHS) this spring. The Kane family moved to the island just before kindergarten and was overwhelmed with friendship and kindness, and it’s just these sentiments that seniors say define Class of 2015! There’s no better example of this than Emma Venerdi, a cheerleader, who will miss gathering and laughing with friends at “senior wall” each morning. A special detail about this typical teen is that she has Down syndrome. “Emma participated in cheerleading, student government, Fellowship of Christian Athletes, Nassau Leadership, and Link Crew, and the students of FBHS treated her as ‘one of the group.’ She loved Spirit Week and her peers knew it, including her when it would have been easy to overlook her. These are the memories we cherish,” explains her mom, Lori. Rita’s daughter, Mallory, said FBHS is special to her because that is where she met her buddy, Emma, through the organization Best Buddies, which connects students with disabilities with their peers for friendship. “We have formed a tight bond that will last a lifetime,” she shares. “I am going to miss the vibe and closeness that everyone shares here when I go to Auburn University to study nursing sciences this fall.” One of Mallory’s favorite memories was when she and her sister, Mackenzie, escorted their brother, Matt, on the homecoming court. The trio is the first set of triplets to navigate through Nassau County schools all the way to graduation! Mackenzie and Matt agree the class is like a big family, where everyone looks out for one another. Mackenzie will attend Florida Atlantic University to study neuroscience, while Matt continued on page 41.

W

e love our island hospital for its convenience, welltrained doctors and nurses, and active auxiliary. Behind the scenes, an army of support staff toils efficiently and without fanfare, like Jim Tippins, Senior Chaplain for Baptist Medical Center Nassau. Son of a career Army family, Jim lived in many different places growing up, including Taiwan as a child. The family retired to Brunswick, Georgia, bringing Jim to the southeastern United States, where he met his wife, Bonnie. Bonnie is a Georgia native from a large family in Waycross. The couple was married in 1971 and continued their educations. Jim served as minister in many different communities and volunteered as a chaplain in hospital emergency rooms. Mission work took them to England, Taiwan, and Ukraine. While serving as part-time on-call chaplain for Greenville Memorial Hospital, he found his calling. In 2006, Jim followed his dream and accepted a residency position in the Clinical Pastoral Education program offered through Baptist Health of Northeast Florida in Jacksonville. His goal was to become a Board Certified Chaplain and work in a hospital somewhere in the Southeast. It was meant to be. Bonnie had family in Fernandina Beach, and when Jim was accepted into the Jacksonville program, he was assigned to Baptist Nassau. Little did the Tippins know it would evolve into a full-time job. A two-year commitment turned into eight years. He is now one of five senior chaplains in the system. Jim is a familiar face to anyone who has been in our community hospital as a visitor or patient. He is often seen in the emergency room, comforting patients and providing information. He is supported by a volunteer staff of nine. The

volunteers visit patients during the day and cover emergency calls evenings and weekends. He is quick to tell you that an important part of his job is to be there for staff who deal with intense pressure on a daily basis. Jim is recognized for his skills in developing and coordinating important initiatives both at Baptist Nassau and the Baptist Hospital System. One he is very proud of is the Patient Community Advocacy Committee, which has become a model for other hospitals. He chairs the Caring Council, a Baptist Health system-wide team that encourages staff in spiritual, compassionate wellness. Like any good pastor, Jim officiates at over 20 weddings a year and is guest minister at Amelia Plantation Chapel. Bonnie has her own impact on people. In 1954, just a few months before the polio vaccine was approved, Bonnie contracted the disease. She has lived her whole life facing obstacles and barriers with courage and determination. Bonnie has written articles and speaks to civic groups about the importance of immunizations and disease prevention. The couple has two children. Daughter Emilie is director of development for CHASI Community Health Action of Staten Island. Their son, Carter, his wife, Keri, and grandson, Judah, live in Greenville, where Carter is a professional photographer. Jim kayaks, rides his bike, is a novice sculptor, and loves to be outside working with plants and landscaping. The couple loves everything about the beach: shark’s teeth, shells, sun and sand. “Being here on Amelia Island, working at Baptist Nassau, nurturing deep friendships, finding this moment in our marriage and our lives, are all gifts of God for which we are humbled and grateful,” says Jim.

The connectedness of the Pirates among athletes is reiterated student after student. “My most cherished memories of high school are the long nights spent with my teammates at soccer games and track meets,” says Michael Combs, who i’s headed to Rhodes College in Memphis, Tennessee. He will study political science and play soccer and ultimate frisbee for the Rhodes Lynx. “Some of the best times came from simple bus rides and fast food stops on the tedious journey home.” The Class of 2015 boasts amazing athletic talent, as evidenced by the number of scholar-athletes who will play baseball, basketball, cheerleading, golf, soccer, and volleyball, confirms FBHS Guidance Counselor Sarah Coombs. “The Class of 2015 is very diverse, with many all-around outstanding students,” boasts Sarah. “We have a National Merit Finalist headed to Yale, and a National Merit Commended student graduating from high school with an Associate Degree from Florida State College Jacksonville. Students will be attending colleges throughout the country, from the University of San Francisco to the University of Virginia.” The seniors are quick to recognize that their academic success was impossible without the fine faculty at FBHS. “This school is special in its dedication to the intellectual growth and Michael and Megan Combs development of its students,” says senior Megan Combs, twin sister of Michael. “I’ve had so many wonderful teachers who inspired me to learn and participate in the school community.” Megan will study Art History and Management at the University of San Francisco in the heart of the city. “The teachers work tirelessly for their students, and the Class of 2015 is so much better for it,” confirms Katie Combs, Megan and Michael’s mom. And so they are, a class filled with aspiring auto mechanics, air traffic controllers, artists, engineers, and students enlisting in the United States Air Force, Army, Coast Guard, Navy, Marines, and the Florida Air National Guard. All of this year’s graduating Pirates agree that it’s been a great four years, and they feel well prepared for life beyond FBHS. T

his large house is actually two houses in one. The original house was modest and faced Date Street. It was built prior to the Civil War in the late 1850’s by the Hedges family. It has been described as Carpenter Gothic. It went through several owners, including St. Peter’s Episcopal Church, prior to its purchase by Dr. William T. Waas. The doctor and his wife added many typical Victorian details when they enlarged the house. In the renovation, the original house was engulfed by a newer structure, which included a circular tower and its distinctive spacious and inviting porches all around. A Gothic-inspired palladium window was added, capped by an arched window. The house nearly doubled in size and its new orientation opened to Seventh Street rather than Date Street. The Waas family was very popular in the community, and Dr. Waas wanted to build a house that would allow for frequent entertaining. Like others on fashionable Seventh Street, they competed to make their house more spectacular than their neighbors. Christmas was a special holiday for Dr. Waas and his family. He loved to dress as Santa Claus, and he would pick

up his guests in a wagon drawn by horses. He brought them to his grand home, which would be all lit up with holiday candles. Dr. Waas was born and raised in Fernandina; the son of John and Regina Waas. After studying at the East Florida Seminary in Gainesville, Dr. Waas graduated from the Tulane Medical School and returned to Fernandina, where he partnered with Dr. J. D. Palmer. When Palmer died at a relatively young age, Waas bought the Palmer Pharmacy, which eventually became the Waas Pharmacy. A Waas Pharmacy remains on Amelia Island. In that era, it was not unusual for a doctor to operate a medical practice from home. The extensive expansion of the original house allowed for Dr. Waas to be close to family and still operate his busy medical practice. Like so many gentlemen of his time, Waas held positions with the City of Fernandina and Nassau County. He was Mayor of Fernandina from 1899 until 1908. There are many amusing stories about Dr. Waas. For instance, Dr. Waas owned one of only two automobiles on the entire island, and he managed to get into an accident with the owner of the other car, Flossie Borden.

may masterpieces For a magnificent May garden full of colorful blooms, you can’t go wrong with “Yesterday, Today, and Tomorrow” any day of the week. BY BETTY MORRELL

W

e didn’t have many April showers last month, but we sure do have May flowers! I have mentioned the beautiful Brunfelsia floribunda, “Yesterday, Today, and Tomorrow,” but I feel it’s worth mentioning again. The common name, YTT, comes from the quick changes of color by the blossoms, transforming from purple (yesterday), to lavender (today), and then white (tomorrow). When this beautiful bush is in full bloom, you can’t help but admire it. YTT flowers in clusters, with each flower flaring to two inches wide, profusely displayed all over the plant. This plant has oval, dark green leaves, three to four inches long, with an underside of pale green. In partial shade, this plant can grow to ten feet. I keep mine at around four feet by pruning it; they like to spread. The compact version of the Florabunda is Eximia, a more widely planted variety. The flowers are a bit smaller, but more generously produced. Both are well worth planting in your garden. I have mentioned before that my favorite flower is the Gardenia. It is

a beautiful flower with a heavenly scent. A new Gardenia bush has been introduced in the 2015 Southern Living plant collection. Sensation Gardenia (Gardenia jasminoides) is a compact grower, producing tiny, fragrant, single white blooms, and it is an excellent re-bloomer. The blossoms cover the dark evergreen foliage from spring to fall. The heavenly scented white blooms begin in late spring, reblooming from the summer through the fall. Use this wonderful gardenia as an accent, in mass plantings, or in a container. Grow in full sun to part shade in well drained garden soil. Sensation grows to almost four feet in height and four feet in width. This plant is hardy

to 0 degrees. Prune after all flowering stops, usually the end of fall. You’ll love the fragrance! Colocasias are wonderful plants. They have no flowers, but their foliage is stunning and will add “pop” to any garden. Southern Living has come out with a new Colocasia called “Puckered Up.” It is new and designated PPAF, or “Plant Patent Applied For.” The deeply puckered, dark chocolate leaves are supported by strong, near-black stems on a compact plant. This evergreen shrub is used as an accent plant or can be container-planted. It tolerates most native soil, but likes water. Feed this plant throughout the growing season. It grows three feet high and three feet wide. Prune by removing dead leaves during the growing season. It thrives in full sun to part-shade. “M

y friend’s sister lives in Amelia,” explains Nancy Stolpinski, resting an arm upon the granite countertop in her newly redesigned kitchen. “She suggested Mike and I look here when choosing where to retire.” As many of us know, Amelia Island is one of the few places on the globe where a friendly visit can turn into a change of plans, all within a few hours! “We looked for a condo with a small yard for a year and a half,” shares Nancy. Nancy and Mike have homes in both Massachusetts and New Hampshire, one of which they renovated, and they love being involved in projects. “Nancy and Mike are to be commended,” says Robyn Branch of Robyn Branch Interiors. “They understand the value of Amelia Island and its natural beauty, and they put in the effort to make something beautiful, and to use as many local people as possible in doing it.” Many folks are frustrated with each other at the end of construction projects, but not this group. Donna, Nancy, Robyn and the guys are all cooking together at someone’s house! And they all love it at Mike and Nancy’s, where they can admire the results of their collaboration. “I am a little too ‘out there’ sometimes,” laughs Nancy, “and Donna is on the conservative side. We made a perfect team because Robyn would take both our ideas and say, ‘Here’s what we need to do!’ She always had the perfect solution.” A favorite feature of the house is the redesigned ceiling beams. “Originally, they were different materials and colors, including raw wood, and it was amazing how John Dodd worked with Donna on the design to remove a wall and create columns to echo the beams. Then Ace Painting realized the blueprint by matching the multiple materials with paint. Faux work that took four times to perfect!” As if the inside isn’t fantastic

enough, the beams are mirrored on the lanai—John Dodd’s idea—which works beautifully to create symmetry between inside and out. Nancy and Robyn wanted to make the renewed space striking, yet comfortable and welcoming. The tile, marble, and granite throughout the space is exquisite and unique. Mooney’s Custom Woodworks developed the kitchen design, including curvature on the cabinetry. However, my favorite space in the home is the cozy sitting area between the kitchen, dining, and lanai access, where two oversized swivel rockers are nestled alongside the bar and a fireplace. “This is where we always hang out,” Nancy says. A look to the right brings into view a glass of

wine and the conviviality of entertaining, the front view of the living room reminds us that we’re in a beach town where we can enjoy a fire on a cool night, or swivel left and see the moon beaming on the marsh, a view one never tires of. “Last night after a storm, Mike yelled for me to come,” Nancy beams. “The clouds cleared, and the sun hit the marsh grass, illuminating it with bright yellow color, like a wheat field. Stunning. It lasted all of five minutes.” Nancy and Mike want to grab those sublime moments whenever they have the chance, and they’re confident they’ll get their fair share amidst the breathtaking natural beauty outside their lovely Amelia Island home.

España RESTAURANT & TAPAS From traditional Spanish paellas and the freshest fish and shellfish to tapas, steaks, and more, there’s always something to love at España. BY KAREN MILLER • PHOTO BY WILLIAM RASER

E

spaña is one of my favorite go-to restaurants, whether I want to treat myself to a midweek tapa or I’m entertaining guests. On a recent evening, my friend, Cliff, came for a visit and we took a tour through España’s menu. With suggestions from our server, Cory, we chose some very special items for our dinner. We began with a glass of Martín Códax Rías Baixas Albariño, a delicate and medium-bodied white with a crisp, dry finish. Cory brought us a basket of España’s homemade bread and their piquant creamy herb dipping sauce laced with extra virgin olive oil. He suggested we try España’s special empanadas, crispy dough filled with goat cheese, tender beef short ribs, corn onion relish, and served with a curry aioli dipping sauce. I also ordered Champinones a la España, char-grilled Portobello mushrooms topped with manchego cheese, and Serrano ham in a light brown sauce. The empanadas were divine. The dough was so crispy and light, and I loved how the goat cheese melted with the beef, a nice contrast to the sweet corn and onion relish. The dipping sauce was great, too, a little spicy with a hint of curry and garlic. The Portobellos are one of my favorite España tapas. They taste like grilled tenderloin, and with the sauce, cheese, and ham, this dish could be a meal in itself. On the lighter side, Cliff and I decided to order the Andalusian Salad, which consists of chopped Romaine hearts, tomatoes, onions, and olives, dressed in vinaigrette and topped with Serrano and manchego. The shining star in this salad is the vinaigrette, which has a bit of sweetness and pairs so well with the saltiness of the ham and cheese. Cory suggested we try España’s Red Snapper Seville, a special that night. This dish has lots of complex flavors and textures, which brought out the distinctive sweet, nutty flavor of the fish. The snapper was dressed with a citrusy sauce,

roasted peppers, sun-dried tomatoes, capers, artichokes, and saffron. This dish is referred to as “tesoro,” translated as a seafood “treasure,” and a different version of tesoro is offered every night at España. It was served with saffron rice, and a vegetable medley of cabbage, zucchini, summer squash, snow peas, and extra virgin olive oil, with an enormous seared scallop and jumbo shrimp on top. Divine! The snapper can stand up to sauces and seasonings, without its flavor being masked, and the fish was perfectly cooked, as was the scallop and shrimp. Cliff had never tasted Tres Leches Cake, so we ordered that for dessert. This light and fluffy cake is made with homemade sponge cake soaked in three types of milk, topped with creamy icing and drizzled with sea salt caramel glaze. It’s the moistest, sweetest treat you could enjoy after a savory Spanish meal! Owners Roberto and Marina Pestana have over 20 years restaurant experience in both culinary arts and management. Their paellas are prepared in traditional imported paella pans from Spain, and they offer only the freshest fish and shellfish available. island entertaining Southern-Style Fried Chicken Ingredients 8 cups cold water 2 tbsp. salt 8 cups buttermilk Two small chickens, cut into 8 pieces each 6 cups flour 2 tbsp. black pepper 2 tsp. cayenne pepper 2 tbsp. baking powder Vegetable shortening, like Crisco Preparation In the afternoon the day before you plan to cook the chicken, brine chicken pieces in 8 cups cold water combined with the salt. Store in refrigerator for two hours. Drain the chicken, pat dry, and then soak in buttermilk in the refrigerator overnight. In a large Ziploc bag, combine flour with black pepper, cayenne pepper, and baking powder. Shake well. Remove chicken from buttermilk and pat dry. Shake the chicken pieces in the Ziploc bag, a few pieces at a time. Shake off excess flour.

F

orty years ago, every housewife in America knew how to cook fried chicken, but today, that’s not necessarily true. Nonetheless, homemade fried chicken remains one of the most delectable and welcome dishes you can serve to your family and friends. So this Memorial Day weekend, instead of standing over a hot grill in the backyard, I’m making a traditional fried chicken picnic lunch and inviting some friends to join me at the beach. That way, I don’t have to clean my house (or my grill!) and I know my friends will love it. Fried chicken made from scratch is delicious, whether it’s served hot, cold, or at room temperature right out of a picnic basket. And it’s really quite easy to make, although it is a little messy. Traditionally, you should cook your fried chicken in a

cast iron skillet, but I use an old fashioned electric skillet and plug it in on my screened- in porch. That way, my kitchen doesn’t smell like fried chicken for a week. For my picnic, I’ll cook the chicken the day before, along with my side dishes, which include mustard potato salad, Boston baked beans, and cold-brewed iced tea. Then, I’ll pack it all in a picnic basket and head for the beach! Be sure to plan ahead when you make your fried chicken. I like to brine the chicken pieces for several hours, and then let them soak in buttermilk overnight. This way, your fried chicken will be super tender and juicy, even if you serve it cold. And remember: no matter how much fried chicken you make, it will never be enough, so you may want to make a double batch!

Melt shortening in a deep skillet, adding enough so that you have a shallow pool of oil, about 1 inch deep or less. (Don’t add too much because the oil will bubble up when you add the chicken.) Bring the oil to 375 degrees, and then begin cooking the chicken pieces, a few at a time, turning occasionally, until the internal temperature of the chicken is 165 degrees. Drain chicken on a baking rack over brown paper bags until all excess grease has dripped off. Serve hot or cold. Serves 8. Mustard Potato Salad Ingredients 1 1/2 pounds cooked, russet potatoes, peeled and cubed 5 hard cooked eggs, peeled and mashed 3/4 cup celery, finely diced 1/2 cup onion, finely diced 1/2 cup dill pickle relish 2 tbsp. or more yellow mustard 1/2 to 3/4 cup mayonnaise, or more Salt and pepper to taste Preparation Combine all ingredients in a bowl and toss lightly. Pam, a heart attack survivor

Listen to your heart. Heart attack symptoms in women are not always obvious. For Pam, a nurse at Baptist Medical Center Nassau, it began as a lump in her throat. She thought it was just stress, but after a few days, she couldn’t ignore it any longer and made an appointment with her cardiologist, George Le-Bert, DO, Baptist Heart Specialists. While undergoing testing, Pam went into cardiac arrest and had to be resuscitated nine times. Rapid transport between Nassau and Baptist Jacksonville enabled her to receive a life-saving stent to open her artery. Fortunately, Pam’s back to doing what she loves – caring for other patients. Her advice: “It’s important to pay attention to the warning signs of a heart attack, which can be different for women,” she said. “Listen to your heart.”
