One of the biggest events in the entire Southeast, the Isle of Eight Flags Shrimp Festival returns to Amelia Island once again this spring, as always on the first weekend of May. What began as the traditional blessing of the shrimp boats gradually evolved into a weekend celebration of shrimp that attracts 100,000 people to Amelia Island each year.

The Shrimp Festival is a high point on the Amelia Island calendar and a great event for the whole community. Fernandina Beach was the birthplace of the modern shrimping industry and shrimping was long a major local industry, and the iconic shrimp is still beloved by all.

The Shrimp Festival is truly a multi-faceted event with something for everyone. In addition to its celebration of shrimp, it is a highly regarded art show complemented by a full weekend of events including the Pirate Parade on Thursday evening to kick things off, Friday’s Downtown Merchants’ Sidewalk Sale, a fireworks display over the harbor, live entertainment, the annual Pirate Invasion, the Shrimp Festival Run, the ever-popular Kids’ Zone, and lots more. The festival is fun for residents and visitors alike, and a great place to eat some delicious local shrimp. Everyone has their favorite food booth they return to year after year—whether it’s for fried shrimp, boiled shrimp, shrimp pie, or funnel cake – and many local churches and service organizations use the food booths each year to raise money to fund their invaluable charitable work. We extend our heartfelt thanks to all the volunteers who make the Shrimp Festival such a great success each year. If you are a visitor to Amelia Island and you’ve never experienced Shrimp Festival, mark your calendar for next year!

Here at the Islander, we celebrate the Shrimp Festival each year with our Shrimp Festival recipe issue, in which we share some tantalizing shrimp recipes from our favorite local restaurants. We are very grateful that our outstanding local chefs generously share with us their varied and ingenious ways to prepare and serve shrimp. We love to try these recipes at home, and when we’re not in the mood to cook, it’s good to know we can find these delicious dishes and many others at our fine Amelia Island restaurants.

Shrimp Linguini Cherry tomatoes Mozzarella pearls Fresh basil Parmesan cheese

Combine first seven ingredients in a sautĂŠ pan to make the sauce. Boil and peel the shrimp and cook the linguini according to instructions. Toss the shrimp and sauce with the linguini, cherry tomatoes, mozzarella pearls, and basil, then garnish with Parmesan cheese.

Shrimp Tempura Roll 2 pieces tempura shrimp 4 oz. crab mixed with mayo 1 whole avocado 1/2 diced mango 1/4 diced cucumber

2 strawberries 1 sheet seaweed nori 1 oz. red tobiko (fish egg) 4 oz. sushi rice 1 oz. homemade eel sauce

Spread rice on the seaweed nori to make the foundation. Place tempura shrimp and crab mix inside the roll. Top with thinly sliced avocado, and roll up. Cut roll into 8 even pieces. On each piece, layer diced mango, strawberry, cucumber, and red tobiko. Drizzle with eel sauce.

DOO WOP’S BEST 50’S DINER Aaron’s Citrus Shrimp Toast with Pineapple Slaw

Grilled Shrimp Toast 20 local shrimp, peeled and deveined, 10/15 size 10 oz. lemon juice 6 oz. lime juice 3 tbsp. minced garlic

1 tbsp. parsley 2 sticks salted butter, melted Salt and pepper, to taste 4 slices marble rye bread

In small bowl, combine melted butter, lemon juice, lime juice, parsley, and garlic. Pour 1/4 of sauce in small separate bowl to use to brush onto bread. Dip each shrimp into the sauce mixture, ensuring full coverage. Place shrimp directly onto heated grill and cook approximately 2 minutes per side, then remove from heat immediately. While grilling, add salt and pepper to taste and baste each shrimp once per side with remaining mixture. Generously brush both sides of the marble rye with sauce mixture, and toast on the grill until just slightly crisp on each side, approx. 3 minutes per side. Remove from heat. Place one piece of toast on the plate and top with 5 grilled shrimp. Serve warm with lemon wedge and side of pineapple slaw.

Pineapple Slaw 8 oz. coarse cut coleslaw mix with red and green cabbage 3/4 cup pineapple chunks, fresh or canned, reserve juice 1/4 cup pineapple juice

1/2 cup light mayo 2 tbsp. apple cider vinegar 1/2 tsp. celery salt 2 tsp. cilantro Salt and pepper, to taste

In medium bowl, stir together pineapple juice, mayo, vinegar, celery salt, cilantro, salt, and pepper until well combined. In separate large bowl, stir pineapple chunks into coleslaw mix. Pour sauce over the coleslaw mixture and toss to coat evenly. Cover and refrigerate for at least 1 hour prior to serving. Serve chilled.

ESPAÑA RESTAURANT AND TAPAS Gambas Romesco

4 packages rapini 12 Fernandina large shrimp (16/20), peeled and deveined, save heads and skins 8 roma tomatoes 3 roasted pequillo peppers (canned) or a fresh roasted and peeled red bell pepper 1 tbsp. minced garlic 3 garlic cloves 1 tbsp. crushed cherry peppers 2 whole almonds 2 whole filberts (hazelnuts)

3 tbsp. brandy 1 orange pepper, 1 yellow pepper, 1 red pepper, cut in strips 1/2 – 3/4 cup olive oil Slice of day old country bread drizzled with olive oil 2 tbsp. sherry vinegar 1/4 tsp. smoked paprika 1/4 cup diced carrot 1/4 cup diced celery 1/2 cup diced onion Salt and pepper

For romesco sauce In a bowl, cut 3 ripe roma tomatoes in half lengthwise and season with salt, pepper, 1 tsp. chopped garlic, and crushed cherry peppers, then toss until well coated. Place on tray cut side up and roast at 400 degrees for 30 minutes. In the last 7 minutes of roasting, add garlic cloves, almonds, filberts, and slice of country bread. Remove from oven, let cool, and peel tomato skins. Be sure to collect all the juices while you peel. Place peeled tomatoes (save 4 halves for garnish), pequillo peppers, roasted garlic, roasted nuts, sherry vinegar, paprika, and toasted bread in a blender and drizzle olive oil until bright orange and the sauce is smooth. Add salt, pepper, and more crushed cherry peppers to taste.

For shrimp stock Sauté shrimp heads and skins in a little pot for 2 minutes, then flambé with brandy. Add diced carrots, onions, and celery and sauté for 3 minutes before adding 3 cups of water. Let simmer for 30 minutes.

Preparation and plating Blanch rapini, then shock in ice water bath to retain the bright color.

Season the shrimp with salt, pepper, and sauté in a pan with 1 tbsp. olive oil and 1/4 tsp. chopped garlic, adding strips of peppers. Add 2 tbsp. shrimp stock.

In another pan, sauté 1/4 of the chopped garlic, the rest of roasted tomatoes, and rapini until they are warmed through. Assemble the plate by adding a generous portion of heated romesco sauce as the base. Use a round mold for the rapini and tomatoes. Top with the shrimp. Add the pepper strips as garnish.

Peel and de-vein shrimp. Place shrimp on skewers, if grilling. Drizzle a little extra virgin olive oil on the shrimp. Sprinkle or roll the shrimp in the spice mixture. Place on HOT grill or in a HOT black iron skillet with a mixture of butter and olive oil. Do not overcook. Serve over rice with coleslaw and hushpuppies.

16 oz. fresh, peeled and deveined shrimp 8 oz. fresh crab meat 1/4 cup all purpose flour 1/3 cup cooking oil 3/4 cup chopped onion 3/4 cup chopped red sweet pepper 3/4 cup chopped green sweet onion 6 cloves garlic, minced

1/2 tsp. salt 1/2 tsp. red pepper 1/2 tsp. black pepper 4 1/2 cups chicken broth, heated 16 oz. can diced tomatoes 2 cups sliced okra 3 bay leaves 1 pint shucked oysters, drained 5 cups hot cooked rice

For the roux: in a large, heavy bottom sauce pan, combine flour and oil until smooth. Cook over medium heat for about 6 to 7 minutes, stirring constantly, being careful not to let it burn. Reduce heat and continue to cook until roux is light reddish brown. Stir in onions, peppers, garlic, salt, black pepper, and red pepper. Cook over medium heat for 3 to 5 minutes until vegetables are crisptender, stirring often. Gradually stir in hot chicken broth, then stir in undrained tomatoes, okra, and bay leaves. Bring to a boil. Reduce heat and simmer for 20-30 minutes. Stir in shrimp, crabmeat, and oysters. Simmer for about 5 to 8 minutes until shrimp are done and oysters curl around the edges. Remove bay leaves, and serve gumbo over hot rice. Makes 6 to 8 servings.

Cut green plantain into 2” pieces, then smash each piece and fry, then refry it, making a traditional tostone.

Make pineapple salsa with finally chopped pineapple, red pepper, red onion, cilantro, lime juice, and a shot of honey.

Use your favorite homemade or store-bought pesto.

Poach shrimp in shrimp stock made with their own shells.

To assemble the dish, lay down 3 smears of the pesto on the plate, then top with 3 avocado quarters cup side up, filling the cups with salsa.

In front of each avocado, place the tostone topped with 2 shrimp with their tails interlocked. Enjoy!

BURLINGAME RESTAURANT Seafood Cioppino

Shrimp Mussels Clams 1.5 lbs. onion 1/2 lb. carrot 1/2 lb. celery 4 oz. brandy

8 oz. white wine 1 lb. shrimp shells 6 oz. tomato paste 1 lemon 1 1/2 tsp. cayenne Oil Salt and pepper

Sauté the vegetables with oil and season with salt and pepper.

Once the vegetables are browned, add the tomato paste and cook for five minutes on medium-low heat. Deglaze with the brandy and wine. Add the shrimp shells, lemon, and 1 gallon of water. Bring to a simmer and reduce stock by half. Strain the stock through a fine mesh strainer. Add 6 oz. of the shrimp stock to a pan and reheat.

Add to the pan clams, mussels, and shrimp, and reduce slightly.

Finish with a tablespoon of butter.

3 oz, fresh greens, rinsed and dried 1 English muffin, toasted 4 oz. sliced fresh tomatoes 1 oz. fresh basil, finely chopped 2 oz. onion, finely chopped 1 garlic clove, minced

Place fresh greens on plate, top with toasted English muffin, and let it stand. It is best to heat your pan with olive oil on medium high heat. Add onion to get it browning, then add sliced tomato to brown it as well. Add garlic, salt, and pepper to taste, set it off the heat or on low to stew a bit. Bring hollandaise up to temperature gently and let it rest on low heat. Grill shrimp, add salt and pepper to taste.

Poach the eggs or cook them to your taste.

The magic is in the assembly. Spoon the stewed tomato mixture on top of the English muffin, then place the eggs. Spoon hollandaise over the eggs, the shrimp on top of that, and garnish with fresh basil and diced tomato. Place a wedge of citrus next to the dish and squeeze it over the top just before you eat it. This dish is light, filling, and full of bright flavors. Serves one. Modify as needed for larger parties.

For dressing 1/4 cup white balsamic vinegar (or substitute white vinegar) 1 tbsp. Dijon vinegar 1/8 cup olive oil 1/8 cup honey Salt and pepper to taste Cocktail sauce Sriracha mayo (1/4 cup mayo mixed with 2 tbsp. Sriracha) Poach shrimp and chill. Mix dressing ingredients. Toss shrimp, avocado, hearts of palm, and dressing. Place avocado and hearts of palm in the bottom of a mason jar (or other appropriate container) and top with six shrimp. Serve with cocktail sauce and Sriracha mayo.

2 lbs. shrimp, peeled and deveined 1.5 qts. grits, cooked 10 grape tomatoes 6 oz. diced ham 3 scallions, sliced thinly 2 oz. canola oil

2 cups arugula 4 oz. white wine 4 oz. heavy cream 1 poached egg Kosher salt to taste Black pepper to taste

Heat sauté pan. Add oil and allow to heat briefly. Add shrimp and sauté until they just begin to cook. Add ham and sauté until shrimp are half cooked. Deglaze pan with wine and add grape tomatoes.

Reduce wine until almost completely evaporated. Add heavy cream and reduce by half. Finish with scallions, salt, and pepper.

Place grits in bowl and pour shrimp mixture over grits. Top with arugula and poached egg.

PEPPER’S MEXICAN GRILL AND CANTINA Tequila Shrimp

12 fresh, local shrimp 3 oz. red, yellow, and green bell peppers 1 oz. white onion 4 cayenne peppers 2 oz. tequila Olive oil Garlic powder Salt Season shrimp with garlic powder and salt. Sauté shrimp a little bit in olive oil, then add onions and peppers and pour tequila over all. Cook until shrimp is done and has absorbed the tequila flavor.

Serve with cilantro rice and veggies. Garnish with fresh cilantro.

CAFÉ KARIBO Sweet and Spicy Chili Prawns

12 local wild caught jumbo shrimp 1 1/2 cup Mae Ploy sweet chili sauce

2 tbsp. Sriracha 1/4 cup fresh lime juice 2 tbsp. Tamari 2 tbsp. butter

In saucepan, add all ingredients except jumbo shrimp, melt together, and let simmer until reduced. It will take about 30 minutes. Sauté jumbo shrimp in scant oil until slightly firm. Add the sauce and simmer for 2 minutes. Turn off heat. Serve over coconut basmati rice and garnish with lime wedge and fresh parsley.

SLIDERS SEASIDE GRILL Summer Mediterranean Shrimp Salad

20 extra large jumbo shrimp, size 11/15 1 bulb fennel, thinly shaved 2 lemons 1/2 pint cherry tomatoes, cut in half 4 oz. Kalamata olives 1 orange bell pepper, confetti dice

1 small medium red Bermuda onion, finely sliced 3 sprigs fresh dill 4 leaves fresh basil 1 sprig oregano 1 head Boston lettuce 1 head radicchio Sea salt and black pepper

Trim tops and bottoms of fennel bulb, and using a mandolin, slice thinly. Place in a bowl. Trim ends of lemon and using the mandolin, shave thin slices and add it to the fennel. Cut tomatoes and olives in half and add to the bowl. Dice pepper and add to bowl. And fresh herbs to bowl, reserving dill to garnish plates. Add Lemon Basil Dressing to bowl (reserving some for shrimp) and toss ingredients.

Place in fridge for 30 minutes.

Season shrimp with salt and pepper. Cook on grill for 4 minutes on each side. Let cool. Toss with reserved dressing and add to other ingredients. Makes 4 servings.

Lemon Basil Dressing 3 lemons, juiced and zested 1 orange, juiced and zested 1 bunch fresh basil 1/2 bunch fresh parsley 1 cup extra virgin olive oil Fine sea salt and white pepper to taste Put first 4 ingredients into a Ninja processor and pulp. Slowly blend in the olive oil. Mixture should thicken and hold together. Add sea salt and pepper to taste.

Shrimp served over a Parmesan and Bacon Grit Cake

Grit Cake 1 cup cooked grits, cooled 1/4 cup shredded Parmesan cheese 5 pieces cooked bacon, crumbled

1 tbsp. green onion, sliced thinly Corn meal, as needed 2 tbsp. oil

In a bowl, mix grits, parmesan, bacon and green onion. Portion to desired size and dust with corn meal. Warm a sauté pan over medium heat. Add oil and sauté cakes until brown. If needed, place on low heat oven to keep warm.

Blueberry Jam 6 oz. fresh blueberries 1/2 cup sugar 1/4 oz. pectin

In a pan over low heat, add blueberries until they pop and become soft. Add sugar and pectin, then bring to a simmer until all the sugar is melted. Do not boil.

BBQ Sauce 1/2 cup chili sauce 1 1/2 cup ketchup 1/8 cup Worcestershire sauce 1/8 cup mustard 1/8 cup apple cider vinegar 1/2 tbsp. garlic powder 1/8 tbsp. onion powder 1/2 tbsp. black pepper

1/2 tbsp. kosher salt 1/2 tsp. ancho chili powder 1/2 tsp. cayenne pepper 2 drops Liquid Smoke 1/4 tsp. cumin 1/4 tsp. cinnamon 1/2 cup brown sugar 2 oz. bourbon

Mix ingredients in a bowl. Fold in blueberry jam until incorporated.

For the shrimp Skewer 12 local peeled and deveined shrimp on 3 skewers. Place on clean grill. When half cooked, flip. Glaze shrimp with blueberry BBQ sauce. When cooked, flip and glaze the other side, allowing BBQ sauce to caramelize. Place on grit cakes, and right before serving, glaze one more time. The rest of BBQ sauce can be used as a dipping sauce.

Combine white wine, butter, and lemon juice in sauté pan to make sauce. Add shrimp, spinach, tomatoes, and capers and simmer until shrimp is cooked through. Toss with cooked pappardelle pasta.

Grits Add the grits and heavy cream in a medium sauté pan and bring to a low simmer for 20 minutes until grits are fully cooked through.

When it’s thick and creamy, add cheese, truffle oil, and butter, whisk together, and season with salt and pepper. Garnish with fresh thyme sprig.

Shrimp In a cast iron pan, add 1 tsp. oil and turn on high. Just before the oil reaches its smoke point, sear shrimp until golden brown on both sides.

THE PICNIC BASKET Shrimp Salad

1 lb. fresh shrimp 1 green pepper 1 red pepper 1 tsp. chopped garlic

1 cup mayonnaise 2 tbsp. Old Bay seasoning Oil

Cut red and green peppers into a small dice. In a bowl, place peeled shrimp, Old Bay, and oil. Mix and then roast at 350 degrees for 8 to 9 minutes. Chop the shrimp, then blend with other ingredients. Serve chilled.

BRETT’S WATERWAY CAFÉ Shrimp Alfredo

6 oz. 21/25 peeled and deveined shrimp, tail off 1 cup baby spinach 1/8 cup peeled shallots, julienned 1 tsp. fresh garlic, finely chopped 1/4 cup white wine 1 cup heavy cream 3/4 cup Parmesan cheese

1/4 cup fresh tomatoes, small dice Pinch of fresh herbs (parsley, rosemary, thyme, finely chopped) 1 Parmesan tuile (garnish) 8 oz. cooked fettuccini (al dente) 2 tbsp. olive oil Salt and pepper to taste

For tuiles Preheat oven to 325 degrees. Place Parmesan cheese on a silicon baking sheet using a 2 inch ring mold to form into a circle. Each circle should be approximately 1 oz. Bake at 325 degrees until cheese is golden brown. Let cool at room temperature.

For alfredo Heat a large sauté pan on medium heat. Sauté shallots and shrimp until the shallots are almost tender. Add the baby spinach and garlic until the spinach is wilted and the garlic is fragrant. Deglaze with white wine and reduce until the wine is almost dry (au sec). Add heavy cream and fettuccini, then bring the cream to a simmer.

Lower heat and reduce the cream by one-quarter. Remove from heat and fold in the Parmesan cheese. Add salt and pepper to taste. Finish with fresh herbs, tomato, and Parmesan tuile.

HORIZONS RESTAURANT Shrimp ‘n’ Kale

24 medium shrimp, peeled and deveined 2 lbs. washed kale 8 oz. andouille sausage 1/2 diced medium onion 1 diced tomato

2 cups jasmine rice, cooked 1 lemon, zested and juiced Blackening seasoning 2 oz. sherry vinegar 2 oz. olive oil 2 oz. butter

Cook rice according to the instructions on the box. Sear andouille sausage, then add onion and tomato. Add half of the olive oil and kale, then simmer until kale has softened. Put to the side, then add remaining oil olive and shrimp. Season with blackening seasoning.

Add kale mixture. Toss with sherry vinegar, lemon, and butter to create a sauce. Serves 4.

THE MUSTARD SEED CAFÉ Caribbean Jerk Shrimp Kabobs

20 8jj in. wooden skewers 2 lbs. 16/20 jumbo shrimp 2 tbsp. Caribbean jerk seasoning 2 tbsp. pure olive oil 3/4 tsp. salt 2 or 3 zucchini 2 red bell peppers 2 or 3 yellow squash Salt and pepper to taste Soak wooden skewers in water for 30 minutes. Toss shrimp in jerk seasoning, olive oil, and 1/4 tsp. salt. Thread onto skewers. Slice squash and red pepper into semi-even sizes for even cooking and thread onto separate skewers. Brush veggies with olive oil, salt, and pepper. Grill shrimp kabobs on medium-high heat until pink and opaque throughout, approximately 2 minutes on each side.

Grill veggie kabobs until desired tenderness, turning occasionally.

You may cover, if desired, for faster cooking. Serve with side salad of your choice.

Shrimp Tips

Cook in the shell whenever possible, especially when you grill.

The shells add a lot of flavor to the meat, and they protect it from quickly overcooking. But if you do choose to peel the shrimp before cooking, save the shells to make seafood stock for chowders and stews.

“C” stands for “cooked” When boiled, sauted or steamed, shrimp are cooked when they curl to form the letter C. “O” stands for “overcooked” Shrimp are overcooked when they curl to form the letter O. Don’t overcook shrimp.

Shrimp will be firm, turn pink, and slightly opaque when cooked correctly.

While that simmers, peel plantains and cut into 1-inch pieces. Deep fry for 4 to 5 minutes. Remove from oil and place into bowl. Smash plantains with butter and garlic and place into pilon. Jacksonville University is home to the newly established Keigwin School of Nursing, thanks to a $3 million gift from Amelia Island residents Beverly and Jack Keigwin. AMELIA ISLAND JAZZ FESTIVAL ANNOUNCES 2017 HEADLINERS Venerable jazz flautist Nestor Torres and Grammy-nominated vocalist Roseanna Vitro have been announced by AIJF Artistic Director Les DeMerle as the headliners for the 2017 Amelia Island Jazz Festival. A highly influential player with dozens of albums, Torres will appear on Saturday, October 14. Inspired by musicians like Dave Brubeck and Tito Puente, Torres’ playing incorporates Latin jazz, pop, and straightahead jazz. He has played with an impressive array of jazz greats, including Jimmy Smith and Dave Grusin.

Vitro, who will perform on Friday, October 13, earned a 2012 Grammy nomination for “Best Vocal Jazz Album” for her CD The Music of Randy Newman. An inventive singer, her strengths include rhythmic acuity and free-spirited spontaneity, often heard in her improvisations, using both scat and lyrics. She has released twelve critically acclaimed recordings and has performed with today’s top jazz artists, most notably Elvin Jones and Christian McBride. he Island Art Association is owned and operated by almost 200 artists and associates. Their “Featured Artist of the Month” series provides an opportunity for members to show and sell their work. An artist is selected to exhibit their work for the entire month, with the opening reception coinciding with the Second Saturday Artrageous Artwalk, a downtown event that takes places each month in and around the Historic District. Artwalk evenings include great art, conversation, light appetizers and beverages, and interaction with local boutiques and restaurants.

May’s featured artist is Shari Reipe, a self-taught artist. She began creating in Alaska to counteract the dark and rainy days. Experimenting as a beginner, she found ways to generate inner light and transform it onto canvas. At the time, her husband was an officer in the U.S. Coast Guard, and they were raising four children. As a teacher, she initiated a children’s art program there.

After several military moves, her family retired here. Shari encourages anyone who wants to learn art to jump in and just do it; practicing art makes one an

artist. Shari’s focus is painting ocean life, surfers, and birds.

Island Art Association offers a wide range of art opportunities in their Education Center to Nassau County residents and visitors alike.

IAA is a 501©3 charitable organization whose mission is philanthropic and educational. Its purpose is to develop and sustain an interest, appreciation, and enjoyment in and of the arts. The Island Art Association and Education Building, which features 50 local artist’s works for sale, is located at 18 North 2nd Street in Fernandina Beach. IAA also coordinates the display of art for sale at Baptist Medical Center Nassau, in addition to several other satellite locations.

The public is invited to join IAA in a variety of membership and support levels. hen Cindy Jackson left her busy life in the Baltimore/ Washington area six years ago, she discovered Amelia Island and its charming Historic District, where she decided to open her new business. Cindy purchased a pre-existing fashion store, and then made it her own—Bijoux Amelia. “At Bijoux Amelia, we’re all about fun, funky, and affordable fashions,” says Cindy. “I love the vibe here in Fernandina Beach, and I want our customers to feel it, too.”

With the help of Carol and Dr. Ken Copithorne, Bijoux Amelia has evolved in its own way. “We’re always on the lookout for new items and constantly expanding our offerings,” says Cindy. “Our merchandise provides a compliment to more expensive fashions, and they are all of the highest quality!” Bijoux Amelia carries hats, scarves, pashminas, tote bags, vegan leather purses, jewelry, beach towels, and some home accessories.

Carol & Paul Condit

P

aul and Carol Condit are familiar faces around Amelia Island. As community volunteers, both have contributed time, energy, and talent to the island they call home.

Paul is originally from the West Coast, and Carol was born in England. Her father, an RAF bomber pilot, disappeared on a mission out of Malta two days before Carol was born. Her widowed mother met and married a U.S. Air Force officer, who adopted Carol and moved the family to the United States.

Growing up, Carol lived in many different places around the country. She attended the University of California Riverside, where she met Paul.

The couple moved to Ann Arbor, Michigan, where Paul earned his Ph.D. in chemistry. After a post-doctoral fellowship at Cal Tech, they moved to Rochester, New York, where Paul joined Eastman Kodak. His 28-year career was mainly in Rochester, where they lived in a restored Victorian farmhouse on the banks of the Erie Canal, a treasured memory for both.

When retirement came, Carol and Paul decided they would prefer living in a climate that did not include hundreds of inches of snow each year. They also wanted to be near their two daughters, who both lived on the East Coast, so they began exploring south and near the ocean. They drew a line from Charleston to Palm Coast and began visiting locations on the beach. Amelia Island offered all they wanted, including a historic Victorian downtown, and they moved to the island in 2000.

Like many retirees here, they talk about their “second careers” as volunteers. Carol became a greeter at the Amelia Island Museum of History, and Paul joined the Civil Air Patrol (CAP) so he could indulge his love of flying. Paul became more

and more interested in the island’s history and began helping with museum programs and maintenance, and eventually he joined the board.

Paul had volunteered in Rochester, New York on various city committees, and he brought that experience to Fernandina Beach’s City Planning Advisory board for ten years. Currently, he volunteers at the museum, serves on the board of Amelia Community Theatre, is a member of Friends of Fernandina Aviation, and is a Baptist Nassau Auxiliary volunteer, where he serves on the board. Closer to home, he is president of the Sea Grove Homeowners Association.

Carol is equally busy volunteering at the museum and is a member of the Federated Woman’s Club, the Amelia Community Theatre Guild, the Newcomer’s Club, a team member for ARIAS Instrument Zoo, and she volunteers at the Kraft Tennis Club, where she is an avid tennis player. They take time out of their busy schedules to walk the beach one morning a week during turtle nesting season to help identify new nests that need protecting.

As busy as this couple is, they still make time for travel.

Each summer, the Condit family gets together in Maine for blueberry picking. October finds them in England for an annual reunion with Carol’s English relatives. Their worldwide travels have included trips to China, Western and Eastern Europe, Myanmar, South America, the Galapagos, and Australia and New Zealand.

The couple considers themselves lucky to have found the island, but it may be the island that is luckiest for having dedicated volunteers like Carol and Paul generously contributing their talents to the community.

fancy free After making the decision to “simply travel,” Diann Schindler sold her house, had a big garage sale, and headed off for points (and people) not yet known.

R

eading Diann Schindler’s Facebook post is a little like watching television on a breaking news day: This just in! Breaking news! It seems like Diann is always just arriving at or departing for some interesting destination.

Schindler, who lived in Fernandina Beach before embarking on this adventure, sold everything she had except a guitar and a tennis racquet, and took off to travel the world. Since then, she has blogged from more than sixteen countries. She writes about her travels in a blog called, “Diann Abroad.” She writes beautiful, wonder-filled pieces about the people and places she enjoys (not to mention the vinho tinto—the red wine), and ties them together with her beautiful photographs.

I caught up with Diann in Buenos Aires, where she was recovering from minor dental surgery. Schindler, who was very impressed with the treatment, said her good health and tennisplaying fitness had worked well for her in her travels.

“I do a lot of walking and hiking—I’ve worn out three pair of shoes!” she laughs. She says she is a “tolerant” traveler who does not need much, “just a place with lots of light and a good location, along with access to a washing machine every two or three weeks.”

Diann, who had worked in community college administration, says the travel bug had “taken hold of me during my college days,” when she traveled to Europe, Mexico,

and Japan. In 2015, friends from St. Petersburg invited her to travel to Istanbul with them. Diann spent two weeks with them, and then a week on her own to test her affinity for traveling alone. She returned from Istanbul in October and called her children to let them know she had decided to sell everything and “simply travel.”

Schindler sold her house, had a big garage sale, and departed for Portugal in January 2016. Since then she has traveled throughout Europe, Morocco, and South America, visiting 16 countries. Schindler says she has enjoyed every country, but is always ready to move on to the next adventure.

Because she is willing to try new languages, Schindler has made many new friends, staying in touch with many long after departing their community.

“I enjoy talking with people, so it is easy to connect with people everywhere,” says Schindler. “I have friends I haven’t even met yet!”

Schindler travels with her guitar, finding “open mike” nights everywhere, many in Spain. She played at a restaurant in Barcelona for a few evenings, and the owner insisted she have dinner on the house each time she played.

Schindler misses tennis the most and says she does not get to play nearly enough. She has, however, on three continued on page 79.

ouldn’t a sign announcing “Pig Squeak Plants” get your attention? I was so curious I had to hurry over to see what they were. Sometimes the little ones get all the attention, and this miniature Bergenia “Flirt” got mine.

The new Bergenia Flirt would be welcome in most gardens as a border, in rock gardens, or an all kinds of containers.

Cute and compact, Flirt stands only 6 inches tall, with a flower reaching 10 inches. Blooming in early spring, Flirt is loaded with up to 30 wands of deep pink flowers that set nicely atop the deep burgundy winter foliage. This beauty can be planted in full sun to part-shade. Flirt attracts butterflies and hummingbirds, is low-maintenance, and blooms right through the fall.

I’ve had a few requests to find ground covers. I hunted around and came across a new one called Heucherella Copper Cascade. This small-leaved beauty overflows containers with mounds of trailing foliage in shades of warm copper blushed with rose. These plants work equally well as a ground cover, sending out 2 to 2 1/2-foot stems that weave their way

through their neighbors. Panicles of creamy white blooms appear in midsummer, and the awesome foliage holds its color all year.

This is a must for your garden.

Plant it in shade or sun, give it average water, and it will delight you for years. Copper Cascade is a denselylayered mounding plant, growing 8 inches in height and 28 inches in width.

The colors on this plant intensify in heat and humidity. And I just found out this plant is also known as Foamy Bells.

I recently came across a whole bed of Mango Popsicle (Kniphofia), and what a beautiful sight! I could picture them in a bed in several gardens on the island.

They are a literally a garden standout, bringing a succession of vibrant yelloworange spikes and a strong pop of color to summer gardens.

This Torch Lily just keeps on blooming until its feet get cold. Its evergreen clumps of neat, grass-like foliage stay attractive all season. The delicious spikes of sweet mango-orange attract hummingbirds, are drought tolerant, and make a striking splash of color either planted singly or in mass plantings. Grow in full sun and enjoy these 30-inch high plants with spectacular flower spikes.

May seems to have delivered an abundance of annual and perennial flowers, all which make our gardens so beautiful all spring, summer, and fall! More new plants next issue, but in the meantime, you might want to check out these new annuals: Nicotiana Lime Green, Coleus Main Street Rodeo, Petunia Tidal Wave, and Begonia Bolivienses Bossa Nova. New plants make wonderful Mother’s Day gifts for the gardener in the family, but for me, forget the flowers, I want the roots attached!

W

hen you want to retire and host a lot of visitors, there’s no better place to live than Amelia Island. Pam Fox and Jim Raycraft figured out this little secret when they chose Amelia after traveling around the southeast U.S. “We worked our way down to the island,” says Pam. “We knew pretty quickly that we wanted to live on deep water, in a golf community, and the amazing live oaks stole our hearts,” Pam confesses.

The couple found a small lot at Long Point in Amelia Island Plantation that offered it all. “Thanks to architect John Cotner, this lot worked out just fine for us,” Pam explains. “He visited our parcel before we even contracted him and said he was intrigued and had creative ideas.”

The couple met with Cotner Associates and shared their wish list – a main room, a small office, small master bedroom, an elevator, and two separate guest bedrooms with private baths. No wasted space. John got to work, and coming in well under 3,000 square feet, every room makes optimal use of the square footage.

“The great thing about John was that he grasped our vision of simplicity and light,” says Pam. “Midway through construction, Jim suggested a third-floor deck to enjoy the amazing river views our property offers, and John added it – complete with a kitchenette!” Today, the couple entertains in this space as much as they do indoors, and guests adore the modern rooftop bar ambience.

of hurricane windows. “Steve’s personality is nothing less than accommodating, and he was willing to work with our requested changes to build the home we wished. Additionally, his team has dashed back to fix any small thing we’ve noticed since we moved in last May,” notes Pam with relief. Pickett stands by his work for life.

In the short time they’ve lived in the home, the couple is still adoring their modern yet beautiful abode, much of it made possible thanks to a partnership with Kristen Biagini Designs.

“Kristen’s spirit is energetic. She wanted to achieve ‘our look,’ not ‘her look.’ She adapts to her customer,” says Pam. The finished product is stunning, highlighted by the soft grays and blues that Kristen chose for the kitchen and main living area.

A tour of the home creates a sense of amazement, leaving one continually wondering, “Why didn’t I think of that?” For

example, the guest suites don’t have dressers since they take up so much space. Instead, the closets have shelves and a luggage rack. The kitchen pantry’s swinging doors save space and make access easy with shelves reaching from floor to ceiling.

The tall “spice drawer” that emerges from the wall is nothing short of genius.

My favorite feature is the “landing counter” hidden beside the garage door, away from the view of guests, which the couple uses for a purse, mail, and key stop. Wine enthusiasts with no space for a cellar, Pam and Jim instead had a built-in wine shelf constructed, complete with a handmade barn door to cover the space. Jim designed the door with Pickett’s custom woodworking team.

All of these are great design details, but the outdoor pool and spa laid out parallel to the house to fit the property and

The pool features lovely fountains and an outdoor kitchen area, including living and dining space smartly placed under second-floor ceiling level screening so that one doesn’t even notice it’s under a screen. And the design keeps out gnats when you open the series of slider doors between the indoor and outdoor living areas.

“We are really proud of the teamwork between Cotner Associates, Steve Pickett, and Kristen Biagini,” Pam concludes. “Everyone worked together to achieve a smart space that will accommodate us in a future time when we are not as mobile. This was our vision, and this team worked so well to make it a reality.”

In their new home, the couple does just what they came here to do – entertain, spend days on the boat fishing or cruising, golf, volunteer, and enjoy Amelia Island’s great natural beauty. Even the new furry family member, Cheers, a Humane Society find, has her name on the mailbox, and the trio is ready to stay for quite some time!

29RESTAURANT South A pioneer in Northeast Florida’s farm-to-fork movement, 29 South offers inspired cuisine using local ingredients, including from their own garden.

South’s menu can best be described as extraordinary casual farm-to-table cuisine, where Chef Scott Schwartz paints a playground for the palette using the freshest ingredients sourced from local fisherman, farms, and their own onsite garden. The restaurant just recently celebrated its eleventh year in business, which was a good enough reason for my friend Sherry and me to visit 29 South for a congratulatory dinner!

Our server Bobby started us off with a glass of Langlois Chateau Sancerre, a clear, bright, and tantalizing start to our dinner. We began our meal with Lumpy Blue Crab Cake on Old Bay Butter with pickled watermelon rind. I liked the crisp on the crab cake, which was loaded with delicious jumbo lump, sweet crab.

We also shared A Simple Crust of Bread, the Chef’s daily market-inspired crostini. Their bread comes from Community Loaves in Jacksonville, and that evening’s “crust” was an artisan rosemary bread topped with roasted rainbow carrots from the restaurant’s garden, whipped ricotta, arugula, olive oil, and balsamic vinegar. This was a succulent and hearty appetizer, and probably my new favorite menu item at 29 South.

Sherry and I shared a simple “Salad on the Rocks,” made with their just-harvested mixed greens, tomatoes, green beans, and orange segments, tossed in a piquant house vinaigrette. It was paired with Gumption Cider, a slightly sweet hard cider with balanced acidity and lots of bubbles. A nice intermezzo before our hearty entrees, Catch of the Day and Beef Short Ribs.

The “catch” was sheepshead, which is a lovely, mild tasting fish that has a sweetness reminiscent of crabmeat. It was perfectly sautéed and served over a bed of homemade succotash, and topped with roasted red pepper chutney. The succotash was made with corn and lima beans in a savory broth, and the whole dish paired well with a glass of Hess Chardonnay, a crisp, clean, low oak chardonnay.

Chef de Cuisine Jose Salome then brought us his famous Beef Short Ribs, which take three days to prepare. First they are smoked, then cooked again, then chilled, then finished. The ribs were served with horseradish gremolata, Brussels sprouts, parsnips, sweet potatoes, and butternut squash. What an amazing dish! The beef was so tender it melted in our mouths, while the fresh herbs brought a bright, clean essence to the dish.

Bobby paired this entree with Incognito, a red wine blend with deep complexity and a great balance of dark fruit and spice.

I tell all my friends, never leave 29 South without having dessert, as theirs are the best on the island, particularly their Coffee and Doughnuts, which is glazed doughnut bread pudding with mocha ice cream and butterscotch drizzle. But wait, there’s a new kid in town: 29 South’s Rice Pie, which is rice pudding in pastry, served with rum raisin ice cream. Oh my! Paired with Dow’s Old Tawny Port, these desserts are the ideal ending to a picture-perfect dinner.

to refuel. The spot was marked, but upon return, all it found was an oil slick and debris. “The water was his world,” explains his late wife, commonly known on Amelia Island as “Ms. Bea.” “He once told me, ‘the ocean will be my death.’”

On that fateful day, two sons, Kenneth, Jr. (Kenny) and Blake were left fatherless, a thought that terrified their mother, Ms. Bea, who had grown up without a father of her own. “At that time, I had no idea what would happen. I had a note on the boat, a mortgage on our home, three law suits from the families of the crew members, and my profession was a homemaker,” she shares. “But I’ve learned that when God moves one thing, he always replaces it with something else —in His time—and I give Him all the glory for what has happened since.”

Today, the same residence Kenneth purchased for his family 34-years-ago is home to Ms. Bea’s Preschool, a place where children gather Monday through Friday to learn how to read and write, and, most of all, to learn that God loves them and that Ms. Bea loves them.

“I hug my students before they leave every afternoon,” she explains. “This is something I never had as a child, and I have an opportunity to bless others and let these precious students know that I love them.”

But it’s not just Ms. Bea’s students who are soaring today. Her first son, Kenny, is an award-winning chef with his own food truck, serving missionstyle burritos in Sweden! This month, he is opening his first restaurant and gaining a lot of attention from winning “Best Vegetarian Dish” with his Fried Avocado Tacos in the Nordic Masters Food Truck Competition.

Meanwhile, Captain Blake joined the United States Air Force, earning his own wings in 2012. Today he flies Boeing C-17 cargo aircraft delivering crucial supplies to our armed forces. He has also deployed a couple of times and air-ambulanced wounded soldiers to rescue. His mom is most proud of the fact that he recently began training to become an Air Force Pilot Trainer—a teacher, just like her, and a captain, just like his dad.

The two brothers still remember and miss their father, and they share good laughs watching his favorite movie, John Wayne’s El Dorado, but they find great comfort in how God stepped in and filled the places Kenneth left.

“I don’t take any credit for the good God brought out of our story,” Ms. Bea concluded. “That’s God’s doing. I am humbled to take what God allowed us to accomplish and use it for His glory.”

Diann has rented the apartment three separate times for one month each time. It’s where she also gets her Netflix fix!

Diann has an expense budget and plans accordingly, usually staying in Airbnb apartments, but says she splurges occasionally, including a week at the French Open in Paris. “I might spend three days in a big, tourist-y city because I think I should, but I prefer stepping outside of that and meeting locals to see how real people live, eat, and play,” Schindler says. While she often finds inexpensive flights, she loves the trains for the great views and the interesting people she meets.

Schindler says making the decision to sell everything and take off was the result of getting comfortable with the idea of letting go. She advises anyone considering something similar to be completely sure about their decision, because “once stuff is gone, it’s gone.”

Downsizing to a medium-sized suitcase, a backpack, a guitar, and a tennis racquet is not for those who hold their possessions dearly.

“Travel allows me—maybe causes me—to be the best I can be,” says Schindler. “I’m my best self when I travel. I’m lifted by magnificent sights and scenes, and by magnanimous people. I have a charmed life!”

Cumberland Island

W

henever family or friends come to visit me on Amelia Island, I always book a trip with Amelia River Cruises. It’s a great way to learn about the history and environment of our island paradise.

But sometimes I want to feel like I’m on vacation, too, so on a recent afternoon I invited my friend, Sherry, also an island resident, to join me on ARC’s Beach Creek Tour, a 2-hour afternoon excursion. This tour is a nice blend of history and stunning natural beauty, including a trip up Beach Creek with beautiful views of the salt marshes and bird life of Cumberland Island, Georgia. It offers a close up view of the ruins of the Dungeness mansion and takes you literally inside Cumberland Island.

What luck when we discovered that owner Captain Kevin McCarthy was to be our tour guide that day! Kevin is descended from New England’s Gloucester fishermen, who for generations have sailed the North Atlantic harvesting seafood.

He and his wife, Cecilia, created Amelia River Cruises in 2000, but time spent on the water has been part of this family for generations. Cecilia hails from a family of lighthouse keepers, harbor pilots, oystermen, and pioneers in the shrimp industry.

We were certainly in good hands!

We begin our tour with a look-see at the Amelia Research Vessel, which is currently searching for the remnants of a Spanish shipwreck in Fernandina Beach harbor. As we cruise past the vessel, Kevin explains how the operators use the equipment to search for sunken treasure. A group of bottleneck dolphins join us as we head down the Amelia River, much to the delight of the families on board.

Kevin then shares stories of the shrimping industry, the history of Fernandina, and a bit of pirate lore, regaling us with tales of smugglers and scallywags.

We head out past Old Town and the island’s public boat ramp, and soon we’re crossing Cumberland Sound, with Fort Clinch State Park and the Atlantic Ocean to our right, heading toward Cumberland Island.

That afternoon the tide was low, great for viewing beds of blade oysters, various varieties of wading birds, and even a 7-foot alligator, warming himself on the muddy shoreline. The Creek winds its way into Cumberland Island, past scrub oaks shimmering with Spanish moss and the contrasting yellow of saw palmetto, which are just starting to green up for their summer season.

We catch sight of several of Cumberland Island’s wild horses, and then the splendid Dungeness mansion, formerly owned by the Carnegie family, along with other estates on the island.
