One of the biggest events in the entire Southeast, the Isle of Eight Flags Shrimp Festival returns to Amelia Island once again this spring, as always on the first weekend of May. What began as the traditional blessing of the shrimp boats has evolved gradually into a weekend celebration of shrimp that attracts 100,000 people to Amelia Island each year. The Shrimp Festival is a high point on the Amelia Island calendar and a great event for the whole community. Fernandina Beach was the birthplace of the modern shrimping industry and shrimping was long a major local industry, and the iconic shrimp is still beloved by all. The Shrimp Festival is a fun-filled, multi-faceted event that has something for everyone. In addition to its celebration of shrimp, it is a highly regarded art show paired with a full weekend of events like the Pirate Parade on Thursday evening to kick things off, Friday’s Downtown Merchants’ Sidewalk Sale, a fireworks display over the harbor, live entertainment, the annual Pirate Invasion, the Shrimp Festival Run, and the ever-popular Kids’ Zone. The festival is fun for residents and visitors alike, and a great place to eat some delicious local shrimp. Everyone has their favorite food booth they return to year after year—whether it’s for fried shrimp, boiled shrimp, shrimp pie, or funnel cake—and many local churches and service organizations use the food booths each year to raise money to fund their invaluable charitable work. We extend our heartfelt thanks to all the volunteers who make the Shrimp Festival such a great success each year. If you are a visitor to Amelia Island and you’ve never experienced Shrimp Festival, mark your calendar for next year! Here at the Islander, we honor the Shrimp Festival each year with our Shrimp Festival recipe issue, in which we share some mouthwatering shrimp recipes from our favorite local restaurants. We are very grateful that our outstanding local chefs generously share with us their varied and ingenious ways to prepare and serve shrimp. We love to try these recipes at home, and when we’re not in the mood to cook, it’s good to know we can find these delicious dishes and many others at our fine Amelia Island restaurants. Also this month, in another annual May tradition, Julie Simmons introduces us to some of the outstanding members of the Fernandina Beach High School Class of 2019, who look back fondly on their years in high school; we check in with Angela and Eric Pierson of Wallace Pierson Travel, who are embarking with their daughters on an amazing year-long trip around the world; we present a special “Island Entertaining” to celebrate Mother’s Day; and much more. Salt Life Food Shack Shrimp Brochette 8 fresh Fernandina shrimp, 21/25 count, peeled 8 pc. smoked applewood bacon, cut into thirds 8 cubes pineapple, 1 1/2 - 2 inches in size Four 10-inch wooden skewers 1 to 2 oz. pineapple teriyaki glaze Take 1 strip bacon, cut into thirds. Place one shrimp on bacon piece. Roll shrimp in bacon, making sure the bacon overlaps the belly of the shrimp one time. Place two skewers through one piece of pineapple, then skewer one baconwrapped shrimp. Repeat process until you have 4 shrimp and 4 pineapple cubes on each skewer. Briefly blanch skewers in fryer for 30 seconds. Drain on towels to absorb grease. Place on well-oiled grill over medium heat. Brush with teriyaki glaze. Be careful not to overcook or burn. Serve with rice and garnish with sesame seeds.
Horizons Restaurant Shrimp 'n Kale 24 medium shrimp, peeled and deveined 2 lbs. washed kale 8 oz. andouille sausage 1/2 diced medium onion 1 diced tomato
2 cups jasmine rice, cooked 1 lemon, zested and juiced Blackening seasoning 2 oz. sherry vinegar 2 oz. olive oil 2 oz. butter
Cook rice according to the instructions on the box. Sear andouille sausage, then add onion and tomato. Add half of the olive oil and kale, then simmer until kale has softened. Put to the side, then add remaining oil olive and shrimp. Season with blackening seasoning. Add kale mixture. Toss with sherry vinegar, lemon, and butter to create a sauce. Serves 4.
Amelia Island Coffee Southern Shrimp Salad Freshly cooked shrimp, peeled and deveined Mayonnaise Celery, finely chopped Red onion, finely chopped Old Bay Seasoning Crushed red pepper Freshly squeezed lemon juice Freshly chopped dill
Mustard Seed Cafe Creamy Tuscan Shrimp over Rosemary Rice Shrimp and Sauce 1 lb. 31/40 shrimp, peeled 2 tbsp. butter 1 tsp. all-purpose flour 2 tbsp. minced garlic 1 cup heavy cream 1/2 tsp. fresh lemon juice 1/2 tsp. lemon zest 1/4 tsp. Italian seasoning
1/4 cup sun dried tomatoes, julienned 1/4 cup bacon, crumbled 1 cup fresh baby spinach 1 handful fresh basil, cut into thin strips Salt and pepper to taste
SautĂŠ shrimp in butter, flour, and garlic. Make a roux with 1 tbsp. flour and 1 tbsp. butter. Heat just to boiling the cream, lemon juice, zest, seasoning, tomatoes, bacon, basil, salt, and pepper. Add the roux to this mixture and heat until thick. Prepare Rosemary Rice. To serve, arrange baby spinach on a plate. Place 4 to 6 oz. of rice in the center. On top, arrange 4 to 6 oz. of shrimp and cover with sauce. Rosemary Rice 2 cups basmati rice 1/8 cup salted butter 1/2 tsp. salt 1/4 tsp. pepper
1/2 onion, small dice 4 cups chicken stock, heated 1 tbsp chopped fresh rosemary
Combine in an oven-proof pan. Cover with plastic wrap and foil. Bake at 350 degrees for about 30 minutes.
Combine all ingredients and season to taste. Serve on a croissant with a lettuce medley.
Fancy Sushi Bamboo Shrimp 6 oz. spicy tuna mix (with spicy mayo sauce) 2 oz. chopped krab meat 1/2 avocado, sliced
2 oz. crunchy tempura 1 oz. eel tobiko 2 pieces jumbo tempura shrimp
To create the foundation without seaweed, use a base of 6 oz. spicy tuna mixed with crunchy tempura, like a normal sushi roll. Then add 2 oz. chopped krab meat and 2 pieces crispy fried jumbo tempura shrimp onto the spicy tuna base. Roll the ingredients to form a sushi roll. Finally, before cutting the roll into 8 bites, layer the top with freshly sliced avocado and sprinkle red tobiko for color, flavor, and texture.

Season shrimp with garlic powder and salt. Sauté shrimp a little bit in olive oil, then add onions and peppers and pour tequila over all. Cook until shrimp is done and has absorbed the tequila flavor. Serve with cilantro rice and veggies. Garnish with fresh cilantro.

Thai Spice Cafe Pad Thai Shrimp 4 oz. uncooked thick rice noodles 1/2 lb. uncooked shrimp, peeled and deveined 2 tsp. canola oil 1 large onion, chopped 1 garlic clove, minced 1 large egg, lightly beaten Chopped sweet radish Paprika
Sliced tamarind 4 green onions, thinly sliced 1/3 cup rice vinegar 1/4 cup sugar 3 tbsp. low-salt soy sauce 2 tbsp. fish sauce 2 to 3 tsp. chili garlic sauce 2 tbsp. chopped peanuts Bean sprouts
Cook noodles according to package directions. In a large non-stick skillet or wok, stir fry shrimp in oil until pink; remove and set aside. Add onion and garlic to the pan. Make a well in the center; add egg. Stir fry until egg is set. Add remaining ingredients; heat through. Return shrimp to the pan and heat through. Drain noodles; toss with shrimp mixture. David’s Restaurant Chef Devin s Shrimp and Grits Bar Zin Beet Pickled Deviled Eggs 3 cups water 1 cup distilled white vinegar 1 small beet, peeled, sliced 1 small shallot, sliced 1 tsp. sugar 1 Turkish or 1/2 California bay leaf 12 hard-boiled large eggs
1 tsp. caraway seeds, toasted and cooled 1/3 cup mayonnaise 1 tbsp. grainy mustard 1 tbsp. finely chopped flat-leaf parsley Equipment: an electric coffee/spice grinder or mortar and pestle
Bring water, vinegar, beet, shallot, sugar, bay leaf, and 1/2 teaspoon salt to a boil in a 2-quart saucepan, then simmer, covered, until beet is tender, about 20 minutes. Cool completely, uncovered. Put beet mixture in a container with eggs and marinate, chilled at least 2 hours, gently stirring once. Finely grind caraway seeds. Remove eggs from beet mixture and pat dry (discard beet mixture). Cut in half lengthwise and remove yolks. Mash yolks with mayonnaise, mustard, parsley, and half of caraway. Season with salt and pepper, then divide among egg whites. Sprinkle with remaining caraway. Pickled Shrimp 1 lb. (12/20 count) raw shrimp, peeled and deveined with tails intact 1 stalk celery, cut into 2-inch lengths 1 red onion, thinly sliced 1 lemon, sliced into very thin rounds Salt, to taste 4 cups water 1/2 bulb fresh fennel

In a cookpot, simmer all ingredients except shrimp for several minutes to marry the flavors with the spices and vegetables. Add shrimp and cook just until shrimp are done. Remove from heat, cool, then pour into a glass crock or jar, and chill until serving.

Amelia Tavern Shrimp Corn Dog Shrimp 1/2 lb raw shrimp, peeled and deveined 1 clove garlic 1 shallot 1/2 lemon, zested 1/4 cup bread crumbs

2 cups water 1/2 cup Worcestershire 1/4 cup dry white wine 1/4 tsp. salt 2 cups heavy cream 2 tbsp. butter 1 tbsp. chopped chives 2 tbsp. Creole seasoning
Peel shrimp, leaving the tails. Reserve shells. Sprinkle shrimp with 1 tbsp. of Creole seasoning and pepper. Use hands to coat all the shrimp. Refrigerate. Heat 1 tbsp. olive oil in a large pot over high heat. Add onions and garlic and saute 1 minute. Add the reserved shrimp shells, the remaining Creole seasoning, bay leaves, lemons, water, Worcestershire, wine, salt, and pepper. Stir well and bring to a boil. Reduce heat and simmer for 30 minutes. Remove from heat, let sit for 15 minutes, and then strain into a small saucepan. Place over high heat, bring to a boil, and cook until thick, syrupy, and dark brown, for about 15 minutes. Next, heat the remaining olive oil over high heat and add the seasoned shrimp and sauté for 2 minutes. Add the heavy cream and barbecue base, stir and simmer for 3 minutes. Remove the shrimp and whisk the butter into the sauce. Remove from heat. Mound the shrimp in the center of a platter, then spoon the sauce over the shrimp.
Combine all ingredients in a food processor and pulse until well combined and smooth. Scoop into 2 inch balls, insert a wooden pop stick into the middle of each ball and form into a shape similar to a hotdog. Refrigerate until ready to fry. Cornmeal Batter 2 cups cornmeal 1 cup flour 1/4 cup sugar 1 1/2 tbsp. baking powder
1 tsp. garlic powder 2 cups buttermilk 1 egg
Combine all ingredients in a bowl and mix until well incorporated. Place in tall container, deep enough to dip the shrimp dogs in. Preheat a 4-qt. cast iron pot filled halfway with oil to 350 degrees. Dip each shrimp dog into the cornmeal batter and fry until golden brown and crispy, about 5 minutes. Drain the shrimp dog on paper towels and allow to cool slightly. Serve with your favorite dip.

Mix all ingredients in a bowl until wet batter is formed. Transfer batter to a piping bag. Heat oil in cast iron pan to 375 degrees. Cut piping bag tip large enough to allow shrimp through. In a circular motion, pipe the batter into the hot oil into a 4” circle. Fry on each side for 2 minutes. Remove from oil and drain on paper towels. Dust with powdered sugar.

Render andouille in a sautĂŠ pan, then add the succotash and sautĂŠ for about 2 minutes. Deglaze with about 2 oz. white wine and reduce by half. Add the shellfish stock and a tablespoon of butter. Reduce the stock by half and season with salt and lemon juice. Add a pinch of minced shallots and garlic, then quickly deglaze the pan with a splash of dry white wine. Reduce the wine and add 1/2 tablespoon of butter. Add shrimp and stir gently until shrimp are cooked through. Fry okra in 350 degrees for about 2 minutes or until golden brown, and reserve. Assemble the grits and succotash with sauce and shrimp on the plate. Garnish the plate with scallions and the fried okra.

Soak the bamboo in water. Rinse the shrimp with water and pat dry. Mix the garlic, melted butter, and lemon juice together in a bowl. Thread four shrimp and three zucchini on each skewer. Brush the garlic butter mixture on the shrimp skewers. Sprinkle Lawry salt over the shrimp skewers. Grill the shrimp for 6 to 7 minutes at 400 degrees, turning once.

Steam Baos according to package directions. Dip shrimp into buttermilk batter. Coat with rice flour mixture. Fry shrimp until golden brown. Assemble Bao with arugula and shrimp (2-shrimp per Bao), top with Sriracha Aioli, and sprinkle with sesame seeds.

6 tbsp. cider vinegar 2 tsp. salt 1 tbsp. ginger 1/4 tsp. ground pepper 1 tsp. red pepper flakes Pinch of coriander and tarragon 1 tbsp. fresh cilantro
In a medium, nonreactive saucepan, combine the tomatoes, mangoes, and lemon zest. Stir in the sugars, vinegar, salt, pepper, ginger. Simmer, uncovered, for 1 hour, stirring frequently. Cool completely, then stir in cilantro. The chutney will keep in an airtight container in the refrigerator for up to one month. Peel the shrimp and sautĂŠ with garlic, olive oil, salt, pepper, and fresh thyme. Buen Provecho!
Place all ingredients except shrimp in a pot and simmer for 10 minutes. Add shrimp, and after two minutes, turn off. Once shrimp are cooked to a nice pink color, strain, rinse, and refrigerate. Shrimp Martini 1 cup pineapple, diced 3 cups mango, diced 1 jalapeno, diced finely 1/2 cup red onion, diced 1/4 cup cilantro, chopped finely 1/8 cup ginger, grated finely Lime juice from two limes 3 tbsp. peach vodka Rough cut shrimp and place in a bowl. Toss with martini mix. Spoon into chilled martini glasses and garnish with lime. Makes four servings.

The Amelia Island Jazz Festival provides a rich and diverse cultural experience to Amelia Island by exposing thousands of people of all ages and backgrounds to the sounds, excitement, and vitality of great jazz music. Each year in October, acclaimed and Grammywinning musicians gather on Amelia Island to do what they do best—make music! J
ill Wilkinson has over 20 years of experience in the framing business, having worked in the industry since college. She grew up with a dad who did woodworking and built every home the family lived in. “My dad taught me about tools, and how to design and build things,” says Jill. “I fell in love with designing, creating, and building, and eventually attended art school at University of Georgia, where I also worked in a frame shop.” JW Frame Gallery on South 14th Street is different than traditional frame shops. “Besides our custom framing, I wanted to include local artists featuring various types of art and mediums,” says Jill. “We’re always expanding, growing, offering new services and state-of-the-art framing materials like UV filtering glass, museum glass, acid-free matting and backing, as well as dry mounting, canvas stretching, and Vac-U-Mounting. We also have a 24-inch Canon printer.” A new member of Jill’s team is Donna Carine, who has over 25 years in the framing and design industry. “Donna and I have been friends for 15 years,” says
Jill. “I’m so grateful she came to work for me! We are like sisters, and we have a great balance at work.” Together, Jill and Donna frame just about anything you can imagine. “For us, it’s not just about art or photography,” says Jill. “We frame family heirlooms, textiles, and everything in-between.” Jill’s appreciation for fine art is the reason she also showcases the work of local artists like William Maurer, Kathleen Maurer, Martha Scheffler, Roxanne Bieber, Susan Hitchcock, and many others. “For the month of May, we are honoring well-known local artist William Maurer,” says Jill. “We are featuring a large display of originals and prints of local landmarks, many of which no longer exist. We also have the very last original painting of local shrimp boats, which William is known for, framed and for sale.” JW Frame Gallery is located at 1875 South 14th Street. ttorney Ron Conte has spent thirty years practicing law, first as a litigator in Atlanta, then in real estate, estate planning, and probate law in Orlando. Ron, a graduate of Georgia State University College of Law in Atlanta, now makes his home on Amelia Island. While living in Orlando and practicing with his firm Conte Trevett, Ron bought a condo on the island, but he soon switched to a second home in Amelia Park. “That is,” says Ron, “it was a second home until my firm made a full-time commitment to Fernandina Beach and I moved here year-round.” Although his firm established the Amelia Island office five years ago, Ron took on the Fernandina work exclusively about two years ago. “I was travelling a lot back and forth to Orlando at first,” he laughs. Ron now handles all of the firm’s Amelia Island work. Ron’s office is located at 5422 First Coast Highway in Isle of Amelia Executive Suites. “It’s perfect there, because there is easy conference room access and plenty of parking,” says Ron. Since he works with several realtors on the island to provide both title insurance and closings for their clients, Ron handles closings in the large conference room. s the school year comes to a close, we are very happy to give a standing ovation to this year’s Fernandina Beach High School’s Class of 2019, which includes six Eagle scouts, a halfdozen collegiate-bound athletes, a National Merit Scholar, aspiring military service women and men, with one headed to West Point Military Academy, and of course, many training for important vocations or headed to college. Congratulations Class of 2019! “It’s a stellar class,” says FBHS Guidance Counselor Sarah Coombs. “It has been an honor and privilege to serve this group and watch them blossom into the outstanding, special and unique individuals, scholars, athletes, musicians, performers, and citizens they are today.” If you talk to a few of the graduating seniors, they are just as fond of the FBHS staff and the education they received. “FBHS has prepared me for the next step by providing me with a firm learning foundation,” says Annabelle Rowland, who will study at Ole Miss this fall. “I had the opportunity to meet and interact with many diverse people, which has matured my social skills.” Cole Strain agrees with Annabelle, praising the school for the opportunities it gives students to prepare for the next stage of life. “There are numerous events that help students find jobs, and there are also a ton of scholarships. I’ve also been able to get some college credits thanks to the AP classes the school offers.” Speaking of scholarships, Shelbea Holland is one of the Class of 2019’s athletes who is taking her talents to college. “After graduation, I will attend Tallahassee Community College on a softball continued on next page

scholarship and study nursing.” Shelbea credits FBHS for helping her learn accountability and to balance after-school activities with academics. Cole, who will attend University of California, Los Angeles to study computer science and engineering, is grateful to his teachers the past four years. “Ms. Julianne French is one of the nicest people that I’ve known, and she’s taught me art skills that I didn’t know I had! On the academic side, I’ve probably never seen a teacher who loves his subject more than Dr. Glackin does math. He personally helps anyone that’s having trouble, even during his lunch breaks.” Annabelle echoes the accolades for the staff, particularly Mr. Durr, who she still visits every single day to say hello. Meanwhile, Shelbea thanks Mr. Monaghan for being considerate to all students and working with each one to help them be their best. The trio looks back at the last four years and reflects on the fun they’ve had. “My lunch table sophomore year was the best because my sister, Ashlyn, was there, too! There was never a dull moment, and we were always laughing,” smiles Annabelle. “My favorite memory is probably performing in the hilarious escapades skit as part of homecoming week,” laughs Cole, “even if we did have to wake up super early some mornings to practice!” And Shelbea has a bunch of favorite memories from the dugout. “The best was junior year, going into extra innings and almost beating Yulee!” That’s just one more lesson from FBHS—learning that losing can still be a valuable opportunity for growth. Go Pirates! At the end of the day, FBHS Class of 2019 isn’t amazing because of the accomplishments of any one person, but because the sum is even greater than the individual parts. “This class hosted the first FBHS Dance Marathon and raised over $2,000 for the Children’s Miracle Network,” Sarah shares as an example. Once again, let’s have a round of applause for the Class of 2019, not just for their accomplishments, but for their future successes as well!

TRIP WORLD around the
After a one-month trip turned into 12 months, Angela and Eric Pierson embark with their daughters on a year of travel that will take the family across the globe. BY KAREN MILLER • PHOTO COURTESY OF ANGELA PIERSON
W
hen Angela and Eric Pierson told their daughters Angela, 9, and Emily, 7, that they were taking them to Australia for the month of May, the girls were thrilled. But their parents were not prepared for what was to come next. The two daughters put their heads together and made a proposal to their parents that would change their lives forever. “The girls came to us with their piggy banks,” says Angela. “They said, ‘We’ll give you all of our money if you’ll take us on a trip for a whole year!’ Eric and I thought about it for a while, and then realized that it was completely doable.” Eric and Angela have world travel in their blood, especially Angela, who can count four generations of in her family who love to travel. Wallace Pierson Travel, formerly The Travel Agency, was founded by Jim and Ange Wallace (Angela’s parents) in 1974. Jim and Ange met while both were working for Pan American Airways. The agency evolved throughout the years to specialize in luxury travel, and Angela and Eric are part of the Wallace Pierson Travel team. “Eric and I can work from anywhere in the world,” says Angela. “When we realized that the girls were completely serious, and after speaking with their teachers at St. Michael 45 AMELIA ISLANDER MAGAZINE •
Academy, who completely supported the idea, we began to make our plans.” The family has a large-scale magnetic map of the world. Both parents and daughters placed markers on all the places they wanted to visit on all seven continents. The girls’ wish list included Iceland, New Zealand, Switzerland, Scotland, Ireland, and Africa. Eric and Angela’s choices included Antarctica, Viet Nam, Hawaii, Singapore, and many places in between. Young Angela and Emily will use Skype to check in with their classmates, so that they can follow the girls’ adventures around the world. “It’s going to be such a good learning experience for everyone,” says Angela. “Our daughters love to travel, and it’s changed the way they look at the world.” The Piersons are big believers in global citizenship, the idea that all people have rights and civic responsibilities that come with being a member of the world, with a wholeworld philosophy and sensibilities, rather than as a citizen of a particular nation or place. “Our family believes that walls divide, but travel unites,” says Angela. “Our daughter Angela is part of a kids’ travel council, where she’s able to talk online to other children all over the world about their travel experiences.” Besides all the planning that goes into a year of travel, there’s also the packing. “We’re trying to pack light,” says Angela. “We’ve MAY 2019

finally got it down to two checked bags, one carry-on, and four backpacks for the entire family. Staying in places with all kinds of weather, which also includes rural and urban adventures, has made packing challenging, but we’re enjoying the process. With so many decisions to make, it’s similar to building a house. sweet sunshine With warm spring weather here, add splashes of beautiful color to your landscape with Eternal Sunshine, Red Star, and a Russian Sage called Denim ‘n Lace. BY BETTY MORRELL

hope everyone is enjoying the burst of blooms and sweet fragrance of all the flowers this month. It seems everyday something new is sporting beautiful green leaves and colorful blossoms. How I love this time of the year! There’s a new PP Abelia called Eternal Sunshine. It puts a smile on your face when you look at it! The plant has an abundance of early blooming pink flowers that cover this mounding shrub. Eternal Sunshine is a semi-evergreen plant. Its new leaves emerge bronze in color, then turn yellow, and finally, green. Its leaves do not burn or bleach. You can plant it anytime of the year, and since it blooms on the new wood, it is best to prune in winter to enjoy the full benefit of new growth. Plant Eternal Sunshine in a spot where it will get full morning sun, but stay protected from the hot afternoon sun. A really beautiful plant, it mounds 2 to 3 feet in height and spreads 4 to 6 feet in width. It doesn’t like too much water. Another new plant (PP) is Hypericum “Kolmarest” Red Star. In recent years, Hypericum has risen to

become one of the “top 50 cut flower stems in the world, making it the most successful berry-producing shrub ever”. Red Star has bright yellow flowers in spring and clusters of apple red berries in the fall, making this plant a wonderful addition for any fall plantings in your garden. Plant in full sun to part-shade in average garden soil. Red Star grows 30 to 36 inches tall and the same in width. Use this plant as a specimen or plant in drifts, where they can really show off. Don’t forget to cut them for your flower arrangements— they add a wonderful pop of color. A new perennial in the Russian Sage family (Provskia) is the beautiful Denim ‘n Lace. Not only does it sport lacy-like sky blue flowers held on amethyst calyxes

with strong stems, but the lovely color will last a long time. Denim ‘n Lace loves the full sun, is salt-tolerant and droughttolerant, has fragrant foliage, and attracts hummingbirds. This plant grows 28 to 32 inches in height and spreads 34 to 38 inches in width. Denim ‘n Lace also supplies great cut flowers, which can be dried for arrangements. It is not fussy about the soil its feet are in and it makes a fantastic border plant in your landscape. Plant it in full sun and prune away old foliage in early spring. You’ll enjoy this one. Another new perennial is (Ameria Dreameria) Dream Weaver, commonly known as Thrift or Sea Pinks. This small, colorful plant blooms frost-to-frost in containers or in the garden. The plant is heat-tolerant and easy-to-grow. Dream Weaver sports a deep rose-pink color, and it grows 10 to 12 inches high and wide. Plant this PP plant in a sunny garden location and fertilize it once a month in the garden or bi-weekly in containers. If you have any questions, email me at bamorrell@aol.com. an and Dick Murdock love living in layers. They make their home in River Place, a townhouse community offering three floors of living space and beautiful views of the marsh and the Intracoastal Waterway. Moving from Kiawah Island, where they lived for 20 years, they found the perfect home and natural setting. Jan remembers her first trip to Amelia Island. While in college, she visited her roommate’s grandparents’ family, who were living in Villa Las Palmas. In the 1980s, family gravitated to the island when Jan’s sister, Jodi, had a home here. Dick was a senior captain for General Electric and flew their corporate jets all over the world, meeting interesting people along the way, including Ronald Reagan. Jan flew as a flight attendant 59 AMELIA ISLANDER MAGAZINE •
with Overseas National Airways. Dick is a member of the Experimental Aircraft Association chapter on the island. The Murdocks’ entry gate opens to a paved path lined with pots and plants that leads to the front door. A charming patio hugs the entry level. Citrus trees and flowering plants fill the marshside location. River Place has a community dock that stretches out into the marsh, and the couple often ride their bicycles to the end and enjoy a sunset. Jan has used her decorating talent throughout their threestory home. The home reflects her signature style – lots of white, with special details reflecting the couple’s many interests. The first floor of the three-story townhouse has been designed to be flexible. Some neighboring townhouses use it as an office. MAY 2019

The Murdocks use it as a family room, and occasionally as a bedroom with a pull-out couch. Not to be missed is a large carousel horse that has been part of the family since the Murdocks’ grandchildren were very young. An elevator is available, but the Murdocks use the stairs to go from level to level. Climbing to the middle floor and main living space, the stunning view of the Intracoastal catches your eye. A couch and chairs are slipcovered in white sailcloth. The table between them features a map of Charleston preserved under glass. A whimsical chandelier attracts attention with flamingos and mermaids added to the traditional crystals. The couple spends a great deal of time on the middle-level porch with its built-in grill and television at one end. Jan is enthusiastic about the island’s many shops, where she has found many of the furnishings she has incorporated into the multi-level condominium’s design. She owned a gift shop, Still River, while living in Connecticut and firmly believes in shopping local. A large white oval table in the family’s dining area was an Amelia’s Attic find. One wall in the dining area has oversized bookshelves housing Jan’s eclectic collections. One collection is of antique cameras – a reminder of her father’s career at Kodak. Others include glass bottles in shades of blue and wooden sea birds. An office/den displays memorabilia from Dick’s successful flying career. A world map with bright red pins mark all the spots he has flown. Replica planes of the aircraft he flew are proudly displayed. The third-level features a large master bedroom and master bath. belonged to the former owner, was such a challenge to move that she gifted it to the Murdocks. On the street side of the third-level are two bedrooms. A small room is a cozy space complete with an oversized teddy bear that her grandchildren treasure when they visit. A guest room is decorated in shades of blue and white and awaits visitors. Frequent visitors include the Murdock’s daughter, Rachael, who lives in Charleston with her husband and two children, Emma and Happy. Their son, Richard, lives aboard his 53-foot boat in Stuart, Florida and enjoys coming north to see his parents by boat or car. A
s a kid, I would run all over downtown Fernandina on bicycles with my cousins. We would ride up and down every street and eventually end up at the Welcome Station for a Coke and to play on the waterfront. As it happens, my dad did the same thing with his friends. I got to hear several such stories recently when I sat down to dinner at Brett’s Waterway Cafe with the handiest man in Fernandina, my father Bill Gass.
Dad grew up in Hardee Brothers Hardware Store, which once inhabited the southwestern corner of 3rd and Center streets. Working there, he learned to fix just about anything; conversely, all I can fix is dinner. Tonight, however I was off the hook, as Chef Brett Carter was at the helm. Chef Brett grew up in his grandmother’s kitchen, turning out his first batch of cornbread at age five and getting involved in whatever she was cooking. When I was cutting my culinary teeth as a teenager, Brett was setting the bar for culinary excellence in Fernandina Beach. His sense of style and flavors were fresh and a little ahead of their time in what was still a sleepy little beach town. These days, his 66 AMELIA ISLANDER MAGAZINE •
restaurant sits at the head of Center Street on the Amelia River, and his food is still garnering rave reviews. Tonight, we would enjoy several of Chef Brett’s special dishes. We started with a glass of Fleur de Mer Rose to accompany a Thai Shrimp Pizza and an order of Escargot with Shrimp in a Gorgonzola Butter Sauce. With brilliant color, the rose had aromas of Mediterranean herbs, faint citrus, and melon. Softtextured with a mineral finish, the acidity accented perfectly the earthiness of the escargot with its savory, tarragon-scented sauce, while also bringing to life the fresh flavors of the local shrimp with cilantro and peanuts. Afterwards, we shared a beautiful salad of mixed greens tossed in an apple cider vinaigrette topped with candied walnuts, chevre, and fresh beets. For our entrees, we both chose seafood. I opted for sea bass, fresh from New Zealand, while Dad opted for the flounder from local waters. The flounder was baked, stuffed with fresh crab filling and lobster, and served over asparagus with a lobster cream. This was the perfect choice for the sentimental traditionalist. The sea bass was pan-seared and served atop an herb potato cake with a sweet pea hummus with heirloom carrots. Our server, Audra, suggested a glass of the Martin Codax Albarino from Spain with our entrees. The wine was perfect, vibrantly acidic but delicately fruity, bringing out the silty flavor of the flounder and the buttery flake of the sea bass. We finished every bite. Satisfied, but interested in something sweet to finish the evening, Chef Brett sent out another secret he had learned from his grandmother: a silky smooth banana pudding with sliced bananas and vanilla wafers topped with elongated slices of banana bruleed with caramelized sugar. Traditional favorites and cuisine nouveau are available at Brett’s Waterway Cafe daily from 11:30 a.m. to 2:30 p.m. and 5:30 p.m. to close. They are closed on Sunday for dinner. MAY 2019

ong before there was Food Network, Iron Chef, kale chips, and moringa powder, there was a “chicken in every pot,” according to my mid-century mother. A beautifully roasted chicken was the epitome of the perfect Sunday dinner, served alongside pillowy mashed potatoes and a pitcher of gravy. This Mother’s Day, I decided to honor my mom and all the mid-century moms by hosting a Mother’s Day dinner that she would be proud of. I invited my friend Jane Bailey, who also had a mid-century mom, to help me prepare the feast and decorate the table in 1960s splendor. In today’s world, where you can grab a rotisserie chicken off a warming tray at the grocery store, it seems like no one knows how to roast a chicken anymore. But there’s nothing like a simple chicken cooked at home—the smell as it roasts; the crispy, buttery skin; the tender,
succulent meat... yum! This Mother’s Day, however, we’re going to forgo the mashed potatoes and instead serve a heaping plate of fresh asparagus, since that was my mom’s favorite vegetable. Jane is making a red Jello dessert with strawberries (straight from Plant City!), and we’re also making minty green pea soup as a first course. The key to a perfect roast chicken is to smear the outside with butter or olive oil, and season it well. We like to use poultry seasoning, with lots of salt and black pepper. Cook your chicken at 375 degrees, which will get the skin super-crispy. A 4-pound chicken will take about an hour and a half, but use a thermometer just to be sure. When you take the chicken out of the oven, let it stand covered for about 10 minutes. Then, cut it into serving sizes and enjoy. Happy Mother’s Day to all the moms out there!

Preparation Clean the chicken, removing giblets from the cavity. (You can save these for gravy if you wish.) Tie the legs together using butcher’s twine, then rub softened butter all over the surface of the chicken. Season well with poultry seasoning, salt, and pepper. Roast at 375 degrees for about one-and a half hours, or until a thermometer inserted in the leg joint reads 180 degrees. Let rest, covered, for 10 minutes before serving. (If not making gravy, you can serve the drippings alongside the chicken.) MINTY GREEN PEA SOUP Ingredients 3 tbsp. unsalted butter 1 medium onion, chopped 4 cups low-sodium vegetable broth, divided 6 cups frozen peas, thawed 1/4 cup fresh flat-leaf parsley leaves 1/4 cup fresh mint leaves Salt and pepper Preparation Melt butter in a large heavy pot over medium heat. Add onion and cook, stirring often, until softened but not browned, 6 to 8 minutes. Add 2 cups broth and bring to a boil. Add peas, reduce heat, and simmer gently until tender, about 2 minutes. Remove pot from heat. Add parsley, mint, and remaining 2 cups broth to pot. Purée soup in a blender or with an immersion blender, thinning with water if soup is too thick, until smooth. Season soup with salt and pepper. Serve with a dollop of sour cream, if desired.
