ith its fascinating history and enchanting beauty, Amelia Island draws people from all over the world. To residents of Amelia Island, this picturesque oasis, steeped in Southern charm, is considered by many to be the perfect place to live, with its
sparkling beaches, indigo skies, and the shimmering waters of the Atlantic Ocean. But Amelia Island is much more than a pretty face—it’s a thriving, healthy community whose populace reflects a myriad of cultures and traditions. Fernandina

Why I Love AMELIA ISLAND
DICKIE ANDERSON Dickie Anderson is a local writer and author whose fascination with the Historic District is readily apparent. She volunteers at the Amelia Island Museum of History, writes often about the island’s history in her weekly newspaper column, and even wrote a book about the downtown’s iconic Victorian-era homes. “Asking what I love about Amelia Island is like asking which is my favorite child or grandchild,” says Anderson. “Of course, my first and most immediate response is the beach. Few places offer such easy access to such an amazing stretch of sand that’s never the same each time I visit.” “When people ask what is unique about the island, I am quick to say it is not just a beautiful island with all the amenities, but it is a very real place—a Mayberry with tides,” she says. “Old-timers and newcomers mix together and team up to support community happenings and the island’s many nonprofits. Amelia Island is ever changing. It feels like, recently, almost too fast. It’s no

longer the best kept secret, so I guess I have to learn to share cheerfully! I am proud to call Amelia Island my home sweet home.”
Lori Lecker with Lulu
LORI LECKER Lori Lecker is a local entrepreneur who owns three downtown businesses with her husband, John—lori+lulu, Pearl, and JJ COOPER. She and John moved to Fernandina Beach 14 years ago. “We are so proud and happy to have created three little boutiques downtown on Centre Street,” says Lecker. “Doing so has been the highlight of our career. I have visited almost all of the coastal towns of Florida, Georgia, and the Carolinas, and there is simply no better place to live than Amelia Island.” Born in Jacksonville in 1961, Lecker attended St. Andrews Episcopal Day School until her family left Jacksonville and moved to Fernandina Beach, where she attended sixth grade. “Afterwards, we went on to live all over the country,” says Lecker. 12 AMELIA ISLANDER MAGAZINE • JUNE 2017

“I always looked forward to returning every year to Fernandina Beach, where my family rented a little vacation beach cottage. My grandparents chose to retire here in the 1970s, and my parents followed in the ‘80s. I’ve always felt my roots are here, and I get a sense of peace whenever I drive over the Shave Bridge. MARSHA DEAN PHELTS A third-generation Floridian, Marsha Dean Phelts, a charter and life member of the James Weldon Johnson Branch of the Association for the Study of African American Life and History, has spent her life on the northeast coast of Florida, in 14 AMELIA ISLANDER MAGAZINE • JUNE 2017

Johnny Miller is the mayor of Fernandina Beach, and he encourages his constituents to visit him at the oldest bar in Florida, The Palace Saloon, where he works as a bartender. He’s lived on Amelia Island for the past ten years with his wife, Lori, after having retired from the Navy. Their daughter, Summer, attended Fernandina Beach High School, and Miller’s mother, Nancy Fishburn, also lives on the island. Miller considers Amelia Island the perfect place to live and raise a family. “Fernandina Beach has a small town feel to it,” says Miller. “It has a gorgeous beach, and we love living near the water. Lori and I adore the community here. We have a large cross-section of residents on this island, and we’ve seen how people come together to support each other when needed. “The Palace Saloon draws folks from all over the world, but we also have lots of
regulars who have become good friends. People are always welcome to come in to talk to me about community issues, and I’m eager to listen to their concerns. I may not have grown up here, but I consider Fernandina Beach to be my hometown now.”

In addition to a relaxing day at the beach (if there is such a thing with three children), my family enjoys walking along Egan’s Creek Greenway. We have so many natural resources available to explore on the island!”

She lives modestly, but finds she is amply entertained with her passion for creativity and the natural world. “I love my life here, from the big trees surrounding my home, the foster squirrels I have who live there, the plants I grow for the butterflies I raise, to being able to realize my goal of being a full-time artist with my own gallery.” “But the most exciting part is my dream volunteer job as a Sea Turtle Volunteer,” she says. “For the past 15 years, for six months of the year, Fort Clinch State Park becomes like my second home as I check for nests, watch for hatching, and dig into the sand to provide data on the productivity of the nest laid. “All of this would not be reason enough, if it weren’t for the good people who share this island home. They are a healthy mix of old timers and newbies, but all with a heart as big as all outdoors. We sometimes disagree on issues, but

AARON BEAN State Senator Aaron Bean comes from a long line of Fernandina families, and he has never thought about living anywhere but on Amelia Island since he became an adult. “I’ve always envisioned living here,” says Bean. “Our community is well-rounded, and it’s a place where everyone knows your name. The schools are great, and besides tourism, we have other thriving industries that make for a healthy community. It’s great place to raise a family, a true slice of Americana.” Aaron’s love for Amelia Island began with his mother, Joan Bean, who has been inspiring young people for 60 years with her Bean School of Dance, located on South 3rd Street in downtown Fernandina Beach. For generations, her dance school has held a special place in the hearts of local children and families, and Joan’s love for young people is apparent. “It’s a thrill to see our Amelia Island young people grow up, then come back to visit,” says Joan. “They inspire me!”

Aaron’s wife, Abby, is executive director of the Nassau Education Foundation, whose vision is to maximize support for local public education by providing funding to furnish students with the skills needed to compete in our 21st century economy. “Aaron and I have always been involved with our local school system,” she says. “We love our students and feel that they are the community leaders of tomorrow. Our Amelia Island young people mean the world to us.”
ERIC CORBETT When Amelia Island resident Eric Corbett turned 18, he couldn’t wait to leave this island community. By the time he turned 28, he couldn’t wait to move back. Coming from many generations of Corbetts on Amelia, Eric’s roots run deep. “My wife, Marie, and I have been married for 15 years, and we have a son named James, who will become the fourth

This community comes together to take care of one another, unlike any other.” Eric and Marie volunteer at James’ school, and Eric coaches Babe Ruth baseball. “This is my number one favorite thing to do,” says Eric. “Besides our church community, our yoga community, and our business community, our school system is one of the best things about Amelia Island. Parents chip in at school and work together to help our children succeed.”
JOSEPH MARASCO Executive Director of the Amelia Island Chamber Music Festival, Joseph Marasco purchased a beach condo on Amelia Island with his wife in 1982. The couple loved the island so much they decided to retire here from Pittsburgh in 2000. “I’ve seen a lot of growth and change since we first came here,” says Marasco. “But that’s not necessarily a bad thing. In fact, the growth has provided our residents with all sorts of cultural offerings, like the Amelia Island Chamber Music Festival. These opportunities enrich the fabric of our island and help bring people together.” “One of things I love about Amelia Island is its friendly atmosphere,” he says. “We have people from all different backgrounds, and this enhances the quality of our community. It’s a working community, not just a resort community, like some other coastal areas. Amelia Island is a place where people flourish. We help one another, we volunteer, we know our neighbors, and we come together to make our island a better place to live.”

Today, Saltmarsh owns the Florida House Inn, along with the Green Turtle, the Beech Street buildings, and the old Down Under property. “I love restoration, I love Amelia Island, and everything I do is a labor of love for me,” says Saltmarsh. “Why do I love Amelia Island? I guess it’s the lifestyle, the casual, relaxed feeling I get when I drive over the Shave Bridge after having been away for a bit. When I go away, I miss the island and people who live here. When I come back, my heart rate settles. Amelia Island is where I want to be.”

TRINITY LOVE HOBLIT FOUNDATION HOLDS INAUGURAL GALA On June 17, the Trinity Love Hoblit Foundation welcomes the public to its Inaugural Gala from 6:30 to 9:30 p.m. at The Ritz-Carlton, Amelia Island to support and fund neuroscience research for stroke and aneurysm for pediatric and adult patients receiving treatment at Wolfson Children’s Hospital and Baptist Neurological Institute. Trinity Hoblit, who was born with a rare form of primordial dwarfism, was diagnosed with multiple brain aneurysms at age 9 and over the years went through multiple brain surgeries. Trinity was scheduled for an open brain surgery for aneurysm clipping, but two days prior to her pre-op, her aneurysm ruptured and she passed away on June 30, 2015 at age 14. The Inaugural Gala will help raise awareness and educate the public in the fields of neuroscience, as well as support local education facilities and schools. One hundred percent of the net proceeds received by the foundation are donated back to the community for neuroscience research for stroke and aneurysm. A portion of all gifts to the Trinity Love Hoblit Foundation Endowment at Wolfson Children’s will be matched by Baptist Health. ince opening in 2008, the Plantation Artists’ Guild and Gallery has been supporting and encouraging its artist members to sell their art and interact with fellow artists and the public. Located in the shops of the Omni Amelia Island Plantation Resort, the artists produce quarterly gallery-wide shows and often host visiting artists in month-long shows of their work. The visiting artists also provide demonstrations and classes to inspire members and the public alike. The Guild and Gallery now features 39 artists, mostly residents of Amelia Island Plantation. It is a cooperative gallery that is run by the artists themselves, and visitors to the gallery are encouraged to meet and deal directly with the creators of the art. The PAG&G often partners with Osprey Village, which provides opening receptions for some of the shows. Additionally, most openings function as fundraisers for local charities. This year at the gallery has been designated a year of charities for children. The current show is called “Arts Alive,” in recognition of Arts Alive Nassau, whose mission is to promote the
arts by providing free opportunities and educational experiences to children who might otherwise have little or no access to the arts. AAN collaborates with Nassau County schools to provide school art programs with artists, teachers, supplies, equipment, and funding. Artwork from the children enrolled in their classes will be on display, along with the art from the PAG&G members. Located at 94 Amelia Village Circle, the gallery overlooks the golf course, providing the opportunity for resort guests and community residents alike to enjoy quiet time while perusing the local art. essica Miller purchased Fifi’s Fine Resale thirteen years ago from the queen of resale herself, Fifi Queen. Jessica met Fifi when she and her husband were selling their townhouse and boat. Fifi answered their ad, and after looking at the house and vessel, Fifi exclaimed, “Hey, do you want to buy my consignment store?” For Jessica, who was working in fashion merchandising in Jacksonville, the business was a perfect fit! Since then, Jessica has become the new queen of resale on Amelia Island, specializing in gently used authentic designer clothing, handbags, footwear, jewelry, and accessories for the savvy shopper. Jessica attributes Fifi’s success to their friendly environment, great prices, designer brands, and knowledgeable staff. “People come into the store and say, ‘Wow, this doesn’t look like a consignment store; it feels like a boutique shop!’ That’s a real compliment, because that’s exactly what we want our store to be!” Customers who consign clothing can choose their own method of payment. “We can take what you have and give you cash on the spot,” says Jessica. “Or we can sell your items individually and pay you as they sell. We also purchase clothing and accessories through estate sales, which makes things easier on family members.” In July, Fifi’s takes part in a Consignment Crawl during National Resale Day. Shoppers receive special discounts, refreshments, and have a chance to win gifts and prizes. Fifi’s is located at 1853 South 8th Street. our future welder, police officer, pilot, doctor, CPA, and IT expert are ready for action! Meet the Fernandina Beach High School (FBHS) Class of 2017. “This is a unique and diverse group of outstanding students,” says their guidance counselor, Sarah Coombs. Composed of 229 graduates, four of whom completed their studies mid-year for early college admission or to enlist in the United States Navy. “The majority are headed to four-year colleges and state colleges in Florida, surrounding states, and beyond to Maine, Oklahoma, New York, Colorado, Texas, Canada, and even Puerto Rico, while others will begin a career in the United States Army, Coast Guard, Marines, and Navy.” As this class transitions from high school to college, we invited them to look back at the last four years and reflect on what they remember fondly, and what they will miss from their time at FBHS. A common theme running through each student’s remarks was the outstanding staff at the high school. “Our school is made special by all of the amazing teachers and other faculty,” confirms graduate Coby Hancock. “If a
student has trouble understanding a concept in class, almost every teacher will go out of her or his was to help that student.” Ashlyn Rowland echoes Coby’s perspective. She took advantage of a wonderful opportunity last summer thanks to the extraordinary efforts of her teacher, Sharon Belcher, who is retiring this year. “I had the amazing opportunity to attend the Envision Medical Seminar at Emory University, where I was exposed to the variety of opportunities I will have in the medical world. This experience confirmed for me that I wanted to pursue a career in nursing and work with children. My anatomy teacher made this opportunity possible.” Ashlyn is accepted to Samford University’s nursing school with multiple scholarship awards, and she hopes to join a sorority there. Katie Rojas credits the FBHS staff with helping her to strive for the best and become a person with a goa—and a big goal at that! Katie will attend University of North Florida and major in chemistry, after which she hopes to transfer to a medical school continued on page 52.

and become a physician’s assistant in orthopedics. As she works toward these goals, she will be employed as a Certified Nursing Assistant thanks to the training and certification she received at FBHS. As you can see, this class is one smart bunch, who have achieved impressive things with their excellent education at FBHS. This class also boasts—for the first time since the 1960s—three National Merit Finalists, who will become National Merit Scholars when they accept their scholarships. Congratulations to Gabrielle Bayacal, Jessica Clark, and Scott Wardrop. And they’re not just smart, but talented as well! “We have athletes taking their sports to the next level in football, volleyball, softball, cross country/track, baseball, and swimming at colleges and universities throughout the United States,” says Sarah. In addition to academics and sports, members of the Class of 2017 have fascinating hobbies and interests, too. Coby, for instance, has already earned his private pilot’s license. He also works with Katie at the Fernandina Beach Fire Department as an Ocean Rescue Lifeguard, where he received the Rookie of the Year Award last year. Katie served in the position of supervisor. Coby plans to pursue his passion for flying by working on his instrument and commercial ratings while attending the University of Florida. Meanwhile, Katie counts as her most treasured memory of her last four years the celebration of her fifteenth birthday with a quinceanera, a Latino cultural celebration that marks the transition for girls from childhood to womanhood. “My classmates participated and enjoyed the music, and I am grateful for the effort my parents put into the event,” says Katie. “This marked the beginning of a new start, of having more responsibilities and thinking beyond high school.” To the entire Class of 2017, as you all begin to think beyond high school, we offer our best wishes for the years ahead. sassy shrimp Shrimp plants grace the gardens of shrimp lovers near and far with their rusty red spikes that look remarkably like shrimp. BY BETTY MORRELL

love June when shrubs, trees, roses, and annuals are showing off their spectacular growth and vibrant colors. Add that to the appearance of hummingbirds and butterflies, and you’ll discover why nature is a gift God has given to Man. Now that the Shrimp Festival is over, I’m studying my Shrimp Plant, a semi-tropical perennial and a must for our gardens. It does well in a container on your patio or planted as a feature plant in the garden. I have the red shrub; it also comes in tree form which can grow to 8 feet in height and spreads 4 to 5 feet. The shrub grows 3 to 4 feet tall and the same in width. The plant also comes in golden yellow and is more compact, growing only 2 to 3 feet in height and width. Shrimp Plant earns its name from graceful flower heads, known as bracts. This easy-to-care-for evergreen plant displays blooms in mass making, it a part of any year-round color option. The bracts, which hold tiny and insignificant white flowers with 2 purple dots, tip each stem with a spike of rusty red or yellow

think of to describe this new captivating elephant ear. Light actually bounces off of each dark, chocolate rippled leaf, leaving a bold, reflective sheen. The underside adds another element of surprise - dark maroon supported by near black stems. Black Ripple is equally effective as a container plant on a sunny patio. Plant Black Ripple in full sun and enjoy its clumping habit and year round interest. It grows 3 to 4 feet in height and width. Be sure to remove dead leaves during the growing season. I’m not sure how ended up with a fern display, as they’re not one of my favorite plants. But I recently came across a fascinating new one called East Indian Holly Fern, native to the forests of China and Japan. Dark green leaves and light yellow variegation down the midrib makes this fern a charming evergreen plant which adds distinctive elegance in partial shade or high light. aving vacationed on Amelia Island for many years, Georgia-based couple Kim and John decided they needed a personal getaway for themselves and their three boys. “We love Amelia Island for all of its beauty, and because it’s not too far from home,” says Kim. In May 2015, the family closed on their unit at Beachside in Amelia Island Plantation. They were eager to redesign the space, but thought it smart to live there
first and learn how they used the home before making big design decisions. “Our family has known Julie Johnson for years,” explains Kim. “Julie owns Julia Hall Interiors on Amelia Island, and we started to work with her that summer to plan our dream remodel for the condo.” On Labor Day, the couple and Julie, along with her fellow designer, Benjie McEntyre, cleared out the old to make room for the new. “Redesigning

the kitchen was my main objective,” smiles Kim. “In its original design, the kitchen, while large and centrally located, was closed-in and hindered movement. I wanted a large island where we would all be able to sit together.” “The kitchen was the biggest transformation and the biggest challenge,” confirms Julie. “We were able to deliver a gorgeous, huge, working island that seats the whole

family and provides an ocean view. We listened to Kim, and made it happen!” When determining the coloring for the space, soft hues of sand and water were selected to echo the beautiful natural surroundings. The rest of the kitchen follows this pattern, with its gorgeous and abundant cabinetry by Mooney’s Custom Woodworks. The family also credits Art Sanchez for his amazing work as contractor for the design modifications. They explain

that he, Julie, and Benjie made the project as easy as it could be. “Art was a crucial member of the team,” says Benjie. “His experience and knowledge, paired with his ‘can-do’ attitude, allowed us to achieve these beautiful results. He is always open to our ideas and how to make them a reality. “For example, Kim and Art were discussing the lack of symmetry in the master bedroom, and he suggested covering the window. He was right—

there was no view from that window— and now the bed is centered.” The team achieved great results with out-ofthe box thinking that maximized the space available. Bill Mooney deserves a thumbs-up as well, especially in the lounge. “We knew we wouldn’t use a formal dining area,” say Kim. “And we wanted a sleeper sofa somewhere for the boys to bring friends.” The team worked together to create a lounge space in place of the dining

Mooney’s craftsmen constructed a gorgeous custom built-in hickory wooden bar to Julie and Benjie’s design that perfectly disguises an icemaker and refrigerator while appearing to be a beautiful piece of furniture. The living space was transformed as well. The original, dated built-ins were removed and replaced with a counterheight shelf with cabinets and a fireplace beneath it. The television was balanced with large canvasses commissioned from

D
avid’s Restaurant & Lounge is one of my favorite fine dining establishments on Amelia Island. For a special dinner with friends and family, you can’t beat David’s refined atmosphere and their attention to detail. Recently I made a reservation at David’s for myself and my friend, Teri, who had just moved back to Fernandina Beach. A celebration was definitely in order! Our server Mark suggested a glass of Giesen Sauvignon Blanc from New Zealand, a clean, crisp, and vibrant white wine that we enjoyed with Chef Devin Odom’s Amuse-Bouche, a single bite of honey cream cheese topped with fresh strawberry compote, along with David’s freshly baked bread served in a real treasure chest. A fine start to our dinner.
Mark then brought us a Chilean Sea Bass Cake, served over mixed greens with red onion, cherry tomatoes, lemon caper remoulade, and basil pesto. We also ordered Brie En Croute, brie cheese wrapped in puff pastry, baked to a golden brown and served with berry puree and apples. These two appetizers complemented each other beautifully, as sweet and savory flavors do, just perfect for sharing with a friend.
Teri and I are salad fiends. She ordered the Iceberg Wedge, served with sweet onion marmalade, cherry tomatoes, house braised bacon, Danish blue cheese crumbles, and topped with blue cheese dressing. I chose the Beet Salad, featuring red and golden beets with goat cheese, candied pistachios, mixed greens, and balsamic vinaigrette. What beautiful and delicious salads! After our salads, we enjoyed Crab Bisque, prepared with lump crabmeat, vegetables, and herbs, a very rich soup course that paired well with another wine, Sonoma Cutrer Russian River Chardonnay. At this point, Teri was gushing about David’s food and their impeccable service. When it seemed it couldn’t get much better, Mark brought us Lemon Sorbet to cleanse our palates and prepare us for our entrees. David’s Signature Delmonico Ribeye, served with sautéed wild mushrooms, roasted garlic red bliss mashed potatoes, broccolini, and foyot sauce (béarnaise prepared with meat glaze), is truly extraordinary. Teri called it one the best dishes she has ever tasted. I would have to say the same for my pan-seared Chilean Sea Bass, served with truffle mashed potatoes, grilled asparagus, red pepper coulis, and lemon beurre blanc. Two classic dishes, perfectly prepared. It’s was tough to think about dessert after such an extravagant meal, but it’s hard to turn down David’s Key Lime Pie and Salted Caramel Cheesecake, paired with Warre’s Otima well-balanced 20 year old tawny port. David’s has two event areas available for larger gatherings, including a stunning private wine room that accommodates up to 12 guests. For a larger gathering such as a wedding reception, rehearsal dinner, or corporate meeting, their smaller private dining room accommodates up to 50 people. David’s is also famous for their whole Alaskan King Crab, shipped straight from the Bering Sea, caught aboard the Deadliest Catch boat. David’s is open for dinner seven days a week, and be sure to spend some time in their lounge, which opens at 5 p.m. and features some of the finest libations in the area. organization and almost all of the community partnerships composed of in-kind donations of time and talent came directly from Benjamin and his professional relationships with the construction industry in Nassau County.” Benjamin is a huge advocate for public-private partnerships. “These partnerships allow projects to be executed in a shorter timeframe and lower cost than if they remained in the public realm,” he explains. “For example, through the generosity of the numerous local businesses that provided us with discounted labor and materials as well private donors and foundation grants, we were able to deliver a park that would have cost the City $700,000 for an investment of only $175,000 in public funding. That’s turning each dollar of public funds into four dollars, a win-win situation.” The park is a win for everyone, with its meditation labyrinth, pet watering station and fire hydrant, bird watching platform, bat box, fishing dock, kayak launch, quarter-mile track surrounded by universally accessible exercise stations, and a large field perfect for a Frisbee or football toss. “It’s literally like everyone in the town has a free gym membership,” says 8 Flags Playscapes treasurer Sharyl Wood. “This is also the only lighted walking path in the city thanks to the state of the art LED lighting, a generous donation by Florida Public Utilities.” But that’s not all! 8 Flags Playscapes is now visioning the second phase of this project, planning for a universally accessible playground targeted at a slightly older audience than Pirate Playground. “It will present an adventurestyle component, more physical, more athletic,” reveals Benjamin. “We are excited about bringing this to fruition by mid-2018, but we will need help!” The 8 Flags team is overwhelmingly grateful to its partners in the community. hen I posted the question on social media, “What’s your favorite summer food?” nearly every response included melons. Whether you prefer watermelon, honeydew, cantaloupe, casaba, or canary, all are at their best during the summer when they are ripe, sweet, and juicy. As a kid, my favorite way to enjoy watermelon was cut into enormous slices and eaten in the backyard with my younger brother, spitting the seeds into the grass. These days, melons are found on the menus of the most prestigious restaurants, served in many ways, and many of our food-savvy Amelia Islanders have their own special summer melon recipes. For local resident Michael Howerton, chilled melon soup is the perfect dish on a hot summer day. “I take cucumber, honeydew, yogurt, and jalapeno, and puree them in a food processor,” he says. “Then I chill the soup and serve it garnished with fresh mint.” Chef Michael Gass, culinary instructor at Fernandina Beach High School, is particularly fond of Thai Watermelon Soup. “Take the flesh from one medium watermelon and puree it with 1/2 cup candied ginger, 2 tablespoons fresh grated ginger, 2 chopped hot chiles, and a bunch of cilantro,” he says. “Add 3-finely chopped Granny Smith apples, chill, and serve.” For Marge Wilson, a summery Melon Birthday Cake was a divine surprise for her health-conscious friend. “It was a big hit!” she says. “I added yogurt with lime zest, raspberries, and blackberries. Totally fun, delicious, and gluten and sugar-free!” Jennie Stephens, owner of Red Otter Outfitters says her husband Ben makes a great Watermelon Martini. “Muddle a chunk (approx. one 2 in. by 2 in. cube) in a shaker to render at least 1/2 shot of watermelon juice. Add 1/4 shot of simple syrup, 3 shots of unflavored premium vodka, and ice” she says. “Shake with ice until mixture is ice cold. Moisten martini glass rim with a piece of watermelon and dip the glass into a mixture of sugar and salt (if you wish). Strain the liquid into the glass, garnish with a twist of lime or mint leaf, and serve.”
Cynthia Porter’s son-in-law is fond of grilled fruit, and cooks up all sorts of melons for family barbecues and pool parties. “He sprinkles the melon slices with fajita seasoning, and then places them on a hot grill. The sweetness of the melons and salty nature of the spice are so good on a hot day!” Fernandina foodie Lois Winkler is known far and wide for her Watermelon Tomato Salad, and is always requested to bring it to summer gatherings. “Combine 4 to 6 chopped tomatoes with the flesh of one medium watermelon, cubed, in a bowl,” she says. “Add a teaspoon of salt and toss. Mix 1/f4 cup olive oil and 2 tablespoons sherry vinegar together and pour over the tomato/melon mixture. Then toss in 1 cup crumbled feta cheese, mix gently, and serve.” So what’s my favorite melon recipe? I’m particularly fond of canary melons, which are similar to honeydew, but sweeter, like melon candy! I like to make Canary Melon Daiquiris by mixing 2 cups frozen canary melon cubes with a 6 ounce can of frozen limeade, 1 or 2 jiggers light rum, and enough cold water and ice to process in a blender until it’s thick and icy. It’s a great start to a summer picnic or party. I’m so glad summer is finally here!
