The everyday people, the unsung heroes, who quietly keep everything on the island humming along so smoothly. In our cover story this month, we take a look at a few familiar and unfamiliar faces whose passion for their work and for our island helps make this such a special place. In her travels around the island, Dickie Anderson encountered people who make a difference in our island life, most unobtrusively, but whose decision to bring their best to what they do every day and make a positive impact contributes to Amelia Island’s unique character. W

hat makes Amelia Island such a wonderful place to live? There are so many answers to this question, so many dimensions, that make life on Florida’s northernmost barrier island so ideal. What do we treasure, and who are the people working behind the scenes every day to make life so good here? While profiling some of the familiar faces we see every day, I came to understand that what makes our island so vibrant is Dickie Anderson is a free-lance writer and the author of six books. Her popular column, “From The Porch,” appears weekly in the Fernandina Beach News-Leader. Great Homes of Fernandina, her guide book to Fernandina Beach’s Historic District, continues to be a bestseller. 11 AMELIA ISLANDER MAGAZINE •

the compassion and commitment of the people that call the island home. In this feature, we will take a look at a hospital administrator, an island artist, an author, a police chief, an ocean rescue supervisor, the president of a tennis club, a community volunteer, a musical theater owner, island photographers, and the curator for the Amelia Island Museum of History, and learn why they are so dedicated. Steve Leimberg is a professional fine arts wildlife and portrait photographer, who has co-authored several books including A Day on Amelia, A Day at White Oak, and Birds of Amelia I and II. He chronicles our island’s people, trees, and birds in the Amelia Islander Magazine. JUNE 2020

Haynes Cavendar Born and raised on Amelia Island, Haynes Cavender started working for the Division of Ocean Rescue as a teenager and is now the Supervisor of Ocean Rescue for the Fernandina Beach Fire Department. He is a critical person in securing the safety of the many people who enjoy Amelia Island’s beaches. He supervisors 60 seasonal lifeguards. He also is a CPR instructor in a program that very actively promotes CPR training. As a young lifeguard, he found he had a strong passion for water rescue. He continues to expand his certifications, attending EMT school, the U.S. Lifesaving Association Training Officer Program, and receiving a CPR/First Aid Instructor certification. He has an Associate’s degree and is pursuing a Bachelor’s degree in Business Administration. Growing up on Amelia Island, Haynes has experienced so much of its history. He loves being here in the busy, busy times like the Shrimp Festival and the quieter, more peaceful winter months. He treasures the beauty of an island the delivers a beautiful sunrise over the ocean, and then a breathtaking sunset over the Intracoastal Waterway. He is never far from the beach, but he can often be found home with his cat, Oscar. “I love that you wake up in the morning and watch the sunrise over the ocean, and then you can watch the sunset over the Intracoastal Waterway.”

Dee Torre Kaufman Dee Torre and her husband, Adam, bought a home in the Historic District in 2003 and started a restoration. As an independent consultant, the couple fell in love with all that the island offered. Their home was featured on the Amelia Island Museum of History’s Holiday Home Tour in 2008. Committed to the museum’s annual tour, she volunteered for the next nine years as a “house mother.” Priding herself on giving back to the community, she also joined the Friends of the Library board in 2008 and took on the challenge of their highly successful $2.4 million capital campaign. Since 2006, she has been on the board of Take Stock In Children Nassau, where she wears many hats and is currently in charge of Marketing and Development. Prior to her move to Amelia Island, Dee evaluated statewide and national education programs. Dee now devotes her time to volunteering. Adam is president of the Restoration Foundation and serves as chair of the City’s Code Enforcement and Appeals Board. They share their home with three dependent cats: Leon, King Arthur, and Simon. When not sharing her energy with the community, she is busy reading, cooking, gardening, and enjoying friends and the island’s natural beauty. “Unless someone like you cares a whole awful lot, nothing is going to get better. Mandy Haynes Mandy Haynes is familiar face at Story and Song Bookstore and Bistro, where she shares her knowledge and enthusiasm for the written word. Three years ago, she left her job in Tennessee, sold her house, and gave everything away. Her plan was to travel the East Coast with her three dogs, emulating John’s Steinbeck’s Travels with Charley. Instead, she fell in love with Amelia Island, bought a house, and is living the creative life she yearned for. She has published her first book, Walking the Wrong Way Home, to great critical acclaim. Amelia Island’s Live Ink Theater has produced a staged reading featuring Hayne’s quirky characters that will be scheduled in the near future. Her second book, Sharp as a Serpent’s Tooth, is due out this summer and a novel is in the works. Mandy never tires of new projects, whether welding, metalsmithing, painting, designing jewelry, or repurposing furniture. A vibrant mural of dragonfly wings adorns a wall at Story and Song. To say she loves creatures is an understatement. In addition to her three rescues, Moe, Curly and Pearl, she has a large water turtle name Albert. “What I love most about Amelia Island is the creative and free spirit jive that surrounds it. It’s in the air, you can’t miss it. Artists of every kind—musicians, painters, sculptors, storytellers, actors, writers—are everywhere.”

Ed Hubel Ed Hubel serves as Hospital President for Baptist Medical Center Nassau. The hospital has received an A rating for five consecutive years, making the hospital another point of pride for Amelia island and Nassau County. Ed has held many positions since joining Baptist Health in 1986. Prior to his work with Baptist, Hubel was in the aviation industry and proudly received his pilot’s license while in high school. Committed to his community, he is a member of Nassau County Chamber of Commerce, Nassau County Economic Development Board, and the Health Planning Board (NE Florida). He is a mentor for the Boys and Girls Club of Nassau County and also serves as a mentor for future healthcare leaders through the American College of Healthcare Executives and local college and health organizations. Hubel and his wife, Kristie, and their Golden Doodle, Lily, reside in Fernandina Beach. Hubel has a passion for servant leadership, his faith, and his community. He enjoys fishing, music, sports, and journaling. “As we’ve been weathering this pandemic, I have never been more proud to be a Nassau County resident,” says Ed. “Seeing the community come together and step up to support each other has been phenomenal. Dawna & Scott Moore Photographers Dawna and Scott Moore capture beautiful images of Amelia Island and share their talents with other local photographers. They lead photo walks and teach photography on everything from a cellphone to a professional camera. Scott is retired from Kings Bay Naval Base, and Dawna is a full-time real estate photographer with East Coast Virtual Tours. The pair grew up in New Hampshire and still have lots of family in New England. They are self-taught photographers, who have learned the art of photography through classes, workshops, and spending time with other photographers. Recently, they collaborated with their good friend, Steve Leimberg, on a commission from the White Oak Conservation Center to create a book featuring the center’s activities and its amazing menagerie of protected animals. One memorable photo shoot arranged by Leimberg at the Jacksonville Zoo allowed the couple to photograph the early morning activities of the animals before the zoo opened. Some of their favorite photo spots are sunsets at Amelia Island State Park, wildlife at Egans Creek Greenway, sunrise at Boneyard Beach on Talbot Island, and the Historic District. When at home, they enjoy their cats, Max and Molly. “We treasure the small-town vibe and community, and spending time in state and national parks and historic destinations.”

Joshua Whitfield Curator of the Amelia Island Museum of History, Joshua Whitfield has lived on the island since 2018. A Georgia native, he has found a home he loves. As curator, his duties include running two monthly lecture series (the “3rd on 3rd” and “Brown Bag Lunch” lectures), developing quarterly exhibitions, conducting local history research, and overseeing the archives and research library in partnership with the museum archivist. In addition, he represents the museum in community organizations, including Arts and Culture Nassau and the Amelia Island-Fernandina Restoration Foundation. During the recent pandemic, Whitfield produced a series of videos called “Collections Connections” for the museum’s Facebook page in which he discussed local history and objects, allowing people to stay in touch with the popular island museum. When not working, Joshua loves to explore Egans Creek Greenway, American Beach, and Fort Clinch State Park. He shared his enthusiasm for a cruise on the river with its views of the island, as well as the dolphins that can be spotted. He also admits to visiting the Orlando theme parks every five years or so. “We work to maintain a vast repository of the community’s knowledge, history, and culture. That being said, I also believe that history is fun. It’s a balance of keeping our visitors entertained and informed.” 16 AMELIA ISLANDER MAGAZINE •

Sandra Baker-Hinton Award-winning artist Sandra Baker-Hinton maintains her studio in Fern and Dina’s Gallery and Gifts on South 5th Street. There is always something going on for Sandra – she may be painting one of her large paintings celebrating turtles or nature or cuddling a baby squirrel she has rescued. The multi-talented artist is not limited to painting. She also makes jewelry and ornaments fashioned from bits of colorful glass and acrylic pours. Her passions include the endangered turtles that nest on Amelia Island. As a longtime member of the Amelia Island Sea Turtle Watch, she patrols the beaches off Fort Clinch from May to October. In addition, she raises monarch butterflies from chrysalis to maturity and is a resource for rescued baby squirrels. Baker-Hinton is an active member of Amelia Island’s vibrant arts community. Her work has been featured in regional art shows, and she is one of the few Florida artists recognized as Signature Member of the prestigious National Watercolor Society. She offers individual and group classes in acrylic pouring, jewelry making using acrylic pour paints, watercolor in different techniques, and acrylic painting, both on canvas and paper. She shares her home with husband, Bruce, and a variety of squirrels she has rescued. “Amelia Island provides a perfect environment for artists passionate about their environment. My art is infused with the area’s beauty, which is my inspiration.”

James “Jim” Hurley Police Chief Jim Hurley takes great pride in “Community Policing,” which, as he says, is all about strong relationships helping to solve community problems. Jim began his service to the citizens of Fernandina Beach in 2006. Under his watch, many neighborhood strategies have been implemented, including an enhanced Crime Watch program and an active group of volunteers in the Police Auxiliary Corps. These volunteers can be seen directing traffic and conducting elder checks. Starting his career in Ft. Lauderdale, Jim and his wife were glad to return to Florida after a brief stop in Texas. Committed to career development, Hurley also attended and graduated from the FBI National Academy in Quantico, Virginia and the Senior Management Institute for Police at Harvard University. Jim is proud of his teams and how they handled the challenges that the community faced with the Covid-19 pandemic. The community cooperated with the mandates and guidelines and contributed to keeping the island safe. When not on the job keeping the island safe, Jim can be found teeing it up at the Fernandina Beach Golf Club. “We have a great hospital,” says Jim. “Our restaurants are fantastic, the beaches are uncrowded, and we have two state parks. What other small town has a marina, a golf course, an airport, miles of beaches, a natural greenway, a low crime rate, and free parking!” 18 AMELIA ISLANDER MAGAZINE •

Richard Restiano After moving to Amelia Island in 2016, Richard Restiano, an avid tennis player, quickly became involved in Kraft Tennis Partners, a private tennis club located mid-island. He is currently the president of the club founded in 2008, which has 200 active members. The club has become popular not only for its clay courts and riverside setting, but for its league and social activities. As part of their community outreach, the club has partnered with the Fernandina Beach High School tennis team to provide support, equipment, and a scholarship awarded to a deserving student on the tennis team. Members quickly jump in to support worthy causes like the island’s food bank and the Ackerman Cancer Fund. Prior to retirement Joyce and Richard Restiano lived in New York, Chicago, Chattanooga, and West Hartford, Connecticut. They agree they will not miss moving and are happily settled on Amelia Island. The Restianos enjoy so much about Amelia Island— the uncluttered beaches, like-minded adults with diverse backgrounds and interests, the downtown, and the island’s wonderful restaurants. They share their house with their miniature schnauzer, Mesa. “Recreational opportunities are important part of an active life living on Amelia Island. We are blessed to have the highest quality golf courses, tennis courts, a skateboard park, and pickle ball courts for everyone to enjoy.”

Jill Dillingham Jill Dillingham is the dynamo that brought Broadway to Amelia Island. Along with her husband, Gregg, they opened Amelia Musical Playhouse in 2013. The Florida Keys were home to the couple for 30 years. They headed north and bought a house on Amelia Island, where they have made a huge impact with their theater. The theater offers an amazing array of entertainment, almost all with live music. They also make the theater available for various organizations that need a stage for fundraising events or other special events. The couple can be found together onstage and off. Jill directs, performs, and mans the ticket office. Gregg, one of those people who can literally fix anything, is the master of the sets and stage lighting. If you see a really tall actor on stage, you can bet it is Gregg. The pair are ready to meet the challenges of offering performances in a time where seating and performances may have to change. A trio of dachshunds—Juniper, Victor, and Gustav— share their home on the north end of the island. When not working, they enjoy walks on the beach, escaping to their cabin in North Georgia, or to New York City for inspiration. “Work has become play for us as we are at the Playhouse almost every day. am Vieser moved to Amelia Island seven years ago to escape the northeast’s cold and snow. A nature lover with a degree in environmental science, Pam feels her passion for photography and art came from her grandfather. “My grandfather was an accomplished artist and photographer,” says Pam. “I got a lot of my inspiration from him.” Pam always considered herself a hobby photographer, until one day when she was working as a volunteer at Plantation Artists’ Guild and Gallery. “I received some flattering remarks about my photos, and realized that I had an instinctive aptitude for photography.” Pam opened her own gallery called 2nd Story Gallery & Studios in late 2017, located above Villa Villekulla Toy Store at 5 South 2nd Street. The gallery features her photography, along with fourteen other local talented artists: Ned Flemming and Lisa Chaffman have studios at the gallery and display their work, along with Lois Grunder, Ron Chabot, Ana Companion, Craig Impink, Lorraine Kilmer, Dickie Anderson, Tina McElhatton, Jane Reese, Alan Robertson, Frances

Rodgers, Melinda NesSmithPicard, and Patti Saunderson. Oils, watercolors, acrylic, photography, mixed media, jewelry, plus prints and notecards are all represented at 2nd Story Gallery & Studios. “I have so much respect for these talented individuals and the many genres of art that are represented,” says Pam. “Even while the gallery was closed, our artists were hard at work, creating new pieces every day. We offer free local delivery and appointments to visit 2nd Story though Facetime and other digital platforms.” 2nd Story re-opened in early May. The gallery participates in Second Saturday Artrageous Artwalk and plans to return to its regular hours soon. “We hope to return by June to our regular hours of 11 a.m. to 5 p.m. Monday through Saturday, and noon to 5 p.m. on Sundays,” says Pam. “Our customers are welcome to video shop, shop online, or call us to make arrangements for a private tour of the gallery or request free local delivery. hat began on a vacation trip in 2014 for Buddy Holwell and his wife, Kim, eventually turned into a new store for Amelia Island. “We fell in love with the olive oils and balsamic vinegars we found in a shop while on a trip to the Outer Banks in North Carolina. ifi Queen’s story is as colorful as the summer dresses for sale in her boutique. She is a self-taught pianist, a graduate of the Barbizon School of Modeling, and was once ranked the sixth best female amateur golfer in North Florida by the North Florida Golf Journal. It’s no surprise she’s been included in Who’s Who Among Young People in America, as well as Who’s Who in Business America. “I was born in the small town of Waynesville, North Carolina. As the oldest of five children, I was my mother’s helper, and I worked hard to help raise my younger siblings. With their senior year transformed by the Covid-19 pandemic, the Class of 2020 shows great character facing unforeseen challenges as they head out into the world. BY JULIE SIMMONS

he Class of 2020 is truly one-of-a-kind —their senior prom was quarantined, COVID-19 interrupted their pranks, they missed their last day of school, and their Pomp and Circumstance is on hold. But that doesn’t mean they aren’t celebrating and reflecting on this important milestone in their lives. “The class of 2020 is loaded with amazing students, who have a long list of accomplishments,” says Rob Hicks, senior class counselor at Fernandina Beach High School. “We have jack-of-all trades like Amelie Nichol, who is an accomplished flutist and a gifted runner. Not to be outdone, Brooke McAbee is the drum major of the band, homecoming queen, and she won second place in Florida’s under-16 archery championship. On the side, she raises chickens and has a booming business selling shoes for them online. (Yes, the shoes are for the chickens.) “Patrick Magagnos and Ethan Linkous have done very well with their mobile auto detailing business, and Aly Akers, Alexus Ezzell, and Yafah Stadeker have been instrumental in the opening of the new branch of Vystar Credit Union on the FBHS campus this year.” The Nassau County school district offers dynamic programs that help students accomplish these great things. Meet Carly Terry, daughter of Julie and Zach Terry, who started her own photography business

using skills she learned in an on-the-job training course. “I am equipped with skills for succeeding in the workforce, as a college student and entrepreneur.” Carly plans to study advertising and innovation at University of Florida. Carter Cox, son of Amy and Taco Pope, echoes Carly’s appreciation for the great education. “The Early Admissions Program at Yulee High allowed me to be a full-time Florida State College Jacksonville student my senior year,” says Carter, explaining that this program plus dual enrollment courses in earlier years leaves him about a semester shy of obtaining his Associate’s degree as he’s graduating high school! Carter plans to study at University of Central Florida. In addition to a topnotch education, our local schools breed extraordinary relationships and experiences. “I am going to miss the athletic games,” says Reese Jordan, daughter of Candy and Stephen Jordan. “Almost every game has a set student section theme, and we all arrive early to support the players. I want to tell the underclassmen to take advantage of their high school experience. It’s important to get involved and be active in the school, join clubs, and go to games!” Reese plans to study behavioral neuroscience at Florida State University. continued on next page

Harris Hamilton, son of Mary and Chris Hamilton, is looking forward to studying mechanical engineering at University of Florida, but not before looking back at his time at FBHS. “I will miss walking the halls and seeing the people I’ve been going to school with since Pre-K – friends I have known my whole life,” he reflects. Carly, Carter, Harris and Reese each expressed thanks for the dedicated teachers and staff. “I moved to Fernandina the summer before my sophomore year and didn’t know anyone and was nervous about starting school. The FBHS front desk clerk, Mrs. Pikula, made me feel super welcome, and I loved all of our chats over the years,” Carly remembers. When their school days came to an abrupt hault, this resilient group realized valuable life lessons through a hard season. Carter learned not to take things for granted. Reese learned to expect the unexpected and always to be prepared. Harris learned that sometimes you face situations that aren’t ideal, but keeping a positive outlook helps to make the best of it. And Carly learned how much she values her community, the people around her, and she is thankful for the extra time with her family before college. “The Class of 2020 is a class like no other. It has been forced to adapt to an astonishing senior year. This special group deserves all the accolades we can give!” Rob concludes. f you’ve been downtown recently, you may have caught a glimpse of the cruise ship docked at the Port of Fernandina. While beauty is unquestionably in the eye of the beholder, for those of us in her orbit, her undisputed beauty has spawned an exquisite love affair. Explorer, as she is known, is my place of work. As an Executive Chef with Regent Seven Seas Cruises, I am responsible for the culinary enrichment programs onboard Explorer and her newly christened sister, Splendor. I lead a passionate team of Chef Instructors, and together we teach classes onboard in her state-of-the-art cooking schools and lead intimate culinary tours in over 40 ports around the world. How did I find myself working on the Explorer? It’s a long story. After completing my doctoral studies in epidemiology (everyone knows what that is now) at Johns Hopkins in the early 1980s and working briefly at the U.S. Surgeon General’s office, a few colleagues and I launched a health risk appraisal company right as the internet was born. The rest, as they say, is history. I liken it to being shot out of a cannon. By 2007, I was ready for a quiet life on Amelia Island, walking the beach with a dog I adopted from Nassau Humane Society. But soon, however, I was ready for the next chapter. Letting passion be my guide, I enrolled in the Culinary Institute of America (CIA). My former colleagues thought I had lost my mind, but I was in heaven. After graduating, I was hired to launch the first hands-on cooking school at sea by Oceania Cruises, where Chef Jacques Pepin serves as the Executive Culinary Director. Island. The popularity of The Culinary Center cooking schools on Oceania Cruises Marina and Riviera inspired the building of two Culinary Arts Kitchen cooking schools on Regent Seven Seas Cruises newest vessels, Explorer and Splendor. Today, I manage all four onboard cooking schools. I first saw Explorer at her christening in 2016. Dusk was falling on the sparkling harbor of Monaco. Megayachts were bobbing in the harbor, and the air was full of the thyme-laced scent of summertime in the south of France. My culinary team and I had arrived a few weeks earlier, preparing our cooking school for her students and guests. Heralded as the most luxurious ship at sea, her first 750 guests were to be dazzled, pampered, and feted. For you Downton Abbey fans, it was like the Queen was coming for a visit. That night, my cabin had a birdseye view of the star-studded christening event in the world’s most glamorous city. Champagne flowed as the blacktie affair got underway. The highlight of the evening was a private concert by world-renowned tenor Andrea Bocelli, followed by fireworks over the harbor. Since her christening, I have sailed the Baltic, Mediterranean, and Caribbean on Explorer. A typical day for me onboard is teaching a class or leading a culinary tour. Our classroom holds 18 guests, each with an individual cooking station. I design the curriculum for the classes, balancing cooking techniques with the cuisines of the places we travel. My favorite days are when I take a small group of no more than 15 guests on

Chef Kathryn Kelly a culinary excursion. On these Gourmet Explorer Tours, which we offer in ports around the world, we find the local markets, restaurants, and experiences that chefs love, like cooking lunch in a Greek taverna with a local family, visiting the spice market and kitchens of the Topkapi Palace in Istanbul, or drinking vodka during a caviar tutorial in St Petersburg. While I am a passionate student of the art, music, language, and architecture of a place, nothing helps me understand the world like food. Where did the food traditions come from and what are the signature recipes? What do people eat during holidays and what is a simple meal at home? How do the growers, farmers and fishermen figure into the food chain? What are the popular street foods? I love my job. I’m onboard one of our four ships six months of the year, and the rest of the time I work from my home office on the island. Now that Explorer is here, I ride my bike to the Port of Fernandina every day to say hello to her. Someday she will return to do the job she was built to do, and I will, too. If you have a chance to visit her, I hope you’ll see her as I do—an elegant lady waiting for her guests, crew, officers, and chefs to take to the seas again.

Italy on

foot

Like the Camino de Santiago, the Via Francigena is an ancient pilgrim trail that winds through Europe to St. Peter’s Basilica, including a memorable section from Siena to Rome. STORY AND PHOTOS BY DICKIE ANDERSON

C

entral Italy is a treasured destination for travelers who love beautiful landscapes, gourmet food, and amazing wine. Planning our annual walking trip in the spring of 2019, my sister and I decided to explore Tuscany on our own, then join a group to walk the famed Via Francigena pilgrim trail, which begins in Siena and ends in Rome at St. Peter’s Square. We flew into Pisa to begin our adventures. Our plan was to meander south by car, ending up in Pienza, and then heading north again to Siena to meet our group. In Pisa, we checked out the still-leaning tower and picked up our rental car, a Jeep Compass, which we soon learned was one of the largest cars on the road in Italy. Driving in Italy was the challenge we anticipated; we quickly learned that there is one pace that Italians prefer as they move through their hilly country – fast. Over several days, we visited the towns of Lucca, Volterra, Asciano, Pienza, and Montepulciano, among others. Each town was situated strategically and fortified by walls. We parked our car outside of the towns and walked the narrow, winding streets reserved for pedestrians. The churches, shops, and restaurants made for great exploring, as well as 45 AMELIA ISLANDER MAGAZINE •

some memorable meals with glasses (or sometimes bottles) of local wine. Driving from town to town, we took in amazing vistas. The rolling hills were carpeted with wild yellow mustard and bright red poppies. With its silvery olive groves, vineyards, stone farms, and ancient medieval castles, Tuscany is a place where time seems to stand still. There are no fences. Properties are separated by lines of cypress trees and subtle paths and roads. One memorable drive was so delightful we did it twice! We ended this first part of our trip in Siena, where we joined our walking group of nine, accompanied by three wonderful guides. Siena was one of our favorite stops in our travels. It seems more intimate than some of the bigger towns in the region. It is rich in monuments, palaces, and churches. We were lucky enough to be there on a national holiday and witnessed one of Siena’s famed parades, with bright banners carried by marchers in costume representing the city’s various neighborhoods. The most famous parade is the Corteo Storico, which takes place before Siena’s famous annual horse race, the Palio. continued on next page JUNE 2020

After our Camino de Santiago walk in Northern Spain in September 2018, my sister and I were intrigued by the possibility of doing another pilgrim walk. The Camino led us to the Cathedral of Saint James in the town of Santiago in northern Spain. In Italy, the pilgrim walk is called the Via Francigena. Starting in the cathedral city of Canterbury in England, it travels through France, Switzerland, and Italy, ending ultimately in Rome. One of the most popular pilgrimage routes in the Middle Ages, records show that the Via Francigena dates back to at least the seventh century. Like the Camino, the traditional walk includes a passport, which is stamped along the way to prove that you have stopped at different places along the historic path. Averaging ten miles a day, we made our way along the Via Francigena from Siena to Rome. Our guides led us along some of the most beautiful sections of this historic route, through spectacular settings that included the villages of Buonconvento, 46 AMELIA ISLANDER MAGAZINE •

San Quirico d’Orcia, and the handsome walled town of Viterbo, once the seat of popes. We followed trails along Lago di Bolsena, tasted wines from renowned vineyards, visited an Etruscan museum in Sutri, and finished with a flourish as we walked into Rome and St. Peter’s Square. On the last day’s walk, we enjoyed a wonderful meal at a restaurant perched atop one the seven hills of Rome. We walked down the hill into the bustling city of Rome and made our way into St. Peter’s Square, flanked by the Vatican and St. Peter’s Basilica. Our leaders led us to the official office, which would certify that we had completed the Via Francigena. We celebrated over dinner, toasting each other and our amazing guides, Ellen, Gianluca, and Gianpiero. Travel always surprises, and we had no lack of challenges and wonderful rewards on our latest walking adventure in Italy. Future plans will take us to Puglia and Calabria to explore Southern Italy, the heel and toe of the “boot.” JUNE 2020

summer standbys As the summer heat arrives, you can still add vibrant color to your garden with heattolerant old favorites like Crape Myrtle, Portulaca, Salvias, and Indian Hawthorn. BY BETTY MORRELL

I

t seems like we are flying from one season right into the next. Summer will be here officially this month, along with high heat, humidity, and frequent rainfall, although we will still have dry spells. When you buy a plant, make sure it is heat-tolerant. It’s time to put new plants on hold and refresh our knowledge of tried-andtrue plants for our area, like the Crape Myrtle. Crape Myrtle will be blooming soon, so select the color and type of bush that will best suit your garden. You can also plant heat-tolerant annuals such as Gladioli bulbs, Portulaca, Zinnias, Gomphrena, Salvia, Cosmos, Gazanias, and Caladiums. Annuals that add color and are adaptable to shade are Impatiens, Allysum, Begonias, Torinias, and Coleus. With a little sun, you can add Nicotiana, Lobelia, and Browellia. And you can still plant those reliable perennials such as Lantana, Gomphrena (either annual or perennial), Pentas, Buddleia, Verbena, Ruebeckia, Plumbago, Gingers, and Perennial Salvias. Jacobinia and Gingers can be planted in the shade. Nurseries are getting in lots of

beautiful plants, so stop by often to find that perfect plant or flower for your garden. By the way, you can also plant Gardenias, Azaleas, and Camellias now. With so many varieties and sizes available for each plant, I’m sure you’ll find just the right one for your garden. One of the most widely planted shrubs is the Indian Hawthorn, and for good reason: their glossy, leathery leaves and compact growth habit make them attractive for background plants or hedges. My personal favorite is Majestic Beauty, with its fragrant, light-pink flowers that grow in clusters up to 10 inches wide with leaves 4 inches long. It is larger than all the others and can reach 15 feet in height. This beauty can be made into a small tree with a single or multiple trunks. Thinning its branches will reduce wind resistance and minimize

chances of the plant blowing down. Indian Hawthorns are salt-tolerant. Another great shrub for hedges is the Ligustrum (Privet). Japanese Privet, or Wax-Leaf Privet, is an evergreen shrub with a compact growth habit to 10 to 12 feet, but it can be kept lower by trimming. The leaves are oval and 2 to 4 inches long, dark-to-medium green, glossy above and whitish beneath, with a thick, almost spongy feel. This is an excellent plant for hedges or screens. If you prefer a Ligustrum tree (L Iucidum), Glossy Privet makes a roundheaded tree that can eventually reach 35-40 feet. It can be kept lower as a big shrub or it may form a multi-trunked tree. The leaves are glossy, 4 to 6 inches long, tapered and pointed, and darkto-medium green on both sides. They feel leathery, but don’t have the slightly spongy feel of the Japanese Privet. Their flowers are especially large, feathery clusters. It makes a great lawn tree and can be grown in a narrow area. If you have any questions, email me at bamorrell@aol.com. aura and Paul Amos love Amelia Island so much they moved here not once, but twice! “We had been thinking about moving to Florida for a long time when we saw Fernandina Beach on an HGTV show,” the couple reminisces. “One clip scanned the quaint downtown and gorgeous beaches, and we were pretty sure this was our new home!” The couple, from Baltimore, Maryland, booked a long weekend and experienced our “cooler and windy” January climate. “The locals told us this was a terrible weekend to be here,” Paul laughs. “But we disagreed; it was the most beautiful place we had ever been.” At the time, the couple’s jobs allowed them to work remotely, so they packed up and headed south to Amelia Island. As fate would have it, soon after their arrival here, a job offer back in Maryland came up that required them to move back. Return they did, but their hearts were still in Amelia Island, and before long they decided to look for a second home. “Patti Burch of Amelia Island Plantation Real Estate helped us with both of our homes, and she

is amazing,” says the couple. “As we house-hunted, we were fully prepared to renovate, but we just were not finding what we had in mind. The last day of our visit, Patti said, ‘I have a house going on the market next week that maybe you should see.’” She made magic happen, arranging a tour of the Fiddlers Bend villa in Amelia Island Plantation, and the Amoses were sold. “The villa offered amazing views of the marsh, but the interior needed updating,” Laura shares. “We’ve renovated before, but never from afar, so we knew we’d need some help. I saw Lola Interiors on Instagram, and connected with Tiffany Hinton, the designer and founder and co-owner of Cape House. Her work speaks for itself, and when it came to our project, she walked in the door with professionalism

When it came to color, in addition to the bold and contemporary kitchen, the coastal palate with slightly muted tones incorporated throughout accomplished the updated beach house atmosphere the Amoses were looking for. “The fact that Lola Interiors offers the service to project manage and completely handle the renovation is incredible,” says Paul said. “Tiffany was a pleasure to work with and took away all the overwhelm of renovating from afar by sharing project updates, photos, and reaching out when there were questions.” This spring when COVID-19 arrived on the scene, the Amoses were grateful as ever for their new getaway. “When we realized we were going into quarantine, we knew we’d do it on Amelia. We just love being outdoors fishing, walking, paddle boarding, biking, and golfing. T

here are many ways to experience Fernandina Beach and Amelia Island. Few are more fun than scooting around the island on 50cc of two-wheeled bliss. Recently, I went on a little scooter ride with a friend, and after a tour of the island, we slid into Wicked Bao just before sunset for some take-out. With social media, local gossip, and millions spent on tourism, you’d think that Fernandina Beach wouldn’t still have its secrets, but somehow my friend Josh had never been to Wicked Bao. The restaurant is situated on the edge of the downtown Historic District on North 2nd Street. The streets

have plenty of lighting at night, with public parking nearby, and the lingering scent of 5-Spice and the lure of authentic Asian food draws you in. Owner Natalie Wu has developed a restaurant that just feels like fun, with a lively atmosphere. Along with her mom, Doris, and a hardcore crew of loved ones, friends, and culinary students, Wicked Bao makes everyone feel welcome and turns the curious into devoted fans. We placed our food order, and while it was being prepared, Josh and I enjoyed a cold Lucky Buddha on the porch. 58 AMELIA ISLANDER MAGAZINE •

When our beverages where finished and our food was in the bag, we putt-putted around the corner in time to see the sun begin its daily disappearing act. We parked our bikes on the riverbank and sat on them as we enjoyed our meal. I am a sucker for Grilled Octopus. At Wicked BAO, it comes dusted with a blend of Asian seasonings and spices, grilled tender with crisp edges, and bursting with flavor. It is not exactly finger food, so we ate it first. Next, we enjoyed a batch of steaming hot Rice Tots. Think Ore Ida, minus the spuds, served with Sriracha aioli and sweet chile sauce. Afterward, we shared the Pork Belly Bao. These come three to an order, which makes sharing a snap. A bao is a steamed pillow of bread filled with braised meats, pickles, and condiments and is pronounced like, “bow your head and thank God for friends who turn you on to awesome restaurants.” The Pork Belly Bao is filled with succulent braised pork, pickled mustard greens, and cilantro, and dusted with powdered peanuts. This thing is worth the trip all by itself. Lots of places out there offer dumplings, and most of those places buy them frozen, but I’ve had the pleasure of standing shoulder-toshoulder with Mom Doris in the kitchen at Wicked Bao making their Pork Potstickers by the hundreds. They are bonafide and should not be missed. If you’ve tired of chicken wings tossed in modified food starch, msg, and artificial flavor, come get some Chongqing Chicken Wings. The wings are dry rubbed with a mixture of ground spices and chili peppers. These wings are sneaky, disguising themselves as mild when you begin, and intensifying as you indulge in their eyewatering awesomeness. Next time you are wondering how to spend the evening, go rent a scooter and eat at Wicked BAO. HONEY ROSEMARY BOURBON LEMONADE Make a simple syrup by mixing 1/2 cup honey with 1/2 cup water and 6-sprigs of rosemary in a small saucepan. Simmer gently for 5 minutes. Strain and cool. For each drink, add 2 oz. each of bourbon, water, and fresh lemon juice, and 1 oz. simple syrup to a shaker. Shake with ice and pour into a glass garnished with a rosemary sprig.

BARBECUED BOURBON GLAZED PORK RIBS Make a rub by combining 2 Tbsp. each of paprika and dark brown sugar, 2 tsp. each of salt, pepper, ground ancho pepper, cumin, and ground garlic, and 1 tsp. each of dry mustard and cayenne in a bowl. Remove silverskin from 5 lbs. of pork ribs and spread rub on both sides of ribs. Wrap tightly in foil and bake in a 275-degree oven until ribs are tender and moist. Remove from the oven and let rest. While the ribs are cooking, prepare your barbecue sauce.

ather’s Day is June 21, and Dad doesn’t want a new wallet or a pair of socks this year. He wants bourbon, the king of all distilled spirits! A 4-day trip through the famed Kentucky Bourbon Trail may be out of the question this year, but a good bottle of bourbon and a bourbon-themed meal will show Dad just how much you love him. My husband, Troy, is making his own Father’s Day dinner this year, and we’re inviting a few other dads and their families to join us. His meal begins with a bottle of Russell’s Reserve Single Barrel Bourbon and a Honey Rosemary Bourbon Cocktail, which is really a glass of “grown-up” lemonade. This is a great recipe for a group because you can adjust the sweetness by adding more or less simple syrup.

Troy loves pork loin ribs and so do all the other dads, so he’s making Barbecued Bourbon Glazed Ribs on the grill, served alongside parsley mashed potatoes and green bean salad. The key to perfect ribs is to rub them with a spice mixture, wrap them in foil, then bake them at low heat in the oven for 2 to 3 hours, or until they are tender and moist. Contrary to popular belief, the meat should not “fall off” the bone, but rather just come off the bone easily. After letting the ribs rest, they can be placed on the grill and brushed with bourbon barbecue sauce until the sugar caramelizes and the ribs are heated through. Serve extra barbecue sauce on the side. Be sure to raise a glass to the chef, and wish all your favorite dads a Happy Father’s Day!

BOURBON BARBECUE SAUCE Ingredients 12 oz. tomato paste 1/4 cup dark brown sugar 3 Tbsp. molasses 1/4 cup apple cider vinegar 1 tsp. black pepper 1 tsp. salt 2 Tbsp. paprika 1 tsp. dry mustard 1 tp. ground garlic 1 tsp. cayenne 1 tsp. cumin 2 tsp. Liquid Smoke 2 Tbsp. honey 1/2 cup bourbon Preparation Place all ingredients in a saucepan and simmer on low, stirring constantly for about 15 minutes. After ribs have come out of the oven and cooled, brush them with half the sauce and grill at medium heat until heated through and the sugar caramelizes. Serve with your favorite summer side dishes!
